In good hands CEO of The Goring, Jeremy Goring, details taking care of the family business, extensive refurbishments and awards aplenty francesca lee-rogers

he Goring is a Belgravian institution, and where else would The Duchess of Cambridge, née Kate Middleton, stay the night before her wedding than this traditional British establishment? Built by CEO Jeremy Goring’s grandfather Otto in 1910, which happened purely by accident when a housing development was demolished, I ask Jeremy who is the fourth generation running The Goring, whether he feels a huge sense of responsibility now that it’s in his hands. “It was never my plan to work for the family firm but on the day I started, I realised it was going to be great fun and I’ve never looked back since,” he tells me. Now that the hotel is more than a century old and with stiff competition from other hotels on the market, Jeremy, who has recently overseen extensive renovation works, details how he has stayed ahead in the industry. He goes on to
say: “The Goring was the most innovative hotel in London when it was built, and today we are constantly seeking innovative services and products to offer our guests. “We are the newest 100-year-old hotel in town, having renovated every square inch of the property. All the rooms and suites have been redone from the brickwork outwards, and decked in historic Gainsborough Silks with beautiful bespoke furnishings.” Along with the recent changes, the hotel has introduced technology and unveiled two new private dining rooms that have been decked out in handstitched Fromental silk wallpaper. Jeremy, who is clearly at the forefront of his game, already has plans in the pipeline for 2017. “We are currently conceptualising a new cocktail bar, as well as expanding the veranda. We’ve also introduced a footmen department, where the butlers are on

The Goring gained a Royal Warrant in 2013 and won a Michelin star in 2015, but it is the feedback of guests that satisfies him the most. “I love hearing the comments and reading the letters they send,” he says. He believes it is The Goring’s values that make it stand out above other hotels, “despite being one of the most appointed, we have a relaxed, personal style and I think this makes all our guests feel truly at home.” As for Belgravia, he sums it up as “the epitome of London as it should be. If you are from another country and want to see the capital in all its glory, here is the spot.” We can’t argue with that. Pierre Hermé, recently crowned The World’s Best Pastry Chef, talks to the Journal about global domination, artistry and, of course, macarons chris allsop
P
ierre Hermé – the man Vogue named the ‘Picasso of Pastry’ – is not short of honours. Not only was he the youngest ever recipient of France’s Pastry Chef of the Year award in 1997, but he also has the Chevalier de la Légion d’Honneur (France’s highest civic recognition) swinging from his pinny. Not to mention the singular honour of being the only pastry chef awarded the Ordre des Arts et des Lettres, bestowed for “significant contribution to the enrichment of the French cultural inheritance”. But it would be reductive to suggest that Hermé, a fourth generation pastry chef who began his career at 14 as an apprentice to the legendary Gaston Lenôtre, has been showered with plaudits on the strength of an inventive macaron alone. Hermé – who looks exactly as you’d expect a master French pâtissier to look – has built an international empire in the mould of Lenôtre, but with an irresistible personal stamp ( for one thing, his company doesn’t adapt its flavours to the idiosyncrasies of different markets). Founded in 1997, the Maison Pierre Hermé Paris brand has spread, nearly 20 years on, to 12 countries worldwide – including, fortunately, two pâtisseries in 14
London. One lies just south at 13 Lowndes Street and the other just east of Mayfair (38 Monmouth Street). As if any further proof were required of his global appeal, in June, Hermé was named The World’s Best Pastry Chef at The World’s 50 Best Restaurants ceremony in New York. This award, voted for by a 1,000-strong group of restaurant industry leaders hailing from five continents, is also usually bestowed on a pastry chef attached to a restaurant. The last two winners were Albert Adrià of Tickets in Barcelona, and Jordi Roca of Girona’s El Celler de Can Roca. Once again breaking the mould, the Frenchman graciously called the latest award an “honour and great pleasure” before going on to thank the pastry chefs “preparing my recipes every day, around the world”. These recipes will, undoubtedly, involve many millions of macarons, the vibrant pastry that forms the foundation of his empire. It was his injection, in the 1980s, of new and experimental flavours into the traditional macaron that took France by storm. However, that is not to say that any and all experimentation is good – the concept of the savoury macaron is,

