Apple Streusel Cheesecake Make this cheesecake to enjoy it the very next day as it will need a day to set. It freezes well. We find this cheesecake reasonable in cost and fresh & light in taste!
Ingredients: Crust:
1/2 cup butter (we prefer softened & unsalted) 125 ml 1/3 cup granulated sugar (we use organic) 75 ml 1 cup flour 250 ml
Bottom fruit layer:
Preparation: Crust: Heat oven to 350°F. Cream butter and sugar together thoroughly. Blend in flour. Press into bottom and 1/2inch (1cm) up side of greased 9inch (23cm) spring form pan. Bake 12-15 min or until slightly golden. Bottom fruit layer: Peel, core and halve apples. Cut into 1/3 inch (8mm) thick slices. In fry pan, melt granulated sugar with butter over med heat. Cook apples for 3-5 min or until tender (not mushy) and slightly browned. Add cream and cook, stirring occasionally, for 5 min. Set aside to cool and then arrange over crust. CJeeseEaMe ƂlliPI: In a mixing bowl with electric mixer, beat cream cheese and sour cream with brown sugar, adding one egg at a time. Add lemon juice and rind. Pour over the apples on crust. 6oRRiPI: Mix ingredients until crumbly with electric mixer and sprinkle streusel over top of the cheese cake. Bake for ca 45 min or until center is just set.
