Thanks to everyone who’s completed the Viva survey. We will feature the survey in every issue, and we are continuously adding more prizes. Sergio Mattoscio is the chef and owner of Macaroni Bar in Montreal. Though he was born in Canada, his first language is Italian, and he represents his culture proudly. Having worked in kitchens for years, Sergio eventually decided to attend culinary school, where he graduated at the top of his class. Since then, he has staged in various cities to feed his passion for different styles of cooking, while operating his restaurant. His latest challenge has been competing in the second season of Top Chef Canada on the Food Network.

Behind the scenes Working with Chef Sergio Mattoscio was a pleasure. He started us off with a cappuccino and a piece of his apple yogurt coffee cake, which is featured in this issue of Viva. It was moist and light, with a perfectly crunchy, cinnamon sugar topping. Sharing a passion for Italian cooking and food makes for mouthwatering conversation on set. Chef Mattoscio described some new dishes that will be featured on his summer menu. We talked about our favourite restaurants in Montréal, our mutual passion for gardening, and his experiences on Top Chef Canada. Foster kidscook Ellen Pompeo hit Hollywood’s Le Cordon Bleu cooking school to help 18-year-olds who have recently “aged out” of the Los Angeles County foster care system learn how to prepare holiday dinners. Many of the 50 kids were frequently moved around, growing up in environments where a holiday dinner was not something they could count on. The event has been an annual tradition for the Alliance for Children’s Rights, which has provided advocacy and free services for 26,000 L.A. kids since 1992.

Th is was a great opportunity for the actor to bring big smiles to many faces, not just from seeing a big celebrity pitching in, but also because of the delicious dinners they enjoyed.

ddicted to your blow dryer? Stuck on your straightening iron? You’re not alone. While hair commercials make it seem easy to create a bouncy mane, getting shiny, healthy hair takes more than lots of heat styling and salon visits. Plus, taming dry, brittle hair can be more than just an aesthetic issue — it can be indicative of medical issues, as well.

“Hair and scalp problems can be caused by irritation from chemicals in many commercial hair products such as shampoos and conditioners,” says Laurie Alpert, a naturopathic doctor from Cura Medics Clinic in North York, Ontario. “From a medical perspective, hair loss can also be a symptom of a host of health problems such as hormonal imbalance or a thyroid problem, especially in women.” If your hair isn’t looking its finest, look to the root of the problem – your scalp. Fungal or microbial infections can lead to scalp irritation, says Alpert. Try tea tree oil on your scalp, and stick to natural products made with ingredients you can recognize and pronounce, she recommends. Steer clear of sodium lauryl sulfate and other surfactants and chemicals that cause shampoos to foam – these can be very irritating to your skin and sensitive scalp.

What’s one of the other biggest issues that causes dry hair and scalp? “Overwashing your hair is very common in our cleanobsessed society,” says Alpert. “Many people wash their hair daily, stripping it of the essential oils that our body produces naturally to keep the hair looking and feeling healthy.” If you repeatedly strip your hair, your body reacts by producing more oils, making it look greasy by the end of the day, and forcing you to continue on the frequent washing cycle. Wean your hair off daily shampoos, and try to find a balance of one or two shampoos a week, suggests Alpert. NUTRITION FOR HAIR

Take a look at your diet. Eating fresh veggies and fruits is key because they provide fl avonoids that act as antioxidants that protect the hair follicles and encourage hair growth, says Alpert. Stay away from crash diets that involve limiting specific food groups, as these can lead to nutritional deficiencies that can affect your overall health. Eat fish such as salmon, herring, mackerel, sardines and anchovies, that are high in omega-3 fatty acids, and limit fish with high mercury loads such as tuna and swordfish. Treat hair from the inside out by stocking up on essential fatty acids from sources such as fl ax and fish. Vitamin B is also important for the health and growth of hair, so try a daily multi-B complex, with biotin (to help with hair loss and skin issues) and silica. Ask your naturopath for the recommended dose for you. TOO MUCH HEAT

Once you’ve determined that no health issues are causing your hair to lose its usual bounce, look at your hairstyling routine. If you’re straightening, blow drying or curling your hair on a regular basis, it’s likely that your strands can’t take the heat and that you’re damaging the hair shafts. Give your hair a break as often as possible by air drying. Alpert recommends applying coconut oil to the ends of your hair while it’s still wet, to act as a natural leave-in conditioner. She recommends plant oils, such as olive and coconut, that are easily absorbed, as opposed to petroleum-based commercial moisturizers that can clog pores. A deep conditioning mask at least once a week can help. To stimulate hair growth and increase blood flow to the scalp, Alpert suggests massaging your scalp daily for 10 minutes with olive oil, using your fingers, or with a natural bristle hairbrush. Th is increases circulation and can help with hair loss concerns. Hit up your hairstylist to trim off any dead ends every six to eight weeks, and ask him or her to give you pointers on ways to prevent damage to your type of hair. EARTH ISSUE 2012 VIVAMAGONLINE.COM

