CHRISTIAN MACLEOD Christian Macleod pro golfer turned fashion designer is launching his new CM Wrist Belt range in November with ROX as the exclusive stockist. We sat down with Christian to talk fashion, GQ, Aston Martin and downtime.
S
o Christian, you have managed to break into a competitive industry incredibly well! What is your secret? My career started nearly 20 years ago. My secret, plenty of water and sleep! I believe my natural competitiveness helped me into achieving a luxury brand. I had incredible focus on my finished product and gameplan from a very young age. I started the 'CM' brand at 16 years old (I am now 24), and I knew it was going to take me a long time to gain loyal customers and following for my brand. I feel now, after 8 years of following what I feel was right within my game plan, I am on the right track but still nowhere near where I want to be with the CM brand. You have such an interesting story. Was it difficult to transition from golfer to designer? Believe it or not; it was forced on me. I was a successful professional golfer but I ended up with a broken ankle in the middle of the golf season and was told I couldn't compete for 2 years due to the severity of the injury. Before my ankle break, I was designing my own clothes for the golf course, and I decided to focus more on the design from that point on. I have never been back to professional golf since. There is clearly a signature style that comes across in all your belts. What was your inspiration for your designs? My design is very much a personal perception of me and what I would like to wear. I draw inspiration from my life, from the movies I see, the books I read or what is happening in my life at the present time. I put it all together and make my statement. You are working with us at ROX to launch the new CM Wrist Belts range. What other accessories are you looking to expand to? Yes, I can't wait! Now, let’s talk Aston Martin - one of the biggest brands in the world. How has partnering with them impacted your brand? Aston Martin, where do I start...their brand is the icon of inspiration. I was lucky enough to use the Aston Martin Edinburgh showroom last year for a campaign to release some of our new products around their cars. That day, the celebrity wearing our products was the Aston Martin cars, and it will be a day I will never forget. We’ve heard that your creativity is beyond designing, you have also worked creatively for GQ. How did that come about? Yes, this is true. At 18, I was the youngest Fashion Designer to be showcased in GQ with a reinvention of the Open Champion Paul Lawrie. It was my first ever campaign and chance for me to use my creative side, and let’s say it turned a lot of heads! My creative and fashion career turned upside down from one image that went global. Clearly a man of many talents! When you are not slowly taking over the world, what do you do for fun? I have the greatest of friends and family, that I love spending time with. It's great down time away from the fast lane and it is always extremely fun. As a master of accessories, we have to know... what is your watch style? I wear a variation, I have not quite decided on my style of watch as of yet, I do like understated to be fair, and I do love the Hublot watches, I feel that each watch tells a story. I also have a lucky watch... but I keep the story as to why it is lucky for my keynote speeches on stage. One day you might hear why it is lucky to me.

THESE CHIMING MEN Audemars Piguet’s Supersonnerie has revolutionised the minute repeater complication, says Alex Doak – just as AP’s watchmakers have revolutionised so much of Switzerland’s sacred craft.
I
f one of the Apple Watch’s more useful functions is to discreetly alert you without needing to wield your phone in polite company, then the minute repeater could be the original smartwatch. The late 17th century’s first examples had hammers that struck the inside of the case – their muffled sound meaning courtiers could check the time in their pocket during tedious councils, without offending the monarch. By complete contrast, Audemars Piguet’s new Royal Oak Concept Supersonnerie chimes the time louder and prouder than anything before: a full 10dB louder, even with a waterproof case and even when worn on a chubby wrist. So much so that Audemars’ head of product management, Christian Lasalmonie activated the prototype’s striking mechanism in front of a packed lecture hall at last year’s Geneva trade fair and slack jawed journalists sat on the back row could hear the time, to the minute.
