he Duke and Duchess of Cambridge weren’t the only ones celebrating their pregnancy news last week – after hiring a surrogate, Kim Kardashian and Kanye West are reportedly expecting their third child in January! “The entire family are over the moon,” reveals a source. “Kim was looking for a surrogate for months until recently when she found the perfect candidate.” Earlier this year, it was reported the pair had chosen surrogacy as the best option for them to give their four-year-old daughter North and 21-month-old son Saint another sibling, because of Kim’s health concerns. After both her children’s births, the reality star suffered from

a medical condition called placenta accreta, which can lead to life-threatening haemorrhages for the mother. Doctors had warned her of the risks of carrying another child. It was also reported the surrogate would be paid $56,000 and, during the pregnancy, would be banned from smoking, drinking alcohol, taking drugs, eating raw fish and using hair dye or hot tubs. “They want everything to be perfect and for the baby to be extremely healthy,” the insider explains. “They don’t want any complications, and Kim is providing an ideal eating regimen and diet so everyone knows what the baby is consuming before it’s born.”

At the time Woman’s Day went to print late last week, Kensington Palace was said to be just days away from announcing another joyous occasion – Prince Harry’s wedding to Meghan Markle. As Woman’s Day revealed last month, Harry, who turns 33 this week, proposed to his love on her 36th birthday, having whisked her away for a romantic holiday in the remote depths of Botswana. Last week Meghan seemed to confirm a wedding is imminent, speaking for the very first time about her royal romance in a tell-all interview with Vanity Fair. p early in his new bedroom at Kensington Palace last Thursday, cheeky Prince George was reportedly bursting with excitement on another historic occasion for the royals – his first day of school! Having packed his navy backpack the night before, Kate and Wills watched on with a mix of pride and trepidation as the four-year-old headed off to meet his classmates at Thomas’s Battersea in London for the very first time. But George was raring to go – and by all accounts, he was on his best behaviour! Thomas’s takes both boys and girls from four to 13, with fees around $27,000 per year. As well as the usual subjects, the school offers ballet lessons, skiing and pottery. As far as the canteen goes, George will be eating only the best. The menu, which changes every three weeks, includes lamb ragout and baked smoked mackeral served on a bed of puy lentils. Now that’s what we call food fit for a king!

fter hiding their love for four long years, last week Katie Holmes finally stepped out hand-inhand with her boyfriend Jamie Foxx. And she revealed another surprise – they’re having a baby! Katie allegedly signed a five-year contract not to date publicly after her divorce from Tom Cruise in 2012. In return, she received full custody of their daughter Suri, as well as a multimillion-dollar payout. Fearful of breaking the contract, she and Jamie took precautions never to be seen together. But with the agreement ending on July 9, things couldn’t have been more different as they holidayed in the Hamptons last week. The actress and 49-year-old Jamie frolicked on the beach, allowing photographers to snap away as the radiant mum-to-be showed off her small baby bump.

It’s thrilling news for Katie, 38, who has always dreamed of expanding her family and giving 11-year-old Suri a sibling. And not only is Suri supportive of the relationship, apparently she’s the one who’s been pushing her mum to make things official! “Suri was desperate to have a brother or sister and has been pushing Katie and Jamie to stop hiding their romance,” a friend of the actress tells Woman’s Day. “She wants them all to have days out and holidays together.” Friends say when Katie found out she was expecting Jamie’s baby, she had no doubt the time was finally right to take the next step. They add she’s been gushing that Jamie, who is already father to Corinne, 23, and eight-yearold Annalise, is “a great dad”. “He’s caring, kind and considerate,” says the insider. “He dotes on Suri and his own

