Five-Spice Powder Although the exact origins of fivespice powder are lost to history, some believed that the Chinese were attempting to produce a "wonder powder" encompassing all of the five elements. All of the five flavors - sour, bitter, sweet, pungent, and salty - are found in five-spice powder. Then again, it's also possible that a cook accidentally stumbled upon this particular combination of spices, and realized its power to enliven the blandest dish. STAR ANISE TOUGH SKINNED
RESEMBLING THE ANISE IN FLAVOUR It is obtained from the star-shaped pericarp of Illicium verum, a small native evergreen tree of southwest China. It is, as the name suggests, star shaped, radiating between five and ten pointed boat-shaped sections, about eight on average. These hard sections are seed pods. Tough skinned and rust coloured, they measure up to 3cm (1-1/4�) long. The fruit is picked before it can ripen, and dried. The stars are available whole, or ground to a red-brown powder.

SALTINESS
The flavor of fennel is slightly sweet and has a definite licorice-like taste. PROCESS.
In a dry skillet, roast 2 teaspoons of Szechuan peppercorns by shaking the pan over low to medium heat until the aroma of the peppercorns is released (about three minutes)
Grind the roasted peppercorns and 8 star anise in a blender or pepper mill.
Strain the blended seasonings. Mix in 1/2 teaspoon ground cloves, 1 tablespoon ground cinnamon, and 1 tablespoon ground fennel seeds. Grind the seasonings until very fine.
Store in an airtight container.

Preheat oven to 325 degrees. Combine first 5 ingredients and rub over turkey to coat. Pour remaining sauce into cavity. Add scallions and cilantro. Place turkey in a roasting pan. Roast 20 minutes per pound, until a meat thermometer registers 180 degrees. Let stand 15 minutes before carving.
Five spice Powder works great as a marinate base, sauce and even as a substitue for sugar. Go out there and experiment! You never know what amazing use you could find for it!