Eczema is a form of infl ammation of the outer layer of the skin, and it’s just about as fun as it sounds. No stranger to millions of people

Avoid over-bathing or using overly hot water, as this can dry out the skin  Try to keep humidity and temperature balanced  Apply moisturizer frequently  Use mild cleansers and moisturizers, and avoid harsh chemicals, perfumes and dyes  Wear natural fi bres such as cotton and linen, whenever possible  Avoid activities that cause excessive perspiration  Pay attention to foods that cause allergic reactions  Exercise and do other activities in moderation to relieve stress  Maintain cool temperatures while sleeping  Use a humidifier in the winter and the summer 

Dear Laura, I suggest you look at the Sun Protection Factor (SPF) you are using. o you ever wonder why you get frequent colds? Why you get anxious or depressed? Are you looking for ways to clear up your skin? Well, the stomach and intestinal lining, much like a castle wall, is our main barrier against the harsh and dangerous outside world. The intestinal lining houses the majority of our immune system, which protects the body against a host of threats that lead to disease. Outside of this lining, healthy bacteria influence our immune cells and help to keep the intestines strong. However, the overgrowth of unhealthy bugs, such as certain bacteria and yeast, poor diet and stress can destroy the intestinal lining and the immune defences that guard the lining. A damaged intestine or imbalanced immune system can result in virtually every type of health concern.

NO ALLERGIC FOODS

Good guts start with removing foods in the diet that may be causing damage. The most effective strategy is to start with a two-week elimination diet, removing the most common allergic foods from your diet. Alternately, you may consider a IgG blood allergy test, provided through a knowledgeable health professional. Th is will result in a specific list of foods for you to eliminate. It is also important to stop eating abrasive foods for the first few weeks. These include foods such as raw fruits and vegetables, nuts and seeds, as well as harsh fibre supplements such as psyllium husk. Now founder and choreographer Robin Antin has built a cottage industry around this girl group pop sensation. Most recently, Antin has a new DVD out called Pussycat Dolls: Dancer’s Body Workout. “The Pussycat Dolls exemplify the strong, sexy, confidant women we were all meant to be, and the Dancer’s Body Workout is a great way to help get there,” says the 5’6” Antin. “I have a dance studio in my house and do a dance workout after a treadmill session just to get that cardio in.”

Every summer, 20 interns from Canada, the U.S. and other countries set up camp at several Maine puffin colonies to deter gulls, eagles and owls, and other predators from preying on the puffins. Plus, they work to remove garbage and invasive weeds to make the habitat more welcoming to the nesting puffins. As part of their biology studies, the interns observe how the puffins pair up, who they mate with, and even who “divorces” their mate! The birds are wary of humans but also somewhat accepting when the humans stay in their “blinds” – cloth structures with small holes through which the students can watch the birds. During the summer, Web cams are set up so that anyone can go to www.projectpuffin.org and watch puffins—exactly like you’re right there with them! This summer, five new streaming-video cameras will be installed to watch puffins and other seabirds, increasing your entertainment possibilities. Another way your donation can help is by supporting Project Puffin’s strong community outreach component. There is a visitor centre located in Rockland, Maine; a school outreach program, a boat for puffin tours, and a resident camp for adults, teens and families on nearby Hog Island.

