NEW DOG LAWS FOR 2017 ARE THE HOT TOPIC IN RANCHO SANTA MARGARITA The whole town is talking about the strong new animal control laws that the City Council of the City of Rancho Santa Margarita unanimously enacted at the end of 2016.Every owner of any kind of animal that lives in or near the City of Rancho Santa Margarita or Mission Viejo will want to become familiar with these comprehensive new regulations which cover a vast array of animal activities. The full text of the sweeping new ordinances was published in the (12/23/16) edition of the Coto de Caza News Here are some of the Highlights of the new animal regulations that now apply to you and your animal; FAILURE TO PICK UP ANIMAL WASTE COSTS YOU FINES OF $300 TO $500 EACH TIME That’s right! Walking your dog may now mean bringing along a plastic bag and shovel to pick up after it. Animal control officers have sweeping authority to ticket you for a first offense of Three Hundred dollars (No kidding!) and repeated offenses up to $five hundred and fifty dollars each. YOU CAN’T OWN FIVE OR MORE CATS OR DOGS WITHOUT A KENNEL LICENSE A kennel license is not easy to get. You probably can’t just plop down the $250 fee, you will need a premises inspection, which may include concrete, walled or commercially fenced enclosure, with drainage, sanitation system, fly control, separate water supply. ALL DOGS MUST BE VACCINATED, LICENSED AND WEAR TAGS OR BE IMPOUNDED The cities have banded together to require licenses in every part of the greater South Orange County area serviced by the Mission Viejo Animal Services, which includes nearly all of Mission Viejo, Ladera Ranch, Coto de Caza and Rancho Santa Margarita. YOU CAN’T KEEP DANGEROUS DOGS WITHOUT MILLION DOLLAR INSURANCE POLICY If your dog has bitten someone, or even attempted to bite or injure anyone who is on public property, the animal may be declared a dangerous animal requiring you to furnish the city with proof of a one-million-dollar insurance policy. Dangerous dogs can be impounded by animal control officials and destroyed . HUNDREDS OF ADDITIONAL REQUIREMENTS ARE INCLUDED IN THESE NEW REGULATIONS Anyone who owns a cat or dog should become aware of the new laws. The newspaper spoke to Bradley J. McGirr, former Rancho Santa Margarita Mayor and current Councilmember, who said:” The changes to our animal care ordinances, were modified to comply with what Mission Viejo’s animal care ordinance structure Page 2
now that we will be joining with their no kill shelter since the first of the year. Rather than following the loose protocols of the County of Orange, our modified ordinances with include more detail regarding adoption events and other animal care and control.” Reporters for the Coto de Caza News also spoke with former Rancho Santa Margarita City Planning Commissioner April Josephson, a prominent animal lover and Executive Director of The Pet Adoption Center of Orange County in Lake Forest, and we asked her Why the city felt the need for these strong changes? “From my understanding”, she said “the whole basis for the change is that we had to adopt Mission Viejo ordinances exactly, to move our city’s services to Mission Viejo Animal Services, and since Mission Viejo is making these changes, Rancho Santa Margarita has to make them first to be allowed to join Mission Viejo jurisdiction, effective January 1, 2017. The main differences relate to the fact that they are taking on the Mission Viejo’s ordinances, which are more restrictive than the county’s in a number of areas. The one area where they are more lenient is that Mission Viejo allows for four dogs and four cats per household, and the county only allows for three. However, Rancho Santa Margarita is a planned community, where Homeowners Associations’ Regulations generally restrict the number of dogs and cats to less anyway. The city moved to join with Mission Viejo primarily because they were touting their no-kill shelter. In reality, that is not what will affect Rancho Santa Margarita most. Rancho Santa Margarita has very few animals that are actually taken into the shelter. In fact as of yesterday and today, when I checked, Rancho Santa Margarita had zero pets at our current animal shelter, the Orange County shelter. Rancho Santa Margarita is now being subject to greater restrictions regarding pet-related businesses, except that veterinary clinics are exempt from those restrictions. I am hopeful that the cities will work together to revise any business regulations that may have an unintended impact on Rancho Santa Margarita pet-related businesses. “The biggest positive impact that I expect from the move to Mission Viejo jurisdiction is the addition of 24/7 animal control services. Response time should be faster, as should dead animal pick-up, which has been a repeated complaint from Dove Canyon and other area homeowners,” said Josephson.

