Throughout the year, the school has held a series of fundraising events from selling ice creams to quiz nights and even a dog show. FRIGHTFULLY GOOD
It’s the month of Halloween and there’s something spooky going on at Fulham Palace DYLAN MAGUIRE
W
hat would Halloween be without an element of terror, and where’s the oldest and possibly the spookiest place in Fulham? A certain Palace that’s more than 1,300 years old might be the answer. Legends of tunnels, dungeons and ghosts already surround it and this Halloween it’s opening its doors once again, to both adults and children, to let you experience the ghoulish goings on for yourself. This year however, the Journal has been given a sneak peek at the happenings in what has been the Bishop of London’s house since 704. Now it wouldn’t be right to let you in on all the spine-chilling tales – we’ll let you discover most of them on the grand tour itself, at night, of course – but we can give you a little preview of what’s to come. Read on, if you dare. Fulham Palace and its outbuildings has always been a jigsaw puzzle through time, of Georgian, Victorian and Tudor elements, from the courtyard, to the Great Hall and the Porteus Library. Many different people have lived and died
10
within its walls and may be the reason our ghoulish friends love to descend upon it so much. During the Reformation of the 16th century, Fulham Palace became a place of torture and imprisonment.
“Legend has it that the ghost of Catholic Bishop Edmund Bonner still haunts the Palace” Allegedly, below the stairs and near the servant’s hall, you’d have found a coal cellar that was used as a dungeon. In one instance, a weaver named Thomas Tomkins was imprisoned in the dungeon and brutalised by the Catholic Bishop Edmund Bonner. He was due to be burnt at the stake in 1555, but just before it was due to take place, he was tortured in the Great Hall. Legend has it that the ghost of Bonner still haunts the Palace.
When the Palace first opened to the public in 1992, there were three cats who lived in the grounds and buildings. The cat who lived indoors would often follow staff around the corridors but it would never go upstairs with them, always choosing to wait for them to return to the foot of the stairs. Do animals know something we don’t? Late one night, when the grounds were locked to the public, a security guard apparently had a haunting encounter with a woman in a long flowing dress. When he asked, “What are you doing here?” she replied, “I live here,” before disappearing in front of his eyes. With ghostly apparitions, mysterious sightings and the sound of footsteps in an empty hallway, who knows what might go bump in the night on the Fulham Palace Ghost Tour. The Journal heads to the coast of Peru, without leaving the King’s Road BETHAN REES
T
he night I visited Chicama is now known as the night I used up all my mobile data via Google search. The menu is filled with words I don’t understand. Trying to keep up appearances as the professional and experienced restaurant goer, my hand is resting on my lap, iPhone also present. My guest scrolls his eyes down the offerings. “What is aji amarillo?” After a moment’s silence, a few sly taps and a glance down I reply: “Obviously, it’s the bright orange chilli, native to Peru, which is the cornerstone of its cuisine.” Anticipating the next question, while my guest sips on his Chelsea’s Tea (Tanqueray and sencha, vanilla, pineapple and oriental meringue), I speedily type in to the search engine “huancaina sauce”. Like clockwork, he asks: “What’s huancaina sauce?” Smugly, I respond: “It’s a sauce made from the aforementioned aji amarillo and queso fresco – a Mexican white cheese.” Phew, I think I got away with that. Chicama is the new opening from the masterminds behind the adored Marylebone eatery, Pachamama. Named after a coastal town in Peru, Chicama differs from its sister restaurant in one main way; it doesn’t serve any meat, only fish – making it the perfect place for pescatarians. With head chef Erren Nathaniel at the helm, I know I’m in safe hands; he’s
previously worked at Hélène Darroze at The Connaught and 28:50. It’s still warm enough to sit outside when I dine at Chicama, and although on the King’s Road, it’s location is ever so tucked away that you can enjoy people-watching while not being hit by fumes from cars and loud motorists. While perusing the menu, we nibble on Padrón peppers, seasoned perfectly with chunky rock salt. Next up, we try another snack – popped corn monkfish cheeks with the aji amarillo that were crunchy on the outside, yet beautifully soft on the inside. Trying to choose a highlight of the meal is like trying not to take more than one morsel of cheese from the staff that offer tasters in Waitrose – it’s really
difficult. However, the stars of the show have to be the following: blackened octopus with confit potatoes and sundried tomato chimichurri, which was as much a feast for the eyes as it was the tastebuds. It was so easy to be charmed by the perfectly curled, artistically charred and tender tentacles. The sea bass ceviche served in orange tiger’s milk with heritage tomato and pickled onion is also worth a mention. It’s the ideal balance between refreshing, tart and savoury. Liz describes herself as a teacher, home cook and a baker. She completed the Virtuous Bread’s Micro Bakery course in 2013, spent a year volunteering in bakeries in London and in 2014, started selling her bread. Since then her orders have increased every week. She also teaches bread making courses in her home.
