Behind the scenes With an unparalleled view of the famed Sunset Strip and beyond, the renovated Andaz West Hollywood reopened in January 2009. In the late 60s and 70s, the hotel, then named The Continental Hyatt House, was the go-to place for touring rock bands like The Rolling Stones and The Who, due to its proximity to trendy strip nightspots Whiskey A Go Go, The Roxy and others. Jaime Pressly and her glam team felt right at home in Andaz’s penthouse where our December cover gal got ready for Viva’s photo shoot. On a hazy Sunday morning, Pressly arrived at the suite sans makeup with hair pulled back in a ponytail. Two hours later, the actress emerged looking every bit a contemporary rock star.

Many stars belted out Andrew Lloyd Webber’s tunes to benefit Kitty Bungalow-Charm School for Wayward Cats, a Los Angeles non-profit cat rescue, which uses the TNR (trap/neuter/ release) method to aid feral cat colonies in the city and teaches feral kittens the socialization skills needed to find forever homes. The line-up of luminaries who took to the stage at the Orpheum Theater for the sake of purring pals included James Cromwell, Keith David, Peter Gallagher, Mandy Moore, Ioan Gruff udd, among many more. After the show, attendees congratulated the glitterati on their performance, dined on desserts and brought home a goodie bag.

The Los Angeles Mission celebrated its 75th Anniversary with a gala event at the Four Seasons Hotel on September 21, 2011. The event honoured Anne and Kirk Douglas with the inaugural Anne Douglas Center for Women Award for their outstanding and continuous work on behalf of the women’s centre. There was a culinary collaboration between Chef Ashley James, executive chef of the Four Seasons, Chef Ben Ford, executive chef of Ford’s Filling Station and Chef Chris Cormier, food service director of the Los Angeles Mission. Entertainment included Ben Vereen, Marilyn McCoo, Billy Davis Jr., Debby Boone and Deniece Williams. The Mission has served Skid Row since 1934 with food, clothing and shelter for the homeless community. Every year, Anne and Kirk Douglas show their support by feeding the hungry at a special celebrity charity event at the Mission on Thanksgiving.

Party. Celebrities and political leaders joined hundreds of other volunteers to help serve the nearly 3,000 kids, and their families, that attended. Among those were Hilary Duff, Charlotte Ross, Katie Blair (Miss

California USA 2011), Brandon Molale (True Blood) and others. The event featured a giant street fair for children with food, games, prizes, crafts, face painting, bouncy houses, a giant inflatable slide and more.

Do your skincare products clutter the bathroom shelves while his shaving cream and razor are squeezed into the medicine cabinet? Do you stock up on a day moisturizer, a night cream, an under-eye balm, a hand salve and anti-aging treatments, while he might splurge on some aftershave once in a while? If this sounds like your relationship (to beauty products and to your guy) then you’re not alone. Men vs. Women

“It’s a generalization, however, men don’t tend to do much for their skin in comparison to women, who are much more proactive,” says Dr. Shelby Entner, a naturopathic doctor with Okanagan Natural Medicine in Vernon, British Columbia. “Many men don’t tend to use a lot of skincare products because it’s typically not part of their upbringing,” she explains. Yet that doesn’t mean they shouldn’t. Is a man’s skin really that different from a woman’s? Actually it is, explains Entner. First of all, a man’s skin is generally oilier than a woman’s and he tends to have larger pores. Testosterone changes the texture of skin and makes it tougher — meaning men really do have a thicker skin.

Body To keep his body skin hydrated, he should avoid harsh chemicals in his body wash. Tell him to back away from synthetic scents as well. A daily cream-based cleanser is a good solution. Tell him to apply a body moisturizer while his skin is still slightly moist from the shower for EAT RIGHT

Issues with dryness can be caused by an internal imbalance, says Entner. His hydration level and the amount of essential fatty acids he consumes will affect his skin. Ask your man to look at his diet – he should be getting an ample dose of nuts and seeds or supplements like fl axseed oil, borage seed oil or pumpkin seed oils. He should be having two to three servings of anchovies, sardines, salmon, cod or halibut every week. If he’s not a fish fan, he can supplement with omega-3, 6 and 9, found in cod liver oil, says Entner. She advises taking one teaspoon of plant- or fish-based oils a day. Taking a 30 mg supplement of zinc every day is also good for skin and nails. Just don’t overdo it – many multivitamins have an ample daily amount. OTHER FACTORS

Certain medications can also deprive you of important nutrients, explains Entner, along with chronic health conditions ranging from poorly managed diabetes to infl ammatory bowel issues. All of these factors can cause malabsorption and fl are-ups in the skin. If you’re deficient in your B vitamins – such as biotin – dry skin is often one effect. A lot of people suffer from B deficiencies because of stress, explains Entner, which can cause dry skin and hair loss. Dry skin can also be an effect of thyroid problems or testosterone issues, so if it’s really bothersome, seek a doctor’s help for some blood tests.

