At just 24, Essex-born Nathalie Emmanuel is living every young actor’s dream. Following four rewarding years honing her craft in glossy soap Hollyoaks, Nathalie won a coveted role in smash hit Game of Thrones, after just one brief audition.

was tough. But I feel that it was something I had to go through to re-establish myself. The roles started coming in, I appeared in Misfits, and my agent and I were careful to select the right ones for me, so that I can build up a good body of work.

Nathalie found herself filming the HBO series in sunny morocco, surrounded by well-respected actors, famous names and some of the best crew in the business, with the added bonus of a trip to the golden globes to promote the show. When GoT became a cultural phenomenon this spring – due in no small part to the shocking ‘Red Wedding’ scene in The Rains of Castamere episode – Nathalie watched it on TV along with millions of others, instantly realising that her career had just shifted up a gear.

I was a huge fan of Game of Thrones long before I appeared in it. I heard there was a new role opening up, and knew I had to go for it. I rang my agent and said ‘this role is so me, please put me up for it’...only to hear that they’d already asked me to audition! When I got the call telling me I’d won the part as slave girl missandei, I was shocked. This was such a huge deal, and I was so flattered they’d chosen me, especially as I only auditioned once and didn’t have to go for a recall.

Next stop, Hollywood movies and more GoT, but first, Nathalie’s dipping her toe into the fashion world, as the brand ambassador for the a/W13 collection of dresses from Little mistress, a quirky new label that won the prestigious Drapers Young Fashion Brand of the Year award. I change my style every day, dress for my mood, and I’m really into fashion. I like to dress up and feel good, go out with my friends and my sister, and that’s why Little mistress was perfect for me: because they do a lot of fabulous party dresses.

I don’t work with a stylist yet, even though I don’t get a lot of time to go shopping. I know my own style and what I feel comfortable in, and at the moment, I’m happy to style myself. my friends and family are my unofficial stylists! But I’m not against the idea of a stylist in the future: any good one will work with you to find a look that you’re happy with. Hollyoaks was where I found my feet, and was such a good training ground for the acting industry. I look back on my time there really fondly and enjoyed every minute. I was lucky to be given some challenging storylines (as troubled teen Sasha Valentine) that really pushed me. I felt privileged to be given so much responsibility at a young age and it caused me to step up my game. Those years taught me to focus and be disciplined and I hope that these are the qualities that people you work with remember you for. After four years on Hollyoaks, I knew I was ready for the next step. I wanted to test myself and see what I was capable of, and the time just felt right. any actor will tell you that it’s worrying to leave a regular job, but I know that if I’d stayed any longer, I would have tortured myself asking ‘what if...?’ When you’re beamed into people’s living rooms every week, they accept you only as that character. Straight after Hollyoaks, I had some downtime and it

I panicked before starting work on GoT. I was excited but it was all so daunting. The responsibility’s massive, because the george R R martin A Song of Ice and Fire fantasy novels on which the series is based are loved by so many people. I knew how much the fans love the show because I was one of them! There was a moment of clarity where I told myself ‘you really need to get this right’. Then I threw myself into it.

My first day on set was lovely. Season three was filmed in morocco, which was beautiful, and walking onto the set was thrilling. I had only one scene to film right at the end of the day but after I did it, the director walked over to me and whispered ‘congratulations, you’re now officially in Game of Thrones’. Yay! I had to hit the ground running. I filmed my second scene on only day two and had to speak in fictional language High Valyrian, translating for another character, and it was so exciting but scary. missandei is smart and speaks 19 languages. When they yelled ‘cut!’ I had a huge rush of adrenaline and it hit me how much nervous energy I’d put into getting the scene right. In the car on the way back to the hotel, another actor said to me ‘how great is this?’ and he was so right. I couldn’t quite believe what I’d just done. It was such a cool, amazing day. Working on GoT is like stepping into another world. as an actor, though, that makes your job easier. You put your costume on and have your makeup done, and walk out onto this incredible set where every tiny detail has been so carefully thought out, the supporting artists are milling about in their costumes and the world the team has created looks so authentic that you can’t help but feel like you have become part of it. It’s a surreal experience. There was one day where the set was so crammed full of soldiers, horses, astaporians and Dothraki warlords that it was breathtaking. I had a few moments of total awe.

