St. Maarten is also the culinary capital of the Caribbean, with an array of elegant culinary fusion that keeps “food lovers” returning each year. With more than 300 restaurants, the island has something for everyone. To this splendid island, Simpson Bay Resort & Marina brings a wonderful resort, offering a wealth of leisure activities. We have plenty of adventures for those who like to stay busy, and six swimming pools plus a beautiful beach for those who enjoy a more relaxed approach. The resort staff joins me in extending a warm island welcome. Now sit back, relax, enjoy your vacation and please call on any of the staff – or me personally – whenever we may be of service. It is probably the world’s most famous air-traffic postcard, and the one that all aircraft fans have dreamed of being able to capture: KLM’s Boeing 747-400 landing only meters over Maho Beach, toward the Princess Juliana Airport in St. Maarten. On Friday, October 28, 2016, KLM’s Boeing 747-400 landed for the last time at Princess Juliana International Airport in St. Maarten, ending one of the most iconic scenes in the aviation world. Thousands of people followed the landing live, either directly from Maho Beach, or through the camera located on the beach which broadcasts what happens there. Many of those on the beach were wearing hats distributed by KLM and holding flags with the Dutch company’s logo. The moment is remembered mainly because there is nobody that has not seen at least once in their lives, a photo of a huge Boeing 747 landing a few meters of the beach of fine sand and crystalline waters in St. Maarten. A brief Google search allows you to find many photos and videos of the Dutch company jumbos landing on the island. Since October 30, the flight between Amsterdam, Curacao and St. Maarten (a triangular flight joining the three destinations) ceased to exist and resulted in a direct flight between Amsterdam and each of the countries, better meeting the rising demand. The airline KLM, had been flying to Sint Maarten with a 747-400 for more than 25 years; specifically since the fall of 1990. Other aircraft, such as the McDonnell Douglas DC-10 and the MD-11, have served the route during these years, sometimes replacing the 747 altogether; but to this

day, there had always been another company covering the gap left by the Dutch airline. Air France operated the route between Charles de Gaulle and Princess Juliana with a Jumbo between 1986 and 2002, and Corsair between 2003 and 2012. From now on it is a smaller Airbus - an A330 - that serves the 747’s route and makes the dramatic landing on the island. The chief pilot of KLM’s Boeing 747 team, Paul van der Ven, told The Daily Herald: “It is an iconic approach, especially because of the inseparable view of the blue Caribbean sea and the aircraft landing just behind the beach. The Boeing 747 is slowly disappearing from our fleet, but the end of this landing hurts. We find it a great pity, also because of the historic ties that this aircraft has with the island. Despite the disappearance of 747 flights to Princess Juliana Airport, world aviation fans and spotters will be able to continue capturing spectacular snapshots of four-engine jets. Air France maintains three weekly flights with an Airbus A340, and from December the frequency will be daily. St. Maarten has lost an icon, but it is still the best airport in the world. Maho Beach, in St. Maarten, is, and will continue to be world famous for the planes that fly over the sand. Maybe nowhere else in the world do they land so close. So much so, that at some point, it seems that the bathers could caress the wheels.

PHILIPSBURG The capital of Dutch Sint Maarten, Philipsburg, is rich in history and abundant in shopping. Founded in 1763 by John Philips, a Scottish captain in the Dutch Navy, the town’s history is still felt when you pass by the historic Court House that was built in 1793. Philipsburg became a bustling center for international trade including salt mining, which was the Dutch settler’s main interest in this unique island. Remnants of the original Great Salt Pond can still be seen while driving along Walter A. Nisbeth Road, also known as Pondfill Road.

On most days, it is impossible to miss the gigantic vessels docked at the A.C. Wathey Pier. Great Bay, the bay in front of Philipsburg, can accommodate six large cruise ships at once. In fact, the pier was expanded in 2009 to accommodate the world’s largest mega class cruise ships. Today, Philipsburg is arguably the premier Caribbean destination for the world’s largest cruise lines. With its compact nature and easy-to-follow street plan, Philipsburg is made for pedestrian traffic and an ideal shopping experience. The Boardwalk, along the beautiful shores of Great Bay, is the place to grab a drink or have lunch while listening to live music. Head on up to Front Street for fantastic shops packed with jewelry, electronics and clothing stores. Front Street is also home to a variety of points of interest, including the St. Maarten Museum and the St. Maarten Guavaberry Company. Although guavaberries grow throughout the Caribbean, St. Maarten has taken their cultivation to special heights, and the St. Maarten Guavaberry Company offers liqueur, barbecue sauce, jam and other goods all made with the island’s native fruit. Make sure to stop by for free samples of their delicious Rum blends including the famous Guavaberry Colada. Turn north onto any alley (Dutch: steeg) or street (Dutch: straat) and you will find a busy shopping area, Back Street. The market here offers a taste of Caribbean flair with a variety of clothing stores and kiosks with great bargains.

