Tutor Doctor Making ‘House Calls’ in Katy, Fulshear, Richmond and Surrounding Areas Fast-Growing One-on-One In-Home Tutoring Franchise Makes a Difference

T

here will be fewer “math meltdowns” and other homework headaches in Richmond and the surrounding areas now that Ken and Parker Knapp have introduced the Tutor Doctor solution to the local equation.

Tutor Doctor, a rapidly expanding one-on-one in-home tutoring service designed to help students from ages three to 103, announced the opening of a new location serving Katy, Fulshear, Richmond and the surrounding areas offering the community and students a private, convenient way to catch-up or get ahead in school. The new location opened earlier this year by local entrepreneurs Ken and Parker Knapp. The rise of tutoring is becoming so pervasive that it is changing the face of education. Due to heightened competition in the classroom and governmental programs requiring schools identified as failing to provide tutoring to students, this $4 billion per year industry, once an upper-class phenomenon, has extended to the middle class and beyond and continues to grow at a rapid pace. In fact, in each of the past three years, consumer spending on tutoring has increased 7 percent to 10 percent. Tutor Doctor stands out from others in the tutoring industry in its holistic approach to each student’s academic success. “At Tutor Doctor we believe every child can succeed in school,” said Parker Knapp. “Our programs are custom-designed to fit the individual needs of each student. Our one-on-one in-home programs ensure that each student is given the utmost attention and tools for success.”

“In addition, we take the time to meet each family and their child,” said Knapp. “We have also met with and know each tutor personally. We know the unique learning style and personality of the students and can make an excellent match with the personality and teaching style of the tutors. This is a very important part of creating an optimum learning environment.” added Knapp. Tutor Doctor also works with the student’s current teacher to ensure that they are meeting both the family’s and teacher’s expectations. They work with the student’s existing curriculum, while supplementing with additional educational materials when appropriate. In addition to providing school-age students with tutoring in various subjects, many families also hire Tutor Doctor to help students get ahead and prepare for larger challenges, such as advanced classes that could help them get into a preferred college or university. Tutor Doctor has also proven valuable for the rapidly growing home-schooled population, as well as for seniors wanting to sharpen their technology skills.

About Tutor Doctor Tutor Doctor was founded in 1999 as an alternative to the “one-to-many” teaching model most extra-curricular learning centers offer by providing a personalized oneon-one, in-home tutoring service to students. The company quickly grew and in 2003 turned to franchising as a way of expanding the company’s impact and meeting the vast market demand. Now with offices internationally in Canada, the United States and the United Kingdom, the Tutor Doctor vision is becoming a reality as the lives of students and their families are being positively impacted throughout the world. Tutor Doctor is affiliated with the National Tutor Association (NTA), whose mission is to foster the advancement of professional and peer tutoring, support research into best practices and standards for all tutors, support tutor training, advocate for tutor certification, and uphold the NTA Code of Ethics. Fulshear History

The Picturesque Life of Churchill Fulshear, Jr. With the death of Churchill Fulshear, Jr., one of Texas’ most colorful characters and largest landowners, the man himself went down in the history books. When the Fulshear family arrived in Texas, in 1824, Churchill Fulshear, Jr., was just a tall, lanky boy of 16. He was born in Tennessee in 1808 and had one sister, Mary, and two brothers, Benjamin and Graves. Legend has it that Churchill, Jr., ran fast enough to catch a jackrabbit. His marksmanship with his long rifle was unsurpassed amongst any of the other settlers. When the travelers reached the lower Brazos, they found their way upstream to the cabin of William Moreton (later spelled Morton). At that time, Moreton lived near where present-day Richmond is located. Below the cabin, the sandy currents of the Brazos swirled by while miles of untouched land stretched on endlessly. Churchill, Jr., with his coonskin cap at a jaunty angle, set his bare toes in the red dirt and knew he’d found home. On July 16, 1824, Churchill, Sr. (who died in 1831) was awarded a Mexican land grant, which was signed by Baron de Bastrop, John Austin, Steven F. Austin, and Samuel M. Williams. It reads in part: “In the name of the Mexican nation we do grant and concede to Churchill Foster, his heirs and successors one league of land

for stock raising on the east margin of the Brazos River…and being contiguous on the south with the said Brazos River, one the west with John Randon’s land, and on the north with lands of the nation and on the east with lands of the nation…” Twelve years later, in March 1836, now 28, Churchill, Jr., joined Deaf Smith in the vines and underbrush of the Brazos bottom to scout for General Sam Houston and the Army of the Republic. Hidden amongst the treetops, Churchill and Deaf watched as Santa Anna’s army moved across the lowland. Churchill, Jr., would later disparage General Houston’s strategic retreat toward San Jacinto. Although he joined in the battle cries at San Jacinto and stood with a finger on the trigger of his gun, for the rest of his days he questioned Sam Houston’s bravery. After the war, however, Churchill, Jr., prospered. He married Minerva Cartwright, daughter of Jesse H. Cartwright. Together, they had five children. By 1850, masons began making bricks for a 3-story house to be built on the highest point of Churchill’s land and facing a large but shallow lake.

racing stock in the United States. Old Get was one of the most famous racehorses in the United States. Churchill, Jr., went to races near and far. At times, he returned to Lake Hill Plantation with a cartload of silver dollars. Other times, he was a heavy loser. He supposedly once owned land where Corpus Christi now stands, but lost it on a horse race. Soon, he had a circular track laid out on his estate and some of South Texas’ richest planters attended, placing high stakes.

Soon, there was a great, red brick home with white Corinthian columns. The ground floor held the kitchen and stalls for racehorses. On the two upper floors were large and elegantly furnished rooms.

Around the time of the Civil War, an epidemic of tuberculosis struck and claimed eight members of the Fulshear family. Churchill, Jr., was left with no kin except one grandson. His widowed foster daughter, Mrs. Emma Wilson, had come to Lake Hill to help nurse the sick but took the place of mistress of the household.

Churchill, Jr., became interested in horse breeding when he captured and tamed the mustangs that once ran wild over the South Texas prairies. During the many years that horseracing was a particularly popular sport, Lake Hill Plantation (the name of Churchill’s home) always housed 6 to 8 animals. He bred some of the finest 2010 I 2011 Fulshear–Simonton–Weston Lakes Resource Guide

Although Lake Hill was vast and sumptuous and entertained everyone from peddlers, book agents, and lightning rod salesmen to statesmen and other distinguished guests, Churchill Fulshear, Jr., had very simple personal tastes. Every morning, long before his servants woke, he baked a hoecake for his breakfast. Although crystal and silver sat amidst the finest food and drink on his long dining table, Churchill, Jr., was content with his hoecake and a glass of milk. In 1888, Fulshear gave a right of way across his lands to the S.A. and A.P. Railway and the city of Fulshear was born.

