Celebrate The Holidays The Royal Way!

A Message from the President Dear ROCC Members, Can you believe that the Holiday season is officially upon us? Where has the year gone! I hope everyone had the chance to attend our various fall events, including our Oktoberfest Membership Mixer. We had so many new faces join us and it was great to see all the new families that have become Members here at the Club and see them making new friends and memories. Our Membership sales are still going strong, and we can’t wait to continue to welcome new families into our Royal Oaks community! We’ve also extended our current Preview Program through January 30, 2022, so be sure to give our Membership team a call and find out all about the incentives and added bonus you can maximize on. I hope all of you were also able to attend our Halloween Party. We had such a great turnout and I enjoyed seeing so many creative costumes. As we wrap up Fall events and head straight into holiday mode, we have A LOT of exciting things happening at the Club. Our Bunker Renovation project is almost finished and I can’t say enough about how outstanding the bunkers look. If you haven’t had a chance to get out on the course to check them out, book a tee time and see what a difference they make. On top of finishing the Bunker Renovation, we are excited to announce the addition of the Club’s new Executive Chef, Olivier Burgos. He comes with a very extensive background that I know our members will be able to see and taste the creations he brings to the Club’s dining. As we look towards the end of 2021, I want to take the time to remind our Members to be sure to submit their vote by November 17th for our 2022 Board of Directors. We are looking forward to the turnout and appreciate our Members who have stepped up to run for such an important role here at the Club. We have also received many great applications for our committees for next year. Thank you to everyone who is willing and eager to participate! 2022 will be a great year, I’m sure of it! As always, we look forward to seeing you all at our upcoming holiday events! Sincerely, Dave McMahon Board of Directors, President

Dear Members,

WELCOME, CHEF!

We are pleased to report we have completed the search process for our new Executive Chef. We had a great response from the culinary community and after weeks of phone interviews and multiple in person interviews, we narrowed the field to three finalists. A committee of members was assembled to serve as the panel for the menu tasting and final interviews with our top three candidates. The Executive Chef Search Committee was composed of five Members and two staff members and they were: Tom Luby, Mark Clark, Karen Pitts, Rob Walsh and Patrick McCarthy. The candidates were also interviewed by our food and beverage team and then spent the day preparing for the menu tasting portion of the process. It was a rigorous exercise for all involved, however, at the end of the day, we had a very clear decision. We are pleased to introduce our new Executive Chef, Chef Olivier Burgos, CEC. Born and raised in Paris, France, Chef Olivier Burgos started in the kitchen of the prestigious 5-Star Hotel “Royal Monceau” next to the Les Champs-Élysées at the age of 15. His experience there gave him a passion for high-end cuisine and the quality products and food. As his career developed, he moved from restaurant to restaurant, Michelin Star Chef to Michelin Star Chef, within the Paris culinary scene. This progression was customary in Paris, done with the agreement of the chefs, to allow him to develop under multiple mentors and to inspire him to grow as a young chef to meet the highest standards of traditional French restaurants. By the age of 23, Chef Olivier had worked in six different 2-Star Michelin restaurants. He had also opened his first restaurant in Normandie. Olivier moved to England to run the kitchen of the prestigious restaurant and wine bar, La Capelle, on Denham Golf Course. The position was for two different restaurants including both fine dining with French cuisine and another for traditional pub fare. While on a vacation in Singapore, Olivier decided that to truly grow as a chef and a person, he needed to travel and experience other cultures. His decision triggered a culinary travel experience that sent him on his own Eastern pilgrimage, traveling to Hong-Kong, Ubud (Bali), Malay (Malaysia), Singapore, Shanghai, Bangkok (Thailand). He worked in each country as a cook. It was both an adventure and an eye-opening experience.

