a household name Ahead of the rebranding of the Belgraves Thompson Hotel to The Hari, the Journal catches up with general manager Andrew Coney to talk career choices, mint chocolates and big changes Emily Adams

A
hotel manger, an actor and an undertaker,” starts Andrew Coney, general manager of what will soon be The Hari. He’s not telling me the start of a joke, although that wouldn’t be surprising given Andrew’s mischievous character, but rather his three career choices at school. The first he’s achieved over and over, the second he dabbles in, and the third, well not even Andrew is sure what his 16-year-old self was thinking. Thankfully, he stuck to his first choice, which has seen him manage the InterContinental Westminster, market a golf resort in the Algarve and open York’s first five-star property. Now he’s settled in the capital and he’s been warmly welcomed into the local community. “I can’t go into Waitrose without being spotted,” he laughs. He’s not got carried away with his new-found stardom though: “I think that’s the real charm of Belgravia. From one day to the next you meet so many different people, it’s never
the same. Aside from the constant temptation of shopping, I love this area,” he says. The Journal first met Andrew when he joined the 85-bedroom hotel in 2014, when it was ranked 100 out of 1000 London hotels on Trip Advisor. Today, Andrew’s work speaks for itself as the hotel sits proudly at number 26. “It’s not our only benchmark but I take a lot of notice to what our guests think. “I’m not a conventional manager,” he continues. “I probably frustrate people by doing things spontaneously,” he laughs, a sound you’re never far from hearing around Andrew. “I take running the job very seriously, but I’m all for celebrating what we do here.” It’s now been more than two years since he joined but he hasn’t been resting on his laurels, far from it in fact, as when I visit the hotel, Andrew is preparing for the biggest change since he started; a change that will see Belgraves Thompson take on a whole new identity. The hotel will now be
run by The Harilela Group, and named after owner Aron Harilela’s father. Aron has always had an ambition to create his own brand; one that goes against conventions, much like Andrew himself. At The Hari, the experience will be fun and quirky and unlike its rivals. “Putting a mint chocolate on a pillow is something we should have done away with years ago – it’s meaningless,” Andrew tells me. With Aron’s vision, Andrew promises a hotel peppered with eccentricity. “You might go to your room and find a message pinned to the mirror saying ‘Have you looked under your bed?’ and there you’ll find a gift.” Andrew insists that the hotel will endeavour to learn more about its guests and surprise them. Whether it’s finding out their favourite drink or delivering their country’s local newspaper to them, The Hari will go that one step further. Andrew thinks a lot of hotels take themselves too seriously, but that’s just not his style. “A degree of wit is expected. I think it’s the way forward.”
Andrew is also training the team to have a more cultural knowledge of Belgravia and its quirks, to offer guests a richer taste of the local area. Come November, we’ll also see the hotel’s Pont St restaurant transformed with a new name, look and Italian theme. A rebrand is a daunting prospect for any business, but Andrew knows it’s a change worth making. “We need a bold, distinctive name that raises questions. People ask ‘Why?’ and it opens up conversations. We’re having lots of fun with it,” Andrew smiles, and I know he really means it. Getting to know his guests is what he thrives on. “I’m smitten,” he says. “I have a committed team who love what they do. I don’t want to move on.” We can all be grateful that Andrew left behind dreams of acting (and undertaking), because I can only see one man suitable for taking on the leading role at The Hari. 20 Chesham Place, SW1X 8HQ, 020 7858 0100, thehari.com 7

f cycling in London wasn’t such a deeply terrifying prospect, I’d spend my life on two wheels, winding around the parks and commons. I’d smugly explore the places cars can’t and revel in the freedom of going wherever I wanted with my two-wheeled steed. Thankfully, there’s one place in London that meets my demands. It’s a small community nestled between sky scrapers with a quaint village feel to it – Belgravia is a cyclist’s safe haven in a chaotic capital. The Jumeirah Lowndes Hotel is making sure its visitors make the most of the area with its new Belgravia & Beyond by Bicycle self-guided tour. Having teamed up with Kingston Bicycles and Tally Ho! Cycling Tours, it’s created four bespoke bikes along with a guided map. Based on the classic Belgravia bicycle model, the bikes have been redesigned in patriotic red, white and blue and decorated with British icons; think red telephone boxes and the Union Jack. Guests at the hotel can take the bikes for a spin when they wish and