Confidence-boosting tips for fitness class first-timers
You’ve joined a health club and now you’re curious about fitness classes. You’re almost ready to sign up for an indoor cycle, yoga or strength-training class, but something stops you. You feel nervous and uncomfortable and decide to wait. Group fitness classes are a fantastic way to exercise because you’re guided by an expert, plus the energy of the group keeps you motivated. However, because it’s something new that puts people outside their comfort zone, it’s common to feel apprehensive in the beginning. To help you gain confidence to try any type of group exercise class, consider these tips from three health club members. Comfort over style. “Trust me, no one cares what you’re wearing,” says Deb Kampe, a member at Life Time, which operates 122 destinations across the United States and in Canada. “If you want to wear gym shorts and a T-shirt, do it. Head-totoe athleisure? Do it. A tutu? Do it. Just make sure you’re comfortable and safe. Don’t spend a fortune on the latest fitness clothing trends or labels. Expensive does not equal better.”
Don’t be self-conscious. “It’s easy to assume everyone in class is fit, knows all the moves and is judging you. No one cares,” Kampe says. “Once the music starts and the instructor begins, all eyes are up front taking direction and being lifted into the moment.” Everyone was a newbie. “Everyone was a first-timer at some point, so they know how it feels,” says Dustin Meriwether, member at Life Time. “They’re not going to judge you for it, and many - hopefully all - will be willing to answer any questions and help in any other way.” Instructors want to assist. “All instructors - and other members - want to help you,” says Kelby Mezzenga, member at Life Time. “So just walk in and let the instructor know you are new or have a question. That welcoming feeling takes the edge off and chances are, you’ll have met a new friend.” Keep an open mind. “Group fitness classes are designed to challenge you and take you out of your comfort zone. You may be unfamiliar with the equipment you’ll use or how hard it might be, but I guarantee you will feel the burn,” Mezzenga says. Listen to your body. “You know
your body best,” says Meriwether. “If something doesn’t feel right or if you know you have problems with something, modify the workout correspondingly. People do that all the time and many instructors are good about suggesting such modifications.” Give it 100 percent. “You get out what you put in,” Meriwether says. “If you put in minimal effort, you can expect minimal results. But if you give it your all, you can expect some pretty fantastic fitness changes.” Bring water. Hydration is important, but you don’t need to worry about anything else. “Life Time has

A four-point plan for joint health Keep on cruising with a regular maintenance schedule for your joints Whether it’s a brand-new Bentley or a classic 1970 Mustang, most people have a car they dream about. If they’re lucky enough to own it someday, you better believe they’re going to take care of it. Regular maintenance is an essential part of keeping a vehicle in tip-top shape. The same is true of the human body, particularly the joints. “Prevention is the only thing that actually prolongs the health of your joints, similar to the care of a machine,” says Matt Johnson, health and performance expert and president of On Target Living. “If you want something to last as long as possible, and to cost as little as possible over the long run, you have to do maintenance, checkups, and change the oil. Taking care of your body is no different. If you do, your joints can last until you’re 80, 90, or even 100 without tendon or ligament issues.” Johnson notes that joint issues are some of the most common concerns

10 ways to be more active during the work day We’re sitting too much and it’s dangerous. The average American spends more than seven hours sitting every day, and the more time you sit, the higher your risk of serious, potentially life-threatening health problems such as obesity, type 2 diabetes and heart disease. So, what can you do about it? Fortunately, there are simple changes you can make during the day - anywhere, even at the work place - to improve your wellness and reduce your risk of type 2 diabetes. As part of the American Diabetes Association’s(R) Wellness Lives Here(SM) initiative, the Association encourages everyone to get active for National Get Fit Don’t Sit Day(SM) with these 10 tips for the workplace and beyond. Park a few blocks away from the office each morning and walk to work. This allows you to start off your mornings energized and ready to take on the workday. If you take public transportation, get off one stop earlier to squeeze in some light exercise before 8 a.m. Take the stairs instead of the elevator. Waiting for the elevator often takes just as long as walking up the stairs, so why not use this opportunity to get your heart rate up? Plus, you’ll get the chance to work your leg muscles. Get up and move around the office once every 90 minutes. When you’re nose-deep in work, it’s easy to lose track of time. Set up reminders on your phone or email every 60-90 minutes to get up and do a
