In a new in-depth interview with Style Birmingham editor Sarah Drew Jones, Caryn lifts the lid on her 30 years in the often weird but always wonderful world of fashion

W

hat Caryn Franklin doesn’t know about the world of fashion isn’t worth knowing. A leading journalist, broadcaster, commentator and, as she says, ‘agent of change’ since the early 1980s, Caryn knows fashion inside out, especially how vital it is to women’s self-confidence. On the eve of The Clothes Show Live, with which she’s worked for 26 years, Caryn shares a few secrets and hopes for the future of fashion.

On the fun of fashion I came to fashion in the ‘80s when it was all about discovering who you were and celebrating all that you could be, not following trends. Fashion then was about personal statement and styling. It’s hard for people under 40 to understand, but there was no mass market high street and very little promotion of what was happening on the catwalk. London Fashion Week is completely different these days. I still go to it but not with the same intention to cover everything because you don’t have to be there to see it all! It used to be that you couldn’t take any of your own pictures: only official photographers, and their pics went to a handful of high fashion magazines who wouldn’t write anything about the trends for six months. Fashion and fashion product wasn’t ‘democratised,’ in the way it is today. For me, fashion was always about enjoying myself. Putting something on was a signifier of who you were, and once I got dressed and left the house, I didn’t give it a second thought. I loved deep fashion in those days, and changed my hair all the time, shaving my head, having hair extensions, dyeing it black and then white. That’s the beauty of youth: having the time to ask

yourself, who am I, what do I stand for and what does that look like? What fashion seems to have done is appropriate this voyage of discovery and sell it back to us as a set of seasonal trends and that is something I’m not in love with. It’s the ‘corporatisation of creativity’, as Debra Bourne, co-founder with me and Erin O’Connor of the All Walks Beyond the Catwalk initiative (allwalks.org) says. Is this a golden age for Brit fashion? Fashion has highs and lows, but ‘Brand London’ is doing well right now. You can’t be on top season after season – some collections will always be better than others – but London is always in the creative zeitgeist. We’re in a time where British creativity and London-centric vision is highly desirable. People like Christopher Bailey at Burberry and Stella McCartney are at the top of their game. I love new designers. Their energy excites me more than the big labels. If you work with someone just as they’re first stepping out, you’re dealing with the integrity of the person not that ‘corporatisation of creativity’ element. I am always inspired by the creativity of undergraduates, recent graduates and small businesses because I love to see what’s emerging. At the start it’s all about ideas.

“Brands should start thinking about other consumers who are hungry for good design” On women, fashion and confidence Female self-esteem seems to be something that businesses can’t grasp. Key studies show that when women are shown a range of body ideals, they respond to the one they most closely resemble. The retail world can benefit from understanding that. For example, women of colour have been saying for years that they are underrepresented and have money to spend, especially in beauty. They want messaging that speaks to them. I believe we’re going to see this more and more: women are beginning to demand change from retailers.

Shoppers have power. If a retailer is showing you images of unachievable beauty or body shape – showing clothes on very young women who would not wear those clothes in real life, say - I would urge women to vote with their purse and take their business elsewhere. If retailer messaging is ignoring you... why are you still shopping there? The power that we have in deciding where to spend our money can be extremely influential. If you’ve lost your confidence with fashion and don’t know what your style is anymore, start with your self-esteem. Fashion is a tool for you to use. It takes confidence to say ‘that’s not going to work for me’: it doesn’t matter how often fashion editors say it will look great on you, just because they are showing it on an eight stone, six foot model, no-one knows your body better than you do, so start looking for features on garments that will flatter your shape within the trends.

On the high street The 18-24 thin, white, party girl aspect of the fashion market is saturated. Brands should start thinking about other consumers who are hungry for good design. There are a lot of 50-plus women out there who are fashion literate and don’t want elasticated trousers! We still don’t offer good fashion choices to women above a size 18. Marks & Spencer is, though, at least trying to cater for a wider audience. I heard some mixed comments about its recent Leading Ladies campaign (that featured the likes of Helen Mirren, Emma Thompson and Annie Lennox) and yes, they probably spent way too much money on it but I thought the energy and intention was great. It was an excellent attempt to make a connection with its varied consumer base. There’s such a yearning for this age and gender inequality gap to be rectified, that whenever a brand tries - it may be a small drop in the ocean, and therefore it can’t right all the wrongs - it gets harshly judged. But if M&S did not receive enough encouragement would we be happy if they reverted to standard fashion models once again? We as consumers have to be careful: we have a big influence. If you want change, get in there with your positive feedback and back it up with your purchases! The wonderful independent retailer is now a rarity: someone who asks women what they like to wear and how clothes fit into their lives. These days, women have less time to spend shopping and so they go mass market: but what they often lose is service, empathy and understanding of them as an individual.

