Welcome! It is with undeniable pleasure that I bring you Rose and Ivy, a new quarterly lifestyle journal. Each issue is filled with inspiration within the world of style, beauty, design and food with a refined point of view. With shoppable content, each page is designed to engage the imagination with pieces that will take you through the season that is ahead. In the premier issue we are inspired by still life - the mood, the dramatic light and the beauty of shape that embodies the season of autumn. While we have compiled pieces of fall in this issue, we will be keeping up with the season on the Rose & Ivy blog, so please be sure to stop by. TATA HARPER In a day and age where everything is driven by technology, it is refreshing to see a company that relies solely on the power of nature. Tata Harper embraces this philosophy on her sustainable farm in Vermont where she grows and formulates completely natural skincare remedies that have the ability to transform the skin with their high concentration of natural ingredients. RECIPE INDEX Easy Truffled Focaccia with Herbs 1 pound store-bought pizza dough 1/4 cup fresh rosemary, chopped 2 tablespoons fresh thyme, chopped 4 tablespoons truffle oil sea salt flakes, like Maldon to taste Preheat oven to 400 degrees. Generously oil a baking sheet* with olive oil. Place dough into pan and press until it is spread out evenly. Press herbs into dough, brush with truffle oil and sea salt flakes to taste. Bake for 25 minutes or until bread turns golden brown. Remove from oven and let cool slightly before slicing. *Thickness of focaccia will depend on the size of the baking sheet. For thicker bread use a small baking sheet or for thinner bread (better for sandwiches) use a larger sheet.
Quinoa, Roasted Sweet Potato & Apple Salad 2 sweet potatoes, diced and roasted 2 cups red quinoa, cooked 2 apples, diced 1/4 cup walnuts Dressing 1/4 cup olive oil 1 tablespoon apple cider vinegar salt and pepper, to taste Preheat oven to 400 degrees. Place diced sweet potatoes on a baking sheet, drizzle with olive oil, salt and pepper. Bake for about 30 minutes or until potatoes become tender and browned. Let cool slightly. Meanwhile make dressing, combine olive oil, vinegar, salt and pepper in a bowl, mix to combine. Place cooked quinoa, apples, sweet potatoes, walnuts in a serving bowl. Add dressing and stir to combine. Serve either warm or cold.

Roasted Garlic & Ricotta Tart with Tomatoes
Pumpkin Mousse with Cinnamon Shortbread
1 recipe of your favorite pie crust 1 bulb garlic 1 1/2 cups ricotta, preferrably fresh 1/4 cup Parmigiano-Reggiano, grated 1 egg 2 cups cherry tomatoes, cut in half salt & pepper, to taste fresh thyme, for garnish
1 envelope unflavored gelatin 1/4 cup water 1/2 cup pumpkin puree 4 eggs, separated 1/4 cup extra-fine sugar, plus 1/4 cup extra 2 teaspoons cinnamon 1/4 teaspoon ground nutmeg pinch of salt 8 ounces heavy whipping cream
Preheat oven to 400 degrees. Place garlic clove in tin foil with a drizzle of extra virgin olive oil, salt and pepper. Roast garlic for 40 minutes or until cloves are completely softened. Let cool slightly. In a bowl, combine ricotta, cheese, egg, salt and pepper. Release garlic cloves by gently squeezing bulb. Mix garlic with ricotta mixture, set aside. Roll out dough onto a prepared surface and place into a tart tin. Place ricotta and garlic mixture into tin and arrange tomatoes on top. Bake for 30 minutes or until the crust is golden and the center has set. Let cool slightly, serve warm or cold topped with fresh thyme.
1 recipe of your favorite pie crust 4 tablespoons butter, melted 2 tablespoons sugar 1 teaspoon cinnamon Place the gelatin and in a heavy bottomed sauce pan. Stir in the water. Cook over medium heat or until gelatin has completely disolved, let cool. Meanwhile place pureed pumpkin, egg yolks, 1/4 cup sugar, cinnamon, nutmeg and salt into a bowl. Add the gelatin once it has cooled. Mix together and set aside. Place egg whites in a bowl, slowly add sugar and whip with a mixer until medium peaks form. Fold into pumpkin mixture. Using clean beaters whip heavy cream until stiff peaks form. Fold into pumpkin mixture. Fill ramekins or mason jars with mousse and refrigerate for at least 5 hours. If desired dust with cinnamon before serving. Cinnamon Shortbread: Preheat oven to 350 degrees. Place parchment on top of a baking sheet. Combine cinnamon and sugar, set aside. Flour a surface and roll-out dough. Using a cookie cutter cut out rounds and place dough onto baking sheet. Brush with melted butter and sprinkle with cinnamon and sugar. Bake for 15 minutes or until golden. Serve alongside the mousse.

