BUFFALO CHEESE DIP AND PIZZA ROLLS ®

INGREDIENTS 1 package (8 oz) cream cheese, softened 2�3 cup chunky blue cheese dressing 1 to 2 tablespoons Buffalo wing sauce Sliced green onions, if desired 24 Totino’s® Pizza Rolls® frozen pepperoni pizza snacks, heated as directed on package
STEPS In 1 ½ quart microwavable bowl, mix cream cheese, dressing and wing sauce until smooth. ©General Mills Inc.
Cover; microwave on High 2 to 3 minutes or until hot. Sprinkle with green onions. Serve dip with hot pizza rolls.

EASY CREAMY CHICKEN ENCHILADAS Prep Time 20 minutes

INGREDIENTS 1 can (10 oz) Old El Paso™ red enchilada sauce 2 ½ cups shredded deli rotisserie chicken (from 2lb chicken) 1 ½ cups shredded Cheddar cheese (6 oz) 1 package (8 oz) cream cheese, cut into 1/2-inch cubes 1 package (1 oz) Old El Paso™ fajita seasoning mix or 2 tablespoons Old El Paso™ taco seasoning mix (from 1oz pkg) 10 Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch)
STEPS Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. Spread 1/4 cup of the enchilada sauce in bottom of baking dish. In medium bowl, mix chicken, 1 cup Cheddar cheese, cream cheese and seasoning mix with spoon; breaking apart cream cheese cubes. Spoon slightly less than 1/2 cup filling onto each tortilla. Roll up each tortilla tightly; place seam side down in baking dish. Drizzle with remaining enchilada sauce. Sprinkle with remaining 1/2 cup Cheddar cheese.

Cover with foil; bake 15 minutes. Uncover and bake 15 minutes longer or until bubbly and lightly browned.

"MEATBALL" BAHN MI SLIDERS Prep Time 10 minutes

INGREDIENTS For the Sliders:
8 Pure Farmland Plant-Based Homestyle “Meatballs” 2 Tbsp. vegetable oil 2 Tbsp. soy sauce 1 Tbsp. sesame oil 1 Tbsp. brown sugar 4 soft slider rolls, cut in half
Spicy mayonnaise Quick pickled carrots (recipe below) 3 radishes, sliced thinly ½ cucumber, sliced thinly ¼ cup cilantro leaves ¼ cup basil leaves
For the Quick Pickled Carrots: 1 large carrot, peeled and shredded, 1 cup warm water, ¼ cup apple cider vinegar, 1 Tbsp. granulated sugar, ¾ tsp. kosher salt
DIRECTIONS For the Sliders: In a small bowl, whisk together soy sauce, sesame oil, and brown sugar. Heat oven to 375 degrees F. Place meatballs on aluminum foil-lined baking sheet; lightly coated with nonstick cooking spray. ©2020 Smithfield Foods, Inc.
Bake 15 minutes; gently turn meatballs over. Pour soy mixture in the pan and bake for additional 8-10 minutes until sauce thickens and internal temperature of meatballs reaches at least 175 degrees F. To Assemble: Spread the spicy mayo on all slider bun bottoms. Top with pickled carrots, radish, and cucumber. Add meatballs and finish with herbs.

INGREDIENTS 1 package Eckrich smoked sausage 1 can refrigerated pizza dough 1 bag shredded mozzarella cheese
DIRECTIONS SLICE smoked sausage long ways and set aside. SPREAD pizza dough into thin rectangle. TOP with shredded mozzarella cheese and smoked sausage. ROLL pizza dough over ingredients and fold up ends. BAKE for 14-17 minutes at 375°F.