STYLE EXCLUSIVE The CGI dragons are strange to work with. You have to react to something that’s not there in front of you. Sometimes they’ll put a stuffed model in place of a dragon so you have something visual, but often the director will just shout ‘dragons flying!’ and everyone looks up to the sky to show their reaction. It’s all about using your imagination which for me is what acting is all about. The show has become a phenomenon this year, which is lovely. It’s so encouraging the way the fans and the media have taken to Game of Thrones, and to be a part of that is fantastic. I’ve been sent some very sweet letters by fans. I watched Red Wedding like everyone else did. Watching that scene was so emotional, and my phone started ringing immediately with friends asking why I hadn’t warned them beforehand! I wanted them to have the shock reaction! As soon as I read the script I knew I could never relay what was going to happen to anyone else. It was so brutal, and well-executed and fantastic. I watched the episode at

what drives me and what I focus on. But it is a strange thing to be approached by strangers in the street who have seen your work. It’s an adjustment, absolutely. I was recognised at the Montreux Jazz Festival in Switzerland and a guy walked up to me in a bank in LA recently and said he loved me in GoT. That made me think how crazy is it to be recognised in America. I’m careful what I post on Twitter. I joined not because I’m on TV, but because I wanted to keep up with my friends, and some writers, actors and singers I admire. All of a sudden, I had loads of followers and it dawned on me that I had to be much more conscious of things I wrote. I’ve been very lucky and haven’t had any negative experiences, or been trolled. Putting anything too personal or controversial on Twitter is dangerous, so I keep it light-hearted. I’d love to break into films. I’m hoping to spend a period of time in LA, which I love because it’s such a great city, and see what

I couldn’t live without singing! Even as a child, I wanted to become a singer...or a spy! Ultimate happiness is...beach hopping in the Balearics with my three sons, being general beach bums, eating freshly caught sea food and playing in the sand. Nothing makes me laugh more than my children playing together and having a good time. My philosophy has always been to just enjoy every minute you are blessed with. To describe myself in three words? I’d say excitable, dedicated, passionate. One thing I’d like to do before I die is…host a big family party with all my children, grandchildren and possibly even great grandchildren by my side, with a loving husband and lots of friends. My greatest fear is that I won’t be around to see my kids grow up. The way I feel about my body changes all the time. I feel insecure, but I try to concentrate on the positives. I’d say two weeks of the month I feel great, and the other two I feel bloated. That’s why I work out: to keep toned. I try to go the gym three times a week and I like to alternate classes. I enjoy spin, circuits, boxercise and Zumba. Each class lasts 55 minutes and for that whole time I will put 100 percent in. I’m 5’ 5”, weigh 8 stone 6lb and wear a dress size 6 to 8. I struggle to keep a flat tummy after having three children so I have to work extra hard on that. I like my bum, though: it gets good compliments!

I think about health, not fighting age. I try to drink at least two litres of water a day. Also, I add spirulina and wheatgrass into my juices and take vitamins, and make sure I sleep for an average of seven hours a night. My diet has changed over time. I’m a lot more healthconscious now than I used to be. I like to eat as much fresh and organic food as I can: my rule is everything in moderation and I try not to eat after 7pm. Eating well is a priority for me. My fridge is always full of carrots, tomatoes, broccoli, free range eggs, blueberries, salmon and chicken breasts. I won’t eat processed meats, as a rule. I’ll make a freshly squeezed juice with apples, pears, lime, pineapple, carrots and anything else I can get my hands on. If I had to choose what food to take to a desert island, I’d take pineapple and avocado and could live on those alone! Occasional indulgence is essential, though. I love carrot cake and chocolate fondant pudding as a treat and macaroni cheese is my favourite comfort food. I like a cosmopolitan or a good Shiraz, and my guiltiest food pleasure is a whole bar of Lindt extra creamy chocolate with a cup of tea! I can cook, and like to whip up a paella or risotto to impress. I like to do a beef roast lunch with all the trimmings, too. There has been the occasional disaster in the kitchen. I once made jerk chicken and accidently put the whole jar of seasoning in instead of one tablespoon, and nearly