Haiti work at seven field stations in Maine that operate in the summer, studying 42,000 nesting seabirds. The funding enables the interns to spend their time studying the habitats of the islands and the many birds that nest there, as part of their biology course. Research that’s done on the Atlantic Puffins can also be used to study other species of puffins, such as the two species of puffin that live on the west coast of North America: the Horned Puffin and the Tufted Puffin. Your donation goes a long way. Dr. Kress points out that the techniques that have been used for Project Puffin are very useful for other, similar seabird projects around the world. Two of the interns who took the program at Eastern Egg Rock are now directing a project off the Baja coast of Mexico. The Baja project involves removing all mammals from some small islands, and restoring indigenous bird populations by using decoys and sound recordings. Other applications of Project Puffin include relocating birds off volcanoes about to erupt, and discouraging fish-eating seabirds from habitat where they are eating too many salmon in a commercial fishery area, Dr. Kress says. coast as a Supervisor to work and learn about the Eastern Egg Rock Ecosystems and study with Project Puffin. Laura: What are you studying and at what school? Kevin: “I am currently working toward my Masters in Biology at the University of New Brunswick, studying ‘How Adult Puffin Health Relates to Diet and Reproductive Capability.’” Laura: How did you hear about Project Puffin? Kevin: “I found out about Project Puffin through the Pacific Seabird Group, an organization dedicated to seabird research.” Laura: How long did you stay in Maine with Project Puffin? Kevin: “I was in Maine for the summer in 2009, about 3.5 months.” Laura: What is the most heart-warming experience you had at the location? Kevin: “The best experience I had was watching the various chicks grow and start their life out at sea. The monumental effort it must take to survive and raise young in the marine environment where nothing is ever the same from one day to the next, is an impressive feat for any animal, let alone birds that only weigh a few hundred grams.” Laura: What impact did this experience have on you? Kevin: “It was a great opportunity to work with the birds up close and get to know them much better. It was also a stepping-stone, which steered me into my current Masters work.” Sarah Gutowsky, of Ontario, moved to Nova Scotia after a five-month study in Maine, at Project Puffin as a supervisor on Seal Island. Laura: What are you studying and at what school? Sarah: “I am currently pursuing my MSc in Biology at Dalhousie University. I am studying seabird conservation ecology, specifically

investigating questions about the at-sea habitat use of two albatross species in the Pacific, the Laysan Albatross and Blackfooted Albatross.” Laura: Do you have a favourite puffin? Sarah: “I do! My favourite puffin was the first puffin chick that we banded in the 2011 field season. We named him ‘Houdini’ because after the first time we got him out of his burrow when he was very

A few facts about puffins

• Puffins are amazing birds that sometimes live as long as 34 years. The two oldest in North America are still creating eggs, and they “burrow” in the same spot every year. • The reason it’s so important to conserve this species is that they only lay one egg per year—and only when they’re five years old. • Puffins in Maine eat Atlantic herring and hake. In Newfoundland, their favourite food is capelin. • Puffins may look a bit clumsy on land—however, when they fly, they beat their wings 400 times per minute. This means they can achieve flying speeds of 77 to 88 km/hr. They’re also great swimmers that can dive for 20-30 seconds at a time, and sometimes even up to a minute. • Biologists want to know exactly where puffins go when they migrate, so they put leg bands on some of the puffins to track them. These “geo-locators” indicate the approximate location of the bird. “Cabot” is the name of one puffin named after John Cabot, the explorer. Cabot flew to the Gulf of St. Lawrence, and then to Labrador, then to the Bermuda plateau, and then back to Maine the following summer! • There are 23 other species of seabirds that share the Maine coast and coastal islands with the Atlantic Puffins. small, we couldn’t find him again until about four weeks later when he had grown too big to hide in his sneaky hiding spot any longer. We found him because his big fluffy bum was sticking out!” Laura: What is the most heart-warming experience you had at the location? Sarah: “Project Puffin provides an opportunity for people to have the extraordinary privilege of working with wild animals, often for the very first time. Seeing the pure joy in the eyes of my volunteers and interns the first time they were trained to safely handle a puffin chick was absolutely the most rewarding and heart-warming aspect of the season.” Laura: What impact did this have on you? Sarah: “The enthusiasm and dedication of our volunteers and interns certainly made me realize how much I truly enjoy teaching people the field skills necessary for on-the-ground conservation. Project Puffin helped me to recognize that teaching was going to be a necessary component of my career in conservation ecology.” Laura: What’s the most interesting thing you think readers would

want to know about you and your experience? Sarah: “Project Puffin serves an exceptional diversity of purposes; not only does the program play a vital role in the monitoring and conservation of Maine’s seabird populations; it also acts to instill passion in countless young people for ornithology and conservation. I believe that the hands-on opportunities offered by Project Puffin have been a vital stepping-stone for many young people toward a passionate career, myself included.” Dr. Kress also mentions another very dedicated supervisor at the puffin colony. “Her name is Rolanda Steenweg of Halifax, Nova Scotia,” he says. “She came to Maine last summer (2011) as the supervisor of Eastern Egg Rock, our most famous first restored puffin colony. She did such a great job that she was invited to return, and will do so this coming May (2012). As supervisor of Egg Rock, she goes out to this seven-acre, treeless island in late May and lives with the seabirds for nearly three months without coming off. Here she camps with several other interns and looks after more than 7,000 nesting seabirds.” - Laura Nistor Weetabix/ Barbara’s Bakery Inc.

