C OTO D E C A Z A P H I L H A R M O N I C C O M M I T T E E ’ S TA L E N T TEA AND BOUTIQUE A HUGE SUCCESS Coto de Caza Golf and Racquet Club was the setting for the Coto de Caza Philharmonic Committee’s Talent Tea and Boutique on November 1, 2014. Over 120 guests attended and enjoyed a variety of performances showcasing fifteen musically talented high school students, representing seven different high schools from Orange County. The contestants were judged by a distinguished panel from academia and the entertainment industry. Bart McHenry, Lindy Boone Michaelis, Catalina Quintero and Daniel Wachs. Lunch featured a traditional English Tea. The winner, Julian Rymar, on clarinet with piano accompaniment, enchanted the audience with a presentation of Concertina in C Minor, Op. 26 Van Weber. Julian is a student at the Orange County School of the Arts and was presented with a check for $1000.00 and a trophy for his outstanding performance. Each participant was recognized with a certificate for their talent and participation. Students were also awarded six hours of community

service for their commitment. The Coto de Caza Committee is delighted to have successfully achieved this tribute in Janie O’Reilly’s memory! A Holiday Boutique was open to the public and available before and after the performance for Talent Tea guests, with thirteen vendors displaying a variety of designer items, jewelry, handbags, clothes, Christmas items, one of a kind aprons, Coto de Caza Committee Cookbooks, and more! More than 5 million children, from kindergarten through high school, have participated in the Youth Music Education Programs over the past years. The Youth Programs of the Philharmonic Society are free of charge to students, schools and parents, thanks to the generosity of our volunteer Committees’ members and sponsors. The proceeds of the Talent Tea and Boutique will provide support to that cause. The Committee wishes to thank the judges, underwriters, volunteers and guests for making this a successful event.

Dove Canyon Women’s Group raises $14,000 for The Teen Project On December 4, 2014 Dove Canyon Women’s Golf Association (DCWGA) hosted their annual President’s Luncheon. This luncheon raises money for the charity designated by the Women’s Club President. This year, for the third time, President Evelyn Grass honored The Teen Project. The luncheon this year raised $14,000 for the organization, topping last year’s $12,000 donation. Money is raised through a raffle (over 50 baskets), a silent auction, and the sale of boutique items, many prepared by the teens themselves. Chairing the event was Mary Beth Kosmenko whose style and attention to detail have made this event such a success for the past several years. Sandy Ueeck and Dolores Hanger were also instrumental in the planning and execution along with many other volunteers. Members and local

businesses donated items for the raffle and silent auction. Employees of BJ’s Restaurant graciously offered their services during the raffle and silent auction. The Teen Project is a local organization dedicated to caring for foster children who have aged out of the system and are homeless. It was founded by Lauri Burns in 2007. The Teen Project funds a single family home in Lake Forest that houses up to six young women a year along with an on-site “House Mother.” This is known as the college house as young women who live here are given money and tools to survive while they attend college. Other facilities under the Teen Project umbrella are The PAD (Protection and Direction) drop in center in Venice and FREEHAB (free-rehab) Life Transformation Center. At the PAD youths that drop in are provided with food, clothing and counseling. The main idea is to direct young homeless teens to safe shelter. FREEHAB combines drug treatment with technology to help homeless addicted youths overcome their habit and learn skills to live a productive life. In the past few years club members have decorated their luncheon tables in a spirited competition for the most elegant, most creative and the “wow” factor. This has led to not only an

Choosing a Weight Loss Plan that’s Right for You Losing weight and getting into shape is a goal many Americans aspire to achieve. Choosing a weight loss plan that fits your lifestyle is a crucial first step in developing the diet that works for you. Dieters start with a focus on carbohydrates from vegetables and slowly add back fruit, nuts and whole grains as one’s carb balance is established and weight loss goals are met. Once you have developed your weight loss plan it is important that you stick with it. You need to make healthy changes to both your diet and lifestyle. habits. Drink more water The Beverage Institute reports that the average adult in the US gets a significant portion of their calories from beverages, mostly in the form of carbohydrates. Avoid drinking sugary sodas, juices and alcohol, and replace these with more water. Rally support The first few weeks of the diet can be the most difficult. To be successful, look to family and friends who have made similar lifestyle changes for support and advice. Light eating for families: Experts suggest seafood Health experts recommend young families, especially expecting moms, should aim to eat a variety of nutrientrich foods -- those that are bursting with vitamins and minerals in every bite. A serving of seafood, for instance, packs nutrients like protein and omega-3s into only about 100 calories. For this reason, eating fish and shellfish two to three times a week is linked to healthy hearts among adults and a brain boost in babies. Warm weather is the perfect time to learn light, delicious ways to make fish your family’s new favorite. Healthy eating made simple with seafood Instead of deli meat sandwiches, try a tuna, crab or salmon salad with one of these creative mix-in combinations to help get to your weekly recommended servings of seafood: * Plain yogurt, slivered almonds, diced apples and dried cranberries. * Olive oil, capers, diced red onion and basil. * Cottage cheese, diced celery and a splash of lemon juice. Place on a whole wheat roll or eat as a dip with crackers for a simple and nutritious picnic lunch. As an alternative to traditional sum-