Getting from the resort to Philipsburg couldn’t be easier. Take Aqua Mania’s water taxi, rent a car on site from Dollar/ Thrifty & Paradise car rental, or ride the free, air-conditioned bus provided by AMA jewelers. Cold drinks and a short guided tour covering the history and interesting landmarks is included. Check with your personal concierge for bus schedules and to sign up. Once you experience the flavor of Philipsburg, you are sure to crave another trip to the Caribbean’s shopping capital.

Set sail from Simpson Bay Resort & Marina or enjoy a 10 min. drive over the causeway, to experience French flavor in the port town of Marigot. Explorers will be well rewarded with an adventure unlike anything the Dutch side of the island has to offer. In contrast to the bustling cruise ship port of Philipsburg, Marigot is home to luxury yachts and charming boutiques. The cafés and bars along the marina offer some of the best pizza on the island, daily specials and fresh mussels, and remain packed with patrons throughout the day. Inland from the marina and those bustling cafés, you’ll find the Rue de la Liberté and the beginning of your shopping experience in Marigot.

Shops offer many of the same high-end goods you’ll find at shops in Philipsburg – perfume, jewelry and clothing to name a few – but with a decidedly French influence. Many of the best boutiques can be found in the West Indies Mall, which lies at the base of a hill. Fort St. Louis sits at the top of the very same hill. Built in 1767 from plans developed by King Louis XVI, most famous for being guillotined during the French Revolution, this squat stone fort is one of the must-see sites in Marigot and offers a stunning view of the entire city. Another, perhaps more macabre site, is the city’s cemetery, which dates back to the early 19th century. The French Caribbean influence will be noticeable to anyone who has been to New Orleans and seen similar above ground crypts. Along with these sites, visitors should be sure to hit Marigot’s open-air market, which takes place each Wednesday and Saturday from 6 a.m. to 1 p.m. on the Rue de France, along the wharves. This is a wonderful time to enjoy many of the local farmer’s treats such as sweet potatoes, coconuts, tropical fruits, local spices, fresh fish, and of course the various local arts and crafts. For Francophiles who visit the resort, Marigot is a must-see. We recommend getting there nice and early so you can start your day with a warm croissant and a cup of freshly brewed coffee at one of the many cafes. After visiting the open-air market and the high-end shopping in the many unique boutiques, stop by Marina Royale. This marina is more than just a home for the yachts. Today, you will find a variety of waterfront
simpsonbayresort.com
cafes, craft shops, bistros, and a wonderful museum with Haitian artwork. Check out the view from Fort St. Louis and visit the cemetery along the Rue de Sandy Ground as you head out of town. This spectacular French Caribbean journey begins from your island home, Simpson Bay Resort & Marina. Experience Marigot by hopping on the Monday Island Bus Trip, spending a day or two exploring via the daily boat ride with Aqua Mania or by renting a car with Dollar/Thrifty & Paradise car rental. With as many boutiques and fabulous restaurants for which the island is renowned – France is calling!

