A Flora-ing success
Our beloved Belgravia was transformed into a fragrant ocean of flower displays throughout May, and a dramatic window installation by Linley won the Best Floral Display award during Belgravia in Bloom 2016. The display featured foxgloves, delphiniums and lupins alongside willow wildlife, and celebrated the 30th anniversary of Linley. The hotel job Advice to young chefs, a bastion of British cuisine and psychedelic fancies, the Journal speaks to executive chef of Jumeirah Carlton Tower, Simon Young

I
t all started at Glyndebourne. The annual opera festival season was about to take place and Simon Young had a summer to kill. Growing up in Sussex, he decided at the age of 15 he’d like to go to catering college. “I went to Glyndebourne and asked if I could wash pots, and they said they could do better and handed me some chefs whites,” Simon tells me. Although he ended up peeling vegetables for the season, working in a kitchen full of chefs inspired Simon. Then, after attending catering college in Brighton, he remembers a friend saying to him: “If you really want to make it, you have to go to London; don’t hang around in the south.” Consequently at the age of 19, Simon moved to the capital and started to work in various five-star hotels. Positions at Four Seasons, The Dorchester, and The Royal Garden followed, as did brief stints abroad in both Canada and Italy. “When
francesca lee I returned, I was head of production at Harrods, and then I reopened the whole hotel food and beverage operation at the Great Eastern Hotel in Liverpool Street, which had five restaurants, before receiving the call for the executive chef position at

But you have to stay ahead of the game” Jumeirah Carlton Tower. “I used to walk past the hotel every morning as a young commis chef when I couldn’t afford the bus fare home to Clapham, and think that one day I’d love to run the kitchens. It’s very satisfying that this is now what I’m doing, albeit 20 years on.” Simon, who has been at the Jumeirah since 2003, has seen the group grow
from six hotels to 23. “The investment that has been put into this hotel and the others is incredible,” he says before adding, “but you have to stay ahead of the game.” With there being more chef positions than there are chefs living and working in London, retention rate is vital to the flow and consistency of any kitchen, and Simon tells me that last year his was 76 per cent. “I believe there are three important basics for young chefs; a good rate of pay, good uniforms and a good staff canteen. If you start with those things, it makes a big difference.” The training ground for some of the young chefs is The Rib Room, headed up by chef Ian Rudge. Signature dishes include rib of beef and prawn cocktail, but Simon tells me the restaurant is all about following the seasons. “It’s a bastion of British cuisine. At the moment we have English pea veloute on the set menu, as well as dishes which include new season English asparagus,
artichoke and runner beans.” Another favourite eatery of the hotel is the Chinoiserie, with pastry chef Stephan Will at the helm. On the back of the success of the Brilliantly British 90 Years Afternoon Tea, the hotel is currently working with the V&A that will be running an exhibition from 10 September called You Say You Want a Revolution? Records & Rebels 1966-70, and the hotel will create a mini exhibition and themed afternoon tea in its honour. “At the moment we’re experimenting with lots of psychedelic colours,” Simon tells me. With all of this in mind, what is his advice to young chefs? “Go out and work in the best places, especially hotels. Family is at the heart of Italian restaurant Enoteca Turi, as the Journal discovers emily adams
T
here is something familiar and comforting about Giuseppe and Pamela Turi, the couple behind Italian restaurant Enoteca Turi. I feel as if I’m being welcomed into their home when I meet them at their new premises in Belgravia. For the last 25 years, the family-run restaurant flourished in Putney, with appreciative customers enjoying fine Italian food. Having been a firm favourite in the local area since 1990, when the lease ended, it was tough to say goodbye. “We had a lot of support from our customers and wanted to find a place where we could keep them with us.” Unable to find a suitable spot in the area, the couple heard that 87 Pimlico Road was available. “The area is fantastic. There’s a lovely feel on the high street and a sense of community, so we felt it was just right.” Giuseppe, originally from Puglia, came to London in 1982, where he trained as a sommelier and worked at both the Connaught and the Athenaeum Hotels. Having risen to restaurant manager, he decided to go it alone. “In 1990, the Italian restaurant scene was very stereotypical,” he remembers. “All the menus were the same. So when I opened Enoteca Turi, I really wanted to reflect the true Italian regional heritage.” The restaurant has a simple, clear design to put the main emphasis on the food. It has been finished to a very high standard and the space has been used effectively. Large