quick lap around the office. You can use this time to fill up your water bottle, go to the bathroom or catch up with coworkers. Ask questions and discuss issues face-to-face. Rather than sending an email every time you have a question, go to your coworker’s office to discuss the issue face-to-face. This gives you a good excuse to get moving and a chance to more effectively hash out solutions in person. Use your lunch break to move around outside. So many Americans today work through their lunch break. When possible, take advantage of this time to walk outside and soak in the nice weather. Fresh air and vitamin D are often all you need to stay focused and push through the afternoon slump. Stand up and stretch. If you don’t have time to walk around the office every 90 minutes, use the opportunity to stand up and stretch instead. Stretching is a great way to increase energy levels, reduce muscle tension and get your body moving. Pace around the office during conference calls. Conference calls are the perfect time to be active. Put clients and coworkers on speaker, or use your mobile phone during meetings to move around without any trouble. Do chair exercises at your desk. You’ve been wanting to tone your arms for the summer - why not achieve your goals at the office? When you need a break, do a few reps of chair sits. You can even alternate between chair
exercises and push ups! Hold standing or walking meetings. Many coworkers will welcome the opportunity to stand and stretch their legs for a moment. If you have a two-person meeting, consider going for a walk. Fidget when you work. Small movements and quick exercise breaks add up, especially in a sedentary work place, so challenge yourself to stand, stretch or even tap a foot to bring motion into otherwise still parts of your day. TAX PLANNING STRATEGIES FOR 2016 FROM KIM COYLE CPA
Dear Client; As the end of the year approaches, it’s a good time to think of planning strategies that will help lowering your taxes for 2016. My goal is for you to leverage your tax deductions and credit to the fullest extent. I want to briefly discuss five different strategies that can be powerful tools in lowering your tax bill. And the really great part is that each of these strategies is easy to understand and implement. Here are the strategies: 1. Prepay Expenses The IRS allows cash-basis taxpayers to prepay and deduct qualifying expenses up to 12 months in advance (through December 2017) without challenge, adjustment, or change by the IRS. For a cash-basis taxpayer, qualifying expenses include lease payment on business vehicles, rent payments on offices and machinery, and business and malpractice insurance premiums. This is a great way to pump up your 2016 deductions with expenses you will eventually pay anyway. 2. Stop Billing Customers and Patients An easy strategy for reducing your taxable income for this year is to stop billing your customers until December 31, 2016. Customers, patients, and insurance companies generally don’t pay until billed. Not billing customers and patients is a time-tested tax planning strategy that business owner have used successfully for years. 3. Buy Office Equipment With Section 179, you can write off up to $500,000 of office equipment in 2016. Qualifying Section 179 purchases include new and used personal property such as equipment, computers, desks, chairs, and certain qualifying vehicles. To qualify for Section 179, you need to both buy the items and put them in business service on or before midnight December 31, 2016. 4. Use Your Credit Cards If you are a sole proprietor, the day you charge a purchase to your business or personal credit card is the day the expense is deductible, Therefore, as a proprietor, consider using your credit cards to buy office supplies and other business necessities. If you operate your business as a corporation, and if the corporation has a credit card in the corporate name, the same rule applies: the date of charge is the date of deduction for the corporation. But if you operate your business as a corporation and you are the personal owner of the credit card, the corporation must reimburse you if you want the corporation to realize the tax deduction, and that happens on the date of reimbursement. Thus, submit your expense report and have your corporation make its reimbursements to you before midnight on December 31. 5. Don’t Assume You Are Taking Too Many Deductions Make sure your record all of your rightful deductions for 2016, because if your business deductions exceed your business income, you have a tax loss for the year. After a few modifications to the loss, tax law calls this a “net operating loss,” or an NOL. The good news is that tax law allows you to carry back the NOL for two years and get instant refunds from taxes previously paid. If, after going back for two years, you still have unused losses, you can carry them forward for up to 20 years. In other words, you have a 22-year window during which you can realize the benefits of your deductions. So always document your expenses in order to get your rightful deductions. Can You Stand Still? Pageant of the Masters Casting Call 2017 Ever wonder what it would be like to step into a famous piece of