W

eston Lakes is the newest city in Fort Bend County having incorporated as a Type B City on May 20, 2008 after an election on May 10, 2008. The City then elected its Mayor and City Council on November 4, 2008. Mayor Mary Rose Zdunkewicz, Councilmen Clifton Aldrich, Ted Case, Denis DeLuca, Gary Owens, and Trent Thomas along with City Marshal Ron Horowitz were elected and in 2009 were reelected as they were unopposed. Weston Lakes began as a master planned community in the 1980s and has grown over time to a population of 2300 with approximately 940 homes situated amongst a sprawling golf course with ponds and lakes meandering through the City. It is situated in between the Cities of Fulshear and Simonton. The original development was carved out of early Texas farms and ranches in the John Randon League and the Churchill Fulshear League. With the hard financial times in the 90s its full development was scaled back to that area within the John Randon league and today it makes up 1500 acres of gated private community with a link to the past through the inclusion of 275 acres of ranches,

pasture and agricultural land in the south western portion of the City. Annual Fund Raiser Building Specially Adapted Homes for Our Severely Injured Veterans AT N O C O S T T O T H E V E T E R A N S W E S E R V E

A Fulshear, Simonton, and Weston Lakes Annual Fund Raising Highlight The Communities of Fulshear, Simonton and Weston Lakes are proud and honored to be the site of a major fund raising effort to help our wounded troops. The Home for our Troops Annual Sporting Clays tournament draws as many as 5,000 people to our area to participate in the tournament, to partake of the military enactments, to be spectators at the competition, to eat great food, participate in helicopter rides, but most of all donate to a great cause. Home for our Troops provides housing and homes for veterans of our most recent wars who have been maimed and have lost health, limbs and the ability to lead a normal life. The 4th Annual Homes for Our Troops Sporting Clays Tournament, sponsored by Energy Corporation of America, will be held Friday and Saturday, January 28, 29, 2011, on the Brazos River, at 3575 Bowser Rd., Simonton, 77476. The use of the property is donated by Judge Carl Bentley, himself a WWII veteran and enthusiastic supporter of all of our soldiers, sailors, airmen and marines. His efforts and generous contributions of support is what have brought this proud event to the

One Home for our Troops home costs an average of $375,000 to retrofit or build, not including the land. Each home is specifically adapted to the needs of the veteran and his or her family. Often, the veterans require more assistance than one adult can provide, so quarters are built into the home for either relatives or care-givers to assist the veteran. In many cases, voice-activated equipment is incorporated to allow the veteran to control his or her environment. Large spaces are common to allow for wheelchairs or other mobility equipment. Or when vision is lost, walls and floors are finished with different textures for easier navigation throughout the home.

Fulshear, Simonton, and the Weston Lakes area. Tournament flights are 8:00 a.m. and 1:00 p.m. both Friday and Saturday. This event is not just for the shooter. The entire family is invited to come out and show their support of our troops. In addition to tournament play, other family fun activities and exhibits will include:

t Helicopter assault reenactments t Great Food and Drink t Raffle Prizes (Guns, ATVs, and more) t Ground assault reenactments t Door Prizes t Fun Shoots and kids pony rides

t Helicopter Rides t Shooting Vendor Galore t Music and Performers t Trick Shot Demonstrations t Soldiers and Veterans Equestrian Demonstrations

It is through generous donations, volunteer help from the community, and fundraising events like this Sporting Clays Tournament, that Homes for Our Troops can build each home at no cost to the veteran. This event has raised over $325,000 in the last three years allowing homes to be presented to Texas wounded veterans. Currently, there are seven homes in progress in Texas; two in El Paso, four in San Antonio and one in Houston

country club Weston Lakes Country Club Nestled among the gently rolling hills and stately old pecan trees, Weston Lakes Country Club has been one of the area’s best kept secrets for years. The country club features an 18hole championship golf course designed by legendary PGA Tour champion Hale Irwin, two tennis courts, as well as adult and family swimming pools. Members enjoy dining in the casual elegance of the Waterside Grill, which features extensive lunch and dinner menus as well as daily specials including “fresh catch” seafood, tex-mex favorites, and family friendly selections. The 14,000 square foot English tudor style clubhouse is set on the banks of scenic Pecan Lake, which makes it a memorable setting for weddings, banquets, and other special functions. Weston Lakes’ members and their guests are invited to participate in a multitude of club sponsored events. These events range from extravagant black tie affairs like the club’s New Year’s Eve party to more family oriented events like the Easter Egg Hunt and the ever popular Halloween Spooktacular. “The country club is really the social focal point of the community,” exclaim Ted and Nancy Case, long-time Weston Lakes residents and active country club members. “Events at the club provide the perfect opportunity to get together to enjoy a special evening with groups of our friends and neighbors. The New Year’s Eve party is one of the best events of the year.”

In addition to the amenities and special events, Weston Lakes Country Club is proud to sponsor a variety of clubs and organizations in which our members are invited to participate. “The primary reason that most people join a country club is for the social opportunities,” Jason Hall, the Manager for Weston Lakes Country Club explains. “From the golf associations to bridge groups to the car club to the swim team, we really offer something for everyone.” Some of these organizations and activities include… Golf Associations The country club sponsors golf associations for men, ladies and senior men, and also hosts a couples’ golf group on Friday and Sunday nights. Each golf association hosts regular weekly play-days, and also offers members the opportunity to engage in friendly competition during monthly or semi-monthly golf tournaments. The most notable of these tournaments include the Member-Guest and Club Championship golf tournaments.

Women’s Associations The Weston Lakes Women’s Association is a social organization that promotes fellowship and community spirit among its members. The association also sponsors the annual “Community Challenge” through its non-profit foundation in order to provide scholarships for area students and to support other community organizations. Weston Lakes Country Club also hosts regular meetings for the Garden Club and several bridge and bunko groups. Swim Team The Weston “Lakers” swim team is open to children and teens (ages 5-18). The swim team hosts regular practices throughout the week at the country club pool, and also competes in swim meets against teams from other communities. Junior Camps Golf camps are available throughout the summer for members and their guests. Instruction is provided by Class “A” PGA Professional George Guidry and focuses on developing individual skills by teaching the fundamentals of the golf swing. Participants also learn the rules of golf, as well as etiquette and on-course strategy. “The country club has so many activities. My husband, Henry plays golf with the senior men on Tuesday, Thursday and Saturday, and I enjoy playing bridge and attending women’s association luncheons in the Ballroom. We also really love meeting friends for Happy Hour or dinner in the Grill,” says Sally Bayard. “We can’t imagine living anywhere else!”

TAILS ARE WAGGIN’ OUT WEST IN FULSHEAR!

