Because without it, you can’t do much. That’s why I get a lot of exercise, which I love; I walk 5-10 km a day, work out at the gym three times a week, and go ice skating, cross country skiing, biking, hiking and whitewater canoeing off the grid in the remote northern wilderness. I also love good food. I try to stay away from junk food and sweets, and eat a lot of fruit, vegetables, nuts and grainy bread. To keep life interesting, I indulge my theatrical side by performing with a small opera group. Another way I try stay balanced is by unplugging after hours: no cell phone, no computer.

World Vision Ambassadors Hugh Jackman and his wife Deborra Lee-Furness have launched their new social enterprise “Laughing Man Worldwide,” a coffee, tea and chocolate business. All profits will go to charity. Jackman and LeeFurness applauded the Australian Federal Government’s dollar-matching scheme, saying it means people’s generous donations would help twice as many drought-stricken families in East Africa. The total number of people requiring urgent assistance in the drought-stricken areas of Kenya, Ethiopia and Somalia is estimated by the United Nations to be 13.3 million.

f someone had told 37-year-old Michelle 10 years ago that she’d be contending with deep wrinkles and furrows in her brow before the age of 40, she’d have scoffed at the idea. Unfortunately, social smoking and years of lying on the beach without sun protection were starting to show on her face. “Women, especially fair-skinned women, are more prone to deep wrinkles,” explains dermatologist Dr. Benjamin Barankin of the Toronto Dermatology Centre. “Genetics are critical, yet sun damage and smoking are also important factors. Wrinkling is due to a number of factors.”

DERMAL DESTRUCTION
So what’s the science behind those deep furrows? “Deep wrinkles have to do with the destruction of collagen and elastin in the dermal layer of the skin,” says naturopathic doctor Natalie van Veelen of the Sage Clinic in Vancouver. “Collagen and elastin are what keep skin taut and young looking. Free radicals, caused by the environment, are the major cause of the destruction of collagen and elastin. So anything that increases free radicals is going to affect how quickly the wrinkles form and how deep they can get.” Contributing factors such as stress, hormones, toxin exposure and the sun all play a role in the breakdown of collagen and elastin. FOUR-SEASON SUNSCREEN
To head off the formation of wrinkles, first of all, tailor your cleanser and moisturizer to your skin type, and change these products according to the season, recommends Dr. Barankin.
Eating a diet that’s high in minerals and vitamins, and taking supplements is another way. Dr. van Veelen recommends taking vitamin A at 25,000 IU beta-carotene or 15,000 IU retinol, though she cautions against taking this level when pregnant or trying to get pregnant. She also recommends: Vitamin C at one to nine grams per day Vitamin E at 600 IU Vitamin B5 Omega 3s Co-enzyme Q10 Sliymarin, an antioxidant that’s synergistic with vitamin E at 170 to 340 mg Silybin three times per day Turmeric Gingko biloba Proanthocyanadina and catechins found in grapes
All dermatologists agree that you need to wear sunscreen every day — even in the winter and even if it’s cloudy. It’s critical for protecting the skin from ultraviolet radiation, so opt for a physical formulation such as zinc oxide or titanium dioxide with an SPF of at least 30. Avoid any irritating products or cleansers that aren’t pH balanced, such as harsh soaps. Add a topical vitamin C product and a vitamin A or retinol-based product to your routine, suggests Dr. Barankin. Other ingredients he recommends? Look for products containing coffeeberry extract, niacinamide, glycolic acid and matrixyl.

You also need to nourish your skin from the inside out. Dr. Barankin recommends cutting back on caffeine and alcohol to keep the body hydrated, and quitting smoking. You’ll also want to balance out your free radical production, says Dr. van Veelen. That means not consuming trans fats and animal fats, not overeating, not eating a diet high in carbohydrates and sugar, and preventing stress. All of this will go a long way in helping preserve your skin.
Injectables at a dermatologist’s office, such as Botox, Restalyne and Juvaderm, can prevent new wrinkles from forming and plump up pre-existing ones. There are also some natural routes to wrinkle treatment. Dr. van Veelen suggests facial acupuncture, topical injectable therapies, a bio-identical hormone cream usually made from soy or yam, and using minerals and herbs to clear oxidants from the skin.

Another factor in the formation of deep wrinkles is your hormones. Head to your naturopath or MD and get a hormone test. “Progesterone plays a role in how plump skin is,” explains Dr. van Veelen. Have a salivary hormone test done on day 19 of your menstrual cycle to determine any imbalance.

