A LETTER FROM THE EDITOR

I

know that the old saying says, ‘everything begins again in the fall’, but I tend to agree that spring is where we turn over a new leaf. We happily leave behind our wool layers in favor of dresses, swap boots for sandals and heavier meals are replaced with lighter dishes, thanks to the bounty of produce that graces local farmer’s markets. In the third edition of ROSE & IVY Journal, I am thrilled to dedicate the issue to my favorite medium, flowers. Frequenting the flower market here in New York has become one of my favorite past times, even if it is work-related, I find myself elated as I walk into each shop. I just adore being surrounded by bouquets of flowers and other dreamy botanicals. Even though their beauty only lasts for a few days, they still have the ability to lift your mood and impart a dose of beauty for whomever sees, or in some cases, inhales their

floral aroma. From beauty products laced with potent floral elixirs to our style picks of the season, we definitely are looking ahead with rose tinted glasses. At ROSE & IVY we simply adore gardens – their designs, colors and overall sense of magic that they possess. Whether you are planting a full garden, or simply have a terrace, we rounded up some of our favorite flowers that once planted they need very little maintenance in ‘The Gardening Table’. Once the garden is ready, it is time for a ‘Floral Soirée’ with flowers, cake and of course, floral inspired champagne cocktails. As effortless as the season is, we still want to look polished and if possible have looks that can take us from the office to a picnic at the beach or park. For that we turn to Hoot, a must-know brand featured in 'The New Luxury Basics' that has answered our quest for relaxed looks that still have a fashionable appeal. With each issue, our goal is to create beauty. We do not want to tell you how to live your life, but rather, we want to inspire you to lead a beautiful life. We love it when a brand has the ability to transport us somewhere exotic. Okapi, named after the elusive antelope known as the ‘African Unicorn’, does just that. Started by South African painter Hanneli Rupert, who set out to create a collection that encompassed quality craftsmanship with an African aesthetic. Each item in the collection is handmade and 100% sustainable, not to mention unique and beautiful. We currently have our eye on the Yemaja shoulder bag in Brilliant Green.

sunny disposition Accessory designer Paula Cademartori has officially seduced us with her colorful bags with eye-catching patterns and a new line of shoes that ares stylishly fun. We caught up with the Milan-based designer, by way of Brazil, to learn more about her creative process and her plans to conquer the fashion world.

What is your background; did you always have an eye for design?

Well, I have always been interested in design, especially accessories. They have been my passion since I was a child. I used to spend long afternoons in my grandmother’s closet with her dresses, bags and jewels. In Brazil, I studied industrial design and worked with jewels. This background has been crucial. I've always been fascinated by the study and construction of objects. The concept behind the design of any object are also the starting points on which I build my collection of bags and now even my shoes, which are not only designed to be aesthetically beautiful, but also functional.

Would you say that your previous experience at Versace shaped your design aesthetic?

It surely was a great opportunity and experience. Working closely with Donatella and the design team helped to improve my knowledge of fashion, especially accessories, and of course, it gave me the chance to understand “the inside� of a historical and multinational brand. I then used my knowledge to develop my own aesthetic vision and created a collection that represents my very personal taste and style.

Color and energetic patterns are a prominent motif in your work. Where do you draw your inspiration?

From everything that impresses and thrills me! I try to bring something new into every collection and it takes a lot research to find new elements. I used to take inspiration from the most diverse creative fields, like art and photography. The most important thing for me is to understand and study what people are carrying at the moment, which are the market’s needs. When I create my collection I always have in mind the intention to create a desired object. I also have to say that being Brazilian influences the colors and materials. I love mixing them to create unexpected combinations.

What are the key elements that you factor in while dreaming up a collection?

I always keep in mind my final purpose - to create accessories that perfectly blend functionality and timeless elegance. Once you find a shape that works in everyday life, then, as a designer, you achieved your goal! Only by doing this, a creation can become an ever-lasting bestseller.

