“On the first day of Christmas my true love gave to me…” As ‘five gold rings’ is hummed around The Cheshire Magazine office, it’s clear we’ve truly got into the Christmas spirit while compiling our festive issue. So much so that our gift guide (page 39) is even based around this old English carol – we’ve lords a-leaping (gifts for him), French hens (gifts for fashionistas) and, of course, the ultimate partridge in a pear tree. It certainly inspired us, so we hope it helps as you embark on your gift buying and home decorating. We’ve also been busy making our own wish lists – top of mine being a pair of Monsieur Louboutin’s YouYous with apostrophe heel (subtle husband-hint there) – and it seems wishes can come true, as I was exclusively invited to interview the man behind the shoe at his new boutique in Selfridges Exchange Square (page 30). For those dreaming of white Christmas, we head off in search of the Aurora Borealis (page 112), seeking colours in the sky and adventure under the stars, followed by some stylish skiing in Gstaad, discovering it’s as much about the aprés as it is the ski (page 118). riginally from the small village of Hollins Green in Rixton, Caroline Swain had always aspired to a career in which she could be master of her own destiny, admitting that she “had aspirations as a teenager of taking over the world”. It should come as no surprise, then, that at 31 she is now regarded as one of the go-to solicitors for representing Cheshire’s multimillion-pound disputes, having joined BPS Law in 2010 and expanded the firm into South Manchester and Cheshire, building up a successful matrimonial law department in the Hale offices. “I have always had a strong work ethic and I wanted a career where that ethic would make a difference,” she explains. “I wanted to work in a field where I wouldn’t be restricted in getting to the top so long as I was able to prove myself. I realised soon after qualifying that the law would give me the opportunities I desired, and in 2013 I was made the first female Partner of BPS Law, a firm which had been established since 1948.” Caroline represents some extremely high-profile clients – saying she enjoys “the diva” in them as it “brings with it a high demand for outstanding service and results” and constant new challenges which are her underlying motivation to succeed. “The results I achieve for my clients are the highlight of my job,” she says. “I’m fortunate to represent clients who, in the vast majority of cases, have a legal battle to fight, and the feeling of fighting that cause for the right reasons and achieving a result which brings financial stability for them is extremely rewarding.” Caroline now lives in Stockton Heath, Warrington with her husband and three children (all under the age of six), spending weekends enjoying quality time together in the outdoors or finding fun and interesting places to visit, then afterwards indulging in a good pub lunch and a tipple. Nevertheless, Caroline prides herself on being contactable outside normal working hours in order to give her clients the best possible support. “I am accessible around the clock and often deal with issues very late at night and on weekends. My clients need someone to guide them in the right direction and I quickly learned that family-related disputes don’t stop at 5pm – on the contrary that’s when they generally start! I also have a lot of clients overseas in Dubai, Thailand and India, so the time difference has to be accounted for and my advice to them is given when they need it in accordance with their daily routine. I ensured from the outset that I was able to give both my work and my family the attention they need at the right times. I have to be super organised, and the perfectionist in me makes that a little difficult sometimes – but so far so good!” (bpslaw.co.uk) 15


ENTREPRENEUR OF THE YEAR Emma Nawaz, of Blackstone Solicitors in Hale, has been shortlisted for the Entrepreneur of the Year at the forthcoming Junior Chamber International (JCI) Manchester Young Talent Awards 2015. Emma set up Blackstone Solicitors in 2010, and the firm has since moved to offices on Cecil Road Hale, grown to include 11 staff and last year launched a property department. Emma and the team work with a range of local people and businesses. However, they also have both national and international clients included within their portfolio. THE PERFECT MARTINI Bond was a master of many things; an icon famous for his impeccable taste. But expert mixologist-cum-scientist Stuart Bale’s research reveals that Bond’s taste in martinis was flawed. “Shaking and stirring serve two purposes: to both chill and dilute. Shaking cools the drink, however it over dilutes and leaves it watery. As much as 10 per cent extra water is SPECTRE: THE 24TH BOND added by shaking instead of stirring, ENTRY FROM MGM & SONY therefore, to enjoy the flavours of a gin martini, stirring is the only way. “A perfect martini should taste like ‘exquisite water’. The most difficult aspect of mixing a martini is getting the balance between the flavours in each spirit, and the actual alcohol. “Gin provides the best foundation for a good martini as its layers of botanicals help to balance out the vermouth. In comparison, vodka does not have this complexity of structure and in turn does not mix well with vermouth. “Salt works as a flavour enhancer. Our bodies crave it, but it also reduces the surface tension of liquids, allowing more aromatic compounds to escape and our perception of aromas to increase. 50ml Gin Mare 25ml Lillet Blanc 0.5ml salt solution (20g sea salt, dissolved in 100ml water) 1 small whole strawberry Method 1. Add all ingredients to a metal mixing tin filled with ice. 2. T

he excitement of a London-based friend when I told him I was reviewing the Hawksmoor Steak & Seafood restaurant in Manchester (the first outside London) made me realise that my home town is actually the foodie hub of the north. Housed in the Grade II listed courthouse building built in 1896, this late Victorian building oozes class, and my husband and I felt it as soon as we stepped through the doors off a busy Deansgate. Indeed, the restaurant is named after Nicholas Hawksmoor, the 18thcentury architect famous for his Baroque architecture and sense of theatre. And so to cocktails. There’s an extensive menu, but we went for our old faithful – a classic Champagne Charlie. Once we’d soaked up our drinks and the atmosphere, we were taken through to the main dining area and handed the truly mouthwatering menus. Robyn, our waitress, introduced herself and gave us some tips on ordering the steaks, along with some of her personal recommendations, verifying what I’d already been told by my London friend. For starters we ordered roast scallops with tarragon and garlic, which were delicious, full of flavour and coated in a light buttery sauce. My husband chose ginger pig belly ribs, which

melted in your mouth, delivering on everything they’d promised to be and more. Known for its steaks, there was no question in our minds when it came to choosing the main course. Of the various cuts, the bone-in prime rib for two won the contest, and of the vast array of delicious sides to choose from, our selection was triple-cooked chips, baked sweet potato, roasted field mushrooms and spinach with lemon and garlic. Robyn recommended the anchovy hollandaise too, which was distinctive and not as fishy as you might expect! Be prepared for quite a feast, though, as there’s no scrimping on portion size. Cooked to perfection, we like good steak medium rare and with a good flavour, so we weren’t disappointed. After such a meal there wasn’t a lot of room left for desserts, but I wasn’t giving up plumping for the light option of the Champagne and strawberry jelly – the perfect choice to finish on, as it’s both refreshing and super tasty. Our evening was still young, though, as we were meeting my cousin for birthday celebrations. The team noticed we were armed with gifts, and with our drinks at the bar they produced a huge Ferrero Rocher with candle as a surprise. A thoughtful touch and one that will bring us back very soon. Christmas dinner Graham Tinsley MBE is no stranger to pressure, having cooked for the Queen on numerous occasions. He shares his top tips for the perfect turkey and also offers an alternative celebration dinner recipe for those looking for something a little different

orn in St Helens, Lancashire, Graham Tinsley MBE began his career in catering at the Midland Hotel in Manchester under the guidance of renowned chef Gilbert Lefevre. After a time working under Anton Mosimann at the Dorchester Hotel in London, he spent nine years with De Vere Hotels and, in 1997, was appointed to the original team responsible for the opening of Carden Park Hotel. Thirteen years and an MBE later, Graham returned to Carden Park as executive chef.