I’m celebrating 26 years with The Clothes Show Live this year and I have a soft spot for it. Jeff Banks was instrumental in starting it in the 1980s and he realised that women wanted to experience fashion, not just watch or read about it. Catwalk shows used to take place behind closed doors, but this was a chance for everyone to attend. This year, there will be a Platinum Area for discerning consumers who want a more salon-style experience, in beauty, hair and also in fashion, to see the new ideas that are coming through. This is for women who have opinions about fashion. I love the educational element of the show. We reached out to schools and colleges so we could cater for those students who are perhaps thinking of what to do after sixth form, or considering whether to go to college to pursue a career in the fashion industry. So, we’re doing taster seminars with industry experts talking about the broad range of jobs available in the fashion world. Young creatives may think that the only job is to design clothes but there are loads of other options to learn about. An extra addition is our body confidence seminars for young people. Body image is now firmly on the agenda from many enlightened organisations. We have to address the self-esteem of young people and help them to learn how to deconstruct fashion so that it doesn’t affect their confidence. The catwalk shows are a brilliant experience. We have big names such as Henry Holland

On the Clothes Show Live hosting, and it’s very exciting. It’s great to be involved in such a massive event, where people of all ages can come and experience fashion, have fun, see what’s new and innovative and, let’s not forget, take home some bargains! We want visitors to take pride in products that have been made here, so this year we’ve linked up with the Made in Britain initiative. It celebrates factories that are not too far away, for example, I’ve been working with Jack Masters Knitwear, a first generation Asian, family-run, company in Leicester. I visited and talked to some of the employees who proudly told me they’d been with the company for 20 years because it was such a great place to work. They supply many of the big high street brands, and are a British success story. This year, we ran a competition to design a Christmas jumper and the winning design will be available to buy from the Jack Masters stand at the show. British fashion producers are very proud of what they do, and we should be proud of them too.

THE CLOTHES SHOW LIVE: YOUR COMPLETE GUIDE The Clothes Show Live in association with Alcatel Onetouch returns to the NEC Birmingham from December 5-9 2014. With more than 500 leading fashion and beauty brands, it’s the ultimate day out. Some of the highlights: CATWALK SHOWS: Fashion designer Henry Holland, broadcaster and writer Rick Edwards, and Chelsea favourite Jamie Laing will present the runway shows, joined by girl band Neon Jungle on Friday 5, and British breakthrough singer-songwriter Jetta on Saturday 6. SHOPPING HAVEN: Shop from more than 500 pop-up shops and discover vintage collections, one off boutiques, leading fashion brands and emerging designers.

On ethical fashion The Rana Plaza factory collapse in Bangladesh last year was shocking. I visited Dhaka, the capital, in June and spoke to women who’d worked at the factory, some of whom had been injured or lost friends and family. It was heartbreaking. I met grandmothers who had lost three members of their family, all the wage-earners and who were now charged with looking after children orphaned by the tragedy. Very few of the British fashion companies had paid any compensation. I know that few people who love fashion would want a situation like this, just so that they can buy cheap clothing. We trust retailers to do the right thing and treat their workers well, but it’s about the drive to get sales up and margins down. The human factor is taken out of the process. My favourite high street store is COS, and I always say to the person serving me, what else can you tell me about how this is produced? What can you tell me to reassure me that the money I’m spending goes back to the maker? I believe that most consumers would rather pay more and know that it’s going to create a living wage for the people who make the clothes. I’m full of sympathy for the fashion consumer: we’re all so busy with so many demands on our time, we leave it to the retailer to act with honour.

I have a lot of clothes from sustainable fashion label Junky Styling which deconstructs and remakes pre-loved clothes to give them a new lease of wear. I take in my clothes and they re-make them, because though the trend may have passed, the quality of the fabric was great and I loved it. Ada Zanditon is another sustainable designer I love. I also buy from Vivienne Westwood in the sale, and I buy a lot of vintage and secondhand these days. I have an extensive wardrobe of pieces from friends who are designers. I have always bought classic pieces from studio sales and I add embellishments now and then. Clothes are art. I don’t want to engage with a whole new wardrobe every season, and when you’ve spent money on fashion you want to hang onto it, like a painting on your wall. Clothes are memories and a comfort blanket. I have a pair of delicious Georgina Goodman shoes on my bookshelf. I have a lot of pristine ‘stage shoes’ that I wear when I give talks and presentations: often when you’re on stage, shoes are at the audience’s eye level, and you don’t have to run for a bus in them, so they don’t have to be practical! Shoes, unlike handbags, retain their curves and beauty when not being worn: they’re like sculpture.

You’re straight off a US tour and into a UK one: are you looking forward to it? I am looking forward to it but I am also concerned I am going to lose my voice (laughs). But I have a three-week gap which is more than enough, I just need two days for recovery. Each tour seems to get bigger – are you going to do anything different on this one? It’s a bigger band, there are three additional players, there’s a brass section, 12 people on stage including me. It’s not a bigger show than in the past but it is the same high standard. Do you remember specific dates as highlights from previous tours? Cardiff! But I don’t know where I am going on this tour! It’s just that everyone is so pleased you have gone to their town or city and not missed it out. Being on tour is an amazing atmosphere: you know when you watch films and you see pop stars, it’s the closest you could feel to that, it feels like being in a film. The Scottish audiences are always super-receptive: the further north you go the more rowdy people get. As a performer I prefer it because I like to feel people are giving it back as it makes me perform energetically. I also consider myself to be an honorary northerner. Leeds, Manchester, Sheffield, all that way I love as I used to live in Leeds so have quite an affinity with the people there.