ripped all the skin off my mouth! It was that hot! I find the spa a great way to chill out, and I’ll book a few treatments to relax. A full body aromatherapy massage and a facial are my favourite! On a Sunday, I like a hot bubble bath and a face mask at home. Would I ever have cosmetic surgery? Never say never, but I’m not interested in

anything now. My anti-ageing secret, if I have one at all, is that I book in for regular A-Lift facials and I always make sure I cleanse, tone and moisture religiously. I use Dermalogica face wash, eye cream and smoothing moisturising cream. I remove my eye makeup with Boots cucumber wipes and I exfoliate twice a week. What I splurge on facials, I save on makeup. I have a daytime look I rely on. I always use primer to keep everything in place and I like to use black eyeliner with flicks at

the corner on a daily basis. If I’m going from day to night I will add lip liner and bright lipstick. That’s perhaps my worst beauty habit: I can get carried away with bright lipstick! I quit smoking six months ago, after smoking on and off for ten years. I’d tried to quit possibly more than 20 times in the last decade. But then I hit 30 and realised I really wanted to be a fitter and healthier person, and a good example to my kids. I did it properly: I spoke to my GP who put together a quit plan for me. My health’s improved recently. Since I stopped smoking, my skin and hair are much healthier, my teeth are much whiter and when I am doing physical exercise I have better stamina and feel generally fitter. The new autumn/winter 2013 collections are exciting. Eclectic is probably the best word to describe the new season. The sportswear trend is transcending age, style and income bracket. There’s still so much demand for bold colour and print, and an easy silhouette has really come up for the new season. Along with all of this, there’s a feel for item-driven pieces, something we call the Harvey Nichols Nine: pieces such as the baseball jacket or the parka that everyone is going to want.

Fashion isn’t just for the young and brave. So many staple pieces that have been reworked this season, I feel, are moving towards a sense of agelessness. Riccardo Tisci at Givenchy has reinvented the motorbike jacket for autumn/winter 2013, and it can be worn in so many ways: elegantly uptown with heels and a skirt, or with a sporty twist. My favourite new season pieces at Harvey Nichols? I really want to invest in a Valentino dress because they’re just so timeless and, maybe a coat from Proenza Schouler – this brand has nailed the sporty-with-an-urban-edge look. If you’re looking to invest in a hero piece for next season…given that it’s the season of coats, I’d say a parka. It’s such a versatile piece to invest in, and looks great in anything from super-bright shades to traditional khaki. I like to champion new designers. At Harvey Nichols, we’re so lucky to work with the wealth of talent coming out of London Fashion Week. Right now, I’m really excited with the progress being made

by JW Anderson. Although they’ve been around for a few seasons, designers such as Jonathan Saunders, Christopher Kane and Roksanda Ilincic are doing a great job really flying the flag for British fashion. The plans for the new Harvey Nichols store in The Mailbox are amazing. I can’t wait for the unveiling of the new Harvey Nichols store! I was a little nervous about it, until I saw the site, and then the ideas came flooding in on how we’d fill this vast new space with fantastic things. We want to make the shopping experience seamless and exciting for our customers, and the new store will definitely help us to achieve that. September for me is always all about Fashion Weeks around the globe. A stash of Berocca and a pair of flats in my handbag is all I need to survive it. A lot of people think fashion month is all glamour, and it is, but there’s so much that goes on behind the scenes. All the travelling, air-conditioning in the crowded show tents and late-night parties can take a toll. It’s so much fun, but hard work, too!

Luke menswear is a street-smart mix of geezer and gentleman, with a golf collection thrown in for good measure. Now it doesn’t occur often, but recently on the weather map we’ve had an awful lot of yellow. Those lovely little sunshine symbols brightening up the screen. As fond as I am of these, they’ve been putting my love of red well in the shade. If you’ve seen my forecasts, you might have noticed that I’m slightly obsessed with dresses, tops, macs, lip gloss and nail varnish of the scarlet variety. It seemed to escape my notice or maybe I was in denial, until I received a tweet from a man asking abruptly: ‘Why do you always wear red?’ I glanced at my weather wardrobe. Yes he was right. Perhaps Chris De Burgh had me in mind when writing his hit record. In answer to Mr Angry from Birmingham, I wear it because I think it suits me. Not only does it makes me feel confident - and as silly as it sounds - seems to give me more energy. In fact I think red is the most powerful colour out there. I wanted to find out more, so I spoke to Hannah Robertson, Arts Therapist at Catharsis Creative Arts Therapy, who said: “The colour red awakens our physical and emotional state; it inspires us to take action. It is an energetic colour that emanates strength, passion, desire and determination.