Audemars Piguet is no stranger to this particularly complicated aspect of watchmaking. Once founded in 1875, as many as nine of AP’s first twelve watches were kitted out with French pioneer Abraham-Louis Breguet’s newly developed striking system, whose hammers struck finely tuned steel ‘gongs’ coiled inside. Slide a button on the side of the case, and the hours are struck on the low ‘dong’, followed by the quarter-hour on both ‘ding’ and ‘dong’ gongs, then the remaining minutes with a series of ‘dings’. All orchestrated by a delicate constellation of snail cams, racks and levers. While those parts of the minute repeater have barely changed with the Supersonnerie, pretty much everything else has – the result of a dedicated eight-year audio-research initiative in collaboration with the Ecole Polytechnique Fédérale de Lausanne down the road, a pitch-perfect musician from the Geneva Conservatoire, a sound engineer, and even

a local artisan who crafts stringed instruments. The most revolutionary development has been in mounting the gongs on a ‘soundboard’ suspended between the movement and case back, functioning like the upper body of a guitar. You’d assume AP’s recruitment of an instrument maker has been to tap his knowledge of chamber resonance. But while he is indeed based in the Swiss Jura for its forests’ distinctive wood, it’s his understanding of strings’ behaviour that AP was keen on. As a result, the ‘strings’ of the Supersonnerie vibrate with a perfect interval of two notes, or a ‘major third’ to musical sorts. Being Switzerland’s only indie watch brand still in the hands of its founding family, Audemars Piguet can afford to play fast and loose with the strictures of horology, unfettered by the orders of a sprawling holding group. It’s how the brand forged its reputation right from the get-go, creating a gorgeous pocket watch boasting perpetual calendar, moonphase, split-seconds chronograph and, yes, a minute repeater – it, in turn, defining the surrounding Vallée de Joux, with its mountain mists and clanking cow bells, as the cradle of ‘grande complications’.
“THE ROYAL OAK BROKE THE RULES OF THE INDUSTRY, AT A CRITICAL TIME, BUT AT AP IT SEEMED THE LOGICAL THING TO DO.” Almost 150 years later, AP is still situated precisely where it started, in the somnolent town of Le Brassus, perched on the one narrow road that threads the length of the Joux valley’s floor. As you’d expect, things have expanded considerably since 1875 (two new state-of-the-art factories around the corner mean Le Brassus seems more AP than town) and its disruptive behavior has stretched far beyond complications. That octagonal case containing the Supersonnerie being the most significant. When it first launched in 1972, simply as ‘Royal Oak’, no one had seen such a daring eight-sided design, let alone a stainless-steel sports watch from an haute horloger with suitably ‘haute’ price tag. It was a readjustment that took some years, but it’s now one of watchmaking’s most iconic models, barely a millimetre different in its purest form, and prevalent in its chunky “Offshore” guise on the wrists (and in the lyrics) of every other US hip-hop star out there, not to mention virtually every champion golfer of the modern age. “When the Royal Oak launched 44 years ago,” explains the family firm’s chief administrator, Olivier Audemars, “the technology didn’t exist to work the Royal Oak’s complex shapes in steel. It was more expensive to machine the case and bezel in steel than gold. In fact, the very first prototype was made from white gold. “The Royal Oak broke the rules of the industry, at a critical time, but at AP it seemed the logical thing to do.” As well as the Supersonnerie, the finely polished facets of the mighty Oak house a number of wildly contrasting novelties this year. Corner-office tycoons with a penchant for red braces will especially appreciate AP’s all-out embrace of that Eighties metal no one else is brave enough to revisit: yellow gold. When we say ‘all out’, we mean it: the integrated bracelet is pure garish gold, as well as the equally chunky case with which it blends so mellifluously. Perpetual calendar, extra-thin open worked tourbillon, or simple gents’ automatic..? All available with pure J.R. Ewing-worthy bling and bombast.
That original building in Le Brassus, now housing a priceless museum of AP masterpieces, couldn’t look any more unassuming, but it’s the rule-breaking going on behind those closed doors that means Audemars Piguet will always keep us guessing. Sadly, it’s too late to get your hands on a loud-andproud Supersonnerie, but anything from this storied marque’s catalogue will ensure your wrist, if not chimes, then certainly speaks volumes. GEARING UP Since the groundbreaking launch of the Big Bang in 2005, Hublot has mushroomed breathlessly into a hothouse for materials and complications – progress, its CEO tells Alex Doak, that is down to keeping a constant eye on the future.