Hands Whether they’re washing dishes or doing yard work, men aren’t typically proactive about protecting their hands with gloves, says Entner. To treat damaged, raw hands, look for products with vitamin E, cocoa and shea butter, calendula oil or coconut oil. Coconut oil is one of the best moisturizers out there, explains Entner. It not only helps heal the skin, it protects it. Also, opt for a salve to moisturize hands; while it takes longer to sink in, it’s generally more nourishing.

Look for essential oil-based cleansers — and steer clear of anything with lots of surfactants or stripping agents that give hair that squeaky-clean feel. They’re also stripping your man’s natural oils in the process.

Dark chocolate is also beneficial, as are green and black teas. Don’t forget fi sh – mackerel, trout, salmon, herring and sardines.

“T

akes about 10 minutes. Lasts a couple weeks. Feels amazing.” This was a comment from a male friend after I opened up the “manscaping” conversation. No doubt about it, our male counterparts have unabashedly joined us in the quest to pluck, wax and zap unwanted hair follicles everywhere. A 2009 study at the University of South Florida found that more than 80 per cent of 360 male students had removed body hair, and these staggering numbers point to a major trend. “There comes a time when you ask yourself, why am I doing this?” says Tim, 31. “You’re a man, it’s normal for you to be hairy. There’s little expense or pain, yet it’s time consuming. When I’m done, I like that I look groomed. It also can accentuate some key features.” “There are two primary factors that affect hair growth in men: hormones and genetics,” says Dr. Sarah Goudling, N.D. of Nickel Ridge Natural Health in Sudbury, Ontario. Because of the close ties

between hair and hormones, Dr. Goudling advises that any men noticing abnormal hair growth should consult their naturopathic doctor to rule out a possible hormonal imbalance. Chemical hair removal products should be avoided because they can be absorbed into the skin and even act as hormone disruptors that can exacerbate unwanted hair growth. Look for skincare lines for men, such as shaving cream and aftershave, that contain coconut oil, aloe vera and vitamin E. If stubble and razor burn are a concern, men and women alike can try an antiseptic cream with soothing tea tree oil. Laser hair removal is another popular option that offers permanent reduction of hair growth. Highly concentrated beams of light penetrate hair follicles, are absorbed by pigment and destroy the hair within the follicle. It’s important to note that this technique works best on dark, coarse hair and side effects may include blistering.

Dear Suzette, There are a few natural teeth-whitening methods available, however some, such as malic acid found in strawberries, can be very irritating to the gums and can cause erosion of the enamel. Baking soda is another option that, if used periodically, can brighten teeth. Wet a soft toothbrush and apply a small amount of baking soda, brush gently and rinse well. Try this once a month as well as brushing daily with a natural toothpaste containing baking soda. This can be a slow process, so be patient.

Dear Tracey, Mineral makeup is your best friend as it has both anti-bacterial and anti-inflammatory properties. Try using a mineral powder foundation – it sits on your skin and reflects light, allowing the skin to breathe while blocking out the sun’s rays.

Peroxide added to baking soda can be used to speed up the whitening, however, I would reserve peroxide use to preparations available through your dentist. Needless to say, practicing proper oral hygiene and avoiding drinks and foods that stain will help brighten your smile.

To avoid irritating your eczema, look for products that contain pure mineral pigments (no FD&C dyes) and are oil and fragrance free. Choose products with hydrating and nourishing ingredients, such as vitamin E and K, which help to repair the skin. Be sure to protect and prepare the skin prior to makeup application to avoid an uneven texture. I would recommend a raw, organic seaweed moisturizer that contains sea salt and ocean mud – it has proved to be very beneficial for eczema.

However, unlike women, who generally gain weight around their hips and thighs, men tend to gain weight around the waist, where fat circulates through the liver, causing metabolic problems like diabetes. Obesity also puts men at risk of heart attack, cancer, hypertension and sleep apnea. It can also affect their sex life, and make it more difficult to exercise. Kick-start your body transformation with the following six-step strategy for weight loss success, designed especially for men.

GET PREPARED

Dietary changes are tough for anyone; however, once you establish a new routine it will get easier. Because you’ll be making long-term changes to what and when you eat, it’s important to spend some time preparing yourself mentally. Evaluate, identify and be honest about possible reasons for the weight problems. Choose both short- and long-term weight loss goals that are realistic and attainable.

WRITE IT DOWN

WINTER AVE ZOLI Leads the simple life in her kitchen

W

ith a name like Winter, you might think she is the product of hippie parents or was born in the icy regions of Northern Canada. Guess again. Zoli was born in New Hope, Pennsylvania and at 12, moved to Prague with her parents. While studying at the International School in Prague, she discovered theatre, ultimately landing an agent when she moved back to New York City.