This winter my skin is very dry, especially on my legs, with white flakes that look like dandruff. My arms are also quite dry. What can I do to stop my skin from drying out like this? – Janet, North Bay, Ont. Dear Janet, It’s quite common to experience dryness at this time of year. A lack of EFAs in the diet can result in dry skin, hair and nails. Foods such as wild salmon, sardines, flax seeds and walnuts are an excellent source of omega 3 fatty acids (EFAs). You can also supplement with a good quality fish oil. As well, I suggest supplementing with hyaluronic acid, which is known as H.A. Hyaluronic acid is present in the body and decreases as we age, resulting in less moisture in the skin. Some moisturizers include H.A., so it can be applied topically, and can hold up to 1,000 times its weight in moisture. Try using a gentle body wash with glycerin. It’s a humectant, so it attracts moisture to the skin. Moisturize daily with a body lotion or cream that contains oils such as jojoba or argan oil to lock in the moisture.

s it a coincidence that the word “décolletage” contains the word “age”? Probably not, considering the undesirable effect time and the sun can have on that particularly delicate area that includes the neck and upper chest—aka cleavage. Like our face and other areas of our bodies, the skin of the décolletage requires protection from the sun’s harmful rays. Without doubt, the number one way to protect and prevent signs of premature aging on the skin is wearing sunscreen and avoiding overexposure to the sun. Unfortunately, many of us are already regretting the many carefree days of frolicking outdoors that childhood and naivety allowed us. If your décolletage is already trying to tell you something (I’m tired; I’m burnt; I’m dehydrated), try showing this area that you still care: SUN PROTECTION: Wear skin protection on all areas of the neck and chest daily. Even if you’re not tanning on the beach, try to include a daytime moisturizer with SPF. When doing your daily skincare
routine, consider your neck and chest as an extension of your face, and don’t stop at the jaw line. EXERCISE: Yes, exercise your décolletage. Even while sitting at a desk, you can tone your muscles and tighten your skin. Try stretching out your neck, or extending your lower jaw, and holding for a few seconds. Doing the opposite—crunching your neck or constantly looking down—will create extra wrinkles. Lift your arms out and press your hands together for a few seconds; do this multiple times. It’s like a chest press. Or better yet, lift light weights and work out your chest. DIET: What you eat shows on the outside. So make sure you eat plenty of nutritious foods to encourage healthy skin. Try to eat five or six servings of non-starchy vegetables a day and four or five servings of fruit. Avoid hydrogenated fats and animal fats, and cook with healthy oils such as extra virgin olive oil. Nuts, seeds or beans are also good to eat daily. Plus, as challenging as it may seem, try to drink eight glasses of water every day, or enough to stay well hydrated. Adding flaxseed oil supplements may also help repair damaged skin.

s a naturopathic doctor, I have researched many dietary strategies to support the health of my clients. When it comes to choosing a dietary approach, I always consider individual metabolism, hormonal imbalances (such as thyroid function, fasting insulin levels and stress hormones) and specific food elimination to provide the best overall long-term health benefits. I have found that individualizing the diet based on metabolic profi ling allows people to reach their optimum weight, maintain energy and a positive mood, all while treating and preventing chronic disease patterns such as diabetes, cardiovascular disease and cancer. THE BIG NO-NO’S
When determining what dietary guidelines to consider, no sustainable diet should rely on processed or packaged foods containing refi ned sources of sugar. Furthermore, no products that contain high doses of caffeine or laxatives, which can lead to dependency, should be used. These methods of weight loss are not sustainable in the long term, and may lead to increased risk of certain diseases. Food sensitivities to gluten or dairy products, among others, should also be considered in a comprehensive dietary plan, as sensitivities to certain foods may lead to bloating and water retention in some people. Finally, maintaining stable blood sugar by avoiding excess starch, tropical fruits and sweets may be necessary to help reduce binge eating and food cravings. These simple strategies help people feel good throughout the day!
VEGETABLES FOR ALL
The amount of food consumed (calorie intake) and the degree to which a person stabilizes their blood sugar is essential in supporting healthy weight loss. That’s why almost all dietary strategies encourage eating vegetables. When it comes to fats, simple carbohydrates and protein, individual metabolisms need to be taken into consideration. There are several ways to find out if your metabolism requires more of a carbohydrate, protein or mixed-type diet. Questionnaires are one way to determine your metabolism, although I find the most reliable method is through a blood test for uric acid. ✢ If your uric acid levels are higher than 300 umol/L, you should move toward a plant and lean protein-based diet of fish, chicken, turkey, eggs and protein supplements, while staying away from red meat, high-fat dairy, and all legumes, including nuts and seeds. ✢ When uric acid levels fall below 200 umol/L, a diet focused more on red meat, higher fat dairy and legumes is more appropriate and typically well tolerated. ✢ If your uric acid levels fall between 200 and 300 umol/L, you may enjoy a diet that contains a balance of protein types, healthy fats and legumes. In general, no diet should include large amounts of refined grains, such as bread, pasta and rice, and healthy diets should include local and seasonal fruits when available. N