Do you take any home comforts on tour with you? We’re on a tour bus most of the time so we all have a lot of different exciting types of pyjamas. A lot of onesies flying around. On one tour – and this one will probably end up the same - you know in The Big Lebowski how the dude is always in his flip flops and dressing gown holding a White Russian? That is basically me on tour. In my flip flops and dressing gown until two hours before stage then I go and turn into this glamorous thing. The rest of the day I have a pyjama party. Isn’t touring hard work? It’s funny, people always say being on tour must be so gruelling but I think it is the most ungruelling element of my job. Shall I tell you why? Because I hate doing interviews. It’s basically luxury to me to get up every morning and have literally nothing to do for an entire day, then do two hours’ work at the end of the day. Two hours to get ready, then two hours on stage, that’s four hours’ work a day. That’s nothing compared to normal days. Yesterday I woke up, started work at eight and finished at 1.30am, that’s a normal day for me. I was doing personal training then interviews for the entire day then went to the studio to record more music, and I got home at 1.30 am. I just think it’s ridiculous. On tour is like going on holiday. All those musicians who are telling you that it’s hard are lazy. It’s easy.

And also you get to perform so you get full of natural drugs every night, adrenaline and stuff. Do you get a chance to explore the cities? I tend not to because when I’m outside

London it’s quite difficult for me to go incognito and I find that quite exhausting. I try to really just reserve my energy when I am on tour. If I go out and do pictures with everyone in the street all day I’ll be tired by the time I come to perform. I tend to just hide away. Even if I go out in my flip flops and my onesie they do recognise me, believe me I’ve tried it! It’s the same for holidays: I tend to go to places where I’m not wellknown. It’s getting worse, the bigger each release gets.

for that tour, it’ll be bigger and better than I have ever done, with a lot more people involved and visual elements and stuff.

Are you happy with the success of your album A Perfect Contradiction?

Yes, I have a US tour, Oz tour and European tour as well, next year. I was number one in Australia - and that’s my first number one in my career – and it lasted for a few weeks so it’s pretty amazing. It’s building nicely and doing well in Holland which is reassuring as it was Holland that broke Pharrell with Happy on his comeback. So, yeah, I am pleased. I am doing a lot more damage than I have in the past!

I am happy but obviously it could have done worse and it could have done better! What was it like to perform at the BBC Proms? That was the best moment of my career to date. It was just all of it. I have done quite a lot with that orchestra before, become friends with a lot of them, it was nice to walk on to the Albert Hall stage for the first time and feel like I was with a family rather than being really nervous. I have done a lot of stuff there before where I’ve done just the one song but it was my first proper own show. The venue suits me, it wasn’t my choice that it hasn’t happened before. Your European tour ends in mid-December - are you thinking about Christmas yet? I haven’t really thought about it, usually I am the one who organises Christmas for

everyone but I think this year I am going to stand down because I’m really tired. And I will be touring again in the UK in March, this time in big arenas. I had only done one arena before in London and it is exhilarating. It’s scary as well because you’ve got to get yourself together and get organised, put on a good show. I am really excited but also nervous as it is a lot of seats to fill and it is very obvious when you haven’t filled them. What are your thoughts on filling an arena stage? It’s not going to be the same as this tour, it will be all bells and whistles. I am already in talks about it now, in the early autumn. I have a lot of good things planned

Is it daunting to think about how many people are employed by you to put together a show like that? I don’t find it scary. I think it makes me feel confident that I have staff. I feel good that I have built a little empire. Next year will also bring a world tour…

With 2015 mapped out, have you had time to think about a new album? On my latest album, I have been working with people I haven’t worked with before and I am really enjoying it. I’m concentrating on that. The next album won’t be ready for a while as I have to get all these tours out of the way and I have also been writing for the repackaged version of the current album. We heard a rumour that you had recorded with Dame Shirley Bassey…? Yes, it’s true. I recorded a duet with her for her album marking 60 years in music. It’s not a secret James Bond track, but I wish it was.

