t’s time to enjoy the busiest season of the year! From finding great gift ideas to family-fun events and yummy holiday recipes, the staff of RVL Magazine has been industriously gathering information to help you plan for the month ahead. As we wind down 2012 with our annual holiday issue, we wanted to take the time to recognize some of the Arkansas River Valley’s most inspiring people, including an everyday angel whose kindness I experienced firsthand. Sometimes it’s the small gestures that touch people in a big way. Such is the case with Val Fisher’s acts of generosity to patients at Saint Mary’s Regional Medical Center, for which I’d like to offer my thanks, now that I know her name. So thank you, Val, from me and so many others. On the cover is Mel White, a local artist known for her Santa portraits. RUSSELLVILLE ARTIST MEL WHITE BRINGS SANTA TO LIFE ON CANVAS

M

el White doesn’t remember a time when she wasn’t huddled over a canvas or paper with a paintbrush in hand. Her grandfather and aunt were both artists, and since she was 6 or younger, White, too, has been carrying on the family tradition of bringing the canvas to life. White graduated from Lakeside High School in Hot Springs and attended William Woods University in Missouri, where her love of all things artistic led to a degree in fine arts. After graduation, though, White found herself in various jobs not related to art. She worked as a waitress — and a live-in nanny, where her passion for creation led to an interest in cooking.

Through the years, she also continued to paint, mostly for herself and friends. Occasionally, she sold pieces here and there. It wasn’t until she painted a gift for a friend in 2006, though, that she became known in some local circles as “the Santa lady.” Word of mouth about White’s Santa paintings spread quickly. She even painted a portrait of the jolly old elf for a white elephant exchange at a local real estate agency’s office party. Rumor has it White’s creation was the gift everyone fought to take home.

PICTURES | Continued from page 7 When asked, White says she enjoys painting Santa and other custom gifts, but her true passion for art has more to do with expression than commission. “I like colors and textures and just painting an emotion,” White said. “It’s just always been a way for me to express myself creatively. When I’m painting just for myself, the final creation is more abstract than a portrait.” As for being known as “the Santa lady,” she said that’s OK, too. “Painting Santa is fun,” White said. “I’ve painted just the face and I’ve done Santa in a sleigh holding a present. I did one for a friend, a large one, of Santa holding his finger to his mouth, kind of saying ‘Shhh, don’t tell.’ Painting Santa really is fun, and it’s something everyone enjoys and relates to.” Left: A single painting completed for a friend kicked off a surprise career for Mel White, now known in some circles as “the Santa lady” for her portraits of Kris Kringle.

A RUSSELLVILLE WOMAN KEEPS THE HOLIDAYS IN HER HEART — AND HOME — YEAR-’ROUND

R

ita Emmons of Russellville, whose coworkers, family and friends say she just might be the most cheerful person they know, has a special, not-so-well-kept secret to staying positive year-’round: Emmons celebrates Christmas each and every day. She doesn’t exchange gifts or attend Christmas Eve services at church, of course. She does, however, keep her Christmas tree up, her home decked out and her table set for the red-suited man himself — 365 days a year.

Emmons likes to tell people that she started keeping her tree out because it was just easier than taking it down, claiming that decorating and un-decorating her home each year was time-consuming, but those who know her best say that isn’t the real reason. Rather, Christmas time is all the time for Mrs. Christmas, Emmons. She began her unusual tradition in 1954, the year prior to her high-school graduation. “I just like it,” she said of the habit during a recent interview. “That’s really all there is to it. If I come home from a bad day or I’m sad, all I have to do is step through my front door and I’m happy again.” Emmons’ co-workers at Area Agency on Aging of West Central Arkansas in Russellville confirm the fact that Christmas does indeed seem to work wonders on Emmons’ mood. Her office is decorated with Santa, angels and other holiday items. She is well known for wearing Christmas clothing from Thanksgiving through New Year’s Day — she has enough Christmas outfits that she never wears the same one twice. “Miss Rita, she is just the most awesome person. She has Christmas at home and in the office all year,” friend and coworker of six years Donna Reynolds said. “She has such a sweet