mer barbecue items like hot dogs and brats, which are higher in calories and fat, fire up the barbecue for one of these fish dishes: * Kebabs with shrimp, scallops, peppers and pineapple. * Fillets of salmon or cod grilled on a wood plank. * Grilled pizza with mozzarella, tomatoes and canned tuna (full recipe below). Preheat grill to 350 F. 2. Place pizza crust on pizza pan or directly on grill rack. 3. Sprinkle cheese over crust; grill with lid closed until cheese is melted (about seven minutes). 4. Meanwhile, in bowl, combine tomatoes, shallots, red wine vinegar and garlic; set aside. 5. Flake tonno tuna evenly over pizza. 6. Spoon tomato mixture over tuna; sprinkle basil over pizza. 7. Grill five minutes longer. Serve immediately.

Inaugural Holiday Tea Supports OC’s Newest Charter High School

Photos by Ann Chatillon More than 250 Orange County ladies (and a few men too) gathered recently for tea at The Balboa Bay Resort to raise money for The Academy – a public charter high school in Santa Ana funded by Orangewood Children’s Foundation and opened in August, 2013. The event was presented by Orangewood Children’s Foundation. Major sponsors were Black, Starr and Frost; the Samueli Foundation; and Valaree and Elizabeth Wahler. The event started off with the opportunity drawing which included nine items plus a premium opportunity drawing for a chance to win a pair of Black, Starr and Frost diamond earrings valued at $9,900. The winner of the earrings was Judy Dennis. During his remarks, Alfredo Molina (Chairman and CEO of Black, Starr & Frost) offered a surprise live auction item of a $5,000 gift certificate plus dinner for eight in the Black, Starr and Frost vault. The successful bidders were Susan Samueli and Jaynine Warner. Event co-chairs Andrea Casaw and Erika Clemons then came up and welcomed guests, Academy founders Susan Samueli and Sandi Jackson Tea committee members Kimberly Kirksey (center) and Rochelle Kadin discussed the history of and need for The Academy. (right) with Rochelle’s daughter Lillie (left) During the lunch break, guests enjoyed a selection of tea sandwiches including: egg salad with cornichons; smoked turkey, pommery mustard & artisanal pickles; European cucumber & herbed chives cream; smoked salmon & watercress; and apple & brie Cheese. Guests were treated to a yummy quartet of desserts: a chocolate yule log, a miniature pumpkin pie, a holiday éclair filled with raspberry mousse, and a pistachio torte. After lunch was served, Head of School Anthony Saba shared with the audience the unique benefits of the school including a laptop for every student, a focus on project-based and work-based learning, and the STEAM curriculum. First year results include a 97% attendance rate and 50% of students on the honor roll. He explained the need to fundraise for a public school, saying “California ranks 49th in the U.S. in per-student funding. As a public charter high school, The Academy receives the same funding as other public schools in California. But through the fundraising efforts of Orangewood, we are able to make The Academy a great school with amazing teachers and experiences for our students.” Academy student Nadia (Class of 2017) shared about her difficult elementary school experiences. She was bullied by kids who thought she was weird, and didn’t feel like her teachers cared about her education. All Academy Head of School Anthony Erika Clemons and Andrea Casaw this deeply affected her self-esteem to the point where she stopped dreaming with the Snow Queen aka-Lacey James Saba with daughter Haley about her future. At The Academy, Nadia is thriving. She has a group of friends who care about her deeply, and she describes everyone at the school as a family. The support from Academy teachers, staff, and Head of School, Anthony Saba, has reinvigorated Nadia’s passion for life. “Mr. Saba took me aside one day and told me that I could be anything I wanted to be. Nobody had ever said that to me before. It totally changed the way I think about my future.” The event netted $85,000 for the operations of the high school and Orangewood plans to make it an annual holiday event. Orangewood Children’s Foundation is a private, nonprofit organization. Founded in 1981, it is one of the leading providers of services to children in foster care. Recognizing that nearly 50% of foster youth do not graduate from high school, in August 2013 the Foundation opened The Academy, a free charter high school in Santa Ana for community, underserved and foster teens. A patient of long-standing came in s e v e r a l weeks ago, complaining that her teeth were sensitive, generally, all over mouth. When I visually Dr. Michael Tessier inspected her mouth, there was no evidence of cracked teeth, or tired-old fillings, or bad crowns, or gum recession- all the usual suspects. There was nothing that I could see that might contribute to tooth sensitivity. We treated the sensitive teeth on the right wide with the laser. When she came back two weeks later, she said that she couldn’t wait to have me do the left side, because all the sensitivity was gone on the right side. Positively amazing. So, when you eat ice cream, or drink a margarita, one of your molars, or maybe even a bicuspid, is sensitive. When you take that problem tooth to your friendly, neighborhood dentist, and he says you need that tooth capped (or crowned). What’s that about? When someone drills on a crystalline structure, like glass, or porcelain, or tooth enamel, the heat of friction from the drilling device puts microscopic fractures in the material. When a dentist has to put a big filling in a tooth, those little fractures pre-dispose that tooth to further fracture. The fractures