art? If you can stand still for 90 seconds, you could experience just that by volunteering for the renowned Pageant of the Masters in Laguna Beach - “where art comes to life!” In preparation of the 2017 show, The Grand Tour, the Pageant is looking for men, women and children to volunteer. People of all sizes and ages are needed to be cast members in the world’s most famous presentation of tableaux vivants. Casting call will be held at the Irvine Bowl Park (650 Laguna Canyon Road, Laguna Beach, CA) during the following times: Friday, January 6 from 7 – 9pm Saturday, January 7 from 7 - 9pm Sunday, January 8 from 2 - 5pm Next summer’s performances of the Pageant of the Masters will run nightly at 8:30pm from July 7 to August 31, 2017. Prospective volunteers will be measured and photographed, enjoy refreshments and meet the behind-the-scenes Pageant staff. No theater experience is necessary. The only requirement is the ability to stand still and have fun. “Over 500 volunteers, both onstage and behind-the-scenes,
are needed to put on the show,” said Pageant Director Diane Challis Davy. “Everyone has a great time backstage and many return year after year to take part in this one-ofa-kind performance. The Pageant just simply wouldn’t be possible without our volunteers!” Pageant volunteers are also needed for positions in the wardrobe, make up, and headdress departments, as well as cast area coordinators and refreshment servers, among other positions. Volunteering for the Pageant is a great way to spend your summer and it is common to have several Volunteers help bring to life the Pageant of the Masters re-creation generations of the same family of Sir Edwin Landseer’s painting “ Windsor Castle in Modern Times.” volunteering for different aspects of the show. Additionally, by volunteering for the Pageant, students can earn credit towards community service requirements. 80’s To the Max Party Hosted by Ducks for orangewood fundraiser Photos by Ann Chatillon If you loved the 80’s, then this was the event to be at as it was a totally crazy 80’s night at the Sport Chalet in the Crate and Barrel wing of South Coast Plaza. With around 420 guests all in outrageous 80’s themed outfits, fans, supporters and guests celebrated the 2016 Anaheim Ducks Center Ice Party presented by the Klein Family which supports Orangewood Foundation. With the theme “80’s to the Max, Like Totally!” the room was filled with folks dressed in their craziest 80’s garb – leg warmers, big hair, tie-dyed shirts and of course those DUCK players! They were dressed in neon Hawaiian shirts and sunglasses (similar to the hit 80s show, Magnum PI). It was fun as they mingled with the crowd, joined guests at the arcade games and the pool table, and even performed a rendition of the theme song from the movie Ghostbusters. Guests enjoyed mall food and court style food, as the passed around trays of soft pretzels with beer cheese, corn dogs and tater tots, to-go cartons of Chinese food. The musical entertainment was a live performance by 80s cover band The Spazmatics, who thrilled the crowd with their high school nerd costumes and silly antics which accompanied their musical covers of classic 80s hits like “Wake Me Up Before You Go” by Wham. An extensive variety of silent auction items were available for guests to bid on. There were also four live auction items, including the opportunity to spend an hour with the iconic Stanley Cup trophy. Title sponsor Bill Klein placed the highest bid on this item and then announced he would share the hour with the students at Orangewood’s charter high school, Samueli Academy. Other live auction items that were up for grabs were a New Year’s Eve package for 14 in a luxury suite at the Honda Center watching the Ducks/Flyers game along with a one night stay at an Island Corner Suite for 2 and a dinner party for 4 at the Oak Grill; for the Ultimate sports fan – someone picked up 2 glass seats for a Ducks game plus LA Rams and Angel tickets and a 20 person suite at Dodger Stadium to use in 2017; there was also the ultimate Party Like a Rock Star package that included Luxury accommodations for 2 for the 2017 NHL All Star weekend which included an signed All-Star Jersey, parties, meet and greets with hotel accommodations. Opportunity items were just as popular – four lucky fans walked away with either a John Gibson Autographed Canvas, Ryan Kesler Autographed Jersey, Corey Perry Autographed Game stick (used of course!) and Cam Flower Autographed Canvas. Speakers during the brief program included Ducks Rinkside Reporter Kent French, Ducks co-owner and long-time Orangewood supporter Susan Samueli (founding chair of the Orangewood’s 44 Women for Orangewood auxiliary and also an Orangewood board member), and Orangewood CEO Chris Simonsen. Founded in 1981, Orangewood Foundation is one of the leading providers of services to foster and community youth. Their mission is to prepare foster and community youth to reach their greatest potential. Last year they helped almost 2,000 youth teens with programs that prepare them to make a successful transition from the foster care system to independent adulthood. Can’t keep a resolution? Outside support can help Holiday celebrations are a