Puffins cereal came into existence solely because an employee at Barbara’s Bakery in California went to Alaska about 20 years ago and fell in love with puffins. Canadian puffins help repopulate U.S. colony

Project Puffin was launched in 1973 by Dr. Stephen Kress, in association with the National Audubon Society.

Dr. Stephen Kress is the director of the Seabird Restoration program and vice president for Bird Conservation of the National Audubon Society in the U.S. This is a large, significant organization involved in studying, researching and conserving birds. His home base is the Cornell University lab of Ornithology, where he teaches a popular course in ornithology, the study of birds. From Ohio State University, he has bachelor degrees in zoology, a Master’s degree in biology and a PhD. in environmental science from Cornell.

Here’s how it all happened: “In 1967 while I was in St. Andrews, New Brunswick, while teaching at Sunbury Shores Arts and Nature Centre, I was invited to visit nearby Machias Seal Island. Here, I decided to do a little bird watching from a lighthouse late at night,” Dr. Kress recalls. “I observed a large puffin colony. I became inspired. From research I found that this specific species was almost lost in the Gulf of Maine in 1900 due to hunting.” Dr. Kress began to study and research the situation, and came up with a brilliant idea: to bring some puffins from a thriving colony of 160,000 nesting pairs in Newfoundland to Eastern Egg Rock in Maine. So, young puffins of 10-14 days old were transported south to their new home. The experiment proved successful, and the young puffins, fed by biologists who put handfuls of vitamins in their burrows, reached “fledging” age—which is when young birds leave the nest.

“I hope this project will give Canadians a greater awareness of seabirds,” Dr. Kress says. “It’s an opportunity for interns and donors to learn about seabird conservation and the health of the ocean. With climate change in the news, people don’t know what to do to make a difference, so Project Puffin helps them become a part of the story. It’s a great way to get involved with seabird conservation. These seabirds live in remote places, but they’re affected by the actions of people.”

Altogether, between 1973 and 1986, 954 young puffins were moved from Newfoundland to Maine, and 914 of those successfully fledged. What made the biologists happy is that in 1977, the first transplanted puffins returned to Maine after spending two years at sea. The real proof of success eluded Dr. Kress for eight years as the first puffin to nest at Egg Rock was not sighted until 1981. Since then, the colony has grown to more than 120 pairs. “This had never been done before,” says Dr. Kress. “With time, most of the puffins that survived came back to Maine. They re-colonized well, and to this day, two of the oldest original Newfoundland chicks are still alive and thriving well on the coast of Maine. They were 34 years old in 2011.” Barbara’s Bakery

I’m pregnant and wondering what to do about immunizations once my child is old enough to start having them. My friends say he needs to have all of them. I’m not sure. What is your opinion? – Toni, Winnipeg, Man.

Dear Jasmine, A tell-tale sign of celiac disease is loose, sticky stool; however, gluten intolerance can cause just about any health concern as a result of damage to the small intestine. Nausea, vomiting, unexplained weight-loss, as well as constipation, gas and bloating are several other common symptoms. Gluten intolerance may also lead to anxiety and depression due to poor nutrient absorption.

Dear Toni, This is a good question that raises a lot of controversy in the medical profession because of the lack of studies in regard to the safety of providing multiple vaccinations at the same time during infancy. There is no doubt that individual vaccinations will help build immunity against the conditions for which they are formulated. Some of these diseases are very serious and can result in severe consequences in children who acquire them.

A confirmed diagnosis of celiac disease will often require an intestinal biopsy; however, blood testing is available to determine if antibodies are present against the intestines due to gluten exposure. Initial blood screening for transglutaminase antibodies (tTGA) and/ or anti-endomysium antibodies (EMA) is a good place to start if you are eating gluten. If either of these tests shows any degree of antibody response, you should start a gluten-free diet. Alternately, an easy way to determine if you are gluten intolerant is to start on a gluten-free diet and see how your body responds to the elimination over the course of six weeks.

There are no right or wrong answers when it comes to vaccinations, and the choice really needs to be based on personal or familial beliefs and, in some cases, gender and demographics. The concerns around using multiple vaccinations, aside from exposure to some of the additives, is the possibility of developing imbalances in the immune system. Vaccine administration is not a natural route of acquiring immunity against a specific disease. Speak to your health professional about the vaccinations that are the most important to protect your child against specific infections at specific times during development. Your health professional may inform you that certain vaccinations may be delayed as a result of the low risk of acquiring certain diseases.

