2014-MODEL ORANGE COUNTY INTERNATIONAL AUTO SHOW KICKS-OFF AUTO SHOW SEASON IN SOUTHERN CALIFORNIA The 2014-Model Orange County International Auto Show brings more than 500 all-new vehicles, 100 vehicles to test drive, exotics, classics and more into the Anaheim Convention Center Thursday, October 3 through Sunday, October 6. The convention center will transform into an auto mecca featuring the latest cars, exotics, alternative fuel models, celebrity rides, classics, hot rods, tricked-out tuners and more, as well as an entertainment hub of attractions including an off-road test track, climbing walls for kids, interactive robots and more. From car geeks to car shoppers, there is something for everyone at the Orange County International Auto Show! This show kicks-off the 2014-model auto show season, offering showgoers the chance to compare hundreds of new models side by side from more than 35 manufacturers all in one place. Attendees can inspect engines, kick tires, count cup holders, check trunk space, test drive vehicles and take in that new car smell. Several new models will turn heads on the show floor including the Audi SQ5, Cadillac CTS Sedan, Cadillac ELR, Chevrolet Camaro Z/28, Chevrolet Corvette Coupe, Chevrolet Corvette Stingray Convertible, Fiat 500L, Kia Cadenza, Lexus IS, Mercedes CLA Class, 2014 Porsche Panamera, Nissan Versa Note, Volvo S60 and more. Concepts, pre-production models and specialty vehicles will shine at the auto show including the 2013 Hyundai Veloster Turbo DJ V2 REMIX Lab Chrome, 2014 SpongeBob Toyota Highlander, Cadillac ELR, Cadillac CTS Sedan, Chevrolet Corvette Stingray Convertible, Chevrolet Camaro Z/28, Chevrolet Tahoe, GMC Yukon, Mercedes-Benz S-Class, Nissan Rougue, Subaru XV Crosstrek Hybird and more. Manufacturers will also bring special features to the auto show including Hank the Ford Robot and a Kia driving simulator. Last Friday began with a difficult start in Rancho Santa Margarita as workmen ripped apart the asphalt in the parking lot of the famed Antonio plaza Starbucks leaving bewildered buyers of the hi-test beverages circling the neighborhood for a place to park.Savvy Starbucks sippers had previously scouted out the neighborhood and discovered that while Rancho Santa Margarita’s Central caffeine refills station was closed, they only had to walk 150 feet to the Starbucks located in the Pavilion Supermarket just across the parkway. Construction crews quickly crushed the aging asphalt pavement and fired it into waiting dump trucks who whisked away to be recycled into other road and freeway projects to be built another day. Some anxious caffeine customers circled back later to see if they could tiptoe across the newly poured pavement and sneak into the
Starbucks for a fast refill but it was not to be. Sadly, the ‘ Closed for Remodeling’, signs were hastily erected by departing employees who declined to answer reporters’ questions on when the Antonio plaza Starbucks in Rancho Santa Margarita would reopen. Some Starbucks customers, who were not aware of the nearby Rancho Santa Margarita Pavilion location, swiftly sped to the Starbucks located
in the Mercado Del Lago Lago Shopping center, while others drove onto still another Starbucks in the Lowe’s shopping center, as others ventured even further to the Antonio and Oso parkway Starbucks location. Calls to the Rancho Santa Margarita police department confirmed that as of the 2:00 PM coffee break most citizens had calmed their caffeine crisis without having to resort to violence and peace returned to the city.

Santa Margarita Catholic Hosts Largest One-day Model UN Conference
Nearly 1,500 students from 20 different high schools attended the South Orange County Model United Nations Conference (SOCOMUN) on Saturday, Sept. 28th. The SOCOMUN conference is the largest one-day MUN conference in the world. Students from all over California and Arizona attended. The event was organized by SMCHS students Jake Lawicki and Brittany Gen-
thert both of Mission Viejo. SOCOMUN is a chance for high school students to learn about the Model United Nations Program, which simulates the workings of the United Nations. On Sept. 23th, the 68th session of the real United Nation’s General Assembly began formal meetings. As the real UN went back to business, so did student delegates at SMCHS.