What are your favourite elements of your role? What makes it so special? The business at Carden is so varied, one day I could be catering for a premiership football team, the next a wedding or a celebrity golf tournament, and we have an incredibly close team who work well together.

How would you rate Cheshire as a foodie hub? Cheshire has a great farming tradition and prides itself on a plentiful array of home-grown produce. I just wish it had a coast line.

Spring and early summer are my favourite times, when all of the local vegetables come into season, but every season brings a different treasure to work with.

What’s your favourite food trend? I’m not into food trends, but we have just launched our own signature flavour of ice

cream in conjunction with The Ice Cream Farm just down the road. It is a combination of plum and stem ginger, so perfect for festive puddings and winter treats.

What will you be cooking at home this autumn/winter? I’ll be getting the pressure cooker out again at home to make some warming, classic casseroles. My favourite winter ingredients are sprout tops, Jerusalem artichokes and forced rhubarb, but I have to say this duck recipe is one of my favourites.

Any tips for the Christmas turkey? The perfect way to cook a turkey is to invest in a food thermometer and take away the guess work. Test the temperature at the thickest part of the thigh and make sure the temperature is between 73-75°C. Also, allow the bird to rest lying on its breast, don’t worry if the breast squashes a little bit, it’s better to have all the juices resting in the meat rather than in the carcass. Pa n r o a s t e d b r e a s t o f d u c k with leg cromesquis, black p u d d i n g a n d p o tat o l ay e r , b r o c c o l i s ta l k s , s q u a s h a n d toasted quinoa Ingredients: 1 whole duck 50g black pudding 1 slice of white bread 25ml milk 2 potatoes 25g butter 1tsp chopped sage 80g broccoli stalks 100g butternut squash 30g breadcrumbs 1 egg 50g tender stem broccoli 10g quinoa 50ml duck jus Method: 1. Take the breasts and legs from the duck and place the legs into a pressure cooker and cook until tender. Leave the breasts to one side. 2. Remove the meat from the duck legs and blitz with the bread soaked in milk. Form into balls and wrap in breadcrumbs (cromesquis). 3. Slice the potatoes and black pudding thinly and layer in a dish with the sage and butter, and cook with a heavy weight on top. 4. Dice the squash and puree the trimmings. Parisiene the broccoli stalks and blanch. Blanch the squash cubes and the tender stem broccoli. 5. To serve, pan roast the duck breasts to pink, deep fry the cromesquis and toast the quinoa. Drag the squash puree onto the plates, carve the duck and top with the quinoa. Place a square of layer cake next to the duck and top with the fritter. Garnish with the broccoli stalks, broccoli florettes and the squash cubes.

Bread Sauce Ingredients: 100g fresh white breadcrumbs ½ litre/1 pint full-fat milk 1 onion, peeled and quartered 4 whole cloves

2 fresh bay leaves 1 tsp peppercorns ½ teaspoon of grated mace 1tsp salt 30g/1oz butter Fresh grated nutmeg Method: 1. Pour the milk into a saucepan. Press a clove into each quarter of the onion. 2. Add the onion quarters, bay leaves, peppercorns and the blades of mace (or sprinkle the ground mace into the pan) along with the salt and bring the mixture almost to its boiling point. 3. Remove the pan from the heat. Cover the pan with a lid and let the ingredients infuse for at least half an hour. 4. After the mixture has infused, place the pan back on a very low heat. Using a slotted spoon, remove the onions, peppercorns, cloves, bay leaves and the blades of mace. 5. Add the bread to the saucepan and cook for about 15 minutes, stirring every now and then, by which time the sauce should have become thick and warm. 6. BIRD OF PARADISE Famed for his red lacquer soles, Christian Louboutin is akin to royalty in the fashion world and when it comes to making women feel great. Louisa Castle speaks exclusively to the beret-wearing designer

I

am nervous to meet the man behind the shoe. First and foremost I do not want to bore him with my questions, and second I have no idea what to wear – never mind what shoes should adorn my feet. As I arrive at Selfridges for my meeting I am collected and confident in my best bit of Chanel. Monsieur Louboutin is busy at a photo call by his geometric entrance display, charismatic and charming in his tweed suit and red beret. He’s causing quite a stir as the crowd of large-screened phones records the moment. In the sanctuary of the personal shopping suite it is at last my moment as I am introduced and we settle down to chat, before he is whisked away for some shoe-signing at his new boutique within the store. My first question is one about inspiration. It is widely reported that Paris’ night life and the dancers on stage were his initial inspiration, along with a visit to the Museum of African Art, and I’m curious to know the story of his red-lacquer sole. “Inspiration comes from everywhere. If you look around you and see objects or hear a conversation.” Louboutin was working on a new shoe design inspired by Andy Warhol’s ‘Flowers’ when something

didn’t quite click between his drawing and the prototype in front of him. The sole was big and black and heavy. But an assistant of the time was painting her nails red, and that was the birth of a new Louboutin Pantone colour. Inspiration comes from all around. “One thing I have always loved is textile and architecture,” Christian explains. “I think that love of wood and well-made things comes from my father, who was a carpenter. That love of pure form and details. “Movies inspire me too and I am a man who travels. Eyes have a different perception to what slowly stays with you in the memory and comes back to you. It’s almost not your decision. It’s like a beautiful, classical house with influences from its owner and their travels. They may love India, but it will be shown through the striking colours and ribbons rather than taking over. “When I design I go to be alone. In the countryside, with no one and no phone, and I concentrate. Serious with pleasure. “I am very blessed. I do something that I love. And when you do something that you love it is up to you to keep the love, the passion. People are still excited by my work, and that comes from something very simple – respect and love. “I was raised by my mother and three sisters. I know how much shoes can mean to a woman, what intimacy they can provide that no one else can ever know, and my shoes for women were inspired by the showgirls – like birds of paradise. What else do they need? They have feathers! “They aren’t all about being sexy. They are about confidence, and there is an element of seduction often. I know of one lady who was crossing the street in a pair of my shoes and her future husband passed her and then went back to

ask her out. We laughed as he was very shy. But it was the shoes that attracted him, and she wore some at the wedding. “A tool of communication. They go beyond fashion. The dictat from a magazine saying there’s a new trend doesn’t affect us much at all. “Women embrace the shoe as part of their nudity, an extension of themselves. I remember meeting a woman in Paris who bought a pair because she wanted to be at eye level with her new boss. They gave her the confidence at work.” Several years ago, Louboutin launched a men’s collection. “I have always designed men’s shoes but always for me and my friends, never professionally,” Christian tells me. “I had a very classical French view that a man never thinks like a woman. They don’t get excited about their shoes. They were traditional, beautifully made pieces to be passed on to their sons.