Any last words? I am hoping that more than six people turn up for my arena tour because it will be a bit humiliating, so please come… A special edition of Paloma’s platinum-selling album A Perfect Contradiction will be released on November 10, including the new single Ready for the Good Life. A deluxe double CD edition will also include a recording of Paloma’s headline performance at the BBC Proms. Paloma will play Wolverhampton Civic Hall on November 22, and her 2015 tour arrives at the Birmingham NIA on March 19: all dates and details at palomafaith.com

THE GIFT OF FASHION Lotty Harper’s a lifelong fashionista and here shares a few ideas for gifts and treats for the style savvy woman who has everything! While my 16-year-old brother was busy restoring one Mini Cooper S after another and shipping them off to Japan to sell, there was I, aged 14, listening to Duran Duran and working out how to make my next fashion purchase. Looking back, it was an Armani jumper that started off my passion for fashion. How I coveted that sweater! To fund it, I got a job at my local French restaurant, Michelle’s on Harborne High Street. I arrived on the first day in stilettos to start my new position - as the preparer of the starters, no less - and was promptly told to go home and change! Fashion is the story of my life. At one stage, I had four part time jobs to feed my high couture habit. I had a reserved rail in the basement at The Ginger Tree in Edgbaston and when enough money was saved up I would pop down to pick up my favourite item... frequently Moschino. In the words of the great Carrie Bradshaw: “I like my money right where I can see it... hanging in my closet.” It works for me!

As the years have rolled by, my love of designer clothes has never waned. Now I save up for trips to New York where my favourite destination is Patricia Field’s boutique – stylist for Sex and the City and The Devil Wears Prada. On my first visit there back in 2006, I was lucky enough to meet Ms Field in person. For someone who worships at the altar of high fashion, it was the equivalent of meeting the Pope! If you’re like me – or know someone like me – the chances are it’s almost impossible to buy the right gift. No-one ever knows what to get you as your tastes are so specific. hen you think of Jimmy Choo you think of a brand that’s highly regarded in high fashion and so to be the first face of it, for men, is incredibly exciting. When I first sampled the Jimmy Choo fragrance it brought memories of, strangely enough, nights out in London, comfortable nights in and also wild nights out on the town. I had a bit of both high intense flavours and more mellow ones. It’s a fragrance for sophisticated modern men. My own personal style? I’d like to go for English gent but I’m pushing it a bit there! I like very fitted clothing and stylish, simple and plain colours. I’m a big admirer of Leonardo DiCaprio I also admire Jimmy Stuart, Frank Sinatra, Johnny Depp. They’re all very good looking and extraordinary dressers.

PARKA LIFE The utility trend that dominated the menswear catwalks this season has one key piece at its heart: the oversized parka. This fur-trimmed version from Jacamo, £90, ticks all the right boxes: jacamo.co.uk

I’m into modern folk music at the moment. I like Mumford & Sons and I rediscovered Fleet Foxes. The Jimmy Choo man is inspired by 1960s Mayfair playboys, and I like a night out in Mayfair. I don’t go out to clubs but there’s a place called Shepherds Market which has some brilliant pubs and some nice little restaurants. My signature cocktail in winter is an Old-Fashioned and in summer it would be something like a Dirty Martini.

I live in Camden now and I love the people in London and the humour. I love how wild people go and our history of partying and our drinking culture. Fragrance has the power to evoke strong memories. There’s a musky one that an ex-girlfriend used to wear: I can never remember what it was, but it was something she wore all the time when we travelled through India and every now and again I’ll get a whiff of it on the train or something and it takes me right back. I’m enjoying my Jimmy Choo biker boots. I throw them on whenever I’m going out, because I like an everyday shoe that you can really wear down and it will look even better as it ages. On a woman, a high heel always works for me but I like a simple ballet flat shoe too. The wildest night out I’ve ever had? There’s so many and yet so little to tell. I had a wild night out in Reykjavik once with a fellow actor. We were in Iceland filming and it ended up…well, actually I can’t tell you how it ended up. AUTUMN’S BLAST FROM THE PAST The new season runways were awash with trends we’ve seen, worn and loved before, says Sarah Morris

Whilst many people appreciate the changing colours of the leaves on the trees and the harvest during autumn, for the fashionistas amongst us this season can only mean one thing: a new wardrobe! So, new season, new styles, right? Well, that’s not strictly true. We all know that fashions are constantly being recycled, but how about if I told you that you were about to wear what your 11 year old self once wore? Would you believe me? What if I told you I used to wear striped leggings, Dr Marten boots, baggy t-shirts and shell suit jackets complete with bum-bag? The good news is that this look isn’t coming back into fashion (yet), although I have just bought a pair of clodhopper boots that resemble my old Dr Martens. But plenty of old favourites ARE back with a vengeance. You might find yourself pulling some of these familiar trends off the clothes rails this season: ANORAKS: Yes, the trusty, practical anorak is back. But don’t worry, you don’t have to wear those sweaty nylon styles your mum used to force you to wear as a kid. This time they’re back in a much more luxurious,

albeit still practical guise. For a smarter look, take a lead from Stella McCartney’s gabardine creations, or try a trapeze or poncho style a la Christopher Kane at Burberry. If you do fancy the retro school trip look, then head over to Miu Miu for some style inspiration. DISCO: Just because Studio 54 is a thing of the past doesn’t mean the glitz that went with it will ever fade from fashion’s collective memory. Whilst the boob tubes, flares and hotpants may not be making a comeback this time around, the glitter, sparkle and shine is. Keep it fluid and bold in head to toe sequins like Marc Jacobs, smarten it up with pleats and tailoring as seen on the catwalks for Marco de Vincenzo or try Ashish’s sporty take on the look with all over sequined and embellished sweater dresses and shorts and t-shirt combos. EIGHTIES/NINETIES STYLING: While my old ‘look’ probably isn’t likely for this season, elements of it most definitely are. Chanel sent models down the catwalks in striped and panelled leggings whilst Louis Vuitton fashioned zip-through track tops into dress styles. For those who like a little power dressing there’s potentially good news as the XL suiting has made a return – seen in electric blue boxy suit styles from Emanuel Ungaro.