omen are living longer, healthier lives than ever before, and yet cardiovascular disease is the number one killer of women. One in two will die from it. In fact, according to Statistics Canada (2003), the number of deaths from heart disease and stroke is now virtually the same for women and men: 36,823 versus 37,004. That’s why it’s even more important today to prevent heart disease and stroke among women. Unique risk factors
While the major risk factors for heart disease—smoking, high blood pressure, diabetes, high cholesterol—are the same in women and men, there are risk factors unique to women: Birth control pills: Modern birth control pills are much safer than forms used decades ago. In women under the age of 35 who don’t smoke, contraceptive use does not increase the risk of stroke. However, in a small proportion of women, oral contraceptives increase the risk of high blood pressure and blood clots. Pregnancy: Pre-eclampsia is a condition that typically starts after the 20th week of pregnancy, and is related to increased blood pressure and protein in the mother’s urine. Gestational diabetes occurs because a woman’s body produces extra insulin due to increasing levels of pregnancy hormones interfering with the body’s ability to use insulin efficiently.

Her risk of heart disease and stroke increases during menopause because the ovaries slowly stop producing estrogen. A menopausal woman may experience an increase in LDL or “bad” cholesterol and triglyceride levels, and a decrease in HDL or “good” cholesterol. She may also begin to have higher blood pressure. “If you’re going into a new year and, like many of us, have slipped off the wagon with your exercise and diet regime, and you want to get a fresh start, then a naturopathic doctor is a very good person to help get you back on that road to wellness,” says Shawn O’Reilly, executive director of the Canadian Association of Naturopathic Doctors (CAND). “This is especially true if you want to take a more active role in managing your health, and you’re interested in a natural approach to health and wellness.” Naturopathic doctors combine modern science and traditional forms of medicine to stimulate the body’s natural ability to heal itself. They take a holistic approach to health and disease, and consider physiological, psychological, environmental, lifestyle and other factors when assessing patients and prescribing treatments. the real deal
NDs are primary care practitioners with a minimum of seven years of post-secondary education, including a four-year, fulltime doctor of naturopathic medicine program at an accredited institution. When you’re looking for the right naturopathic doctor for you, make sure that any doctor you are considering meets a number of rigorous criteria. “With the growing interest the public has in natural health, we have seen an increase in those people who may have only taken a

weekend course or correspondence courses and are then treating the public,” cautions O’Reilly. “Make sure that the naturopathic doctor you’re seeing has gone to an accredited school, written and passed the board exams and, if they are practicing in [Ontario, Manitoba, Saskatchewan, Alberta or British Columbia] that they are actually registered with the regulatory board. That’s very important. You have to be certain that the person you’re seeing is a properly qualified naturopathic doctor.” Where to look
CAND includes a list of qualified practitioners on its website, searchable by province, city and name. Friends who’ve had positive experiences with qualified NDs can also be a good source of referrals. Ask around, and you may get a list of NDs to contact. Naturopathic doctors are qualified to address everything from pediatrics to palliative care, and some have what’s referred to as a “practice focus,” such as women’s health. You can find this information on the CAND website. Also, before setting up your first appointment, it never hurts to call a prospective doctor’s office to ask questions about their practice. “Naturopathic doctors really take the time to listen to their patients,” says O’Reilly. “Your first visit with a naturopathic doctor will last approximately an hour to an hour and a half. That is a significant amount of time for you and the ND to get to know one another and really develop a rapport.”