Farm girl grows up to become Grammy-winning country singer, while staying true to her roots s she relaxes on her tour bus in Fayetteville, North Carolina before her evening performance, Miranda Lambert could be mistaken for any gal on her day off. She’s still wearing her pajamas at noon. “I wake up every morning not knowing where I am,” the platinum country superstar and Grammy winner says with a laugh. No surprise, since this Texas native has been touring the country promoting her new solo album Four the Record, singing with her girl group, the Pistol Annies, while mentoring six contestants on TV’s The Voice alongside her husband, Blake Shelton, one of the show’s judges. Juggling marriage and career

It’s a hectic life, and Lambert is enjoying every minute of it while still a newlywed. “The biggest challenge in juggling marriage and my career is keeping a balance,” she says with an unmistakable southern twang, “not working too much and not being home too much. I’m trying to find that perfect balance of still getting to live my dream and fulfill that part of my personality. And, honestly, it took a while to find that. I had my nose to the grindstone so I could get to this professional point in my life, also realizing that when this is all over, I’m still going to have a happy life.” Lambert knows the importance of persistence and fortitude. When she first came to Music Row in Nashville, she told record execs that they couldn’t tell her what to record, and that she would do it her way. That sassy and independent spirit has served her well. “My mom says I was that way since the day I was born,” she states with another laugh. “I’m a tough girl and I say it like it is, though when I do finally love you, I love you with my whole heart. To me, that’s a good quality, as well.” Raised in Lindale, Texas, Lambert had a childhood that was just meant to end up in country-music lyrics. At the age of five, she and her family lost everything. “My dad was self-employed, so we had to move, and I remember seeing him depressed and sad – it really opened my eyes,” she says.

Nothing fake about her

Raised on a farm after that, the 28-year-old singer/songwriter ref lects on difficult times. “I’m thankful for those lows in life because I think they make you who you are and help you become a whole person. I’m very real with my songs and don’t have a fake bone in my body. So whatever I put on my records is very honest about where I am in life. My dad later started an assistance farm when I was very young, and we literally lived off the land. “What’s funny is that the first thing I did when I had some money was to buy my own farm, so growing up like that really taught me what’s important in life, be appreciative of what I have, and how to be happy with what you’ve got. I didn’t sign up to be a role model for women—just to be someone who women can say, okay, well she’s normal and she’s successful…she’s a regular sized woman so if she can do it, I can do it too. I think my success speaks to giving women a sense of empowerment; that’s very important to me.” Be yourself

Lambert, who is country’s reigning female vocalist of the year for the second straight year, says her best advice came from her own role model – her mom, who still lives in the small town of Lindale, Texas with her dad. “She told me to be who you are and stick with it,” Lambert says. “I’ve never swayed in my image of who I am, so I think that carried me through life. Just know what you stand for, know your values and always stand by them. I’d say my brand and me are one and the same. I’m very open and honest about who I am.” Believing that everything in life happens for the greater good, Lambert is open to taking chances and venturing outside her comfort zone. So how does the crooner kick off her cowboy boots and take life down a notch or two? “Smoke some ribs out back, be with Blake and family. If it’s date night, sitting on the couch and watching a movie. We’re very low key. Go hunting, fishing…just chill out at our Oklahoma farm. I carry a pistol most of the time when I’m on the farm because I hate snakes. I’m a pretty good shot.”

Mixing up her workouts between Pilates moves, circuit training, Tai Bo moves and outdoor activities helps keep her body in tip-top shape. “I have a trainer, and we don’t necessarily go to a gym because we’re on the road so much. So we use boxing gloves and pads, resistance bands, jump rope and park benches for crunches and dips.” Yet she still keeps a critical eye on herself. “I think as women, we’re critical of ourselves,” she says. “I always have to work on my arms. I’ve got big, strong girl arms, so I have to make sure they’re toned. And my legs – I call them cheerleader legs – because they’re pretty much killer, so if I do a couple of moves for a few weeks, it definitely shows.” girl talk

To nourish her own soul and keep everything honest and true, Lambert makes a point of getting together with her friends for girl talk and writing songs. “I think having close girlfriends like the Pistol Annies keeps me in check,” she says. “So if we’re on the road, it’s definitely more fun being with them and writing songs about what females go through…it’s therapeutic and great for my general well-being.” Another contributor to Lambert’s well-being is eating healthy food.