RECIPE: SULTANA AND PECAN LOAF
Ma Baker’s award-winning Sultana and Pecan Loaf has won medals at both the World Bread Awards and the Urban Food Awards • 35g chopped pecans • 35g sultanas • 200g strong white flour • 50g strong wholemeal flour
• 5g salt • 3g dry yeast • 180g warm water
1. Mix pecans and sultanas together and set aside 2. Mix all the other ingredients together and knead for 10 minutes 3. Gently knead in the sultanas and pecans and squidge them into the dough 4. Leave to prove until doubled in size. Approx 80 minutes 5. Lightly dust a work surface with flour. Transfer the ball of dough to the floured work surface and flatten into a rectangle shape 6. Fold one edge of the dough into the middle. Fold the opposite edge of dough into the middle. Now roll the dough to make a sausage. Make the end tapered 7. Sprinkle flour over the bread and score diagonal lines along the surface using a sharp serrated knife 8. Place on a baking sheet lined with parchment paper. Cover and let rise for about 30-40 minutes, until slightly less than double in size 9. Bake in a 240°C oven. Pour a cup of water in a baking tray at the bottom of the oven and then lower temperature to 220°C 10. Bake for about 30 mins until golden brown. Set on a wire rack to cool 11. Delicious with cold butter or cheese mabaker.london

1. Buy a set of scales and weigh your ingredients. One millimetre of water is one gram, so everything can be measured in grams – it makes life so much easier 2. Don’t add any flour when kneading. The dough will initially be sticky but it will change under your hands. Adding flour will only make for a much heavier bread 3. Use a shower cap to cover your proving dough. it’s easier to use than cling film or damp tea towels and they’re reusable 4. invest in a dough scraper. They’re very useful for scraping bowls and tables, as well as for lifting and dividing dough 5. Use strong flour for your bread making. The ‘strong’ refers to the protein in the flour which is the gluten. This is what gives the bread its beautiful rise. if you can get stoneground, even better!

Olivia, who owns and runs St Clements on New King’s Road, worked as a catering chef for 10 years before she decided to open up her own place. Now it’s one of Fulham’s busiest cafés, serving healthy but delicious lunches, cakes and juices as well as holding monthly supper clubs.