SEAN busby Diabetes doesn’t stop this world-class athlete by bonnie siegler
I
t was the summer of 2004, and 19-year-old professional snowboarder Sean Busby was lying on his parents’ sofa wasting away. His sponsors were viewing this 5’6” former competitor as a chronically ill athlete, and had begun dropping him. “I wasn’t able to exercise,” says Busby, who was then diagnosed with type 2 diabetes. “I was too weak all the time, and lost 30 pounds within two weeks.” Now 27, the champion snowboarder weighs a healthy 160 pounds. “I was misdiagnosed with type 2 diabetes and went three months without insulin,” he says. “I was vomiting constantly, was totally miserable and thought I was dying. Then when I got properly diagnosed with type 1 diabetes, I received that first shot of insulin, and it was the most amazing feeling I had ever felt in my life. I could instantly feel nutrition going into me.” Living in Utah with his new wife, Mollie, Busby isn’t letting his diagnosis interfere with his active lifestyle. “Diabetes has tried very hard to stop me from being an athlete,” he says. “However, it’s a disease that’s always going to be there, so I treat it like a best friend who’s always there. And like any best friend, we have the occasional disagreement. We work through it all and get the friendship back on track.” Busby’s competitions take him to places such as New Zealand,
Antarctica, Iceland and Vermont. There the cold, altitude and humidity can affect his diabetes. “It’s all stuff that puts added stress on the body,” he explains. “For me, it’s a lot more low readings, especially if it’s really cold outside. I figure that’s due to my body putting all this energy into keeping me warm, so my metabolism is working overtime and it affects my insulin. I have to pay attention to post-exercise hypoglycemia, so when I exercise daily, I may have to check my blood sugar in the middle of the night to make sure my body isn’t trying to recover any extra glucose that could cause me to have a really bad low.” The nationally ranked snowboarder says of his diet, “I have omitted pure sugars, yet if I want to indulge in a piece of birthday cake, I have to make sure I have the appropriate amount of insulin on board.” Breakfast usually begins with oatmeal “because it’s a complex carb and will help carry me through a long period. So if I’m going to do my morning exercises or some mountain climbing, that sustains me.” Lunch is usually a hefty carb meal such as pasta, which will allow him to go back out and do some afternoon exercise. Dinner will be protein such as steak or chicken with fresh vegetables. Throughout the day, Busby eats fruit. Sharing his diabetes experiences with others who have the same condition has become a Busby passion. He often attends Riding On Insulin camps for kids, all over the world – from Alberta to Australia.

I’ve just found out that I have high cholesterol. What are my options for lowering my levels with natural products? I try to eat well, so I’m not sure why my cholesterol is high. – Maria Grossman, Edmonton, Alta. Dear Maria, Most of the time, elevated cholesterol is a sign of stress in the body; however, occasionally the body makes more cholesterol than it needs, because of familial traits. Simple blood tests (lipoprotein A, apoprotein A and B) can determine if your cholesterol is elevated because of your genetics. When there is no cause for concern about genetics the next thing to look at is your diet and lifestyle. Eliminating all processed, fried and highly refined foods is a good place to start. So is a moderate exercise regime of 30 minutes, three times per week, with your heart rate up at about 120 beats per minute. When emotional stress or anxiety is a concern, a high-quality vitamin B complex 100, with the addition of an extended release niacin (vitamin B3) will likely do the trick to help lower your cholesterol.
My 13-year-old daughter seems to not be eating enough. I’m worried that she has an eating disorder. How can I coax her to eat more and not plunge to an unhealthy weight? Important things to consider are calcium, essential fatty acids and protein intake. Wild fish and organic chicken are very healthy low-calorie food choices that can support weight optimization and reduce the risk of nutrient deficiencies. Perhaps a good quality vitamin and mineral-fortified protein shake with an essential fatty acid blend would be something for her to consider while she is becoming more knowledgeable about the importance of a whole food diet for optimum health.

“A good friend is a founder of Pencils of Promise,” says Bush, revealing dimples the size of the Grand Canyon. “They started building schools in Laos, and are moving into Nicaragua and Guatemala, with Ghana next year. They just broke ground on their 50th school.” For the 30-year-old actress, travels to the far corners of the world have added another dimension to her life. “From travelling, you get a perspective on the world and get back in tune with humanity in a way that you don’t from just reading about a place,” she says. Coast to coast
For the past nine years, Bush has also travelled between homes in Los Angeles and North Carolina where her show One Tree Hill filmed. She portrays Brooke Davis on the hit drama, now in its final season on air. Brooke has evolved from a trouble-making vixen to a fiercely loyal friend, bringing Bush a large, loyal fan base. “We started being very opposite people in our behaviour,” reflects the 5’5” actress on how she and her character have matured. “Over the years it was like brainwaves that ebb and flow while crossing sometimes, remaining close and other times moving further apart. Sometimes I learned from Brooke’s courageousness and willingness to say things everyone was thinking.”
Passion for performing
Bush was born and raised in Pasadena, California, and while she was in high school, she developed a passion for performing. She landed her first movie role in the comedy Van Wilder with Ryan Reynolds. Other film projects followed: The Hitcher, John Tucker Must Die, The Narrows and Table For Three. It was her TV character that kept her on the pages of fashion magazines and tabloids, though. “Being powerful in Hollywood or any career path means owning your truth,” says Bush in her distinctive voice. “It’s incredibly depressing that women still feel they have to take the ‘casting couch’ route to get a job. I’ve learned to accept that as a woman, particularly one who is in charge when I’m directing and running the show, you have to have balls and be okay that when you stand up for yourself or your beliefs, you might be called a ‘bitch.’”
“I never wanted to let anyone see how deep my environmental passions ran. Then I realized this was something I could share and have conversations about, particularly with the women who watch my show.”
So when asked if she has any professional and personal regrets, Bush immediately answers, “Are you kidding me – of course! I’ve made incredibly stupid mistakes, and yet I’ve always led with my heart, and at times that has left me sore. However, it’s taught me beautiful lessons. It’s allowed me beautiful love, even though I have made idiotic mistakes. That’s life.” She sips her chamomile tea and ponders for a minute. “I think your failures shape you as much as your successes do. Nobody is perfect.”
Bush credits her inner strength to her parents’ great work ethic (father is celeb photographer Charles Bush), and believing there are such things as right and wrong. “I certainly understand grey areas; however, there are just a few,” she says. “Friendships are riddled with grey areas, and so is love. As women, I think we’re more prone to opening our hearts, and yes, more likely than not, you’re going to get hurt; at least you’re open to the world and you want to make it better.”
Sophia Bush is a real humanitarian and altruist who has refreshingly different priorities than what you’d expect of a Hollywood starlet. She shies away from discussing her eating plan because “diet,” in her opinion, is “the worst four-letter word in the English language. The number one wish of 13-year-old women in America is to be thinner, not to be doctors, not to be lawyers, not to save the world. It’s to be thinner and not even healthy…it’s a shame. So I don’t talk about weight, I don’t talk about diet and I don’t talk about exercise.

