Pamela El Kik was born on the 14th of May 1988. Originating from Deir El Kamar, Pamela grew up in Ashrafieh in a family of four: her two parents, and her sister. Since her early childhood Pamela developed skills which later on proved to be key success factors in her career. Imitating teachers at school and singing during scholar shows were her favorite hobbies. Read with us an interesting interview with the Lebanese Star Pamela El Kik.

Tell us about yourself About me? It is very difficult for me to talk about myself, about the positive things and the negative ones, especially that I have both. I love my passion for acting, the domain which I knew since childhood that I will enter; especially that my parents encouraged me rather than forcing me to be a lawyer, a doctor or an engineer. I love life, I love to meet new people mostly from my domain, from them I get to know new and different characters, new ways of thinking, talking and new gestures. I studied Radio TV, and there is a movie which I will direct but not in the meantime, I have various ideas to different projects. I wrote a scenario for a cinema movie, I want it to be a special experience; the actress who wrote the movie. I made a song also after Celebrity Duets, not to be called a singer but to have a small experience too in this domain. I believe that an artist as long as he/she is presenting good and proper work he/she should try all the domains available, this salad of experience in all majors is a great experience. How long have you been an actress? From where did you get started? I have been an actress for 6 years now. The first most important movie which showed the real Pamela El Kik and my potentials was SARAH which made a great success in the Middle East, even in France where TF1 translated it to the French language. Then JOUZOUR which was translated to the Turkish language in Turkey the thing which I found sarcastic but so funny since Turkey bought an Arabic scenario from an Armenian writer. What kind of roles have you performed throughout your career? Are you satisfied with them? During the past 6 years, I worked approximately in 12 movies;

Who do you think is your main competitor in Lebanon? Every successful, talented, beautiful and honest person or actress. I donâ&#x20AC;&#x2122;t have a main name but I think they are many.

my chance, my hard work, the support I got, the right ideas and the perfect scenarios I chose, all these will never make me regret the roles and characters I have performed throughout my career.

Who is the best director you have worked with? There is no better director than another. Preferring a director on another does not mean he/she is better, but I prefer working with the young director Philip Asmar. I have worked with many talented and successful directors like Samir Habshi and from every person I learned new things.

What was the best character you performed? I played various characters and many contradicting ones, I love all of them, and every role had a part of me, of my feelings and my hard work. I do not prefer any movie I played on another; every character had its own success and is special to me in way or another.

Are you working on any current projects? Ofcourse, now I am working on a project for MBC Dubai written by Claudia Marchelian, it consists of 120 episodes which is considered a long series. I think MBC is the dream of every Arab actor/actress since I see MBC the Hollywood of the Middle East. The production is huge, the work is super-duper professional, and the materials we will be using and working with are all new. In addition to MBC, I have a cinema movie called Bel Sodfe which we will start shooting in April, with the director Bassem Christo and written by Claudia Marchelian.

What are your strong points as an actress? This is my Secret! Ask a chef about the successful taste of his/her food and he/she will say My own Secret! I have many secrets like my private perfume, the love of my life, my strong points in addition to my weak points! Give me a few tips to be a successful actress? From my personal experience, mainly you should be yourself, be natural, stay honest with people, and before being honest with others you should be honest with yourself. Today we may see many honest persons with others and not with themselves, and here there is kind of cheating. When you are not comfortable with what you like to do or how you like to behave just to make others accept you, the main problem exists. Be yourself, who accepts you will love you, itâ&#x20AC;&#x2122;s not necessary to be loved by everyone.

What do you think about RPN Guide? For the first look, it grabbed my attention to read it more. The good number of pages it contains along with the professionalism of the photos taken and the articles written are interesting and force you to read it. I believe I will start buying every coming issue!

