Daybreak had barely broken on New Year ’s Eve when the newspaper’s phones begin to ring to tell us about the colossal snowfall that had covered the local mountains creating a picturesque wonderland in Rancho Santa Margarita fit for a Christmas card. The Coto de Caza News quickly

dispatched our staff photographer Bill Casper to capture the stunning snowfall for the beautiful cover for this week’s edition. While our photographer quickly arrived and shot several remarkable pictures,hundreds of other Rancho Santa Margarita residents were also moved by the sensational snowfall to stop their cars along Santa Margarita parkway and whip out their cameras, and cellphones

to record the brilliant spectacle for posterity. Facebook and other social media sites were promptly bombarded with photographic postings of the rare Rancho Santa Margarita snowfall. Several law enforcement vehicles also stopped along the parkway. At first some thought they were going to hand out tickets for parking in a no parking zone, but the lawmen had only stopped to admire the

same scenery, and wished everyone a happy New Year as they departed and went about their duties. Snowfall is rare in Rancho Santa Margarita and only a light dusting of the white powder is ever seen on Santiago Peak, but this past weekend the mountains were completely covered in several feet of heavy snow,creating a lovely landscape for the end of the year and welcoming in 2015.

Playing outside and getting messy may just seem like fun to kids, but playtime actually has an important role in child development. Delectable: A Wine App That Could Revolutionize Drinking HAPPY GRAPES

By David White Alexander Niehenke began to appreciate wine ten years ago. But for the first four years, it was simply a beverage he enjoyed with dinner from time to time, especially when cooking at home. And then he put his nose in a glass of Cabernet Sauvignon from Justin, a winery based in Paso Robles, California. He was at a bachelor party, where few attendees were paying any attention to the wine inside their glasses. But for Niehenke, the aromas were intoxicating. Something clicked. So he promptly dove into the world of wine. For the next five years, Niehenke’s passion for wine grew steadily and predictably. As a resident of San Francisco, weekend trips to Napa

Valley and Sonoma were easy -- so he started driving north regularly. He began attending tastings, reading wine publications, and even collecting. And then he discovered Delectable, a mobile wine app. Since downloading the program last fall, Niehenke has been moving towards oenophilia at lightning speed. “The app has taught me about new producers, new regions, and even new varieties,” he explained. “I actually just learned about orange wine -- and tried my first one -- thanks to it.” An orange wine is made by treating white wine grapes as if they’re red -- in other words, soaking the skins and seeds alongside the juice during fermentation. Orange wines have become quite popular among some of the nation’s hippest sommeliers, and thanks to Delectable, Niehenke can see what those sommeliers are opening each night. Delectable traces its roots to 2011, when Alex Fishman was working in Dubai for Palantir, the data analytics firm best known for its work with the U.S. intelligence community. Shortly before returning home, Fishman and his girlfriend came upon a wine they’d enjoyed on many occasions. Wanting

to remember the bottle so they could purchase it in the United States, they looked to the label for information -- but were overwhelmed. Fishman recalled this experience a few months later over breakfast with in New York with Aaron Vanderbeek, a video-game designer. The two were old friends, and Fishman was detailing his desire to launch a mission-focused company -- ideally, one that would “make the world a more delicious place.” In short order, they realized that there weren’t any good mobile apps for wine enthusiasts. So Fishman and Vanderbeek began building Delectable. Today, the app identifies all a wine’s details from a photo and allows users to review and purchase wines. It also helps users discover industry professionals -- winemakers, sommeliers, and critics -- and see what they’re drinking. It’s no wonder why Delectable has been described as “the Instagram of wine.” Thanks in large part to this feature, Delectable could revolutionize consumption. As Fishman told me, “the wine market is broken because of a lack of information. That’s why consumers buy points. But the point system is flawed because people have