Now living in Los Angeles, Zoli is best known for currently playing porn star Lyla on the FX biker-gang hit, Sons of Anarchy. The 5’6” former ballet student stays in shape by opting to take advantage of the Los Angeles climate with regular hikes in the local canyons. “I go down to the beach and run which is beautiful and strenuous. I also horseback ride once a week,” she says. Twice weekly yoga classes offer Zoli both a physical and mental workout. “I always leave feeling so much lighter and with a sense of peace.” Playing a porn star has put Zoli in some risqué situations that might throw other actresses off balance, yet the blond beauty, who has revealed herself in the pages of Playboy magazine, says, “Nudity is not a problem for me. In my early 20s, I really started to get in shape and take care of myself; that’s when I really became comfortable with my body.” With her boyfriend, professional trainer Csaba Lucas, Zoli admits she leads a very healthy lifestyle with a kitchen stocked with fresh organic vegetables – lots of peppers and carrots - cheese, plain whole yogurt, fresh berries and ezekiel bread. Even her guilty food pleasures run on the healthy side. “Usually organic potato chips and I

love gluten-free chocolate chip cookies. That might not sound much like a guilty pleasure,” she laughs. In January, Zoli engaged in a three-month cleanse with no sugar, flour, dairy or yeast products. “It was really hard to stick to it in the beginning,” she says, “yet the more I did it, I realized I couldn’t go back to any other way of eating. It made me feel so much better.” In between hectic days on the set of Sons of Anarchy and movies, such as Bad Ass opposite Danny Trejo, plus exercising, Zoli has devised her own methods of relaxing and rejuvenating. “I like going to the beach to just hang out and listen to the waves and breathe in the clean air. I love to read, and have intimate dinner parties with friends.”

As much as Zoli focuses on her own health and fitness, how would she describe health in a woman? “Women tend to – and I even do sometimes – obsess about weight and calories. Someone who’s happy, likes to be outdoors and takes care of himself. My boyfriend and I hike together sometimes or do resistance training – he guides me on that. For my part, I make sure I cook clean, healthy foods for both of us.” Zoli takes pride in knowing she’s a modern woman in today’s society. “I’m independent and have dreams and ambitions that I go after – a lot revolve around a long-term acting career whether it be on television or film.”

I would like to know why a person gets lipomas. I started getting them at age 48. – Johanna Gati, Toronto, Ont.

Dear Natasha, Snoring is a common sign of congestion in the tissues of the nose and throat leading to constriction of the airways. Some of the triggers for snoring may include environmental allergies, such as dust and moulds or food allergies, like dairy, soy, wheat or eggs. Sulphites, found in dried foods and wine, as well as all kinds of alcohol may also contribute to snoring. Removing these triggers may lead to a quick resolution.

Dear Johanna, Although there are many different types of lipomas (and you might consider having one surgically removed and evaluated by histology), the majority of lipomas are benign fatty growths that pose no known health risks. Lipoma growths are a sign of abnormal fat accumulation in the tissues, and may be a sign that your liver and gallbladder need a good cleansing of fat.

It might help to have a family member check for snoring while you’re visiting home to help figure out if your new living environment may be contributing to recent snoring concerns. If it is an environmental allergy, consider nasal lavage (most, if not all, pharmacies carry nasal lavage or netipot kits) each night before bed. Deep breathing exercises or physical exercise and weightloss can also help eliminate snoring. If these suggestions have no impact, you might want to try a good cleanse or consider a snoring appliance or nose strips.

Phosphatidyl choline and taurine supplementation, along with a good quality krill oil, are often helpful for eliminating dystrophic fat in the body and liver. A diet high in fibre and low in trans-fats would also be essential. Exercise, weight reduction and infrared sauna therapy may also help. She now stars in Fox TV’s I Hate My Teenage Daughter, as single mom Annie, struggling to raise her over-privileged teen daughter, ultimately having her turn out to be a mean girl, just like the ones who tortured Annie years ago. “I was never a bully,” explains Pressly on her school years, “yet in middle school, I was definitely the one who was bullied. I was a tomboy, very much into the arts, very athletic and kind of didn’t fit into the small Southern-town mold or formula. I’m still that tomboy.” Pressly was a competitive gymnast and dancer as a kid, growing up in Kingston, North Carolina, yet by 15, she was modeling in Japan and Italy without a chaperone. “Some people find a tomboy sexy and some don’t. I personally don’t think about it. I find general confidence and strength sexy no matter who has it and most tomboys do possess those traits.” At 34, her confidence, strength, sophistication and style have given her the credentials to make a name for herself and corral lead roles in Hollywood. After Earl retreated into a trailer park sunset, Pressly took a two-year hiatus to be with her son Dezi, now four. “I got to be with my son, be home, be a mom and enjoy it all. That was actually the first time I had taken some downtime and experienced what it felt like to relax and unwind. It was nice.” Now back to shooting her TV sitcom, Pressly relaxes by working out or actually doing nothing. “Having the two years off, it gave me the opportunity to learn that it’s okay to take a deep breath and do something for myself or do nothing at all, which is just as good for you, if not better. I now feel I don’t have to have the most productive day every single day. Looking at Pressly’s well-toned body with curves in all the right places, it doesn’t seem she would give a nanosecond of thought to extra pounds. “I gained 42 pounds when I was pregnant,” she squeals. “However, I’ve always been somebody who has been athletic and driven in that way. I went back to the gym when Dezi was 10 days old, so I lost 35 pounds in the first three months and the rest came off about a month later.” Though she has a personal trainer who got her into shape, celebrities still have to sweat and strain like everyone else. “I was in the gym six days a week for two hours for those three months – now I don’t push as hard.” Today’s session, though, still isn’t for the faint of heart. She does about 300 reps of various squat positions, resistance exercises to work the lower back and butt, abdominal exercises utilizing gravity boots and weights and some cardio in the form of kickboxing or boxing.