You take pride in the fact that each piece in your collection is made in Italy. Why is that so important to you?

I think being ‘Made in Italy’ is an added value, because it is synonymous with quality, craftsmanship and tradition. Here, you can really find the best artisans in the world. On the other hand, I believe that the power of a product is also due to the research and design that lies behind each model.

You recently extended your collection with a shoe line. How else do you see the Paula Cademartori brand expanding?

The launch of the shoe collection was a huge step for the brand and a great satisfaction for me. Now, I’m working hard to develop my company and expand the collection’s offerings with new product categories. I aim to create a real “Cademartori world” for my customers. I’m deeply focused on extending my network of sales in the world and in few years opening the first Paula Cademartori flagship store, maybe in Milan.

I think beauty is something that comes from the inside and is reflected on the outside. The only important thing you can do is love yourself and take care of yourself and you will appear as beautiful as you feel. Is the same for anything you do: if it is made with love and passion it will be a success! 23

One package puff pastry, thawed 3.5 ounces goat cheese, softened 3 tablespoons milk, skim or whole 1 bunch parsley, chopped 1 tablespoon extra virgin olive oil Âź teaspoon finely grated lemon zest salt and pepper, to taste 1 egg, lightly beaten Asparagus tips, about Âź pound

Tangy herbed goat cheese is paired with seasonal asparagus and a splash of lemon in these delicious individual tar ts.

Cooks Note: When it comes to puf f pastry, we prefer Dufour, which contains f lour and butter and is preservative-free.

Preheat oven to 400 degrees. Place goat cheese into a bowl, allow to come to room temperature. Lightly flour a working surface. Carefully unfold thawed pastry and roll into a rectangle. Using a large circular cookie cutter, cut out six shapes. Using a slightly smaller cookie cutter, make a smaller circle inside of the bigger one. Generously poke holes with a fork inside of the smaller circle. Brush with egg wash. Pre-bake puff pastry for 10 minutes or until puffed and slightly golden. Remove from oven and carefully press the center down around the inside border. Set aside. Combine goat cheese, milk, parsley, olive oil, lemon zest and salt and pepper. Stir to combine. Place cheese mixture into center of pastry. Arrange asparagus tips on top. Bake for 10 minutes or until cheese mixture begins to slightly brown. Let cool slightly before serving.

2 ½ cups milk, skim or whole 1 vanilla bean, seeds removed, plus pod 6 egg yolks, slightly beatened ¼ cup cornstarch ½ cup sugar Pinch of salt 3 tablespoons unsalted butter, cubed Sea salt flakes

1 packaged puff pastry, thawed 1 egg, beaten

Place milk, sugar, salt, vanilla beans and vanilla pod in a medium sauce pan over medium heat. Allow to come to a simmer. Meanwhile, whisk egg yolks with corn starch. Whisk egg mixture into simmering milk stirring constantly with a wooden spoon. Continue to stir until the mixture coats the back of the spoon. Remove from heat and discard vanilla pod. Stir in unsalted butter and mix until melted. Pour pastry cream through a fine sieve into a bowl to remove any egg that might have cooked. Place plastic wrap directly on top of pastry cream and refrigerate until completely cooled. Preheat oven to 400 degrees. Lightly flour a working surface and carefully unfold pastry. Use a rolling 59

pin to help achieve a flat surface if necessary. Create a border on the pastry by outlining it with a knife, taking care to not cut through the pastry entirely. Generously poke holes with a fork in the center. Brush with remaining egg wash. Bake for 25 to 30 minutes or until pastry is golden and firm to the touch. Once slightly cooled, carefully go over the border that you created and gently push it down. This will be the cavity for the pastry cream. For assembly: Place pastry cream in the center of the tart. Smooth with a spatula. Place strawberries on top in desired pattern and sprinkle with pistachios. Serve cold or at room temperature.