floor-to-ceiling mirrors open up the room and sit opposite an exposed brick wall with a subtle wash of gold paint. An acoustic ceiling keeps noise levels down. “We’re of a certain age now and hate going to restaurants where you aren’t able to hear!” Giuseppe laughs. For the downstairs, Giuseppe and Pamela have more exciting plans. They’re working on a wine cellar and private dining area, with two
fireplaces to provide a cosy homely atmosphere. The location may have changed, but the format and flavours are still the same. Giuseppe and Pamela are in the restaurant every day, working hard on their family business. “It’s a way of life,” Giuseppe says, “and I enjoy what I do.” Given Giuseppe’s background in wine, including gaining second place in the Sommelier of the Year competition in 1987, his wine list is unrivalled. He talks about it with enthusiasm and intelligence. “Wine has a special place in our restaurant,” he says, “it’s an expression of a particular region.” There is a rustic elegance to every dish on the menu, according to Giuseppe. “It is important to

me that the identity of the region comes across in each dish,” he says. He adds that many of the ingredients are imported from Italy, such as the Mediterranean vegetables, because they’re the most flavoursome. “It’s great that in London we have the ability to source those ingredients.” Pamela, as Giuseppe tells me fondly, is “the heart and soul of the restaurant”. “I’m just the mum,” Pamela laughs as she tells me about her job and the loyal staff around her. It is a small team who chose
to wait patiently for eight weeks as the new restaurant was rapidly renovated. All the staff followed the couple to Belgravia, and all are Italian. “They really believe in their culture,” Pamela tells me, “and they’re

skills with her. “Many of our staff go on wine, cooking or English courses,” she tells me. “It happens because I tell them, ‘Don’t just come and work in a restaurant. Learn about wine, learn about food or learn English, so that when you leave here, you’ll have something to take with you’.” Giuseppe and Pamela firmly believe in giving their employees the opportunity to enrich their knowledge and fulfil their potential. om Sellers has the CV of most people’s dreams. Having started his culinary adventure at the tender age of 16, he progressed quickly, training under the likes of Tom Aikens and Tom Keller. When he was just 26, he opened his first London restaurant, Story, and within five months he had received his first Michelin star. Now with two restaurants and a pub under his belt, and still only 29 years old, the Journal speaks to him about his newest venture, Restaurant Ours, what he thinks of the local area, and what’s next on the agenda. Congratulations on the opening of Restaurant Ours and welcome to the area Tom. Can you tell us about the inspiration behind the restaurant? The restaurant is a collaboration between my business partners and some friends; hence, we chose the name Restaurant Ours. We want it to become a local go-to, and for our guests to feel as though it is theirs to enjoy. It’s even a place for large groups to gather and we are always thinking of new ways to provide entertainment in the space. It’s stylish and bright, but also intimate and inclusive. The menu was designed with lighter options, as well as the more indulgent ones, so there’s something for everyone who comes through the door.

You were just 16 when you started training and had your first Michelin star at 26. Has it been everything you dreamed it would be? It’s difficult to say. I was always ambitious, particularly when I realised that if I worked really hard and stayed focused I could make it happen for myself. I love my work, it’s everything to me, but I’m not finished yet – ask me again in 10 years! who has influenced you throughout your career? Tom Aikens and Tom Keller were two of my greatest influences. I had the privilege of working for both chefs when I was younger. How have you handled the pressure of running three establishments at such a young age? I’ve learned that the trick is to build a team that you trust. Story is my home and every dish made there means a
lot to me. Everything else I do comes with careful consideration of how it will affect Story. The Lickfold Inn is a country pub and the head chef, Graham Squire, and I have worked together for years. As Restaurant Ours is still relatively new, I have been putting a lot of work into getting everything absolutely right; which will naturally ease as the restaurant finds its rhythm. What has been your biggest achievement to date? And what do you still want to achieve? Earning and holding onto the star at Story is a massive achievement. I want to achieve a balance between being a good restaurateur and staying true to myself as a chef – I still have a lot to give in both respects. When you’re not rustling something up in the kitchen, what do you like to do? Same things as everyone else – I see