“Then the pop singer Mika asked me to design shoes for his tour. It was funny that he was asking so I asked why. Also raised with three sisters, he said he couldn’t really explain but kept seeing how the women in his life thought so highly of my shoes and what they added in confidence. He said ‘For me, on stage, I need to have things like it.’ “I was thankful for him explaining. Now I understood; instead of the traditional, he wanted exciting. That conversation opened the lock and I designed my first collection thinking of him. There’s a showgirl in every woman and every man, in a way, providing you with a show.” And so to talk of Christmas and the pair of iconic Youyou App peep-toe courts I shall be hoping to find under the tree. “I think of Christmas in a cold place,” Christian begins. “I don’t want to see the sun. This year maybe I will spend it in France or Egypt, though. “It always reminds me of childhood. I never believed in Santa Claus. I couldn’t see how he could get down the fireplace when we had no fireplace at my parents’ apartment. Something was wrong to me. I am an atheist and whilst I loved the idea, whoever invented the story had to be a child. I don’t believe that my parents thought I believed. No one was fooling anyone, but you play your part. “Christmas is really the whole period, not just the day itself. Solar maybe. I am addicted to my phone, but I always run out of battery and I’m always looking for a plug. “I love to give presents more, but I still do a me-to-me gift, though! This year I ordered a beautiful new sail for my sailboat.” In a career which spans more than

24 years, there must be some memorable moments he can share, I ask conspiratorially. “One of the biggest honours in my career so far is when I was asked to provide my shoes for Yves Saint Laurent – the most famous couturier in France himself, not the brand – in his last show, which was a retrospective. It was a beautiful moment and so exciting, but I was so full of emotion when I saw my shoes in his show. “One of my most scary moments, funny in hindsight, was when Tina Turner asked me to do the shoes for her final tour. They were very high. It was in Madison Square Garden and I turned up to watch the show, looking at the stage itself, which was full of scaffolding. I was looking and trying to see where she would enter the stage, and the only place I could see was from the top. I was thinking, ‘Oh my God, she’s going to break her neck and I will be responsible for the queen of soul breaking her neck!’ I was so excited and petrified when she entered, but she didn’t fall.” And to the future of Christian Louboutin? “To keep going as we are. It has been a very nice adventure so far. I started the company with two friends of mine and we still own it. In the very DNA of the business is freedom, and that is one of the best things a person can have. Festive light

Tall and fat, short and skinny, round and squat – it’s not a weight problem that we’re dealing with this festive season, but Liz Taylor is having a candle dilemma

C

hristmas makes me think of romantic candlelit rooms, roaring log fires and the traditional Christmas tree. But the days of tea lights and church candles are long gone. Style has taken over. Atmosphere, scent, colour, vibrancy… they are all created by using a careful selection of Apple and Pear Mini candles in your home or party. I scour Europe choosing the Candle (set of 2), latest in candle design. Giant candles that can burn for hours with £29.95 (miafleur.com) gorgeous, subtle scents. Small, beautifully coloured candles that form the heart of a vibrant table display. Tall soy candles, suspended from oversized floral chandeliers. They all add colour, atmosphere and elegance to a party room. Be creative and innovative in presentation and people will wax lyrical (sorry) over your displays. Candles in vintage tea cups, Christmas baubles, tin cans, storm jars, terracotta plant pots… we’ve done it all! Then there is the question of scent. I opt for subtle scents when creating a display around a home, but avoid them at the dinner table. No one wants the perfume of a candle to interfere with their creative delicacies! Some of my favourites are the giant BaoBab candles – they burn for hours, look stunning in any home, are gently perfumed and are more of a home furnishing than a candle. The citrus perfumes and simple styling of Jo Malone’s French Lime Blossom range is also a great candle to use around the home. And for a festive scent, I adore the Blackberry and Bay candle. Divine. But back to the question of tall and fat, short and skinny, round and squat. Modern candles can be sculptures, made in all shapes and sizes to suit all occasions – so make the most of the variety available. Keep table candles low or suspend them high above a table so as not to interfere with chat. Try a line of small candles floating on a bed of bright flower petals as the centerpiece for a long table, or three short, square grey candles on contemporary steel plates and rustic wooden tables for a more urban, architectural look. If your room is spacious with high ceilings, opt for candles dressed with flowers atop tall pedestals, or ornate bird cages filled with candles and flowers, elegantly suspended over tables. Candles are also wonderful gifts. The art of celebration Proprietor of the Belle Epoque, Matthew Mooney, reflects on four decades of special occasions at the legendary eatery

T

his really is a venue that’s tailor made for celebration, and people use it for everything from a 21st birthday through to a golden wedding anniversary. You can book for a table of two, or hire out the whole venue for a party of 200, although even then you can still have a very intimate party, because all three floors are full of unique little spaces with their own individual style. The restaurant is in its 43rd year now, and although obviously as a business a million things have changed in that time, the essence of the Belle Epoque really hasn’t changed at all. It’s individual, it’s independent, it’s about enjoyment and entertainment, and the core values have very much stayed the same. It’s in a building that was created in a time of celebration by my uncle, Malcolm Mooney (who was the business partner of George Best), and his French wife Dominique, so from day one it was really all about enjoyment and joie de vivre, not hushed tones and food-worship. It’s about making an occasion special – whether it’s a table for two on a Monday evening, or an extravagant party for 150 guests that goes on for 24 hours – like our fortieth birthday celebration did! That was really quite an evening. It started in the early afternoon, with the street outside closed off, and then we had a red carpet evening with circus acts and flame throwers out on the street, welcoming guests who have helped us enjoy the Belle Epoque over the last 40 years. It started with champagne, went through

to a seven-course meal, then we came downstairs to the party, which started with after-dinner cocktails and then went on until dawn, when we had breakfast and bloody Marys next door at our chop house the Rose and Crown – always nice to have breakfast in black tie! David and Victoria Beckham used to come in very often when he played for Manchester United. They used to come in for dinner at their discreet table, and they also held a nice intimate celebration dinner for Brooklyn when he was just a babe in arms. And when Ray Winston finished filming a TV show in the area last December, he actually held the wrap party and a private dinner here. We had a lot of company Christmas parties dining with us that night, but he just said, ‘Oh put me in a room, we’ll be fine’. And when he left of course everyone recognised him, but he was an absolute gent, signing autographs and posing for pictures. But probably the most star-studded celebration we’ve had in this era was in 1981 when the original Granada production of Brideshead Revisited had their wrap party here. They filmed quite a few scenes at the Belle Epoque – when Jeremy Irons is at a Parisian restaurant, it’s not in Paris at all, it’s right here in Knutsford! – and we knew the producer very well, so we had Jeremy Irons and Anthony Andrews here, both completely unknown at the time, and all the cast; Sir John Gielgud, and Laurence Olivier and his wife. The golden couple Mention Boléro to most people and it seems Ravel’s powerful score has almost become synonymous with national treasures Torvill and Dean. The Sarajevo 1984 Winter Olympics ice-skating icons speak with Natalie Anglesey