daughters. Above all, there’s no drama with him and he lets Katie be herself. In short, he is the complete opposite of Tom!” Katie herself has been very open about just how much joy motherhood has brought her. “My child is the most important person to me,” she said of Suri in April. “I feel so blessed to do what I do, but there’s nothing in the world better than watching your child succeed.” Sources close to the loved-up couple reveal they began trying for a child as soon as the fiveyear contract expired. And even though Katie’s starting to show, they’re still not at the 12-week mark, so will wait a little longer to announce their happy news. ticks gave up everything to be on The Block and even thought he might miss the birth of his second child. So after several weeks on the show with his teammate, friend Wombat, 37, he was delighted to be reunited with his family just in time for the birth of son Lani Chase Crocker. He even had time for a Maccas drive-through on the way to the airport! “I did the same on the way to Kanoa’s birth,” says the proud dad as he cradles his newborn baby. Sticks, 31, made the mad dash home from Melbourne to NSW’s Sussex Inlet by helicopter, where he was reunited with his wife Terri and son Kanoa, 18 months, just before Lani’s arrival. “We’d planned on me not being there for the birth, so Terri’s mum was on standby,” says Sticks, a carpenter and photographer. While Terri, 32, was prepared to give birth without her devoted husband by her side, she says she

was so glad he made it. “I was on edge for the last few weeks so when I heard Sticks was coming home it was a relief,” she says. Lani arrived happy and healthy two days after his due date and it was a relatively easy birth. “I didn’t have any drugs, just a bit of gas,” says Terri, adding it was love at first sight when she met her baby. “You think you don’t have more love to give after the first one but he’s opened up our hearts even more!” And larrikin Sticks was given a very important job once Lani arrived. “I cut the umbilical cord!” he says proudly, adding, “It was like cutting a bit of squid.” The family hope the auction of The Block’s Elsternwick property will help with their mortgage and give them the boost they need to enjoy holidays with their boys. “Coming home reminded us why I’m on the show and how it could potentially change our lives.”

ith tension in their marriage at breaking point, tennis champion Lleyton Hewitt is building a new life for himself overseas after flying out of Melbourne to escape the constant fights and bickering with wife Bec. He’s been soaking up the sun in the Bahamas, swimming and playing golf, on top of hanging out with his tennis buddies in New York. He’s revelling in his freedom, while Bec is looking under increasing strain as she struggles to cope with all the pressures of motherhood in Melbourne. “They argue a lot, but it’s been worse lately as he’s been spending more and more time drinking with his mates to avoid home – and Bec – who hates it when Lleyton drinks,” reveals one close friend. “His home life is filled with conflict a lot of the time.” Lleyton, 36, was last seen in Australia on August 5, and has since been posting updates on life in the Bahamas as he prepares for his new career at an elite tennis academy. He has no plans to rush home to Melbourne, meaning he and Bec are effectively apart for almost six weeks. “He’s in New York for a week or so, then he heads to Belgium for the Davis Cup,” says the friend. “It really is like he and Bec are leading separate lives. He’s set himself up in the Bahamas and she’s been left in Melbourne.” The fairytale ended long ago for Lleyton and Bec, 34, who

fought constantly over their gypsy lifestyle when he was competing. They hoped a move to Melbourne would save their marriage. But that hasn’t been the case and the strain began to show this year after Bec was caught having a number of very public meltdowns, while Lleyton has been busy building his new life. “Their battles are legendary,” claims our source, who says the last straw came when Lleyton took the job in The Bahamas and made it clear he’d be spending a lot of time there – without Bec. “Their fights are often over what you or I would think of as trivial, and it hasn’t eased over

the sort of people to keep their opinions to themselves,” our source says. “They opposed it to start with just because the courtship was too quick – and more importantly Lleyton didn’t insist on a pre-nup. “The Hewitts still worry about would happen if they divorced, and drop huge clangers in this regard, which Bec naturally resents. They also criticise her all the time, saying she isn’t strict

enough with the kids [Mia, 11, Cruz, eight, and Ava, six] and complain that all three aren’t playing enough tennis.” And there is a lot at stake, with Lleyton worth $60 million at last count. “Lleyton’s well aware of how costly a divorce could be. He considered leaving years ago when they were going through a particularly rough patch, but because he never got Bec to sign a pre-nup, he knew it’d ruin him.”

