Harvest time

Reaping the rewards of the season MY LITTLE GARDEN WENT a bit nuts this year. I’m not sure why. At one point I was thinking about looking for the machete to pare back the spaghetti squash. And even though I kept it to one standard tomato and one cherry-tomato plant, which I vined up a string on a pole, the tomatoes are a little crazy too. I’m in my seventh decade with a few gardens under my belt (so to speak) and I still get pretty stoked to pick that first tomato. We grilled some of the jalapenos last weekend with a little goat cheese and wrapped them in prosciutto. Last year, I built this little 5- by 6-foot box and filled it with a good mix of soil. It’s just big enough to have a little fun with but not too much work. This year I added some random leftover organic fertilizer that I found piled with the gardening supplies. Seasonal eating can still be a thing. We’re now hitting what we call BLT season. It feels enough like fall to bake some bread and the garden tomatoes are killer. Add some good bacon and local lettuce and oh, my! We definitely aren’t going to live off the garden, but there’s something enjoyable about seeing a new squash coming on and watching it grow. I was reading Lisa Boesen’s feature story in Bounty about how to preserve and prepare squash and pumpkins. Some foods just seem so seasonal— watermelon, peaches, caprese, zucchini—and hard squashes signal fall and winter to me. Her story had me longing for cooler weather just so that I could have some roasted butternut squash with rosemary sprinkled on it. The garden as a cycle of life is a well-worn metaphor for a reason. I dug the seeds for my spaghetti squash from a squash that my cousin in Nebraska had given me. I still marvel that the seed contains the fruit which contains the seed and on and on. I have a great little terrasse of climbing morning glories that greets us every morning. The seeds were harvested from last year’s plants which were harvested from the plants the year before and on and on. The cycle of seasons is also an oft-visited metaphor for the cycle of life and as we head into autumn and then winter, we can celebrate this time of harvesting what we have nurtured during our lives and take the opportunities for quiet reflection. We can also marvel at the passing of the seed to the next generation and look forward to the spring of a new life sprouting. Grow well where you’re planted. Scott

SEARCH THE INTERNET FOR recipes and ways to store, dry, freeze or preserve your garden’s harvest. Fruits like apples and pears last a few months if wrapped singly in newspaper and placed in a container. Check often for spoilage. Wrap unripe tomatoes in newspaper and store in paper sacks. Cut tops from root vegetables, rinse and let dry well before storing in a sack. Pumpkins last about three months but zucchini must be refrigerated. Most rinsed and dried berries freeze well. Blanch apples and beans before freezing. Make apple or peach pie filling and freeze in usable portions. Wash and slice tomatoes, apples and peppers. Arrange in a single layer in a dehydrator or on a baking sheet placed in a low temperature oven. Slice beets, cucumbers, zucchini and/or onions. Cover with pickling vinegar, pour into jars and process in a canner. Make jams from fruits and berries. Enjoy your harvest all winter long.


Winterize your lawn and garden PERFORM THESE EIGHT STEPS this fall so that you can have a healthy lawn and garden next spring and summer. • Call your local county extension office to check soil pH levels. Add proper amount of nutrients—sulfur to alkaline soils and lime to acidic. • Dethatch and aerate to allow nutrients to reach root levels. • Remove pesky weeds. Pull them up roots and all. • Fertilize in late summer or early fall. A product higher in potassium works well. • Rake the leaves to prevent harmful insects. Store in a dry place and slowly add to your compost pile. Or, shred them for a garden mulch. • Clean all annual plant matter from the gardens. Plant a cover crop or apply mulch. • Cut back perennials. Or, wait until spring and let them feed winter wildlife. • Clean your equipment before storing it away. Your fall preparations will guarantee a healthy lawn and garden next summer.