F

ast forward to 2015 and we meet in Manchester to discuss an exciting new venture for Jayne and Christopher, who happily reminisce about that special night in their careers. “We received such a fabulous reception from the audience then, so last year we were delighted to return for the 30th anniversary celebrations of our Olympic performance,” Jayne recalls. “Although Boléro opened so many doors for us, we never thought we’d still be skating together after all these years!” The event helped raise funds for a permanent ice rink and reminded the world of Sarajevo’s efforts to bring back the Olympics. “It was so emotional to discover that many of the people in the audience had also been there to see the very first time we danced,” Christopher adds. “Even the little flower girl who presented the bouquet was there and her daughter was skating too – so quite an evening.” Now the pair are enthusiastic about making their pantomime debut in Cinderella at the Manchester Opera House – although both refused to divulge if we’ll be seeing Boléro on stage. “We want everything to be a fresh surprise for our audiences,” Jayne smiles. “However, we can tell you that we’re playing Cinderella’s Fairy Godparents -–so we’ll be sprinkling some fairy magic around,” she grins. Christopher’s also keen to impress. “This time we’ll be skating on high-tech roller blades, so we’re

not dependent on ice, as we want to be really part of this wonderful panto. We tried them out successfully at the Royal Variety Performance and we’re already creating exciting new choreography to add to the Cinderella story.” It seems like yesterday that this athletic couple first came to our attention, although it was 1975, when a young Jayne and Christopher, already champions, were put together by Nottingham coach Janet Sawbridge. “I remember asking our coach if Jayne wasn’t a bit too old – and she’s never let me forget that!” laughs Christopher.

“The pair are enthusiastic about making their pantomime debut in Cinderella” The world would like to think that, at some stage, this young couple were also romantically involved, which both strongly deny. “We were already in love with the ice,” Chris jokes. “Although we had an instant rapport on ice, we were far too busy concentrating on our careers, as we knew that this was going to be our time,” Jayne states firmly. They won their first trophy a year later and were so successful they were soon able to leave their jobs, as an insurance clerk and policeman, thanks to grants from the City of Nottingham, where they

now have streets named after them. Soon entertainer Michael Crawford had become an unofficial member of their team. “We’d been to see Michael in Barnum, to get some ideas for a circus routine,” Christopher explains. “He spotted us in the audience, invited us backstage and gave us tips on acting.” He was also present at the ringside when they won their perfect Olympic score with the Boléro routine. Turning professional in 1984, the skating stars took advantage not only of the financial, but artistic possibilities, planning their successful Face the Music tour, and other projects. Christopher choreographed a suite of dances to Paul Simon songs for the English National Ballet, toured with Stars on Ice and collaborated with cellist Yo-Yo Ma on the video Inspired by Bach: Six Gestures. In 1998, they produced Ice Adventures in London, which included a flying ice ballet. That same year they officially retired, each continuing to coach and choreograph separately. “We were both married and already had or were starting families. But seven years later, ITV called asking if we could coach celebrities to skate in a couple of weeks and we both vehemently said no,” Jayne recalls. “Then we thought about it and decided to give it a try.” The rest is history. Although I’d interviewed both stars in the past (in the Manchester Arena as one of the judges), I was able to witness the exacting behind-the-

scenes preparations for their performances. “We’d been asked to appear in panto before but, since 2006, we’ve acted as coaches, choreographers and performers in Dancing On Ice, as well as all the arena tours,” Chris reveals. “We were working 12-hour days and within one week alone we had to coach and choreograph several routines while rehearsing our own,” Jayne explains. “In the end we said we didn’t want to do it any more and ITV felt it wouldn’t be the same without us, so that’s why they cancelled the series. Now we can do panto.” Will her children be supporting her in Cinderella? “My daughter is quite keen on skating, but my son is a football fan. They are 9 and 13, not too old to

I may suggest it, as panto covers a wide age range, but I’m not sure how it will go down. Hublot doubles production space Hublot’s rumbustious Jean-Claude Biver – chairman, cheese maker and the most famous man in watchmaking – was in characteristic form at the opening of the company’s second manufacturing facility recently. Innovation, he roared, must be everywhere at Hublot HQ: “The cook must be innovative, the receptionist must be innovative, the driver must be innovative, I must be innovative.” Biver has certainly been that, transforming Hublot in the space of a decade from a company teetering towards obscurity into the global money maker it is today. “Ten years ago we didn’t exist,” the industry veteran told The Cheshire Magazine. I’m not one for anything too intrusive, but Angela and her team talked me through the treatment and answered all my questions. The facial combines skin peeling with IPL (laser) to boost collagen levels, promote heathy skin cell production and even-out skin tone by reducing pigmentation to give an overall youthful appearance. At 43, the youthful appearance bit certainly excited me, and I was certain I’d have some blemishes on my skin, so was very keen to see the results. ith a modelling background and a family business in the design and manufacture of shoes, it is little wonder that Marilena is involved in the style business. “Modelling is not for all your life. There’s a point where you start thinking seriously about the future. And my experience from the other side of the camera – the make-up, fashion, styling – is what I love, but also what I know.” Born in Bucharest, Romania, Marilena grew up in a loving but busy home to entrepreneur and “very hands-on” parents, spending time in offices, absorbing the atmosphere, listening in at design meetings, and playing with the different fabrics and samples. She quotes Burberry as her go-to brand but says “it’s more about what I feel comfortable in”. “I learned early on in my life how fast paced and changeable the industry is, but also that entrepreneurial drive, some may say stubbornness, to pursue my chosen career is important. When I was 19 the opportunity arose to develop my modelling career in London, so I grabbed it with both hands. But I didn’t just want to be in front of the camera, I wanted to understand the whole process. I asked a lot of questions and worked with small fashion businesses to learn the ropes in between jobs. “As I learned I saw avenues and opportunities. If you were to ask me who I am inspired by, I would have to say Heidi Klum, for how amazing she is as a model but also how she has taken all she has learned and applied it to business so successfully. “My first idea was a fashion and lingerie line [partnered with the ex-head of design at Agent Provocateur], and the second is Lusso. “From that first conversation about a swimwear and lingerie brand, the idea has exploded. At first I thought, ‘How hard is it to make a bikini?’ but to do it well and properly you need the time. I felt it was hard to find accessible designer swimwear, so there was a gap in the market. So our concept was born, all completed to the same high standards you would expect from a brand such as Agent

high street opening, Lusso. “When I was modelling in London I found very few salons offered a quality hair and full beauty service, having to dash from one place to another to complete the look! “So the gap was to provide a head-to-toe beauty destination in a comfortable yet luxurious environment.” Lusso has a back door with valet parking service so you could, in effect, walk in the back door, be transformed and bounce out of the front door with a flick of the hair à la that well-known TV commercial. The style is glamorous but the team, headed by Caroline Thwaytes, are friendly and experts in their fields. There’s a Champagne and coffee bar, which clients are encouraged to use even when they’re not booked in.