I usually go for simple shift dresses, cap sleeves, fitted pencil skirts and basic necklines, and I’ve found some great ones on the high street over the years, in Zara, Reiss, Karen Millen and Next. Plus I’ve recently discovered The Pretty Dress Company online (prettydresscompany. com), which is marvellous. All the dresses are in the exact style I spend hours trawling around the shops for, and they come in an array of colours, including red. Phew! I have been known to have dresses made, too, just to get a perfect fit. There’s a dressmaker in Birmingham called Roya Vahdati, who made me a gorgeous Victoria Beckham-inspired pink wiggle dress. Yes pink! I also love

yellow at the moment, to co-ordinate with my sunshine symbols! I’m always on the prowl for dresses - even if I go shopping for a pair of trainers, I’ll come back with a new weather dress! The problem is, once I’ve worn a dress on TV I don’t want to wear it out in real life, it just doesn’t feel right. Which is my excuse for double the amount of shopping.

As the city gears up for Style Birmingham Live AW13 on Saturday September 28, Emma Willis will be hanging up her Big Brother microphone and planning her trip back home. Birmingham-born Emma, 37, will this year share presenting duties at SBL with the irrepressible Rylan Clark, and she couldn’t be more pleased. Style Birmingham caught up with Emma to talk Big Brother, fashion, style, shopping and more. Big Brother takes up my life for the whole summer. In May, I resign myself to the fact that the next three months are going to be hectic. At the end of it, I plan a really nice holiday and take a proper break from work. Most people work really hard all the time, but I just have three months in the middle of the year and one month at the start of the year for Celebrity Big Brother when my schedule is almost 24/7. So I figure that if the rest of my time is just a normal amount of busy rather than crazy busy, I can cope! You get used to it, and my husband Matt is an amazing support. My friends don’t ask me for backstage gossip on BB, because they know that I am usually out of the loop! Things change so fast on the show, the team is coming up with new ideas all the time and so day to day, I know very little. But I’m always happy to talk about BB all day: I live and breathe it. Stepping up as the main presenter this summer felt like a natural progression. I’d watched the show since the very first series, and had been around it, working on set, for about four years: I feel like I know it. Presenting Big Brother already feels like the most comfortable job I’ve ever taken on. That said, the first night presenting on my own was still the most nerve-wracking thing I’ve ever done! I work with lovely celeb stylist Hannah Macleod for TV. We met two years ago and really clicked. I told Hannah that I didn’t want a stylist who was going to just give me

What you see is very much what you get with him: he’s completely the same on and off screen, which I love. He’s a genuinely lovely guy, without a mean bone in his body. And how wonderful to have someone like that with me at SBL: someone who is enthusiastic and who loves women, fashion and style and very much has his own unique look. an image, because I already like the way I dress. What I was really after was someone who could take my style and give it a little polish, and Hannah was totally on board with that idea. My signature style is all about comfort! I like classic pieces, straight clean lines and absolutely nothing prissy! I love suits on women, it’s such a sharp and sexy look teamed with great hair and makeup. I wore a navy blue suit for one of the eviction nights on Big Brother: I much prefer covering up. I really believe that you don’t have to wear a short skirt and have your cleavage on full display to look sexy. I love a good high street label. Topshop obviously, but also Zara and H&M and I love Whistles. From high-end fashion, I love Roksanda Illincic and Diane von Furstenberg. It’s interesting to see how my style is evolving as I get older. I used to only wear jeans and a lot of black but these days I experiment with a lot more colour, and I’m starting to wear dresses more often. I’m more someone who dresses to suit the day and the weather than my age, though. I wear the same pieces of jewellery that mean a lot to me all the time but it’s shoes that are my weakness! I’m desperate to go shopping for the new season but I’ve had no time yet. I haven’t even picked up a magazine to do any research on autumn/ winter! That’s why I’m so looking forward to Style Birmingham Live in September, as it’s a chance to catch up on the new trends, all in one day! The best thing about Style Birmingham Live? Seeing all the fashion for the new season right there in front of me on the runway. That really appeals to my organised side. I’m quite a focused shopper and only really trawl around the shops when I’m looking for something specific and already have an