“The SOCOMUN conference is unique in that it is a training conference,” said John Remmell, Santa Margarita’s Catholic High School’s MUN advisor. “The conference starts off with instructions and explanations and then lets students give it a try in a safe atmosphere,” Remmell said. High school students serve as delegates discussing global issues such as state-
sponsored terrorism, HIV/AIDs, drug control, deforestation, and child labor. “SOCOMUN is a great way for first year delegates to become emerged into the world of MUN” said Lawicki. “A great way to start the year off for MUN,” said Bob Timberlake of Mira Costa High School.

Laguna College of Art and Design Announces Inaugural Exhibition in Their New Downtown Gallery, LCAD ON FOREST NEW SPACE, Laguna College of Art and Design’s (LCAD) appropriately titled inaugural exhibition at its new downtown gallery, LCAD ON FOREST, opens at 6:00 p.m. on October 03, 2013, during Laguna’s First Thursday Art Walk festivities. LCAD ON FOREST will feature curated exhibitions and special programming that will bring unprecedented visibility to California’s leading higher educational institution of representational art. “I’m thrilled to be a part of extending the college’s presence from Laguna Canyon to downtown Laguna and being able to share our diverse gallery program with the community” added LCAD’s President, Jonathan Burke. On the building’s upper level, Simon and the ONE Laguna and Firebrand Media LLC staff are in the process of
developing a central, cutting edge, technology-based e-commerce portal that will connect Laguna Beach businesses, recreational activities and more to Orange County through the first-of-its-kind interactive and educational touchscreens and other computer-generated technologies. ONE Laguna will launch late in 2013 or early in 2014. Simon stated, “I’m pleased that we can be helpful to LCAD and to residents of Laguna and visitors to Laguna, who now can see more of LCAD’s great works. Upstairs at 225 Forest, Firebrand will be introducing a high technology experience in e-commerce, in contrast to the LCAD gallery below. We hope that “where art meets technology” will become a destination point for a diverse set of visitors to our facility.” Closing out the year at LCAD ON FOREST are The Art of John K and ALIVE: Moving Nature. The Art of John K, curated by LCAD’s Chair of Animation and Laguna Beach High School alumni, Dave Kuhn, will feature work from
John Kricfalusi the famed creator of The Ren & Stimpy Show. Kricfalusi is also the creator of the world’s first interactive web-based cartoon and founder of animation studio Spümcø. Cru Beaujolais: Fresh, Vibrant, and Perfect for Early Fall HAPPY GRAPES
By David White All wines are appropriate for all seasons. There’s nothing wrong with enjoying a simple white or crisp rosé in the winter, and big reds work all year long. But our diets change with the weather. Just as we look forward to watermelon and fresh-from-thegarden tomatoes in the summer, we crave soups, stews, and roasts in winter. So our go-to wines change, as well. As the fall begins, I find that I’m craving a light red with virtually every dinner. Cru Beaujolais almost always does the trick, as its vibrant acidity and freshness offer a refreshing pairing for September dishes. If you’re scratching your head,
then you’re probably thinking about Beaujolais Nouveau, the easy drinking, fruity wine that floods ashore every November. Both styles hail from Beaujolais, a region in France sandwiched between Burgundy and the northern Rhone, home to some of the world’s most prestigious vineyards. And both are produced with Gamay, a thinskinned grape marked by bright red fruits that traces its lineage to Pinot Noir and an obscure white called Gouais Blanc. But unlike Beaujolais Nouveau, Cru Beaujolais is serious; the wines can offer wonderful depth and complexity and age for decades. And right now, they’re extremely well priced. As Maggie Hoffman, the drinks editor at Serious Eats, explained last year, “[Cru Beaujolais] offers some of the best value in red wine that you can find… it’s seriously well-made, balanced, food-friendly, delicious, and evocative of place, and it’s way underpriced.” Consumer confusion helps explain why Cru Beaujolais is undervalued. Ever since Georges Duboeuf introduced his Nouveau to the U.S. marketplace three decades ago, Americans have associated Beaujolais
