RASPBERRY CRUSHED ICE

GALÁPAGOS ISLANDS, EQUADOR INGREDIENTS • • • •

1 cup water 1/ 2 cup gr anulated sugar 3 cups fresh r aspber r ies 1 tablespoon lemon juice

INSTRUCTIO NS Stir water and sugar together in a glass or bowl and let sit 15 minutes. Stir again thoroughly; sugar should have dissolved. In a blender, combine this sugar water, ber r ies and lemon and r un until smooth. Pour into a large baking dish; keeping the thickness of the puddle shallow means your desser t will be finished more quickly. After about an hour — freezing time will var y by freezer temper ature and puddle depth — the mixture should be half-frozen. Stir with a for k, scr aping the sur face and out to the cor ner s to break up the ice, for ming coar se glitter y cr ystals. R etur n to the freezer and repeat this process ever y 30 minutes for another hour or two, until the mixture is fully frozen in flakes. To ser ve, scoop into glasses.

THREE-INGREDIENT SUMMERTIME SALSA INGREDIENTS • • • •

1 pound plum or roma tomatoes, stemmed and cut in half 1 or 2 jalapeños (depending on how hot you want the salsa), stemmed and cut in half 2 cloves gar lic, peeled Salt and pepper, to taste

INSTRUCTIO NS Preheat the oven to 400°F and line a baking sheet with parchment paper. Toss the sweet potatoes with a dr izzle of olive oil and pinches of salt and pepper and roast for 25 minutes. Halfway through add the Yves Kale & Quinoa B ites to the baking sheet. M eanwhile, in a small bowl, combine the chickpeas, 1 tablespoon olive oil, 1 tablespoon lemon juice, Dijon mustard and pinches of salt and pepper. Set aside. In a large bowl, massage the kale with a dr izzle of olive oil, ½ tablespoon lemon juice and a pinch of salt and pepper. We’ re seasoning ever y layer here to make sure all of the vegetables are flavor ful. Assemble two large individual ser ving bowls with the kale, chickpeas, sweet potatoes, Yves Kale & Quinoa B ites, beet or r adish slices and avocado, if using. Spr inkle with the hemp seeds and red pepper flakes, if using. Dr izzle with the tahini sauce and another big squeeze of lemon, if desired. Ser ve with lemon wedges.