eb Perry paces the green room anxiously as she gets ready to face a live studio audience, plus millions of viewers who will tune in from their US homes. Tape harnesses her fingers, her wedding ring is off, the glove is on and a cricket pad is in place on the WA granny’s thigh to prevent bruising. A bit more pacing, before a quick bounce up and down on the spot, then it’s showtime for “Spoons” Perry, the special

audiences with her musical spoon tapping for years. “I get so nervous I can’t eat or drink before a performance,” laughs the 68-year-old, recalling her latest triumph on US TV talent show Little Big Shots: Forever Young. “Then when I perform and ‘nail it’, it’s the most amazing feeling. I get really chuffed.” The invites to perform keep coming. “I entertain them from age three to 93,” says Deb, who accidentally became famous

when she made the final 12 on Australia’s Got Talent in 2008. “Fans around the world ask me to play at their wedding or send them video messages, and there’s even a 15-year-old in the UK who copied my Lonely Boy video and posted it online.” The video, featuring Deb spooning to the Black Keys song in a field of kangaroos, went viral – it’s now been seen more than 1.5 million times.

“Something kicks in when I get hold of the spoons,” says the mum-of-three and gran-offive. “It gives me huge pleasure to keep time with music. “I suppose I’m a frustrated drummer, so I’ve made my body my drum kit. Different body parts make different sounds when you tap them.” The gyrating granny says her husband Bill has had to take over the cooking because she’s always away, but nothing makes her happier than performing. “I don’t know what’s around the corner with this,” says Deb, who also won the World Spoon and Harmonica Title in 2003. “But I’ll walk away from it before I hear people say, ‘We have to get the spoon lady off the stage!’” WD 37

elen Patricia Moore lives somewhere in Australia. Her friends probably have no idea of the 55-year-old’s former life. In 1980, Moore was charged with the murder of three children, and the attempted murder of two others as she babysat them in Sydney’s outer west. Moore says she began killing at the age of 16 after losing her 14-month-old half-brother Andrew to SIDS. Her cousin Suzanne McIntosh became her first victim in May 1979 – Moore suffocated the 16-month-old as she slept. She later said she felt it wasn’t fair Suzanne was alive when her brother was not. In January 1980, Moore suffocated a 12-month-old boy until she thought he was dead. She then continued watching TV, but he survived. She then tried to suffocate two-year-old Aaron Crocker, in February 1980. He was left blind, severely disabled and died several years later. Within weeks she’d suffocated another baby girl. The next month her stepbrother Peter, seven, was found dead, too. It was Peter’s death that led to Moore’s arrest. She was sentenced to life, but released in 1993.

he grainy CCTV image is sickening. Taken in a busy shopping centre in northern England, it shows two young boys holding the hands of a trusting two-year-old. They’d lured him away from his mother, who was in a butcher’s shop – distracted for a brief moment.

Within hours that fair-haired toddler, James Bulger, was killed, his body left on a railway track. His killers were 10-year-olds Robert Thompson and Jon Venables. In 1993, they were found guilty of abduction and murder and sent to separate secure units for child offenders. Public outrage at their crime was so great the boys were given new identities when they were released in 2001, aged 18. After their release, reports surfaced Thompson had moved to Australia, but the Government has stated publicly he does not live here. British authorities have since confirmed he lives in northern England with his male lover. Venables, now 34, was convicted of downloading and distributing graphic child pornography in 2010 and returned to prison for two years. He was also found to have joined a dating website not long ago, describing himself to potential girlfriends as a music and soccer fan, and someone with “a good sense of humour”.