with the mass-produced, gimmicky plonk that sells by the truckload every November. Beaujolais Nouveau has certainly improved in recent years, but the whole concept still seems silly; it’s bizarre to celebrate Beaujolais’ new harvest with cheap wine that has been flown across the world. Consumer preference also explains why Cru Beaujolais is underappreciated. When consumers think of light wines, they tend to think of whites and rosés. For Americans, especially, a light red is an oxymoron -- reds are supposed to be dark, powerful, and served alongside steak. Cru Beaujolais hails from one of ten small villages in the northern part of this French wine region. Just as Napa Valley’s sub-appellations -- think Stags Leap, Oakville, Howell Mountain, and the like -- boast of special growing conditions, so do these ten villages. Good wine shops should stock wines from Fleurie, Morgon, Moulin-à-Vent, and other Beaujolais crus. Most Nouveau is produced in southern Beaujolais. That said, many artisanal producers are working to change the reputation of the south by keeping yields low, rigorously sorting their grapes, avoiding manipulation
in the cellar, and making real wines. Their bottlings are worth seeking out, especially if you have a trusted wine merchant to help guide you. Once upon a time, oenophiles everywhere knew that Beaujolais could produce some of the world’s most complex, aromatic, and lively wines. The region still produces gorgeous wines, but they’re mostly ignored. So before word gets out, be sure to stock your cellar. Photos by: Carla Rhea Mission San Juan Capistrano’s Romance of the Mission benefit gala featured a spectacular concert by actress/singer Susan Egan and estimates net proceeds at $220,000. Over 400 guests were on hand to experience an elegant evening under the stars highlighted by honoring longtime Mission San Juan Capistrano supporter and former Mission Preservation Foundation Board member Mike Hagan. Event proceeds will further the preservation of historic Mission San Juan Capistrano including the initial investigation work necessary for conserving the historic Sala building. Guests entered the black tie affair through the beautiful Mission Gate House Entry with access to the new Mission Store. Cocktail hour in the lush front gardens was followed by a stunning concert in the ruins of The Great Stone Church by Tony Award nominee performer Susan Egan. Mission San Juan Capistrano Executive Director Mechelle Lawrence Adams was joined by Mission Preservation Board President George O’Connell to welcome guests and recognize the extensive support and commitment of 2013 honorary chair Mike Hagan. Attendees then stepped through the historic Resurgam displaying artifacts from the Mission’s collection into the Main Courtyard for a gourmet plated Matt Griffin, Barb and Don Beier and Krysti Griffen four-course candlelight dinner masterfully prepared and served by The RitzCarlton, Laguna Niguel. Lawrence Adams commented, “Tonight is about celebrating all that we’ve accomplished since last year’s event and honoring both past and present donors. New traditions this year included the first-time ringing of the bells at 6:00 p.m. to officially commence the evening festivities, then our guests entering the Mission’s front gardens through the new Gate House Entry and Mission Store.” The Roman Catholic Diocese of Orange Bishop Kevin Vann led the invocation prior to dinner. During a short program, Gala committee members were recognized by Don Dorkowski and The Ritz-Carlton, Laguna Niguel’s General Manager Bruce Brainerd and Mission Preservation board member Connie Spenuzza drew opportunity drawing winners for a Ritz-Carlton get-a-way; vintage pendant, ring and earrings by Barbara Parkers, Inc.; a diamond cross by Roberto Coin; and a “Shop and Sip” event at the Mission Store. Beautiful candlelit tables featured floral arrangements in Romance of the Mission branded collectors champagne boxes filled with flowers reminiscent of Mission flowers. During that time the Coto de Caza News published a series of full page stories and interviews about the project, one of which was re-printed in this month’s CZ Master monthly membership letter. In addition, our sources say that the terms of Oxbow’s current agreements to purchase the Merryhill property required a nonrefundable payment be made on or about September 30, and as of press time this week that payment has not been made. While Hacienda and Oxbow Partners indicate that they are still interested in developing assisted living if the Oak Grove proposal explained below fails, it appears that they are waiting to see whether the Oak Grove offer is accepted by