spirit about her that brings joy to everybody that she meets. Her Christmas spirit raises our spirits. Whether it’s her cheerful attitude, her decorations or her Christmas outfits, she just makes every day better.” Maybe that’s because it isn’t just happiness, but love, that Emmons associates with Christmas. She grew up on a farm, part of a large family, and Christmas was the one time of year everyone came together and the outside world ceased to exist, at least for a little while. “I don’t remember a time that we didn’t all celebrate Christmas together. Even after we all left home, we all came together to celebrate as a family,” Emmons said of her younger years. “We didn’t live high on the hog, but we always had plenty to eat, and gifts under the tree. Santa has never missed filling my stocking in 73 years, so I must be doing something right.” Emmons said Thanksgiving came during harvest time on the farm, so while it was acknowledged, it didn’t carry the same special memories that spending time as a family on Christmas did. Her love of Christmas and keeping the spirit alive all year started small and grew through the years as she began collecting more Christmas items. Family and friends still joke that Emmons is the easiest person in the world for whom to buy a gift, although her displays have downsized in recent years, reduced from seven fully-decorated Christmas trees to just one. Its ornaments, like other decorations she displays, carry memories that, just maybe, are what makes them so special to Emmons. “People think I’m just the crazy Christmas lady sometimes, but really, I’m just sentimental and enjoy being surrounded my family, living and dead, all the time,” Emmons mused. “My little world of Christmas keeps me grounded and connected to those around me. Does it make me happier than someone else? I don’t know, but I think everyone gets a little happier when they hum a Christmas carol or think of their favorite Christmas memory. Lucky for me, I don’t have to wait until Dec. 25 every year to have those feelings.”

Locals in the know offer ways to celebrate the holidays in style By Heather Sprinkle • Photos by Joshua Mashon

t

his holiday season, fashion is all about expressing yourself. Whether it’s the perfect dress matched with leggings, or the blouse with more bling than the disco ball in Times Square, fashion experts predict this season will be one of bright and muted colors combined with metallics in every hue. Bethany Swindell, owner of Lavish on Main Street in Russellville, said women should focus on what feels good rather than what’s trendy when shopping for the perfect party dress for Christmas or New Year’s Eve. “If you’re going to a party, you want to feel comfortable,” Swindell said of choosing holiday outfits. “If you’re worried about a skirt hiking up or a shirt slipping down, you’re not really enjoying the party. Women should choose something that works well for their body types, but also their personality types. Comfort really can be stylish.” Swindell suggested choosing a dress that is appropriate to wear with leggings underneath, or a sparkly shirt to add pizzazz to everyday jeans. And what color is “cool” this holiday season? “What color isn’t in this season? We have some great blouses perfect for office parties that are neutrals, but when paired with the right accessories, they really are perfect for any occasion,” Swindell said. “If someone likes a lot of color, then go for bold choices and accent with something more subtle. The opposite is true for someone more comfortable in black and other muted neutrals. You can add color and sparkle to any outfit, and accessories are a fun way to make any outfit season-specific. Mittens, scarves, shoes and jewelry can make anything look like a Christmas wish.” Swindell added that layering is a good idea in the winter. She suggested looking for blouses that work well with leather jackets and sweaters, but then make a “wow” statement when worn by themselves. See FASHION on page 20

What’s a great holiday outfit without great holiday hair? FASHION continued from page 19

f course, the crowning glory to any outfit is the perfect hairstyle or holiday up-do. Terra Wilmoth, owner of Tangles Salon in the City Mall, said a hairstyle can change any outfit from casual to fancy, or vice-versa. “If you’re going to a fancy party, a classic