Pick a sunny location that will allow you to soak in the last bit of the sun’s rays. Consider before sunset at the beach or on a grassy lawn.
SERVING
Forgo plastic serving pieces and utencils and incorporate actual plates and flatware. This takes the picnic idea of yesterday into a new level of sophistication.
SETTING
Even though you might be surrounded by nature that does not mean that flowers should be overlooked. Incorporate the landscape into a bouquet whether it be wildflowers like (chamomile or Queen Anne’s Lace) or the season’s last hydrangeas clipped from your own backyard.

FleurdeSEL Discovering France’s Best Kept Secret
S
alt has been used for centuries not only for enhancing the flavor of food but also for its medicinal properties. The world boasts a variety of salts including table, kosher, rock and flake but one of the most luxurious varieties is fleur de sel, which hales from the Brittany region of France. When it comes to salt, not all varieties are created equal. Fleur de sel, often referred to as the ‘caviar of salt’, is a particular variety where the century-old cultivation technique makes it unique and also very expensive. Today there are remarkably five salt works that are still in production from the 9th century. While the majority of the region including the coastal towns
of Noirmoutier and Carmague yield this variety, the salt harvested from Geurande is particularly desirable. The salt is harvested by hand in the late afternoon during the dry season which produces pure white salt, unlike some varieties that have a slight grey tinge also known as ‘sel gris’. The harvest is obtained by the farmers skimming the surface of the water with pans that are then left to dry in the open air. Eventually the crystals form together to resemble a flower, thus the translation being ‘salt flower’. This variety of salt is the perfect compliment to meat and fish and can add a great finishing touch to a sweet dessert.

Start with the plate and build from there. If it is a more organic piece, incorporate linen or burlap materials. If the plate is more ornate or an antique, accentuate the setting with lace or a simple pattern.

ucked inside of a brownstone in the heart of Brooklyn Heights exists Rosanne Pugliese’s jewelry studio, a space that is as elegant as the hand-crafted pieces. Rosanne Pugliese had a storied career in fashion working in product development for Calvin Klein. It was there that she crafted her aesthetic for scultpural and minimal design that still delivered a beautiful impact. Inspired by her grandmother’s jewels, she began to follow her passion for jewelry by creating bespoke pieces out of her Brooklyn home. It was only time until clients and eventually retailers were quickly knocking on her door.

To begin her creative processs she looks to film, design, interiors and intersting objects, she sites Diana Vreeland and Dianne Keaton as her muses. It is then that she combines jewels like tourmaline and quartz sourced from Brazil with gold that has been melded until she sees fit. The beauty in her pieces lies in the imperfections. Not each stone has to be flawless, but rather it is those unique touches that make her jewelery stand-out from the rest.