my friends, see my family. Sleep, sometimes. Is there an ingredient that you can’t live without? Like all chefs: salt. Do you have any exciting plans for the Restaurant Ours menu? It’s early days – we will change the menu with the seasons, but currently we’re working on making sure that every dish is the best it can be. What’s next on the agenda? I am opening my first overseas restaurant in the autumn in Hong Kong, which I’m really excited about. It’s a completely different market that demands a different type of dining experience. Keeping it contemporary Founder Alina Lacatusu tells the Journal all about her company, Platinum Interiors London Francesca Lee
A
lina Lacatusu knows what style is. Previously a model travelling all over the world and living in Milan, she has a taste for the finer things in life, and has turned her career from fashion to interior design after studying design in London. “Even when redesigning my own house, I found that I liked the most luxurious products and furnishings, which in turn were often the most expensive,” she laughs. Known for her contemporary style, the majority of Alina’s work takes place in Prime Central London. Redesigning properties in Belgravia, Mayfair and Kensington to name but a few, she has the skills to take any project from concept to completion. “Some clients come to me and would like me to refurbish their whole house and I might even help to knock down walls, while others might want me to just design one room in their flat,” she tells me. Alina is also in the know if she needs a helping hand with any part of the property refurbishment process. “I have a lot of contacts; for example, I know the best builders in the area and I oversee and project manage from day one.” It is Alina’s keen eye for detail that made her the interior designer of choice for two recent projects; a townhouse and a two-bedroom flat. “A lot of my clients just want to take the stress away from property refurbishment and that’s where I come in,” she says. Like most interior designers, Alina creates a 14
mood board after a few meetings. “That’s one of my favourite parts of the design process and where I can really unleash my creativity,”
she describes. She also enjoys advising clients on artwork, with the majority of them looking for bespoke pieces. Alina goes on to tell the Journal about how transforming a property through careful interior design is like selling a lifestyle. “I can tell within five minutes of meeting someone the kind of life they lead and what I could suggest interiorwise that they would love,” she says. And with some clients also having properties abroad, she is also in demand overseas. “Some of my clients have second homes so I also travel for work,” she says. “It keeps it interesting and it’s all in a day’s (or year’s!) work.” 07721 727 072, platinuminteriorslondon.com

cellos chamber music concert in our local venue, Cadogan Hall. Although The Proms started back in 1895, the first Proms chamber music concert was held in 1996, before it eventually found a regular home at Cadogan Hall from 2005. The historic venue has hosted The Proms’ matinee performances ever since, and this year we’ll see eight chamber music concerts take place. Even 122 years on, The Proms are as popular as ever with many of the events already sold out. Director David Pickard thinks he understands why: “It’s because the initial idea is still relevant today. Obviously, what is the best music in 1895 when the festival started isn’t necessarily what some people regard the best in 2016. But, the original vision remains the same.” If you’re perusing the line-up for the eight week festival and you’re a little bit daunted by the choice, start with what’s in store in the area – we’ve even got a few recommendations for you. As the world’s largest classical music festival, The BBC Proms are renowned for putting on an impressive show and now in its 122nd year, with new director David Pickard at the helm, it’s time for the cello to take the starring role. Last year saw the celebration of the piano with more than 25 solo pianists taking to the stage across the season. Now, as the focus turns to the cello, we see 10 concertos take place alongside a multiple