virtually split the tooth. Later, after years of chewing trauma, the nerve becomes irritated from this microscopic splitting during chewing or clenching. This hypersensitivity is usually manifested as temperature sensitivity. Just replacing the filling doesn’t help because the cracks are already there. A crown, on the other hand, holds the tooth together, like the band on a barrel, so the splitting activity stops. If the trauma to the nerve of the tooth didn’t damage that nerve irreparably, which would necessitate a root canal (removing the damaged nerve from the root of the tooth), a crown is all that’s necessary to allow you to return to the pleasures of ice cream-eating. There are also instances where a tooth is sensitive to cold or even sweets, and a fracture is not the culprit. This is most often a result of root sensitivity, where the root of the tooth is exposed due to gum recession. There is also a setting on my soft-tissue laser (Periolase) for treating teeth that are cold sensitive due to root sensitivity. Over the holidays, Dove Canyon resident, Tiffany Hyland, became engaged to her boyfriend of five years, Austin Hill. The exceptionally executed proposal took place on a beach in Santa Monica. Friends escorted Tiffany to the site of their first date, a restaurant on the 32nd floor. Down below, on the beach, Austin had spelled out the words, “Marry me?” in lights. Tiffany rushed down to meet him on the beach and accept his proposal. A graduate of St. John’s Episcopal School and Sage Hill High School, Tiffany met Austin at UCLA where they both studied Political Science. The commonalities didn’t end there. Both enjoyed athletic careers at UCLA: Tiffany as a gymnast on the 6 time National Championship team and Austin as a tight end on the Football team. Affectionately known as Tiff and Auzzie, the couple quickly established a reputation as “Mom and Dad” to a number of the gymnasts, many of whom will participate in the wedding ceremony. Austin currently enjoys a successful industrial real estate career while Tiffany is completing her last semester at Loyola Marymount Law school and preparing to take the Bar exam in July. The ceremony is scheduled to take place later this year in Southern California.

Green Eggs and Ham Mini Tartlets

Yield: 4 servings Prep time: 30 minutes Cooking time: 12 to 14 minutes 1/3 cup finely chopped fullycooked ham 4 1/2-inch-thick slices soft white sandwich bread, crusts removed 2 tablespoons butter, softened 1/2 cup frozen chopped spinach, thawed and squeezed dry 2 ounces reduced-fat cream cheese, softened 3 tablespoons grated fresh Parmesan cheese 1 teaspoon 2% milk 1/2 teaspoon garlic powder 4 medium eggs Freshly ground black pepper Preheat oven to 375°F. Press white bread with palm of hand until flat and doughy, and butter both sides. Gently place in 2 1/2-inch

muffin cups or 4-ounce ramekins, pressing to form 4 individual tartlet crusts. Mix spinach, cream cheese, Parmesan cheese, milk, and garlic powder in small bowl; set aside. To assemble tarts: divide ham among the 4 bread cups in muffin cups. Crack 1 egg into each tartlet