Inside the Shop Roseanne Pugliese’s Brownstone Shop is as striking as her pieces. The space is anchored by a wall that features handmade blue and gold marbled wallpaper from Calico Wallpaper, a company based out of Redhook, Brooklyn. It was that wallpaper that served as the inspiration behind the entire shop desgined by Julia Mack Design. In addition to jewelry, the shop also curates a selection of objects and accessories including prints by Hugo Guiness, Monday’s Project Pottery and the niche French perfume line Arquiste. 77

culptor, architect, interior designer, furniture designer, curator, those are just some of the titles that HomeStories shop owners and husband and wife duo Paul and Sophie Yanacopoulos have superbly mastered. With a diverse background, he is from Britain, but is half French, she is Greek and Swedish, they have come to develop a design aesthetic that tempers the perfect equilibrium between organic design with sculpted nuances. In a world where everything is disposable their approach to design has a sustainable point of view. Each piece tells a story, whether through the artisan who crafted it or the distance it traveled to arrive in the shop in the heart of Brooklyn Heights. Rose & Ivy sat down with both Paul and Sophie over a few espressos to discuss their curation process and the art of beautiful things.
Like all great love stories Paul and Sophie’s was one destined in the stars. He was working as a furniture designer for SCP, one of London’s most avant-garde companies at the time, while Sophie having studied interior design was working for a contemporary furniture store in Switzerland. They met at a trade show and the rest is history. Sophie, tired of the chrome, red and black leather familiar to Italian design craved warmth, charm and simplicity. It was not too long before they combined their talents and opened Atmosphere, a two-part store in Geneva, Switzerland dedicated to home and kitchen wares. They wanted to introduce to Switzerland, a country known for being pristine and perfect, to a new side of beauty, one that was low-tech and broke out of this idea of controlled perfection.

After much success, but feeling rather burned out from running a business they pondered their next move. They eventually decided to part ways and move fifteen minutes outside of Geneva to a hybrid barn designed and built by Paul that would house them in additon to their showroom and studio. The barn was a bright and airy space, one that caught the eye of many European design magazines including Maison Franรงaise. But like many creatives, after the completion and media success of this venture they questioned, what is next? With their two children getting older, they wanted to expose them to life in a city once again. They pondered Zurich, Australia, Stockholm and the West Coast of the U.S, but nothing solidified until the idea of New York came to mind.

It was not too long before they settled on the East Coast and opened their shop, HomeStories, in Brooklyn. Sophie equates moving to a new city like becoming a child all over again. Everything is new from the sites, sounds and culture, there is a world of discovery just waiting to unfold. Like anything that they have accomplished, they had a strong vision and purpose for the shop. They wanted to introduce New Yorkers to their philosophy of aquiring timeless items that will last forever and live many lives by focusing on quality and craftsmanship. Living in many cities, they have been exposed to different life philosophies, but the most shocking when arriving to America was the disposability of simple household items from serving pieces to a household broom.
“Beauty raises your energy and emotions but most importanty nourishes the soul” The shop features an array of designers including Paola Navone, Naoto Fukasawa and Brooklyn-based Tamar Mogendorff. When asked to name some upand-coming artisans they insist they are not big on names, since the product value really isn’t in who created it, but rather the energy that comes from the objects. There are many new projects on the horizon for this duo including exanding their design capabilities into home renovation and introducing a new line of products that are European designed but made in America. When asked to describe their new venture in a few words they said poetry, essentialness, quality and fundamentalism. Those are words that have us excited for what is next.

Paul sees beauty as a vibration and the lack of perfection. While Sophie finds beauty to be subjective. Beauty at Home Sometimes the answer to your beauty dilemmas can be quickly crafted in your own kitchen. With a few key ingredients, you can create powerful skincare remedies that will leave your skin looking healthy and impossibly radiant. Below are some items to have on hand.

This oil is packed with antioxidants which can fend off premature aging, while simultaneously moisturizing the skin.
This luxurious oil creates a moisture barrier on the skin and aids in skin rejuvenation due to its high antioxidant level.

This rose essence has worked miracles for centuries. It reduces puffiness, promotes soft skin and is oftentimes used as a toner.