While her TV life thrives on chaos, and there are personal days that prove challenging, Pressly keeps the peace in her new home with earth tones and a big Zen backyard, with lots of Buddhas, fountains, a garden and tranquility. “I have a huge Japanese Zen garden,” she explains of her Los Angeles area home. “The whole thing has bamboo surrounding it, and I have Chinese oil paintings all over the house.” The colour palette reveals different earth tones in every room – olive greens, khakis and rust. Wherever you turn, there’s a sense of peace. “Every home I’ve owned has had earth-tone colours because it’s more of a homey feeling. A house is all white and a home has warm colours.” It’s not just the Buddha statues in her home giving off a peaceful serenity – Pressly has an Om symbol tattoo. “It’s what Buddhists chant and how they meditate.” And she believes in their philosophy of various contemplative and meditative practices. “Instead of thinking of tomorrow, I think about right now and encourage positive actions,” she says. “And I think that’s more evident when you have a child. I like to take one day at a time. I don’t have fears of running out of time. Fear makes people do stupid things and act in stupid ways. Working hard for what you have, appreciating it and knowing it’s not going to fall in your lap – those are values I hope to instill in Dezi as he grows up.” Though she lives every day to the fullest and always looks ahead, there is one thing that she has had to look back to and learn over and over again. “You can’t change people,” says the Hollywood veteran. “I guess it sounds like I haven’t learned it if I have to keep going through it. People are who they are; they might grow, learn, get better and wiser, yet the core of who they are is never going to change.” She pauses and then quickly adds, “Oh yeah, another lesson I’ve learned is looks can be deceiving; things aren’t always the way they appear. Don’t judge a book by its cover – especially people.”

That was actually the first time I had taken some downtime and experienced what it felt like to relax and unwind.” Having been diagnosed eight years ago with hypoglycemia, Pressly keeps her blood sugar levels even by eating four-to-five small meals a day. “It’s much easier when I’m working because we have craft services there with food. I supplement with a multivitamin, B-12, acidophilus, omega-3 and biotin which is really good for nails, skin and hair,” she says. Healthy foods run the gamut from fresh vegetables to chicken to cheese. “I love cheese. Mozzarella is a very low-fat cheese and I eat a lot of that which is a good protein as well.” Spicing up her foods is an everyday happening. “Cayenne pepper is one of my favourite spices – it’s good for digestion and helps you burn fat. I also love rosemary which I grow in my backyard garden.” Besides rosemary, Pressly’s garden grows chili peppers, tomatoes, lavender, peppermint and cilantro.

t the tender age of four, Peta Murgatroyd’s mom started bringing her daughter to ballet classes in Perth, Australia. Since then, the Aussie native has studied classical ballet, along with Spanish, contemporary and ballroom dancing. Now one of the professionals on Dancing With The Stars, after having been the lead in Broadway’s Burn The Floor, the 5’7” beauty has homes in both Australia and Los Angeles, dancing on both continents. “I wanted to become a prima ballerina; however, that didn’t work out,” states the performer.

Peta Murgatroyd’s Male Fashion Tips: A Well-dressed Man: “One who has good footwear – one of my pet peeves for men is shoes. I hate dirty shoes. I also love a man wearing a welltailored suit.” Casual Male Fashion: “I don’t mind flip-flops on a man as long as they are clean and go with a casual day at the beach. I like simple things on a guy – a plain white t-shirt and cool jeans are attractive to me.”