up-do is always great,” Wilmoth said. “But even at a fancy party you might want to pair a cocktail-type dress with a more casual up-do to create the perfect holiday style that says fancy, fun and flirty at the same time.” Wilmoth suggested a casual bun for wavy hair or a side-“ponytail” style for longer hair. Wilmoth also echoed Swindell’s fashion advice. “Wear something that you’re comfortable with,” she said. “If you’re constantly checking to make sure each little hair is in place, then you’re not focusing on fun or friends. Hair really is an accessory, and holiday parties are the perfect time to experiment with new looks.” For short hair, a slightly tousled look adds texture and gives the illusion that the style

took more time to create than it actually did, Wilmoth said. The finishing touch for any holiday hairstyle? A little bit of glam, of course. “It used to be that only young girls wore sparkly barrettes, but now there are many options appropriate for women of all ages,” Wilmoth said. “For shorter hair, just one little barrette with some bling on it worn above the ear on one side is the perfect accent. For longer hair, put one above the ear or on the back or side by a ponytail. There are just so many options. A little bling on top is the crowning glory and can add elegance to plain outfits.” See FASHION on page 22

he right hairstyle might be the crowning glory, but Shelly Kitchens, owner of Merle Norman in the City Mall, said beautiful skin is the foundation for any outfit and occasion. Two common questions she’s asked each holiday season are whether glitter is only for little girls — and whether bronzer is needed to create the illusion of a perpetual tan. Kitchens said that while she rarely encourages woman to wear glitter, typically women do wear shinier eyeshadow or go for a more dramatic look with eye makeup come the holidays. “The smoky eye is always the big deal during the holiday, or really anytime for parties,” Kitchens said of makeup trends.

But “instead of wearing glittery-type makeup, women should choose makeup that helps skin appear luminous or almost lit within. And bronzer is something used to add warmth, or can be used to add contour, but there is no need to look like you’ve been on the beach.” Kitchens’ favorite look for the holiday season involves color — in clothes, makeup and accessories. Vibrant eyeshadow worn in a subtle way is a current trend, and Kitchens said a variety of hues, from neutrals to brights, are trending in clothing. Merle Norman carries make-up, accessories and clothing. One of the best accessories, Kitchens said, is healthy skin. She advises women to

GETTING TO KNOW

‘Santa Claus’ Richard Ruble has filled in for the jolly old elf himself for nearly two decades By Preston Tolliver

R

ichard Ruble doesn’t spend the holiday season like many of us, fighting our way through herds of shoppers, frantically searching for that perfect gift. In fact, legend has it he’s busy with other preparations — like overseeing a merry band of elves who make toys for children worldwide. Ruble, born in Wheeling, Va., and an Arkansas River Valley resident since January 1979, suits up every year to give children a better gift than that newest toy or gadget — he lets them meet “Santa Claus” while listening to their wishes and counting their smiles. Ruble has played Santa for nearly two decades. He started putting on Saint Nick’s clothes to stand in for his friend Butch after the other man suffered a heart attack. Back then, Ruble worked with the River Valley Circle of Friends, supporting the Arkansas Children’s Hospital. Each year, they hosted “Breakfast with Santa” at Sequoyah Elementary School, where Butch was Santa and Ruble helped cook. Ruble stood in for Butch after the heart attack — and has been doing it ever since. “My hair has been right since my mid-20s,” Ruble said in a recent interview. “It took my beard a little longer.” See what else “Santa” has to say: RVL: Is the holiday season truly the “most wonderful time of the year”? Why? RR: Yes, I believe it is. We get to celebrate the birth of our savior, Jesus Christ. Families get together and peoples’ hearts are warmed, and they get a share-and-giving feeling. very year, Frank Campbell greets shoppers with a smile, listens to their stories and works to help get them into the holiday spirit. He’s not an employee at a big-box retail store. Instead, he volunteers his time, sometimes 40 hours a week or more, ringing a bell for the Salvation Army, helping raise money for the less fortunate. Campbell, whose resume includes professions ranging from auctioneer to real estate agent to entertainer — and even a minor part in the film “Frank and Jesse” — has spent the last five holiday seasons ringing his bell in a big way, raising an estimated $20,000. Last year, he heard tale of a record for continuous ringing of the bell. He decided then he wanted to try to beat the record, which currently stands at 60 hours, up from 36. Campbell remains undaunted. “I still think I’m going to attempt it,” he said. “Even if I get halfway, I’ll be happy.” RVL: Why do you want to ring the bell for 60 hours? FC: I want to bring to light the importance of volunteerism and how important our Kettle Campaign is to serve the needs of the community. It comes from the people to support the people, and with the way our economy has gotten to be, more and more people are needing help. RVL: How did you get started volunteering with the Salvation Army? FC: I knew how important it was for them. I didn’t know what all was entailed with it, but I knew how important it was. I wanted to know more about it and find out more about the programs. I wanted to know myself where and what they did, how the money was spent and I wanted to see how I could do more. RVL: Do you have a favorite memory of ringing the bell? FC: There’s several stories. One is about this lady who reunited with her mother after 25 years. They’d been searching for each other, and I guess got separated around childbirth. After her and her husband spent a whole lot of money, they finally found each other, and they happened to come through.