In for the long-haul The stage adaptation of Sideways just doesn’t quite live up to expectations, as the Journal finds out Francesca Lee
Y
ou may need a few glasses of Pinot Noir to get you through the stage adaptation of Oscarwinning film Sideways, currently showing at the St James Theatre. Written by Rex Pickett, the story revolves around Miles (Daniel Weyman) and best friend Jack (Simon Harrison), who are on the latter’s stag do in the Californian winelands. Miles is a wine buff and a struggling writer who has had 66 manuscripts turned down, while Jack is certainly a ‘Jack the lad’ wanting to ‘sow his seed’ before getting hitched. They come across two women (Ellie Piercy) and Terra (Beth Cordingly), and the plot thickens; the bachelor party turns into a sordid secret. With phrases such as Jack wanting to ‘get his nut’ (that’s probably the most tame) and Miles getting excited about ‘popping his ’82 Latour’, the language is cringeworthy and feels unnatural, while one-sided telephone conversations make the 18

play feel am-dram. The set is simple, wooden walls and wine bars are moved into place by the actors; but you really have to use your imagination
to envisage they’re in sunny California. It’s not all bad though: the acting is good. Harrison in particular plays a convincing Jack and shines throughout the play. Piercy and Cordingly also put on a stellar performance. Weyman has moments of brilliance, but for the most part is simply trying too hard. As the play progresses, a copious amount of wine is drunk, bottles are glugged – but Merlot is a conversation stopper; it’s Pinot Noir all the way. Such is the manner in which Merlot is portrayed in the script, the 2004 film apparently had a negative effect on sales. The stage adaptation is long at 2 hours 40 minutes, and some scenes could have easily been cut to prevent the audience from switching off. E
rrol Douglas is somewhat of an institution on Motcomb Street. It’s a given that he pretty much knows everyone in the area, after all he set up shop almost 20 years ago. A figurehead for luxury hairdressing and a stylist to the stars with clients including Naomi Campbell, Brad Pitt and Diana Ross, Errol has won every award and accolade under the sun, even receiving an MBE by the Queen for services to hairdressing in 2008 (rumours are he’s gunning for a knighthood too). As I step inside the salon, it’s bustling. Clients are flicking through magazines, hair is being cut and blow dried into shape and there are talks of a refurb in the not too distant future (not that it needs it). I’m immediately offered a refreshment (yes, please) and a menu in case I’d like any food (why not?) and then I head downstairs where my consultation takes place with the colourist. I must admit I have become somewhat downbeat about my hair in recent months, resulting in me either trying to rock the top knot or style out the boho-chic look (I’m not sure I can pull either off ). A combination of not using enough

conditioner, constant straightening and grey peeking through my lacklustre locks mean that it has needed some TLC for quite some time. Normally I opt for a full head of highlights, however I’m advised
I leave the salon with a spring in my step that I can achieve a similar effect through a tint. And I’m assured that when my hair grows, there won’t be a block line at my roots that I usually have from highlights. Bonus. As the colourist gets to work, it’s the usual process of highlights; taking approximately 90 minutes as I have long hair, followed by 30 minutes under the heat activation dryer. A shampoo, conditioner and treatment later and I head upstairs
where Errol awaits. Usually not wanting to have more than 2cm cut off, he assures me that my dead ends are just that and they need to go – so two inches is lopped off. He cuts the front of my hair to give it some shape and also assures me that when my hair is up it will soften my look. And as my hair is super thick, I’m also pleased when the thinning scissors make an appearance. As my hair is blow dried I can see the various colours of the tint coming though – it looks natural and doesn’t seem to be that much different from the highlights that I usually have. s I write this, there’s a ripple of excitement in Belgravia as we’re all very much looking forward to Richard Jones (soldier, magician and winner of this year’s Britain’s Got Talent), opening the Motcomb Street Party. Richard is a Lance Corporal in the Household Cavalry and also a member of the Household Cavalry Band. More about the Motcomb Street Party next month, but in the meantime those of you who saw Richard’s winning performance on Britain’s Got Talent might be interested to know that the producers of “the world’s greatest magic show” Impossible, have announced that the Lance Corporal will be joining the London production at the Noël Coward Theatre. Impossible opens on 13 July 2016, following previews from 6 July, and will run until 27 August 2016. I’m sure tickets will be in high demand.