As for footwear, it looks like the slouch boot is also set for a return – a welcome one in my book! COLOUR CHANGE: Remember those tie-dye T-shirts that changed colour as you became hot and sweaty? Firstly why on earth did we think that something that clearly states you’re publicly sweating is cool, and secondly, why would you want to reintroduce it? Good question! Ask Alexander Wang, who’s taken a technical approach to the idea with his colour change designs. Think I’ll leave that one on the catwalk for now! FAIRYTALES: Remember dressing up as your favourite fairytale character? Well, with Alexander McQueen’s ethereal white styles and D&G’s cloak styles, you might be able to relive your childhood fantasies all over again. There’s a nod towards fairytale motifs being used to detail cloaks and dresses too if D&G are anything to go by. SCI-FI: Finally, for those of you who might be longtime Star Wars fans, now is your chance to wear your favourite cult film literally (well, sort of) on your sleeve. Look to Rodarte for your inspiration from their range of floor length silk dresses, printed with Luke Skywalker, R2-D2 and Yoda, or Preen’s Darth Vader motifs.

Canada’s stunning Rocky Mountains have pictureperfect Lake Louise and Banff at their heart. And the ski season is just about to start, as Sarah Drew Jones discovers

T

he ancient beauty of the Rocky Mountains and guaranteed deep snow mean the area is always at the top of the world’s best ski charts. Exquisitely pretty and deeply glamorous (thanks to the Hollywood A-list flocking there to ski, climb, hike and snowboard), the dramatic Rockies of Alberta are the perfect winter destination. Head to Lake Louise in the south of the state. Life here is geared towards the outdoors, taking full advantage of the stunning natural geography: soaring mountain ranges, clear blue lakes and luscious green meadows. Downhill and alpine skiing, snowmobiling, rock-climbing, fishing, horse-riding, ice-skating, hiking and wilderness camping are just a few of the adventures on offer, but if you like a slower pace, you’ll adore the many small, mountain towns that are speckled throughout the area, with gift shops, authentic country lodge stores and plenty of restaurants serving hearty fare.

Evenings are community-based and fun in Lake Louise, and the regular Torchlight Dinner and Ski is the highlight. This ultimate après ski event begins at the end of the day with a chairlift ride up Glacier Express for appetizers and spectacular sunset views at Whitehorn Lodge. Then you can ski down a freshly groomed run accompanied by expert guides, followed by a buffet dinner with live entertainment in the Sitzmark Lounge back in the village. Hotels are plentiful in the area but the best is celebfavourite The Fairmont Chateau Lake Louise, an imposingly grand hotel on the shores of the lake: fairmont.com/lakelouise. With a fantastic spa and Aveda salon, plus a choice of restaurants, it’s a gorgeous hotel that looks like a fairy castle yet offers five-star luxury. Lake Louise sits at the very pinnacle of Banff National Park, a UNESCO World Heritage Site, and is often called the most scenic ski area on the planet. With a sixmonth ski season from the start of November, the area’s known for its light, dry, ‘Champagne’ powder snow, and four vast mountain faces make it possible to follow the sun all day long. There’s an abundance of gentle slopes and long, cruising runs, but, famously, also an enormous choice of the some of the most challenging terrain in Canada. Check out The Lake Louise Ski and Snowboard School (skilouise.com) for kids’, private and group lessons, or sign up to a free guided tour from one of The Ski Friends, the Rockies’ volunteer guides who all know and love the area: they can advise you on everything from ‘black runs’ to the best snowboarding or even sleigh ride trails. Take a day trip to Skoki Lodge, a Natural Heritage Site visited by the Duke and Duchess of Cambridge on their official tour of Canada a couple of years ago. It’s only accessible by hiking, skiing or snowshoeing through 11 kilometres of exquisite wilderness, but the historic lodge, local wildlife (including black bear and beaver) and the breathtaking views are worth the journey. You can feast on a gourmet fireside dinner and stay overnight, too: skoki.com

Nearest airport: Calgary International Airport (British Airways fly daily from Heathrow, from around £360, and several airlines fly indirect flights from Birmingham, via one stop in Europe). 20cm (8in) round deep cake tin 20cm (8in) cake board

Preheat the oven to 180°C / 350°F / Gas 4 and line the cake tin with baking paper and brush with oil.