the Silver-Bronze membership. When asked to comment on the story about the proposed sale SilverBronze, President Randy Brusca said:” Silver Bronze Corporation consists of 188 equity shareholders. About half the shareholders live on the ranch in various neighborhoods. The other half live around the state and the country and even France. The corporation through various leases and management agreements operates the Sports club, the event and meeting rooms of Coto Valley Country Club, a public horse boarding facility at the equestrian center and the Polo arena. Almost all members have been shareholders since the seventies and eighties. We encourage the residents and public at large to use and enjoy the facilities we provide.” Randy Brusca Silver-Bronze, President Coto’s Equestrian Center is considered to be one of, if not the finest Equestrian Center in Orange County. Coto is the only gated housing community in Orange County that offers an Equestrian Center, along with Golf, Tennis and competitive sports activities. Equestrian activities have been a vital part of Coto’s attraction as a valued place of residence. It is the same site which hosted the 1984 Olympic Equestrian events competitions According to Club members who attended the meeting last Saturday, the Board President tried to stop any
discussion of the offer on the table from a developer, stating it was not on his meeting agenda. The Club Members were not satisfied with that answer and the proposed sale became the discussion topic for the next hour, with members expressing their opinions generally “not in favor” of the development for housing. The members requested an accounting by each member of the Board as to their personal opinion about this proposed sale of the Equestrian Center. All, but one, indicated they were NOT in favor of this offer and agreed they would take responsibility for informing the Membership regarding the issues affecting the proposed sale. One objection stated that the offer to a portion only 51%, of the members, is in conflict of the current Silver-Bronze By-Laws. Another Club member characterized the proposed sale as a “hostile takeover”, saying, “The developer has offered to buy over half current Club Memberships in a hostile takeover of the Corporation, and then trade back those memberships to the remaining members in exchange for the Equestrian Center property. Some members worry that the proposal to leave a token portion of the existing center, to appease the community, however a greatly diminished facility might not survive located immediately adjacent to, and surrounded by luxury housing, most likely leading to the future sale and development of the remaining property. takeover is nothing new to the Board of Directors of the Silver Bronze Corporation when in 2008 A group of horse owners (Orange County Equestrian Centers, Inc.) made an unsolicited offer to buy out the Coto de Caza Equestrian Center and sent its first unsolicited bid of $15,000 per equity member for up to 51 percent of Silver-Bronze’s 178 members. According to the Orange County Register, “that offer was rejected by the board of directors.” Then On June 3, 2008 a revised offer was sent to club members, increasing the proposed purchase amount to $25,000 for the first 51 percent of the members accepting the offer. On June 17, Silver-Bronze’s board sent a letter stating it does not support that offer. The club was formed when Chevron/Arvida, one of the early developers of Coto de Caza, turned it over to residents near the club in 1989 as part of a court settlement allowing Arvida to cut its ties to Coto. Before that time Chevron/Arvida underwrote the costs of running the Equestrian Center. The Coto de Caza news intends to publish another series of news stories about this project during the coming month. Night Krawlers is designed to enliven the senses. The sense of sight is explored as guests try to recognize shadows of different animals in the Shadow Game. In Ghoulish Smell, chocolate bars, candy corn, and pumpkins are placed in a box for guests to determine what they are based on their smell. Testing the sense of hearing, guests attempt to name animal noises, scary sounds and spooky songs. Guests are blindfolded and presented with a series of Halloween treats to try to identify each one by its taste in the Candy Taste Test. Tips on Being Prepared for a House Fire By Debra Pamplin People work diligently day after day, to protect their family, their home, and their belongings. There are always steps to take to prevent damage and destruction from certain fiascos. But, what if there is a fire in your home? What preventive steps can you take to ensure your family is allowed a safe exit of a home fire? A house fire is something few of us wish to discuss. It is easier to not