W

aggin’ Tails Pet Ranch is a one of a kind pet facility located in Fulshear, Tx. The “Ranch” is a beautiful 7600 square foot building set on 15 acres that offers boarding, grooming, daycamp, training and pet accessories. Waggin’ Tails is a totally different approach to the average boarding facility. The staff at Waggin’ Tails believes that when your family goes on vacation so should your pets. The boarders have 4 acres of play yards complete with swimming. Waggin’ Tails Pet Ranch opened in October 2005 and is owned by Denise and Derek Einkauf. Denise has Animal Science and Biomedical Science degrees from Texas A&M and has over 20 years of animal experience. Denise has a passion for animals and people and it shows in her business. Her family lives on site and she oversees every aspect of the Ranch. “We opened Waggin’ Tails to change the way that pets are boarded because we always hated to leave our pets in a “kennel”. We wanted to offer a “family” approach to boarding. We get to know the dogs and owners personally. Our goal is to let the dogs have so much fun that they leave tired and happy and want to return. My favorite thing about my job is watching

the dogs bolt from the car to get in the door here because they love us.” Says Denise. Denise also encourages tours so that people can see the difference. One of the many things that sets Waggin’ Tails Pet Ranch apart from its’ competition is that it is ALL-INCLUSIVE. There are no extra charges for all of the extras offered. The Ranch offers Yappy Hour, Pats and Hugs, Woof-NWade and Santa Paws at Christmas. Waggin’ Tails offers two types of boarding options. One option is the luxury suites that are private rooms complete with luxury beds and flat screen TVs. The other option is the bunkhouse. These are 8 foot X 4 foot runs that include cots and bedding. Both options are air conditioned and come with the owners’ choice of extras.

2010 I 2011 Fulshear–Simonton–Weston Lakes Resource Guide

In addition to boarding, Waggin’ Tails Pet Ranch also offers DayCamp, grooming and training. Day Campers enjoy a full day of outside fun with breaks for treats and hugs. Waggin’ Tails also provides full service grooming and pampering services in the Salon. Waggin’ Tails Pet Ranch has a professional trainer on staff that does training classes for obedience as well as private lessons and problem solving. The Ranch is open Monday-Friday 7am-6pm, Saturdays 8am-3pm, and on Sundays from 4pm-6pm for pick ups only. Tours are welcome from 10am6pm weekdays and from 10am-2pm on Saturdays. For more information visit: www.waggintailspetranch.com or call 281-533-0500. Waggin Tails Pet Ranch is a member of the Katy Area Chamber of Commerce, Fort Bend Chamber Alliance, The Better Business Bureau and The Pet Care Services Association. Waggin’ Tails was also voted the Ultimate Doggie Daycare by the Houston Chronicle as well as Best Boarding Facility, Best Grooming Facility and Best Doggie Daycare by the Katy Sun.

Growing and Growing... E\ -HQQLIHU +HDWK Just like Fort Bend County, the OakBend Medical Center keeps growing and growing. From its humble beginnings as Polly Ryon Memorial Hospital – a true community hospital that served the needs of the Rosenberg-Richmond area for almost 60 years – to the massive expansion it has undergone as OakBend Medical Center, the hospital has mirrored the community it serves. According to its web site, OakBend Medical Center is the largest full-service healthcare facility in the county. With a staff of more than 250 physicians and 600 employees, the Medical Center sees about 6,400 patients annually, and more than 26,000 emergency room visits. The facility is also Fort Bend County’s only Level III, Advanced Trauma Center. In addition, it stands out by itself in other categories too. OakBend Medical Center is the only dedicated Pediatric Unit, Level II Nursery with 24-hour perinatal coverage and Cancer Program with Commission on Cancer Approval with Commendation in the county. The OakBend Medical Center specializes in a variety of care needs for the residents of greater Fort Bend County. Patients can receive services in everything from day surgery and emergency procedures to rehabilitation and women’s health procedures. The facility has come a long way since it first opened its doors in 1947 operating as the Polly Ryon Memorial Hospital. Mr. and Mrs. A.P. George donated a 25-acre piece of land where the J.H.P. Davis home was located to serve as the first hospital. The facility boasted a 51-bed unit

for all people needing care in the Fort Bend area. Ten years later, the hospital grew to include more storage areas, new patient rooms and an emergency care area. In 1962 and 1963, the Polly Ryon Memorial Hospital went under the reconstructive knife again with a more than $1.5 million facelift. An obstetrical department came alive along with remodeled administrative offices and an educational library. More than 20 years later, the hospital was demolished, except for one wing of the facility, to make room for a new 185-bed, six-story facility with an adjacent professional office building. The hospital’s growing doesn’t stop there, though. The hospital acquired a new name in 2004, changing from the Polly Ryon Memorial Hospital to OakBend Medical Center. Board members said the new name helped drive home the desire to look toward the future. More changes occurred for the facility when, in October 2009, OakBend Medical Center opened another campus at Williams Way Blvd. and U.S. 59. This location provides a helicopter landing pad and emergency department. The state-of-the-art facility has computerized imagining systems to provide immediate information for the physicians. In June of 2010, the campus at Williams Way expanded to include a professional building, which houses administrators and physicians. And the growing doesn’t stop there. Plans for the OakBend Medical Center include another professional medical office building with a parking garage to be next on the list.

Meet Royal Group Realty often leads to the discovery of how to do more and better business. He explained that while the state of the economy delayed the introduction of products in other areas, the delay actually helped the company find a wellmatched and complimentary team of Realtors in Five Star Real Estate.

What is the result of a merger between two highly skilled and successful real estate teams? If you live in the Houston area, the answer is Royal Group Realty. Five Star Real Estate, the top-producing realty company in the Fulshear-SimontonWeston Lakes area for the past three years, has united with Royal Group Realty to create an unbeatable team of dedicated, skilled Realtors. Paul Stark, owner of Five Star Real Estate, and his team of agents are experts in the area’s housing market, and their commitment to the Fulshear-SimontonWeston Lakes area runs deep. Mr. Stark and his team have a vision for enhancing the area’s future, and The Royal Group LLC, parent company of Royal Group Realty, shares this vision. They look forward to growing the community and expanding the area developments with the same steadfast determination and allegiance that has made them so successful thus far. Mr. Stark points out that the main reason for Five Star Real Estate’s success over the years is, in part, due to the team he has assembled. “My team of Realtors experience longevity and a good workplace atmosphere because they are comfortable with each other, myself, and the clients they work with. We all get along because we employ open and unguarded attitudes, with an unspoken agreement to help each other out with sales.” Rodrigo Munguía, vice president of marketing for The Royal Group LLC, explains how the merger came to fruition. “We weren’t specifically looking for an office. We were looking for Paul, and it just so happened that the office, along with a superb sales team, was there as well.” Mr. Munguía goes on to explain that in harsh economic times, you have to get creative, which most