Photos by Joshua Mashon I guess it’s just all the stories that I get to hear of how the Army has helped (people), whether it was young people or old people who have served in the wars, from present-day wars to wars from long ago … It’s helped quite a few people, and there’s always a story to hear. Every year, I hear a few more stories of how people have been helped by the Salvation Army. RVL: Why is it important to volunteer during the holidays? FC: Starting with Thanksgiving, when we’re trying to express how thankful we are for things we receive, it’s a time to realize that a lot of people have it worse than we do. We may gripe about our own problems, but there are a lot of others who are suffering more than we are. RVL: Is there an increase in need from impoverished families during the holiday season? FC: There is an increase in need, definitely. It’s a very stressful time of year, and a lot of people go through a lot of stress during the holiday season. They’re overloaded. There are bills from all year piling up and it’s a time to reflect back and try to be grateful for the things that we do have, and not ungrateful for the things that we don’t have. The holiday season seems to be the time of the year that people are looking to do not only for themselves, but to do for others, and the holiday season is a good time to do things for others.

atti Butler of Russellville heard the call to serve at a young age, and for 23 years she has served various communities as a social worker and volunteer. Three years ago, she formally answered the call to ministry and currently serves as the associate pastor for outreach ministries at First United Methodist Church (FUMC) in Russellville. She also has duties at the University of Arkansas for Medical Sciences in Little Rock. One of Butler’s community service projects is coordinating the community Thanksgiving meal at FUMC, a tradition which began 10 years ago. Each year, she and her husband, Paul, and daughter, Ellie, spend the better portion of Thanksgiving Day assisting with the meal. RVL: Why do you volunteer? PB: Because I don’t know what else to do. Volunteering is a val-

ue that was passed down to me from my mother, grandmother and aunts. I was taught community service and volunteering are how you show love to others and represent Jesus to others. Each year, more than 100 volunteers serve more than 1,000 residents in the community during the Thanksgiving meal. We have people that help coordinate and fundraise and then people to cook, packing meals to go, delivering meals, cleaning, cutting pies and greeting everyone as they come in. I really can’t imagine celebrating Thanksgiving any other way. Being part of a community doesn’t mean putting on your bib and waiting to be fed, it means putting on your apron and looking for ways to serve. RVL: What other volunteer activities are you and your family involved in? PB: Most of our volunteer activities center around church. My husband, daughter and I are very active in the Noah’s of Arc Walk to Emmaus Community and Chrysalis; Paul is on the Adullam board, and we all three volunteer at More Than Manna on Sunday evenings. Each of us has helped prepare and serve the free meal, and all of us, including Ellie, have preached at the More Than Manna service. RVL: Why is volunteering within the community important, especially during the holiday season? PB: The community would not be a community without volunteers. We all have a responsibility to serve and give back, whether it’s in July or December. I believe people are hungry all year-’round, but