YOU’LL NEED

Vegetable oil 200g (7oz) butter, softened 200g (7oz) caster sugar 4 eggs 140g (5oz) plain flour 60g (2½oz) cocoa powder Pinch of salt 2 tsp baking powder 400g (14oz) Elizabeth Shaw Flutes* any flavour (about 80 in total)

FOR THE BUTTERCREAM 250g (9oz) butter, softened 500g (17½oz) icing sugar 100g (3½oz) Elizabeth Shaw Cocoa Crunch Bar, melted and slightly cooled For decoration: strawberries or raspberries

Cream together the butter and sugar in a large bowl until pale. Add 2 eggs and half of the flour and mix well. Add the rest of the eggs, flour, cocoa powder, salt and baking powder and beat for a minute or 2 until mixed well. Pour the mixture into the prepared tin and bake in the oven for about 30-40 minutes, or until a skewer inserted into the middle comes out clean. Leave to cool in the tin. Meanwhile, make the buttercream: put the butter and icing sugar in a bowl and whisk together until the mixture goes fluffy. Add the cooled, melted cocoa crunch bar and whisk for a further two minutes. Once the cake is completely cool, remove it from the tin and carefully cut the top flat with a large serrated knife. Turn the cake upside down onto the cake board so that the bottom now becomes a nice flat top. Split the cake horizontally and sandwich the top and bottom together with a 1cm/½in layer of buttercream. Spread half of the remaining buttercream all over the top and sides of the cake, making it as smooth as possible. Put it in the fridge to set before doing another layer - this makes it much easier to get neat squared off edges. Gently push the Flutes vertically onto the sides of the cake, positioning them as straight as possible and making sure they touch the bottom. You can then scatter fresh raspberries or strawberries over the top of the cake for the finishing touch and serve! CHEEKY CHOCOLATE BATS

Kids will love these cute little bats for trick or treating Preparation time: 2 hours plus cooling and chilling Cooking time: none (or 10 minutes to melt the chocolate) What you need • 125g (4 ½ oz) plain cake crumbs • 1 sachet Dr. Oetker Fine Dark Cocoa Powder • 40g (1 ½ oz) icing sugar • 50g (2oz) unsalted butter, melted • 5ml (1 tsp) Dr. Oetker American Peppermint Extract • 150g Dr. Oetker Fine Cooks’ 72% Extra Dark Chocolate • To decorate • 75g (3oz) Dr. Oetker Fine Cooks’ 72% Extra Dark Chocolate • Dr. Oetker White Designer Icing • Dr. Oetker Bright Writing Icing (Red)

What to do 1. Put the cake crumbs in a mixing bowl. Sift the cocoa powder and icing sugar on top. Mix in the melted butter and peppermint extract until well combined. 2. Either using a cake pop baller or your hands, form the mixture into 9 x approximately 4cm (1 ¾ inch) diameter balls and put on a plate lined with baking parchment. Cover and chill for 30 minutes until firm. 3. Meanwhile, make the bat wings. Break 150g of the Extra Dark Chocolate into pieces and put into a heatproof bowl. Place over a saucepan of barely simmering water to melt. Remove from the water and leave to cool for 10 minutes. 4. Using a bat shaped cookie cutter or template, trace 9 sets of wings spaced a little apart on sheets of baking parchment – each wing needs to be about 7cm (2 ¾ inch) long, and approx. 4cm (1 ¾ inch) deep. Put the parchment, trace side down, on a large board. 5. Spoon about one third of the melted chocolate into a small piping bag without a nozzle. Snip a little of the bag

away at the end and begin piping round each wing shape to give an outline in melted chocolate. Leave for a few minutes to set before going back and filling in the centres with more melted chocolate to make them solid. Leave in a cool place to set. 6. Place a small sheet of baking parchment on another board and pipe the outline of 9 pairs of ears. Once set, fill in the centre with melted chocolate. Leave in a cool place to set. 7. Once the wings have set, pipe on the wing detail and leave aside until ready to assemble. 8. To decorate, break up the remaining Extra Dark Chocolate into pieces and place in a small heatproof bowl. Melt as above then remove from the water and mix with the melted chocolate left over from making the wings and ears – you may need to re-melt this. 9. Line a large board with baking parchment. Working on one cake ball at a time, drop it into the chocolate and gently turn it over using a fork to coat completely. Carefully lift out the ball on

the prongs of the fork and gently tap the fork several times on the side of the bowl to remove the excess chocolate and to give a smooth finish. Put the ball on the lined board. 10. Whilst the chocolate is still wet, carefully peel off a pair of wings and ears and gently press into the sides and top of the chocolate cake ball – to avoid getting fingerprints on the chocolate, you may prefer to wear thin latex gloves for this. 11. Repeat this process to cover and decorate the remaining cake balls, then put the chocolate bats in a cool place to set. If the temperature is warm, cool them in the fridge for about 15 minutes. Keep any remaining melted chocolate for the final decoration. 12. Once the bats are set, pipe on the whites of the eyes using Designer Icing and a big smiley mouth using red Writing Icing. Re-melt the leftover chocolate as necessary, and either pipe or brush on small amounts for eye balls and noses. Leave for a few minutes to set and then the bats are ready to serve and enjoy!