traditional way to cap off the year, but once the ball drops it’s time to usher in a new beginning with New Year’s resolutions. Each year, millions of Americans resolve to get in better shape and become healthier, better versions of themselves. But, unfortunately the vast majority don’t meet their goals. Less than a quarter of 1,000 people surveyed by YMCA of the USA kept their resolution in 2014. An overwhelming 71 percent said they tried but fell short, and 40 percent confessed that they made it through only a couple weeks or months. However, there’s hope for the coming year. One-third of survey respondents who plan to make a resolution in 2015 believe they’ll stick to it and reach their goals, with more than half believing that encouragement from others will keep them committed. Finding a supportive community can be beneficial in keeping resolutions on track. Organizations like your local Y offer a place to work out as well as opportunities to connect with others and give back to the community, which
can help foster more commitment to keeping resolutions. A positive outlook doesn’t always translate to action unless you set manageable goals and lean on the support of your health and wellness communities. Here are some tips to make a healthy New Year’s resolution stick: Start small. Set attainable resolutions. For example, if your goal is to exercise more frequently in the new year, don’t schedule seven days a week at the gym. Start with a reasonable three days a week. How to make the most of your grocery store’s produce aisle It’s the same story every year kids return to school, temperatures drop, summer vacation becomes a fading memory, its raining and the local farmers market is closed. While you may spend winter longing for the return of 80-degree days and sunny skies, you don’t have to miss out on your favorite fruits and veggies. Many are still available in local grocery stores and some smart tricks and choices can help you eat like the farmers market is still open ... all winter long. “The seasonal nature of farmers markets doesn’t have to keep you from reaping the benefits of fresh and locally grown produce,” says registered dietitian Paul Kriegler, assistant program manager for nutrition and weight loss, Life Time - The Healthy Way of Life Company. “The average store carries more than 45,000 different foods, so it’s important to know what to buy and what to avoid.” To eat as if the farmers market is open, keep these tips in mind on your next visit to the grocery store:
* Plan meals and menus for the week and make your shopping list accordingly. If you stick to your list, it will help you avoid impulse purchases. * Keep kids involved. If your children loved visiting the farmers market and learning how to eat healthy, there’s no reason you can’t continue their education in the grocery store. Take them shopping with you and give them a small budget so they can pick their own produce. As the seasons turn, new and unexpected items may appear in produce aisles. Varieties of squash begin appearing in September and staying through March, as well as turnips, rutabagas, carrots and other cool weather favorites. An online search can help you find new recipes for virtually any type of unfamiliar produce. Experimenting with new veggies and fruits can be exciting and nutritious! * Take advantage of store resources. Many grocery stores now include signage in the produce aisle that tells you where different items originated, how you might use them, flavor and nutrition - even recipes. If your grocery store offers free recipe cards beside a new vegetable, give both a try. * Whenever possible, buy organic. “I commonly hear the question, is
organic really necessary,” Kriegler says. “Your first goal is to increase the amount of fruits and vegetables your family eats, but once you’re doing that it’s important to choose organic produce. It will help you avoid toxins, herbicides and pesticides in your food that could affect your metabolism and cause other health problems.” * If you must buy prepackaged and labeled foods, read the ingredient list first. Keep your skin glowing by staying active as temperatures start to drop For some, chillier weather can decrease the likelihood of sticking to a consistent workout routine. Luckily, there are plenty of small changes one can make to ensure that staying active during short winter days and long nights remains a priority. Not only does exercise benefit physical and mental well-being, but it also has a positive effect on the look and feel of skin. Celebrity fitness trainer Kacy Duke’s motto for staying active is “movement is a privilege.” She firmly believes that colder weather is no excuse to press pause on one’s workout routine. As part of the Simple Skincare Advisory Board - a group of experts who help women care for their skin from the inside out - Duke is well-versed in the positive impact that physical fitness can have on one’s complexion. As the weather turns, she shares her tips for how anyone can stay active and ultimately keep skin glowing throughout the winter months. Make it a habit Duke advises clients to get into the habit of working out before the