I

just f***ing killed someone and it was ahmazing,” Alyssa Bustamante wrote in her diary. “As soon as you get over the ‘ohmygawd I can’t do this’ feeling, it’s pretty enjoyable.” It wasn’t some immature fiction – this was the confession of a 15-yearold from Missouri, US, who’d just stabbed and strangled her neighbour, nine-year-old Elizabeth Olten. On an afternoon in 2009, Elizabeth had begged her mother to let her go and play with Bustamante’s younger sister. She was never to be seen again. After she was reported missing, volunteers scoured the area in search of the little girl, while Bustamante headed off to a church dance. Her unravelling came when her diary was found in her bedroom. The next day, Elizabeth’s body was

found in a shallow grave behind the Bustamante house. Disturbingly, Bustamante told a police officer she’d wanted to know what killing a person felt like. When she was finally tried for the murder, Bustamante sat silently, only occasionally glancing at those testifying. After days in court, the then 18-year-old finally broke down and changed her plea from not guilty to guilty. In 2012, the thrill killer was sentenced to 35 years in jail with the possibility of parole. “Alyssa should get out of jail the same day Elizabeth gets out of the grave,” Elizabeth’s grandmother has said. ric Smith was just 13 years old in 1993 when he spotted four-year-old Derrick Robie walking towards a summer camp just a block from his home. But rather than escort the youngster, Smith chose to lure him into the woods, where he brutally strangled the young boy before dropping a rock on his head. It was Derrick’s mum who raised the alarm when her son couldn’t be located. Tragically, after a four-hour search, his body was found. Six days later, Smith finally confessed the brutal crime to his mother, who heavy heartedly revealed the truth to authorities that evening. Saying his attack on Derrick was the result of years of being bullied, Smith was sentenced to nine years to life in prison and the 37-yearold is still behind bars after being denied parole eight times.

1 Preheat oven to moderate, 180°C. 2 Place rice in a medium saucepan with enough cold water to cover. Bring to the boil. Reduce heat to medium. Simmer 30 mins or until tender. Drain well. Rinse under cold water. 3 Combine grated zest, honey, thyme, garlic and half the oil in a large bowl. Add chicken, toss to coat in marinade. Toss mushrooms in remaining oil. Season. Arrange chicken mixture and mushrooms on an oven tray.

Roast 25 mins or until just cooked through. Remove chicken. Rest, covered, 5 mins. Thinly slice. 4 FIG DRESSING Place figs and juice in a small saucepan. Bring to the boil. Reduce heat to low. Simmer, covered, 5 mins. Stir in vinegar. Cool. 5 Combine rice with half dressing. Top with chicken, mushrooms, watercress, onion and orange segments. Serve drizzled with remaining dressing.


KUMARA TORTILLA WITH RICOTTA HARISSA SERVES 4 PREP 5 MINS COOK 40 MINS COST $$$$$ F ¼ cup olive oil F 1 medium white onion, thinly sliced F 300g kumara, peeled, thinly sliced F 12 free-range eggs, lightly beaten F 250g ricotta F 2 tbsp coarsely chopped natural almonds F 1 tbsp harissa paste F 1 tbsp sunflower seeds F ¼ cup coriander leaves 1 Heat 1 tbsp oil in a 20 x 25cm ovenproof frying pan on medium. Add onion and kumara. Carefully stir

to coat in oil. Season. Reduce heat to medium. Cook, covered, 20 mins or until tender. 2 Preheat a grill to high. 3 Transfer kumara mixture to a large bowl. Add egg. Stir well to coat. Heat 1 tbsp oil in same pan over medium heat and add egg mixture. Reduce heat to low. Cook 10 mins or until tortilla is partially set. Place under grill. Cook 5 mins or until golden and cooked through. Set aside 5 mins. 4 Serve tortilla topped with ricotta, almonds, harissa, sunflower seeds and coriander. Drizzle with remaining oil.

TIP

Cover the frying pan handle with several layers of foil to prevent scorching.