I’m curious, though, why Wilmslow? “It was through my personal life that I first came to Wilmslow and it is now my second home. It’s so warm and friendly, and the perfect place for the salon.” Life is busy for Marilena, and I have no doubt she has more ideas to drive forward with her innate passion. “I love being busy. But I also love evenings with my partner. We cook, have a glass of wine and sleep before the next busy day begins. FIRST PAST THE POST An invitation to meet perfumier Yvan Jacqueline and sample Parfum de Marly’s luxury range had Natalie Anglesey’s nose twitching before a perfumed card was even wafted in front of it

lover of perfume since he was a child, Yvan Jacqueline confides (in an attractive French accent) where his passion began. “Memories of my mother flood back whenever I smell Shalimar, her favourite perfume. Although that’s not in our range, I’ve loved the smell of both male and female fragrances all my life. “When I had the chance of working with Julien Sprecher, who was setting up a completely new range of wonderful fragrances, I thought my business acumen could help launch these fabulous perfumes. You see Julien, who is a master perfumier,

followed his father, who was working for Guerlin, before designing his own perfume range. We both share an interest in the history of the perfume industry, which provides romantic inspiration. “In the 18th century, France was the centre of the fragrance industry, with Grasse and Paris mainly in the spotlight, especially with Louis XV’s Perfumed Court. Every day, he requested a different scent for his apartments and streams of aromatic scents sprang from the royal fountains. “We offer a repertoire of perfumes reviving the spirit of the lavish receptions held in the Château

de Marly, for the delight of members of the Royal Court and foreign dignitaries. It rekindles the spirit of fragrances, when the finest perfumes were created for King Louis XV as a tribute to the prestigious horse races he so fervently admired. Horses were the pride of the Palace of Versailles, and so Julien named his fragrances after some of the most famous horses in history.” Yvan tells me Pegasus, named after the 18th-century race winner and predecessor of many champions, is the most popular fragrance, while Godolphin, also incredibly successful and created by female perfumier Michelle Saramito, was named after the renowned Arabic stallion and ancestor of many race winners. Intrigued, I asked Yvan about the female perfumiers employed by Marly. “At one time it was mainly men creating fragrances for women – now it’s sometimes the other way around. We have Sedbury, created by Natasha Cote, named after the famous 18th-century horse, foaled in Yorkshire, while Meloria, created by Nathalie Lorson, pays homage to the mother of Tartar, the famous stallion who sired Herod, one of the Duke of Cumberland’s most successful racehorses. Then

there’s Kuhuyan, created by Alexandra Kosinski, one of the oldest Arabian breeds.” The equine theme is prevalent in most of the fragrances, although it’s mainly in the male ones that you notice a faint blend of leather and tobacco. However, the luxurious Herod, inspired by the victorious 18th-century stallion, is proving a unisex favourite. My favourite has thus far been Sedbury until I found Darcy – no connection to Jane Austen’s hero, but rather named after one of the earliest recorded stallions. As the home of Marly is only 20 miles outside Paris, I thought it surprising that the company was only now going in big. “Initially, we wanted an air of exclusivity, and indeed we have several A-list celebrities who use our products – although I’m afraid I can’t possibly tell you who they are,” Yvan laughs at my obvious disappointment. “However, I can tell you our sales are huge in Dubai, while in Paris we’re launching near Chanel.” I wondered what Chanel thought of that? The German Design Council selects a panel of international design experts to judge the entries. The Last The M135i is likely to be the final old school BMW hot hatch. Matthew Carter revels in its rear-drive honesty

I

n these days where efficiency is the key driver behind new car development and where the Holy Grail is found via lower emissions and better fuel economy rather than by extra performance, we should be thankful the BMW M135i exists at all. It’s the flagship model in BMW’s newly revamped 1 Series and is powered by a peach of an engine, a turbocharged 3.0-litre ‘straight six’ that develops a healthy 326hp. The M135i sits at the top of a range that has been damn near neutered in the quest for efficiency. While giving the entire 1 Series a minor facelift, BMW executives have all donned hair shirts. New lights front and rear and a revised grille cannot hide the fact that there has been a serious attack on what lies under the bonnets. Most engines have been downsized (M135i aside, a 2.0-litre is now the biggest on offer) and in some cases they’ve even lost a cylinder – down from four to three. Thankfully, the M135i managed not only to escape the cull, but also to gain a few more horsepower in the process. This is an old school BMW that’s compact and fast, with a fabulous rear-wheel drive chassis. The 1 Series has been around for more than a decade with this, the second-generation version, now old enough to be given its mid-life facelift. For once the facelift is a real improvement on what went before. The slimmer headlights, bolder and wider kidney grille and new look front apron of the revised model are more aggressive, more in keeping with the BMW badge.

And the changes at the rear, with new ‘L’ shaped tail-lights replacing the old rectangular ones, make the back of the car look far sleeker than before. Inside, there’s a new high-gloss black centre console, more oddment storage and a bit more chrome dotted around the cabin, but that’s about it. It’s still a long way from being the roomiest car around – think of it as a four, rather than five-seater – but there’s an undeniable class about the 1 Series that lifts it above offerings from what used to be called the mainstream brands (the Fords, Vauxhalls and VWs of this world). These comments apply to every model in the 1 Series range, of course. What lifts the M135i above the rest lies under the bonnet. While this may not be a real M car – rather, it’s merely ‘powered by M’ – it’s the engine that makes all the difference. This straight six engine has been around for a while but remains one of the world’s greats. With ample power and a huge amount of torque (the engine’s pulling power) that peaks at a low 1,300rpm, it is equally happy trundling around town as it is stretching its legs on the open road. That prodigious power output, up 6hp from the 320hp of the outgoing model, is achieved thanks to a pair of turbochargers. Not that you’d know it.

There’s no sudden jump in power as the turbos spool up, and no discernible lag between flooring the throttle and the engine getting the message – just a massive shove in the back as the thing rockets down the road. If you’re prepared to hammer the clutch and wreck the tyres, the standing start to 62mph takes a fraction over five seconds, but more impressive is the way it performs on the road. Keep it in third and it will pull cleanly from a walking pace to way beyond the legal limit in a blink of an eye. This car was made for overtaking. And it has a soundtrack to match. It snarls as you accelerate and cackles on the over-run as you lift off. It’s an intoxicating mix of docility and performance topped off by a genuine aural experience. Actually, you don’t have to wreck the clutch to enjoy its breathtaking acceleration: go automatic. It might add a cool £1,500 to the bill, but the eight-speed box is one of the best around, with smooth auto shifts which can be over-ridden by using steering wheel mounted paddles for super quick manual shifts when you are in the mood. Thanks to standard launch control, the automatic version is actually quicker to 62mph than the manual, while the box also has what BMW