Olivier was later appointed as Executive Chef for “Loose Box” in Australia which was considered to be famous in the international culinary world and was owned by Alain Fabregues MOF. With Chef Oliver at the helm of Loose Box, it was awarded a 2-Star Michelin rating. After seven years, Chef Olivier left Loose Box and opened a fine dining restaurant named Champagne in the city of the Gold Coast, Australia. He implemented his artisan vision, developed through decades of work in France, Asia, and Australia. Champagne was awarded the best French Restaurant multiple times. Olivier traveled to the US for the first time and his travels convinced him to make the move to experience the American way of life. Since 2017, he has been at The Culinary Institute Lenotre here in Houston. He was initially in charge of managing and cooking for the on-site restaurant or bistro. He was soon promoted to Head Chef and Program Director of the Culinary Arts department. Lenotre has been rated the “Best Culinary College” in the United States for three straight years. While Chef Olivier has mastered cuisine from around the world, he is most looking forward to providing members with their favorite dishes and improving the menu offerings. He is thrilled to be joining the Royal Oaks team and is eager to get to know the membership. On a personal note, Chef Olivier is a proud father of four adult children. He and his wife, Skye, a native to Australia, now call Houston home and are happy to be placing down roots in Texas. Chef Olivier will be onboard starting December 6. Welcome Chef Olivier!

A MESSAGE FROM MEMBERSHIP Dearest Members, It was a challenging year, to say the least, but I am very excited about the future and the growth we are seeing again. Most specifically in the Young Professional category which will set up the Club for years to come. (5) of these are aging up to 40 in the next year adding to that Equity Golf Category as we continue to grow. Also, the Legacy category is starting to get some traction with current Member’s children coming of age to join on their own. The future is bright and you can feel the positive energy in all these new members as they get engaged in the club.

Membership engagement continues to be a key focus for the teams as we build on the sales momentum. We all look forward to seeing our around the club for all the holiday festivities and making memories with your friends and family. We are so happy that so many of you were able to manage the pandemic with your membership and we are excited to see where this next year takes us!

The Chart below shows year over year sales and we are already beating the average of both 2019 & 2020 as of October 1st and look forward to finishing out strong with 3 full months of sales left to tally. Here are some of the positive highlights I would like to share over this last year: • Usage is up in all departments which is a great sign!! • We had about 60 people come out for our Octoberfest Membership Mixer which we have decided will be a yearly event for tenured and new members! These mixers will be held (4) times a year with the next one scheduled for January 13th. • Our first Young Professional Brunch and golf was held on Halloween and had about 30 attendees with (4) groups heading out to golf after– They all raved about it and we look forward to continuing this format. Long standing Members were also able to partake in the Bloody Mary/Mimosa bar and remarked about the energy the Young Professional Members are bringing to the Club. • The Wednesdays After Work will pick back up in the Summer when we have more daylight and this was a great way for new and existing golf Members to meet each other in a relaxed setting. • New Residents to the neighborhood are receiving full welcome packets at their orientations and the new HOA President has been proactive in partnering with the club to maximize on the “Lifestyle Play,” of living in the community and being a member of the country club.

KITCHEN NEWS

Hello Members,

We have certainly had an interesting and busy season in the kitchen! Our private event bookings have quickly increased, our member-focused events have grown considerably, and the Bistro kitchen has been humming along throughout the week. Change can be difficult, however, I could not be more proud of everyone on our team for how we have come together. We view this transition as an opportunity for growth and we are already seeing the benefits. Everyone has eagerly taken on more responsibility to ensure we are all striving to better the member experience in every way. From our team to your family we thank you for your ongoing support and encouragement. We’ve heard from many of you and your kind words have meant a great deal to us. We look forward to more great things ahead. I would personally like to assure our membership that our team is in great spirits and excited for the holiday season ahead of us. Our primary focus at the moment is to ensure consistency in all we do on a daily basis. We are working very hard to ensure that all we do is the same from one dining experience to the next. In addition, we have mapped out our schedule of activities for the remainder of the year and we can’t wait to provide you with a fantastic holiday season. We hope everyone has a very safe and healthy holiday season. Most importantly get ready for a lot of turkey and stuffing!!! To start you off on the right foot, I have included our simple yet helpful brine and turkey recipe to prepare a moist and delicious turkey for your Thanksgiving meal. As you know, the Club is decorated beautifully for the holiday season, and this year we are bringing in a fresh, new feel with shades of champagne, gold, cream, and accents of blue, which is sure to impress your guests. This new décor will also blend well with any holiday party, wedding, or other celebration hosted at the Club. If you plan to celebrate from home, we are offering our To-Go Catering Menus once again. These menus are currently being revamped by our amazing culinary team! All orders must be placed 72 hours in advance and are for pick-up only. If you are interested in this option, please give me a call and we can discuss your order in further detail.