After coming in contact with Mr. Stark through different business connections, The Royal Group LLC was drawn to the Fulshear and surrounding areas, and made the crucial decision to offer Mr. Stark a position as Vice President of Sales. “Since the merger with Five Star Real Estate, we have taken on a renewed interest in the Fulshear area, and we’re keeping opportunities open for future projects here,” says Mr. Munguía. Mr. Munguía states that Five Star Real Estate’s success is due to their years of committed service to their communities. After learning of the potential of the Fulshear and surrounding communities and of the high quality of products and services that they offer, Royal Group Realty was honored to have Five Star Real Estate join their team, and they are positive that Mr. Stark’s knowledge and expertise in the sales area will serve to further strengthen the merge. The team at Royal Group Realty looks forward to serving their present and future clients with an outstanding level of expertise and service. “I want to personally invite you to come visit us at the Fulshear office, and get to know the quality people and products that we have to offer.” Mr. Stark

Jess Stuart: A Visit with a Descendent of Austin’s Old 300 There are many words to describe the great state of Texas: bold, brash, big, beautiful, hot. Yet, none of these descriptions accurately captures the amazing fortitude and resiliency of TEXANS themselves. Such spirit has been passed down through the generations, but began in the Old 300 Settlement. In January 1821, Stephen Austin’s father, Moses, received a Spanish land grant to settle 300 families in Texas. Before Moses realized his dream, he died in Missouri. Stephen, taking his father’s place, traveled to San Antonio and met with the Spanish governor, Antonio Maria Martinez. Martinez acknowledged Stephen as his father’s successor and Stephen Austin quickly set to work. He returned to New Orleans and sought willing colonists. While the family was the unit for distribution, Austin also permitted unmarried men to receive grants in partnership, usually in groups of two or three. Each family was granted one league, roughly 4,428 acres, and each single man was granted 177 acres. According to the 1823 Imperial Colonization Law of Mexico, terms of the land grants included occupying and improving the land within two years, and paying the state thirty dollars within six years. Colonists selected land along the rich bottomlands of the Brazos, Colorado, and San Bernard rivers, and extended from the area of present-day Brenham, Navasota and La Grange, all the way to the Gulf of Mexico. Many of the first Texans, or ‘Texians’ as they were referred to at that time, were rich, Southern farmers before the colonized in Texas. The majority came from Louisiana, followed by Alabama, Arkansas, and Missouri while virtually all of the Old 300 Colonists were of British ancestry. Wanting to avoid certain problems within his new colony, Austin, as a general rule, accepted only those from the higher social classes. Only four of the Old 300 grantees were illiterate. During the years of 1823 and 1824, Austin and the land commissioner, Baron de Bastrop, issued 272 titles. Bastrop was called away in August 1824, so the work remained unfinished until 1827. The new commissioner, Gaspar Flores de Abrego, issued the remaining titles. In all, between 1824 and 1828, Commissioners Baron de Bastrop and Gaspar Flores issued 297 recognized titles, not 300. Nine families were given 2 land grants. Today, there are many recognizable surnames introduced to Texas by the Old 300 colonists. Amongst them is the name ‘Foster’. The Fosters arrived in the area as early as 1817 with Ran-

dolph Foster who was one of the Original 300. He was followed by his father John Foster in 1824. Then a Mayes married a Foster daughter. Then a Mayes daughter married a Stuart. Genealogy is the hallmark of discovering who we are and where we have come from. Jess Stuart, a descendent of John and Randolph Foster, has a rich and illustrious ancestry that could fill volumes of history books. His is a proud heritage, made prouder still by those wo have people it members of the Old 300, Civil War heroes, governors of Texas and Louisiana, and a Texas Ranger in the 1930s responsible for protecting the Southern Pacific Railroad from San Antonio to Laredo. “Burrienne Fitzpatrick Stuart was my great, great grandfather,” so begins Julius Prentiss Stuart III’s story. Ask Julius “Jess” Stuart about his family history and he mesmerizes his listeners with stories. His history is so detailed, the tracing of his genealogy so minute, he and his wife of 13 years, Terri, gives this interview in parts: orally and written. “Burienne was a gentleman that got the Stuarts on the map in Fort Bend County.” Indeed. “He was a member of the 21st Mississippi Regiment under Col. Humphreys and Gen. Barksdale. He fought in the battles of Yorktown, Seven Pines, Richmond, Sharpsburg, Fredericksburg, Chancellorsville, Harpers Ferry, and Chickamauga.” At the battle of Chickamauga, Burienne Fitzpatrick Stuart lost his left arm from a bombshell. “That’s when he came to Foster, Texas and started his family,” Jess says. “He was a past Justice of the Peace from 1890-1892 and again in 1898. Also he granted an easement to the State of Texas to build what we call today FM 359 thru the Foster Community. That stretch of road runs from Jones Creek all the way to FM 1093.” While Jess isn’t sure is the Texas branch of the Stuarts are direct descendants of Mary Stuart, Queen of Scotland, he does know, “that we are definitely Scottish-Irish and pretty head strong folks which came in pretty handy for survival in the frontier.” Perhaps, one day, Jess Stuart will discover his connection, if any to Mary Stuart, his most pressing family history is finding the grave site of Randolph Foster and the original homesite. “We are still doing our research to find those areas,” he says with conviction. “I am a member of the Old Foster Museum Board of Directors and we are in the middle of still trying to find that loca-

tion. We are also in the middle of raising funds to build onto the Old Foster School and Museum. We have the old Jones Creek School House onsite and remolded, but we want to build a pavilion, old general store, post office to recreate the old Foster Community like it was prior to the 1930’s.” Jess has documents that go all the way back to John Foster in 1824. He plans to research earlier than 1824 over the next year. He also has an extensive family tree on his mother’s side of the family as well. His mother, Jo Carroll is a Goynes and she’s shared a lot of information and photos with him. “We are related to the Thomas family that founded Katy. That’s an entire branch of the family that I am beginning to explore more and hope to uncover more history as well.” His ties to Fort Bend County and Texas, to the land, are as intricately woven as a patchwork quilt. Terri Garner Stuart, Jess Stuart’ wife, hasn’t always found it easy to live amid a history such as her husband’s whose roots are so deeply imbedded in Fort Bend County. “I was a suburban girl when I met Jess,” she relates. Friendly and quick to smile, she continues, “I remember when Jess and I moved out here and spent the first night at home. We ordered a pizza and Jess said he was going to get it. I asked him why when it was going to be delivered. He said, ‘Yeah, delivered to the corner gas station, not to our front door.” I didn’t believe him until he came back with the pizza box and the label had written in the space for the address “Briscoe Road Grocery - Red/Grey Ford Truck’. The next morning I woke up and went to the sink to brush my teeth and there was no water because Jess was still running the pipes. I had to get water from the water well and brush my teeth standing over a bucket. Needless to say, living at the Ranch has taught me a lot of patience and the ability to laugh at myself.” Born in Bossier City, Louisiana not too far from Shreveport, Terri’s mother is the genealogy buff in the family. She traced the family tree to South Carolina in the 1700’s where, it is believed some of their ancestors arrived from Ireland. “I have several ancestors that fought at the Battle of Mansfield in Lousiana during the Civil War,” she says. “Many members of my family have served in the military. My grandfather was awarded a Bronze Star during the Korean Conflict, my great uncle was an Airborne Ranger in the United States 2010 I 2011 Fulshear–Simonton–Weston Lakes Resource Guide