I head off into the heart of Belgravia and with one eye on the cars around me,
Belgravia and then beyond. Misreading the map when it suggests I dismount and walk to Hyde Park, I end up on one of the busiest roundabouts in London. There are beeps and horns, I hear brakes screech and in all the panic I momentarily forget how to pedal. Narrowly
avoiding the path of an oncoming bus, I roll into Hyde Park looking a little rattled. Take my advice and stick to the map; Jumeirah knows what it’s doing. Cycling through the trees and weaving in and out of pedestrians, the sun is warm on my skin and a band is playing Jackie Wilson’s (Your love keeps lifting me) Higher and Higher as I drift along – I feel utterly contented and fortunate to live in London. Swinging round the Serpentine Lake, I discover one of the ‘hidden gems’ – the Serpentine Lido, next to an ideal lunch spot. If that’s not for you, you can always stop off at Motcomb Street for some nibbles at The Fine Cheese Co., or if you’re craving something sweeter, Rococo Chocolates is a tempting sight opposite. Satisfied from lunch and feeling a bit more daring after taking on that bus, I decide to go off-piste and discover more of what’s around me – what a way to see the city. The Journal speaks to Justin Salisbury, co-founder of the boutique hotel Artist Residence in Belgravia
M
y day generally starts at 6am, though hours tend to vary, running hotels often means we’re working 24 hours a day, seven days a week, but luckily my wife Charlotte and I love what we do! We spend our mornings at home in London, with our new baby, Blake. We’ve recently finished a year-long renovation – so we like to spend as much time there as we can. It’s a nice walk from home to our London hotel in Pimlico, so we head off early, Blake in tow, to meet with our team. In the past year we’ve focused our attention on Pimlico, with the opening of the Cambridge Street Kitchen and the Clarendon Cocktail Cellar. First off we’ll check in with our chef, see how his new dishes are being received and how the floor is working, then we’ll meet with our hotel manager to hear guests’ feedback from the night before. Our team are so important to us, they’re our eyes and our ears – we’re always looking to improve, so it’s crucial for us to listen to what they, and our customers are saying. After this, we set up our laptops and check emails in the Club Room, which we often hire out for shoots, meetings or private parties.

It’s important that we speak with the managers of our hotels in Brighton and Penzance too, so I’ll give them a call and check in. One of the great things about having sites outside of London is that we get to spend time in amazing parts of the world – we often make ‘quick’ trips down to Cornwall, where we’re relaunching our new cocktail lounge and garden.
Lunch is either at the Cambridge Street Kitchen where our chef, Radek, changes the menu seasonally. Lately I’ve been going for his wild mushroom risotto, while Charlotte loves brunch so she’ll have avocado and poached eggs. If we fancy some fresh air, we’ll go for a wander and stop at Daylesford for a bite to eat and pick up some groceries
for dinner. Our afternoons are reserved for meetings and planning. Charlotte and I are involved in every single part of the business from interior design to recruitment, training and marketing – we have to wear a lot of hats and they’ll change depending on what’s next on our to-do list. At the moment our list covers everything from hosting training sessions with our service team and undertaking menu tastings, to updating our rooms and looking for new sites. After meetings we pop into our downstairs bar, the Clarendon Cocktail Cellar, which opened in December in the building’s old beer cellar. We’re currently collaborating with the Lawrence Alkin Gallery, which will be taking over the walls in the new bar with its collections. Stephen, our bar manager, has based the drinks menu on famous artworks, so is designing a special cocktail for the takeover. These days, I like to be home early to put Blake to bed and now that our new kitchen is finished, we’ve traded takeaways in favour of home cooking. t’s just turned rush hour on Hyde Park Corner. It’s all bumper-to-bumper traffic with noxious fumes, maddened drivers, hands on horns and cyclists risking too much. Courier bikes threaten to weave their way through seemingly impossible gaps. And there, amid this urban chaos in a world of their own, and at a pace of their choosing, plod the city’s working horses. Yes, elsewhere in the city the police use horses to patrol football matches and, yes, occasionally children treat them as pets and run
[CULTURE] out to feed them carrots. Horses even reach recreational status in Hyde Park after coming out of their Lancaster Gate stables. And further afield, riding lessons take place in Richmond and Wimbledon. The use of working horses peaked in the early 20th century. Then came faster and cheaper and, of course, mechanised transport. Later on, the marketing men saw their yesteryear promotional appeal. The breweries that continued to use them for their town deliveries led the way, with their heavy-horse operations becoming part of their public relations departments, be they Whitbread, Young’s or Samuel Smith. The rag-and-bone men, characterised by Steptoe and Son, have finally, and sadly you might argue, abandoned the streets of London. Soon department stores wanted to offer a personal service taken to the extreme, in a way that can be compared with foreign capitals that offer horse and carriage tourist tours. Harrods uses horses for delivering goods. In 1985, Mohammed Al-Fayed bought the store and soon established a horse-drawn delivery service. The store boasts eight Friesian horses: four stallions and four geldings. After months of training, the young horses are finally allowed to mingle with the London traffic and work on a rota system, spending six days at a time in Knightsbridge. They can be seen leaving the store at around 9am for their daily errands to local hotels and palaces within a four-mile radius, working mornings and afternoons for up to five hours each day. A range of voice commands are used to control the horses. They are taught to respond to these verbal cues from an early age and, as a result, the drivers never have to pull on the reins to get them to stop. After their years of loyal service, they are retired at a ripe old age to enjoy their final days in green pastures. They are shod every four to six weeks, even if their shoes are not run down – this is so