dead of winter arrives. “It can be a challenge to start a fitness routine in freezing temperatures especially if you haven’t started taking small steps beforehand,” she says. “Push yourself by setting unrealistic goals that you think you may not be able to achieve, in other words think big to win big, so even if you fall a little short, you’re still ahead of the game and on your way to locking in a healthy exercise habit.” Lean on friends Switch out happy hour drinks for fitness outings with friends so that being active becomes a social activity. Plan to run a 5 kilometer race with a friend or schedule a weekly spin class together so that all parties are held accountable. “I recently created my ‘Girlfriend Training Sessions’ and ‘Bromance Workout Sessions’ so that girls and guys can work with me in a small, semi-private group setting and bond over a great workout and healthy sweat rather than caloriepacked cocktails,” says Duke. Fitness won’t feel like a chore once it’s enjoyed in a social setting. Remember the skin-loving benefits
Exercise increases blood flow and helps flush cellular debris out of the system. Plus, exercise tones muscles and reduces stress, all of which contributes to an improved overall appearance. At the end of any movement session, make facial cleansing a can’t-miss step to remove sweat and remaining traces of makeup. Try products that have no dyes, artificial perfumes or harsh chemicals
that can upset skin, such as facial wipes that refresh with one step (no rinsing required) and are ideal for packing in gym bags. As sleeping in makeup can increase likelihood of skin sensitivity, irritation and dullness, follow Duke’s advice: “Washing one’s face post-workout and before bed ensures what I like to call a ‘No Makeup Wakeup’ so you can start the day with naturally healthy-looking skin.”
S wap O u t S u gar for B etter H ealth You probably realize that eating too many sugary foods and gaining weight go hand in hand. What you may not know is that aside from loading up on calories that help pack on the pounds, consuming too much sugar can also harm your health in other ways. Consuming more than nine teaspoons of sugar a day for men and six teaspoons for women can lead to health problems, such as tooth decay, obesity and depression. Reducing your sugar intake can help more than your waistline; it can improve your overall health. First, it’s important to recognize that there are two types of sugar – natural sugar and added sugar. Natural sugar is found in fruits, milk and some whole grains. Added sugar is sugar that is added to processed foods and drinks, such as cookies, cereals and soda. Added sugar affects your body in many ways. It can be as addictive as drugs, tobacco or alcohol because it affects the same regions of the brain, triggering the pleasure sensors to release dopamine. Dopamine makes you want to eat more, even when you are not hungry. When you consume too much added sugar, your liver has to work extra hard to process it. Excess sugar in the liver often turns into fat, which can lead to liver damage or other health concerns, such as high cholesterol, diabetes or heart disease. It can also overload and damage your pancreas, which controls the blood sugar called insulin that powers your muscles and organs. Lack of insulin can cause muscle and nerve damage. Limit added sugars in your diet with these healthy alternatives: • Skip sugary cereals at breakfast. Instead, opt
for a protein-rich meal. Options, such as eggs, turkey sausage and whole-wheat toast with peanut butter are healthier ways to fuel your day. • Bring healthy snacks to work to ward off the temptation of sugary treats. Some smart choices include: frozen grapes, trail mix, yogurt, almonds, apple slices and peanut butter with celery sticks. • Instead of pie, donuts or cake, curb your sweet tooth craving by reaching for fresh fruit, low-fat frozen yogurt or a fruit and yogurt parfait. • If you can’t substitute a fruit, make your treats small, such as a single fun-size piece of candy.
• Sodas, energy drinks and sports drinks sneak in a lot of sugar calories. In fact, a single can of soda has nine teaspoons of sugar – the maximum an adult male should consume in an entire day. Recipe created by The Chef Next Door on behalf of Milk Means More Prep time: 5 minutes Cook time: 15 minutes Servings: 4 3/4 cup buckwheat flour 3/4 cup all-purpose flour 2 tablespoons sugar 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 eggs 1 3/4 cups lactose-free, 2 percent milk 2 tablespoons vegetable oil 1 teaspoon pure vanilla extract 2 cups fresh blueberries, plus additional for topping (optional) syrup (optional) In large bowl, whisk together flours, sugar, baking powder, baking soda and salt. In small bowl, beat eggs then add milk, oil and vanilla; mix well. Stir wet ingredients into dry ingredients and mix to combine. Heat griddle or large skillet over medium heat. Using 1/4 measuring cup, pour batter onto griddle. Gently place several blueberries all over surface of pancakes. Flip pancakes when bubbles start to form around edges and bottoms are golden brown. Cook on other side until golden brown, about 2 minutes. Remove to plate and cover to keep warm. Top pancakes with additional blueberries and syrup before serving, if desired.