What did prove successful is her dance career, helping to keep Murgatroyd balanced. It’s a hectic schedule that challenges her energy and poise. “At the moment, Dancing With The Stars takes up a lot of my time and it’s my primary workout actually. I definitely try to get to the gym for the extra stretching and when I’m not dancing, I like to counter everything with Pilates and running.” An energized person by nature, Murgatroyd takes a daily multivitamin, liquid mineral supplement and eats a good, healthy diet. “I get a lot of my energy through clean, simple foods like fresh fruits and vegetables. I definitely try and get organic, locally produced foods into my cooking.” A severe allergy to shellfish, nuts and their byproducts makes Murgatroyd a label reader and careful eater. “I really have to make sure foods are not prepared with nut oils. It’s a bit of a problem yet I’ve learned to deal with it.” Her leisure time activities include going to the movies, lunching with friends and shopping. “Shoe shopping especially,” she laughs. In fact, in her free time, Murgatroyd is very much into fashion and takes part in designing clothes and attending the best fashion shows. At 25, Murgatroyd states that she feels eating healthy, having healthy relationships and exercising give her the balance she needs. “And I definitely feel I’m there right now,” she muses. “I mean, I’m a happy person by nature who loves to laugh.” In a bit of self-reflection, Murgatroyd describes herself as “nurturing, funny and career-driven. That’s me.”

unching on a kale salad, letting her new manicure dry while conducting business on her cell phone, actress Kathryn Hahn is proving she is a multitasking guru. “I’m a very type A personality,” says the mom of two small children and co-star of the new TV show Free Agents. “It’s very hard for me to just let stuff go. However, I believe in balanced living and to me, that means I have to be in the moment, whether it’s at work or at home. So no more business phone calls when I’m at the zoo.” At 38, the Ohio native, probably best known as Lily Lebowski in Crossing Jordan, feels living a balanced lifestyle contributes to better friendships and marital relations.

Hahn, who used to enjoy at least eight hours of shut-eye each night, has adjusted to living with a lot less. “I used to love my sleep — there just isn’t much time now. I’ve learned to embrace the beautiful chaos in my life. Every day is an adventure and it’s exactly what it’s supposed to be.” At 5’6”, Hahn’s weight of 125 pounds is where it’s supposed to be too. “It doesn’t drive me crazy,” she says laughing. Recently discovering a gluten sensitivity, Hahn has embraced a gluten-free diet, albeit with the occasional graze into white flour territory. “Hey, I’m from Ohio and we love our white flour, so I have to have it sometimes, though I get that horrible bloated feeling after I’ve eaten a piece of cake.” So Hahn has turned to some tasty gluten-free products — cake mixes, pancakes, cookies and snacks — plus has signed up for produce deliveries. “Once a week I get a delivery of fresh produce from local farmers, so it’s like Christmas because you have no idea what’s in the boxes.” The busy working mom also carves out time for fitness, such as 45-minute spin classes, yoga and brisk nature walks. Another feel-good activity is her regular book club meetings. “This is my time to relax and rejuvenate. I was talking to a girlfriend who said she had joined a book club and it was a ball, even if you didn’t read the book, because someone always brings a bottle of wine,” the actress lets loose a hearty laugh at one of her reasons for joining. “I look forward to those book club meetings; they’re a very smart, opinionated group of women. It’s developing relationships outside the home.” Happy in her career and at home, Hahn says she feels blessed to be at this stage in life. “I have earned this age. I have a creative outlook that I love and it’s such a huge part of me, plus I have my family and friends. Often referred to as a yam in parts of North America, the sweet potato is a very distinct vegetable. Packed full of fibre, it is generally less sweet than the yam, which contains more natural sugar. Tortilla Soup SERVES 8

45 ml (3 tablespoons) corn oil 4 corn tortillas, coarsely chopped 6 cloves garlic, fi nely chopped 1-2 jalapenos, chopped (seeded for less heat) 12 g (2 tablespoons) freshly chopped epazote, or dried oregano 12 g (2 tablespoons) chopped fresh cilantro 240 ml (1 cup) fresh onion puree 480 ml (2 cups) fresh tomato puree 6 g (1 tablespoon) cumin powder 12 g (1 tablespoon) chili powder 2 whole bay leaves 4 cans tomato paste 2 L (8 ½ cups) chicken stock salt and cayenne pepper to taste FOR GARNISH

1 cooked chicken breast cut in cubes 1 avocado peeled, seeded & cubed 110 g (1 cup) shredded Monterey Jack cheese 3 corn tortillas, cut in thin strips, fried 1. Heat oil in a large saucepan over medium heat. 2. Saute tortillas with garlic and epazote over medium heat until tortillas are soft. 3. Add onion and fresh tomato puree and bring to a boil. 4. Add cumin, chili powder, bay leaves, canned tomato puree and chicken stock. 5. Bring to a boil again, then reduce heat to simmer. 6. Add salt and cayenne pepper to taste and cook, stirring frequently, for 30 minutes. 7. Skim fat from surface, if necessary. 8. Remove bay leaves, and blend soup with hand mixer until smooth. 9. Pour into warm soup bowls. 10. Garnish each bowl with an equal portion of chicken breast, avocado, shredded cheese and crisp tortilla strips. Serve immediately. * Soup may be made one day ahead and gently reheated before serving with garnishes.