A winter-ready home WINTER COSTS SKYROCKET if your windows leak, plumbing breaks or furnace needs repair. Preparing for winter begins in the fall. Take these precautions to save money and enjoy a safe, warm winter. Consider purchasing a heating and air company’s maintenance program which checks your equipment twice a year, replaces filters and provides discounts on additional service and materials. Otherwise, change the furnace filter. Consider hiring duct cleaning. Test and replace batteries in smoke and carbon monoxide detectors. Install new weather stripping where needed around drafty windows and doors. Look for rot or damage to wood trims. Caulk and paint. Clean the chimney and order wood if necessary. Disconnect outside hoses and store. Clean the gutters and downspouts. Make sure water flows away from the house. Drain irrigation system then insulate the outside pipes and backflow preventer. Inspect your roof and repair any damages. Now, sit back and enjoy a warm worry-free winter.

FUNNY THING ABOUT VIRUSES: The more we’re exposed the stronger our body’s immune defenses, which rely on the memory of past exposures to create new defenses. With masking up and social distancing over the past year, we haven’t been exposed to strains of the common cold or flus. Which means we just might find ourselves sneezing and coughing this fall. Boost your immune system with a daily dose of good ol’ vitamins C and D, which are proven friends of our immune systems. Regular, moderateintensity exercise has been shown to stimulate our immunity—even simple walking will do. While you’re at it, eat plenty of veggies and fruits, limit alcohol intake, and get enough sleep. Stress is also tied to decreased immunity, so tap into a healthy habit when you feel stress coming on. Maybe it’s taking a break to walk around the block, sitting outside or on the floor and practicing deep breathing exercises, calling a trusted friend or family member to hash out a concern, or giving in to the need to close your eyes for a few minutes and relax. 14 |

Try an old school workout at home WITH THE DELTA VARIANT on the rise, the gym seems less appealing than it did a few months ago. While you can still go to the gym masked up and with a consciousness to social distance (use an N95 mask for good protection), you may want to limit your visits by doing half your workouts at home. Tap into the old standbys you learned in middle school gym class—jumping jacks, running in place, pushups, sit ups, leg lifts—and add in music and spontaneous dance moves for a fun 20 minute workout. If you’ve got hand weights, it’s easy to include sets of bicep curls and tricep kickbacks (where you bend your upper body at a 45 degree angle and slowly extend your weighted arm as far back as you can—a great solution for underarm flab)! If you want a longer workout, supplement with wall sits or squats, lunges and planks. Remember, being spontaneous is half the fun.

Fit in a quick nature fix WITH HOT, SMOKY DAYS of August behind us and fall colors ahead, now’s the time to get outside and experience the beauty and calm of nature. Northern Colorado is loaded with natural areas, likely within a few miles of your home. If you haven’t walked or biked the paths along the Poudre River from Lee Martinez Park in Fort Collins to Lions Park in LaPorte, put that on your fall to do list. Another often overlooked place for a convenient stop is CSU’s Environmental Learning Center with paved paths, bridges, cottonwood forests and wetlands. It’s located one mile past Timberline Rd. as you head east on Drake Rd., taking a left on Environmental Drive. If you are closer to Loveland, River’s Edge located south of First St. and east of Taft Ave. can’t be beat, with nearly 4 miles of trails and ample wildlife viewing amongst the five ponds.

Battle of the buglers FALL IN ROCKY MOUNTAIN NATIONAL PARK means it’s elk breeding season. These majestic animals put on quite a show. Listen to the bugling (the rutting calls of the bulls) and watch them battle over mates. Sometimes you can see hundreds at a time. Peak times are typically mid-

Trail time with Fido YOU WANT TO GO FOR A HIKE but hate to leave your pup behind. When heading out with your dog, follow some basic etiquette. Obey the signs. Many trails don’t allow dogs while others require that they be leashed. In the national forest, dogs might not have to be leashed but they must be trained to voice commands. To keep the outdoor experience nice for everyone and to not pollute the natural area, take bags to collect and carry out pet waste. Also, remember that your faithful companion can overheat, too. Take extra water and a bowl. You can even find cooling vests that work like swamp coolers. For Fort Collins parks, use the natural-areas finder tool. MUSEUMS

Local museums offer high-quality art experiences as well as diverse exhibitions, community events, publications and educational programs for children and adults. Besides art museums, find others devoted to discovery, history, international artifacts and farming.

