Fresh Summer Meal Idea One-Pot Smoked Sausage and Zucchini Noodles
1. Trim and spiralize or julienne the zucchini and set aside. 4 medium zucchini (about 2 pounds) 2. Heat a heavy bottomed pot over medium heat with 1 tablespoon olive oil. Add the 3 to 4 Holmes smoked sausages, sliced minced onion; stir and cook until soft. Mix in garlic and cook for 30 seconds, 1 tablespoon olive oil then add the Holmes sliced smoked 3 to 4 garlic cloves, minced sausage. Cook until sausage is browned; about 7 minutes. 1/2 onion, minced 3. Add the red pepper flakes, Italian seasoning and add the zucchini noodles. 1 teaspoon Italian seasoning Toss the noodles and sausage with pasta Crushed red pepper flakes, to taste tongs and cook until zucchini noodles are al dente, 3 to 5 minutes. Do not overcook 1 cup grape or cherry tomatoes, halved zoodles at this time or else they will become mushy. 1/2 cup (125ml) low sodium chicken or 4. Stir in the halved tomatoes and cook for beef stock one minute. Juice of 1/2 lemon + lemon slices for 5. Add chicken or beef stock and cook garnish until the liquids thickens a little; about 1 minute. Adjust seasoning with salt and Fresh parsley, chopped, for garnish pepper, add a drizzle of lemon juice, garnish with chopped parsley and lemon Salt and fresh cracked pepper, to taste slices and serve immediately.
