As a time to celebrate family and good fortune, many travel home to gather with their loved ones. The spring festival is a time to enjoy home cooked meals, share gifts, and celebrate traditions that have been passed down through the generations. Hong Kong Egg Tart

PREP TIME COOK TIME SERVINGS 5 MINUTES 30 MINUTES 4

INGREDIENTS

DIRECTIONS

1 stick butter (melted)

1.

Preheat oven to 350°F.

2.

Melt butter in a bowl, then let cool for a minute before adding 1 egg, powdered sugar, flour, 2 Tbsp. coconut milk and vanilla extract. Mix together until dough forms, roll it out on the counter or knead it with your hands.

3.

Divide dough into small pieces, then fit into the mini tart molds. Make as many as you can with the dough (4-5). Once your tart shells are ready, set aside.

4.

Boil 1 cup of water and then add in sugar to melt, turn off heat and let cool.

5.

In a bowl whisk 4 eggs, 6 Tbsp. coconut milk and Panda Brand Sweet Soy Sauce, then whisk. If there are bubbles, pour the mixture through a strainer and back into the bowl.

6.

Pour the filling mixture into the tarts about ¾ full, then place on a baking tray and bake for 30 minutes until crust is golden brown.

Classic Fresh Shrimp Rolls INGREDIENTS

DIRECTIONS

• 1/4 pack of thin rice noodles

1.

Cook 1 nest of rice noodles according to package directions; refresh under cold water and drain; set aside.

• Handful of both mint & cilantro leaves

2.

Using one at a time, place wrapper into hot water until it is soft and pliable (about 5-10 seconds).

• 1/2 cup cucumbers, matchstick-cut

3.

Remove wrapper from water and blot on a damp tea towel.

4.

Arrange lettuce, noodles, carrot, cucumber, and 3 mint leaves, in the middle of the wrapper. Above that, place 3 cilantro leaves and 3 shrimp in a row.

5.

Fold wrapper around lettuce and noodles, then continue rolling to cover shrimp. Fold in the sides of the wrapper and then continue to roll upwards to form a log shape.

6.

Serve with a side of Blue Dragon Thai Sweet Chili Dipping Sauce.

Pork Chop Stir Fry INGREDIENTS

For the pork: 3 tablespoons Kikkoman Less Sodium Soy Sauce 1 teaspoon canola oil 1/4 teaspoon ground pepper 1/8 teaspoon ginger root, grated 1 clove garlic, crushed and diced 1 pound pork loin, sliced into 1/4 inch strips For the stir fry: 4 cups Napa cabbage, thinly sliced 2 cups mushrooms, sliced 1 cup mung beans 1 cup snow peas, sliced diagonally 1/2 cup low sodium chicken broth

1/4 cup green onion, sliced 2 tablespoons Kikkoman Less Sodium Soy Sauce 1-1/2 tablespoons corn starch dissolved in 1 tablespoon chicken broth 1 tablespoon Kikkoman Sesame Oil 1 tablespoon canola oil 1 teaspoon brown sugar 2 cloves garlic, finely minced 2 celery stalks, sliced diagonally 2 carrots, grated 1 red bell pepper, sliced into strips 1 8 ounce can water chestnuts, drained and rinsed Optional: 2 tablespoon cilantro, chopped

INSTRUCTIONS In a medium bowl, add Kikkoman Less Sodium Soy Sauce, garlic, ginger, pepper and sliced pork. Cover bowl and marinate in refrigerator for at least 30 minutes Over medium-high heat, add 1 teaspoon of canola oil in heavy skillet or wok. Remove pork from marinade and add to heated pan. Stirring frequently, cook pork until no longer pink. Transfer to a plate, cover with aluminum foil and set aside. Heat 1 tablespoon of canola oil over medium-high heat and add garlic and green onion. Cook for about 15 to 30 seconds. Add celery, red bell pepper, carrots and cabbage and stir-fry until cabbage is soft, about 3 to 4 minutes. Next, add snow peas, mushrooms and water chestnuts. Stir to combine ingredients and cook for 3 to 4 minutes. Add 1/2 cup chicken broth, sugar, soy sauce and Kikkoman sesame oil to the pan and cook for about 3 minutes. Pour the corn starch-chicken broth mixture over the cooked vegetables and stir to combine. Add cooked pork and mung beans to the skillet and mix all ingredients together. Serve Pork Chop Stir Fry over steamed brown rice and garnish with cilantro, if desired.

Broccoli Beef INGREDIENTS

DIRECTIONS

• 1 pound beef round sliced for stir fry

1.

Stir together beef and teriyaki sauce in medium bowl. .

2.

Heat oil in large skillet over medium-high heat. Cook beef in batches until browned, about 4 minutes. Remove to a plate.

3.

Add broccoli and water to skillet. Cover and cook 2 minutes, until broccoli is crisp-tender

4.

Stir in beef, water chestnuts and remaining 1/2 cup teriyaki sauce; cook until sauce is bubbling. Serve.

Veggie-packed Chile Garlic Pork Lo Mein INGREDIENTS

DIRECTIONS

1 pkg. (12 oz.) NO YOLKS Stir-Fry Noodles ¼ cup canola oil, divided 1-1/4 lb. pork tenderloin, cut into 1/4-inch slices ¼ cup soy sauce, divided 2 Tbsp. corn starch, divided 1 can (14.5 oz.) chicken broth 2 Tbsp. sambal oelek (Asian chili garlic sauce) 1 Tbsp. hoisin sauce 3 large cloves garlic, minced 1 Tbsp. grated fresh ginger 1 small red pepper, cut into thin strips 1 cup sliced shiitake mushrooms 3 cups zucchini “noodles” 4 green onions, chopped ®

Cook NO YOLKS® Stir-Fry Noodles as directed on package. Drain; toss with 1 tablespoon oil. Combine pork and 1 tablespoon each soy sauce and corn starch in medium bowl; let stand 5 minutes to marinate. Whisk remaining soy sauce and corn starch, broth, sambal and hoisin in separate bowl until blended. Heat 1 tablespoon oil in large deep skillet on medium-high heat until shimmering. Add half of the marinated pork; let stand 30 seconds until seared, then cook 1 to 2 minutes or until done. Transfer pork to clean bowl; repeat with remaining pork. Wipe out skillet with paper towel. Heat remaining oil to same pan on medium heat until shimmering. Add garlic, ginger, peppers and mushrooms. Cook 1 to 2 minutes or until crisp-tender, stirring constantly. Add soy sauce mixture; cook and stir 3 to 4 minutes or until sauce is slightly thickened. Add cooked noodles, zucchini, pork and any juices to pan. Cook 1 to 2 minutes, tossing well with tongs until noodles are glossy and coated with sauce. Add green onions; mix gently. Tips:

Stir-frys work best when all ingredients are prepped ahead of time, since the cooking happens very quickly. Cooking meats and vegetables in batches keeps the pan relatively hot and helps to develop a nice sear, even when cooking on a standard home burner. Spiralized veggie “noodles” are now readily available in the refrigerated produce section of major grocery stores. This recipe uses zucchini noodles, but carrot or yellow squash noodles would also work well.