When you’re a contestant, you give up all control as soon as you walk through the doors. Now, presenting, I’ve had great fun walking through the camera runs and knowing what’s planned for the housemates each day. Everything I wore on Big Brother is my own. I didn’t want to work with a stylist, so I just shopped and put looks together myself, making sure I looked a bit more formal for eviction nights. My favourite outfit of the summer was the grey blazer I wore for the final of the ‘civilian’ series of BB: it had detailing on the pocket, which I love. I have always adored shopping but it’s become a headache for me now.

It takes me an hour to get through one shop! I don’t mind people stopping me though, of course, it’s nice. These days, I’ve got a clear sense of my own personal style. I’m drawn to pieces that are just ever so slightly different. Rather than buying a plain white t-shirt, I’ll go for one with an asymmetric cut. I love the high street. Zara, ASOS and Topman are my regular brands, but I do like a few high-end labels as well. Vivienne Westwood is cut really well for my shape – I love the way her clothes fit me – and I love Unconditional too. Designing my own fashion line is definitely on my list of things to do in the future. I love fashion, and I like girls’ fashion as well: I’m always telling

my friends to put this with that and wear those shoes. I’m not claiming to be a stylist but I do think that you don’t have to be one to know what looks good. I don’t really plan ahead too much though: I just want next year to be as great as this one has been for me. I take each day as it comes, I’m grateful for everything that comes my way and I work hard.

Emma and I have a great friendship off-screen as well as on. I can’t quite put my finger on what works between us, but we just clicked from the start and have always got on really well. We like a good night out together too! I love her to bits, she’s such a lovely girl. We make each other laugh and that’s so important in a friendship.

‘Surreal’ is the way I’d describe everything that’s happened to me over the past year. It’s only just over 12 months ago that I had my first audition for The X Factor. I had no way of knowing that that one day would change my life forever. I’m so thankful for it. It’s brought some tough times as well as happiness but I’m a firm believer in the fact that you can’t take the good without the bad. And the good far outweighs the bad!

We’re really looking forward to working together on Style Birmingham Live. Emma and I were talking about it all the way through the summer, and have already planned where we’re going to go and what we’re going to do while we’re there: can’t wait to have a night out in Birmingham! I’ve had a busy September, doing gigs around the UK and Europe, so it’ll be a great note to finish the month on.

Sally Gunnell is the only woman to have held the European, World, Commonwealth and Olympic 400 metre hurdles titles at the same time. Since retiring in 1997, she has forged a stellar career as an ambassador for British sport across the world and as a motivational speaker and TV pundit. Do you think Britain’s recent sporting success stems from the Olympics? I think so. It’s interesting, because the people who didn’t do too well in the Olympics, particularly in athletics, are doing great now on the back of that support from the games. How do you think the Olympics have affected attitudes towards women in sport? The whole topic of women in sport is in a much better place now, but we’ve still got a long way to go. I think role models are really important in any sport, and Jessica Ennis has undoubtedly inspired a generation to follow in her footsteps. Having had such a rigorous fitness regime throughout your career, how do you keep fit these days? I’m nowhere near as strict as I was professionally, but keeping fit is still an important part of my life. I watch what I eat because it affects not only my physical form, but also how I think and perform, and regular exercise keeps stress at bay! I really enjoy running, cross training and walking my dogs. Which do you prefer when dressing: comfort or style? I’m going to say both! I love the idea of buying a new outfit and getting ready for a night out, but I tend to really enjoy comfy days lounging around at home, too. What advice would you give to someone looking to take their career to Olympic level? I think it helps to join a club related to the sport you want to do, and then really enjoy it. If you enjoy it, you’re more likely to stick to it and become the best you can be.