RECIPE: CARROT, APPLE, SPELT AND OLIVE OIL LOAF CAKE
This cake is made with unrefined sugar, spelt flour and olive oil. It is perfect for both children and adults and is also nut and dairy free • 275g spelt flour (wholemeal or white) • 1 tbsp baking powder • ½ tsp bicarbonate of soda • 2 tsp cinnamon • 1/2 grated nutmeg • 4 medium free range eggs • 100g unrefined caster sugar
• 100g light muscovado • 160g mild olive oil • 1 apple • 275g carrots (prepared weight) • 90g raisins • 2 tables spoons of golden caster sugar on top 1. Use the best quality ingredients you can afford – you will definitely notice the difference 2. Always line your cake tins properly 3. Use a pinch of salt when cooking with chocolate as it enhances the flavour 4. if you are baking a cake, you should always make sure that your butter and eggs are at room temperature 5. if you have cold hands you will make good pastry; if you have warm hands
1. Line a 2 litre loaf tin with baking parchment 2. Weigh out and combine the flour, baking powder, bicarbonate of soda, cinnamon and grated nutmeg 3. Peel and grate the carrots – you should have about 225g prepared weight. Grate the apple including the skin 4. Beat together the eggs and the caster and muscovado sugars in a large bowl for 2-3 mins until it has increased in volume a little and is pale in colour 5. Swiftly add the oil to the eggs and sugar and then sift over the dry ingredients folding through carefully with a metal spoon until all the flour has been combined 6. Finally fold through the carrot, apple and raisins. Put the mixture in the prepared loaf tin and scatter over 2 tablespoons of golden caster sugar 7. The Journal sends its most uncoordinated writer to live out her Strictly Come Dancing dream at Karen Hardy Studios in Fulham’s Imperial Wharf, and speaks to the woman herself EMILY ADAMS
I
f Karen Hardy was a type of dance, she’d be a salsa. “I love to be crazy, I love to have fun and I’m very colourful!” she declares as we chat in the run up to this year’s Strictly Come Dancing. She famously danced to Hot, Hot, Hot with cricketer Mark Ramprakash on the show, which she went on to win in 2006. Karen is undoubtedly a salsa – she’s lively, animated and exactly as she comes across on TV. When she left school, Karen had to make the decision – go to university or a start a dance career? She took a leap of faith and surprisingly went into the world of banking to support her dancing. Around the age of 19, she said, “Mum, I’m going to Hollywood and I’m going to be a world champion!” Karen had her fun in the States for a couple of years but she

soon came back to England. Eight years ago, she set up her own private dance studios in Imperial Wharf after TV and radio presenter Gloria Hunniford wanted to know where she and her friends could learn to dance. “There was a gap in the market for a five-star establishment and private members club for ballroom dancing. We’re very proud to be the only club of its kind.” Karen tells me that whether it’s to compete for medals, to get fit and healthy, to prepare for the first dance at a wedding or to just have fun, everyone has different reasons for wanting to dance so the needs of each individual need to be tailored to. “I felt it was really important that we didn’t just do really big dance classes,” she tells me.

reVieW: the Journal tries it out i must admit, that walking into Karen Hardy Studios in imperial Wharf, i am mildly terrified. Aside from a brief stint learning modern and jazz in my formative years, in which i was assured i was great at dancing (mum, i know i wasn’t), musicality and rhythm are not my forte. An avid Strictly fan from day one, this should be a dream come true, but now, in reality,
What I really want to ask though, is if she misses her days on Strictly Come Dancing? An almighty sigh and a simple “Yes” tells me it’s always on her mind. “Desperately,” she adds. But of course, while she’s no longer on the dance floor in front of millions on the BBC every Saturday, she can be found offering her advice on its equally-adored sister programme It Takes Two. Although she’s no longer dancing, she’s still involved in the judging too and it’s just been announced that Karen will be completing the line-up of judges on the Strictly Come Dancing Live Tour this year. She holds a wealth of world titles and has represented her country for several decades, so she’s more than well-placed to offer her knowledge and expertise. I ask who she would like to have partnered if she had been in this year’s series. As expected she tells me she couldn’t possibly choose. “There are a few people I’ve got my eye on though.” She’s looking out for Olympic athlete Greg Rutherford and she’s “completely in love” with reality star and criminal law barrister, Judge Rinder. “I adore his humour and his intelligence.” Would she ever go back to the dance floor? “You’ll never see me dance professionally again,” she says and I can’t quite stop the “No!” from tumbling out of my mouth (the Strictly Come Dancing fan in me is rearing its head). “The day I retired from the competitive scene, it was the same decision as when I retired from the show. There are always great young people coming up. I feel blessed that I’ve had my time, but you must step back and allow others to take your place,” she says graciously. Karen has stepped back from the professional scene, but, whether it’s on the small screen on or in the studio, she’s still showing us why she’ll always be a salsa. “At my ripe old age,” she laughs, “I’m still believing I’m hot, hot, hot.”