The Greeley History Museum showcases and preserves Greeley and Weld County’s history through permanent and temporary exhibitions, educational programs, research and collections. Check out the museum’s main exhibit, “Utopia: Adaptation on the Plains.” Search the internet for museums in your city for a current list of venues and subjects. Venues include standalone buildings, universities or spaces tucked into corners of performance halls like the Fort Collins Lincoln Center. Check websites for free days or nights. Watch for holiday decorations and themes. Fort Collins’ Global Village

Museum of Arts and Cultures presents Nativities and International Festivals of Light, November 26-January 22.

MUSIC

Music reaches across time, culture, emotions and distance. Music expresses what can be difficult to verbalize. Music reminds us of the good times as well as the bad. Northern Colorado provides a wide range of music and dance events from classical to rock and opera to bluegrass located in clubs, restaurants, performance halls and even outdoors. This year the Fort Collins Symphony focuses on a musical range of human emotions through familiar


and new composers performed by a variety of guest musicians. Experience Greeley Symphony in various locations. Their ever-popular Poinsettia Pops is December 4th. Union Colony brings in The Oakridge Boys October 2nd. Their other performances include adult and children’s choral groups during the holidays. Candlelight Dinner Playhouse concerts feature music by Garth Brooks, The Rat Pack, ABBA, Elvis and groups concentrating on classic funk, spirited soul, and contemporary pop. An internet search of “Music, concerts and festivals” lists local events.

THEATER

Local theaters and universities offer everything from ballet to opera, dinner and a show to performance halls. Greeley’s Union Colony, Fort Collins Lincoln Center and Loveland’s Rialto Theatre tender Broadway traveling shows, acting troupes, dance, music, visual arts and children’s programs in a larger setting. More intimate locations include theaters like Bas Bleu, Open Stage and the Aggie Theater. These smaller theaters often focus on works written and performed by local authors and actors. Candlelight Dinner Playhouse’s fall schedule of dinner shows includes Peter Pan and The Sound of Music with such favorites as Cinderella and Singing in the Rain slated for Spring.

ART IN PUBLIC PLACES

You can view the art culture of northern Colorado without ever stepping into a gallery or museum. Gather maps of art in public places at each city’s visitor center. Besides parks like Chapungu and Benson Sculpture Park in Loveland, discover

art on the way to the grocery store, in residential neighborhoods, on the sides of buildings, in front of banks and offices, in parks, playgrounds and a post office. The Loveland Post Office proudly displays a mural painted by James Russell Sherman in 1938, a part of the New Deal’s Public Works Art Project (PWAP). Find transformer boxes painted by local artists all over Fort Collins and Loveland. Painted pianos reside along Fort Collins streets and outside businesses for anyone to play. Search for Loveland’s thirty or so 5-feet-tall by 4.5-feet-wide fiberglass hearts. Each represents its sponsor. Look on the “City with HeART™” website to download a map or pick one up from the visitor center. You can sometimes even get a sneak peak of the Lundeen family’s bronze works in progress in the alley behind their Loveland studio.

LITERATURE

Northern Colorado is a hub for many authors of best-selling and award-winning books. Their

genres include children’s, mystery, fiction, nonfiction and western. They belong to prestigious local and national organizations. Many local authors will participate in Fort Collins 2021 Book Fest–October 22-24. The festival was conceived by librarians, writers, book lovers, and community members in 2016 with the simple purpose of “combining the community’s passion for the literary arts and unique cultural heritage in a celebration of literature, literacy, and social conversation.” This year’s theme is “Up, Up, & Out,” meaning “get up from the couch, meet up with friends and family and get out into the world.” The program consists of interactive book talks, author interviews, readings and demos. It features 2020 American Book Award winner, Kali Fajardo-Anstine, author of Sabrina & Corina. Participating local authors include Laura Resau, Jim Davidson, E.J. Levy, John Calderazzo, Claire Boyles, Sasha Steensen and Autumn Bernhardt. Support local authors by attending the festival. For more information, go to https://www. focobookfest.org. Help eliminate food waste Compost, don’t overbuy, eat what you prepare