Horses have always played a major part in the life of the monarchy their feet don’t get worn or split. Once, the store thought of phasing out the horse-drawn services but locals rallied around and requested for them to stay. People love them, and children stroke them and stand watching
them. So, despite the impact of modernisation, working horses on the streets of London look set to remain a familiar fixture of the 21st century. And, of course, horses have always played a major part in the life of the monarchy. Recent royal celebrations have seen a considerable equine presence on the streets at the Queen’s Jubilee, royal weddings and other notable events. It is the unique privilege of the Household Cavalry Mounted Regiment to carry out the mounted ceremonial duties on state and royal occasions. They are brought out daily from their Knightsbridge barracks and can be spotted performing their routine exercises at dawn. And, finally, there’s the Royal Mews in Buckingham Palace, which is often open to the public. The state coaches and other carriages are kept here, along with around 30 horses, primed to police the royals, all pimped up to their pomptastic best. ucked around the corner from Sloane Square is a hidden gem in SW1’s crown. Salon Sloane is the newest venture from John Vial and Belle Cannan, two familiar faces in the world of salon styling who have built up a portfolio of prestigious clients over the years. Salon Sloane is a much smaller venture than their previous one at RealHair Salon in Chelsea, but it’s already a successful one. In atmosphere, it’s like a well-worn pair of slippers; comfortable and perfectly accompanied by a good catch up and a cuppa; but in style, it’s more like a pair of Chanel loafers – simple and sophisticated, with just the right amount of glitz and glamour. Everything’s gonna be just wine The Journal learns the ins and outs of the wine business from master of luxury winemaking Chris Carpenter dylan maguire
a
t 6 ft 5 in, Chris Carpenter cuts an intimidatingly large figure, but I can instantly see that he’s a gentle giant. A Chicago native, he speaks with a comforting deep north-eastern drawl that commands attention. But today, the attention is on a line of five wine bottles in front of me. Chris is a winemaker of luxury wines at Jackson Family Wines, one of the largest vintners in the world. Chris’s wines are stocked in Harrods and once a year you’ll find him making the trip from his beloved Napa Valley to our city to teach us a thing or two about his craft. Aside from slurping it happily with an evening meal, my knowledge on the winemaking process is limited. Chris, on the other hand, knows more about it than I know about myself. His family may have all pursued careers in medicine, but despite his degree in biology, it wasn’t quite for him; he found his passion in natural science. Fast forward two decades, and Chris sits in front of me, an experienced winemaker (specialising in Bordeaux varieties) with 15 vineyards