calls a ‘predictive shift strategy’ which uses the car’s navigation system to read the road ahead to ensure that gear changes precisely match what’s coming. If there’s a hill around the next corner, for example, the car knows and primes the gearbox accordingly. Clever stuff. Mind you, the standard six-speed manual is a fine option, with a solid, weighty shift action that helps the driver connect with the car. And that’s what the M135i is all about: it’s a driver’s car with a perfectly balanced rear-drive chassis, fast and positive steering and reassuringly powerful brakes: the manual shift is an integral part of that driver/car bonding. Mix in a near perfect driving position – the rear might be cramped, but the front is as roomy as it can be – and a cockpit totally oriented towards the driver and it’s hard not to fall for the car’s charms. It’s reasonably well equipped, too, with its own unique features not found on other models in the range. These include grey door mirrors and blue brake calipers along with sporting body kit incorporating a pair of huge air intakes at the front. Other standard features include ‘M’ alloy wheels, leather seats, climate control and rear parking sensors… though, of course, there are

plenty of options to choose from including, for the moment, sat nav – though this is due to become standard equipment across the entire range shortly. TRANSFORMATION While not a gadget as such, the Austrian made Kormoran transforming boat is worthy of mention in these pages as a feat of epic engineering. For all intents and purposes, it is the boat of the future. At first I thought that this was hobby lake-boating gone mad, until I realised the real, life-size prototype made its debut at The Monaco Yacht Show last month. Designed to allow users to enjoy different types of boats without spending the money to buy each kind, it is capable of transforming at the touch of a button. Depending upon the driver’s desires, it can speed on or above the water as a catamaran, trimaran, monohull and hydrofoil. It’s all down to some very special electronically activated hydraulic arms.

When drawn completely inward, the outrigger hulls fold into the fuselagelike central hull to create a monohull. When deployed partially, they become the dual hulls of a catamaran, with the body set above the water. Deploy them completely, and the body drops to the water’s surface becoming the third hull of what is now a trimaran. With the power from its 493-hp triple jet drive, the Kormaran can hit speeds up to 44 mph (70km/h) and travel up to 108nmi (200km) at that top speed. Seeing the Northern Lights, or the Aurora Borealis, first hand is a majestic, almost spiritual, experience, with the power to render any spectator speechless. We ask Northern Lights expert Jonny Cooper how to make the most of it

N

ot many life experiences stay with you forever, however, Iseeing the Northern Lights is sure to be unforgettable. My passion for Aurora displays started from one simple trip to Björkliden in northern Sweden. For thousands of years, the Northern Lights have captured the imagination of cultures across the world, influencing both folklore and religion. It really is an other-worldly experience and once I’d experienced it – I was hooked.

What are the Northern Lights? The Northern Lights originate from our sun. With a complex network of gas currents, changeable magnetic field and a surface temperature that rises and falls, sunspots are created. Sunspots are areas of unstable activity on the surface of the sun, from which particles of plasma, known as solar wind, are shot into space. Forty hours after leaving the sun, the solar wind reaches Earth and hits our own magnetic field, which directs the energy towards our polar regions, where it interacts with atoms and molecules of oxygen, nitrogen and other elements in our upper atmosphere, resulting in a dazzling display of lights in the sky.

For seeing the Aurora on your Northern Lights holiday: Once you have travelled to the best spot to experience the Northern Lights, you can significantly improve your chances of experiencing an Aurora by using these simple expert tips: 1. Plan a trip to a place with prime Northern Lights viewing conditions. Firstly, choose a destination within the Auroral Oval. Once there, you need clear, dark skies. Use Aurora and weather forecasts to help plan where to search. 2. Get away from any nearby light pollution. Tap into local knowledge from guides, staff or local people you meet to point you in the direction of great Aurora viewing spots. 3. Kit yourself out properly with well-insulated and waterproof clothing. Aurora-spotting is usually cold work and you don’t want to have to leave because you’re cold. 4. Accustom your eyes to the darkness. Use a red torch to find your way around as this will not affect your night vision. 5. Take a camera and take photos. A photo will confirm if there are the beginnings of an Aurora or not, however, don’t spend the whole time behind your camera as it’s just as important to step back and just enjoy them. 6. Be prepared. Have everything ready to go at a moment’s notice. 7. Persistence and vigilance is vital: Aurora can come and go very quickly, so always keep your eyes open for activity. 8. Never give up. Snow can stop and clouds can clear for just long enough to get a glimpse of a stunning Aurora, even on a wintery night.

What causes the colours? The colour of the Northern Lights is dependent on the gas in our atmosphere that is reacting with solar wind, the type of collision and the altitude at which this happens. Typically, oxygen causes green and yellow aurora, and interactions with nitrogen produce red, violet and occasionally blue colours. Green Northern Lights typically appear up to 150 miles (241km) in altitude, with red above 150 miles, blue usually appears at up to 60 miles (96.5km), and purple and violet above 60 miles.

Where to see the Northern Lights? The Northern Lights are visible in an area called the Auroral Oval. This forms a ring around the magnetic North Pole, concentrated between 65-72 degrees latitude, although they can often be seen outside these latitudes depending on the strength

‘Oxygen causes green and yellow aurora and interactions with nitrogen produce red, violet and occasionally blue’ of the solar activity. This makes countries such as Iceland, Norway, Sweden and Finland well positioned for a Northern Lights holiday.

When to see the Northern Lights? The Aurora can be seen any time between September and March, and can be visible from when it gets dark to when the sun starts to rise, although the best hours are normally between 9pm and midnight.

-angle lens. A minimum aperture of f3.5 will work, but f2.8 or faster is recommended. An 18mm lens is a good minimum starting point. 4. A stable tripod is a must. You will need to use a slow exposure to capture the lights, and if you do this by hand you’ll get blurry results. Low-quality tripods often fail in cold weather, so if you don’t own one it’s worth hiring. 5. Invest in a wireless release for your camera. This lets you take a photograph without touching the camera and will eliminate any possibility of camera shake. 6. Be prepared for the effect that the Arctic climate will have on your camera equipment. Bring several extra batteries and a goodquality memory card as they will not perform as well in cold conditions.

8. Pack a few sealable plastic bags big enough to hold your equipment. Before you go back indoors after a night’s shooting session, put your camera gear in the sealed bag. This helps keep condensation off your equipment.

1. You need the right camera. Always use a modern digital SLR camera. Pocket compact cameras, even high-end models, will not provide quality results.

9. Never breathe on the front element of your lens while you are out in the cold. Ice crystals will form on the glass and cause blurriness, ghosting and image degradation.

2. Get familiar with the ISO settings on your camera. Because you’re shooting the Aurora in low-light situations, you’ll need to use a high ISO; generally this will be 800-1600 ISO, unless you are using an extremely fast lens.

10. Infinity focus is of the utmost importance. In order to be 100% certain that your images are in focus, you need to be sure your lens is properly set to infinity. There are several ways to do this but experts recommend that you use the digital zoom function while in live view mode to be sure that everything is perfect.