radically different tastes.” As consumers discover other enthusiasts on Delectable with similar tastes, they’ll discover new wines worth drinking. After all, it doesn’t make any sense to take the advice of a critic who has slapped “98 points!” on a bottle unless one shares that critic’s preferences. Delectable solves what Fishman calls “the matching problem” consumers face with wine critics. Niehenke is certainly drinking better thanks to the app. “When looking for new wines, I used to call my knowledgeable friends. Now, I can just open up Delectable to see what they’re drinking,” he explained. “When I realized I could follow pros, too, wow -- that was cool. I love seeing what my favorite winemakers -- people like Ross Cobb and Cathy Corison -- are drinking. Now, I follow people with similar palates to mine and un-follow people with different tastes.” Fishman is convinced that his app will fulfill its mission. “If we do this right,” he concluded, “the amount of global happiness that’s derived from wine will go up. People will drink better and better wines, since our suggestions will be tailored to individual users.”

Fashion Show at the Ritz Carlton Raises $250,000 for Camino Health Center Photos by John Eckmier Continuing its beloved tradition of beginning the official holiday shopping season with a dynamic fashion show featuring South Coast Plaza retailers, the Auxiliary for Camino Health Center held its 2014 Camino Health Center Auxiliary Fashion Show at the Ritz-Carlton, Laguna Niguel. With more than 400 guests in attendance, all were welcomed by tuxedo-clad gentleman and escorted into the event. Total raised for this exquisite event was more than $250,000 for the nonprofit. The program started with welcoming remarks from Ericka Waidley, President of Camino Health Center Auxiliary then an invocation from Sister Martha Ann Fizpatrick from Mission Hospital. A special video presentation was introduced from Debra Drew, CEO of Camino Health Center which tugged at many heart strings as to how Camino Health Center helps so many. “Camino Health Center is truly blessed to have the support and engagement of the Auxiliary,” shared Drew. “Since it was formed in 1985, the Auxiliary has raised more than $6 million to enhance the health and quality of life in our community.” The fashion show then began, and it was spectacular! With featured designs from Anne Fontaine, Bally, Brunello Cucinelli, Diane von Furstenberg, DKNY, Donna Karan, Façonnable, Loro Piana, Marni, MaxMara, Saks Fifth Avenue, St. John and Stuart Weitzman, and Salvatore Ferragamo; each were truly outstanding and brought excitement to the ladies (and men!) in attendance. Prior to the event, folks were able to peruse the many silent auction items that were available which helped raise $60,000 for the nonprofit. These items always feature premier pieces and don’t forget the luxury opportunity drawings! This year’s opportunity winners included Pat Atallah of Tustin who won the Napa Valley Experience; Jimmie Montgomery from Costa Mesa won the Revitalize, Refresh and Renew package donated by Pacific Coast Cosmetic and Laser Medical Center, and Jennifer Bartusick of Newport Beach won the Bally Bloom handbag, matching wallet and patent leather ankle boots. The lunch menu for guests attending were Heirloom tomatoes with extra virgin olive oil, local burrata cheese and basil for starters. The main course consisted of Orange glazed chicken breast with mixed vegetables and almond quinoa, then dessert was a duo of crunchy chocolate cake, passion fruit curd, chocolate caramel sauce, berries and Greek yogurt panna cotta, raspberries and almond crunch. A patient of long-standing came in s e v e r a l weeks ago, complaining that her teeth were sensitive, generally, all over mouth. When I visually Dr. Michael Tessier inspected her mouth, there was no evidence of cracked teeth, or tired-old fillings, or bad crowns, or gum recession- all the usual suspects. There was nothing that I could see that might contribute to tooth sensitivity. We treated the sensitive teeth on the right wide with the laser. When she came back two weeks later, she said that she couldn’t wait to have me do the left side, because all the sensitivity was gone on the right side. Positively amazing. So, when you eat ice cream, or drink a margarita, one of your molars, or maybe even a bicuspid, is sensitive. When you take that problem tooth to your friendly, neighborhood dentist, and he says you need that tooth capped (or crowned). What’s that about? When someone drills on a crystalline structure, like glass, or porcelain, or tooth enamel, the heat of friction from the drilling device puts microscopic fractures in the material. When a dentist has to put a big filling in a tooth, those little fractures pre-dispose that tooth to further fracture. The fractures