F 100g soba noodles F 200g beef rump steak, trimmed F 2 tsp peanut oil F 1 tbsp finely grated ginger F 1 small zucchini, cut into ribbons F 1 small carrot, cut into ribbons F 60g drained can water chestnuts, thinly sliced F 1 cup bean sprouts F ½ cup Thai basil leaves F ½ cup coriander leaves F 2 tbsp lime juice F ½ tsp sesame oil F 1 garlic clove, crushed F 3 tsp honey F 1 tsp sodium-reduced soy sauce F 2 tbsp unsalted roasted peanuts, coarsely chopped

1 Cook noodles in a medium saucepan of boiling water 4 mins. Drain, rinse under cold water. Drain well. 2 Rub steak with combined peanut oil and half the ginger. Season with pepper. Cook steak in a small non-stick frying pan over high heat 2 mins each side medium or until cooked as desired. Set aside, covered, 5 mins. Thinly slice. 3 Combine noodles, zucchini, carrot, chestnuts, sprouts, basil and coriander in a large bowl. 4 Combine remaining ginger, lime juice, sesame oil, garlic, honey and soy sauce in a screw-top jar. Sprinkle with thyme. Cook lamb on a heated oiled grill plate (or grill or barbecue) 5 mins, turning halfway or until cooked as desired. Remove from heat. Rest, covered, 5 mins. 1 Combine white beans, juice, oregano and half oil in a medium bowl. Season to taste. 2 Place breadcrumbs and milk in a medium bowl. Set aside 3 mins or until milk is absorbed. Add lamb, allspice and extra oregano. Season. Using your hands, work mixture until well combined. Add feta. Stir until combined. Roll heaped tbsp measures of lamb mixture into kofta shapes. 3 BEETROOT TZATZIKI Combine all tzatziki ingredients in a medium bowl. Season to taste. 4 Heat remaining oil in a large non-stick frying pan over medium heat. Cook kofta, turning occasionally, 10 mins until browned and cooked through. Drain. 5 Serve kofta on a bed of lettuce with bean mixture and tzatziki.

Cooked or uncooked kofta can be frozen up to 3 months.

PIPIS & MUSSELS WITH GINGER & LIME SERVES 4 PREP 10 MINS COOK 10 MINS COST $$$$$ F 1kg pipis F 1 cup salt-reduced vegetable or chicken stock F 3 kaffir lime leaves, torn, plus 4 extra, shredded F 1kg small black mussels, scrubbed, beards removed F 2 tbsp vegetable oil F 2 garlic cloves, crushed F 1 long red chilli, finely chopped F 20g piece ginger, cut into thin matchsticks F 1 tbsp fish sauce F 1 tbsp oyster sauce F 1 cup coriander leaves F 1 cup Thai basil leaves 1 Soak pipis in a large bowl of cold water 3 mins. 2 Heat a wok over high heat and add pipis, stock and lime leaves. Cook, covered, stirring occasionally, 5 mins or until pipis begin to open. Remove pipis with tongs as they open. Discard pipis that remain closed. Repeat process with mussels. 3 Strain stock through a fine sieve into a small heatproof bowl. Discard solids. Reserve stock. 4 Heat oil in a wok over high heat. Cook garlic, chilli, ginger and extra lime leaves, stirring occasionally, 1 min or until fragrant. Add sauces and 1 cup reserved stock. Cook, stirring, 2 mins or until thickened slightly. Add pipis and mussels. Cook, stirring 1 min or until heated through. Stir in herbs, serve immediately. 45

Cover tightly and steam 2-3 mins until noodles are tender. Slice. 4 In a small saucepan, bring water, sauces, ginger and garlic to the boil on high. Reduce heat to low, simmer 5 mins. 5 Serve sliced chicken on a bed of noodles and vegetables. Drizzle with soy mixture.

1 Place pork in a large saucepan.

Pour over enough cold water to cover. Bring to boil on high. Reduce heat to low, simmer 1 min. Drain. 2 Meanwhile, in a medium wok or saucepan, bring all remaining ingredients, except pak choy, to the boil on high, stirring. Reduce heat to low. 3 Add pork and simmer very gently 1 hour until very tender. 4 Increase heat to medium. Simmer 12-15 mins, stirring, until sauce reduces to a thick syrup. 5 Toss pak choy through. STRAWBERRY MOUSSE CAKE SERVES 8 PREP 10 MINS + CHILLING COOK 25 MINS Preheat oven to moderately slow, 160°C. Line base and sides of a 20cm springform pan with baking paper. NUT BASE In a food processor, pulse 1 cup each pecans, oats, ¼ cup honey and 2 tbsp extra-virgin olive oil until coarsely combined. Press firmly into base of pan. Bake 12-15 mins until golden. Set aside to cool completely. Meanwhile, in a medium saucepan, cook 500g hulled, chopped strawberries and ½ cup caster sugar on medium 8-10 mins until 48 WD