think about it. But, the fact is that talking about it and having a safety plan is crucial to ensure the safety of yourself and your loved ones. The first step is to come up with an “exit plan”. This plan will include the pathway exits from the home, with scenarios of a potential fire beginning in different parts of the house. This is most important for those with small children. Make sure your kids know which way to vacate the house in the event of a fire, where to meet you once outside, and most importantly, make sure they know they are not to stop to gather any personal belongings. Let them know that everything they own can be replaced, but that they are the most valuable possession you own, and that they cannot be replaced. Also, have a clear plan on where to meet after evacuation. A neighbor’s drive perhaps. This will be a meeting place to see if there is still anyone left inside. Once you have gathered at the meeting location, then 9-1-1 can be contacted. Secondly, knowing that there will not be time to gather important documents and such, I recommend a fire proof box. Birth certificates, social security cards, deeds, and any personal items such as picture cds can be stored safely in a fire proof box. Some people might opt to keep an extra book of checks or cash in this box in the event of tragedy striking. Having these items survive a potential fire will just makes things a little easier after the fact. The Red Cross will be contacted and a representative will meet with you, to Page 16

provide assistance for living expenses for the next few days. They will issue you a debit card, with a set amount of money on it. The money can be used for gasoline, food, groceries, motel and clothes. The worker will go over the amount allotted, based on the amount in your family. Having a house fire is devastating, and no amount of planning can prepare you for the huge loss, but these few steps can help ensure a safe ending for your loved ones, and the ability to have the important documents needed to make starting over just a bit easier.

Remember, you only have to floss the ones you want to keep. By the way, there’s a significant link between the phosphoric acid used as a preservative in dark soft drinks and Alzheimer’s. Another reason to avoid them. We recently found a hard candy that’s sweetened with a Xylitol that coats the teeth with a decay-reducing micro-film. Something like fifteen flavors, no aftertaste. Good Stuff. There is a genetic pre-disposition to susceptibility to decay. Some people get cavities irrespective of how well they take care of their teeth; some people don’t take care of their teeth at all, and still never get cavities. It isn’t necessarily fair (how much in life is?), but the above can help. “The more I work with the laser and the sandblaster, filling teeth without the need for drilling and therefore anesthetic, the more I realize how much dentistry has changed over the last 30 years. When the drill and the carbide burr were our only cutting options, we made it more likely that, in their later adult hood, these teeth would crack, ultimately needing crowns. Cool car upgrades: How to enhance your ride Fall has finally arrived, meaning it’s time for the kids to hit the school books. And as the leaves gradually morph from green to gold, your driving schedule quickly accelerates from leisurely cruising to nonstop go, go, go. DIOCESE OF ORANGE TO CELEBRATE PRESTIGIOUS AND HISTORIC “RED MASS” FOR ORANGE COUNTY’S LEGAL COMMUNITY The Roman Catholic Diocese of Orange and the St. Thomas More Society will host the 25th annual Red Mass at Holy Family Cathedral in Orange on Monday, October 7th at 6:00 p.m. The Red Mass is celebrated annually at the opening of the judicial year. Orange County judges and lawyers will attend as a group, joined by public officials and law faculty members. The custom originated in Europe in the 13th century and received its distinguished name from the brilliant scarlet vestments worn by the Mass celebrant and Lord High Justices in England. “I am pleased to take this special opportunity to recognize the dedication and mission of our local legal community and seek to strengthen their resolve in the upcoming judicial session. As a new shepherd of our Catholic community in Orange County I am honored to, for the first time, attend this celebration and the St. Thomas More Society dinner after the Red Mass where two exemplary legal professionals will receive the St. Thomas More Award,” said Bishop Vann. This unique Mass for the Bench and Bar has been celebrated for many centuries all over the world. Its roots can be traced back to Paris, France where the first recorded “Red Mass” took place in 1245. It was held for centuries in the chapel of the Order of Advocates, La Sainte Chapelle, built by Louis IX. In certain localities of France, the Red Mass was celebrated in honor of St. Ives, the patron Page 22