standing in front of a stranger and learning how to wiggle my hips seems absurdly bizarre. There are mini disco balls that hang from the ceiling and there’s sequined cushions and velvet sofas galore – pure glamour and luxury and everything i hoped it would be. Darren, my instructor and dance partner, has intimidatingly been dancing since the age of six. in a bid to stall for time and to cover myself when it goes horribly wrong, i ask Darren if it really is possible to teach anyone to dance. “if you can walk, you can dance,” he tells me assertively, so there’s no excuse not to get started. Without another word, he asks, “Shall we start?” and in sheer panic, i blurt out, “Yes!” Somehow without really knowing a single step, i’m waltzing around the room. Then i’m salsa-ing, tango-ing and cha cha cha-ing. He gives me short sequences to remember at a time and before i know it, i’m really dancing and it feels amazing. Darren is patient and engaging and in my mind we’re already breezing into the Strictly Come Dancing ballroom, wowing Craig Revel Horwood, getting a standing ovation from the crowd and waltzing away with the glitterball trophy. i might be running away with myself but in just one hour, i’m sold. if you need me, i’ll be on the dance floor. 10 The Boulevard, Imperial Wharf, 020 7731 7316, SW6 2uB, karenhardystudios.com

AND ALL THAT NAZ The Journal heads to Wandsworth Bridge Road for a pampering session at Naz Zeneldeen BETHAN REES

az Zeneldeen is what I’d describe as a hairdressing stalwart. Having been in the industry since he was 15 years old – saying he’s a dab hand with a pair of scissors is an understatement. Having cut hair in independent salons in London for years, in 2009 he opened his first salon in Fulham, and this summer opened the Gentlemen’s Grooming Club, just next door. However, I’m not visiting Naz’s salon for my hair to be preened – this time I’m here to be pampered from head-to-toe with its beauty treatments, in the safe hands of Sharon Lemon, head of beauty at Naz Zeneldeen. With 16 years experience in the beauty industry, Sharon knows how to look after a client both personally and technically. The salon offers a range of services, from eyebrow shaping to a body scrub, waxing to make-up application and even does bridal hair and makeup. But, I’m here for a full facial (more on that later) and a body massage. As soon as I enter the salon, I’m greeted by a smiley Naz who sits me down for a moment while the treatment room is being prepared, offers me a drink and provides me with a couple of magazines to flick through. Sharon collects me from the reception before I become too indulged in celebrity gossip and shows me to the tranquil
treatment room area – there’s a small reception-type space, where Sharon will talk you through your treatment and will ask you if you have any areas of concern. But, it’s also where she can give clients manicures and pedicures. The treatment room itself is small but perfectly formed and the scent of lavender instantly soothes away any stresses, without being overpowering. With the blinds closed, a few flickering candles and Eva Cassidy on the sound system, I’m ready to be entirely soothed. First up, the facial. Using all Dermalogica products, Sharon first gives my face a deep cleanse and massages the cleanser rigorously into my skin, before removing with cotton pads. Following this is a gentle exfoliation. Next, she steams my face for approximately 10 minutes – I’m so relaxed by this point, as she gives me a hand and arm massage, that I have no concept of time. A lot of facials I’ve had don’t include extraction, which some people might find uncomfortable or unpleasant – but I don’t mind this. For those who don’t know, it’s essentially removing the gunk from your pores. Sharon does this gently wearing surgical gloves (rather than with daunting metal tools) and its over before I know it. To soothe my skin, she applies a calming mask, before asking me to turn over on the bed for my massage.