juices are syrupy. Whisk 1 tbsp gelatine into ¼ cup just-boiled water (see tip) with a fork to dissolve. Whisk into strawberry mixture. Stir 400ml can coconut cream, 300g silken tofu and 1 tsp vanilla bean paste into strawberry mixture. Using a stick mixer, blend until smooth. Cool at room temperature until beginning to thicken (15 mins). Pour into shell. Gently tap base to release air bubbles. Chill overnight until set. Serve topped with extra sliced strawberries.


PASSIONFRUIT & CHAMOMILE BUNS MAKES 8 PREP 20 MINS + INFUSING, PROVING COOK 55 MINS Preheat oven to moderately slow, 160°C. Lightly grease an 8-cup oval casserole dish. In a small saucepan, stir 1 ½ cups soy milk, ¼ cup caster sugar and 3 chamomile tea bags on low until sugar dissolves. Set aside 3-4 mins. Squeeze tea bags, discard. Stir 7g sachet yeast into warm milk mixture. Sift 3 ½ cups bread flour and 1 tsp salt flakes into the bowl of an electric mixer. Add milk mixture and 2 whisked eggs, beating on low 6-8 mins until smooth. Transfer to a lightly oiled bowl. Set aside, covered, in a warm place 30 mins until doubled.

PASSIONFRUIT SPREAD Whisk ½ cup dairy-free spread, ¼ cup demerara sugar, pulp 1 passionfruit and tea from 1 chamomile teabag. Knead dough on a lightly floured surface until smooth. Quarter, then roll each into 0.5cm-thick 16 x 24cm rectangle. Cover each with spread. Roll each from short end to form logs. Cut each into 3. Arrange cut-side up in dish. Dot with remaining filling. Prove, 15-20 mins. Bake 45-50 mins until cooked – it will sound hollow when tapped. Drizzle with combined ⅓ cup icing sugar and pulp 2 passionfruit.

CHOC-ALMOND & CARAMEL ICE-CREAM Line a 6 x 22cm straight-sided loaf pan with plastic wrap, leaving 5cm overhang. In a food processor, pulse combined 500g tub dairy-free coconut yoghurt, 2 sliced bananas, ¾ cup from 270ml can coconut cream and 1 tsp vanilla bean paste until smooth. Pour into pan. Freeze 2-3 hours until set. Meanwhile, in a small saucepan, stir ¾ cup caster sugar and ¼ cup water on low until sugar dissolves. Increase heat to high. Boil, not stirring, until a light caramel

colour. Remove from heat. Carefully add remaining coconut cream and return to low heat. Stir 1-2 mins until smooth. Remove from heat, stir in 1 tsp sea salt flakes. Transfer to a heatproof jug to cool. Allow chocolate soy ice-cream to soften. Spoon on top of frozen yoghurt layer, smooth and freeze overnight until firm. Invert log onto serving platter, remove plastic wrap (see tip). Serve drizzled with caramel, scattered with ½ cup toasted flaked almonds and extra sliced banana. 49

F

rom food critic to farmer-turnedrestaurateur, Gourmet Farmer star Matthew Evans is a firm believer in the paddock-to-plate philosophy. He sits down for a chat with Woman’s Day.

Who inspired your love of cooking? My mother. It was hanging around the kitchen tasting her good cooking that made me realise the cooks always get the best bits.

What would we always find in your fridge? Cheese, butter, a sourdough starter, salted anchovies and very creamy milk from our Jersey and Guernsey cows.