PROTECT YOUR BACK

Throughout daily life, our backs already move into many positions in a wide variety of directions. Then Published in Lone Star Golf when we reach for something on the floor and injure July 2021 Edition for Texas Golf Association ourselves, we conclude that the movement caused the Despite industry efforts to explore safer swings and injury. Thus we move even less. I believe the takeaway fitness initiatives, too many golfers suffer from back is not to restrict movement or loads, but to add more injuries or chronic back pain. The sedentary lifestyle non-loaded movement and progressively build loads combined with over-exertion and high repetitive forces in a variety of angles and motions as the spine was designed to do. When you prioritize building capacity prove to be too much load for certain segments and strength in all ranges you are less likely to get of the spine on many players. injured in golf and in random daily motions. And by contrast treating your back as if it’s fragile or over-protecting your back by always remaining in “neutral posture” can make you weaker and even more vulnerable to injuries. So what is a golfer to do? In my opinion, we are missing the mark on back health due to a lack of knowledge about what humans need. The over focus on remaining in neutral posture throughout the day combined with the lack of daily, intentional spine movement and the lack of safe, progressive loading contribute to a weaker core that can’t bear the load of repetitive powerful swings. Back pain is a powerful motivator and should be diagnosed and treated by medical. My goal in this article; however, is to reach golfers before your back becomes a limiting factor. So by using good logic and training principles, we can protect the back.

Fitness Director - Pam Owens powens@royaloakscc.com

Let’s look at these 4 facts; 1. The spine is designed to move in many directions including flexion, extension, lateral bending and rotation 2. Many golfers are sedentary throughout the days/week except when playing golf 3. Spines (just like all joints) have a limited capacity for load and forces 4. Spines (just like all joints) are able to build more capacity with progressive overloading.

EXERCISES TO TRY AT HOME Segmented Cat/Cow Begin in all fours or quadruped position with knees under hips and wrists under shoulders. Begin by tucking the tailbone under to flex the lowest part of the lumbar spine, then gradually flex each segment moving up through the thoracic spine and cervical spine. In this flexed-spine position your anterior core will be “short” and posterior core will be “long” or open. Then begin to lift the tailbone and extend the lower back continuing to extend to the upper back and neck to make the back “short” and the front of your trunk “long.” Focus on contracting the shortening side while stretching the opening side of the spine. Perform 2 or more repetitions daily.

Core-Loaded Dead Bugs This higher-tension version of dead bugs, a move I learned from Jon Rahm’s workout, builds the anterior core which can protect the lumbar spine from over-arching and losing posture. Begin on your back with both legs in the air and position your low back down into the floor. Press your club across your thighs while simultaneously pushing your legs into the club. Alternate sliding each leg out and back and maintain your core brace with as much pressure as possible. If you notice your back lifting up then elevate your hips with a towel to keep your legs above your hips. If you still have difficulty with core stability keep one foot on the ground and do leg slides without the club.

WHAT’S UP IN TENNIS?

WHAT IS PICKLEBALL? What is pickleball? How do you dink?

Why do you need to stay out of the kitchen? If you want to play one of the fastest growing sports in the US and Canada then you want to learn these skills! What has made pickleball so popular? It’s a fun and social game played as doubles or singles and is enjoyed by people of all ages.

Royal Oaks has eight pickleball courts played on retrofitted tennis courts. The paddle is similar to a ping pong paddle but larger, and the ball is similar to a whiffle ball. The Sport’s Club has a few paddles and balls for members to check out. For safety and club requirements, you do need proper tennis court shoes to play.

The best way to learn the sport is to take lessons with one of our tennis/ pickleball instructors. Contact head tennis coach Peter Ferrell at 832-722-8030 pferrell@ Royal Oaks Country Club member Susan Nelsen says, royaloakscc.com, Assistant coach Nealie Kaplan at “I am completely addicted to PB, not only for the fun 781-864-9659 nkaplan@royaloakscc.com or Assistant of playing but also the camaraderie with other players. coach Adam Ewing at 281-389-3846 aewing@ Almost nothing takes precedence over game days”. royaloakscc.com The sport, created in 1965, was named after the dog of one of the three dads who created the game for their bored kids. It combines the techniques of tennis, badminton, and ping pong.

Once you learn the basic rules and techniques, come join the many players for open social play on Monday and Thursday beginning at 5:30 pm and Sunday at 9:00 am. Not sure you’re ready to join the regular players? Then book a court with friends, go practice and most important, have fun!