ood waste, what is food waste? It is the over consumption of uneaten food. Food waste is a global issue affecting not only the environment but also our animals. Food that is not eaten is sent to a landfill. When food piles up it emits greenhouse gasses that are very potent and harm our air. These pollutants make up 8 percent of all greenhouse gasses, and in fact if food waste were a country, it would rank third under the United States and China for global emissions every year. Animals are affected because they are attracted to and eat the poisonous food, which is dangerous for them. Birds will often choke, and other animals will get sick from the mingling of rotten food and plastics. Food waste occurs when people buy or make a large amount of food that goes uneaten and is then thrown away, but there is still hope, and you can help!

WHAT YOU CAN DO

There are many ways that you can help eliminate food waste. They are simple and only take a small amount of time and energy.

First, you can compost. Composting takes the food that would have been thrown away and repurposes it into soil and energy for growing plants. Don’t overbuy food. Buy only what you need and will eat. Eat all the food you prepare. Don’t throw out those leftovers! Take them for lunch or reheat them another night.

MARKET SALVAGES FOOD

Another way to help is to shop at Vindeket Market which is located at 1317 Webster Avenue in Fort Collins. Vindeket is an organization that takes food from grocery stores that would have been thrown out and gives it back to the community. Shoppers can take as much as they would like. It has fresh produce, dairy, breads and other baked goods; it even has a vegan section. They don’t ask for you to pay, but they appreciate donations. One other cool fact is that Vindeket is composed only of volunteers, and they would love for you to join them. Check out their website at www.vindeketfoods.org.

One thing Vindeket market knows is that expiration dates are fake. Most expirations dates are set by companies and are not even close to the truth. The dates are often set early so that people will purchase food more often. This increases a company’s profits, but it also increases food waste. So another easy way to help is to determine if food is good on your own. I am a sixth grader and in fifth grade we did a project where we picked a world issue, informed our class, and took action. I choose food waste. When I was researching, I was very surprised and thought that people should be informed of this issue that is affecting many animals, people and the environment. I decided to volunteer at Vindket and write in this magazine so people could help and be aware. Once people are aware they start to wonder about the ways they can help, and then they take action. Thank you for reading this and becoming informed. I hope that you choose to take action.

THE VERSATILE SQUASH

Make delicious soups, salads, main dishes and pies

A

hh. The crispness of the air. The aspens are golden, and the ash trees are green, red, orange, and yellow—all at the same time. It’s fall here in northern Colorado and all we need is a pumpkin to round out the feeling of autumn and start dreaming of Halloween and Thanksgiving. But wait. There are so many more options than the traditional carving pumpkin at our disposal. Yes, there is the beautiful pie pumpkin, a.k.a. cucurbita moschata or cucurbita maxima. But pause at any farmer’s market in Larimer, Weld, or Boulder County, and you might get home with a magnificent Cinderella pumpkin, four acorn squash, two butternuts, and a gorgeous delicata squash. So, which are edible and how do you process? First, squash has a quite fascinating history. A wild vine in Central America, the Norte Chico people began to cultivate it for food, baskets, and utensils. Central American people

wiped out a great majority of their large animal sources which carried the seeds in the wild so cultivating crops became important. The squash family is part of the Central American Three Sisters of farming—squash, beans, and corn. The corn provided support for the beans, while the squash kept the weeds down and kept the water from evaporating. Interestingly, these three vegetables are also the basis for Southern succotash. Second, there are two groups of squash. Summer squash includes zucchini, yellow and pattypan among a few others. The skin is thinner, and they are generally available in the hotter, summer months. Winter squash varieties have tougher skins, although the newer varieties, such as the delicata and sweet dumpling varieties, have thinner skins which can be eaten when cooked. In addition, all are edible but smaller winter squashes tend to be sweeter than the larger, Cinderella-style pumpkins. A pumpkin is also a type of squash in the Cucurbitaceae family and

preparation is essentially the same, albeit a larger produce item.