virtually split the tooth. Later, after years of chewing trauma, the nerve becomes irritated from this microscopic splitting during chewing or clenching. This hypersensitivity is usually manifested as temperature sensitivity. Just replacing the filling doesn’t help because the cracks are already there. A crown, on the other hand, holds the tooth together, like the band on a barrel, so the splitting activity stops. If the trauma to the nerve of the tooth didn’t damage that nerve irreparably, which would necessitate a root canal (removing the damaged nerve from the root of the tooth), a crown is all that’s necessary to allow you to return to the pleasures of ice cream-eating. There are also instances where a tooth is sensitive to cold or even sweets, and a fracture is not the culprit. This is most often a result of root sensitivity, where the root of the tooth is exposed due to gum recession. There is also a setting on my soft-tissue laser (Periolase) for treating teeth that are cold sensitive due to root sensitivity. MYSTERY IN MARGARITAVILLE; BURGER KING BIDS BYE- BYE

Popular Rancho Restaurant Suddenly Vacant- Residents are Puzzled

By Sandra White, Investigative Journalist The Burger King at 22351Antonio parkway in Rancho Santa Margarita is gone. Actually, the building is still there but it stands empty for the first time in twenty years.” This is breaking news and I want you on it! “said my editor, pointing to the door. “I’m on it! Like flies on cake or whatever.” I replied, After four years of Journalism school I could be an investigative reporter for a big city newspaper or television station handling major crime stories. But in Rancho Santa Margarita where the only thing resembling a crime is someone left their water sprinklers on when they left town over the holiday weekend and someone called the fire department to shut them off, I guess the suddenly silent Burger King story is breaking news at this newspaper. The Burger King is deserted. The hideous red plastic signs have been ripped from the building, but the faded paint beneath the lettering still spells out Burger King in an eerie. shadowy gray in contrast to the bright beige on the rest of the building. I press my nose against the glass door of the vacant restaurant which

stills smells faintly of Windex and verify that the place is totally empty. Glancing around the Antonio Plaza shopping center, I look for any witnesses who can tell me some answers to this mysterious move-out. Across the parkway I see Rita Romano standing in front of her Italian clothing boutique. Keeping a watchful eye out for approaching customers, she patrols the sidewalk in front of her store like a hawk. “Looks like you could use a new dress” she says brightly as I approach her. “No, I’m just here working on the big Burger King story “I reply. “What do you know about it”, I ask. “I don’t know nothing. I didn’t see anything. Last week it’s here, this week it’s gone. Bada-boom, bada Bing”. Thirty years since she left her old pal Donatella Versace in Rome to come to America and start her clothing business, and she still speaks like Tony Soprano. “And don’t mention my name in the newspaper,” Rita Romano replies. I thank Rita Romano and head over to the UPS store to interview the manager. She corroborates Rita Romano’s earlier observations that The Burger King was open and thriving last week but this week the

place is closed. “Why don’t you try City Hall?” she says. “I was just on my way over there,” I reply. I clip on my newspaper ID which has my picture with the words “press pass” on it, and look very official as I enter the Rancho Santa Margarita City Hall. My head rocks back and forth slightly as I feel stiff resistance from the door of the Planning Commission which is closed and locked. “They closed.” Says the custodian, who is vacuuming the carpet at the furthest end of the hall. “I get that.” I reply. “What about the City Council? Are any of them around?” He says: “Rancho Santa Margarita is a small town. The City Council members don’t work here. They have other jobs during the day and only come here for meetings every couple of weeks. But if you leave a phone message for them, one of them will probably call you back.” “I know that” I lied. I place a call to the Rancho Santa Margarita Planning Commission and leave a long rambling message about The Burger King and return to the newspaper office and walk down the hall to the editor’s office. As I pass the Accounting Department, I