Alarmingly realistic, yes, but delicious treats all the same… Preparation time: 20 minutes Cook time: 20 minutes

What you need For the choux pastry

For the glaze coating

• • • • •

• 25g TOTAL Greek Yoghurt • 200g white chocolate • Black and red food colouring

150ml water 50g butter 60g strong plain flour 1 tsp caster sugar 2 large eggs

For the filling • 250g TOTAL Greek Yoghurt • 75g strawberry jam What to do 1. To make the choux pastry place the water and butter in a heavy based saucepan and bring to the boil. Do not reduce. 2. Remove from the heat and gradually add flour and sugar. Mix until it makes a smooth doughy mixture and comes away from the sides of the saucepan without sticking. Leave to cool slightly. 3. Beat the eggs together and gradually add to the dough mixture. Make sure the eggs are well mixed in before adding more. 4. When all of the eggs have been added, pipe approximately 18 – 20 small balls onto parchment paper and bake in a preheated oven, 180°C / 350°F / Gas Mark 4, for 8 – 10 minutes until puffed and golden. 5. Leave to cool and then fill equally with jam and Greek yoghurt. To do this, fill a piping bag with jam and another with Greek yoghurt. Make a small hole in each ball and pipe the mixture in. 6. Melt the chocolate over a bowl of hot water, add the yoghurt and then coat each ball in the coating ensuring there is enough left to decorate the balls. Leave to set in the fridge for approximately 1 hour.

Serves: 6

7. Divide the remainder of the chocolate coating into two, and colour one with red food colouring and one with black. Decorate the balls with the coloured mixture to look like eyeballs.

PUMPKIN SOUP One for the adults at your Halloween party: filling, warming and oh-so-seasonal What you need

What to do

• 50g butter • 1 onion, chopped • 1kg pumpkin/ butternut squash deseeded and diced • 2 garlic cloves, crushed and chopped finely • 1 bay leaf • 900ml stock • 3tbsp Primula Original

1. Melt butter in a large pan over a medium heat. Add the onion and fry gently until softened. Add the pumpkin/squash and cook for 5 minutes. 2. Add the garlic and bay leaf and pour over the stock. 3. Increase the heat and bring to the boil. Simmer for 10-15 minutes or until the pumpkin is soft. 4. Discard the bay leaf and stir in the Primula. Blend using a hand blender until smooth. 5. Add salt and pepper to taste and ladle into bowls. 6. Serve with a swirl of Primula and some warm crusty bread.

he Metro Bar & Grill has long been affectionately thought of as one of Birmingham’s culinary gems. Since opening in the heart of the business sector almost 20 years ago, it has become somewhat of an institution. Visiting with my partner early on Friday evening, it was clear to see it was their busiest time. Whilst I didn’t much like having to push my way past a horde of suits to get to the restaurant, everything else to come soon made up for it. Leading into the restaurant, the bustling atmosphere settles and is replaced with relaxed vibe. The restaurant itself is spacious with glossy mirrored surfaces, mood lighting and comfortable sofa seating lending to the uber modern décor.

The surprisingly varied menu ranges from British cult classics like the humble shepherd’s pie and traditional fish and chips to modern European cuisine with a fresh twist – for example, sea bass stuffed with Asian vegetables and spice, and roasted duck breast accompanied by smoked bacon mash. It seems there really is something to suit all palates. The wine list is extensive and there’s a good

To start, I ordered juicy baked field mushrooms served with light baby spinach and topped with a generous layer of melted taleggio cheese which added a pleasantly fruity tang. My partner devoured sticky beef ribs smothered in BBQ sauce with a side of spring onions which he thoroughly enjoyed. My main dish was a richly-coloured spicy chilli linguine with succulent king prawn and crayfish, garnished with a sprig of parsley and subtle hint of citrus. Portion sizes are most generous, as was the spicy chilli hit. Meanwhile, my partner tucked into a succulent duck breast, accompanied by a smoky bacon mash, its depth of flavour perfectly balanced by a fruity red onion jus.

There was also the seemingly odd yet perfect addition of crackling candy which soon bought childhood memories flooding back. Sinead O’Herlihy, Harvey Nichols Events Manager, gives us the lowdown on her career and shares her top tips for a career in events Q: What does your job entail day to day? A: I know it’s a cliché to say that every day is different, but really, every day is different. A lot of my time is office-based, strategic planning to ensure our events run smoothly. One day I might be working on budgets or running orders, and then I’ll be executing events, literally running around for hours making sure everything slots into place. Q: What do you love about your job? A: Organising our new season fashion show is always very exciting. I plan everything, from booking models and makeup artists, to store signage and organising set production. But the most rewarding part is when an event

goes really well and is something that we want to repeat as a business across all stores. Q: What advice would you give to someone who wanted to pursue a career in fashion events? A: You have to be an extremely organised person and have the ability to multi-task because it’s about spinning lots of different plates at the same time. Being creative is also very important – you need to think outside the box and come up with innovative ideas that set your event apart from others. Keep a close eye on what’s going on in the industry: what’s happening in the fashion world and what other retailers are doing because that’s how we stand out from the crowd.