Preheat oven to 400 degrees. Lightly flour a working surface. Gently unfold thawed pastry and roll into a rectangle using a rolling pin. Using a pastry cutter or knife, cut strips about 4 inches thick, or larger if you would like to make bigger croissants. Place 1 to 2 teaspoons of chopped chocolate on one end. Gently roll croissant placing seam on the bottom, place onto a baking sheet. Repeat until finished, leaving about 4 inches between each croissant. Brush with egg wash. Bake for 20 to 25 minutes or until golden. Let cool before serving.

This French breakfast staple is made extra simple by incorporating flaky prepared pastry with rich dark chocolate, making it the perfect addition to a spring brunch.

Greek-inspired, this toast is reminiscent of a meal enjoyed on the island of Santorini. Tangy feta cheese, sweet roasted cherry tomatoes and earthy oregano come together to create a delicous dynamic trio.

ne of our favorite new clothing brands is Hoot, a line that has all of our basic fashion needs met, from the perfect tee to the shirt dress, all with a luxurious twist. We caught up with Tara Rasmus, the Director of the brand, to find out more about the wardrobe pieces that everyone should have and discussed her burgeoning lifestyle site that sells must-have products that should be on your radar.

How would you describe Hoot in 3 words?

Can I cheat a little bit here? I’d describe Hoot as: modern, versatile, and effortless — with a touch of whimsy. The whimsy is subtle, but it’s key; it’s important to me that our brand is refined, but that we never take ourselves too seriously.

Who is the Hoot girl?

I’ve always thought of the Hoot girl as a woman that lives in Brooklyn, works in Manhattan, and vacations in Paris. I think that our brand mixes classic NYC sophistication with a little Brooklyn grit, plus a nice dose of Parisian charm.

What are the basic wardrobe essentials that ever yone should have in their wardrobe?

I’ve been pleasantly surprised by how many sartorial issues have been solved by the addition of our shirt dresses to my wardrobe. Whether I have an important meeting, a dinner party, or a date night to attend, I always feel confident, sexy, and appropriate in these pieces — they make me feel like Superwoman. Personally, I’m also a huge fan of jackets.I prefer spring and fall because I think that an outfit really isn’t complete until the perfect little extra layer is added. Our shirt jacket is a unique take on a bomber/athletic style, and it’s amazingly versatile.

The Hoot site offers a curated lifestyle approach, ranging from beauty products, jewelry to paper goods. What up and coming brands should be on our radar?

I was very excited to personally handpick all of the brands that we carry on Hoot, as I really wanted to showcase smaller indie brands that our customer hadn’t necessarily seen everywhere already. In terms of accessories, I’m a big fan of our pieces from Fleabags, which is an awesome line of leather/canvas goods that is based in Brooklyn and run by some seriously badass women. In terms of beauty, I am pretty fanatical about S.W. Basics, a skin care line made up of products that all contain five or fewer ingredients. Use these products, and you will never have to worry about rubbing nasty chemicals on your face ever again — they’re totally foolproof and very, very effective.

How do you see the site and brand expanding over the next few seasons?

We’re actually currently in the process of brainstorming what year two of Hoot will look like. All in all, I see us sticking to our 'optimistic minimalist' aesthetic, but we’re hoping to add more color and a spirit of celebration to our future assortments. In terms of the future of our eponymous clothing line, our runaway hit has certainly been our Side Snap Sweatshirt, so we’re playing around with the idea of expanding the color palette of that item, as well as potentially bringing that concept to other pieces such as dresses and pants.

Combine sugar, water, lemon zest and lemon juice in a sauce pan over medium heat. Allow for sugars to dissolve. Allow to cool slightly. Store in an airtight container and refrigerate until ready to use. To Prepare One Cocktail: Place 2 tablespoons of lemon simple syrup into a champagne glass. Top with champagne. Garnish with lemon peel and a spring of lavender, if desired.