it seems that during the holiday season many of us long for a way to feel close to other people, and volunteering and serving make that feeling very real. RVL: What’s the best thing about the holiday season? PB: Each year, my husband and I arrange our work schedules so that we can take time off when our daughter is out of school to use as family time. We just hang out at home or go on trips or volunteer together. It doesn’t matter what we’re doing, because we’re doing it together. We use the time to recharge and get or priorities straight for the coming new year. RVL: What’s your favorite holiday activity? PB: Serving Thanksgiving dinner to 1,000 community members and then going home as a family to put up our Christmas tree. RVL: Do you have a favorite holiday food? PB: Yes, I love a particular cookie and pie that my husband makes. He makes yummy white chocolate-pecan-cranberry cookies and a chocolate truffle pie. I think my neighbor can smell when Paul cooks the pie, because she always ends up at our front door. We always take her one! RVL: What is your favorite Christmas memory? PB: Two years ago, we had a joint Christmas service at our church with the Alpha y Omega congregation. It was the late, midnight service, and we had hymns in English and Spanish. When we walked out into the clear night air with all the stars shining down, I knew God’s presence was real, not just in the world, but right here in Russellville.

angel Dover woman brings light to cancer center through simple acts of kindness

T

he cancer center at Saint Mary’s Regional Medical Center is home to an everyday angel. Val Fisher of Dover was introduced to the cancer center — and it to her — in February 2010 after her husband, Roy, was diagnosed with lung cancer. Roy Fisher noticed the nurses provided snacks for patients receiving treatment, and he began bringing snacks as well. When he learned the nurses needed a new refrigerator, he procured a donated appliance from Peters Family Living. Then, when he learned that the microwave burned the popcorn, something the patients didn’t care for, he took the center a new one. Fisher’s husband lost his battle with cancer after just nine months. The spirit he brought to the center, though, lives on through Val, who despite her regular presence there, offering what comfort she can to patients, is quick to point out it is the center’s nurses and doctors who deserve the real credit.

We caught up with Fisher to ask her a few questions about why she does what she does. RVL: Why do you volunteer? VF: Because I firmly believe in giving back to the community. My husband was the best giver I’ve ever known. He truly exemplified the Bible verse “Love thy neighbor as thyself.” He taught me how important it is to give back and how rewarding it can be to help others when you’re in a position to do so. RVL: What other volunteer activities are you involved in? VF: I’m on the CASA board, the Human Care board at Saint John’s Lutheran Church,

I lead a Bible study and volunteer with Rotary when they have functions. RVL: Why is volunteering important, especially during the holiday season? VF: You find around the holiday season you’re able to see more and more people who are in need. Every year, my husband gave the owners of Rose Drug between $500 and $1,000 to give to a needy family in their church. I do that now in his stead. There are a lot of kids that go without Christmastime. We do the angel tree with Main Street Mission.

That’s why you don’t see them until they land, and that’s also the way they get around the world in one night. RVL: How do you fit down the chimney? RR: That’s a secret. RVL: How do you like your hot chocolate? RR: Warm. RVL: What’s your favorite holiday snack? RR: Chocolate-chip cookies. RVL: When and where do you “Santa”? RR: Wherever there are children. RVL: What’s your favorite/funniest “Santa” memory? RR: There are many. For one, I have a granddaughter who lives in Erie, Colo. She came for Thanksgiving a few years ago. I suited up and came into the den. She jumped up and shouted “It’s Santa!” She went home and told all of her little friends that her Pappy was the real Santa. RVL: What’s the best thing about being Santa? RR: Seeing the excitement in the eyes of the children when you talk to them.

RVL: What’s the best thing about the holiday season? VF: Family! Family is so important. If you don’t have someone to spend time with at the holidays, it can be a depressing time. A few years ago, we had an exchange student from Taiwan spend Thanksgiving with us. She’s become an adopted daughter to us and even now that she lives in Texas while she’s working on her doctorate at Texas A&M, her and her two sons will spend Thanksgiving with us. She named both of her two boys after Roy and myself. RVL: Do you have a favorite holiday food? VF: Yes, my favorite holiday food remains the old staple of candied sweet potatoes. RVL: What is your favorite Christmas memory? VF: When I was a little girl, Mom and Dad couldn’t afford to buy us new dolls. Mother spent months and months making 10-15 outfits for our dolls and they were spread around our beds when we woke up Christmas morning. That was precious.