SHANTIES The Journal heads northwards to sample the seaside delights of Seaham Hall in County Durham Elizabeth Finney

’m retrieved from Durham station and driven through the leafy city, cutting a path through the undulating green fields towards Seaham Hall, all the while chatting to my driver, Craig. The car rolls up a sweeping driveway, unveiling a stunning 18th-century house, fronted by an extraordinary whirlpool fountain. The house, built in 1791, has been used as a stately home for aristocracy (including Lord and Lady Byron), as a secret bottle centre for Scotch whisky during the American prohibition and as a hospital. It now stands as one of the finest hotels in the area, just a stone’s throw away from a beautifully tempestuous beach. New to Seaham, this is my first venture, and a blustery walk along the seafront makes for the perfect start to my stay in this relatively untapped spot. I mosey back up to the hotel to see my suite – strikingly themed in sand, turquoise and violet, it boasts its own living area complete with writing desk, dining table, luxurious sofa and widescreen television above a modern fireplace. A cabinet that’s fully-stocked with enough Nespresso coffee pods to raise a hibernating bear from its slumber is the icing on the cake – that and the bottle of Champagne left in an ice bucket to welcome me. The pool-like bath tub 26
and the ocean-sized bed are both more than welcome attractions, but one of the most striking things about the place has to be the view out into the well-kempt grounds and brooding woodland beyond. After a flute of Champagne I potter downstairs to the Byron restaurant to sample their evening offerings, which are sublime and imaginative. Most noteworthy were the appetisers – light shards of artichoke skin with pickled beetroot and goats curd alongside a surprisingly sweet carrot
meringue with carrot purée, which dissolves delicately on the tongue post-crunch. I opt for a hearty cut of lamb as my main with fresh greens, roasted spring onions and a side of golden new potatoes. The real treat of the evening comes in the form of my wine pairings, a series of robust reds brought out by the glass thanks to the use of the Coravin system, a wine needle that perforates the cork, allowing me to sample a single glass of truly extraordinary wines. These all combined so easily with the juices

in my main course that I could be convinced that this lucky lamb drank nothing but red wine its whole life. Followed by a baked Alaska topped with passionfruit coulis, I’m beaten by the intoxicating creaminess and kicks of sharpness. Rotund and content, I all but roll back to my room, where I indulge in a luxurious bath with skyscraper bubbles. I’ve never been more willing to relent to an early night – at just under six foot, I’m surprised to find that even I have a choice of 360°-worth of angles in which to sleep. Morning beckons, and another banquet awaits me – croissants, toast and condiments to start, followed by a yoghurt, granola and berry compote so delightfully dense I can literally stand my spoon up in it, though admittedly, it’s so tasty this trick doesn’t last long. After a soothing pot of jasmine tea, I head through the hotel, down a spiral staircase, through a pair of novel automatic doors and into a winding tunnel. The tunnel inspires notions
of secret lairs with its pink floor lighting and decked pathway atop a corridor-spanning pool of water. It entertains me so thoroughly that I’m almost disappointed to be met with a vast elephant statue, signalling my arrival at the award-winning Serenity Spa where I am to receive a Ytsara Samunprai treatment. This Thai herbal heat energiser consists of a 90-minute massage using a steamed lemongrass poultice, alongside blue ginger and peppermint essential oils to revitalise and renew the body. My muscles are more knotted than a four-yearold’s first pair of self-tied shoelaces, but this intense treatment has me unravelled. Quickly reminding myself how to use my limbs, I briefly retreat into a relaxation room with heated loungers and a gorgeous view out into the grounds before scuttling off to explore the rest of the spa facilities. I dart between the Jacuzzi in the hammam room, the samarium, the sauna with quartz crystal and, my personal favourite, the black granite steam room complete with an amethyst crystal. After all that heat, I trot unthinkingly into the icy plunge pool before leaping out and retiring to the outdoor terrace hot tubs to re-evaluate my temperature choices. To my own amazement I swim a few lengths in the 20-metre pool before trying out the fitness suite, complete with a glorious range of contraptions that make me feel like a child in a playground. My active morning reaches a peak after a stroll into Seaham, when I return for a spot of afternoon tea in the lounge. I settle down with a three-tier masterpiece of finger