With 11 years’ experience, I’ve styled a few celebrities and models in my career. But the one that stands out the most is Tyra Banks. I helped to style her hair on board a Caribbean cruise ship whilst she was filming America’s Next Top Model. The highlight of my career has been travelling around the world, twice! I’ve met some amazing people. I lived in Australia for three years and was even able to take part in Sydney Fashion Week which was an amazing experience. But the best perk is being able to meet such a diverse array of people from all parts of the world and give them a hairstyle that they love. That’s truly the most rewarding thing about my job.

CHARITY BEGINS AT HOME To mark Breast Cancer Awareness Month, Tara Tomes shares the story of a very worthwhile charity, right here in Birmingham

T

his month is Breast Cancer Awareness Month and I’m delighted to be involved with an amazing Birmingham-based charity that is helping to raise awareness of the disease. Ladies Fighting Breast Cancer (LFBC) is an incredible charity – run solely by volunteers – and this year they are giving the whole city the chance to get involved with their fantastic cause.

Getting involved this Breast Cancer Awareness Month My first message here is CHECK YOURSELF! Men and women can get breast cancer making it a genderblind disease; regardless of your age, skin colour or lifestyle it could still affect you so please be aware of your body and go to the GP if you have any concerns. It’s better to take the time out to be checked than leave it until it’s too late!

So, let’s start at the beginning…breast cancer. Every year, nearly 55,000 people are diagnosed in the UK… that’s the equivalent of 150 people a day or, scarily, one person every 10 minutes. One in eight women will develop breast cancer in their lifetime and having been involved with LFBC for the past 13 months, I have seen these statistics really come to life. Every time we’re out promoting the charity and cause at the Bullring, Sainsbury’s, QE Hospital or generally at events, nearly every person will say that they have been affected by breast cancer. It’s pretty scary! The good news is that whilst it can’t be prevented, catching it in the early stages greatly improves chances of beating it. The number of people being diagnosed with breast cancer is increasing, but so are survival rates. Now that we’ve got over that bit, let’s move onto something more positive… Ladies Fighting Breast Cancer. What a fantastic charity! I’ve known the charity’s co-founder, Veronica Kumeta, for some years but we began working together when I set up my own company East Village last year. LFBC was set up in 2000 by Veronica and the late Sue Macmaster, after their friend Carol Knaggs was diagnosed with breast cancer. The idea was to control where the money went, rather than giving it to national charities, so they contacted the Queen Elizabeth Hospital and started working exclusively with them. Sadly, Veronica lost both Sue and Carol to the disease but continued running the charity. Veronica is a truly inspirational woman, who has spent the last 14 years building up the charity alongside a team of dedicated volunteers, solely to benefit people suffering with the disease. Thankfully she has been recognised for this, winning ‘Most Inspirational Woman of the Year’ at last year’s West Midlands Women of the Year Awards and being shortlisted as a Pride of Britain Local Hero in 2011. LFBC has funded more than £1 million worth of equipment at the hospital, helping to create a ‘centre of excellence’. The charity’s latest £1 million appeal (#1millionappeal) aims to raise money for ‘soft services’ that go beyond the means of the NHS. This will include a new patients’ lounge, diagnostic suite, not-for profit hair and beauty treatments, and mastectomy services on site at the hospital.

The whole of Birmingham is showing its support for breast cancer this month and there are loads of ways to get involved. Restaurant Giving From Wednesday October 1, restaurants across the city will offer customers the chance to add £1 to their bill, which will go direct to the charity. Restaurants taking part include Simpsons, Carters of Moseley, The Plough Harborne, Henry Wong Harborne, The Talbot Belbroughton, The Old Crown Digbeth and Yum Yums. Other restaurants supporting the charity include The New Inn Harborne, Le Monde, Jimmy Spices and The Lovely Pubs Group. 2 Cups We all love tea and cake and throughout October you can sign up to host your own ‘2 Cups’ event; getting you and your friends or colleagues together to drink a cup of tea and eat a cupcake, with proceeds going to the #1millionappeal. #pinkpout Something that I am really excited about is the charity’s #pinkpout campaign. In the same way that Cancer Research did the ‘no make-up selfie’, LFBC wants everyone to put on their brightest pink lipstick, take a picture and upload it to social media alongside a screen shot of their text donation. It’s a brilliant idea and something we can all do! To donate to the charity, text LFBC12 followed by £1, £2, £5 or £10 to 70070. The Floozie and the Bull For the third year running the charity will give Birmingham’s famous ‘Floozie in the Jacuzzi’ her modesty back by dressing her in a pink bra and the Bullring Bull will also get the same treatment later in the month. This is a great way of spreading the word so get down to the statues, take a selfie and spread the message. Make a Will Week LFBC has partnered with Harrison Clark Rickerbys inc K&M Family Law for ‘Make A Will Week’, with the law firm’s private client team offering its will writing service free of charge in exchange for a donation to the charity.