I
f it’s not enough that Usain Bolt, Pelé, Maradonna, Jay-Z, Kobe Bryant, and every Juventus and Chelsea player all wear Hublot proudly, nor that the brand boasts over 750 points of sale (including 70 of its own boutiques), then all it takes is a simple nose around the watchmaker’s multistorey pavilion at spring’s Baselworld trade fair to appreciate its extraordinary success – a success achieved by a youthful brand, on young (but very wealthy) wrists in a notoriously “mature” marketplace, supplied by venerable brands banking on heritage. Even Rolex next door is calm by comparison, at an event where appointments must be booked months in advance in order to tread a single step beyond the frosty fembots on reception. No, advancing into the meeting rooms within the Hublot stand at Basel is to realise how wildly popular this brand has become, among retailers, collectors and press alike. Not only does it hustle, bustle and bulge with experts desperate to get their hands on the new launches, but the noise is enough to tell you that passions run high with this particular watchmaker – a watchmaker making a sort of product that’s usually discussed in
considered, reverent tones around velvet-lined trays and white gloves, not passed boisterously around with the sort of gasps reserved for action films or roller coasters, rather than luxury products. What’s more, despite the sheer number of hands clamouring for a horological fondle, what strikes you next is the fact that they are rarely left dissatisfied. The innovation and creativity is prolific (despite each model remaining exclusive and by default feverishly collectable) with traditional Swiss mechanics “fused” to unlikely and futuristic materials, such as carbon-fibre, titanium and ceramic. This year, Hublot has even collaborated with Berluti on a watch whose dial is made using one of the finest but oldest materials going: butter-soft shoe leather. But it goes so much further than just materials. The brand’s iconic porthole-shaped case construct is a modular jigsaw puzzle, allowing a mix and match of materials, giving a highly adaptable interplay of shapes and colour. The potential permutations for Hublot’s endless stream of limited-edition tributes to sporting or musical legends is, well, endless.

“This is the DNA of our brand,” enthuses CEO Ricardo Guadalupe over the hubbub of Hublot’s Basel crowd. “‘The Art of Fusion’ is our motto, as without innovation there is no future. We want all our teams to be creative, to push the boundaries in order for our brand to be first, unique, different.” Despite his Spanish name, Guadalupe, 51, is a thoroughbred Swiss watch guy. He was born and raised in Neuchâtel, the capital city of “Watch Valley” in the Jura mountains, and after a brief post-grad stint at UCLA, returned to Switzerland and took his first job with Bulgari, setting up their watchmaking factory in Geneva. But it was his second job, as sales and marketing director for Blancpain, that set him on his current course. The brand had just been sold to Swatch Group having been revived by one of the industry’s most legendary characters, Jean-Claude Biver, and Biver’s next project was a moribund Hublot – a rather anonymous brand known only for its vanilla-scented rubber straps. When Biver left Swatch in 2004 to take over Hublot, he knew exactly who he wanted as his right-hand man. “With Jean-Claude, we work as a duo. We work hand in hand to keep Hublot’s new incarnation on the same direction. We are both passionate, hard workers and trust each other.”
“WE NEVER STOP WORKING ON BOTH NEW IN-HOUSE MOVEMENTS AND NEW MATERIALS.” That vibrant working relationship is clear to see from the brand’s rapid expansion over the past 12 years. Right from the outset, Biver and Guadalupe were hugely ambitious, setting themselves the task of switching from 90% quartz to producing 90% mechanical watches. Putting their best foot forward, within the very first year they had launched the Big Bang chronograph in steel and ceramic – still the brand’s biggest seller, and a modern cult classic, seen on yachts and in corner offices worldwide. Turnover increased in four years from 25 million to over 200 million Swiss francs in 2008, when the brand was sold to LVMH. There has been physical growth too, with the inauguration in November 2009 of a new high-tech manufacture on the banks of Lake Geneva in Nyon – 6,000 square metres dedicated to in-house mechanical movement production. Keeping Hublot’s “fusion” truly cutting-edge and unique, the factory has even installed an experimental foundry to produce its scratchproof, 18-carat “Magic Gold”. Simultaneously, Hublot bought the Swiss company Profusion, which manufactures carbon-fibre components. “We never stop working on both new in-house movements and new materials,” Guadalupe tells us. “Moreover, we always want to increase our verticalisation,” he says, referring to the industry’s ‘Holy Grail’ of bringing watchmaking’s countless aspects of production, from component machining to dial making, beneath one roof. “It will take us approximately 5 years, but by then we will be producing, internally, 70% of our own movements and 30% of our cases with high-tech materials.” There are plenty of Swiss watch brands who have managed this in-house consolidation in recent years, but while it’s always costly (upwards of £20 million is the basic budget required, most say) and difficult to hire the requisite talent, these brands are still making watches based on the same, timeworn principles of springs, cogs, levers. Just stop to consider Hublot’s biggest launches of 2016, however – the Ferrari-engine-inspired MP07 and the openworked MECA-10, which – and why hasn’t anyone done this before? – is inspired by the struts and wingnuts
of Meccano. These couldn’t be further from your typical mechanical timepiece, as Guadalupe explains with zeal. “The shape of a watch inspired by an engine block came quite naturally to us. The mechanics have been positioned for ergonomic comfort on the wrist, where the “cylinders” provide highly legible information that resembles the mileage indicators of Classic Cars. Then we have the bracelet evoking the exhaust manifolds, six hole sections for reassembly, all emphasising the mechanical part of the DNA…” It costs roughly the same as a Ferrari, but you’re actually getting something infinitely more exclusive (not to mention cheaper to run). As Mr Guadalupe says, “The result is a very masculine and sporty aesthetic – strong and assertive.” Not a bad description of Hublot as a whole, we’d say. INTERNATIONAL HOT AIR BALLOON FESTIVAL The International Hot Air Balloon Festival is held annually in January at the Château-d'Oex. PAN FRIED SCALLOPS Michelin-starred chef Martin Wishart brings Mediterranean dining to our tables combining sweet and sharp flavours to create a warming taste sensation to impress even the most discerning food palate.