How to Keep During Winter? Winter is finally here! Read on and know what you should do to keep warm during this Winter season! 1- Dress Warmly: Warm clothing, especially when it’s layered, not only prevents exposure, it also helps retain body heat. Wear a warm hat and thick socks. We lose most of our body heat through our head and feet. Layer your clothing. Long underwear is thin, so it fits easily under most everyday clothing, including jeans and shirt. Bundle up with a fleece or a woolen sweater for extra warmth. 2- Cuddle up under blankets: Keep blankets on your couch so that you can wrap yourself up while reading or watching TV, and get extra blankets to sleep with. 3- Use a hot water bottle: Water retains heat for a long time, making hot water bottles an affordable and effective way to stay warm. How to Motivate Your Employees Motivating your employees doesn’t have to be a challenge anymore. It’s simple. Create a pleasant atmosphere. Your employees spend a large chunk of their lives working in their office, so you should try to make the office look as friendly and appealing as possible. If you create a friendly and comfortable atmosphere for your employees, then they will be more eager to go to work every day. Here’s how to do it: Create a space that isn’t too cramped. Do your employees feel like they have room to walk around and breathe, or like they’re crammed in like sardines? The more free they feel to move around, the happier they’ll feel. Tell us about your unique type of shop A nice cigar shop should have all kinds of fine cigars and normal cigars but not cheap ones. It should be stuffed with cigars; it must be like a candy shop for kids! When a cigar lover enters a cigar shop, he should feel that every corner is stuffed with cigars and accessories. Moreover it’s very important in a cigar shop that the sales person or the owner gives a lot of attention and advises for the customer and the type of cigars he has. Not to forget the importance of the cigar shop’s design, it should contain ads and paintings about cigar. How did you discover your love for cigars? I used to live in Las Vegas in the United States, my friend owned a cigar business in Miami, he started sending me cigars to Vegas and I used to sell the hotels and distribute cigars to shops. Then I started smoking cigars, smell it, know more about it and read magazines and books about it. Here I started loving cigars and opened my own business in 1998. What is the real composition of cigars? The cigar is made of natural tobacco leaves: the Capa is the outer leaf, the Capote; a leaf under the Capa, and the Lihero is the dark leaf found inside the cigar. The Lihero gives the aroma of the cigar and its strength, more Lihero more aroma.. In your opinion, what are the basics on selecting a good cigar?

A good cigar is the one which has oily and shiny Capa. It should be soft, humid and should smell good. It should always be kept in a good atmosphere (humidity and cold temperature). Usually Cuban, Dominican and Nicaraguan cigars have the best smell and aroma. The cigars should not be hard and dry; they should be soft and humid, smell good and properly made.

The Lebanese circumstances are always good for tobacco, coffee and food and beverages places, since people always enjoy these types. Even if the economic situation is not well, a cigar smoker lights his cigar every single day.

Any future project or opening of a franchise outlet? Hopefully in the future I will be importing a new brand and franchise of cigars to the Middle East, a new extra fine kind made in the Dominican Republic. Moreover, we are studying a new project in Istanbul; opening a cigar lounge with a Turkish partner. Also I have a Lebanese-American friend in Florida, we are looking now to open a cigar lounge in South beach Miami.

We all know that cigars are trendy and sometimes carry a high price tag, but who in your opinion really knows how to smoke them? Cigars are trendy nowadays because a lot of people like to show off. A good cigar smoker is the one who takes off the paper or tag and enjoys it in a café or restaurant or even in his house, and the one who educates himself with information, books and magazines regarding cigars.

Do you have a good number of loyal customers? Are there special events or reunions for cigar lovers? Thanks God I have a large number of loyal customers who buy my special cigars from Escobal Cigars shop, they choose beautiful shapes, sizes and powerful aromas. We are going to start organizing events in downtown ““Lavida Havana”; it’s a cigar lounge which will start this winter to plan events and special nights for cigar lovers.

Why and how are cigars stored? Cigars should be stored in a cool and humid area, and in a Spanish cedar woods. If cigar is stored in a hot place then insects will ruin the cigar’s tobacco. The humidity should be between 70o and 76o. No humidity means that cigars will dry, break and crack. Cigars are like wine, they should be stored for a long time in the right storage, and they will become smoother and have an enjoyable aroma.

What do you think about RPN Guide? RPN is an excellent magazine or guide book. The colors along with the paper are from the best quality. It is a very professional company. I wish them all the best and hope they always do a great job.