Combine sugar, water, basil leaves and lemon zest in a sauce pan over medium heat. Allow for sugars to dissolve. Reduce heat to low, to allow the oils from the basil to release. Allow to cool slightly. Store syrup in an airtight container and refrigerate until ready to use. To Prepare One Cocktail: Pour 1 tablespoon of basil simple syrup into a champagne glass. Using the back of a wooden spoon gently crush strawberries and place into glass. Top with champagne. Garnish with basil flowers, if desired.

Every party needs a cake, here, a layered red velvet cake topped with airy buttercream from Betty Bakery in Brookyn, creates quite the focal point especially when adorned with purple clematis and lilacs.

1 cup sugar 1 cup water 3 stalks rhubarb, diced ½ lemon, juiced Rose water Champagne, such as Perrier-Jouët Grand Brut Edible rose petals, for garnish

Combine sugar, water, rhubarb and lemon juice in a sauce pan over medium heat. Allow for sugars to dissolve and for rhubarb to cook down, about 5 minutes. Let cool slightly. Gently press through a sieve to release the liquid. Store syrup in an airtight container and refrigerate until ready to use. To Prepare One Cocktail: Pour 1 to 2 tablespoons of simple syrup into a champagne glass. Add 1 teaspoon of rose water, top with champagne. This flower is a great option for those wanting a lot of garden coverage, with little care.

his time of year, the green market is overflowing with delicious bounty - from lengthy spears of asparagus in hues of purple, green and white, to the coveted ramp, which only makes an appearance for a few precious weeks. Here, we created some deliciously fresh recipes to usher in the season.

shaved asparagus salad with parmigiano reggiano Available most days out of the year, but nothing compares to in season asparagus. These long green stalks are a perfect base for a salad, especially when shaved into ribbons and seasoned with lemon and olive oil.

½ pound fresh asparagus Juice of ½ lemon Zest of ½ lemon ¼ cup extra virgin olive oil Salt & pepper, to taste Shaved Parmesan-Reggiano, to taste

Wash asparagus and pat dry. Using a sharp vegetable peeler, carefully shave asparagus stalk from base, right below asparagus spear. Place both stalk and spear into a bowl. Repeat until finished peeling asparagus. Place lemon juice, zest and olive oil in a small bowl. Mix to combine. Pour over asparagus. Garnish with Parmigiano-Reggiano and season with salt and pepper.



warm fava bean and barley salad Fava beans are favored because of their meaty texture and versatility. Here, these vibrant beans combine with warm, slightly nutty barley, to create a healthy meal.


1 ½ pounds fava beans, shelled 1/2 cup barley 2 cloves garlic, minced 1 teaspoon zest of lemon ¼ extra virgin olive oil ½ lemon, juiced Salt & pepper, to taste Parmigiano-Reggiano, shaved to garnish

To prepare fava beans, slice beans along the seam to remove the beans, set aside. Prepare a medium bowl with ice water. Bring a small pot of water to a boil. Add beans and cook for 30 seconds. Place beans into ice bath. Let beans soak for a few minutes. Once set, gently slip the shell of the bean from the interior. Set aside. Meanwhile, bring 3 cups of water to a boil. Add barley. Cook for 50 to 60 minutes or until tender. Keep covered. Place a drizzle of olive oil, lemon zest and minced garlic in a sauté pan. Add fava beans and cook for about 5 minutes. Add beans to cooked barley. Add olive oil and lemon juice, stir together, season with salt, pepper and Parmigiano-Reggiano.


Foodies the world over rejoice when this wispy vegetable, from the leek family, makes its first appearance at farmers markets. Acting quickly is a must, since they only are available for a few weeks. The ramp has a wonderfully delicious onion flavor, but isn’t overwhelming, making it a perfect option for pesto. Smeared on a piece of crusty bread or mixed into pasta, this is a rendition on pesto that can only be savored in the spring.

Place the entirety of the ramps, olive oil, parmesan and lemon zest in a blender. Season with salt and pepper. Pulse until smooth. To assemble crostini, toast bread. Brush with olive oil, place a dollop of pesto on bread. Add shaved parmesean and greens, if desired. makes 1/2 cup