Mini Shrimp Tacos For the black bean & pineapple salsa

1 small onion, quartered 1 jalapeno, quartered, seeds optional 1 garlic clove, minced 2 Roma tomatoes, seeded and finely diced 75 g (½ cup) pineapple, finely diced 75 g (½ cup) red pepper, finely diced 225 g (1½ cups) cooked and drained black beans 30 ml (2 tablespoons) olive oil 2 limes, juiced 6 g (1 teaspoons) kosher salt 8 g (¼ cup) loosely packed fresh cilantro leaves, coarsely chopped Combine all ingredients in a mixing bowl. Stir until blended. For the shrimp marinade

15 ml (1 tablespoon) olive oil 5 g (1 teaspoon) chili powder 6 g (1 teaspoon) kosher salt 2 cloves garlic, minced ½ kg (1 pound) medium shrimp (about 20), peeled and deveined 8 sprigs cilantro, chopped

Combine all ingredients in a mixing bowl. Stir until blended. Cover and store marinade in the fridge. For the chipotle mayo

2 chipotle peppers 440 g (2 cups) commercial mayo Combine both ingredients in a food processor. Blend until smooth. To complete the dish

Grill tortillas until just toasty on the outside and still soft. 3. Assemble tacos by spreading desired amount of chipotle mayo on tortilla, then adding salsa, lettuce and shrimp. Garnish with cilantro leaves and a squeeze of lime.

Leftover Turkey BLTs on Buttermilk Biscuits with Tomato Jam Leftover sliced turkey or turkey slices Smoked slab bacon or bacon slices Boston lettuce leaves Commercial mayonnaise For the buttermilk biscuits

380 g (4 cups) sifted flour 28 g (2 tablespoons) baking powder 9.3 g (2 teaspoons) salt 227 g (½ lb) butter, frozen 417 ml (1 ¾ cups) buttermilk 1. Pre-heat oven to 204°C (400°F). Combine dry ingredients in a large mixing bowl, and using a cheese grater, grate the frozen butter into the bowl. 2. Stir to blend, then add 350 ml (1 ½ cups) buttermilk, and begin working the dough. 3. Once mostly blended, turn the mixture out onto a floured surface and spread evenly. 4. Gather any crumbs and pile them onto the rolled-out dough, then fold in half, press down to spread evenly. Repeat this process three more times. 5. Dough mixture should be blended, not overworked. Using a rolling pin, roll out dough to 13 mm (½ inch) thick. 6. Using a round cookie cutter of your choice, cut out your biscuits and place them on a baking sheet. 7. Brush the tops of each biscuit with remaining buttermilk and bake for 24 minutes. For the tomato jam

6-8 Roma tomatoes 4.5g (1 teaspoons) dried red chili flakes 1 medium onion, finely diced 2 lemons, juiced 958 g (1 litre) sugar 1. To peel tomatoes, cut an X into the bottom of each one and blanche for two minutes in boiling water. 2. Carefully remove the tomatoes and place them in a water bath with ice. 3. Once cooled, the tomatoes will be easy to peel. 4. Quarter the tomatoes. Over mediumlow heat, simmer with remaining ingredients, stirring frequently, until liquid is mostly reduced, around 45 minutes to 1 hour. Let cool.

6-8 poblano chilis 40 g (½ cup) cooked brown rice 40 g (½ cup) black beans 40 g (½ cup) butternut squash, peeled and diced into small cubes 43 g (3 tablespoons) minced sun-dried tomatoes 60 g (½ cup) chopped coriander 1 medium onion, peeled and fi nely diced 2 cloves garlic, minced 1 lemon, zested and juiced 1 lime, zested and juiced 14 g (1 tablespoon) cumin 5 g (1 teaspoon) chili powder 100 g (2 cups) grated Monterey Jack cheese 30 ml (2 tablespoons) olive oil pomegranate seeds 1. In a 176°C (350°F) oven, roast chilis for 10-15 minutes, or until skin begins to blister. Place them in a large bowl and cover with a damp cloth. 2. After 15 minutes, peel the chilis under cold running water. With a sharp knife, make a slit from top to bottom, and remove the seeds. 3. In a large saucepan, heat olive oil with squash, onion, garlic, zests and spices and sauté until translucent.

In a medium saucepan, heat olive oil, tortilla strips, onions, garlic, pecans and spices until onions are translucent. 2. Add cream and milk and simmer for 5-7 minutes. 3. With a hand mixer or blender, puree the sauce until very smooth. 2 g (1 heaping tablespoon) smoked paprika 8 g (2 teaspoons) salt 8 g (2 teaspoons) sugar 2 g (1 heaping teaspoon) garlic powder 2 g (1 heaping teaspoon) onion powder 0.5 g (¼ teaspoon) ground cayenne pepper 4 g (2 teaspoons) black pepper 1 g (½ teaspoon) thyme 1 g (½ teaspoon) oregano

1 large onion, peeled and finely diced 3 sprigs thyme 3 bay leaves 28 g (2 tablespoons) butter 1 L (1 quart) chicken stock ½ L (1/2 quart) cooked wild rice ½ L (1 quart) cooked black-eyed peas 30 ml (2 tablespoons) olive oil salt and pepper to taste

Mix all ingredients in a bowl until blended, and put into an airtight container.

