Happy thanksgiving! It’s Turkey Time! I love Thanksgiving. I mean, seriously... a holiday that is centered on family and food? I’m in! In our home, Thanksgiving is a time to gather and recall the blessings of the year. This year, I am thankful for my family’s health and happiness. LET’S TALK ABOUT TURKEYS! GOBBLE, GOBBLE ANYONE? Turkeys are intelligent and sensitive animals that are highly social. They create lasting social bonds with each other and are very affectionate, kind of like dogs! It’s even said Benjamin Franklin wished to have wild turkeys as the national bird of the USA, rather than the bald eagle. Learn more about the animal we most closely associate with the fall season.

FUN FACTS • Individual turkeys have unique voices. This is how turkeys recognize each other. Turkeys are known to exhibit over 20 distinct vocalizations, including a distinctive gobble, produced by males, which can be heard a mile away. • Turkeys have the ability to learn the precise details of an area over 1,000 acres in size. • Turkeys have 5000 to 6000 feathers. Like peacocks, male turkeys puff up their bodies and spread their elaborate feathers to attract a mate. • The male turkey is substantially larger than the female, and his feathers have areas of red, purple, green, copper, bronze, and gold iridescence. Female feathers are duller overall, in shades of brown and grey. • Baby turkeys, called poults, stay with their mother all year. Poults are unable to fly for the first couple of weeks of their lives, the mother stays with them at ground level to keep them safe and warm until they are strong enough to all roost up in the safety of the trees. • Wild turkeys are able to fly at up to 55 mph, however only for relatively short distances. • The long fleshy object over a male’s beak is called a snood.

MOVING BEYOND NUGGETS! BAKED CHICKEN PARMESAN

Let’s talk about chicken. Chicken nuggets are a favorite of many kids, but are they a good choice? Chicken can be a healthy option for kids but it’s all in how it’s prepared. It is a great source of protein. Protein helps build your child’s tissues and muscles which results in growing taller and stronger. Chicken provides vitamins and minerals and is good for the heart. The recipe options using chicken are endless. Start by buying fresh or frozen chicken that has not been processed or breaded. Look for simple recipes that bake, grill, or roast, not fry. Chicken doesn’t have to be boring. Try new seasoning blends and marinades. You can also make your own chicken tenders in an air fryer. Remember, chicken should be cooked to 165 degrees to prevent food borne illness. So let’s look beyond chicken nuggets and find new creative ways to serve chicken to your family.

DIRECTIONS

INGREDIENTS • 1/2 cup unseasoned wholegrain bread

crumbs

• 2 tablespoons grated parmesan (or romano) cheese • 1 teaspoon Italian seasoning • 1/2 teaspoon granulated garlic • 1/2 teaspoon onion powder • 1/2 teaspoon salt • 1/2 teaspoon ground pepper • 1 tablespoon olive oil • 2lbs chicken cutlets • 3/4 cup sauce • 3/4 cup mozzarella cheese

STEP 1 Preheat the oven to 375 degrees. STEP 2 In a medium bowl mix together the bread crumbs, parmesan cheese, granulated garlic, onion powder, salt, and pepper. STEP 3 Coat a sheet pan with the olive oil. STEP 4 Dredge each chicken cutlet in the breadcrumb mixture and place on the sheet pan. Discard the rest of the breadcrumb mixture.

STEP 5 Bake the chicken for 15 minutes. Turn over and bake for another 15 minutes. STEP 6 Remove the pan from the oven and spread 2 tablespoons of sauce and 2 tablespoons of shredded mozzarella cheese on each chicken cutlet. STEP 7 Place back in the oven and cook for 10-15 minutes or until the sauce is hot and cheese is melted.