Saint of Lawyers. In England, the tradition began about 1310, during the reign of Edward I. The entire Bench and Bar attended the Red Mass together at the opening of each term of Court. The tradition of the Red Mass continues in the United States. Each year in Washington, D.C., the members of the United States Supreme Court join the President and members of Congress in celebration of the Red Mass at the Cathedral of St. Matthew. PACIFIC SYMPHONY’S “RODRIGO’S CONCIERTO,” LED BY MUSIC DIRECTOR CARL ST.CLAIR
Pacific Symphony’s 35th anniversary season continues with the sizzling sounds of 20th-century Spain igniting in the hands of Music Director Carl St.Clair as he leads the orchestra into the exotic world of flamenco, guitar and Spanish poetry. The first Music Unwound concert of the season, the performance spotlights the well-known guitar concerto, Rodrigo’s “Concierto de Aranjuez,” performed by renowned Chinese guitarist Xuefei Yang. Hailed for her “feisty virtuosity, impeccable technique and sensitive musicianship… Yang’s guitar sings as if she had grown up in the shaded courtyards of Andalusia” (The New York Times). Then, in honor of William Bolcom’s 75th birthday, the Symphony performs the Pulitzer-Prize winning composer’s “Canciones de Lorca,” a song-cycle based on the language of Spain’s revered poet, Frederico García Lorca, which was composed in collaboration with tenor Plácido Domingo. The evocation of Lorca’s poetry is sung by multiple prize-winning tenor René Barbera and the music is being recorded for future release. Described by Variety as “fascinating” and “free-spirited,” the work was commissioned for and premiered at the opening of the Renée and Henry Segerstrom Concert Hall in 2006, and is dedicated to Pacific Symphony, Maestro St.Clair and Domingo. The program also includes a vivid Spanish ghost story, as the Symphony plays the five final selections of Manuel de Falla’s “El Amor Brujo” (Love, the Magician). De Falla’s suite was originally written for a famous flamenco gypsy dancer, Pastora Imperio, and tells the story of a woman, Candelas, who is haunted by the spirit of her past lover. The songs, written in the Andalusian Spanish dialect, are sung by mezzo-soprano Ola Rafało. To set the mood for the concert, Page 24
classical guitarist Joseph Yashar performs Spanish music in the concert lobby, and guests are invited to create their own poetry using phrases written by Lorca. Taking place Thursday through Saturday, Oct. 24-26, at 8 p.m. in the Renée and Henry Segerstrom Concert Hall, the concert includes a preview talk with Alan Chapman at 7 p.m. and a post-concert talkback with St.Clair, Bolcom and the Symphony’s artistic advisor, Joseph Horowitz. The way Bill Bolcom paints the sonic picture is just marvelous and points to his genius of combining the two art forms.” The concert opens with Rodrigo’s “Concierto de Aranjuez,” a musical portrait of the gardens at the Palace of Aranjuez, 26 miles south of Madrid. He described the concerto as capturing “the fragrance of magnolias, the singing of birds, and the gushing of fountains” at the Palace. The work is enriched with nuances of flamenco’s cante jondo, or “deep song,” and the finale evokes a courtly dance. The middle movement has become familiar to many because of its many adaptations—one of the most famous being the version by Miles Davis in his album, “Sketches of Spain.” It’s remarkable to note that the composer was blind by the age of 3 (he composed in braille), and although he is praised for giving the guitar a place of dignity in the concerto repertoire, he himself was a pianist and never

mastered the guitar. Of the evening’s soloist, Yang, Gramophone wrote, “the guitar world has a new star.” Born in Beijing, she was the first guitarist in China to enter a music school (Beijing’s Central Conservatoire of Music), and became the first Chinese guitarist to launch an international professional career. Her first public appearance was at the age of 10 and received such acclaim that the Spanish ambassador in China immediately presented her with a concert guitar. Her debut in Madrid at the age of 14 was attended by the composer Rodrigo and, when guitarist John Williams heard her play, he gave two of his own instruments to Beijing’s Central Conservatoire especially for her and other advanced students. She then