Collaboration, not competition
“We should be talking about promoting collaboration among women instead of competition; we should be talking about women who have won the Nobel Peace prize, not about actresses’ weight. My weight fluctuates five pounds, sometimes 10. So what? The measure of who I am, the sum of my worth, the measure of the passion in my soul has absolutely nothing to do with the numbers on a scale.” Acting on her beliefs has been a lifelong process for Bush, who grew up with two religions at home, and was baffled as to why people fought wars over them and spewed hate-filled vitriol. She has devoted her life to reducing her own carbon footprint and being environmentally aware, while revealing her passions only to friends and family. After the Deep Water Horizon oil spill, she decided to bring her beliefs out into the open. “I never wanted to let anyone see how deep my environmental passions ran,” she says. “Then I realized this was something I could share and have conversations about, particularly with the women who watch my show.” Bush almost single-handedly mobilized a huge group of young people who have joined organizations wanting to take care of the world and each other. “Their response has been incredible,” she says. “It’s really been humbling and beautiful for me.”

In fact, Bush will be visiting Africa over the summer with the Conservation Trust, then on to Ethiopia with Charity Water and Invisible Children. “It’s very hard not to have a greater empathy for the world’s people once you’ve met them,” says Bush. “Plus, Africa is one of the few places where lions are actually starting to go up in numbers. I hope I don’t get to a point in life where I have to tell my children that lions used to exist. I’m hoping people wake up.” Bush relishes her accomplishments, and celebrates her outlook on life. “Even when things are going badly for me, I think my glass is half full,” she says. “Life has taught me to understand that you don’t really know what’s happening until you are a part of it all. You don’t have the right to judge people. So I let my moral compass and my sense of right and wrong come from a place of kindness, not a place of evil or prejudice.

hloe, one of two dogs in this household, is barking, and is soon ordered to be quiet. Snacks are being made in the kitchen and it’s only 7 a.m. Kyle Richards, the breakout star of The Real Housewives of Beverly Hills is tackling everything, from getting her four kids, ages 3 to 23, ready for the day, to answering business phone calls and texts.
“My house is total chaos,” says the 42-year-old, self-described multitasker whose new book, Life Is Not A Reality Show (HarperCollins) has become a popular read. “I think being a mom of four kids keeps me grounded, though. Th is is my normal, real life.” NO PRETENCE
In the glam world of Beverly Hills, Richards’ lack of pretension is a breath of fresh air. Her family is the number one priority, yet the former child actress is aware of how easy it can be to get caught up in all the 90210 hype. “You really cannot place that much importance on being in the spotlight,” she states. “If something were to happen with the show, I had an amazing life before it ever started. I keep my days real knowing being a wife and mom are my priorities in life.” Th at said, Richards, standing at a petite 5’2 ½ inches, likes to stay in good shape. “After my kids are off to school, I come home and walk through the neighbourhood hills for about an hour, which is around four miles,” says the 115-pound brunette. She says her weight fluctuates by about 10 pounds. “I’m on the upside of my weight right now. I do eat very simply and clean,” she
says. “I’m not an exotic eater. For dessert, I like hot chocolate chip cookies and milk.” UNPLUGGED
During her morning walks, Richards unplugs – no digital devices, no phones. “I think and meditate as I squeeze my exercise in at the same time. I’d love to do these walks five days a week, which is my goal, though it never ends up happening. It’s usually around three times a week.” At home she does sit-ups and simple weight exercises in her small gym. One reason Richards doesn’t smoke and tries to eat as healthy as possible is that cancer has touched her family; mother, father, uncle and extended families have passed away from various forms of the disease. “I just try to take care of myself and make sure my kids take their vitamin D as I do, because it’s very important in the fight against cancer,” she says. In addition, Richards supplements with a multi-vitamin and a dark-chocolate flavoured calcium tablet. It seems the reality star and author has achieved the perfect blend of celebrity and normalcy. In fact, she enjoys shopping for bargains at local pharmacies and at H&M. “Don’t get me wrong, I do have things I spend a lot of money on like shoes and handbags,” she says, adding with a laugh: “Retail therapy can be very therapeutic. Still, when you go and spend a lot of money on something, you come home with what I call the shopping hangover, and I don’t like having those.”