under his control. How does he juggle them all, I ask? “Yeah,” he pauses, “that’s a good question.” With a strong team behind him, Chris creates four wines from Napa Valley and one from Australia: Lokoya, Cardinale, La Jota, Mt. Brave (which you may have spotted on the menu at Boisdale) and Hickinbotham. “The first thing you need to know,” Chris starts, “is that you can’t make good wine without good vineyards. Once you start working with vineyards, it’s really hard to imagine anyone else dealing with it,” he explains. “It’s like being
married. You get ties to these pieces of land. One of the great challenges is moving into a new vineyard and trying to learn its eccentricities, like moving into a new relationship.” Mention any year or any variety and Chris will know every minute detail of that harvest, be it the weather, the yield or the exact taste. “In 2009 we had extremely cold vintages; in 2015 we had a good vintage but 30 per cent less crop. That’s what keeps it interesting, there is such variability.” Talking through the wines in front of us, there’s one that strikes me as the embodiment of what Chris does each year. Cardinale is made up of different vineyards from around Napa Valley, and each May
he’ll sit down to blend them together, choosing from 50 different wines. “I think of it like I think of music. The conductor interprets where the strengths are and layers the sections together. That’s what I do with Cardinale. I take wine from Mount Veeder and I layer it with Howell Mountain or Diamond Mountain and Oakville.” With his fine-tuned knowledge and deep understanding of his vineyards, Chris creates the finest of wines for us all to drink happily with our evening meals – I’d say cheers to that! It’s always a lovely evening and such a nice way to welcome residents, traders and businesses back to Belgravia after the summer holidays, as well as launch their 2016-2017 programme. This year’s Welcome Back Garden Party will be held on Thursday 8 September from 6.30pm. There will be a chance to enjoy drinks and canapés in the garden, as well as get involved with a tombola stall, with all tickets bought at the tombola by party attendees winning a prize. The Welcome Back Garden Party is preceded by Low Mass at St Paul’s Church and everyone, from all religions, is welcome to attend. Manoir born The Journal embarks on a culinary journey at Belmond Le Manoir aux Quat’Saisons BETHAN REES
T
o me, Raymond Blanc OBE has always been the cheeky yet charming, esteemed yet humble chef of his generation, who despite being a living legend in the UK, has not lost an ounce of his French charisma. Hailing from Besançon, the capital of the FrancheComté region of France, his love for cooking comes from his surroundings of the local terroir and his mother, who would use fresh, seasonal produce to create meals for the whole family. When he arrived in England to work as a waiter at the Rose Revived in Oxfordshire, the chef was struck with an illness and Raymond stepped in – since then he can rightfully call any kitchen his second home, maybe even first. In 1977, Raymond opened his first restaurant in Summertown, Oxford, Quat’Saisons, which was awarded two Michelin stars within a couple of years. However, it was in 1984 that his true vision was to come to life – Belmond Le Manoir aux Quat’Saisons, a hotel and restaurant in Great Milton and it received two Michelin stars in its opening year, an astounding feat for anyone to accomplish, and has held them ever since. The hotel is the epitome of an English countryside sojourn – it’s

what postcards are made from. The manor house has 32 individually designed suites and rooms to which its restaurant has 32 covers, so make sure you book well in advance if you’re thinking about eating here without being a guest. I’m residing in a studio suite for the night, which is named Manon. The room is the perfect combination of a classic British countryside elegance and French provincial-style, which is reflected across the entire estate. With giant wooden beams, a woodburning stove, grand wooden
chest of drawers and a gingham awning across the bed, this would be the perfect spot to spend a rainy afternoon – especially given that the hotel has a complimentary carafe of Madeira wine in the room, which is best enjoyed in the fluffy dressing gowns and slippers provided. Having soaked in the marble bath, I’m ready to indulge myself in a life-long dream of mine: dining at Belmond Le Manoir.
[LIFESTYLE] salmon with pickled cucumber, potato and watercress, which is the perfect fresh start to the indulgent meal. It’s followed by a risotto of wild mushrooms and winter truffle and then pan-fried Cornish sea bass with scallop and cauliflower. Of course, white wine is usually served with fish dishes – however, I think this is quite an old fashioned ideology, and so does Belmond