I
ntegral to this dish is a good tapenade. Tapenade is a Provençale purée of black olives and anchovies in olive oil. Sometimes other ingredients are added. It is great to use as a spread or dip, or to fill hard-boiled eggs and hollowed out cucumber with. I always use freshly made tapenade but you can find it ready made in most supermarkets nowadays. I often use tapenade in the Restaurant. I like to combine it with scallops: the sweetness of the scallops, the sharpness of the tapenade and the texture of the crust, all bring different sensations to your palate. Tapenade also complements a rabbit dish that I often serve in the Restaurant. Scotland has the most beautiful scallops, I always use hand dived scallops at the Restaurant and they must be delivered alive. This way the scallops will be at their most flavoursome. The ratatouille has lovely flavours: the sweetness of the red peppers heightens the sweetness of the scallops. I find it is best to cook all the vegetables for the ratatouille separately, and just bring them all together towards the end.

PAN FRIED SCALLOPS WITH BLACK OLIVE CRUST AND RATATOUILLE Serves 4
Directions for the scallops Remove the scallops from the shell and discard the skirt and the orange roe. Wash and dry the scallops on a clean towel. Heat a little olive oil in a non-stick pan. Season the scallops with a little salt and pan fry in the oil until golden brown on each side and just under-cooked. Place a disc of the olive crust on top of each scallop and place them onto a tray under a hot grill until the crust is cooked and crisp. Spoon a little ratatouille onto each plate and place the scallops on top, serve immediately.
For the tapenade crust 200g dried breadcrumbs 190g unsalted butter, soft at room temperature 80g gruyere, grated 4 tbsp dry tapenade For the ratatouille 6 tbsp tomato fondue 2 red peppers 2 yellow peppers 3 courgettes Olive oil for frying 3 small sprigs rosemary
Directions for the tapenade crust Put all of the ingredients into a food processor and blend until they are evenly combined. Roll the dough between two layers of cling film to a thickness of 3mm. Place the crust on a flat tray and into the fridge for a couple of hours to set firm. When the crust has set it can be cut with round pastry cutters into discs the same size as the scallops. Directions for the ratatouille Peel the peppers and cut the flesh into 5mm dice. Cut 1cm strips lengthways from the courgettes and then cut these into 1cm dice as well. Fry the vegetables in separate pans in a thin layer of olive oil with a pinch of salt and a sprig of rosemary until they are cooked through. Transfer the vegetables to a tray and set aside to cool down. To finish, mix the vegetables in a pan with the tomato fondue and warm through gently.

A COLLECTORS GUIDE TO WINE Independent wine merchants Corney and Barrow Ltd tell us what it takes to start a fine wine collection, offering advice on producers, storage and the best investments to make now.