Sea Salt
A more abrasive option compared to a sugar-based scrub. Sea salt detoxifies the skin and aids in improving circulation. Ancient Greeks and Romans incorporated salt into their bathing routine to induce relaxation.

or those that are looking to peer inside of a modern day fairytale you might want to begin with Mimi Thorrison, the talent behind the wildly successful blog, Manger. Wife, mother to seven children, owner of fourteen dogs and kitchen aficianado one might pose the question what can’t she do. She possesses the savoir faire in the kitchen, the type of talent where a trip to the open-air market in MÊdoc gives way to a feast prepared from the heart and laced with the romanticism of the French countryside. This October, Thorrison introduces her first cookbook,
A Kitchen in France: A Year of Cooking in My Farmhouse, which includes both essays and recipes savored by her family and friends. Rose & Ivy got a sneak peak inside of the book (one that we know will be on our shelves for many years to come) and caught up with Mimi to discuss the art of cooking, her most memorable dish and what is on the horizon.

How did the time you spent in Paris influence your passion for delicious food? Well, I have been passionate about food ever since I was a child, thanks to my wonderful parents who shared the same passion. Food has always taken center stage in our lives. I grew up in Hong Kong and spent all my holidays in Paris & South of France with my family. Later in my life, when I lived in Paris full-time, I would say the beautiful restaurants, bistrots and the amazing atmosphere have always defined what I love most in food - a sense of share, of conviviality and good times.
What is the most memorable meal that you ever experienced? What made it so special? Definitely my wedding lunch banquet at ‘Le Grand Véfour’ in Paris. Oddur and I were surrounded by our dearest, eating the most amazing food, all day long! It was unforgettable!
Which season inspires your cooking the most? Autumn. It’s the most generous of all seasons, with all its golden warm hues. It’s the time of the year where we want to get ready for cozy slow-cooking.
So much of your blog is dedicated to story-telling where you draw the reader into the fairytale of life in Médoc and leave us inevitably inspired. What/who inspires you?

I would say, the inner child in me is my main inspiration! I am surrounded by such interesting people and beautiful nature, I am always curious and enthusiastic!

You have mentioned that to your husband, Oddur ‘everything must look like a painting’ and indeed every photograph perfectly matches his dream. How do you bring your creative vision to life? Is it a quick process or something that takes time?
“There is no beauty without strangeness”
We live in an environment where we have the freedom to ‘create’ our lives, our vision, so whenever we shoot a scene, it’s all there.
How do you approach fall entertaining? Any tips or recipes that are essential for the season? Any slow-cooked meal in a large cocotte is good! All you have to do is prepare in advance. And candlesticks, lots of them - they create an instant romantic and timeless atmosphere.
What is next for you? You just purchased a (magical) château that will also serve as the backdrop for your next venture, a seasonal restaurant. Can you share any details of what is to come? We are right in the middle of it - it is so exciting. We are planning cooking workshops, where guests can stay in our little hotel and the restaurant is planned for next summer.
Since the premier issue of Rose & Ivy is greatly influenced by the beauty of still-life (the mood and the lighting) like that seen in your photographs how do you define beauty? There is no beauty without strangeness.

CARMELIZED HONEY FIGS WITH SPICED NUT CRUMBLE Ingredients: 12 figs, black mission or brown turkey 1 cup sliced almonds 1/2 cup shelled sunflower seeds 3 tablespoons + 1 1/2 tablespoons honey 1/2 teaspoon pure vanilla extract 1/2 teaspoon cinnamon pinch of nutmeg 1/2 tablespoon olive oil sea salt flakes, to taste Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Combine almonds, sunflower seeds, 3 tablespoons honey, vanilla extract, cinnamon, nutmeg, olive oil and sea salt flakes in a bowl. Stir to combine. Place on baking sheet and bake for 10 to 15 minutes or until golden. Set aside to cool completely. Meanwhile, cut figs in half lengthwise and place remaining honey in a non-stick frying pan. Allow to cook until the figs achieve a golden color, about 10 minutes. Set aside to cool. For assembly, place yogurt in a bowl, top with spiced crumble and figs.
PLUM AND ROSE TART Ingredients: 1 recipe of pie crust 10 to 12 plums, pitted and thinly sliced 1/2 cup sugar vanilla bean (scraped) or 1 teaspoon vanilla extract 2 tablespoons rose water, optional 1/2 teaspoon cinnamon pinch of salt 1 egg, for egg wash sanding sugar, for garnish