sandwiches, scones and cake, blithely watching the world go by outside from an armchair. My final evening led me to the Pan Asian restaurant situated in the spa, Ozone. Its satisfyingly circular layout focuses on a central bar, which I sit alongside with a view to both the open kitchen and to the gardens. I sip on Prosecco and nibble prawn crackers until I’m presented with gargantuan prawn tempura, which are light and crisped to perfection. For my main I opt for the green chicken curry with jasmine rice – each mouthful was awash with creamy coconut milk and a myriad of aromatic flavours that left me mourning my empty dishes far too quickly. I top it all off with a mango cheesecake that convinces me that really, I’m perfectly happy to gain a stone if I could eat this wonder every day from now on. A game of pool and a Durham Gin and tonic (or two) later and I’m exhausted – my book and bed is all I need to polish off the day. Another wonderfully on-point breakfast followed by a frolic around the spa and I’m back in the suite, packing while dolefully looking at my beautiful surroundings one last time. I’m met again by Craig, who grins knowingly and asks me how my weekend has been. Thankfully, words can describe my time here, and I spend the journey singing Seaham Hall’s praises – in fact, the singing continues for months afterwards. Sales director Simon Tollit of Sotheby’s Realty tells the Journal about opening the Belgravia office, local networks and the power of global affiliates francesca lee

aving opened in Belgravia last month, Sotheby’s Realty is making a big impact in the local area and beyond. Prior to the move, the team were located in Mayfair and when the opportunity to aquire a prime site in Belgravia arose, they jumped at it. The office, which also corners Eccleston Street, consists of a team of 15 who work across sales, lettings, international and residential development and investment markets, with Simon Tollit heading up the sales team. Previously a partner at another local estate agent for nine years, the opportunity of a new challenge was too good to miss and he has been with the company since last October. “The fact that we’ve opened an office in Belgravia was completely by chance, which was very fortuitous for me. Obviously I know the area very well so it’s very beneficial for the business,” he tells me. The team currently have instructions across London including Marylebone, St John’s Wood and Chelsea, and are now currently focusing on driving the business forward in Prime Central London, in particular Belgravia, Knightsbridge and Mayfair. With Sotheby’s Realty being at the forefront of the international market (there are 845 offices in 63 countries), the worldwide connections that the team have are phenomenal. Indeed, Simon has recently returned from the Global Networking Conference in Las Vegas where he met contacts from all over the world. “Sotheby’s

is an internationally driven business and everyone is at the top of their game,” he says. As well as working with affiliates and partners across the globe that send Simon and his team a huge amount of referrals, the Belgravia office has a North India desk while continuing to build allimportant relationships closer to home. Simon explains: “We work closely with the auction house on New Bond Street which is really starting to pay dividends, and regularly attend events there to further cement the relationship.” With these national and international connections in mind, how is Simon finding the current market? “With recent changes to legislation and the increase in stamp duty, coupled with general uncertainty, there is no doubt that

this is a challenging market. However, as long as vendors are listening and taking advice from well informed agents regarding offers and asking prices, there are still a number of good sales taking place.” As well as immersing themselves both locally and internationally, the team recently launched a new development in one of the private boardrooms at the auction house in association with its jewellery and watch departments, making it a unique client experience. With local community initiatives such as the Garden House Art Project that Simon and his team were involved in back in April, there is a lot to be getting on with. “Sotheby’s is a global brand and if utilised correctly, our relationship with the auction house, global affiliates and the international teams mean that the potential is exceptional.