Army and my dad was United States Army 5th Special Forces Unit serving in Vietnam. My great, great, grandfather was a Louisiana State Trooper and worked for then Governor Huey Long. Later in life, he was the Constable in Caddo Parrish where he served for 35 years until his death. My parents taught me at an early age the importance of faith, family and understanding your heritage. The first thing Terri learned about the Stuart Ranch was the award from the State of Texas as part of the Heritage Land Program that recognizes Texas ranches that have been owned by the same family for over 100 years. “My dad was in the military so we moved a lot when I was little. It was hard for me to imagine living in the same place for 10 years – let alone 100 years! she says with a laugh. “Jess has always shared what he knew about the Stuarts and the Fosters with me and I’ve always found it fascinating; however, I didn’t really understand the significance of the contributions they made to this community until several years later. She finishes with a rueful shake of her head. Terri Garner met Julius “Jess Stuart at the Cypress Creek YMCA in June 1994. He was working as an intern from Texas A & M where he graduated from August 1994. She was a summer lifeguard/swim instructor and attending the University of Houston where she was also a staff writer for “The Daily Cougar student newspaper. Terri was living at home with her parents in Spring

during her last few semesters. Jess got his first job as a YMCA Program Director in Pasadena and drove every day to work in Pasadena then twice a week, Wednesdays and Saturdays, he drove to Spring to see Terri. “Jess and I were married at the First Baptist Church of Rosenberg in August, 1996, Terri explains. “His grandfather’s funeral service was held there and his grandmother was a long-time member so there it was part of family tradition that we were married there. Since we were married in August, an outdoor wedding was not an option and lucky for our guests because there was a torrential rain storm on our wedding day. Jess takes up the story. “Terri and I met because of two things— the YMCA of Greater Houston and Texas A&M. I was doing my Texas A&M College Internship to get my degree in Kinesiology in the Summer of 1994 at the Cy Creek YMCA in North Houston. So, Terri was a lifeguard/swim instructor there and I was the Aggie Intern for the Summer. I started my Internship the first week of June and finally asked Terri out on a first date July 22, 1994. We were married August 24, 1996. The rest is history as we have been married for 13 years. We have a gorgeous daughter, Savannah Grace Stuart, who is 9 years old. With golden blond hair and lively blue eyes, Grace possesses her father’s love of the land, her mother’s amazing looks, and both her parents’ outgoing personalities. She can describe each memento in the Texas Room at the Stuart Ranch. She proudly

displays her father’s chaps and gladly poses on the saddles situated in the room. Terri graduated from high school in Miami, Florida where she and her family lived approximately 30 minutes from Key Largo. As a result, she spent as much time as possible at the beach. She enjoys a variety of water sports: swimming, boating, snorkeling, fishing or just exploring the beach collecting sea shells. Her newspaper experience is where she developed her love of writing and photography. While she loves to read and has a house full of books to prove it, Jess’ hobbies are hunting, fishing, and history. Although she listens to a wide variety of music, she’s a Parrothead and loves all things Jimmy Buffett. She and Jess both like to fish and enjoy a good road trip. Just to do research on his family and Texas history, they’ve taken vacations in Austin. They also never miss a chance to explore the Texas Hill Country or discover the latest treasures for sale at a road side antique store. “If you come to my home today, you will see my Texas Room. It is like a small museum. I had to persuade Terri to give up her formal dining room in order to put it all together. It has many old maps of old Texas and Fort Bend County. It has the old Spanish Deeds that were signed by my Great, Great, Great, Great, Great Grandfather John Foster and Great, Great, Great, Great, Great Uncle Randolph Foster. Both were two of the Original 300 Settlers to Texas. They were both from Mississippi. Plus you will see Stephen F Austin’s and Baron De Bastrops signatures on each deed. They were written in Spanish back in 1824. I have those on the wall along with the English translations next to them. I also have my grandfather’s old gun case and my dad’s Texas A&M Corp of Cadets pictures. He graduated in 1962. I am a 1994 grad. WHOOP!!!! Family is everything to Jess and Terri. As are traditions. They still have cattle round ups, always in late April or early May. All the cows are rounded up for vaccinations, de-worming, dehorning (if necessary) and branding. They also sort the calves for de-worming and castration as well. Every “rookie at round-up has to pin a calf in the pen. The kids really love catching the calves in the pen.

“My grandfather, Julius Prentiss Stuart Sr. was a man of his word and also a man of great love for the outdoors. He taught me a lot about life and the outdoors. He taught me to always take care of the land. That was what he always said he wanted to pass on. You see, John Foster acquired his 12,000 acres from the Mexican Government in 1824 and my grandfather was the last Foster Descendant to keep the land he had passed down to him from his father. That land was 128 acres which is where we live today in the Foster Community off Winner Foster Road and FM 359. The Foster Community is located about half way between Richmond and Fulshear off FM 359.

That his family’s original land grant isn’t still intact is one of the things Jess wishes he could change in his family history. “I wish that my ancestors would have not sold or given away the land that our ancestors worked so hard to acquire,â€? he laments. “John Foster started with 12,000 acres in 1824 in Fort Bend County, problem is today in 2009, we currently have 128 acres left out of the original land grant. John Foster was granted the largest land grant in Fort Bend County by Stephen F. Austin in 1824. So, as you can see, a lot of my relatives have sold away the land for what ever reason. That is what I would change if I had the power. Although progress is great; it has been a shame that we have let our land go to developers, subdivisions etc‌ in spite of all the blood sweat and tears that our ancestors worked so hard for.â€?

“Our traditions were born from land, Jess states. “The most important thing is to hold on to the legacy that this land has given us in order to pass this along to future generations. As my grandfather, JP Stuart used to say, “If you don’t know where ya came from, then how do you know where you are going? I try to live my life by that motto, because every family must have a person that must bridge the gap from generation to generation. Otherwise the traditions and history gets lost. Jess falls silent for a moment, briefly considering his next story.