“I pretty much will eat anything except tomatoes,” she says. “I try not to overeat, and do a lot of salads, grilled chicken and vegetables, but I’m a Texas girl, so I love my fried foods. I can make the best chicken fried steak with double batter.” And then there’s Cheetos, which she admits are her guilty pleasure, and she doesn’t care about tell-tale orange fingers and smudges. “Eating healthy is definitely a choice I have to make every day. I have to make a conscious decision to start off with oatmeal instead of bacon and eggs,” she admits. State of contentment

Lambert’s world is now brimming over with happiness. She’s reached a comfortable, interesting place in her life, anticipating a three-month break in the fall, albeit still writing music. “I just really want to live. I’ve got a great team surrounding me,” she says. “I’m married and feel settled on that front; somebody has my back forever. I feel like I’ve got a good life in Oklahoma with my husband. I don’t feel like I’m treading water anymore. I’m just in a comfortable spot.” And while talk of children is tabled until her 30th birthday, it’s something she says she looks forward to. If Lambert were going to write a song about where she is in life at the moment, what would be the title? For the first time during our long conversation, there’s a moment of silence as she ponders and pushes the blond hair from her face. “Content. That would be the title, and the first line of the song would be: I’m content in who I am and who I’m surrounded by.”

balanced living I love going for jogs or hikes out in nature, especially if it’s a real sunny day, and that doesn’t always happen in Toronto,” says actress Laura Mennell on her favourite form of exercise. “If it’s rainy, then I head to the gym for some cardio and weight training. Whatever the weather, exercise is probably the number one thing that helps me reduce stress.” A Vancouver native, Mennell now lives in Toronto during the fi lming of her new TV show, Alphas, in which she plays Nina, a young woman with the ability to influence people’s will. “With my busy shooting schedule now, there’s never enough time for everything, so if I had any superhuman skill to help me balance out my days, it would be to multiply myself at a moment’s notice.” Since that’s not a viable option, Mennell says she’s lucky catching five hours of sleep. “It’s amazing what you can do with a little bit of sleep. Personally, I love about nine hours of sleep, which I try to get when I’m not working.” What she is disciplined about is her vegetarian diet, which she has stuck to since she was a teenager. “It was more for moral and ethical reasons than because I chose this way of eating,” says the 5’9”, slim actress. “I’ve always loved animals and wasn’t uncomfortable with the idea of eating them, so I researched vegetarianism. The health benefits are just an added bonus that comes along with this eating lifestyle.” Mennell’s food staples lately are “ridiculous amounts of organic carrots, apples, cucumbers and ginger for the fresh morning juices I’ve been making.” Nuts, free range eggs and fresh vegetables are always on hand, as well. “I think being a vegetarian has defi nitely kept me nutritionally balanced.” Mennell supplements with a good omega 3 “for brain focus.” While her TV alter ego is described as seductive, intelligent and confident, it takes a bit of reflection for Mennell to describe herself. “Th at’s a tricky one,” she says. “I’d say loyal, natural and caring.”

YOGURT MARINATED CHICKEN THIGHS WITH COLESLAW For the yogurt marinade

1 cup (240 ml) yogurt 2 tablespoons (20 g) chopped coriander 1 lemon, juiced Black pepper For the coleslaw

½ head of thinly sliced red cabbage 1 thinly sliced Spanish onion 1 thinly sliced carrot 1 thinly sliced Cortland apple 2 tablespoons (25 g) salt 2 tablespoons (25 g) sugar 3 tablespoons (45 ml) yogurt 2 tablespoons (20 g) chopped parsley 4 tablespoons (60 ml) white wine vinegar 1. Mix the cabbage, onion, carrot and apple together in a bowl. Add the vinegar, salt and sugar and mix well. 2. Cover with cellophane and refrigerate for a minimum of 4 hours (maximum of 12 hours). 3. Drain all the liquid from the cabbage mixture. 4. Add yogurt and parsley to complete the coleslaw and reserve. 5. Mix all ingredients of the yogurt marinade with a whisk. 6. Add 8 deboned and skinless chicken thighs to the yogurt marinade for a minimum of 2 hours (maximum of 12 hours). 7. Remove from the marinade. 8. Brush the thighs with vegetable oil and season with salt. 9. Put onto a hot grill for 5 minutes on each side and serve immediately with the coleslaw.

PINE NUT CRUSTED RACK OF LAMB WITH DIJON-YOGURT SAUCE AND SALSAVERDE For the Dijon-yogurt sauce

½ cup (120 ml) yogurt 1 tablespoon (15 ml) honey 1 tablespoon (15 ml) Dijon mustard Black pepper 2 tablespoons (30 ml) white wine vinegar Pinch of salt For the salsaverde

2 tablespoons (20 g) chopped fresh marjoram 2 tablespoons (20 g) chopped fresh oregano 10 leaves chopped fresh basil 4 tablespoons (60 ml) olive oil 1 lemon, juiced Salt to taste For the lamb