ask “Is the boss in this afternoon?”. “His door is closed, but I hear snoring so I think he’s in there, He probably fell asleep at his chair again.” The bookkeeper replies. “How’s your big story on The Burger King Mystery coming along?” “How do you know I’m working on that?” I ask. “You got a message from Nate Farnsworth, at the planning commission at the Rancho Santa Margarita City Hall.” She says. Walking to Exercise for Fitness Better Health and Fitness Are Just Steps Away By Nancy Shepherd For years it was believed that exercise for fitness had to be very strenuous to have any noticeable benefit. However, it is now recognized that something as simple as walking can be as efficient as more rigorous activities. The key is the type of walking you do. Simply strolling is better than nothing; it at least gets you moving and keeps your joints limber. But if you’re walking to exercise for fitness, you’ll need to step up the pace. Depending on your current health and your fitness goals, you can choose from brisk walking, power walking, and pole walking. Brisk walking can help you lose weight, improve your mood, manage Type 2 diabetes, lower blood pressure, and normalize cholesterol. Done consistently, it is as effective for reducing the risk of heart attack as jogging. As a weight-bearing exercise, it also contributes to strong bones and reduces risk from osteoporosis. All it takes is a good, supportive pair of walking shoes and enough space to work up to a good pace.

To gain the benefits of brisk walking, your speed should be fast enough to raise your heart rate, but still allow you to comfortably carry on a conversation. After a five to ten minute warm-up at a slower pace, increase to the brisk pace and maintain it for at least 30 minutes. You’ll get best results from engaging in the activity no fewer than five days a week. The next level of walking for fitness is power walking. At this level you can burn almost as many calories as jogging but without the jarring impact on your joints. In one study, women who incorporated three power walks per week into their walking routines lost five times as much belly fat than women whose workouts consisted of only brisk walking -- even though they burned the same number of calories. To take your workout to the power walking level, do your warm-up walk, then bend your elbows and swing your arms as you stride energetically. Strive for a pace of four miles an hour, an intensity at which conversation is no longer comfortable. Pole walking gives you all the

benefits of power walking and then some. Adding poles to your walking routine involves more muscles of the upper body, so you burn more calories and tone your upper body as well as your legs. Additionally, the poles provide stability and relieve some of the load from the hips and knees, which may make it easier for older people to take part. Walking with poles results in a greater aerobic workout without having to walk any faster. Even though using the poles raises the heart rate higher and burns more calories than walking without poles, walkers don’t perceive the exertion as harder. It has also been reported to relieve neck and shoulder pain. To pole walk correctly, it is best to get some instruction so you’ll get the most from your efforts. You’ll learn the proper length for your poles and the most effective techniques. Generally, walking with poles is like power walking, except that you will push down and back on the poles to propel yourself more powerfully with each stride. There’s no longer any excuse for

not working out. Walking to exercise makes improved fitness accessible to nearly everyone. Start where you are and do as much as you can do. As your fitness improves, step up to the next level of walking and you’ll be taking positive steps toward better health.

However after a rain, the trails are muddy and are easily compromised by horses walking on them. We have put signs up closing the trails, in order to let them dry out a bit before they are used. the signs, there have been many riders whom seem to disagree, and continue to use the trails. This ruins the integrity of the trails, and causes extra work to help them recover. cloves, cumin and oregano, to rosemary, red pepper, paprika and turmeric, spices are a surprising source of powerful antioxidants. Substitute, switch and/or boost ingredients in recipes to maximize nutrients and keep the flavor. 10 simple ways to instantly improve your finances in 2015 Do you wonder how you could better manage finances? You’re not alone. When it comes to money, most people are far from perfect. Whether you make $20,000 a year or $200,000, some simple steps can start you on the right financial path, and some of them only take a few minutes to complete. “Personal finance is an intimidating topic, especially if you’ve made mistakes in the past,” says Michael McAuliffe, an adjunct instructor at Morton College and president of the nonprofit Family Credit Management. “But everyone has the opportunity to start fresh and make improvements. Your past missteps don’t have to dictate your financial future if you resolve to be proactive today.” McAuliffe recently co-authored a financial workbook titled “Personal Finance Made Easy.” Thanks to a grant from State Farm, the workbook can be downloaded for free at www. familycredit.org, or you can request a hard copy be mailed to you free of charge. You can use the workbook alone or pair with the free online video lessons. Topics covered include money management, savings, investing and more.