went on to become the first Chinese student to be awarded a full post-graduate scholarship to study at London’s Royal Academy of Music. In recognition of her distinguished career, Yang was awarded Fellowship of the Royal Academy of Music in June 2012. “‘Canciones de Lorca’ was so well received at the opening of the Renée and Henry Segerstrom Concert Hall, when Plácido Domingo was the soloist, that I wanted to bring the songs back, record them and release them on a CD with Bill’s other work we commissioned, ‘Prometheus,’ as a 75th birthday gift,” says St.Clair. Tenor Barbera, a graduate of Lyric Opera of Chicago’s Patick G. and Shirley W. Ryan Opera Center, has swiftly established himself as a young artist on the rise. At Plácido Domingo’s Operalia 2011 in Moscow, he was awarded First Prize for Opera, First Prize for Zarzuela and the Audience Prize. He is the first artist to be the sole recipient of all three awards since the competition began in 1993. Earlier in the summer of 2011, he triumphed as Tonio in “The Daughter of the Regiment” for Opera Theatre
of St. Louis. Of his performance, the St. Louis Post-Dispatch said, “Tenor René Barbera…has a thrilling voice… His account of ‘Ah! mes amis’—the one with the famous nine high Cs— was tossed off with such apparent ease that some might wonder what all the fuss is about.” Mezzo-soprano Rafało, a rising star, has a voice that the Palm Beach Arts Paper called “attractive, dusky and powerful.” Her rich voice and dramatic sensibility lent themselves perfectly to the sumptuous roles of Carmen, Eboli in “Don Carlo,” Amneris in “Aida,” and Dalila in “Samson et Dalila.” Rafało has coached with opera greats such as Sherrill Milnes, Tito Capobianco, Fabrizio Melano and Dame Kiri Te Kanawa. In 2008, she was awarded Grand Prize of the Elgin Opera competition and First Prize of the Sherrill Milnes Opera Idol competition. She was also an apprentice artist at Sarasota Opera, receiving the Leo M. Rogers award, as well as an apprentice at Opera Tampa. Now entering its fifth season, Music Unwound is a series of three concerts, underwritten by the Andrew W. Mellon Foundation, that bring innovative new formats and thematic programming to the concert experience. By creating contextual backdrops, the Symphony endeavors to give the music deeper meaning. Other Music Unwound concerts in the 2013-14 season include “Toradze Plays Shostakovich” (Jan. 30-Feb. 1, 2014) and “Carmina Burana” (June 5-7, 2014). Easy meal and snack ideas for families adjusting to busy school schedules As the relaxing days of summer come to a close, it can be challenging to smoothly transition to back-to-school time. While kids and families adjust to more hectic schedules, it’s more important than ever to fuel both body and mind with foods that nourish and satisfy.- With a few new meal and snack ideas, your family will have a head start on the season. When it comes to simple snacks it doesn’t get easier than fresh grapes. California’s fresh grape season is in full swing throughout the fall - good news for kids and their parents, too. Packed in a container for munching during lunch or snack breaks, grapes are a sweet, juicy and refreshing fruit with excellent credentials: * Grapes contain just 90 calories per 3/4 cup serving, with no fat or cholesterol, and they are very low in sodium. In addition, all colors of grapes - green, red and black - contain antioxidants and other polyphenols, w h i c h scientific studies suggest may help protect the heart and important cell functions. * Having a bowl of fresh
grapes handy for an after school snack is a delicious and smart alternative to chips, cookies and other manufactured foods, which are generally expensive and high in fat and salt. Plus, grapes are delightfully easy: no peeling or coring required. * Grapes make a simple snack that kids can make themselves. Try a fresh take on the PB and J classic. If needed, a parent can pre-slice the grapes, which can be done the night before; luckily grapes don’t brown when cut. Peanut butter can be replaced with almond butter or other nut butters and spreads. Peanut Butter and Grape Sandwich Ingredients: 1 slice of bread (wheat, sourdough, cinnamon swirl) 2 tablespoons peanut butter 1/4 cup red seedless California grapes, halved Directions: Spread peanut butter on bread. Place grape halves on top. Serve immediately. Adults can join in the fun too. Nutritious and delicious, a rice salad with grapes and golden beets will appeal to older children, teens and parents, and anyone wanting a fresh take on salads. -It’s also perfect for vegetarian, vegan and gluten-free diets.
