De Giusti Prosecco is rooted in a special terroir, steeped in the allure and history that are cherished and guarded in the valleys and in the villages dotted here and there. Glimpses of the past and the strong culture of its people are found in this fortuitous part of the ‘Marca gioiosa et amorosa’, or Treviso, with its age-old wine culture colouring and defining the landscape. It is an enchanting place, with castles, villas and monuments governed by the holy and solemn passing of the seasons, a cycle marked by man. It is a land renowned today as “The Wine and Prosecco Route”, the oldest wine trail in Italy, which pulsates with Orgoglio between Conegliano and Valdobbiadene. There is often a tendency identify prosecco as a sparkling wine. In reality, not all kinds of prosecco can be thus defined. Prosecco is basically a prized white wine and the vine species that gives it its essence is Glera, typical of the regions of Veneto and Friuli Venezia Giulia.

De Giusti Orgoglio can boast these DOC ingredients. Native to northeast Italy since Roman times, Glera is a white grape vine, rustic and vigorous with fine brown shoots producing large, long bunches of golden-yellow grapes. It is grown by pointing the buds vertically and eliminating excess ones by pruning and tying so as to achieve a microclimate that promotes the accumulation of aromatic substances in the grape. Its grapes make up 85% of DOC Prosecco, while the other 15% is chosen from Verdiso, Perera, Bianchetta trevigiana, Chardonnay, Pinot bianco, Pinot grigio and Pinot nero (fermented off the skins) varieties, all valuable for achieving the characteristic structure of the wine.

the method 酿制方法
De Giusti Prosecco follows the rules of offthe-skin fermentation in keeping with the tradition of Prima Scuola Enologica d’Italia, Italy’s first wine school, giving rise to the best form of local wine production marked by the absence of maceration, that is, contact between the must and the skins during the alcoholic fermentation phase. The grape harvest takes place in the first weeks of September, when the organoleptic ripeness (sugars, acidity and aromatic substances) is optimum for producing DOC Prosecco. It is an extremely delicate operation since the grapes must be kept intact to avoid spontaneous fermentation. After the harvest, the grapes are de-stemmed. Pressing extracts only the free-run must from the grapes. Off- the-skin fermentation occurs using selected yeasts which transform the sugars in the grapes into alcohol and CO2. This fermentation takes about 15/20 days at a temperature no higher than 18°C and preserves the most delicate aromas of the initial grapes.

After fermentation, the ageing process begins. In this phase transfer and filtering operations are carried out to achieve a clear wine: the base wine. Refermentation occurs when the base wine has clarified. After careful tasting, the different batches in the wine cellar are assembled: the wines, which were previously separated by origin, vintage and organoleptic characteristics, are now combined in precise proportions. The Italian method of refermentation involves the use of large pressurised tanks, autoclaves. They are filled with the wine together with the sugars and yeasts.This technique allows for the varietal aromas of the grapes to be preserved and translated into a fruity, floral wine. And here, the wine, thanks to second fermentation, acquires its famous bubbles. Bottling occurs at the end of second fermentation, and after 30-40 days our DOC Prosecco is ready to become Orgoglio.

DOC De Giusti Prosecco should be tasted young to appreciate the very best of its distinctive aroma and flavour, floral and fruity. The best time is one year after the harvest. It is recognisable for its amber colour, persistent foam and fine perlage.

extra dry Prosecco De Giusti Extra Dry is rich in fruity aromas of apple, pear and a hint of citrus, which nuance into a floral bouquet, soft yet dry on the palate. Excellent as an aperitif, it is also as ideal, served at 8-10° C, with pulse soups and seafood, pasta with light meat sauces, fresh cheeses and white meats.