oleil Moon Frye, who played TV’s lovable “Punky Brewster” as a child, now embraces life as the busy, working mom of two young kids, Poet and Jagger. She’s chronicled her “perfectly imperfect” parenting adventures in her memoir, Happy Chaos. The delightful and diminutive Frye – who stands 5’2” – has a fresh, fun and accessible approach to balancing her home, family and work. She credits her support system of other Hollywood moms like Demi Moore and Rebecca Gayheart with helping her stay grounded. “I can turn to them any time,” says the 35-year-old environmentally conscious parent who has an eco-friendly kids clothing line called The Little Seed. “We keep each other in check, and the kids remind me to laugh.”

We make eating fun as well, and get very creative by doing mystery taste tests, which I talk about in the book.” Regular trips to the local farmers market ensure the family is eating fresh, locally grown fruits and vegetables. “Cooking with the kids is very important for me,” Frye continues. “So is trying to stay balanced and drinking lots of water. Th at’s not to say there aren’t moments in the year, especially during the summer months, when every once in a while I want to pull over and grab a slurpee.”

Husband, producer Jason Goldberg, whom she met at age 18 and married when she was 22, pitches in around the house. “He’s the greatest husband ever,“ she says. “I try my best to be a part of his everyday health maintenance, too. Coffee Crusted Scallops with Parsnips and Provencale Sauce 12 , U-10 scallops 1 tablespoon (12 g) Van Houtte espresso coffee 1 tablespoon (12 g) ground pepper 1 cup (240 ml) parsnip purée 12 cubes bacon 12 orange segments ¼ cup (40 g) diced tomatoes ¼ cup (40 g) sliced Sicilian green olives ¼ cup (60 ml) olive oil
1. Mix coffee with ground pepper, and crust the scallops. 2. In a mixing bowl, mix together orange segments, tomatoes, olives and olive oil. Set aside. 3. In a pan, over high heat, sear scallops and bacon for a minute, then put them into a 350°F (175°C) oven for 3 minutes. 4. To assemble, put parsnip purée on the plate fi rst, followed by scallops and bacon, then drizzle with the chunky provencale sauce.

1 cup (150 g) chickpeas 1 garlic clove, minced ¼ cup (25 g) parsley, fi nely chopped 1 teaspoon (4.5 g) cumin 1 lemon, juiced 1 egg 1 cup (60 g) panko breadcrumbs salt and pepper
4 medium-sized wild salmon steaks 8 red cherry tomatoes, sliced in half 8 yellow cherry tomatoes, sliced in half 1 shallot, fi nely chopped 6 black olives, sliced in half 1 teaspoon (2 g) chives, fi nely chopped 1 teaspoon (2 g) parsley, fi nely chopped 2 tablespoons (30 ml) Xeres vinegar 1/3 cup (80 ml) olive oil
1. Mix all ingredients, except egg and panko, in a mixer on medium speed. 2. Crack the egg into a separate bowl and lightly beat with a whisk. 3. Using your hands, form the croquette mixture into small patties, about 2 inches in size (5 cm). Dip each patty into the egg mixture, and then bread with the panko.
1. Sear the salmon in a pan on high heat; fl ip the steaks after about two minutes. 2. Combine the cherry and yellow tomatoes, shallots, black olives, chives, parsley, olive oil and vinegar in a separate bowl and put aside. 3. Fry the croquettes at a temperature of 350°F (176°C) for about two and a half minutes. 4. Plate about two or three croquettes with each salmon steak and top with the Vierge sauce. 1. Start with the sauce, simmer shallots over medium heat for about 3 minutes 2. Add bay leaf, thyme and red wine, and reduce wine to ¼ cup. 3. Add veal stock and reduce all of this to 1 cup. Season with salt and pepper. FOR THE STEAKS
1. Season with salt and pepper. 2. In a pan, over medium-high heat, sear beef on all sides for about 3 minutes. 3. For a nice medium rare, put into oven for 5 minutes.