4 whole racks of lamb ½ cup (75 g) chopped pine nuts (non-toasted) 4 tablespoons (40 g) chopped thyme 1 tablespoon (15 ml) honey 1 tablespoon (15 ml) balsamic reduction 1. Pan sear the lamb racks until golden brown. 2. Mix honey and balsamic vinegar together until smooth, and spread evenly onto the racks. 3. Mix the pine nuts and thyme together, then sprinkle on the honey-glazed lamb racks. 4. Roast the crusted racks of lamb in a 450°F ( 230°C) degree oven for about 12 minutes. 5. Remove from oven and let it cool off for about 5 minutes, then slice into chops. 6. Spread yogurt sauce onto the plate and serve the sliced rack of lamb on top. 7. Mix all the ingredients for the salsaverde together and serve in a small cup on the side.

CRISPY VEGETABLES WITH YOGURT DIPPING SAUCE For the yogurt dipping sauce

For the vegetables

2 lemons, juiced 8 tablespoons (120 ml) plain yogurt 4 tablespoons (40 g) grated cucumber 2 tablespoons (20 g) chopped dill 2 tablespoons (20 g) chopped mint Dash of salt

1 eggplant 1 zucchini 2 red bell peppers 2 cups (240 ml) milk 2 tablespoons (25 g) salt 1 cup (120 g) flour 1 cup (120 g) corn starch

1. Combine the ingredients for the dipping sauce, whisk together and put aside. 2. Th inly slice the eggplant, zucchini and peppers and lay them fl at on a tray. Sprinkle with salt and set aside for about 15 minutes, allowing the vegetables to release moisture. 3. Pat the vegetables dry, transfer them to a bowl and cover with the milk. 4. Combine the corn starch and flour. 5. One by one, dip the vegetable slices into the flour mixture, shake off the excess flour and place them into a 375°F (191°C) fryer for about 1 minute or until they are golden brown. 6. CHEESECAKE WITH BLUEBERRY SAUCE For the cheesecake

2 cups (240 ml) Philadelphia cream cheese ½ cup (120 ml) plain yogurt 3 eggs ½ cup (100 g) sugar 1 tablespoon (15 ml) vanilla extract 1 lemon, juiced Zest of 1 lemon 1. Cream the sugar, cream cheese and yogurt in a mixer until light and fluff y. 2. Add eggs one at a time, scraping the bowl in between each addition. 3. Add vanilla, lemon juice and zest, and mix one more minute at medium speed. 4. Pour into a 10-inch (25 cm) graham cracker crust. 5. Bake at 350°F (175°C) for approximately 25 minutes or until set. For the blueberry sauce

1 pint (300 g) fresh blueberries ½ cup (100 g) sugar ¼ cup (60 ml) water 1 teaspoon (5 ml) vanilla extract Zest of 1 lemon 1. Bring sugar and water to a boil and cook for about 2 minutes or until the liquid thickens without changing colour. 2. Add blueberries, vanilla and lemon zest and cook for another 2 minutes until the blueberries pop, then refrigerate.

½ cup (120 g) butter 1 cup (200 g) sugar 2 eggs 1 cup (240 ml) plain yogurt 1 teaspoon (10 g) baking soda 1 teaspoon (10 g) baking powder 2 cups flour (240 g) 3 apples, peeled and thinly sliced 2 pinches cinnamon ¼ cup (45 g) brown sugar ½ cup (60 g) almond flour 1. Cream butter and sugar together with an electric mixer until light and fluff y. 2. Slowly add eggs and yogurt, and mix until creamy. 3. Add dry ingredients and mix only until combined. 4. Pour only half the batter into a buttered and floured 12-inch (30 cm) cake pan. 5. Spread half the sliced apples evenly across the batter in the cake pan. 6. Sprinkle 1 pinch of cinnamon, half of the brown sugar and half of the almond flour on the sliced apples. 7. Pour the rest of the batter into the cake pan and top with the remaining apples, cinnamon, brown sugar and almond flour. 8. Bake in a 350°F (175°C) oven for approximately 35 minutes or until golden.