I

f your idea of a perfect skiing holiday is one that focuses just as much on the pre or après as the activity itself, then Gstaad is the place for you. Nestled in the Swiss Alps, just a few hours’ train ride from Geneva, the quiet village remains a haven for those who prefer winter getaways of the relaxing, rather than the rowdy, variety. After a short flight from London to Geneva, most who journey to Gstaad will do so on the super-efficient rail network, whizzing along the banks of Lac Léman to Montreux, where the savvy traveller will then sink into the first-class comfort of the Golden Pass train. Featuring enormous windows that offer a panoramic view as you travel at pace through the countryside, this is a fantastic way to enjoy some of Switzerland’s most breathtaking scenery. Those with access to a private jet can skip all the platform-switching by taking

advantage of the ad-hoc runway on the outskirts of the village; but there’s something to be said for the more leisurely railway experience – particularly when you’re met on the train by a very polite chap from your hotel with a hamper of champers (try saying that fast three times after you’ve quaffed your way through the final stops). Mere moments from the station is the newly refurbished Le Grand Bellevue hotel, my home for the next few days. It’s a building that, from the outside, looks like what you’d get if you crossed the mansion from The Sound of Music with the castle from Chitty Chitty Bang Bang. It’s very Swiss, but the turrets, towers and cheerful yellow exterior belie the traditional chalet feel. Nor are the interiors what you’d expect from a mountain refuge. Envisaged by talented interior designer Davia Koetser (one half of the husband-and-wife team

that owns and runs the hotel), the shared spaces are chic and contemporary, managing to preserve a traditional, comfortable feel despite the quirky and eclectic update. Think roaring open fires modernised with minimalist glass frontages, a grand piano alongside hanging birdcage chairs and a collection of differing vibrant prints on the walls and soft furnishings that, anywhere else, would clash horrifically but somehow merge seamlessly to form spaces that feel homely and inviting, as well as stylish and elegant. As I settle in, I browse the options for my evening meal. The hotel has something to offer every type of epicurean skier; from the simple, delicious bar menu, to the unexpected sushi café in the basement and refined bistro-style dining at the signature restaurant Leonard’s. The latter is watched over by both a tweed-clad nine-foot camel of the same name – the hotel mascot – and Michelin-starred head chef Urs Gschwend. Speciality dishes like bouillabaisse Marseillaise and fillet of sole with Noilly Prat sauce, along with

classic favourites like creamed pea soup and tagliata of beef, do an excellent job of warming the cockles after a day on the slopes. But if you’re looking for something more down to earth, the hotel has a delightful surprise up its sleeve. Set in the grounds just metres from the entrance, Le Petit Chalet is a traditional, fairy-lit hut that seats 18 guests and serves up a menu of hearty Swiss dishes, including fondue and, my personal favourite, raclette. At odds with the sophisticated feel of the main hotel, this magical hideaway is an opportunity to let your hair down, enjoy the house vino and consume your bodyweight in deliciously gooey cheese. After such an indulgent night, it’s time to hit the slopes the next morning, but before I venture to

Properly attired and with my expert guide in tow, I’m chauffeured directly to the base of the slopes, which promise the best conditions today. The view from the top is, quite simply, stunning. I’ve picked a beautiful day for it – the skies are clear blue, I can see miles of the dramatic alpine landscape and the sunlight is reflecting trillions of sparkling diamonds in the snow. Although I’m a little rusty on my skis, my instructor is patient and starts me off on the easier runs until I’ve got the hang of things. I’d forgotten the sheer, unadulterated pleasure of whizzing down the slopes, performing (in my mind) perfect parallel turns and reaching the bottom breathless and full of cheer. This beats the gym any day. Finally, after a full day carving my way through the alpine passes alongside celebrities, royals and politicians rendered anonymous by their ski gear, I’m more than ready to head back to the hotel and assuage my aches and pains with a luxurious afternoon tea in front of a roaring fire, followed by a visit to the spa. It’s one of the best hotel spas I’ve yet to encounter – though I’m not entirely sure they shouldn’t offer maps; there are so many rooms that I occasionally find myself looking for

breadcrumbs to mark my trail home again. After soaking up the refreshing scents and the relaxing atmosphere for an hour or two, I can barely remember my own name, let alone the twinges from my overexerted muscles. Skiing might not be everyone’s cup of tea, but the experience in Gstaad is like a delicate oolong – heady and luxurious. Whether you’re happiest making the most of the outdoors or putting your feet up beside the sunlit indoor pool, at Le Grand Bellevue there’s something for everyone to enjoy. As for me, I’m tempted to hide away somewhere in my suite in the hope that I can stay another day.

I

cannot tell a lie – when it comes to Christmas shopping which leaves you veritably tingling with festivity, the twinkling lights and bustling pavements of London’s Regent Street are hard to beat. If you, like me, can’t resist an annual December pilgrimage, you’ll need a good base where hot baths, hearty meals and plush bathrobes are in plentiful supply to sooth the aches and pains of a long day of retail therapy (and occasionally I even buy Christmas gifts for other people too). Situated in a beautiful, grand 1920s building on Pall Mall (from which you could almost reach out and touch Westminster, Big Ben and, of course, the southern tip of Regent Street), the Sofitel St James is quite simply one of London’s best hotels (and, from Sofitel, what else?). Built as the opulent headquarters of Cox and Company Bank in 1923, the 125,000 square foot Grade II listed property oozes classic London architecture and 1920s charm, with elegant gilding and sweeping staircases piqued by contemporary touches, all of it swathed in an almost tangible sense of sumptuousness. Rooms are unsurprisingly stunning, from their enormous (and, again, Sofitel-level snug) beds, black marble-encased bathrooms and friendly, welcoming touches, to their state-of-the-art technology, soothing lighting and stylish, quirky furnishings. Meanwhile the So Spa, a relatively recent addition to the hotel which encompasses all the style of a London spa with an intriguing French twist, even includes your very own ‘spa butler’ who’ll tailor lighting, music and fragrance to your exact preferences while you indulge in the extensive menu of Carita and Cinq Mondes treatments.