Chestnut Cake with Chocolate Mousse and Meringue 2 cups (475 ml) cake flour 2 teaspoons (10 ml) baking powder ¾ teaspoon (3.75 g) salt 1/2 vanilla bean 1 1/2 cups (300 g) sugar 2 sticks unsalted butter, room temperature 4 large eggs, separated, plus 1 large egg white 1/4 cup (60 ml) whole milk 1 cup (240 ml) chestnut puree 1. Preheat oven to 350°F (176°C) degrees. Coat a 9-inch (23 cm) round cake pan with cooking spray. Line the bottom with parchment cut to fit, and coat parchment with spray. Dust with flour, and tap out the excess. 2. Whisk together flour, baking powder and salt in a medium bowl. 3. Using the tip of a paring knife, scrape seeds from the vanilla bean into a large bowl, and discard pod. Add 1 cup of sugar and beat with a mixer on medium-high speed for 30 seconds. 4. Add butter and beat until pale and fluff y. Beat in egg yolks and reduce mixer speed to low. Add
the flour mixture in 3 parts, alternating with the chestnut purée after the fi rst addition and milk after the second. Scrape down sides of bowl as needed. Transfer the batter into a large bowl. 5. Beat egg whites in a clean bowl with a mixer on medium-high until soft peaks form. Gradually add the remaining 1/2 cup of sugar, beating until stiff, glossy peaks form. Whisk 1/3 of the egg whites into batter just until combined. Gently but thoroughly fold in remaining whites. Scrape batter into prepared pan, and smooth top. 6. Bake until a toothpick inserted into centre of cake comes out clean, about 1 hour. Let cool completely in the pan on a wire rack. FOR THE CRÉMEUX CHOCOLAT
1/2 cup (120 ml) cream 1 cup (240 ml) milk 3 egg yolks ½ cup (100 g) castor sugar 1 cup (180 g) dark chocolate (60 per cent cocoa), chopped
2 teaspoons (9 g) powdered gelatin 1. Chop chocolate into chunks and place in a bowl – set aside. 2. Combine the gelatin and two tablespoons of water in a small bowl. Set aside. 3. In a separate bowl, whisk the egg yolks and 1/2 of the sugar until smooth. 4. Combine the cream, milk and other half of the sugar in a saucepan and bring to a boil. Add the softened gelatin and stir until dissolved. 5. Pour some of the boiling milk into the egg yoke mixture and whisk quickly. Then pour the egg mixture into the heated milk. Return to a low heat and stir constantly until it reaches 183°F (81°C ). Immediately remove from heat and pour over the chocolate. 6. Whisk until chocolate is melted and mixture is smooth. Pour over the base and place in the freezer until very fi rm. 7. Serve the dessert at room temperature with chunks of cake and pieces of meringue.

Almond Financier 2 tablespoons (30 g) unsalted butter 1 cup (120 g) fi nely ground almonds 1 2/3 cups (170 g) confectioner’s sugar 1/2 cup (60 g) unbleached all-purpose flour Pinch of salt 3/4 cup (180 ml) egg whites 3/4 cup (180 g) unsalted butter, melted and cooled 1 pineapple cut into cubes 1 cup (120 g) vanilla whipped cream
1. Preheat the oven to 450°F (230°C). 2. With a pastry brush, use the 2 tablespoons of melted butter to thoroughly butter the fi nancier molds. 3. In a large bowl, combine the almonds, sugar, flour and salt. Mix to blend. Add the egg whites and mix until thoroughly blended. Add the 3/4 cup of butter and mix until thoroughly blended 4. Spoon the batter into the moulds. Bake until the financiers just begin to rise, about 7 minutes. Reduce the heat to 400°F (200°C) and bake until the financiers are light brown and begin to firm up, about another 7 minutes. Turn off the oven and leave in the financiers until firm, about another 7 minutes. 5. Remove the baking sheet from the oven and let the fi nanciers cool in the moulds for 10 minutes. Unmould. Serve with fresh pineapple and whipped vanilla cream.