James Cracknell is one of Britain’s most successful athletes of all time, with two Olympic gold medals and six World Championship rowing titles, plus a spectacular career as an adventurer, including rowing across the Atlantic, trekking to the South Pole, and cycling, running, rowing and swimming his way from LA to New York. What is the most successful adventure challenge you have undertaken so far? The one where results mattered the most were the Olympics, whilst the others are just more of a journey. With the Olympics, you train for years and then get that one day where you have to get it right, so it’s a different kind of pressure. What are your views on the legacy of the 2012 Olympics? The word legacy is a funny one. For me, it’s not about finding the new Mo Farah, but getting people to live more healthily. Also, if we are to try and justify this kind of expenditure on a month of sport, then it can only be achieved through benefiting society in some way. Any career advice you’d give to budding rowers? I think having a sense of shared responsibility is the most important thing: your dreams are in someone else’s hands, and theirs in yours. A teamwork mentality is vital because three or four other people can’t go out and compete if you don’t show up. Also, maintaining a healthy balance between your career and social life is important – you don’t want to abuse either one! What music are you listening to right now? It’s by no means new, but I recently bought The Killers’ latest album, which I’m enjoying a lot right now. If you could have anything in the world, what would it be? Definitely more time!

You recently performed as part of the BBC Urban Proms at the Royal Albert Hall. Being quite different to what you’re used to, musically, what was the experience like for you?

What are your go-to fashion labels?

It was an amazing experience for me to perform at a venue as iconic as the Royal Albert Hall, with a full live orchestra. The place has an enchanting, captivating feel about it, which you can’t help but feel overwhelmed by whilst performing.

I’m still into my old school names like Armani, Ralph Lauren and Dolce & Gabbana, but I recently discovered an Italian brand called Angelo Gallasso that has some really nice pieces for special events. How did the collaboration with Jacob Banks for Doing OK come about? What was he like to work with? I had a session with producer Knox Brown, and he played me the beat. It already had the chorus down by Jacob, who was also present in the studio, and I felt that it was perfect for me. Jacob’s such a humble, down to earth guy, and we just bounced off each other’s energy whilst recording Doing OK. Tell us about the message and inspiration behind the video? The message behind the song and video in a nutshell is: at times, we all dwell on the negative things happening in our lives, but if we look at all the positive things we can realise the situation isn’t as

What difficulties do you think emerging music artists currently face in the industry?

The best thing a fan has done is taken the time out to make me a picture collage with a poem. The worst had to be a when a fan complimented and insulted me at the same time, saying they’re a big fan of the work I do, but not liking any of my recent songs. That was pretty confusing! Whom did you musically aspire to when starting out in music? For me, it was guys I could identify with, like Swiss, Kano and Dizzee Rascal. They came from the same UK urban scene, and from a similar neck of the woods as me when they found success. Their music and achievements continue to give me something to aspire towards.

I think that getting their songs played regularly on the major radio stations is what they’re finding most difficult. You can be the best artist out there with a number one hit, but without the support from the major stations your song wouldn’t be heard by the masses. What’s the best and worst thing a fan has ever done for you?

First album you ever bought? The first album I ever bought was Michael Jackson’s Bad. It’s funny, because back then I thought Michael was the ‘baddest’ man on the planet!

Which artists would you like to work with in the near future? I’d love to work on something with Emeli Sandé or Damian Marley, two artists I respect highly. I think we’d come up with something really beautiful and meaningful for the fans. What’s next for Wretch 32? Next up is my UK headline tour, kicking off in October, which I’m super-excited about! Top a chilled wine glass with crushed ice to three quarters full, then strain the mixture over the ice. Top the glass up with crushed ice. Garnish with mint leaves.

AUTUMN SPICE The new season is all about spicy, warming drinks. Try the new fruit cordials from Belvoir Fruit Farms, made with no preservatives or chemicals, but plenty of flavour, including Apple Plum & Cinnamon: ideal served hot on Bonfire Night (from £3, all supermarkets). Serves: 4 Preparation time: 15 minutes Cooking time: 35 minutes

SHALLOT, PUMPKIN AND RED PEPPER SOUP You’ll need: For the soup: 4 red peppers, deseeded and cut into quarters 30g butter 1 tbsp rapeseed oil 6 shallots, diced peeled 750g pumpkin, peeled and diced into 2 cm pieces 1 red chilli, deseeded and finely chopped 4 garlic cloves, peeled and crushed Leaves of one sprig of thyme 1.2 litre good vegetable stock 100ml double cream (optional) Sea salt and black pepper For the candied shallots: 250g unsalted butter ¼ tsp of cumin seeds 8 (250g) shallots, peeled and sliced ¼ tsp ground cumin ¼ tsp paprika 1 tsp honey To serve: 2 tsp chives, finely chopped 30g pumpkin seeds, toasted 120ml low fat crème fraiche