C
ollecting wine is a joyous thing. Once seen as the domain of fanatical collectors with unlimited funds, wine collecting is catching on with a younger generation. For as little as £100 you can buy a case of wine that if cellared correctly could provide you with delicious drinking for a decade. With the right amount of basic research, the advice of a good, reliable independent merchant and a little bit of space for storage, you can start your own collection. Corney and Barrow Ltd in Ayr are celebrating their 250th year this year and they have a wealth of experience working alongside some of the worlds and the UK’s most dedicated collectors and are the exclusive UK agents for not only the finest and most sought after wines in the world but also a group of small devoted producers making outstanding wines. An important part of keeping a wine collection is where you are going to store it. Whether you are going to drink or sell your wine at a later date provenance and condition is key and not everyone can afford a stunning temperature controlled
facility. C&B’s bonded cellars under the cobbled streets of Ayr currently hold around 18,000 cases of customer’s reserves in perfect conditions with an average temperature of around 12°C and a humidity of around 80%. Wines will reach their peak and decline much faster in a centrally heated house making proper storage of your collection important. If you do decide to sell at a later date the conditions in which the wine is stored will have an effect on value. The better the provenance the higher the value. Crucially, wine is considered a perishable item and as such the sales do not attract capital gains tax. Wines are typically bought “en primeur” which refers to a long-established practice, originally associated with the purchase of young Bordeaux wine. Wines bought en primeur have not yet been bottled and are still in the barrel. They are bought in bond – i.e. excluding duty and VAT. In the US, the usual term used is “futures”. Over the last 15 years, this practice has extended to Burgundy and the Rhône and now many other areas where producers now release the latest vintage while still in cask.

Buying in this way guarantees the absolute best provenance of your wines, direct from the châteaux or domaine. You are therefore receiving immaculate, original stock. It allows you to secure an allocation of potentially rare, highly soughtafter wines, which may be produced in very small quantities. You have the opportunity to specify the size format you would like; halves, magnums or larger formats. For many wines buying en primeur allows you to buy at a better price than buying after the wine has been bottled and shipped to the UK. Outside Bordeaux, wines C&B offer en primeur are at a discount to the price offered once the stock has arrived in the UK. Over recent years, this price advantage has diminished in Bordeaux but the above advantages still hold true. The wine typically arrives in the UK one to three years after the harvest, therefore up to two years after you have made your

What are you going to buy? What do you like? Try and attend a few wine tastings and try before you buy. Many merchants offer these around the time of the wine being released. The first two weeks in January see’s many red and white Burgundy producers descending on London to show off their wares, but there are many regional tastings all over the country all year round. Get on a mailing list and start getting invited to some. Buy for the short, medium and long term. Wines to drink soon and those to lay down for extended ageing as either drinking or investment. We would recommend trying the following wines that are currently available en primeur. HYDE DE VILLAINE BELLE COUSIN 2012 Hyde de Villaine owes its title to the coming together of two great names in the wine world: Larry Hyde, celebrated Californian viticulturist and Aubert de Villaine, best known as cogérant of Domaine de la Romanée-Conti. Aubert’s wife Pamela is Larry Hyde’s cousin. The 2012 vintage is a blend of 70% Merlot, 30% Cabernet Sauvignon. A very deep jet-plum in colour, this presents cassis, crème de mûre and fresh herbs on the nose. Silky, rounded tannins support a ripe, opulent palate rich in warm fruitcake notes, gently spiced. There is a pronounced classical frame within plump Merlot fruit, ripe and long with a poised, elegant finish. £475 for 12 bottles in bond BOURGOGNE BLANC LES SETILLES, OLIVIER LEFLAIVE, 2015, BURGUNDY Les Sétilles is classic Olivier Leflaive and displays all the hallmarks of the house: creamy and fresh, ripe and minerally, the wine is beautifully structured and eminently approachable too. £115 for 12 bottles in bond

PREMIUM BOND The DB11 is Aston Martin’s first all new car in over a decade. But as Chris Chilton finds out it has been worth the wait.