1. In a large saucepan, heat olive oil, and cook carrots, celery, and onions until transparent. Add the rest of the ingredients, stirring to blend. 2. Simmer uncovered until very little chicken stock is left, then fold in butter.

15-20 Brussels sprouts, leaves peeled and cleaned 20 ml (2 tablespoons) olive oil salt and pepper Toss the Brussels sprouts leaves with olive oil and salt and pepper. Roast spread out on a baking tray in a 176°C (350°F) degree oven for 10 minutes or until golden brown.

Bread Pudding with Rum Caramel 500 g (1 lb) bread 113 g (4 ounces) butter 4 large eggs 240 ml (8 fluid ounces) heavy cream 350 ml (12 fluid ounces) milk 66 g (4 tablespoons) superfi ne sugar 2 vanilla beans, sliced in half lengthwise 1. Pre-heat oven to 176°C (350°F). Melt butter in a small pan. 2. Cut bread into medium-sized cubes, and pour butter over bread. 3. Beat the eggs with the cream, milk, sugar and vanilla beans. 4. Heat slowly in a saucepan until very hot, but do not bring to a boil.

5. Pour egg mixture over buttered bread and mix until liquid is nearly completely soaked. 6. Pour entire mixture into buttered baking dish, and bake, uncovered for 25-30 minutes. FOR THE RUM CARAMEL

454 g (1 lb) salted butter 400 g (2 cups) brown sugar 120 ml (½ cup) heavy cream 60 ml (2 fluid ounces) dark rum Combine butter, sugar and rum in a non-reactive saucepan, and heat slowly until sugar is completely melted, whisking often. Add cream.

Health Issue: Rheumatoid Arthritis Symptoms: I was diagnosed with rheumatoid arthritis several years ago. Virtually overnight I went from being a very active bed-and-breakfast operator to needing help to sit up. Our family has always been open to alternative health options and I immediately made an appointment to see our naturopath for his opinion Health recommendations: My naturopath recommended that I take fish oil and probiotics, and to try to reduce my stress with lots of deep, controlled breathing. He also suggested a diet change consisting of unprocessed whole foods, while avoiding all caffeine, alcohol and sugar. I saw a great physiotherapist, who partnered with my naturopath, to keep my spirits up. To reduce inflammation, my naturopath also suggested microcurrent therapy, first treating me in his office and later supporting the purchase of my own machine to use daily at home. The results: I continue to take my supplements and use my microcurrent machine. I know I need to take responsibility for my health so I stick to my food plan, try to control my stress and get lots of rest. Health Issue: Eczema Symptoms: My youngest daughter Julia, who is now six, had been suffering from eczema since she was a baby. At any one time, her body had several red, dry itchy patches that she couldn’t stop scratching. Occasionally, these red patches would get so irritated that they would turn into small bleeding sores. Health recommendations: In addition to the hydrocortisone cream that my doctor had prescribed, I tried a considerable number of body lotions, all claiming to be for dry, sensitive or eczema-prone skin. health issue: celiac disease Symptoms: As a toddler, I was malnourished and my hair was falling out. I was eventually hospitalized and medical specialists suspected I had cancer. It wasn’t until I ate a banana during one of my meals (and subsequently did not become ill) that medical staff realized my health issues were food related. After lots of testing and a biopsy, it was confirmed that I had celiac disease. Although I adhered to a gluten-free diet all of my life, as an adult I still struggled with related health issues and symptoms, including the diagnosis of osteoporosis, chronic pain, headaches and severe vitamin deficiencies. Health Recommendations: Following the advice of a naturopath at the age of 29, I began a strict vitamin and mineral regimen, and an exercise program, including resistance training, to help reverse the symptoms related to CD. I was also advised to change my eating habits in order to better balance my blood sugar levels, as well as to adhere to a gluten-free diet with full discipline. The results: I was extremely lucky to be diagnosed with osteoporosis at an age where it could still be reversed. It took time and hard work; however, my bone mass improved significantly. The chronic pain and vitamin deficiencies have also been resolved. I believe that my strict adherence to a gluten-free diet has been the greatest factor in achieving my optimal health. tepping onto the airplane at Los Angeles’ LAX, I felt like I was entering a swanky lounge – not something you usually associate with flying. The purple mood lighting, the gift pouch (with everything from hand lotion and lip balm, to socks and sleeping mask) and pod seating, all make for an enjoyable flight. The premium economy spaceseats slide forward – just like your favourite armchair – satisfying your own needs, while also keeping the person behind you happy. The 12-hour flight went by fast – dozing through most of it, and Air New Zealand does everything they can to make that restful-sleep happen. Next thing I knew, we were descending into Auckland, NZ.