What are your pantry essentials? Quality dried pasta, good olive oil, tinned tomatoes or passata, brown sugar, good quality flour, lots of different nuts and pulses. We just love pulses!

Most useful kitchen gadget? Hmm. Not big on gadgets, but a good peeler is essential. And a hand whisk is always being used to mix crepe batter or something or other. Yes, a hand whisk is indispensable.

How important is healthy eating to you? We love to eat what’s in season, what is fresh, and we love variety. We don’t try to eat “healthy” as such, because that seems to change over the years. I eat a wide variety of unprocessed fresh ingredients, which satisfies me gastronomically, and probably in a nutritional sense, too.

What do you love cooking at home? Tarte tatin when apples are in season, fresh pasta, slow-simmered braises and great roasted veg. Simple food, but carefully chosen and handled.

What do you whip up if time is tight? Pasta. Always pasta. In the time it takes to boil the water and cook spaghetti, we can get a delicious dinner on the table that everyone gobbles down, no problem. Use bread flour, if available, for great results.

MAKES 1 LARGE LOAD PREP 30 MINS + RESTING COOK 20 MINS F 15g fresh yeast (or 7g dried) F 1 tbsp honey F 3 1/3 cups plain flour F 1 tbsp salt F 400ml warm water F 30ml olive oil, plus extra for drizzling F 20 small black olives, pitted F 1 sprig fresh rosemary leaves, picked F sea salt flakes, for sprinkling 1 Mix yeast, honey and 2 tbsp water in a small

bowl and set aside. 2 Mix flour and salt in a large bowl. Stir in yeast mixture and warm water. Knead well until dough is smooth and elastic. Place in a bowl well oiled with olive oil (toss the dough in oil to coat all over), cover with a damp tea towel and leave to rise in a warmish spot for 1 hour. 3 Preheat oven to very hot, 230°C. 4 Punch dough down, then knead again on a lightly floured surface for 6-7 mins. Press dough out onto

a floured oven tray until about 1cm thick. Use your fingertips to create indents in the dough. 5 Scatter with olives and rosemary leaves, then drizzle with extra oil and scatter with salt. Bake in centre of oven for 15-20 mins or until well coloured and cooked through. Cool on a wire rack. 6 Serve with extra-virgin olive for dipping or some goat’s cheese, and eat it as you walk through your olive grove, willing the trees to grow!


he farm! TURNIP TOP & GOAT’S CHEESE FRITTATA

SERVES 1 PREP 5 MINS COOK 5 MINS F 1-2 tbsp olive oil F washed tops from 1 Japanese turnip, torn into bits F a couple of slices of garlic (optional) F 3 eggs, whisked with a fork with salt and pepper and 1 tbsp water F 40g goat’s curd or similar soft cheese

1 Preheat a grill. 2 Heat oil in an omelette pan or similar. Add turnip tops to wilt with garlic, if using. 3 With the heat up really high, add eggs all at once, using the back of your fork to keep them moving around on the base of the pan, so they don’t just cook at the base. Once eggs are about half cooked, stop stirring and dollop on goat’s cheese in about 5 spoonfuls while allowing base to set. 4 Transfer pan under a hot grill to finish. Serve immediately, or even at room temperature as part of an antipasto.

European turnips are more bitter and need blanching in hot water before being fried.

STRAWBERRY & RHUBARB CRUMBLE

SERVES 6 PREP 15 MINS + CHILLING COOK 40 MINS F 1/3 cups plain flour F 1/2 cup caster sugar F good pinch salt F 120g unsalted butter, chilled, diced F 3 rose geranium leaves, washed well F 500g rhubarb stalks, trimmed, washed, chopped F 500g strawberries, wiped and hulled F 3-4 tbsp honey or caster sugar F 1 tsp vanilla extract

Serve with a decent custard instead of ice-cream, if preferred.

