I NS T R UCTI ON S I n a m e d i um bowl, whisk the egg yolks with the sugar until pale yellow a n d t r i p l e d in size. I do this by hand with a big balloon whisk, and it t a k e s a b o ut 1 mi nut e. Whi p vi gorousl y. Meanwhi l e, i n a 1- q uart s a u c e p a n , heat the milk, 1/2 cup of cream and 1/2 teaspoon of freshly g r a t e d n u t meg to boiling. Remove from the heat. Very slowly stream the m i l k m i x t ure into the egg yolks while whisking continuously. Go slowly t o a v o i d c ooking the eggs.Next, pour the entire mixture back into the s a u c e p a n , and place over medium heat. Stirring occasionally, heat the m i x t u re t o 160-degrees F. If you want to be traditional and fold egg w h i t e s i n t o your egg nog, go ahead and whip the two remaining egg w h i t e s t o stiff peaks. When the egg nog reaches 160-degrees, remove it f ro m t h e h eat and gently fold in the beaten egg whites. Chill the mixture t h o ro u g h l y if you want to serve it cold. INSTRUCTIO NS Bake the cake according to package directions (I usually underbake just a little bit). Cr umble cake into a large mixing bowl. Using your (clean) hands, mix the can of frosting and peppermint in with the cake until a smooth, even mixture forms, kind of like a cookie dough. Mix in the chocolate chips and pop into the fridge for a few minutes to cool so it’s easier to work with. Roll into balls and freeze until solid. Melt the almond bark. Roll each ball in the almond bark, set on wax paper or foil, drizzle with melted chocolate, and top with sprinkles, and wait for them to set.
ROASTED BUTTERNUT SQUASH BROWN RICE HOLIDAY SALAD INGREDIENTS DR ESSING • ¼ cup extr a-virgin olive oil • 1 tablespoon pure maple syr up • 2 tablespoons apple cider vinegar • ½ teaspoon sea salt • ¼ teaspoon black pepper • Prepare dressing by vigorously whisking all ingredients SALAD • 5 cups butter nut squash (about 1 medium squash), peeled, seeded, and cut into 1-inch cubes* • 1 large pear, cut into ½-inch pieces • ½ cup dr ied cr anber r ies • ¼ cup finely chopped red onion • 2½ cups chopped fresh spinach (or other favor ite green) • 1 bag Success® W hole Gr ain B rown R ice (2 cups, prepared) • fresh par sley, for gar nish, if desired INSTRUCTIO NS Preheat oven to 425 degrees F. Place butter nut squash on a r immed baking sheet, s p ray w ith co o kin g s p ray an d sprinkle on a dash of salt. Roast for about 30 minutes, and until tender.Meanwhil e , p re p a re a l l o t h e r i n g re d i e n t s . Cook brown rice and in a large bowl, combine pear, cranberries, onion and spinac h . O n c e s q u a s h a n d r i c e h a s cooked, transfer both to large bowl with other ingredients and stir so that spinac h w i l t s s l i g h t l y f ro m t h e h e a t o f the squash and rice. Pour dressing over the salad and toss gently to combine. Sa l a d c a n b e s e r v e d w a r m , a t ro o m temper ature, or chilled. Gar nish with fresh par sley, if desired.