The full body massage starts on my neck and back, where I tell her most of the tension is, and she works away at the knots firmly but with ease, before working on the rest of my body. My feet are extremely ticklish, and Sharon massages them with the utmost care and I don’t flinch – not even once. Full(y) HOUSE Family-run interior design studio Fully Interiors helps you make your house a home. The Journal finds out what sets them apart from others and what trends we should keep our eyes on BETHAN REES
F
ounded in 2000, Fully Interiors is a family-run, high-end interior design company, which creates dream homes all over London and Surrey with ease, a friendly attitude and creative outlook. Steve and Geraldine Callister-Russell joined forces to create the company – Geraldine’s background is in interiors, and Steve’s in lettings, so they both understand the importance of presenting houses with fine details to finish. The office, which is based in Ascot, has an instantly calm and friendly presence, and scatterings of particulars indicate that this design company knows style – the Eames-inspired chairs in the meeting room and the stacks of coffee table books including the annual industry bible, the Andrew Martin Interior Design Review, are telltale signs. “The door is always open,” says Claire Ackworth, head of design at Fully Interiors, and she’s not simply speaking metaphorically – but literally. The team makes sure that they are not under pressure and remain relaxed, and this is easy work with the company’s friendly approach. “We work with clients at their pace,” she says. After an initial conversation discussing what they’re after, Claire likes to do a site visit, if possible, and then she can present them with an indicative quote. Following this, the team can provide mood boards, if the client isn’t too sure on what they want. “We can use our expert knowledge and show them

what we think would work and present as many samples as possible, from furniture to fabrics,” Claire says. “We’re very flexible in that we don’t have set time slots such as one hour for a meeting – it will take as long as it takes. On any project, we won’t walk away unless we’re 100 per cent happy, and if that means returning to the site another day because the cushions aren’t quite right, then so be it.” Fully Interiors has a strong green ethic, so regularly refreshes all of its vans to make sure the carbon footprint is tracked and has a zero landfill policy, which means never throwing away furniture. Instead, the company will give it to charities. “One of the organisations we work closely with is RE:WORK, part of the charity Groundwork, which is the refurbish and reuse programme, so we donate a lot of furniture to them,” Jessica Willcox-Jones, head of business development explains. Fully Interiors also collaborates with Fine Cell Work, a social enterprise that trains prisoners in paid, skilled, creative needlework, by donating their fabric offcuts to recycle. “We also work with Caxton Youth Organisation, to advance the development of disadvantaged and disabled young people – we helped them produce artwork and photography that was then used in the refurbishment of the Grosvenor head office in London.” The interior design company works

with both private clients, which are a real mix of long-standing family clients to young couples, but also has a corporate arm of the business that runs alongside some of the most respected and trusted companies in the UK, such as Grosvenor, Capco and The Crown Estate. Claire explains to me that her and her design team don’t have one source of inspiration, but instead are inspired by almost everything. Of course, it’s difficult not to be influenced by some interior trends as a designer, but I want to find out which of them Claire might work into a project. “We’re using more cotton velvet in earth tones such as muted green and burnt orange, and also mixing metallic metals,” she describes. “It’s not so regimented anymore, people like to mix things up, such as putting rose gold next to bronze, copper with antique gold.” Another aspect of the business that makes the company stand apart from others is its installation and warehouse department. It might not sound the most glamorous of features – but it truly makes a difference to the client. “Having the warehouse means we’re able to manage an entire project without any or little interference to a client’s day-to-day life in that when the furniture is being created, it is stored here until every piece is ready,” Claire tells me. “The design team works closely with the installation team too, so we can
get the most out of a design. The installation team has been here for years; they’re really loyal and experienced.” All in branded uniforms and branded vans, the team is CRB checked too – to give clients that additional peace of mind. With the clocks going back on 30 October, we can think of no better time than to speak to clockmaker and local resident Julius Schoonhoven about his craft and turning back time WHAT’S THE HARDEST PART ABOUT CLOCK RESTORATION?
HOW DID YOU GET INVOLVED IN THE CLOCK BUSINESS? My father was an antiques dealer in the Netherlands so I have grown up with antiques. I always had an affiliation with engineering, but clockmaking was a coincidence. It was suggested to my twin brother and we both ended up studying horology at Christiaan Huygens College in Rotterdam. I also did two years of study at West Dean College in Chichester, one of the only places to study antique clock restoration in the world.