A
s the great names in horology well know, keeping pace with time is a tricky business, no matter how precise your chronographs. For storied watch brands staying abreast of design and technical innovations, understanding which are worth adopting and then integrating those into your product to win over new friends without alienating your old by disregarding the style, engineering and craftsmanship that people have grown to love you for, is a fine balance. Aston Martin faces the same struggle, but in the new DB11, Aston may just have found an answer. The latest in the DB range of cars that stretches back to 1950 and takes its name from the firm’s one-time owner, David Brown, the DB11 is a
replacement for the DB9. What of DB10? That was a movie special built exclusively for last years’ Bond film Spectre, which means that the last really new DB arrived way back in 2003. Since being jettisoned by parent company Ford in 2007 Aston has creaked along, carefully tinkering with its existing cars, in danger of being left behind through lack of real meaningful investment and stifled by a former management reluctant to welcome change. But now Aston is rocketing back to health. There’s a new forward-looking management at the helm, access to desperately needed technology thanks to Mercedes’ 5 per cent stake in the firm, and a solid business plan that includes projects as radical and disparate as electric hybrid crossover and

a Ferrari-rivalling hypercar designed in conjunction with RedBull that it’s claimed will lap a race circuit quicker than an F1 car. And spearheading the charge is the £154,000 DB11. The front end styling might be familiar but move to the rear and it’s clear we’re seeing the emergence of a new era at Aston. Marek Reichman must have the patience of a fishing-loving saint with a penchant for staring at his kettle while it boils. After 10 years in charge of Aston design, only now has he been able to cast aside the design language he inherited and unleash his team’s full creative powers. The design won’t appeal to all tastes, but it wasn’t only styled this way to make a statement. There are technical reasons it looks the way it does. There’s no sign of Aston’s trademark kicked-up tail, for instance. Instead air is drawn in above the rear arches channelled through the boot area and fired vertically from the boot lid to create a virtual spoiler. And those handsome vents ahead of the doors also scavenge air from the wheel housings to reduce lift. The doors themselves still open in a slightly upwards arc to reveal an interior every bit as exquisitely trimmed as you’d hope and significantly more spacious than before. The leatherwork is beautiful, and the optional brogue-style seat trimming, styled after hand-stitched shoes, is an interesting touch, while almost every other surface not covered in hide is cloaked with wood or aluminium that’s every bit as luxurious. But this time the traditional bespoke feel is matched by the technology luxury buyers now expect. The excellent multimedia system is borrowed from Mercedes, but so well integrated - and so much better than Aston’s previous efforts - you couldn’t possibly feel shortchanged.
“THE DB11 HAS BEEN A LONG TIME COMING, BUT MORE THAN WORTH THE WAIT.” On the road the 600bhp DB11 feels effortlessly rapid, surging forward on a wave of turbocharged torque that pushes it to 62mph in 3.9sec and eventually, to a genuine 200mph. That puts it closer to the DB9-derived Vanquish, a supposedly much more extreme machine, than the DB9 itself. Yet unlike other high performance cars that have switched to turbocharged power such as Ferrari’s California and 488 GTB, it retains much of the intoxicating aural character that so endeared its predecessor. You still get that glorious flare of revs when the engine first fires (unless, to keep your neighbours happy, you’ve given the starter a long push to engage the new quiet-start mode), and under hard acceleration you’re treated to a rich barrage of sound that could only come from a V12. But it’s clear that Aston is pushing the DB in a subtly new direction. The DB9 never seemed to know whether it was trying to be a sports car or a classic GT and it didn’t feel different enough from Aston’s other car. This time, the company is promising greater differentiation. More extreme models will follow, which means the DB11 can concentrate on being a Grand Tourer in the classic mould: a stylish, beautifully appointed car that can deposit you on the other side of the continent without you feeling like you’ve gone 70 laps at Silverstone. The DB11 has been a long time coming, but more than worth the wait.

SAM HIDALGO-CLYNE Up and coming rugby superstar and Red Sky athlete, Sam Hidalgo-Clyne sits down with Nina Ghita to talk about his whirlwind rugby career and how to succeed as a young professional rugby player.
S
o, you are currently in pre-season training. How is that going? It has been really tough so far! This is actually my first full pre-season so I've found it really good to be involved from the start. We have a couple of warm-up games and then I'm just looking forward to getting the season underway. How did it feel to be part of the 2015 Scotland Rugby World cup at only 22 years old? To be honest it's the kind of thing you dream of as a kid playing rugby and then when you are there it's all very surreal. The experience it gave me was amazing and I just tried to take advantage of as much as I could and to learn from it. You were also awarded with the Guinness Pro12 Young Player of the Year in 2015. Does it help motivate you when your hard work and talent is recognised? It's always humbling to receive awards particularly when you are a young player trying to break through. I worked really
hard to break into the starting line up for Edinburgh and it's definitely where I want to stay. I think it's important to remember that you're only as good as your last game though and I try to just focus on the game in front of me. You’re clearly still very grounded. What advice would you give any other young athletes out there with an ambition to become a professional rugby player? I have had many frustrations in my career so far, like most other athletes. I had to move position three years ago from being a fly-half to scrum-half which set me back and I felt like I had to learn the entire game from a different perspective. I think the main thing that got me where I am today and over the hurdles in my career so far is my love of the game, the sport and experiencing the highs of playing for my hometown club and country. The best advice I could give is to play as much as you can and enjoy the game. It's not an easy path and don't go into it thinking you don't have to put the work in. Be selfish and you will see the rewards.