If he could be any of his ancestor’s, he choose Randolph Foster, his great, great, great, great uncle, and

the man whose gravesite is still a mystery. Randolph was known as ‘The Hunter”. He supplied meat from the wild game in the area at the time to Sam Houston’s Army as Sam was on his way to San Jacinto to win independence for this great state we call the Lone Star State, Texas. He was also a very key figure with the “Runaway Scrape” which is where the Texas families were escaping to the East as Santa Anna was making his way East from the Alamo on his way to San Jacinto. Plus, Randolph’s portrait hangs behind the speakers stand at the Texas Capitol in a famous painting done by Henry McArdle called “The Log Cabin”. For Jess, to be able to see thru this Texian’s eyes back in the day, “would just be awesome.”

who are all Foster Descendants. One wonders what life on the Stuart Ranch was like 150 years ago when bacon was used to get a splinter out of your hand or foot. The salt will cause the skin to bring the splinter up out.. “I think it would have been a place where there was always something going on whether it was time for rounding up cattle, working the land, raising a barn or just a gathering for family and friends, “ Terri says definitively. “Jess and I enjoy having friends and family around and in those days neighbors depended upon each other for support and sometimes for survival. Jess would definitely be the hunter and fisherman while I’m more of the caretaker and therapist in the family. I would probably have been more likely to be the person that everyone called when someone was sick or hurt or when there was an argument that needed to be settled.”

Out of all his relatives, he’d love to meet six of them in the room at the same time: John FosStuart Brothers: From left to right: ter, Randolph Foster, Burienne Fitzpatrick Stuis Temple Stuart, Burienne Fitzpatrick Franc art, Clara Stuart Glick, Julius Prentiss Stuart Sr., Stuart, William Clark Stuart, (standing) and Julius Prentiss Stuart Jr. These folks are Whitney Arn Stuart. While they wouldn’t consider opening the Stuart Ranch to the public, Terri and Jess have had their home “auctioned off” for charity where they host a party for the highest bidder. The Stuart Ranch has the ability to seat 120 people under the barn wing overhang that is 100’ x 20’. The Ranch also has a screened porch with outdoor fireplace that is 65’ x 10’. The barn facility is multiuse that serves as a shop, garage, storage, and great outdoor party area. It is out of the rain and still allows a southeast summer breeze to blow along with the three ceiling fans. There’s basketball, volleyball, horseshoes, outdoor fire pit, and a roping dummy. Terri and Jess have hosted parties for the YMCA Staff and Board

“I hope that I’m able to leave a legacy of caring for others through serving our community, Terri says with conviction. “I hope that our children and grandchildren appreciate their rich heritage and understand how lucky they are to have this legacy. I hope they learn from us that the road to success is paved with education, sacrifice and perseverance. My grandfather would point his finger to his forehead and say, ‘They can take everything away from you except what’s up here’. I think I just want what every parent wants which is for our children to take advantage of the opportunities that are available to them because of the sacrifices generations that came before them made on their behalf. I believe that God sends us signs to point us in the right direction and they’re everywhere if we just look for them.” What Jess envisions as his legacy is to keep handing down the family traditions and legacies from his grandfather, Julius Prentiss Stuart Sr. and his father Julius Prentiss Stuart Jr. “I was privileged to learn everything outdoors from my grandfather for the first 20 years of my life and I am privileged to acquire the hard work ethic from my father that still drives me today”. They both could have sold out the land like their past relatives, but they held steady. Now it is my turn to carry on the Legacy!”

The Good Life: Fulshear’s Vineyard Communities DHK Development, Inc. With metropolitan Houston so near, the peaceful beauty afforded by these two neighborhoods both amazes and mesmerizes. Imagine gatherings at the lakes, hiking the wide-open nature trails after a long day at the office, participating in bocce tournaments, or listening to music at outdoor evening concerts.

The sun gleams against the clear, shimmering waters of the swimming pool at The Lodge & Sports Club at Fulshear Creek Crossing. Sunbathers recline on plush chaise lounges, chatting amongst friends, sipping cool lemonade, and glimpsing the vineyards rising across Huggins Lake. They anticipate drinking the product of this vineyard in the near future.

Fulshear Creek Crossing has been planned as a residential extension to the Town of Fulshear, within walking distance to shops and restaurants downtown. Set amidst Hill Country-like beauty, the community has rolling hills, deep creek beds and gorgeous vistas. There is an abundance of mature live oaks and pecan trees, as well as ash, bois d’arc and cedar elms. Waterways include Fulshear Lake, Huggins Lake, Fulshear Creek and Union Chappel Creek. Add the native wildlife and nature becomes part of everyday living.

At the present time, there are four vineyards in Fulshear. In addition to the long established vineyards near downtown and southeast of town, the third, at Fulshear Creek Crossing, was planted in March, 2009. The vineyard at Fulbrook, along FM 1093, was planted in April of this year.

On the eastern shore of Huggins Lake is the heart of the community—the Lodge & Sports Club at Fulshear Creek Crossing. The Visitor Hall / Welcome Center is located in the Lodge, which offers rustic charm, soaring ceilings, plenty of elbowroom, comfortable furniture and a large fireplace. “The facility

At Fulshear Creek Crossing more than 700 vines were planted on approximately 1.5 acres. “About 90% of the vines are the Blanc du Bois variety, a white grape,” explains Noah Worley, Project Superintendent of DHK Development, Inc., “10% are Black Spanish, a red grape. We expect to have our first harvest in 2011.” Fulshear Creek Crossing and its sister community, Fulbrook, are just 30 minutes west of downtown Houston, both communities by 3KRWRV -HIIUH\ ' 0\HUV 2010 I 2011 Fulshear–Simonton–Weston Lakes Resource Guide

makes it easy to relax, and fun to stay fit as you enjoy the Junior Olympic Pool and gym with all the latest equipment, or play bocce and croquet” says Mr. Worley. “Just as nature is at the heart of Fulbrook, so it is in Fulshear Creek Crossing,” he continues. “More than 20% of the community will be reserved for public open spaces, much of it planted with native, drought-tolerant vegetation.” Fulbrook has been developed as a “sophisticated country” community says Doug Konopka, President of DHK Development, Inc. Planned for 2010 are 19 new acreage lake homesites as well as the River Lodge at Fulbrook, with construction scheduled for later in the year. The River Lodge at Fulbrook will feature a number of amenities, including: dining and meeting hall, lap and swimming pool, an exercise facility, a yoga room, a pilates room, massage rooms, an outdoor kitchen and firepit, bocce courts and, of course, another small vineyard.

“About 650 vines were planted. Again 90% Blanc du Bois and 10% Black Spanish.” The enhanced entry at Fulbrook Road will include a tree orchard and a vine-covered loggia, which will also provide shade to a portion of the new hiking trail. Doug Konopka adds “Who would have ever imagined that Fulshear could become a significant grape producing area, possibly with its own wine label one day?” This really is the good life!