CURING AND STORAGE

Winter squash store well, particularly here in Colorado. Feel free to cure it first. Curing winter squash requires about 10 to 14 days of simply letting the squash sit in a warm place with good air circulation and not letting the squash get wet. I’m pretty sure squash at the winter farmers’ market is cured—but always ask. Curing winter squash—Set it on an elevated rack or mesh frame (a cake cooling rack would work) and let the air circulate. Storing winter squash—Store at 50 degrees to 55 degrees F with a relative humidity of 50 to 70 percent. Higher humidity can result in rot. Store cured squash on a shelf or rack, not on the floor. Keep the skins of cured squash dry to prevent the growth of fungi and bacteria.


COOKING AND PREPPING HARD-SKINNED SQUASH (MOSTLY PUMPKINS)

Pressure cooking—If your pressure cooker or Instant Pot is large enough, you can pressure cook a three-pound pie pumpkin whole. Yes, whole. My suggestion is to read and follow the instructions for your specific device but, in general: Place the pumpkin in a steamer basket in the electric pressure cooker (such as an Instant Pot) adding enough water to come to the bottom edge of the basket. Pressure cook on high for about 15 minutes. Your pumpkin flesh will be a little wetter as it is a steam cooking process so be aware of that in your dish. Peel, puree your pumpkin flesh, and freeze in portions in the freezer. If your puree is too wet, heat the puree over the stovetop on medium low heat to cook off some of the moisture. Cool and package to freeze. Note: You can also pressure cook the cut and seeded sections of the pumpkin but

reduce pressure cooking time to 5 minutes. Roasting—Cutting a hardskinned squash or pumpkin may be challenging. You need a very sharp knife, a cutting board, leverage, and instructions. In general: If your pumpkin is not completely flat on the bottom, slice enough off the bottom to create a flat base to work with. Place the pumpkin on its flat bottom. Starting along the side of the stem (not on the stem), cut down through the pumpkin flesh to the bottom of the pumpkin. Repeat the process on the remaining three sides. (Tip: this is also how to cut a bell pepper!) Remove the seeds. You may either roast the pieces as is, or remove the flesh from the skin, cube, season, and then roast. Roast in the oven at 400 degrees 15-30 minutes (depending on the size of the pieces) until the pumpkin is easily pierced with a fork. Smoking—This has to be one of the best ways to prepare part of your pumpkin and squash stash. Follow the cutting instructions above. THIN-SKINNED SQUASH

Most thin-skinned squash are smaller, and thus, much easier to handle. A good sharp chef knife and a smaller knife to remove the seeds is recommended. Since the squash are smaller, cuter, colorful, and more decorative looking, they open up different possibilities for roasting or stuffing. After cutting in half, scoop the seeds out and stuff with a stuffing or sprinkle on oil and spices.Bake at 350 degrees or roast at 400 degrees until fork tender. Alternatively, cut the smaller squash in half, and depending on the shape, cut in rings, half-moons, or whatever shape the squash seems to give you.

Although traditionally we think of pumpkins and winter squash for a side dish or a pie for the iconic Thanksgiving

meal, winter squashes cross all cuisine lines. Roasting is the beloved way to prepare a root or vine vegetable. Yet, there are so many other magical ways to use the prepared flesh. First, think soup, salad, main dish, or dessert. Then, in addition to roasting, think steam, bake, smoke, mash, blend/ puree, stuff, grill, fry, or my favorite, marry with another vegetable. Beyond the basic roasted cubes and squash casserole, winter squashes can be used to fill Italian ravioli, Indian dosas, and French crepes, elevate mashed potatoes, enhance soups, fry as a fritter, blend in a salad, and yes, act as moisture in a cake. A puree of cannellini or garbanzo beans and pumpkin or butternut squash with a dash of Berbere spice mix offers the diner an opportunity to receive more protein and fiber. Not a spicy fan? Do You Hear Me Now? Does stress cause hearing loss or does hearing loss cause stress?