Catching a quick flight, I touched down in Wellington, the country’s ‘coolest little capital,’ ready to explore the city and looking forward to attending the Brancott Estate World of WearableArt show (WOW) that night. With 160 jaw-dropping garments featured by designers from all over the world, the show has grown to become a cornerstone in Wellington’s event calendar. After a brisk and windy walk in the sunshine along the Wellington Harbour – surrounded by stunning views with perfectly blue water, sailboats and a backdrop of homes running up the sides of mountainous hills – I was picked up to attend WOW. After meeting the Prime Minister of New Zealand, John Key, who stopped by our table to say hello, and rubbing elbows with the likes of actors Orlando Bloom, Stephen Fry and producer Peter Jackson, sitting two tables over, the lights dimmed and the show started.

The show opened with children’s ‘food’ costumes, followed by an illumination section, where the garments glowed in the dark and the models were invisible. ‘Under the microscope’ – the category a Canadian artist entered – took a look at the unknown microscopic universe. Marjolien Dallinga from Quebec, who designs for Cirque du Soleil, submitted her first WOW piece called ‘Skin.’ Every garment had a specific way of being showcased, from a stomping runway walk, to a choreographed dance routine, while Dallinga’s ‘Skin’ demonstrated an understated, simplistic beauty, enhanced by the costume floating and slowly spinning around the stage. WOW founder Suzie Moncrieff says she continues to be amazed by how the show, which originated in Nelson, just west of Wellington, progresses every year. "It is amazing to think I held my first show back in 1987 in a tent in Nelson during a torrential rainstorm." SURPRISES BY THE SECOND

The second half of WOW featured ballerinas from the Royal New Zealand Ballet, as well as opera duets. ‘Man unleashed’ was a huge crowd pleaser, with the re-invented grooms rockin’ and thrusting across the stage. The grooms outshone the brides, who were dancing in their ’80s poufy sleeves and white blown-out gowns in the background. The show ended with ‘Kiwi Icons,’ featuring heritage-inspired New Zealand garments. The grand finale starred singer John Rowles; the crowd roared – having no clue who he was, it was obvious I wasn’t a Kiwi. Described to me as “New Zealand’s Elvis,” he shook his hips, dancing and singing with the entire WOW cast. After the show, Stephen Fry tweeted, “Wow, in every sense. Dallinga’s main goal was to just be selected. She invested a lot of time and energy into her design and she wanted to see if ‘Skin’ was interesting enough to be placed on stage. “The total time it took me was three to four weeks to make it. All those points are handmade and hand-dyed. It’s all felted with New Zealand wool.” On her inspiration for the piece, she says, “I tried to paint a portrait of what’s between people… not about me or you, it’s about what happens between us.” The multipurpose piece is more than just a coat. “You can hang it on a wall or lay it on your bed. It’s designed to be versatile.” Due to a prior commitment, Dallinga was unable to attend the show in person, yet her piece ‘Skin’ won third prize in the Gen-i Creative Excellence Section: Under The Microscope and second place in the Booker Spalding First Time Entrant Award. “I am planning to apply again. I want to do it with more costumes, so it’s a relational thing,” Dallinga says. Hopefully she will have another chance to go next year and compete for a prize pool of close to $150,000. Casa Monica Hotel A historic hideaway worlds apart from traditional Florida by bonnie seigler

T

he sun was setting over the Atlantic Ocean, producing a vivid pastel-coloured sky. This was the place where in 1513, Ponce de León, looking for the Fountain of Youth, landed on the coast of Florida near the site of modern St. Augustine. The city of St. Augustine was later established in 1565, making it the nation’s oldest city and quite possibly, the most charming. Located in the heart of the city is the Casa Monica Hotel, a fully restored property featuring 138 guest rooms. Originally built in 1888 as the Cordova Hotel, it was later re-named Casa Monica and business flourished. Since that time, it has closed and re-opened its doors in varying configurations, even serving as a courthouse. “The hotel operated up until the Depression, then it closed for a period of

time,” explains Anthony Lazzara, General Manager of Casa Monica Hotel. “When Richard Kessler bought the property in the mid 90s, it was boarded up, yet from drawings and photographs, he did his best to convert it back to its grandeur of the 19th century with all the modern conveniences of today.” Upon arrival, guests take note of the luxurious grand lobby adorned with Moroccan-inspired frescos, tapestries and magnificent chandeliers. A hand-painted 24-karat gold ceiling in their 95 Cordova restaurant reveals the elegant allure of days gone by. Once inside one of the uniquely decorated and constructed guest rooms, you’re transported back to old world charm amongst Spanish style romanticism.

“When you walk out our front door, you are looking at the majestic Ponce de Leon Hotel to the right and the Alcazar Hotel to the left, which have different identities today, yet your mind takes you back in time. After leisurely walking hand in hand with my companion through sprawling, moss-draped live oaks, and stopping for a chilled glass of sweet tea, we found ourselves back at Casa Monica as the moon just began to rise overhead.