Planting of the Fulbrook vineyard at the FM 1093 community entrances was completed in April, 2010 and is divided by Bessie’s Creek into two sections. “The larger section is at Bessie’s Creek Trace and the smaller section is at Fulbrook Road,” Mr. Worley states. 3KRWRV -HIIUH\ ' 0\HUV 2010 I 2011 Fulshear–Simonton–Weston Lakes Resource Guide

aby’s is a quaint and unique boutique store located in Fulshear Texas and is owned by Gaby and her mother-in-law Barbara. They have been in business now for almost two years. Barbara has been a resident of the area for over 30 years and has many years in retail fashion sales. Gaby’s original home is Uruguay in South America. She and her family have lived in the Fulshear area now for more than four years, and she says that “they really enjoy the area! When asked why they decided to locate their business in Fulshear, Gaby mentioned that “she liked the small town atmosphere”. She said that “people come from all over, including the Galleria area, to spend a day in the country and shop.” They enjoy getting away from the hustle and bustle of the city and traffic to enjoy a friendly “home town” place to visit. Within the downtown area, there are three unique fashion boutique, gift, and home interior shops. Gaby said “one of the many reasons they tend to go to Fulshear is not only to shop, but to enjoy the old fashion candy store, and the great selection of restaurants in the small downtown area”. As you enter the Gabys, you may think you are in a unique specialty shop in The Hamptons or on Hollywood Boulevard. The store is impeccably decorated and well organized. The colors are peaceful and serene, and the wood floors give a “sense of warmth and home.” Hours could be spent looking at all the treasures in the store, and the friendly faces are always there to greet you to make you feel at home. How often do you go to a store these days where they offer free gift wrapping? Gaby’s is one in a handful of places I know of that offers this service for absolutely free! The locals have discovered that Gaby’s is a wonderful place to stop in for a quick one-of-a-kind gift. There are inspirational gifts, baby and children’s gifts, specialty gifts for women, and even cowhide drink cozies or monogrammed wine corks for a “special someone” in your life. Greeting cards are right by the checkout area, so there is no need to make a side trip to the card store when stopping by to find that perfect gift. Home decor and interiors are another specialty area in Gaby’s. There are beautiful lamps and accessories for a reasonable cost that would grace even the finest of homes. At Christmas, they will offer flower arrangements, trees, ornaments, and endless decorating ideas. You may want to start shopping early because like many stores these days, they will start to display their Christmas items in September. Be sure to register your mailing address or email while you are there to hear about open houses, where they feature new arrivals or seasonal items, and about new offers or sales. Women’s clothing and accessories occupy about half of Gaby’s while the gifts and décor are in the other half. If you’re not “fashion savvy” type, then the owners will help you select your clothing items, and help with accessories such as jewelry, handbags, and shoes. There is always a “unique find” because Gaby and Barbara love to blanket the Dallas market several times a year to find the latest in fashion trends, gifts, and accessories. If you are not a perfect size 10, then you have also come to the right place. Gaby’s offers larger sizes for those of us who have expanded our size 10 through the years. I happen to love natural fabrics and bright colors, and I enjoyed browsing all the selections they offer. Gaby and Barbara state that “they love working with their customers. We both have a passion for the business. We try to offer the best service we can offer and we take pride in the ability to help customers” They are very familiar with the “fits” and designs” and will often make

suggestions if asked”. Customers tell them time and time again that the items they suggest would NEVER have been chosen on their own. That’s because many styles “lack ‘appeal on the hanger” but may look great on the body. They are certainly not pushy salespeople, but they will be right there if you need them to help you make selections, put outfits together for you, or bring you clothes you may want to try on, and the accessories to go with it. If there is an item not in your size, you can ask if they can special order it for you. You will not see multiple racks of the same clothes that you find in the larger retail stores. They may have the same clothing items in different sizes or colors, but the likelihood of seeing yourself coming and going are pretty slim if you shop in this specialty boutique. You will find that the prices are very reasonable for the quality of the items offered. Gaby said “that customers especially love the unique under $20.00 gift items”. “We are open Monday through Saturday from 10:00 am - 6:00 PM and Sundays noon to 6:00 PM. During the holiday season we offer extended hours to accommodate our working customers”. If you are not a perfect size 10, then you have also come to the right place. Guys, it is a great place to get help to buy a special outfit or even just a gift certificate for that “special lady. ”Browse the “unique finds” in Gaby’s. Enjoy the friendly downtown area of Fulshear, and splurge a little on yourself, your loved ones and friends. A new website will be coming soon for Gaby’s, so check back often see the special events, new arrivals, and open houses. How Mosaic Was Born By Jennifer Heath

For Lisa Theut, it just seemed natural. She had been taught all her life the value of giving back. She loved her family, friends and community. She wanted to do something nice for the residents of Fulshear in return. “Being the mother of a 9 year old who is heavily involved in the community here with sports, I wanted to offer a service to my friends and residence of Fulshear,” Theut said. “I am a firm believer that you give back what you have received from. Fulshear has afforded my family a wonderful style of living and a peaceful existence.” So after a year and a half of preparation, Theut opened the doors to the Mosaic Boutique in April 2007. The store, located at 8504 FM 359 in Fulshear, carries styles of clothing and accessories to fit anyone. They cater to those who are hip and funky, classic and timeless. Mosaic Boutique also carries pajamas, perfume, lotions, frames and accessories. “People should shop at Mosaic for not only our great customer service, but for convenience as well,” Theut said. “Mosaic is a specialty store with an experienced staff able to assist individual clients to select items which accentuate their positive attributes. Also, I realize people have busy schedules and don’t like to run into malls. Therefore, I only order a limited quantity of each item so that there is something different for everyone.”

constant wisdom, attitude toward others and her example of unconditional love coupled with an unmatched work ethic as a single parent has given me the tenacity to embrace life.” That perseverance came into play when it took more than year for Theut’s dream of opening a high-end boutique in Fulshear to come to fruition. “My friend and I worked on the store name for a month,” Theut said. “I knew it had to be a name that would pop. One day, we just took out the dictionary and started searching. As soon as she said the word ‘mosaic’ I said, ‘That’s it! Mosaic Boutique!’” Theut dreams of one day opening more Mosaic Boutiques in neighboring towns so more people can enjoy the unique shopping experience. Customers visit her store not only from Fulshear, but from Houston and surrounding areas, too. Find out more at mosaicboutique.net.

Mosaic Events Schedule

A Texas girl, Theut grew up in Victoria and earned a Bachelor of Business Administration with a concentration in Marketing Management from Texas A&M University. Growing up, she imagined she would follow her mother’s footsteps and work as a nurse.

“Ladies Nite Out” — Come shop, have wine, and a great time. There will be a special sale going on so don’t miss it. The 2nd Thusday of every month, 5pm to 7pm, at Mosaic Boutique.