[LIFESTYLE] for Hermé, “completely inept! The proportion of sugar in a macaron is very high and therefore, in my opinion, it is absurd to create a savoury version.” Despite the endless accolades, the Frenchman isn’t one to rest on his laurels. His creativity is married to a restless energy. “I am always working on new creations,” he says. “Sometimes it can take a few weeks, sometimes months and sometimes years. At the moment, I am finalising the Christmas macarons collection called ‘Les Adorables’. This year, there are two new creations: the Infiniment Citron Noir made with black lemon, and the Noisette et Foie Gras with hazelnut and foie gras.” Besides delivering kaleidoscopic deliciousness in not only macarons but also chocolates, ice cream, pound cakes and more, Hermé is launching two new books this winter – a pop-up recipe book, and an art book on chocolate in collaboration with the Brazilian photographer Sergio Coimbra. There’s the distinct sense that Hermé is something of a Renaissance man, a creative talent unleashed on the culinary arts, but who could have just as well succeeded in any number of disciplines. Indeed, he claims that the “universe of perfume, like the universe of wine, has always interested me” – which is why Hermé has past collaborations with a number of different perfumers, most notably Jean-Michel Duriez (the nose behind many Rochas scents). Is the 56-year-old not tempted to drop the macarons and channel his considerable energies in a new direction? “Whether it is macarons, chocolates or any other creations, experimenting and creativity is endless,” he replies. “My creativity is driven by my curiosity, so the possibilities are infinite. Fit for a carnivore If you’re a meat fan and you don’t already know about Macellaio, you’re missing out as the Journal discovers Francesca Lee-Rogers

et’s put it this way: if you’re looking for a veggie restaurant, rule out Macellaio. Meat, on the other hand, is this restaurant’s, and founder Roberto Costa’s speciality. With three establishments in London, Roberto has come a long way since cleaning the floors and dishes of his family’s trattoria in the suburbs of Genoa, Italy. The restaurant stands out on Old Brompton Road thanks to its bright red awning and, much to my surprise, a large red leather sofa on which diners sit and chat animatedly while taking a break from their drinks or meal. Upon entering, it’s easy to be mistaken that one has walked into a butchers. Meat hangs over the counter, and as well as being able to buy it directly from the eatery, customers can select exactly which cut they want for their meal too. At the table I’m given a newspaper-style menu that tells me everything and anything I need to know about the Italian cows that provide the meat on the front page; from the breed to ageing process; cut to the cooking method. Turning the paper over, and upon first impressions, the choice is vast. There are so many different sections
that I have to ask the waiter for his recommendations. He’s more than enthusiastic though and guides me through with glee.

idden behind a heavy wooden door, the only way that I know I’m at Ushvani in Knightsbridge is that the Google Maps on my phone is telling me that ‘You have arrived at your destination’. If you’re looking for discretion, this is it. Greeted by a member of the Ushvani team, I’m welcomed into the seating area and as I wait I’m given a fragranced flannel for my face while my shoes are replaced with towelled flip flops; it’s the perfect welcome and helps me to unwind after making the short but slightly stressful journey from the King’s Road. The spa, featuring three floors, has separate male and female treatment rooms like typical Malaysian spas, as

massage and I’m asked if I have any needs or concerns, and respond by requesting extra time on my back to ease my tension as well as on my feet for relaxation. Starting with inhalations, I sink into the bed with every breath and feel the knots melt away as my therapist uses a combination of massage and pinpointing tension. I must admit, I almost doze off a couple of times. A head and scalp massage
follows and before I know it, time has run away with us and my treatment comes to an end. As half of Belgravia depart for sunnier climes, the Journal speaks to one half of the dynamic swimwear duo, Heidi Gosman of Heidi Klein Francesca Lee-Rogers You launched your first shop in the UK in 2002; tell me about this journey? My mother was an interior designer so I always had an interest in the creative industry. I studied Business and Marketing at university and then worked in media consulting, where I met my business partner Penny Klein. We noticed a gap in the market for beautiful swimwear sold all year round and launched our brand, Heidi Klein. You opened your shop in Belgravia two years later, why did you choose this area in particular? We decided it was the best fit for Heidi Klein and where it would flourish the most. The Belgravia shopper is chic and welltravelled so it was the perfect choice. What is it that you like most about Belgravia on the whole? The setting is just gorgeous. I love the beautiful houses, shops and streets. What would you say is your favourite restaurant? La Poule au Pot, without a doubt; the food, particularly the house dish, is divine. What would you say is the secret to success? Research, research, research… and know your 24
customer well. Also, recruit brilliant people. I have a wonderful team that has shown such insight into important areas of the business. Finding the right people has been key to growing the business. Where does your inspiration come from? I draw it from everywhere; from my many travels for work and pleasure as well as to listening to customers at our stores. Feedback is crucial for me when designing new styles and prints. I also attend fashion shows in London each season and look back to past style icons, such as Grace Kelly and Jackie Kennedy Onassis.
Where’s your favourite holiday destination? My husband and I travelled to the Amalfi Coast on our honeymoon and we go back each year. We instantly fell in love with the beautiful scenery and crystal clear waters. Where will you be this Christmas and New Year? I will be spending the festive period skiing with my family. We are visiting Alpbach, one of the most beautiful villages in Austria. We’ll stay in a gorgeous chalet which the children love; it has such a Christmassy feel to it. What are your plans for the business in 2017?