So when my neck injury caused headaches with exercise, I became impatient and frustrated and was on the hunt for a cure. Health recommendation: Acupuncture treatments worked for me in the past, so I thought they could help me again. I started working with my naturopathic doctor and explained my situation. She started me on a course of five acupuncture treatments that focused on the root of the pain: my neck. The results: After three treatments, I tentatively started a light exercise routine, and was very encouraged when the headaches did not reappear. health issue: pelvic organ prolapse Symptoms: After the birth of my first child at the age of 35, I felt I hadn’t healed properly after the traditional six weeks’ post-partum time. I had a feeling of pressure and discomfort in my pelvic area. After visiting my doctor and months of waiting to see if I needed longer to heal, I began to realize there was more going on. Finally a referral to a specialist led to a diagnosis of a cystocele, one of five types of pelvic organ prolapse when the bladder herniates into the vaginal canal. The cystocele herniated further down and I also developed a rectocele, a prolapse of the rectum. Pelvic organ prolapse or POP affected many aspects of my life, including my energy, abilities, excretion, intimacy and emotional state. Health recommendations: Although many women have surgery to repair pelvic organ prolapse, the surgeon recommended that I wait until I was no longer lifting my children. I discovered there was physiotherapy that focused on strengthening the pelvic floor. I also began seeing a naturopath to assist me with making changes to my eating habits. The nutritional changes put less strain on my rectocele since constipation is one of the contributing factors to developing prolapse issues. The results: I have managed my condition effectively thanks to physiotherapy, an exercise program developed for women with pelvic organ prolapse, as well as a nutrient-rich diet. e’ve all found ourselves comforting our BFF as she accumulates frequent crier miles over the same relationship mistake for the umpteenth time. Even as we support her, we sometimes can’t believe she has done the same thing again. Yet chances are, we have some patterns of our own that feel just as twisted to her – and normal to us! What we see as kids shapes how we interact in relationships for the rest of our lives.

So while repeating the good makes sense, repeating the bad doesn’t. Regardless, we’re drawn to the latter, since we subconsciously hope to rewrite a happy ending. And that traps us into “schemas” – a compulsion to repeat self-destructive behaviour patterns. They’re a central part of our belief system that defines our sense of self and our perceptions.

For example, I worked with a woman named Cindy, who was stuck in a verbally abusive relationship. Yet she couldn’t leave, since she was convinced that she couldn’t survive on her own, despite her six-figure salary. We traced her feelings back to her mother telling her that she could never make it on her own, since she could never meet her mom’s impossible standards. Once Cindy realized the root of her problem and recognized that she had already achieved her measure of success, she agreed to do little things on her own. It started off with a weekly girls’ night out. Soon, we added a night of cello lessons – something she’d always wanted to do. From there, she accepted the opportunity to go away for a course that her company was paying for – later, a ski weekend with her friends. Eventually, Cindy realized that she was just fine on her own. In fact, she felt better than ever. At that point, she demanded that her husband go for therapy, and made it clear that she would leave otherwise. After six months, they put their marriage back on track. Had they not been able to do so, Cindy was fine to be on her own. It’s all about challenging yourself to do things differently – one baby step at a time!

Guests can get involved through the organic garden tours or even picking their own items from the garden, returning to the ranch’s adventure kitchen and putting them together in a cooking class taught by the executive chef. And if you are not inspired by the many activities, Korn says, “People love coming here, sitting by the fireplace, playing a board game all weekend long.” Ultimately, everyone – children and the young at heart – venture up to the lodge pool area and gather 'round the fire pit for s’more making every evening. “We think of all our guests as

children at heart. There’s something about this elixir of life that is a little reminder you can make the most of your time without taking a lot of time; you can learn without feeling you have to be taught.” THE LOVE OF LAVENDER

Besides the two-acre organic garden, there are 7,000 lavender plants and more than 70,000 Italian bees living in the ranch’s hives. Ranch staff cultivated 100 pounds of honey from these hives last year and use most of those on the property. From the restaurant (lavender Crème Brule, anyone?) to guest amenities and spa treatments (sweet lavender poultice massage), honey, and lavender oil distilled from the plants are used in many ways at the resort. “All the activities, programs and relaxation are a reminder that luxury and play can fit together extraordinarily well,” reflects Korn on what he hopes guests will remember about Carmel Valley Ranch long after their vacation.

Everyone wants beautifully toned hips and thighs! So how do you mix and match exercises for the best results? There are three main compartments of muscle around the hip, and these work together to determine the shape of this area. Three muscle groups: gluteus maximus (buttocks), gluteus medius (outer hip) and hip adductors (inner thigh) are the key groups to pay more attention to. When the glutes and inner thighs are strong, the hips and thighs become leaner and more toned. INNER THIGH STRENGTHENER (INNER THIGHS) 1. Lie on left side with left leg long and right leg bent and supported. Align pelvis, ribs and head. 2. Draw abdominals inward toward spine and lift left leg upward. 3. Lower and lift left leg 10 times slowly. 4. Feel left inner thigh working in both directions. 5. Repeat on other side.

OLIVE LEAF EXTRACT: The oil of the olive is not the only part of this fruit that has a multitude of health benefits.