How to Follow

Many people feel out of place when dining simply because they don’t know how to follow table manners, especially if they have been invited to a nice place. Admittedly, it is difficult to learn every point of etiquette at a glance, but here are a few general pointers. Remember, good manners never go out of style. Observe your host: Follow their lead. The key objective in learning table manners (etiquette) is to feel comfortable when dining with others and the host generally the leader at a dinner party or meal. If you are the host, don’t panic. Ensure you read up on etiquette before taking on the role of hosting and operate within the boundaries so that you are easy to follow. Wait for host to invite you to the table: She may assign you to a seat. Stand behind the chair as the other guests get assembled. When the host sits, take your seat. You’ll get extra points for helping others, such as the elderly, into their seats before you take yours. After you sit, pull your chair in to the table, without dragging it over the floor with a horrible scrape. Take your napkin from the table immediately, and place it neatly on your lap. Then sit up straight, just like Mom always tells you. And keep those pesky elbows off the table, too. Emulate your host: Put your napkin in your lap when you see them doing it. Match their rate of eating. (After all, no one wants to have an empty plate when their host is only halfway done with the dish.) Preparation: Soak the peeled shrimp with: 1/2 tablespoon of paprika A pinch of cumin Pinch of black condiment for half an hour. Boil the potatoes and cut them into circles. Then grill the potatoes until they become red. Cut the vegetables into thin cutlets (JULIENNE) and cook them with a little sesame oil, then add a pinch of ginger and finally the soy.

It’s a start, it’s a small exposure, and sometimes strange people come to me telling me about how much they love my voice, so it’s introducing me to people somehow. I even got to be on TV many times because of it! But it’s nothing but a start to my overall goals. I don’t want to be singing in pubs and nights for the rest of my life. And, I definitely have bigger dreams than this! What are your main strong points? My voice of course! My look or appearance might be an extra point for some people, but it’s definitely my Voice! What difficulties are you facing in your career in Lebanon? Well the most difficult thing, is that I don’t sing Arabic, and the foreign singing market in Lebanon is very weak. Do you write your own lyrics? Well I’ve wrote some, not sure how good I am though. And, I still didn’t show them to anyone. Is there anybody in the industry who you consider as a direct competitor? Not really! I might shine in my vocals or singing style, they might shine in their own way! Each singer has its own quality!

What’s So Special About ? Thanks to Gertrude Stein, we all know that “A rose is a rose...,” but that tautological thinking doesn’t apply to cookies – at least, not Macarons. Appearance: Picture a chocolate chip cookie. It’s lumpy and brown. Oatmeal raisin: Same thing. Most cookies aren’t that visually interesting. That doesn’t mean they’re any less tempting or delicious, but visual appeal isn’t their strong suit. Macarons are different.

Texture: Most cookies are either crispy or chewy. Some may be both, but most tend to one or the other. Not Macarons. The outside is a thin, delicate crust, with a subtle crunch that’s a distinct contrast to what’s inside the shell. While the outside is firm and dry, the inside is moist and chewy. So just when your mouth has prepared itself for a crispy experience, whammo! You take a 180 degree turn, and get a moist, chewy one. And as you chew, the two combine, and play off each other, with the contrast making each bite more intriguing. Taste: Just as a sauce enhances its dish, a Macaron’s filling enhances the taste of its shells. But a filling doesn’t have to ape the shells. In fact, contrasting fillings make a complex experience even more delicious. For example, orange shells with chocolate ganache, or lemon shells with blueberry curd, or chocolate shells with caramel, etc. The contrasts bring out the different flavors, making each more distinct, and the whole more complex: the flavors swirl, combine and play off each other as you chew, creating a dynamic taste sensation that’s unlike any other cookie. A mixture of Chocolate Génoise Ingredients: Ingredients: Eggs: 8 Soft sugar: 250g Flour: 200g Butter: 50g Pinch of Vanilla Cocoa powder: 60g Melted black chocolate: 100g Preparation Method: In a blender mix the sugar, eggs and the vanilla until they become like “Alkrabij” cream. Added is a mixture of flour with cocoa, and then mixed manually. Then we add the melted piece of butter. Pour the mixture in trays of 2cm thickness, after anointing it with oil and covered with butter foils. Place the trays in a preheated oven at a temperature of 300 degrees, for 10 minutes. Then, leave the trays out to be cool to be able to anoint the cake.