Recipe created by Comfortably Domestic on behalf of Milk Means More Prep time: 5 minutes Cook time: 15 minutes Servings: 2 Oats 1 cup 2 percent milk 3/4 cup water 1/8 teaspoon salt 1 cup old-fashioned oats Huevos Rancheros 1/2 cup sweet onion, peeled and chopped 1 1/2 teaspoons light olive oil 1 can (10 ounces) diced tomatoes with green chilies 1/4 teaspoon chipotle chili powder 2 eggs kosher salt black pepper 1/4 cup sharp cheddar cheese, freshly grated In medium saucepan over medium-high heat, bring milk, water and salt to boil. Stir in oats. Reduce heat to medium-low and simmer oats, stirring occasionally, 4 minutes. Remove oats from heat and place lid on saucepan. Set aside. In nonstick skillet over medium heat, saute onion in olive oil until soft, about 4 minutes. Stir canned tomatoes with green chilies and chipotle chili powder into onions to combine. Continue to heat salsa to boil, about 1 minute. Make two wells in middle of tomato salsa. Crack eggs into wells. Season eggs with salt and pepper, to taste. Cover skillet and poach eggs in salsa to desired doneness; about 3-4 minutes. Divide oats evenly between two bowls. Spoon eggs and salsa over oats. Serve immediately with cheddar cheese.

Recipe created by Rachel Cooks on behalf of Milk Means More Prep time: 10 minutes Cook time: 35 minutes Servings: 8 1 tablespoon extra-virgin olive oil 1 large clove garlic, minced 12 ounces frozen spinach, thawed and water pressed out 12 large eggs 1/4 cup skim milk 1/4 teaspoon ground black pepper 1/2 teaspoon dried oregano leaves 3/4 cup part-skim ricotta cheese 1/2 cup grated Parmesan cheese 1/4 cup minced fresh basil 1/2 cup shredded, part-skim mozzarella cheese Heat oven to 325 F. In oven-safe skillet, heat olive oil over medium heat. Add garlic and cook 2 minutes, or until fragrant. Once garlic is fragrant, add spinach; break up to incorporate and heat. In medium bowl, whisk together eggs, milk, pepper, oregano, ricotta, Parmesan and basil. Add egg mixture to skillet, reduce heat to low and cook 1 minute, stirring gently. Move to oven and bake 25-30 minutes, or until eggs are almost completely set. Carefully remove from oven and add mozzarella. Return to oven and bake until mozzarella is melted, about 5 minutes. May be served hot, at room temperature or cold.

PACIFIC SYMPHONY WELCOMES THE CHINESE NEW YEAR WITH A MUSICAL “LOVE FEAST” THE 2017 LANTERN FESTIVAL Pacific Symphony, led by Music Director Carl St.Clair, is celebrating the 2017 Chinese New Year with the Southern California community by offering a number of unique and multifaceted events. First, all are invited to the inaugural concert, “Chinese New Year: A Love Feast,” which offers a joyous mix of Eastern and Western music and dance, on Saturday, Jan. 28, 2017 at 8 p.m., in the Renée and Henry Segerstrom Concert Hall. Surrounding the concert is a VIP Chinese New Year Celebration reception and formal dinner in collaboration with LUILI crystal art. Then, the Symphony partners with the South Coast Chinese Cultural Center/Irvine Chinese School to present the “2017 Lantern Festival,” commemorating the end of the Lunar New Year. This free, family-friendly festival—with numerous activities and performances traditionally associated with the end of the Lunar New Year— takes place Saturday, Feb. 4, 2017 from 11 a.m. to 4 p.m. in the Renée and Henry Segerstrom Concert Hall. “These events will bring cultures from both the East and West and our own community together,” says Charles Zhang, Symphony board member and founder of Pick-Up Stix and Zion Enterprises, who considers himself an ambassador for Orange County’s Chinese-American community, as well as the Symphony. “China has a unique culture and a long history that are both appealing to Americans. These events will allow everyone to learn about Chinese culture as we unite together.” The festivities begin with the Symphony’s first concert dedicated to the lunar holiday. “Chinese New Year: A Love Feast” is a colorful presentation of Eastern and Western music and dance ushering in the “Year of the Rooster” (according to the Chinese zodiac). “The program is an offering of incredible breadth, covering a wide spectrum of music, but mostly music that especially resonates for such a celebration,” says Maestro St.Clair. “One great wish I had for this concert was to do the fourth movement of Beethoven’s Ninth with a collective chorus. I felt that its message was absolutely the motto needed for such a joining of spirits and friends: that ‘all men should become brothers’ is exactly our hope for celebrating the Chinese New Year with our friends of the Chinese-American community. I am so very thankful that they have invited us to unite with them in such an important moment in their year.” The concert includes a variety of music to celebrate the beauty and wonder of the Chinese New Year, including “Butterfly Lovers Concerto” by He Zhanhao/Gang Chen and Hua Wu’s “Deep into the Night” featuring erhu master George Gao, and Li Huanzhi’s “Spring Festival Overture” and Debussy’s “Clair de Lune.” Accompanying the music are dance performances by Jill and Page 28