Preheat oven to 400 degrees. Line a baking sheet with parchment paper, set aside. Place sliced plums, sugar, vanilla (bean or vanilla extract), rose water and salt in a medium-sized bowl. Stir together and let maccerate for about 15 minutes. Meanwhile, roll out pie crust on a floured surface. Roll into a circular shape. Place plums in a circular pattern in the center of crust leaving at least a 3-inch overhang. Fold the crust into the plums and brush with egg wash and garnish with sanding sugar. Bake for 40 to 45 minutes or until crust is golden. Serve warm or cold.

BLACKBERRY APPLE CREPE CAKE For Crepes 1/2 cup milk 1/2 water 1 cup plain flour 2 eggs 1 tablespoon sugar 1/2 teaspoon cinnmon For Blackberry Cream 350ml heavy cream 3 tablespoons powdered sugar 1/3 cup blackberries For Caramel 1/4 cup soft brown sugar 1/4 cup butter 2 tablespoons heavy cream 3 apples 2 cups blackberries
To make crepes whisk the water and milk with the eggs then add the flour, sugar and cinnamon. Put in the refridgerator for 20 minutes to chill. While the batter is chilling heat the oven to 350 degrees and thinly slice the apples and spread out on a baking sheet and sprinkle with some brown sugar(approx 2 tbsp). Heat pan with a little butter then pour in about 3 tbsp of the batter and tip pan to spread around into a circle. Cook for 1 minute then flip over and cook the other side for another half a minute until it turns golden brown. Repeat with the rest of the mixture.
Assembly: To build the cake, add a crepe then pipe the cream and add some apples and blackberries, next drizzle caramel and add another crepe on top. Continue adding layers until all the crepes are used up. Garnish with blackberries on top and drizzle with some more caramel. Dust with powdered sugar to finish the cake.

Ingredients: 2 pears, peeled and chopped 2 tablespoons unsalted butter, plus more for pan 1/4 teaspoon cinnamon pinch of salt 1 loaf challah bread, thickly sliced 6 eggs 2 teaspoons vanilla extract 1 tablespoon of milk maple syrup, for serving

Place butter in the bottom of a heavy bottomed sauce pan. Allow to melt. Add pears, cinnamon and salt and stir to combine. Continue to cook until butter begins to brown and pears become soft. Set aside. Place eggs, vanilla and milk in a bowl. Mix to combine. Place a frying pan over medium heat, add butter to coat the pan. Add bread slices to egg mixture, allow bread to fully absorb eggs. Place on pan and cook until golden on both sides. To serve, place cooked pears on top of French toast. Drizzle with maple syrup for serving.

Celebrating the autumn season would not be complete without visiting the orchard. Green trees in a row give way to juicy apples, beckoning to be eaten and baked. Sure there is apple pie and apple tarts, but transforming apples into an apple cake is the perfect compliment to morning coffee or tea.

APPLE CAKE WITH CINNAMON SPICED ICING Ingredients 1 1/2 cups almond flour 1 cup all-purpose flour 2 teaspoons cinnamon 1/4 teaspoon salt 1 stick unsalted butter, softened 1 cup light brown sugar 3 eggs 3 medium apples, peeled and diced

For Icing: 1/3 cup, plus 2 tablespoons confectioners sugar 1 tablespoon milk 1/4 teaspoon cinnamon

Preheat oven to 350 degrees. Thoroughly butter and flour a bundt pan, set aside. Sift almond flour, flour, cinnamon and salt in a bowl, set aside. Using electric mixer combine butter and brown sugar, beat until combined about 3 minutes. Add eggs and continue to beat until combined. Add the flour mixture and mix until batter is smooth. Fold in the apples. Pour into mold and bake for 40 minutes or until a knife inserted into the middle comes out clean. Allow to cool completely. To make the icing combine confectioners sugar, milk and cinnamon, mix together. Drizzle over cake and serve.