Memorable Moves What happens when you need to relocate the engines from Concorde? Abels Moving Services tells all
w
hat does a sevenfoot high ornamental elephant, Giovanni Bellini’s magnificent Renaissance altarpiece Madonna and Child enthroned with St Peter and St Paul, a 36-feet long totem pole and the Olympus engines from a Concorde supersonic airliner have in common? The answer is that they’re just some of the unusual items moved by Abels Moving Services over the years. John Watson, managing director of Abels which holds a Royal Warrant, says, “We have actually moved the seven-foot high ornamental elephant several times, most memorably into and out of an eighth floor London apartment.” The 36-foot totem pole was immensely heavy and required a special transit case and its own 40-foot container to protect it on its journey to the USA. In fact Abels frequently makes custom transit cases for its clients’ items such as paintings, mirrors and also statues.
“Many of our moves involve the packing, storage and moving of valuable pieces of artwork,” John explains, “but few are as valuable as Bellini’s Madonna and Child enthroned with St Peter and St Paul. It is dated 1505, valued at £6million, and we relocated it on behalf of Norwich Castle Museum.” While it needed steady hands to safely pack and transport the Bellini altarpiece, another move requiring similar diligence came to light when Abels’ customer
services manager inspected the cellar of a large manor house. It was quickly discovered that it contained more than 5,000 bottles of wine. Each one had to be listed, packed in order, transported in a temperature-controlled vehicle and replaced in the same order, and Abels succeeded without spilling a drop! Moves often turn out to be more complicated than at first sight. One small bungalow proved to be choc-a-bloc with seafaring memorabilia, with everything from barographs to ship’s wheels, and required a week of packing and loading and two large trucks to move. The relocation of a Rolls-Royce car from Kent to Monaco became less straightforward when it was revealed that the car was not only bullet-
proof but bomb-proof too. It travelled directly to Monaco in an Abels truck escorted by the owner’s security detail. But what about the Concorde engines? “After the aircraft was taken out of service, Concorde parts were sold at auction and we shipped them to collections around the world,” John tells us, “including the engines, which took pride of place in a display in Houston, Texas.” “Whatever you own,” John concludes, “from a grand piano to a precious family heirloom, you can rest assured that Abels will move it safely and securely around the corner or across the world.” Call Abels on 0800 626 769, email: johnwatson@abels.co.uk or visit abels.co.uk 27

The knot The Belgravia Residents’ Journal visits Gravetye Manor, a quintessential English country house that will leave you with wedding bells ringing in your head bethan rees

’m not one of those people who since a little girl has dreamed of their big day. That was, however, until I visited the country house hotel Gravetye Manor, just south of East Grinstead in West Sussex. Driving up to the house through its winding, silver birch-lined tracks, watching the twisting lake twinkle in the high summer sun, I envisioned myself in the back of a 1975 RollsRoyce Silver Shadow 1. Imagining that I’m wearing a white floaty number down to the floor, with just a dash of Venetian lace and a handtied bouquet of dusky pink peonies in hand, I pull up to the grand, twostorey Elizabethan house. I quickly snap out of wedding fairyland and I walk into the dark wood-panelled Grade I-listed hotel, which was originally built by Richard Infield, an ironmaster, for his new bride Katherine Compton – a charming gesture that I can’t seem to get my head around; I’d be happy with a necklace. The initials ‘R’ and ‘K’ can be seen in the stone over the main entrance door. However, its most notable owner was William Robinson, a revolutionary landscape gardener and author of The English Flower Garden and one of the best-selling horticultural books of all time, The Wild Garden.