efore you head to dinner at La Patrona, you may want to brush up on your Spanish vocabulary for fire-related words: fuego. en llamas. flambeado. The staff speaks English just fine, but you’re apt to order flambéed steak, chicken, shrimp or any of three desserts – not to mention five after-dinner coffee drinks – that will be lit tableside, sending visually dramatic flames into the air. You’ll be thinking, “Wow!” but will have way more fun applauding “¡Olé! En fuego!” And you thought learning a bit of Dutch or French would help you on St. Maarten.
Welcome to La Patrona, a Mexican restaurant located within the Simpson Bay Resort & Marina. By day, La Patrona is a casual seaside restaurant with American and Mexican favorites. Come dinner time, the contemporary dining room blossoms into a fine dining venue. Tables are set with cloths and linen napkins, along with blue-rimmed Mexican plates and handblown south-of-the-border water glasses. On the water-view patio tables, candles enhance the setting. It’s the food, of course, that draws diners night after night. The chefs of La Patrona serve dishes that are authentically Mexican, adapted for guests’ tastes. So, a mole sauce, for example, made with more than fifteen spices, has a rich, complex, robust flavor, yet it’s not spicy. “There’s no heat at all, although we have chili habanero and chili de arbol for guests who like it hot,” says Manager Daniel Lavalle, a Mexico City neighbor whose father is from the Yucatán Peninsula. Customers eager to taste new flavors will find several tempting options. Many opt for the Mayan Pork Tomahawk. The description is unintimidating: grilled pork with bell peppers, onions, jalapeño butter and tikinxic sauce, served with tortillas, guacamole and Mexican rice. What it doesn’t mention is that the Mexican spice achiote turns the pork red. It also – together with sour orange, garlic and other flavors not listed in the menu description – adds a one-of-a-kind flavor. “No other food tastes like achiote,” Lavalle says, excited.
7 6 RESORT LIFE
If that doesn’t tempt you, consider the chicken Tampico, another specialty. For that entrée, a chicken breast is stuffed with spinach and mozzarella cheese, crusted in sliced almond, and topped with a vibrant chile poblano sauce. For those who prefer sticking to the familiar, La Patrona always has steaks and chops on the menu. But, why settle for a ribeye, even a wonderful one, when you can opt for steak Diane – a steak pan-fried at your table then flambéed with Cognac. Entrees are only a portion of the La Patrona dinner experience. While guests wait to be seated, they’re treated to a tostada of pureed black beans on a fried homemade tortilla. The house Caesar salad is tossed tableside, enabling a close view of a server dressing the lettuce with anchovy, raw egg, olive oil and garlic. Those flambés – banana, cherry or mango – are spectacular sweets paired with vanilla ice cream. And some guests indulge instead on churros. Here the long donuts are served with cajeta, a rich sweet caramel made from goats milk. For an extra special experience, reserve The Patrona’s Table, where 10 to 12 people can be educated about signature Mexican liquors. The service team provides tastes of Ancho Reyes, a Mexican liqueur made with hot peppers; then tequila, mescal – with the worm that comes in each bottle, and sotol, sharing the history and composition of each. Three small bites are sent out with the Patrona’s Table experience. One happens to be a fried tortilla topped with guacamole… and grasshopper. Another is a quesadilla filled with melted cheese and huitlacoche, a corn fungus. If you’d like your drinks without the exotica, simple belly up to the bar, or make yourself at home around one of the three fire pits that seat six to nine imbibers. “We have the best margaritas on the whole island,” Lavalle insists. Dinner may be La Patrona’s shining moment, but don’t skip the daytime meals. Most Americans enjoy the buffet of day-starter foods from home: pancakes, French toast, sausage, made-to-order omelets, etc. If you want some Mexican immersions, though, look to the a la carte items. For Lavalle, the most exciting is Motuleño eggs. “This dish is 100 percent Mexican,” he says. “It’s made using real Mexican tortillas, made fresh daily at the restaurant with corn flour imported from Mexico, as all our tortillas are.” The eggs, fried, are plated with not only refried beans, tomato sauce, ham, cheese and peas; they’re also served with fried sweet plantains. The lunch menu is a mix of American and Mexican foods: pizzas and fish fingers, plus ceviche and tacos. Morning, noon or night, La Patrona caters to you, the patron. Now about those margaritas…

Simpson Bay Resort & Marina gives to local charities During the 2016 holiday season the Staff, Employees, Members and Guests of Simpson Bay Resort opened their hearts and their wallets to benefit some of the less fortunate citizens of the Friendly Island. Our Food and Toy Drive was months in the planning to raise cash for the needy, food for the hungry and toys for youngsters who might have gone without.
“Everyone was so generous”, said Carmen Ayala, Simpson Bay Resort Financial Comptroller. “The members and guests gave but the employees of SBR really stepped up for these kids”. Everyone’s generosity and hard work allowed us to share the spirit of Christmas with two very deserving charities here in St. Maarten. The Hope Outreach Foster Care Foundation cares for 15 orphaned children, and The Bishop Ellis Foundation provides assistance to nearly 100 needy families on the island. Food baskets and toys were delivered to those in need, putting smiles on the faces of children. The kind generosity of the company in matching all cash donations dollar for dollar doubled the amount given. The grand total of cash donations collected was $6,783! This allowed us to not only offer assistance during the holiday season, but to provide assistance to the needy well into 2017. A combination of Food Coupons and Cash Donations were made to the charities listed above to assist them in caring for the needy throughout the year. Special thanks go to the staff of Simpson Bay Resort for all the hard work in making this event possible. simpsonbayresort.com

VILLAS BEACH CHALLENGE LEGAL CHALLENGE TO PROPOSED BEACH PROJECT Plans to build a second beach at Simpson Bay Resort have been put on hold due to a legal challenge to the approved building permit, which was obtained by the resort for that purpose. The challenge came from the neighboring property immediately north of the SBR Villas building. The plaintiffs filed suit against the government of Sint Maarten alleging that the government acted improperly in issuing the building permit. Simpson Bay Resort has joined the action as an interested third party. The proposed beach would be built in front of the Villas building where the existing seawall and rock revetments now sit. The beach will be over 150 meters in length and 15 meters deep on average. If successful this project would more than double the beach area available to SBR members.