PENNY CELEBRATES VETERANS DAY Hello, friends! This month I am not only looking forward to Thanksgiving, but I’m also excited about celebrating Veterans Day. VETERANS DAY is a national holiday celebrated on November 11 that honors all living people who have served or are currently serving in the military. The holiday was originally known as Armistice Day which honored the day World War I ended, November 11, 1918. In 1954, Congress changed the holiday to Veterans Day to honor all men and women who served in the U.S. military. Across the country, Veterans Day is celebrated with parades, speeches, and ceremonies. Many people write letters or send care packages to service members abroad to thank them for their service on Veterans Day. IT’S FALL

Y ’ALL! Enjoy the weather, take a walk and do an experiment! Not only can you observe the beautiful Fall leaves, but you can actually see the pigments that make the leaves their colors. By using a DIY chromatography technique, which is a laboratory technique for the separation of a mixture, you can examine the colors of leaves by extracting them. Colors found in leaves are created by following chemicals: green is from chlorophyll, yellow is from flavonoids, orange is from carotenoids, and red is from anthocyanins. See what chemicals you can find in the leaves you collect.

WHAT TO DO: STEP 1 Go on a nature walk and collect leaves varying in color from yellow, red and green. STEP 2 Remove the stems, cut or break the leaves into small pieces and place leaves of the same colors in a jar.

WHAT YOU’LL NEED: • Glass jars or glasses

STEP 3 Pour rubbing alcohol over the crushed leaves until covered.

• Leaves of various colors • Scissors

STEP 4 Cut a paper towel into strips. Dip the strip into the mixture, leaving enough towel to hang over the top of the jar.

• Paper towel strips • Rubbing alcohol

STEP 5 Let the jars sit in a quiet place for 1-2 days. When the towel is dry, remove it. STEP 6 Discuss your findings.

Try to find the brightest leaves in various colors. If you can’t find leaves in varying colors, find leaves in varying shades of green.

AS FALL BEGINS, ENJOY THE BRISK WEATHER WITH YOUR FAMILY AND STAY ACTIVE WITH THESE FITNESS TIPS.

Go for a Post-dinner walk Research shows that routine and consistent post dinner walks decrease the chance of diabetes as we age and can decrease a diabetics A1C by 25%. Weather permitting, take a nice walk with your family around the neighborhood or to your local park. Burn calories before your meal or after dessert. You can even bring your family pet. Don’t have a pet, look for a local shelter and offer assistance dog walking! Sneak workouts into other activities Have your toddler walk instead of riding in the

cart at the grocery store. Take the stairs or walk up the escalator whenever possible. Walk your children to school if the weather permits and school is close enough. Trade television time after dinner for playtime at the park or in the backyard. Crank up the music Hold family dance night with your family! Move the furniture aside, turn up the music, and let the kids take turns using a flashlight as a strobe light. Dancing for 30 minutes or a few fun hours will really get the heart rate up and build everyone’s cardiovascular health. FAMILY FIRST

Involve the whole family in housework Get everyone involved in keeping the family home running smoothly. Children can help with everyday housework inside and outside the home. Fall cleaning is a great opportunity for kids to help with yard work. During the fall season, kids can rake leaves and help weed the flower beds. Children are great at digging up dirt, so let them turn over the soil and help you plant new bulbs. Gardening is as effective as weight training when it comes to preventing osteoporosis as we age. If you have always NOVEMBER 2020

wanted to plant your own vegetable garden, make it a family adventure. This may help make vegetables more appetizing to children. Inside the home, kids can assist with laundry and age-appropriate chores. All these activities can help the entire family be more active. Have a weekly sports night Every Wednesday, for example, get everyone up and moving. One game to play is the fit-deck shuffle. You can buy a ready-made set of exercise cards or design your own. Create a series of playing cards


featuring family-friendly exercises, such as bear-crawling, jumping jack, or crab-walking. Each family member picks a card and performs the exercise pictured until all the cards have been dealt. Walk or run for charity Support a good cause and take advantage of a great opportunity to exercise. You can walk or run with your family while showing them the importance of giving back. Many organizations have started to schedule virtual and in-person 5k races this fall. Keep an eye out for your local church, college, and organizations like Thibodaux Regional who offer opportunities for families to walk or run together!