T

he answer is a little of both. Stress is a normal part of our lives and has a beneficial place in our lives. Stress can tell you when to run from a dangerous situation or it can give you an extra shot of adrenaline to stand your ground, also known as the “fight or flight” response. Although, if we don’t manage our stress levels, it can lead to emotional, psychological, and physical problems. Heart disease and high blood pressure are complications that can occur and impact the flow of blood to our brain. In some cases, this interruption of blood flow to our inner ear or parts of our brain that control hearing is what can lead to hearing loss. Poor circulation can also contribute to the cause of tinnitus, which is described as a ringing in the ears, that is your brain’s reaction to a hearing loss. An underlying cause of

tinnitus includes high blood pressure, which is often caused by stress. At the same time, hearing loss has also been linked with increased levels of stress. For the 20% of Americans who experience hearing loss, the struggles that accompany hearing loss could lead to stress. Whether it is communication with a loved one or performance on a job, untreated hearing loss could impede your productivity and relationships. The American Psychological Association lists these following five tips for reducing stress: 1) Take a break. Even 20 minutes away from the cause of your stress can give you perspective and make you feel less overwhelmed. 2) Exercise. Just 20 minutes each day provides health benefits for both your body and mind. 3) Smile and laugh. Moving those facial muscles in particular eases

tension and sends a corresponding happy signal to the brain. 4) Get social support. Talk to someone who can understand what you’re going through and provide positive feedback. 5) Meditate. From emptiness to overflowing abundance How volunteering helped rebuild a life KATE BEGAN VOLUNTEERING TO stave off the emptiness she felt after a bout with cancer led to the deterioration of her marriage. When she and her husband divorced, most of her friend group—which was comprised of other couples—changed. “I needed an outlet for my loneliness and my anger, so I began volunteering,” explains Kate. “First I began volunteering with HABIC and trained my collie in caring for children in schools. I remember one boy who couldn’t communicate with anyone, yet he would sit with my collie and talk his heart out to her, and she would listen!” Hanging out with four-legged friends continues to be a theme of Kate’s volunteer activities. She fosters puppies for the Animal Friends Alliance and teaches her young canine guests basic manners until they’re adopted into their forever homes. She also volunteers with the National Association of Canine Scent Work, a group that sponsors competitions where dogs use their instinctual hunting and puzzle-solving skills to find hidden objects. Her German Wirehair Pointer, Greta, is learning to be a competitor with Kate’s patient coaching. As one of Fort Collins first Bicycle Ambassadors, Kate has been sharing her passion for pedaling with people of all ages since the Bicycle Ambassador Program’s inception in 2012. The Fort Collins Safe Routes to School (SRTS) program relies on her to teach its safe bicycling programs to kids throughout the city, too. “Kate’s enthusiasm for bicycling is truly infectious, 42 |

and it rubs off on the kids she teaches in bike camps and at schools,” says Nancy Nichols, SRTS coordinator. From giving bike safety presentations and teaching safe cycling classes to working at the city’s Open Street events to counting bicyclists and pedestrians as part of a data collection process, Kate’s service has helped hundreds of children and adults enjoy safe, two-wheeled fun. Kate also shares her love of the natural world with others. For years she volunteered as a certified adventure leader with the Colorado Mountain Club taking people on backpacking, snowshoeing and cross-country skiing expeditions. She also served as the treasurer for

CMC’s Fort Collins Chapter for a long period of time. Currently, you might find her at the Gardens on Spring Creek weeding flower beds or educating visitors about winged creatures in the Butterfly House. Another group that benefits from Kate’s generous spirit is Project SelfSufficiency. Annually, she reads through applications submitted by single parents asking for the nonprofit’s help in building a stable life. “This is a really hard assignment,” she says. “I want to help them all and narrowing it down to a few is a really tough call.” What’s not a tough call is the one to keep on keeping on. Kate plans to continue volunteering for the rest of her life. “It keeps me healthy and doing things I enjoy. I also really like helping people and giving back to the community, which is such a cliché thing to say, but it’s true.”