McAuliffe suggests 10 simple ways for you to start improving your finances immediately: 1. Stop, think, save - When out shopping, don’t mindlessly pile things in the cart. Take a moment to stop, think what you really need, and save by not buying extras. Cutting unnecessary spending is easy when you make a habit of briefly pausing to analyze what you really need. 2. Cut 5 percent - If your employer cut your paycheck by 5 percent, you’d be unhappy, but you’d still be able to survive. Why not make that cut now? Reduce the extras like your daily latte or weekly visit to the salon and the savings will mount quickly. 3. Save - Every little bit counts when it comes to savings. If you save just $5 a day - the cost of a fast food lunch - you’ll have $1,800 in a year. It’s OK to start slow and build momentum. The ultimate goal should be to save at least 10 percent of your net income (income after taxes and other deductions). 4. Budget - It sounds simple, but most people don’t have a solid budget. Create a spending plan now and stick to it. List all expenses and see where adjustments can be made.

Refer back to your budget regularly to stay on track. 5. Keep multiple savings accounts - The less accessible your money is, the easier it is to reduce spending. Keep multiple savings accounts and pay yourself first. One savings account could be designated for an emergency fund, another for a new car or a future vacation. 6. Make it visual - Discourage overspending by reminding yourself why you are trying to save. A photo of your vacation destination, for example, illustrates what you’re saving for; put it everywhere you spend money - wallet, computer monitor, vehicle, etc. 7. Make your money work for you - Consistent contributions add up over time, and thanks to the power of compound interest, the longer you leave your money untouched in a savings account or other investment, the more it can grow. 8. Home savings - If you own a home, you know it can cost a lot of money. Cut costs by doing home improvements and maintenance jobs yourself rather than hire out. Call your insurance agent and see if there is a lower rate for homeowner’s

insurance. Check into refinancing while rates are still low. 9. Manage checking accounts - You need a checking account, but are you really keeping track of your money? Online banking makes it easier than ever to balance your checkbook, track your spending and set up alerts when your balance goes under a certain amount. 10. Review your credit report From mortgages and car loans to employment and renting eligibility, your credit report and score affect many aspects of life. are now, or land up being where you were prior to starting to exercise. What you need then is to be aware of why it is important for you to be fit will it improve your health? Will it help to find a better partner? In addition, you need to also, determine why it is simply unacceptable for you to fail. Once you can answer these important questions honestly, you should be able to overcome any roadblocks to achieving lifetime fitness.

MISSION’S BATTLE OF THE MARIACHIS TICKETS ON SALE SOON

Reserved tables for Mission San Juan Capistrano’s popular Battle of the Mariachis Festival will go on sale next week. The 11th annual Battle of the Mariachis Festival will be held on Saturday, May 9, 2015 from 11 a.m.-4 p.m. in the beautiful Mission Courtyard, a highly-anticipated celebration of talent, interpretation and inspiration of Mariachi music.

Beginning at 9 a.m. on Wednesday, Jan. 7, Mission members can take advantage of a one-week pre-sale on reserved tables before they go on sale to the public. Members also receive a 10 percent discount on table purchases. Then on Jan. 14, reserved tables will go on sale to the public. Individual admission tickets will go on sale Feb. 11. Cost is $15 for

adults and seniors; $6 for children (ages 4-11). Individual tickets include admission into the Mission for the day (gates open at 9 a.m.) and admission to the event. There are a limited number of individual admission tickets available, and tickets are expected to sell out. To maintain a safe, accessible and enjoyable environment, admission tickets will not be sold when the limit