Despite moving position being a bit of a setback, you are now the leading scrum-half for Edinburgh! Was it never in your plan to eventually take on this position? Not at all. I never thought I would ever be a scrum-half. I always grew up knowing I wanted to play fly-half and admired the likes of Dan Carter and Jonny Wilkinson. Being a scrum-half was not a choice I wanted to particularly take, however in my head I knew that in the long run it would pay off if I put the work in. Looks like you have an important year ahead – competing to be selected within the Scotland Squad and the 2017 Six Nations squad – how are you preparing for that? I try not to think about playing for Scotland too much, as I know the selection process is out of my hands. I focus on playing well for Edinburgh and trying to play as freely and as well as I can to help the club make the top four in the league. As I say, I try just to think one game at a time. You were awarded the prestigious John MacPhail Scholarship to New Zealand in 2013, where you spent time training at one of the most highly regarded facilities in New Zealand. How much of an impact did that have on the success you have today? It was the start of my process of becoming a scrum-half. I really enjoyed the three and a half months out in Christchurch. I lived with a really nice family and got the chance to play for a club side out there called Burnside. It was an opportunity for me to get 13 games under my belt in a position I had never played before. I spent every day practicing and working on new skills and got the chance to test them out on the weekend. You are involved with Red Sky Management. How have they supported you in your development? Red Sky have been very supportive both on and off the field. They have a real awareness that an athlete's career is relatively short and that it is never to early to start planning for the transition. I also have the opportunities to interact and learn from the other members of Team Red Sky. For example to hear how the Olympic athletes approach their challenges has allowed me to learn from them and add to my performance. How did you feel about Team GB winning their first ever rugby Olympic medal?! It is a fantastic achievement for GB to come away with silver. It is great for the sport to get the exposure and has been very enjoyable to watch throughout the Olympics. I know a few of the players in the squad which was nice to see them do so well on the Olympic stage.
Clearly you are very busy! How do you manage your time? It can be hard to manage everything at once. My girlfriend Sarah-Jane helps to keep me on track with everything going on. My off days are spent either renovating my house currently or doing some coaching with kids. I enjoy being busy, I don't get much time to rest.
We noticed that you enjoy the odd game of golf. Is it important to you to be involved in non-rugby related activities as well? I have found it very valuable as it allows me to relax away from rugby. I actually think it's helping my rugby...but I'll let other people be the judge of that! This year has been a lot easier to manage and I've tried to enjoy my time off as it’s few and far between. It is definitely important to switch off and find something else that you enjoy when training has been tough.
Speaking of time, we hear you are quite a lover of a good timepiece. What's your favourite watch brand? I don't have a particular watch brand that I stick too. With my schedule I have to make sure I am always on time to meetings and training. However I tend to like more of the classic watches like the Baume & Mercier Clifton watch.
Apart from golf, what else do you like to do in your spare time? I enjoy some fishing. My girlfriend's parents live up north on the Isle of Skye which is a great spot for some sea fishing. It is a long drive up there but it is most certainly worth it once you arrive. If you get some nice weather the scenery is just incredible on the way up.
And finally, you clearly take pride in how you look and dress. How would you describe your style? I feel like I spend my life in sports kit, so when I get a chance to dress up I like to make myself look presentable and wear smart clothes. It makes a change from being in rugby kit and Lycra! REBIRTH OF THE CRAIGELLACHIE The once iconic Craigellachie hotel was brought back to life by restaurateur turned hotelier, Piers Adam, and it is now better than ever.
