stir-fried sprouts with cranberries & pecans serves 4 50g dried cranberries 75g pecans, toasted in a dry frying pan & roughly chopped 500g brussels sprouts 1 tbsp oil knob of butter sea salt & ground black pepper Put the cranberries in a bowl and pour over boiling water to just cover them. Soak for 10-15 mins, then drain. Cut the sprouts in half, lay each half flat on your chopping board and finely shred the leaves. Heat the oil and butter in a frying pan, add the sprouts and fry for 3-4 mins. Add the cranberries and nuts, season and toss together to serve.

terrific turkeys

Many of our free range organic turkeys are reared by Ed Walters, whose family has been farming turkeys for over 35 years. They are Bronze birds, a slow-growing breed that reaches full maturity naturally, spending the first five to six weeks snug in a barn under heat lamps, before going out to grass from around eight weeks of age. They are bedded down with fresh straw every day and tucked up in the sheds at night for protection. They spend their days trotting and gobbling their way around the organic pasture and popping in and out of their sheds whenever it takes their fancy.

award-winning sausages & bacon

This year we were awarded a Good Pig stamp of approval from Compassion in World Farming. Our pork comes from Tom Browne, who has an outdoor herd at Smallbrook Farm near Exeter. The pigs spend most of their time chasing each other around in the mud and nuzzling through the grass and clover. They are a mix of Durroc, Large White, Hampshire and Landrace breeds, which make very tasty sausages and bacon for your Christmas pigs-in-blankets.

spiced beef with a story

Our spiced beef silverside is made to an Elizabeth David recipe, adapted from the great rounds of beef traditionally cured for the hunt in Melton Mowbray. It is marinated, rubbed and turned for 10 days using saltpetre, brown sugar, salt, black peppercorns, juniper and crushed allspice berries. The result is a tender cold cut with a distinctive spiced flavour.

magical mulling spices To make a warming winter drink, warm two bottles of sweet apple juice in a large pan with two mulling spice bags. Infuse for 10 mins. A good non-alcoholic alternative to mulled wine. If you want an alcoholic version, warm two litres of still cider in a large pan with two mulling spice bags, sugar to taste (around two large cups) and half a lemon. Infuse for 10 mins.