Butter Cream: Ingredients: Butter: 200g Albumin eggs: 2 Sugar: 120g Cold water: 50 liters Cold water: 50 liters

Preparation Method: Put sugar in water on low heat to prepare the sweet sugarbased syrup. In a blender, mix the egg whites until they become white, and then add sweet sugar-based syrup while mixing. While mixing add the butter to the blender. Then add approximately 100g of chocolate sauce, mix well and then put the cream in the fridge.

Presentation Method: Anoint the cakes with a thin layer of cream and wrap them like a sandwich. Then cut from both sides to get the shape of tree branch which is the Bûche’s form. Then anoint the entire cake with the remaining cream and design it with a big fork to give the desired shape. Finally decorate like you want or with your available decoration.

Note: You can add chestnut cream according to your taste (approximately 50 g).

Chef Imad Arawi, a proud Lebanese Chef who aims to have a better Lebanon with a better generation. Many unspoken ideas are discussed and talked about in this interview. Chef Imad spoke what was hidden and not debated before. Read this interesting interview and get to know him closer.

Tell us about yourself My name is Imad Arawi, known as Chef Imad Arawi. At first I studied L’Hôtellerie, and then Hotel Management in Francelle College when it had a coordinating program with Massachusetts University in USA; Hotel and Motel Management. In addition to L’Hôtellerie which I also teach at AUL University-Kaslik, and Hospitality Management and Food and Beverage Services, I also Studied Music at The Lebanese National Conservatory of Music, where I got a diploma in Piano and studied the Flute. The Culinary Education along with Music is where I highly find myself. Not to forget Carving Fruit, something which is rare in Lebanon and I see it as my hobby. I also have an office in Hamra, which gives consultancy for restaurants and hotels, and the new project we are working on in Hamra too, a Lebanese and International cuisine restaurant called “Taste of the Town”. I chose the name on purpose since it means “Nakhit al Balad”, and give richness and power to the place. How did you decide to become a chef? I can say that since childhood I was good in preparing food. I was known at home and between my friends that I was great in cooking. No one imagined that I would do L’Hôtellerie. I decided to become a chef in a funny coincidence. I was working with my cousin, he is a woodworker, I went to help him at his friend’s house and we spent 2 days there, the woman told me why don’t you major in L’Hôtellerie? It was not an adopted idea back then and many people stopped talking to me. The house’s owner was the only one who gave me the sign to enter this domain and encouraged me. What do you enjoy most about your work? Actually, everything. Firstly, there is a lot of art and knowledge in this domain. I am a type of person who loves knowledge, and hate working with something without focusing on its details. Secondly, sometimes I feel that food is everything in the world. If

Do you have a current ingredient or dish you can’t live without? Not to that extent, I don’t think there is a specific plate or dish which I dislike. I love everything, a chef can’t love a dish and hate another or else he won’t have a pleasing taste. A chef must love everything, cook everything and love to eat everything in order to satisfy all tastes.

I want to talk about food and cuisines, I should talk about their culture and art. For instance, when you travel, the first thing you notice and try in whatever country you are visiting is their food and cuisine and what they eat, it’s their culture. Moreover, there is a point which people should understand and take into consideration, what we eat is what makes us behave. The food we consume affects our brain, behavior and mood. You can’t say that a person who eats “Kebbe Naye” on daily basis is quit and not nervous. Food means one phrase it is The Culture of Every Country.

What kind of menu or cuisine do you advise a new opening restaurant to have? If in Lebanon, I will always advise them to have the Lebanese cuisine and mezze! I am a very picky and aggressive person regarding this subject; the Lebanese cuisine is not receiving its real valuable right neither in Lebanon nor in other countries. The proof is that we did not know how to show and spread the Lebanese cuisine worldwide. Whereas, the Italian, Japanese, Chinese, American even the Mongolian kitchen and cuisine became internationally famous and entered our houses and daily lives. As Lebanese we can everyday order or prepare pasta or pizza or sushi, whereas in other countries they can’t prepare nor order a Lebanese dish. Therefore, I believe food is an international economic issue, the proof of what I mean is that when for example a Japanese restaurants wants to open in Lebanon, its crew comes from Japan, they know how to help their economy.