Easy Sugar-Free Pumpkin Pie You will need: • 1 small box sugar-free butterscotch instant pudding • 1 small box sugar-free vanilla instant pudding • 2 c. milk • 1 small can Libby’s pumpkin puree • ½ tsp. pumpkin pie spice • 1 pre-baked pie shell, cooled In a large bowl, mix boxes of pudding mix and milk. Fold in pumpkin and spice. Pour into pre-baked pie shell and chill until firm. This pie can be frozen; simply thaw 15 minutes before serving. Cranberry Pork Loin You will need: • 16 oz. can cranberry sauce • ½ c. cranberry juice • ½ c. sugar • 1 tsp. dry mustard

• ½ tsp. salt • 1 (3 lb.) boneless pork loin • 2 tbsp. cornstarch • 2 tbsp. cold water

Combine cranberry sauce, juice, sugar, mustard and salt. Mix well. Place pork loin in crockpot. Pour cranberry mixture over pork loin; cook on high for 7 hours. Remove pork loin. Place on platter. Pour sauce from crockpot in saucepan. Combine cornstarch in cold water. Mix well. Add cornstarch mixture to sauce in pan. Cook. Stir until thickened. Pour sauce over pork. — Dusqua Moore, controller

THE STAFF AT PHIL WRIGHT AUTOPLEX OPENS ITS PANTRY Mexican Lasagna You will need: • 1 lb. ground hamburger • 1 package tortillas • 1 large jar salsa • Sour cream • Shredded cheese Brown hamburger; drain. Line large casserole pan with tortillas. Spread layer of sour cream. Distribute half of hamburger meat across sour cream. Spread layer of salsa. Sprinkle with layer of shredded cheese. Repeat. Bake at 350 degrees for about 20-30 minutes or until melted. — Regina Hyber, administrative assistant

Crockpot Dump Cake

Chocolate Pie with Meringue You will need: • 1 c. sugar • 3 tbsp. flour • 2 tbsp. cocoa • 3 egg yolks

• 2 c. half-and-half • 1 tsp. vanilla • 2 tbsp. butter • Prepared pie crust

You will need: • 1 box yellow cake mix • 1 stick butter • 1 can blueberry pie filling (or other flavor)

Mix together sugar, flour, cocoa, eggs and half-andhalf, then heat to boiling until thick. Add vanilla and butter. Pour in pie crust.

Empty the pie filling into the crockpot. Mix together the yellow cake mix and butter by hand until there is no more powdery mix evident. Crumble the mix over the top of pie filling, making sure to completely cover pie filling with mix. Cook on low setting 2 ½ to 3 hours. No stirring is necessary.

For the meringue: • 4–5 egg whites • ¼ c. sugar

Best served warm; add ice cream as desired.

Bake until egg whites turn.

Beat egg whites until stiff; add sugar and beat. Put on top of pie mixture.

Broccoli Cheese Casserole

Baked Beans You will need: • 2-3 cans pork and beans • ½ c. chopped onion • ½ c. chopped green bell pepper

• 4 slices of cooked bacon (reserve grease) • 6 tbsp. brown sugar • 6 tbsp. ketchup • ½ tsp. instant coffee

Fry bacon in skillet; remove and drain it on paper towel. Brown onions and bell pepper in bacon grease. Mix in the brown sugar, ketchup and instant coffee. Stir all until well mixed and heated. Put beans in a casserole dish and add the onion/pepper and mix well. Crumble bacon into pieces and mix through beans. Bake at 350 degrees for 45–60 minutes.