Adopting a Shelter Pet If you’re thinking about getting a new pet, consider going to an animal shelter to find that new family member. There are about 3,500 shelters in the United States that serve an estimated 5 to 7 million homeless animals, according to the American Society for the Prevention of Cruelty to Animals. Why adopt from a shelter? You will make a pet happy. By adopting from a private humane society or animal shelter, breed rescue group, or the local animal control agency, you’ll help a homeless pet find a new home. You will receive a healthy pet. Most shelters follow strict medical protocols including examinations when pets come in and vaccinations before they leave. In addition to medical care, shelters also screen animals for specific temperaments and behaviors to match each pet with the perfect family. Animal shelters have happy, healthy pets just waiting for someone to take them home. You will support your community and save money at the same time. Adopting from an animal shelter is usually less expensive, as your local shelter will just ask for a moderate adoption fee that will mainly cover basic routine medical care costs. Shelter pets are also usually already spayed or neutered and vaccinated. Finally, you help promote responsible pet ownership through your community. Questions to ask When you visit an animal shelter, ask the staff some key questions. Ask about: The pet’s history – Find out as much as you can about the pet’s background. Was it a stray or given

up by its owner? Did it come from a loving home? Did it live with other pets or with children? Medical and behavioral assessments – Find out what evaluations have been done and what lifestyle would suit it best. Ask about the pet’s interaction with the staff, and what their impressions are. The adoption timeline and process – Some shelters will let you take an animal home right away, while others take a slower approach. Find out what to expect up front. Spaying/neutering – Most shelters have policies

to make sure that animals leave spayed or neutered. Some take care of this before the animals are available for adoption. Others schedule the procedure when the animal goes home and either finalize the adoption once it is performed, or refund the spay/neuter deposit once proof is provided. Every dog and cat deserves a home. When you adopt from a shelter, you provide a pet with another chance at finding love and a forever home.

The Happy Diet Most people recognize the link between what they eat and their physical health. But many don't know that there is a link between what they eat and their mood. Literally, says Elizabeth Somer, M.A.,R.D., what you eat or don't eat for breakfast can have an effect on your happiness quotient by afternoon. The effects also are cumulative: eat the right foods for months, years, decades and you will be that much happier and mentally sharp in the years to come. In short, follow these tips that come from, "Eat Your Way to Happiness," the latest book by Somer, and she promises you will say, "I never knew I could feel this good!" Feel Good Tip #1: Eat breakfast People who eat breakfast have more energy, a more sustained good mood, they perform better at school and at work, and they sleep better at night. They also are less prone to food cravings, have an easier time losing weight and maintaining the weight loss. But, Somer is not talking doughnuts and coffee. You must follow the 1,2,3 rule. The breakfast must have: 1) a whole grain to provide needed high-quality carbs for the brain during the morning hours 2) a little protein to keep you satiated and maintain even blood sugar levels throughout the morning 3) one, preferably two, colorful fruits and vegetables. Somer's favorite is as a bowl of whole-grain cereal topped with berries and low-fat milk, and served with sliced watermelon. Or, a morning smoothie made with watermelon, lemon yogurt, Page 22

and dash of ground ginger, served with whole-grain raisin bread. Feel Good Tip #2: Keep lunch light and low-fat Not only will a heavy lunch leave you groggy, but eat too much fat mid-day and it turns on a brain chemical, called galanin. According to research from Rockefeller University, the more fat we eat, the more galanin we produce. People who eat a fatty lunch are likely to eat more calories later in the day compared to someone who eats a low-fat lunch. You definitely need some fat, like the healthy fats in nuts and olive oil and the omega-3 fats, but don't go overboard. A light, low-fat meal helps you stay alert through the afternoon hours, boosts energy, and fills you up without filling you out. An example would be a turkey breast sandwich on whole wheat piled high with spinach leaves and served with a glass of low-fat milk and a fruit salad or watermelon, orange slices and pineapple. Feel Good Tip #3: Include super mood foods Somer says that it is a style of eating, not just a few foods, that will stack the deck in favor of feeling great. The 10 secrets of happy people discussed in her book include habits, such as focusing on "real foods" not processed ones, cutting back on the quick fixes, and keeping meals light. If you are following those guidelines, then adding super mood foods gives you an even greater nutritional bang for your buck. Super mood foods are ones loaded with vitamins, minerals, fiber, and antioxidant-rich phytonutrients,

while being moderate in calories. A perfect example is watermelon, which is higher in lycopene than are tomatoes, and is an excellent source of vitamins A, B6, and C. Better yet, watermelon is 92 percent water, which means it is a natural hydrator, and it contains two amino acids, citrulline and arginine that maintain blood vessels in the body.

They enjoy having the menu board outside the cafeteria so that in the afternoons they can see what will be offered the next morning,”