P
iers Adam was first introduced to Speyside by his father, who as a child was evacuated to Scotland from London during WW2. Before his father passed away, father and son took one last trip to Speyside and to the Craigellachie hotel. The Craigellachie has been an iconic landmark in the Moray village since 1893. The gleaming building dominates the Speyside landscape, overlooking the world famous River Spey and the Thomas Telford bridge. Speyside was a much-loved holiday destination of the Victorian high society who saw value in escaping the city in favour of the fresh Scottish air and the health benefits that came with it. The Craigellachie was built as a hotel overlooking the railway line to facilitate the transportation of the fine produce the area has always offered. The day’s salmon catch would line the river banks waiting for the carriages to pull up and start the journey that would end at Billingsgate fish market. The trains were laden with casks of Speyside’s amber nectar, ‘uisge beatha’, known today as malt whisky. The Craigellachie quickly became known for its hotel bar where land owners and locals
swapped stories over a ‘half and a half’ – a half pint of beer with a dram of whisky. The distillers of the area made the pub their own, they discussed blends, entertained and on many occasions would show off their latest creation. The Craigellachie is where many of the world’s greatest blends first came to market. During the trip to Speyside with his father, Piers was saddened to find the hotel was no longer what it had been– a change of management and lack of funds showed a fading shell of a great community establishment. He heard it was on the market and so with determination and passion set about making The Craigellachie his own. A bar and restaurant owner by trade, Adam is the man behind the global brand Mahiki which has venues in London and Dubai, VIP pop-ups at V Festival, Henley Regatta and its own Mahiki coconut rum. Before this he pioneered London’s discerning yet fun night scene with venues such as The Punch Bowl (co-owned with film director Guy Ritchie) and Kabaret. However, never had he dreamt he might become a hotelier,

and not least one in the Highlands. But armed with his dad’s advice of ‘do the right thing and go with your heart’ five years on the Craigellachie has returned to its best. Under the brilliant eye of Kevin Smith, the former Hotel Manager of Mar Hall Golf Resort, it is quietly becoming one of the best places to stay on the whisky trail. Its Quaich whisky bar has been hand-crafted by Soane, the bar itself is lined with a silver band designed and engraved by jeweller Stephen Webster. Hugo Guinness prints adorn the walls of the breakfast room and many of the bedrooms. The soft furnishings of the bedrooms are by Johnstons of Elgin, the suppliers of cashmere to Burberry and one of the five Walpole approved brands that call Speyside home. The rebirth of the Craigellachie has stimulated local tourism, a real source of pride for Adam who cares deeply about the wider area, and its locals’ ability to create livelihoods and futures for themselves. To have a pub, a hotel an institution they can be proud of as one of the best. However, the appeal stretches beyond the local. In 2015 the hotel was taken over by nutritionist Rose Ferguson for a birthday come Burns Night celebration. The friends comprised of Nick Grimshaw, Sadie Frost, Mary Charteris, Kate Moss and Noel Gallagher. What ensued was a good oldfashioned, Scottish knees-up complete with bagpipes and ceilidh dancing. Picked up by the Daily Mail, suddenly the local ‘Craig’ was known to the nation. However this occasion was perhaps more momentous for the hotel in another aspect – it was the first sampling of Copper Dog whisky. The pub belonging to the hotel was launched shortly after the hotel reopened - it has become the Copper Dog. It is simply a great pub where locals, tourists, still-men and the occasional ‘A-lister’ meet to drink whisky, eat the best of Speyside’s natural larder from farm to fork (lobster from ‘Mad Dan the fisherman’ of Lossiemouth, Shetland mussels and Isle of Mull scallops) and swap stories.

Since the early 18th century whisky was largely distilled illegally, with the Scottish refusing to pay taxes to the English crown. Speyside, tucked away in the rugged Highlands, became a hot-bed of illegal distilling. Following the rebellious example set by their bosses, it was tradition for the workers to siphon off their own drams to take home with them ‘free of charge’. They would use all kinds of mechanisms to get their own blends out of the distillery – stone bottles, body hugging hot water bottles on strings around their necks or pretty much anything laying around the workspace that could contain and conceal liquid. The most celebrated of devices, however, was the ‘copper dog’ – a bit of easily found copper tubing with a penny soldered to one end and a cork in the other. This soon became the vessel of choice, earning its name as it was made of copper and always by your side… just like man’s best friend. Copper Dog whisky launches in October 2016 - its aim is to make whisky cool, but also as accessible and democratic as the pub itself. The hope is to do with Scotch whisky, what has been done with Bourbon in the States. To demystify and provide an alternative to the traditional way of drinking Scotch.