How do you work on satisfying all tastes? A chef should be a modest and down to earth person; he should test himself/herself. It is known that Psychology students; in order to become doctors they are tested to see if they are good enough. Likewise, a chef should be tested and analyze himself, should be modest and flexible and have the good real taste for cooking to satisfy all perceptions. Later on, a chef will come to a point where he will have an international taste, meaning wherever he goes he will satisfy all tastes. You will never satisfy all savors with the décor of a certain place or with the music whereas with food you can, if ofcourse the chef has a good taste. According to millions of feedbacks, I have a good taste! What would you say is your secret for the perfect tastes? There is no one specific secret, there are secrets! The work presented with love is done with power and ability, will be amiable. I can cook because I’m forced to do it, but if I work in this way I won’t satisfy neither myself nor others. Moreover, when someone wants to work something out, he/she should have enough knowledge about it. For instance, chefs nowadays do not cook with olive oil, whereas I highly favor cooking with it, likewise chefs in Italy and France, they all use olive oil. We should not be blocked persons; we should have knowledge and must be open to new cultures. A chef must be an archive to everything; this person is responsible for my health and for what I consume since I trusted him/her. Finally, my secret is that I cook with love and from my heart, in addition to working with fresh ingredients to have the right taste!

What do you feel that students should focus on to get the most out of their culinary education? I believe we have a big problem with students nowadays, not just me, I discovered that with my friends’ students too and in different universities. I’d like to focus on this issue in Lebanon, awareness should be spread, and responsible authorities should know that there is a new uneducated generation coming up. Eventhough, students are taking university diplomas, many students are uninformed and ignorant. Students think they can easily take their certificates without even doing internships. Therefore, this year I made a new program and order with the university; a student will NOT graduate without doing his/her internship in various fields and places. This generation’s culture is hotdog, hamburger they do not know the right meaning of cuisine. Some are just talking the certificate just to say that they studied at university. Ministry of Culture along with Ministry of Tourism and Ministry of Education should spread awareness for this subject and do orientations.

How do you deal with negative comments? I don’t really have or hear negative comments. When I cook with love, give a valuable service and treat people in a welcoming way I won’t have negative comments. Therefore I have always believed that a person should behave with life and people in a serious yet loving manner (serieux avec amour) or loving yet serious manner (amour avec serieux). If we do so, we would be dealing with everything in an admirable way. 151

INGREDIENTS • 1 tablespoon kosher salt • 11/2 fluid ounces tequila • 1 fluid ounce orange flavored liqueur • 1/2 fluid ounce lime juice • 1 cup ice • 1 lime wheel

METHOD 1. Sprinkle salt on a small plate. Lightly wet the rim of a cocktail glass or margarita glass with a damp paper towel. Dip the moistened rim in salt to coat. Set aside. 2. Combine tequila, orangeflavored brandy, and lime juice in a cocktail shaker. Add ice and shake until chilled. Strain into a salt-rimmed cocktail glass or a saltrimmed, ice-filled margarita glass. 3. Warm and Spicy Autumn Punch Glass: punch bowl

Method: build Garnish: 2 clove-studded baked oranges

The aroma of this punch tells you that fall is in the air. Make a batch, and your home will have a fragrance that will alert anyone’s sense of smell.

INGREDIENTS • 2 oranges • 8 whole cloves • 6 cups apple juice • 1 cinnamon stick • ¼ teaspoon ground nutmeg • ¼ cup honey • 3 tablespoons lemon juice • 2 ¼ cup pineapple juice

METHOD Preheat oven to 350 degrees F (175 degrees C). Stud the whole oranges with cloves, and bake for 30 minutes. In a large saucepan, combine the apple juice and cinnamon stick. Bring to a boil, reduce heat to medium, and simmer 5 minutes. Remove from heat, and stir in the nutmeg, honey, lemon juice, and pineapple juice. Serve hot in a punch bowl with the 2 clove-studded baked oranges
