How to make dough with confidence as easy as 123!

1.

Warm up 1/2 cup milk and dissolve 1 tsp honey, add 1 Tbsp yeast to lukewarm milk/honey. Let stand for 10min for the yeast to activate.

2.

Warm up 1 1/2 cup water and dissolve 2 Tbsp honey & 4 Tbsp margarine + 1 egg to lukewarm mixture. Add to the activated yeast in a large bowl.

3.

Slowly add approx. 4 cups flour and mix with wooden spoon, when the dough feels kneadable, turn out onto floured board.

Add 2 more cups of flour, kneading the dough until it is no longer sticky.

Let rest in greased bowl for 1-2 hours or until it is well risen and to its capacity. Cover lightly with plastic wrap to keep draft and dust off.

Punch down the yeast and knead again with a bit of flour.

“ the old fashioned way of enjoying bread goods” The key for a well managed dough which can be used in a variety of recipes, is temperature + time:

̑The 1/2 cup warm honey (adjust to sweetener of your diet choice) and milk (whatever milk product suits your diet) in which the 1 Tbsp dry yeast is dissolved, needs to be of such temperature that the yeast activates but does not die from too much heat, or not respond because the liquid is too cool.

Think body temperature as you might test your bathwater the old fashioned way: in this case pour a little of the milk-honey liquid over the inside of your wrist for thermometer and understand the temperature to be a little warmer than lukewarm: perfect for the yeast to start working.

̑The 1 1/2 cups of warm honey-margarine-egg water which is added to the activated yeast needs to be the same just 'warmer than lukewarm' temperature.

̑Instead of margarine, we have also used butter and vegetable shortening as well as organic coconut oil and other such oils.

̑A person following a vegan diet would not use the egg, and simply leave the recipe at that. ̑The approx. 6 cups of flour are another product choice as you know what flour product suits your diet. ̑Time is of the essence in any venture and here time needs to be taken to ensure the yeast has enough of it to reach and expand to its maximum. We use quick rise yeast, you can use traditional and fresh yeast.

̑Good basic dough yields such a nice base for fun homemade recipes and we show you a few inspirations through our own photos.

̑This recipe yields 2 loaves of rolls, 2 med pizza, 2 med lasagna dish-size of cinnamon buns. ̑For best production time result, mix and match this dough recipe into 1 loaf of rolls and 1 pizza/dish of cinnamon buns.
