From your Editor Before moving to Fort Collins for school, I knew nothing about this city. In my head, it was really just an extension of Wyoming. I imagined it to be 90% farms and 10% Colorado State University. Now, living here for almost three years, I’ve learned that this city is more than just farms. It’s live music at the Aggie Theatre. It’s New Belgium Brewery. It’s nights out at Old Town. It’s hiking around Horsetooth Reservoir. It’s a place to call home. The people, the businesses and the atmosphere make a city great, and Fort Collins brings all of these and more. For 30 years, the Best of CSU team has worked to feature Fort Collins businesses that have been voted the best of the best by members of the community. We take this feedback and translate it into a magazine completely produced by student staff. It has been a great privilege to work with all the businesses included in this year’s issue. A huge thank you to all of the RMSM staff who helped make this edition possible. From the hours spent designing, photographing, organizing and writing, thank you for giving your all to showcase the city we call home.

The Foundry The newest dining hall at CSU has taken the win for Best of CSU’s best dining hall category. Renovated in 2018 from the Corbett and Parmelee dining hall, the Foundry is known for its wide selection of food such as Italian street food, vegan options, burritos and tacos, ice cream and more. The dining hall features eight micro-restaurants and is inspired by a food hall. CSU students love camping out in the dining hall to sample both local cuisines, such as Walrus Ice Cream, and international cuisines, such as at the micro-restaurant Passport. The dining hall is open for anyone with a meal plan for breakfast, lunch and dinner.

Spoons A quick stroll through the Lory Student Center food court during any weekday lunch rush hour will consistently reveal one thing: There’s always an abundance of hangry college students lined up in front of Spoons – Soups, Salads & Sandwiches, our pick for the best on-campus lunch at Colorado State University. A Fort Collins staple, Spoons has a menu that changes daily, featuring delicious soups, salads, wraps, sandwiches and sides – not to mention the focaccia bread baked fresh every day – made with

locally sourced ingredients at relatively inexpensive prices. As the days grow colder, it’s understandable why any college student would be hard-pressed to find a warm, steaming bowl of soup like grandma used to make. Look no further! Spoons offers virtually any kind of soup or stew imaginable that may even put grandma’s cooking to shame, but don’t tell her that. Dutch Bros. Despite being located a bit far from Colorado State University’s campus, CSU students can’t seem to get enough of Dutch Bros. Coffee, but with its variety of creative coffee choices, unique design and welcoming staff, it’s no wonder CSU students are willing to make the trip. “Everyone who works there is super nice,” said CSU junior Maddy Johnson. “They have a lot of different options to choose from. I’m also a big fan of their punch card.” College students are known to be two things: broke and tired. Fortunately, Dutch Bros. provides that much-needed caffeine boost for cheap, and a friendly staff smile to go with it.

Silver Grill Cafe

Silver Grill, located in Old Town Fort Collins, has been selected as the go-to brunch place again this year, and for good reason. Known for their gigantic homemade cinnamon rolls and other legendary breakfast and lunch districts, Silver Grill has been a classic restaurant in Fort Collins since its opening in 1933. CSU students can often be seen brunching at Silver Grill with friends and parents alike and are often willing to wait for more than an hour for a table. Silver Grill doesn’t take reservations, so be there early next time you’re hoping to chow down on some delicious breakfast comfort food.

Nick’s Italian Let’s face it. Whether it’s the ramen noodles encircled by the powdery yellow MSG-rich flavor packet that you half-sprinkled onto the countertop of the sink vanity, or the half-eaten Kraft Easy Mac you tossed into your trash bin after realizing you overfilled it with water, carbs are a college student’s best friend. Try something new and take your carbheavy diet down to Nick’s Italian, our pick for best Italian restaurant where all your carb needs can be satisfied with delicious pasta dishes, including bucatini carbonara, rock shrimp scampi, asparagus risotto, Torchio à la Vodka and ricotta gnocchi.

Pile flour on cutting board. 2 cups of flour yields 1 pound of pasta.

Take dough out. Flatten it, flouring surface/dough beforehand.

Make a crater in pile and crack in eggs. Use 2 eggs, 1 yolk per cup of flour. Scramble eggs in crater, incorporating flour. Knead until firm and dry.

Flatten, fold dough over until thin enough to see the shadow of your hand through it. Cut into pasta.

Wrap dough, flouring beforehand. Let sit at room temperature for an hour.

Cafe Mexicali In 2005, Cafe Mexicali opened its first location in Fort Collins with the goal that they would provide customers with Mexican food that is “as fresh as it gets.” They pride themselves in making their food from scratch using only the freshest and highest quality ingredients. Since building their first restaurant in Fort Collins, Cafe Mex has since opened locations in Boulder, Greeley and Johnstown. They also have a College Club open to students who can prove they are enrolled in college. Those who sign up get 20% off their main entree. Yung’s Chinese Take Out has been serving quality, authentic Chinese cuisine in Fort Collins since 1996. Place the second chopstick with the first chopstick in the bend between your pointer finger and thumb, but rest this one on your middle finger instead of your ring finger.

Use your thumb, pointer and middle fingers to grasp the second chopstick a bit more tightly.

The first chopstick (on the bottom) remains more or less stationary. The index and middle fingers are used to move the top chopstick up and down, to open up your chopsticks and close them over the food. Remember to keep your hand loose but still maintain good control over the top chopstick.

Café de Bangkok Known for its array of fresh Thai dishes, including one of Thailand’s most famous meals: Pad Thai, and friendly and fast wait staff, Café De Bangkok is a true Fort Collins treasure. Mary’s Mountain Cookies The first thing anyone says when they enter Mary’s Mountain Cookies’ store front is “Wow, it smells good in here.” They aren’t wrong, and the only thing arguably better than the smell of Mary’s Mountain Cookies is the taste of the cookies themselves. Located in Old Town, the cookie factory has been a favorite among CSU students for years. With a variety of creative flavors, such as Vanilla Avalanche, Caramel Sea Salt and M&M Daydreamer, Mary’s Mountain Cookies has been providing CSU students with a sugar rush for more than 20 years. The store also offers amazing deals (buy six get two free) and the option to buy salmonella-free cookie dough — something we all need after a hard week.

Pinball Jones Hidden beneath Linden Street in Old Town, Pinball Jones has been a home to 25 retro pinball machines since their opening in 2011. The small space does not stop visitors from enjoying the wide array of arcade games available, including an air hockey table and skee ball.