The Sophistication and Simple Beauty of Ray’s Gourmet Country

F

ort Bend County business owner Ray Salti listens to his customers. For over 20 years, Ray has followed the need for a local restaurant one location at a time. After opening his ninth Pepperoni’s location, he discovered the need for an upscale restaurant in the Fulshear area. “There was a great demand for a unique restaurant,” says Mr. Salti, one Wednesday afternoon while sitting in his Fulshear restaurant. The décor in Ray’s Gourmet Country is sleek, simple and ultra-modern. The moment you enter the restaurant, a friendly smile greets you. Service is spot-on; the food is gourmet, organic, and made from scratch. “The simplicity of our restaurant design and the menu go together,” he continues. “The menu wasn’t created for the restaurant. Ray’s Gourmet Country was built around the menu.” Fulshear was chosen because Mr. Salti and Chef Soren Pedersen, a Denmark native who worked hand-in-hand with Ray Salti to create the restaurant from the ground up, wanted a setting close to farmers and local producers. Ray’s Gourmet Country is “organic inspired”. There are no can openers at Ray’s, with everything being delivered fresh from the local markets. Beef sauces made the old-fashioned way, from scratch. The meat served

is all natural and hormone free or one hundred percent organic. Seafood isn’t placed on the regular menu; instead, at least four seafood specials of the day are written on the blackboard menu. “My family dines here. I am not only careful about what they consume, but I am very careful about what other people consume as well. We buy only the freshest seafood. Whatever is at the market that day, we bring in. Our customers can communicate with Soren through our website if they want something special.” Like his staff, Ray Salti is friendly, easy-going, and welcoming. His interest and passion of food lead him to open the first Pepperoni’s in 1990. As he recognized the need, he expanded Pepperoni’s throughout Fort Bend County. In 2006, he and Soren began working on plans for Ray’s Gourmet Country. On May 8, 2008, the restaurant opened in Fulshear and quickly became a destination restaurant. Diners who had never been to Fulshear but lived in the Houston area their entire lives, now visit regularly to enjoy the offerings at Ray’s. From Complimentary Wine Tastings, Thursday night Live Jazz, Wine Dinners, Menu Samplings, to Cooking Classes. Ray’s has a wide variety of special events to choose from. “We send out information ahead of time through our online

newsletter,” explains Mr. Salti. “Go to our website, www. raysgrill.com, and subscribe to our newsletter.” With the opening of the Fulshear restaurant, Mr. Salti’s schedule finds him at a variety of tasks—testing new menus, marketing, public relations, and hosting wine dinners. Chef Soren and Ray share an easy camaraderie, one built on shared goals and the realization of a dream come true. While Ray Salti knows his customers, Soren Pedersen knows his food. Soren creates seafood recipes on a daily basis; his current menu consists of such specialties as Seared Filet Mignon, Chicken Fried Ostrich, Black Pepper Crusted Buffalo New York Strip, Slow Roasted Chicken and Grilled Lamb Chops, Fresh Daily Seafood specials. A laundry list of delicious delicacies that cater to everyone, from the most celebrated gourmand to the best down home eater, to the children in the family who can order from their very own kid’s menu. The menu changes several times a year. Out of roughly one hundred recipes that are tested in a three-month period, only about one quarter make it onto the current menu. The chef and his staff keep a recipe box. Ingredients may change around and the recipe picked up later, but quality stays the same. Like any work of art, “menu development is a process,” Mr. Salti explains. “Each recipe is uniquely created and based on experience,” Chef Soren says. He went through an old-fashioned apprenticeship where he learned the art of French Cooking. When he came to Houston, he worked at catering companies and other private companies. “Inspiration for food is a love and passion,” he reveals, that love and passion clear in his voice. “It reflects the spirit and the mood of its creator. In that way, food is just like a painting. That is why we find it so important to change our seasonal menu. The spirit changes with the season.” Mr. Salti continues, “The minute people walk into Ray’s dining room, we want them to leave their stresses behind and lose themselves in everything from our food to

our atmosphere.” “Each dish is uniquely created,” Chef Soren goes on. “We put time, passion, and love in our dishes. In everything,” he stresses, “from our sushi to our Osso Bucco (seasonal menu choices). We bring in our fish whole and filet it ourselves that day, so we know it is the freshest available. We order smaller amounts of seafood from the market, each day, and sell-out by 9:00PM. However, we have plenty of choices across the board. Every item that is sold from here is made from scratch. We nurture and utilize each dish to its fullest.” Even the concept of their wine is to do as little mark-up as possible. “We want to sell our wine, rather than having it sit on the shelf.” Wine selections range from European to South American, American to Australian. A Booklover’s Treasure:

Paperback Trade-N-Save Judy Farris can’t remember a time when she didn’t have a book plastered in her hands.

family and friends and traveled to Galveston to purchase more books and bookshelves.

When she was 13, the Bookmobile stopped in Sugar Land on a regular basis, and Farris was always in line.

She set to work with the help of her husband and sisters building more shelves to house her library.

“I remember reading ‘Peyton Place’ when I was 13 and making sure my mother did not notice the book I had,” she said. “It was considered risqué back then. I just can’t remember a time that I didn’t read.” Her love of literature became a costly habit, however. Living in Dickinson, she would constantly find her car swerving into the Paperback Swap and Shop store. “My car would automatically pull into the parking lot even if I didn’t need a book,” she said. In addition to several books from the store, Farris found a great friendship there, too. Jane Gray, the manager, eventually asked her most valued customer if she would like a part-time job at the bookstore. “What a great offer. A little money and I had unlimited use of her inventory,” Farris said. In 2000, Farris moved to Fulshear and brought her large collection of the written word. “Being so far out in the country put a damper on my thought of a used bookstore,” she said. “But I kept collecting.” Gray kept the idea in the first chapter of Farris’ mind, too. She would call and let her friend know about bookstores that were closing…a great opportunity to score lots of books at a great price. Farris rented a U-Haul, enlisted her

“My husband Dick and I have become quite proficient in making bookcases,” she said. “He has been my greatest supporter. From the very beginning, he was encouraging me to go for it.” And on Sept. 5, 2006, her lifelong passion turned another chapter when she opened Paperback Trade-N-Save at 29615 FM 1093 in Fulshear. She began with 16,000 books on the shelves, and now four years later, her inventory has doubled. “I shop for books once-a-week looking for bits and pieces that are missing,” Farris said. Customers who enter Paperback Trade-N-Save are instantly greeted by a friendly face. Griffin, a cocker spaniel, comes to work in the shop everyday, too. Shoppers also find the store organized in a way Farris finds familiar, with no clutter and an ease of finding types of books and authors. Farris offers discounts for recycling books in her store, where patrons can earn credit toward future purchases. “I am having such a good time with my bookstore,” she said. “It was a lot more work and expense than I had imagined, so it’s just as well I didn’t know. Meeting new friends, learning more about books from my customers, hunting for that missing book in a series…what a fun experience.”