After his death in 1935, the surrounding 1,000 acres of landscape were left to the Forestry Commission and during World War Two, it was used as a base for Canadian Army soldiers. Following this, the grounds were left neglected. Thankfully, in 1958, the property and grounds were leased to hotelier Peter Herbert and his first wife Pip who turned it into a 17-bedroom hotel with a restaurant. Alongside this, Peter threw his energy into restoring the 52 acres of natural gardens. In 2004, the business was sold to Andrew Russell and chef Mark Raffan – who managed the property until 2010 when the property lease
was bought by long-term guest and investor Jeremy Hosking. With this move, Tom Coward was appointed head gardener, who had a focus of conserving and re-creating William Robinson’s work. The garden is where Gravetye Manor comes to life. In the summer, its 7,000 species of tulips are in full bloom, including the Black Parrots variety, a dramatic mulberry coloured flower. Leaving the main house, there’s the Wildflower Meadow that tumbles down the slope to the lake. When I visit in July, the ox-eyed daises are in full glory alongside common spotted orchids and the song of the crickets can be

heard rowdily. This wild garden style juxtaposes the rest of the grounds, which are immaculate. The first green space that greets guests as they leave the house is the Flower Garden with intensive mixed borders and is the perfect place to have a pre-dinner drink of Blanc de Blancs sparkling wine from the nearby Bluebell Vineyard Estates. In the rest of the surrounding acres, other gardens include glasshouses, an orchard – with apples, pears, quince, meddler and walnut trees – and a kitchen garden. This, I think, is the jewel in Gravetye’s garden crown. The two-acre garden grows fruit and vegetables to be used in the kitchens, which allows the hotel to be completely self-sufficient in seasonal produce, and of course it permits the freshest ingredients to end up on guests’ plates. But, I have to go inside at some point, which echoes its 16th-century origins with thrones carved from oak
and giant fireplaces engraved with coats of arms. The 17 bedrooms are classically beautiful, with floral themes reflecting its gardens, all individually furnished in rich fabrics and fine antiques. In my room, I adore the chic touches such as the Cinderella-style hand mirror and horsehair brush. The Michelin-starred restaurant is

gooseberry crumble soufflé. I leave Gravetye Manor – begrudgingly – and cannot wait to return. It’s the faultless spot for a wedding. But, a warning: its pictureperfect gardens may detract attention away from the bride. Prime Central London emerges from the depths Transactions started to pick up across prime central London (PCL) in the third quarter, according to industry data resource LonRes, albeit from Q2’s low base

CL saw a 17 per cent uplift in sales compared with the previous three months, and there was a 4 per cent increase in prime London. Only the prime fringe market saw further slippage, with volumes down 9 per cent on the quarter. We’re still some way off the volumes expected at this time of year though, says LonRes. Transactions in Q3 2016 were 34 per cent lower than in Q3 2015 across PCL, 37 per cent down in prime London and 42 per cent off 2015 levels in prime fringe. As many will testify, not much happened in the market around referendum time; between March and July, the number of properties going under offer in PCL was down 29 per cent on the same period in 2015, although that figure rose to just 9 per cent below in August and September. LonRes says the average price paid per square foot across PCL fell to £1,744 in Q3 2016, a 6.1 per cent fall in achieved prices compared with Q3 2015. The average fall in prime London was 4.2 per cent, with a decrease of 2.4 per cent recorded in prime fringe markets. Across the whole LonRes, average prices per square foot in the £5m and over bracket are now 16 per cent below peak 2014 levels, having fallen by 12 per cent over the last 12 months. In comparison, achieved prices in the sub-£2m range are at the same level as in Q3 2015 and just 3.7 per cent below their 2014 peak. With the pound at a five-year low against the euro and a 31-year low

against the dollar in October, those buying in dollars were effectively saving over 30 per cent on peak values. Euro purchasers were looking at savings of per cent. It’s not surprising that 57 per cent of LonRes subscribers expect to see an increase in overseas buyers from outside the EU over the next 12 months.

says Charles. “This is especially an advantage if, for example, I need to find out an approximate cost for a lease extension, or quickly get management information for sales in the buildings that we look after.” He tells me that buyers’ profiles vary but that recently he has seen a rise in Far Eastern clients. “We’ve certainly seen more of an interest as the drop in the value of the sterling has made investment more attractive,” he says. But how have the changes to stamp duty and the impact of Brexit affected the market? “In my opinion, although there’s definitely been a

We have some of the best education in the world, we’re geographically in a great place, we have English as a global language and we have a transparent legal system – there’s so much going for us.” In recent months Charles has seen more activity outside their core area. “We have had a few clients in Kensington who either want to downsize or upsize,” he says.