-Three food groups are well represented and the grapes add a juicy quality and a unique sweet and tangy flavor which complements the honey-vinaigrette dressing. Grapes also add a crispness that balances the textures of the chewy rice and the al dente beets. The salad can be served as a side for dinner or packed for school or office lunches. Grape, Golden Beet and Brown Rice Salad Ingredients: 4 medium golden beets, scrubbed 1 cup short grain brown rice (or 2 cups cooked brown rice) Salt to taste 1/3 cup chopped red onion 1 clove garlic, minced 1/4 cup white wine vinegar 1/4 cup extra-virgin olive oil 1 tablespoon honey Black pepper, freshly ground, to taste 1 cup thinly sliced celery 1 cup halved red seedless California grapes Pinch cayenne 1/4 cup chopped Italian parsley Directions: Preheat the oven to 375 F. Trim off all but 1-inch of stem on the beets and place in a small baking dish. Cover with foil and bake until
a paring knife inserted into the center of the beets goes in easily, about 60 to 90 minutes. Let cool until easy to handle. Peel, then cut the beets into 1/2-inch wedges. Meanwhile, bring 2 cups of water, the rice and salt to a boil in a medium saucepan over high heat. Cover, reduce the heat to low and simmer covered until tender and most of the liquid has been absorbed, 40 to 50 minutes. Let stand 5 minutes, and then transfer to a baking sheet to cool slightly. At the same time, combine the onion, garlic and vinegar in a large mixing bowl and let stand 15 minutes. Whisk in the oil, honey and salt and pepper to taste. Fall into great tabletop decorating ideas Saying goodbye to summer doesn’t have to be a sentimental ending when you consider it’s also a beginning - the kick off to autumn and the holiday season. The promise of fall is in the air. It’s a great time to dress up your home for fall entertaining; whether that means friends gathered around the television rooting for your favorite team or the ultimate traditional Thanksgiving feast. “Decorating trends for this fall are really fun and functional,” says visual merchandiser John Griffith. “Colors that evoke a sense of nostalgia and family are a really big part of the visual design message for autumn 2013. Reds, golds and oranges are trending this fall. These hues are not only warm and comforting; they’re
reflective of the season.” Griffith and teammate Julie Robbins add their own unique spin on the latest trends to create seasonal design vignettes for Replacements, Ltd., the world’s largest retailer of old and new china, crystal, silver and collectibles. Whether you are planning a casual family gathering or an elegant dinner party, Robbins suggests easy ways to mix in great fall colors. is using natural elements in her table designs that evoke a sense of the first Thanksgiving. “I suggest filling vases, glasses or serving bowls with dried beans, acorns or even kernels of dried deer corn. Not only does this look pretty, you can also mix in candles or flowers and use these natural elements to hold those items in place.” Robbins adds apples, gourds, pumpkins and green pears are among fruits and vegetables you can use on your table or anywhere in your home to create a brilliant splash of color.