Nevertheless – and perhaps it’s the unabashed foodie in me – the crowning glories of the hotel are surely its gastronomic offerings; grand, Parisian the Balcon, and the St James Bar within it. The former is all culinary opulence, offering all-day dining (including a truly exceptional afternoon tea) and such delectable highlights as a signature croque monsieur, delicious tray rapide and a menu which combines English tradition, French flair and the very best seasonal ingredients. The St James Bar, meanwhile, is an elegant social hub, its interiors inspired by the 1920s Paris apartment of Coco Chanel and its drinks menu all vintage, signature cocktails and decadent champagnes. Now let’s be honest, it really doesn’t get any more chic than that, and it’s the perfect way to round off a visit to a hotel which so effortlessly blends old and new, high tech and historic, while never seeming over the top or austere. hilly days, frosty nights and the promise of snow in the air make my nose twitch. Christmas will be upon us in the shake of a tail – I know it’s close as I’ve seen the Coca-Cola truck in town, though I’m still waiting for John Lewis to call asking me to appear in their Christmas advert. Meanwhile, I’ve been digging and found out Santa and his reindeer are coming to Cheshire. From November 28 until Christmas Eve, you can meet Father Christmas and his elves at The Cheshire Reindeer Lodge next to Cheshire Oaks. Have your picture taken with Santa himself and, if you’re feeling really brave, help feed the reindeer while all the elves get together to put on a fabulous show. Festive drinks and snacks are available, and there’s even a fun fair and donkey rides. This really is a magical day out, although unfortunately dogs are not allowed – but don’t worry, I have plenty to keep myself occupied making up boxes of Christmas goodies for my pals at the Dogs4Rescue Centre. For the last two years Emma Billington has worked closely with animal charities in Bulgaria and Cyprus, where street dogs are rescued and receive any medical treatment they need before being brought over to the UK. Emma has opened up her own home to these dogs in a happy, cage-free environment while waiting for the loving homes they deserve. Her own business, Daycare4Dogs, invests in Dogs4Rescue, enabling Emma to cover the cost of bringing the dogs over. Donations including food, bedding and toys are always gratefully received, so why not book a place at one of their open days, where you can meet the dogs and perhaps even offer one a new and happy life. As a rescue dog myself I know we all want to be loved and feel safe. We have so much love to give back, even after a troubled start, and I will put my paw towards helping these beautiful dogs achieve what should be every dog’s birthright, to give and receive unconditional love, by doing what I can to help this Christmas. Marie qualified as a teacher in 1991 after completing a degree in pure and applied mathematics at the University of Liverpool. heshire primary school pupils and teachers at The Firs School have recently turned into movie directors and presenters as they planned, filmed and prepared a video introducing themselves, and the school, to their new sister school in Auckland, New Zealand. The new project celebrates the 70th year of The Firs School and puts its pupils back in touch with the city where the school’s founder, Mrs Florence Longman, originated from. The pupils’ work was also reciprocated with an equally professional video introduction from the other side of the world – produced by pupils at Richmond Road School in Auckland. “Video is such a great way for children on both sides to get a sense of life at each other’s schools,” said Paul Carberry, owner of New Zealand In Depth and instigator of the whole idea. “Although we share a common language, and the culture is similar to that in the UK, New Zealand has a very different, rich and fascinating history which has shaped a culture with welcoming and engaging people who love nothing more than sharing their spectacular country. We hope that linking The Firs with Richmond Road will allow the English children to get a taste of this.” Both schools rose to the challenge of producing a video, and it wasn’t long until both teacher and pupils at The Firs were scouting the school for possible angles and locations from which to shoot their masterpiece. Wanting to give the pupils in New Zealand a real insight into what life is like at the school, as well as introducing some of the class, they decided to film short introductions of each other, in a variety of key spots across the school grounds. Robyn Clarke (age 10) from 6NR class at The Firs, who was filmed introducing both herself and the library area of the school, said: “It was a

bit scary at first, but after a bit I forgot that the camera was on. We wanted to show as much of the school as we could. I think it will give the children in New Zealand a good chance to see where we come from.” The introductory videos allowed the pupils an insight into the differences between the two countries. Robyn continued: “The first thing I noticed about the pupils at Richmond School is that they don’t wear uniform. I also really liked their school song, which they sang in another language.” Misty Mansfield (age 10) added: “Although the school looked different to our school, and didn’t have a playground the same as ours, the children all liked the same things we do, such as art, sport and reading.” The international link created this year is especially poignant for The Firs School as it celebrates its 70th anniversary since its founder, Mrs Florence Longman, travelled from Auckland to start The Firs. Current headteacher at The Firs, Lucy Davies, added: “This is a project that not only goes back to our school’s roots, but also fulfils our aim to give our children the chance to experience and learn in a range of exciting and innovative ways. The video introduction from the school at Richmond Road has really got our classes excited about sharing work with a school on the other side of the world. We can’t wait to take this project to the next level.” Principle of Richmond Road School, Jonathan Ramsay, said: “Now that we have been able to make a proper introduction to The Firs School, the chance to build a wonderful partnership has begun. Gemma Knight meets Mark Oakes to find out why his company ABODA Living prides itself on not just building houses, but creating homes

O

riginally hailing from Sale and Urmston but having moved abroad at the age of 13, it wasn’t until he had enjoyed a few years of being ‘a bit nomadic’ (and 15 years in the travel and leisure industry), moved to London, met and married his wife Lisa and had their first child, Jack, that Mark Oakes finally decided to move back to Cheshire. The family settled in Mere (later moving to Bowdon), and by 2005 had decided to build their own home – a project which turned out to be much more of a challenge than they had expected. “We wanted to build something very modern and contemporary, and back then it was a real struggle to find the right architect and builder to fulfil our dreams, particularly in the north,” Mark tells me. “Suffice to say, had ABODA Living existed back then, we’d have appointed them, and it’s for that reason we exist.” It was as a result of this first-hand experience that ABODA Living was founded, with Mark functioning as managing director alongside his three

business partners; wife Lisa (who is creative director), construction director Paul Barrow, and in-house architect Justin Risley. “Building your own home is a real privilege, and whilst an element of stress is almost inevitable during the process, our aim is to remove the hassle and make it a creative and enjoyable experience,” Mark explains. “There are plenty of developers out there building traditional style properties, but at ABODA Living we only design and build truly modernist architectural homes. We offer an end-toend service, from plot identification and acquisition through to the keys to your new home, so we’re effectively a one-stop-shop, and as a result we can offer a really seamless experience.”

We take immense pride in what we do, and I think that’s reflected in

the finished homes and the accolades we receive,” Mark says. “We place prime importance on honesty, integrity and discretion. We always have to be mindful when initially discussing a client commission that it’s their vision, their dream, but if we don’t think something is going to work we’ll tell them; even if that means we don’t end up working together. You have to remember that if we are providing the full suite of services we offer, then we will be working together for the better part of two years, so it’s really important that we all get on and can be open and honest with each other. You inevitably get to know people pretty well during the process and get a real insight into how people live, some of whom may be high profile, but we never discuss or disclose who our clients are. And of

course clear communication is imperative. For most clients this will be their first experience of building a home, so it’s important that we explain each stage and what’s required of them clearly to ensure we realise their dream on time and on budget.” Part of the company’s recipe for success undoubtedly lies in the synchronicity and close bonds shared by Mark’s team, especially given the fact that he counts his own wife amongst his colleagues. “If you’d suggested to me ten years ago that Lisa and I would be working together and sharing an office, I think we’d have laughed!” Mark tells me. “We were originally in separate offices around the corner from each other, but it just made sense to move into the same space given how much time we were spending on the property side of our investment interests. Justin [Risley] is also based in the same office, so he can act as referee when required, along with Albert our French bulldog!” He laughs, adding “But the whole setup actually works really well. Lisa’s role is to ensure that the design

integrity and quality of any build is maintained, and mine is to ensure that it’s commercially viable, which often means we have different perspectives. However, Lisa is incredibly creative and resourceful, so our skillsets complement each other and we usually end up making the right compromises.” But of course with a successful business life comes the necessity for a healthy work-life balance, and the couple and their team are fortunate to enjoy great flexibility in their work routines, meaning that Mark, Lisa, their two sons – and, of course, Albert – don’t miss out on spending regular quality time together. “Time together as a family usually revolves around cooking and eating,” he says. “When we go out we tend to stay local and often stroll into Altrincham at the weekend to sample the various offerings at the Market House. Time permitting, I like to get out on the bike for a few hours early on a Sunday morning making the most of the quiet roads and the beautiful Cheshire countryside.” (abodaliving.co.uk)