You will need: • 1 package frozen, chopped broccoli • 1 can cream of mushroom soup • 1 jar Cheez Whiz • ¼ cup margarine • 1 large onion, chopped • 2 c. cooked Minute Rice • ¼ cup water Cook onions in margarine. Add Cheez Whiz, soup and water. Stir until melted. Combine rice with melted onion mixture. Add broccoli. Pour all into baking dish. Bake at 350 degrees for 20 minutes.

Sausage Stuffed Jalapenos You will need: • 1 lb. bulk pork sausage (hot or mild) • 1 pkg. (8 oz.) cream cheese, softened • 1 c. (4 oz.) shredded Parmesan cheese

• 22 large jalapeno peppers, halved lengthwise and seeded • Ranch dressing (optional)

In a large skillet, cook sausage and drain. In a small bowl, combine the cream cheese, Parmesan and sausage. Spoon about 1 tbsp. into each jalapeno half. Note: Wear disposable gloves when cutting peppers; oil can burn skin. Place stuffed peppers in two ungreased 13-by-9-inch baking dishes. Bake uncovered at 425 degrees for 15-20 minutes or until filling is lightly browned and bubbly. Serve with ranch dressing, if desired. — Dusqua Moore, controller

Smashed Potatoes You will need: • 5 whole large red potatoes • 1 stick butter, softened and cut into pieces • 1 c. pepperjack cheese, grated • ¾ c. sour cream • 5 slices bacon, cooked and crumbled • 2 whole green onions, sliced, plus more for topping • Salt • Fresh ground pepper • ¾ c. French-fried onions (in the can) Bake potatoes in oven at 400 degrees until tender. Add to a large bowl and mash with a potato masher. Immediately add the softened butter, cheese, sour cream, bacon and green onions. Stir together. Add salt and pepper to taste. Add the French-fried onions and fold in. Serve hot. Add more sliced green onions on top if desired. Serves 4, but can be doubled. — Sharon Duvall, warranty clerk

Cinnamon Rolls You will need: • 2 cans Crescent Rolls • 2 pkgs. cream cheese • 1 c. sugar

• 1 stick of butter • Cinnamon sprinkles • Pecans to sprinkle over top (optional)

Place one can of rolls in bottom of a 13-by-9-inch baking dish. (Roll out roll and lightly press edges together.) Mix cream cheese and sugar with mixer. Spread over first layer of dough. Spread another can of rolls over mixture to make a top layer. Melt butter and pour over the top layer. Sprinkle sugar and cinnamon on top. Bake at 300 degrees for 30 minutes. — Christi Aday, cashier

Cook macaroni until very firm. Drain. In a small bowl, beat egg. Meanwhile, in a large pot, melt butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for 5 minutes, whisking constantly. Pour in milk, add dry mustard and whisk until smooth. Cook 5 minutes until very thick. Reduce heat to low. Take ¼ cup of the sauce and slowly pour it into the beaten egg, whisking constantly. Whisk until smooth. Pour egg mixture into sauce, whisking constantly. Stir until smooth. Add cheese and stir to melt. Add salt and pepper to taste. Pour in drained, cooked macaroni and stir to combine. Pour mixture into buttered baking dish, top with extra cheese and bake for 20–25 minutes or until bubbly and golden on top. — Sharon Duvall, warranty clerk

omen in and around the Arkansas River Valley enjoyed a girls-night-out event on Oct. 16 and 18, but instead of dinner and a movie, they were treated to mocktails and mammograms. In conjunction with National Breast Cancer Awareness Month, Saint Mary’s Regional Medical Center offered mammograms after regular business hours. Participants enjoyed martini mocktails, gourmet cupcakes, pink carnations and door prizes. etween 7,000 and 10,000 people attended the 21st annual Downtown Fall Festival and Chili Cook-off Oct. 27 on the streets of Russellville’s downtown historic district. The day-long celebration included entertainment, crafts, a costume contest, an auction, a pie-and-cake contest, a carand-truck show, the Canine Capers dog show, exhibitors, the Tour de Pumpkin bike ride, a chili cook-off and more. The annual fun — fundraiser, that is — is sponsored by Main Street Russellville.