Perfect fare for harvest festival time, the fresh pumpkin in this soup makes it a fun supper for Hallowe’en parties, too

What to do: Preheat the oven to 200°C/400°F/Gas Mark 6. To make the soup: place the peppers skin side up, on a baking sheet and roast in the preheated oven for 20-25 minutes, until the skins are charred. Remove from the oven and place in a bowl. Cover with cling film and leave to cool. Once cool, peel off the skins, and reserve the flesh. Meanwhile, melt the butter with oil in a large, heavy based saucepan. Add the shallots, pumpkin and red chilli, season with sea salt and black pepper and sweat the vegetables for 5-10 minutes without browning. Add the garlic and thyme and cook on a low heat for a further minute. Pour in the vegetable stock, bring to the boil and simmer gently for 15 minutes. Add in the red peppers and cook for a further 5 minutes. For the candied shallots: melt the butter in a small pan over a medium heat, add the cumin seeds and shallots and fry until soft. Add the ground cumin and paprika and cook the shallots for a further then 1 minute, stirring the shallot mixture all the time to prevent burning. Fry until caramelised for approx. 1-2 minutes. Remove from the heat and season with sea salt and stir in the honey. To finish and serve: blend the soup in a food processor or hand blender and adjust the seasoning to taste. Return to the pan, if a little thick add more stock and if you wish, stir in the cream. Gently reheat the soup and ladle into warmed bowls. Place a spoonful of low fat crème fraiche in each and sprinkle with the chives, toasted pumpkin seeds and candied shallots.

JOHN TORODE’S SALT & PEPPER SQUID WITH SWEET CHILLI DRESSING Masterchef maestro John says: “This is one of those dishes that I have cooked for years. Squid can now be bought in supermarkets all around the country, and remember that you can buy sweet chilli sauce to use in the dressing, as well”.

You’ll need: For the chilli dressing • 3 whole dried chillies • 50g palm sugar or brown sugar • 2 limes, juiced • 125ml fish sauce For the squid • 1litre vegetable oil, for deep frying • 500g (cleaned weight) medium sized squid • 10 white peppercorns • 1 heaped tbsp sea salt • 100g plain flour • 1 head of garlic, separated into individual cloves • A good handful coriander leaves

What to do: 1. For the chilli dressing, heat a frying pan over a medium heat and add the dried chillies. Keep them moving around the pan for a minute or two, until they start to darken in colour and smell toasted. Remove from the pan and put into a mortar. Pound the roasted chilli, then add the palm sugar or brown sugar. Continue pounding, adding the lime juice and the fish sauce. Mix well and place to one side. 2. Preheat the oven to 160C/325F/Gas 3. Preheat the vegetable oil in a wok or a deep fat fryer if you have one. 3. To prepare the squid, pull out the tentacles, and trim their tops to remove the beaks. Open out the squid body and, using a small sharp knife, gently score the inside surface of the squid, taking care not to cut all the way through. If the squid are large, cut them into quarters. If using baby squid, these can be simply halved. Set aside. 4. Pound peppercorns and sea salt together in mortar and pestle, then add flour and set to one side.

5. Peel half the garlic and pound with the remaining whole garlic cloves. They should split open and the flesh and the skin should come together. Throw the pounded garlic into the preheated oil, including the skins. Lower the heat to a bubble and leave to cook for a good 5 minutes, stirring every so often. The garlic will float to the top and be crisp. Using a slotted spoon, remove the garlic and drain on kitchen paper. 6. Place the pan back over a high heat and when the oil starts to shimmer, it’s ready to cook in (or use a kitchen thermometer and heat the oil to 190C/375F). Toss the squid in the seasoned flour so that is coated well. 7. Drop a quarter of the squid in to the oil and fry for about 4-5 minutes. As it cooks, it will curl up and go crisp and lightly browned. Once cooked, remove the squid from the oil using a slotted spoon and drain on kitchen paper set onto a baking tray. Keep warm while you cook the remaining squid.