Amnon Damti, members of the Yaya Dance Academy, the Awakened Blessing Lion Dance Troupe of the JC Culture Foundation and the UC Irvine Department of Dance led by choreographer Tong Wang. Vocalists include Orson Van Gay II, Jessica Zhu and Gloria Xiong. The evening culminates in the inspirational “Ode to Joy” from Beethoven’s Ninth Symphony, featuring Pacific Chorale (John Alexander, artistic director) and the American Feel Young Chorus (Sam Wei-Chih Sun, artistic director). The concert flow has been designed by Yaya Zhang, an awardwinning artist with 20 years of stage performance, choreography and dance instruction experience, who graduated from the department of Folk Dance at the Secondary School of Beijing Dance Academy in 1999. Zhang received a B.A. in choreography from Beijing Dance Academy in 2003, and during her decade-long study at the Beijing Dance Academy, Zhang mastered many different Chinese ethnic folk dance traditions as well as sword, fan, ribbon and sleeve techniques. Before moving to the United States in 2007, she worked in many productions in China including musicals. She now teaches at several dance companies in Los Angeles and serves as artistic director of Yaya Dance Academy. In addition to the concert, Charles and Ling Zhang are hosting a special “Chinese New Year Celebration” on the Box Circle Level of the concert hall to raise additional funds for the Symphony’s artistic and education programs. Around 200 guests will enjoy an elegant cocktail reception at 5:30 p.m. followed by a formal dinner and entertainment provided by the award-winning Chinese pianist Fei-Fei Dong. The Lantern Festival is free and open to the public. This event is made possible through the support of The James Irvine Foundation, and is presented in cooperation with Segerstrom Center for the Arts, with additional support from the World Journal and the Taiwan Tourism Bureau. This year, we have expanded the festival to include more spaces within the Renée and Henry Segerstrom Concert Hall, more performing groups and more activities, giving guests the opportunity to customize their own experience! The Lantern Festival, which can be traced back 2,000 years, takes place 15 days after the Lunar New Year—on the first full moon night in the lunar calendar—and marks the return of spring, representing the reunion of family. Traditionally, the Lantern Festival is an act of lighting and appreciating lanterns as a way for people to let go of the burdens of their old selves and express their best wishes for their families for the future. “Regardless of whether the Lunar New Year celebration is part of your family’s cultural tradition, we encourage everyone to join us in learning more about the Lantern Festival and taking part in this festive time of year through music, the arts
and culture,” Levinson says. The Symphony’s Chinese New Year events are significant for a number of reasons. They serve as part of a series of free or low-cost community concerts and events within a multi-year initiative for the Symphony to engage local ChineseAmerican communities. This initiative has been funded in part by a grant from The James Irvine Foundation’s New California Arts Fund. Throughout the course of the grant period, the Symphony has focused on building partnerships with local organizations that serve ChineseAmericans, producing events in Chinese-American communities and encouraging Chinese-Americans to deepen their involvement with the Symphony as volunteers, donors and board members. Irvine Chinese School is part of South Coast Chinese Cultural Association, a non-profit organization whose mission is to promote Chinese language learning, to preserve Chinese heritage, to enhance the understanding of the value of Chinese culture and to advocate cultural diversity in America. Currently, Irvine Chinese School provides multiplelevel language classes for students from kindergarten to 12th grade and adults.