health issue: anxiety Symptoms: I spent my 20s racing mountain bikes, finishing school, travelling around the world and living life to its fullest every day. Suddenly I looked back over the past few years and noticed I had stopped doing as much. I had a fear of enclosed spaces, so it was hard to travel by plane or train. I developed such anxiety over the possibility of having a heart attack that I was actually having chest pains, even though the doctors could not find a problem. Health recommendations: I did some research and found a mindfulness-based program called mindshift, so I signed up. In this program I learnt that areas of the brain that were designed to keep us alive in youth start to work against us as we age, and we can develop anxieties or fear. I started working on putting the anxiety where it belongs, and I started meditating. The results: Now with meditation, the anxiety is controlled; my mind can tell the difference between real and perceived fear. I have gone back to living life to its fullest, and I have no problem getting out of my comfort zone. I’m looking forward to the second half of my life being just as good as the first. Hotel Monteleone New Orleans Enjoy the vibe of this old haunt of famous 20th century writers by bonnie siegler
H
otel Monteleone was built in 1886 on the corner of Royal and Iberville Streets in New Orleans’ famous French Quarter, and has since been in the thick of many Mardi Gras celebrations. Having undergone five major additions over the last century, this grand, Beaux-Arts-style hotel remains true to the mood and style of New Orleans. Besides being dubbed the French Quarter lobby, Hotel Monteleone has had the honour of hosting numerous celebrities, including many famous Pulitzer Prize winning writers such as Richard Ford, Tennessee Williams, William Faulkner and Truman Capote. “When Tennessee Williams and his grandfather checked out after two weeks, they discovered that Mr. Monteleone had taken care of their bill, no doubt as a tribute to the glory the playwright had bestowed on New Orleans four years before when A Streetcar Named Desire debuted,” says Andrea Thornton, Director of Sales and Marketing for the hotel. “Also, William Faulkner referenced Hotel Monteleone in Orpheus Descending and The Sound and the Fury.” Leave it to Capote, though, to come up with a colourful story claiming he was born while his parents were staying at the hotel. After Hurricane Katrina extensively damaged the hotel, including the Ernest Hemingway penthouse suite, the Monteleone once again renovated every single guestroom and all public spaces.

“New Orleans has been through epidemics, wars, fires, hurricanes and floods,” says Thornton. “I truly believe that New Orleanians basically are non-judgmental and embrace the saying, ‘Live and Let Live.’” In September 2010, the hotel received the Green Key Hotel Award for accomplishments in environmental management and corporate social responsibility. Green practices include using local produce and participating in the Clean the World amenity recycling program that donates discarded soap and shampoo to impoverished people. “We have everything from soy-ink key cards to meeting rooms equipped with dimmers on lights, and an abundance of windows for natural light,” Thornton points out. RELAXATION
After a day of meetings, reveling in the French Quarter, or attending Mardi Gras balls and parade, locals and tourists flock to the hotel’s Carousel Bar. Installed in 1949, it’s the only bar in New Orleans that actually revolves 360°. For those who want to really relax, the hotel’s Spa Aria offers everything from massage to manicures and pedicures. Organic beauty rituals are the signature treatments, featuring an all-organic line from Hawaii called Malie Organics.

Fair trade and organic Chocolate Mœlleux with raspberry and ginger sauce • by camino IT TAKES ONLY 20 MINUTES TO PUT TOGETHER THIS LUSCIOUS, CHOCOLATELY DESSERT TO SHARE WITH THE ONE YOU LOVE.
For 2 people Preparation time: 20 min Cooking time: 10 – 15 min
INGREDIENTS: Chocolate Mœlleux
11 squares of Cuisine Camino Semi-Sweet Baking Chocolate (56% cacao) 5 tsp of Cuisine Camino Golden Cane Sugar 1 tbsp of all purpose organic unbleached flour 1 range free egg ¼ cup of butter (or margarine), melted 4 squares of Camino Bittersweet chocolate bar (71% cacao) Extra butter for greasing the molds
RECIPE: 1. Pre-heat the oven to 450˚F 2. Grease 2 single portion cake moulds of approximately 2oz each. 3. Place 11 squares chocolate with the butter in a small glass bowl. Place the bowl in a double boiler at low temperature (or in a microwave at low power). Mix together as everything melts until the texture becomes smooth and uniform. 4. In a separate larger bowl, beat the egg and sugar until frothy. Add and mix the flour before adding the melted chocolate. Mix together until the texture is smooth and uniform. 5. Fill the moulds half way and then add 2 squares of chocolate bar into each mould. Cover with the rest of the mix. (If you don’t want to serve right away, leave everything to sit at room temperature). 6. Place the moulds in the oven for 10 to 15 min at 450˚F. The Chocolate Mœlleux is ready when the outside is baked and the inside is melted. 7. Remove the Chocolate Mœlleux from the moulds and serve them warm alongside raspberry and ginger sauce.