1 Mix flour, sugar and salt in a large bowl. Rub in butter with your fingertips until it looks nicely crumbly. Chill for 30 mins or so. 2 Preheat oven to hot, 200°C. 3 Simmer rose geranium leaves in ½ cup water for a few mins. Toss rhubarb and strawberries with honey and vanilla (heat honey if it’s too thick). Press into bottom of a casserole dish and splash with a little strained rose geranium water to flavour. 4 Sprinkle crumble evenly over the fruit and bake towards top of oven for 30-40 mins or until top is browned. Serve with vanilla ice-cream. 51

This simple spicy honey cake pairs perfectly with your afternoon cuppa

Tea-smoked salmon with barley salad

SERVES 8-10 Preheat oven to moderate, 180°C. Grease a 20cm round cake pan with butter and line with baking paper. In a large bowl, whisk together 3 eggs, ½ cup brown sugar and a vanilla pod (split and scraped). Combine 2½ tbsp strong espresso with 2½ tbsp water and add to bowl, along with 250ml buttermilk, 250ml extra-virgin olive oil and 200g runny honey. Whisk until smooth. Sift in 2 cups self-raising flour, 1 tsp ground cinnamon, ½ tsp ground allspice and pinch sea salt and whisk to combine. Pour batter into prepared pan and

love the outdoors, but I’m crazy about my creature comforts, so the idea of four days roaming a remote Tasmanian island with limited facilities had me a bit concerned. Then I found we’d be glamping: campsites with incredible views, luxury tents, amazing food and some of the region’s best wines. Sign me up!

Day 1: 8km

The 90-minute trip from Hobart to the Maria Island ferry at Triabunna is picturesque and beautiful. On the island we were fitted with our backpacks, then had lunch at beautiful Shoal Bay. Afterwards, we headed to the first campsite at Casuarina Beach. It felt like walking into a real-life postcard. Later, we walked to Haunted Bay, which amazed us with its colourful rock formations and breathtaking views. Back at our beach camp we devoured Tassie produce and wines. Then, on our sunset walk, the wallabies and wombats blew us away!

Day 2: 13km Comfortable accommodation on the trail. 70 WD

We kicked off with hearty eggs and bacon cooked in a fully equipped camping kitchen. Today’s walk

took in five beaches, the convict cells at Point Lesueur and the amazing ochre pit at Bloodstone Point. At White Gums Camp we enjoyed the musical chatter of native birds with a pre-dinner glass of wine as the sun set.

Day 3: 17km

On our way to the next campsite, we trekked grasslands along the edge of the Painted Cliffs. Later, the peaks of Bishop and Clerk proved the most challenging walk, but had the most rewarding views. It took us through open forest and

AMANDA SAYS Dudie comes through and says he has passed over and he tells me he was with Lorna all his life. I see a young woman with him. This young lady is Lorna’s daughter and she tells me she passed suddenly in an accident when she was 27. She let her mum know she did not suffer. Dudie then brings through another two cats that have passed over. I also see Lorna’s mum and dad, who have both been passed over for a very long time. Lorna’s mum was first. They are both with her daughter. Dudie tells me he’s with his sister Moggie, who went missing. Dudie knew Lorna always wondered what happened to her and had her suspicions. Lorna’s suspicions were confirmed when Moggie told her she was killed by the dog next door. Another cat named Xanadu was also taken by the dog next door but Lorna couldn’t prove it. Dudie tells me he got sick very quickly and shows me he passed within a couple of days of his sickness.

Dudie was 16 years old when he passed over from throat cancer, which he had for a while but was undetected until the last couple of days. Xanadu was about seven when he passed and Moggie was only about a year old. Dudie is such a sweet, loving boy and smooches a lot. He loves to be loved. LORNA SAYS I wanted to know how my beautiful cat Dudie was doing in the afterlife. It was a relief to hear that he did understand I had to end his suffering, and that he loved me very much. I was amazed Amanda picked up on my dad, who passed a very long time ago, and said he was a lovely man. I was so glad to hear my dad was with Moggie and Xanadu, and they all took Dudie over the rainbow bridge. It was good to finally have closure over Moggie and Xanadu’s disappearance,

The episodes will feature the best performances from each of the 13 years the hit show was on air.