The restaurant reminds me of being in Mauritius – it has a certain colonial, plantation feel to it due to the impeccably potted tropical plants trees acting as the focal point of the room, straw-like blinds and the pointed ceiling with rotating fans. However, its menu is a million miles away from the Indian Ocean island. It’s a fusion of classic French techniques, with twists of Raymond’s contemporary
eye for flavour combinations and British ingredients – many of which are grown on the site in the Kitchen Gardens of Belmond Le Manoir. The restaurant offers diners a choice of à la carte, five-course and sevencourse tasting menus that change regularly due to Raymond’s desire for sustainability and seasonality. I opt for the five-course tasting menu with paired wines – the hotel’s wine cellar is home to approximately 1,000 different wines from around the world, with 60 per cent being of French provenance. The first dish to land on the table is a confit of oak smoked Loch Duart
Le Manoir. The sea bass is paired with Beaujolais that is so light and delicate, it doesn’t overpower the fish in any sense and its flavour profile of spice and berries cuts through the texture perfectly. Almost full to the brim, I prepare myself for the final two courses – roasted loin of venison with celeriac and truffle and a strawberry “theme”. The venison requires a full-bodied wine to match and the Zinfandel from California challenges the rich meat faultlessly, and the dessert is met with a Jurançon wine – the powerful punch of pineapple with just a hint of wood spice is the perfect companion. It’s been a lifelong dream of mine to visit Belmond Le Manoir, and Raymond and his team did not disappoint – in fact they’ve made me want to visit again. With its love for seasonality, there’s no reason why you can’t visit at least four times a year. Junior Suites start from £865 for two including breakfast. The development has also already won the 2015 Best Global BREEAM Residential Refurbishment Award for its sustainable design. With the help of David Morley Architects, the previously dilapidated hotel has been carefully reconfigured to create bright and spacious homes in a highly desirable location, but with a modern twist. While the property’s original period features have been preserved, and in many cases enhanced, innovative sustainable designs have been subtly added to minimise carbon emissions and cut energy costs. With internal wall insulation, rainwater harvesting, PV panels, whole house ventilation and heat recovery, each apartment combines cutting edge technology to reduce its carbon footprint. aroline Phillips isn’t your average estate agent in Belgravia, there’s something that gives her that edge; she's also a local resident, giving her strong insider knowledge and making her a great ally when you’re considering moving in or around the area. “The phenomenon having the greatest effect on the market is hesitancy and we are seeing many people holding onto their investments and considering the move from sales to lettings. This has led to a high level of stock coming onto the market. Our research shows that, in the three months leading up to the end of June, the prime central London market has reported a 49 per cent rise in the number of new rental properties being placed on the market. It’s an applicant-biased market and people are savvier than ever with the information available to them.” With that in mind, what guidance is she giving to landlords? “The advice that I give to every client is that you have to be competitive, be willing to work, and be accurate on pricing.” Caroline tells me that in the current market it’s all about re-educating ourselves and understanding that prices have changed; being honest with clients about that is important. Due to uncertainty surrounding the global economy, rental value growth has declined across prime central London in recent months, falling by 6.6 per cent in Belgravia. Despite the decline, Caroline predicts that it will start to slow down. “I don’t see a big

dip happening. Belgravia is still very desirable and that’s not going to change.” In fact, she thinks it’s becoming more attractive and with an average rental period of two-and-a-half years and a renewal rate of 80 per cent for this financial year, it’s a clear sign that tenants are happy staying where they are. “Belgravia’s becoming trendier so we’re seeing more young professionals.” In fact, 60 per cent of Knight Frank's deals in the £500-£2,000 a week bracket are primarily young professionals. Many of these clients are a result of corporate relocations, which Knight Frank has seen increase by 72 per cent between April and June this year compared to the same period in 2015. The growth in relocation budgets, due to the effects of a weaker Sterling, has also seen tenants looking to move to higher-value areas and properties, creating a more active market in

Even with a higher number of professionals in the area, Caroline tells me that Belgravia is incredibly popular with all nationalities and ages, offering a vibrant, interesting and multicultural hub to live in. “You’ve got boutiques, an abundance of places to eat and drink (anything from Michelin starred restaurants to charming pubs) and great local schools which are surrounded by beautiful parks – there's something for everyone.” With great transport links and easy access in and out of the city, Belgravia is becoming the place to be and there’s one local I’d happily trust with helping me rent in the area.