WHAT IS A DAY IN THE LIFE OF A CLOCKMAKER LIKE? I have to deal with everything – visits to clients, organising additional works by external professionals, the dreaded paperwork and running a workshop and studio. I also work for several institutes like Historic Royal Palaces and the Wallace Collection.
It can be quite hard to maintain the function and appearance of a working antique with the conscience of conservation to the object.
the clock has run for 20 years every day and now, suddenly it has stopped. They need attention every now and then. I like to make the comparison with a car: the moment you buy it from new, you book it in for its next service.
WHICH CLOCKS AND STYLES DO YOU ENJOY WORKING ON MOST?
IF YOU COULD GO BACK IN TIME, WHERE WOULD YOU GO?
My favourite period is definitely the second half of the 17th, up to the first half of the 18th century. A lot happened in the clock world during that period, especially in the Netherlands, England and France. Trade and various discoveries made for a turbulent time.
I would love to go back to the 1870s and build a big Victorian building to house a great community of artists and related crafts like what was the Fulham Gasworks before it started being redeveloped. Time goes too fast; sometimes I wish that I could slow it down a bit, but I’m still working on that.
WHAT ARE YOUR FAVOURITE TIME PIECES?

resh from a typical Fulham summer market, Mark and Nicola are keen to keep moving with what autumn has to offer and they’re happy to take on every property out there. Regardless of shape, size, price or layout, they know Knight Frank Fulham are confident in selling any property, so when they sit down with the Journal, they’re ready to talk business. Having opened the Fulham office in 2008 and with more than 25 years’ experience in the industry, Mark knows a thing or two about the local market, and now alongside Nicola, the team is stronger than ever. “Nicola was the lettings manager at Knight Frank Fulham for three and a half years,” Mark tells me, “so she knows a lot of the people in the area and we’ve always

worked closely together.” Nicola made the move from lettings to sales in July this year, wanting a new challenge after having worked in lettings for almost 10 years. Whilst she wanted a change, she knew she wanted to stay with Knight Frank: “I know the Fulham market extremely well,” she starts, and although she tells me that the pace is different, the move has strengthened the sales and lettings relationship within the office. “When a sales valuation would take place,” Nicola says, “I’d go along and do a lettings valuation too to give them both market values. As a result, I know a lot of the people and properties. If someone is looking to buy an investment property, become a landlord or if they already are a landlord, I have the information and knowledge to give
[PROPERTY] them advice on both sides.” With Mark, Nicola, and a team of experienced professionals, the Fulham office knows how to handle the current climate. Mark explains that the market is steady, but as always it’s all about getting the price right, especially with the rise in stamp duty. “It has affected Fulham like no other,” Mark explains. “Our prime market is £2-4million and that means you are looking at a stamp duty of between £150,000 and £393,000,” but, as he continues to tell me, it’s not stopping them from doing their job. “We had a house recently on Bishops Park and we had 10 bids on it.” Mark gives me another recent example: “There were two houses on back to back streets and they were virtually the same. One was priced at £2.3million and one at £2.55million. The higher value achieved two viewings in a month whereas the £2.3million property had 41 viewings and two offers. The price is so important at the moment.” Nicola explains that it’s all about being honest with the seller from the start and being realistic and sensible with pricing. “There was a two-bedroom flat on Woodlawn Road and it had been on the market for a year. It came on at £865,000 with another agent. It then came down to £760,000.” With the help of Knight Frank and the persuasion of Mark himself, it came down to £725,000 and sold within a week. “The seller is very grateful now. He’s delighted that it’s achieved a good price.” Looking forward to the season ahead, this duo is optimistic. “It’s definitely busier and we’re very positive about the autumn,” Mark tells me. “There is so much going on in Fulham and we want to be a part of it. We know we can do such a good job for people. Knight Frank is the place to go if you want an estate agent and it’s such a great opportunity to buy here.” Mark continues, “We have a lot of interest on a variety of houses and flats, in particular under £1.5million, which is a large part of our market, 60 per cent in fact. But we want to sell properties of all values and we’ve got buyers for them. “Like we keep saying,” he concludes, “you just have to get the price right.
