Thousands expected to join together in prayer for compassionate immigration reform at Christ cathedral The Most Rev. Kevin W. Vann, Bishop of Orange, will join thousands of Catholic families, priests, deacons, religious women and faithful advocates for comprehensive immigration reform as they pray in solidarity with their immigrant brothers and sisters for the implementation of comprehensive immigration reform, Nov. 16, 2013, 1 p.m. at the Christ Cathedral (13280 Chapman Ave., Garden Grove). Participants from throughout the Diocese of Orange and Archdiocese of Los Angeles hope to strip away the animosity and rhetoric of the current debate and draw attention to the deeply personal challenges faced by immigrant families within our communities, while encouraging our political leaders to join their faithful call for a compassionate immigration system that offers solace to the poor and marginalized. “As Catholics we believe in the human dignity of all people, no matter their country of origin. For the Church, immigration reform finds a foundation not only in Catholic social teaching, but as a response of faith. We head our Holy Father Francis’ call made during his trip to the Italian

island of Lampedusa to denounce the “globalization of indifference” toward migrants,” said Bishop Vann. Each day in Catholic parishes, social service programs, hospitals, and schools the human consequences of a broken immigration system are apparent. Families are separated, migrants exploited by unscrupulous employers and smugglers, and children lack access to educational opportunities. Moreover, as our nation benefits from the hard work of undocumented workers, we do not extend them basic workplace or legal protections and they often serve as scapegoats for our social ills. This touches all ethnic groups within our communities. For Catholics, these are issues of human rights and are at the core of the Church’s social teachings. Because of its harmful impact on human life and human dignity, the U.S. bishops have taught (Justice for Immigrants) that the status quo is unacceptable and have, for many years, called for comprehensive reform of the U.S. immigration system. The necessary elements of a reform have been stated as: An earned path to full legal status, and eventual citizenship,

that is reasonable and attainable; Provision for immigrants brought here as minors to swiftly gain legal status to continue their education and enter the workforce; The reduction of immigration application backlogs so that families may be united more quickly; A temporary worker program that is safe, workable for families, and fair to all workers, immigrants and nonimmigrants, alike; Restoration of due process protections restored for all immigrants involved with the immigration justice system; The protection of refugees and unaccompanied immigrant children; A way of addressing the root causes of immigration; and A stronger and safer boarder.

“The issue of immigration calls forth so many strong opinions and emotions. It is time to focus less on rhetoric and more on solutions, thinking of the families and lives behind the words. It is imperative that both parties and both chambers of Congress work together to produce a bill which creates an immigration system predicated on the rule of law but which upholds values which all Americans cherish—hard work, opportunity, and compassion, and which many of our own forebears (mine included) experienced. But above all, let us approach these matters as people of Faith and prayer,” concluded Bishop Vann.

Santa Margarita Catholic High School Student Athletes Make it Official 16 Athletes Commit on NCAA Signing Day

16 athletes from Santa Margarita Catholic High School made their futures evident on Wednesday, Nov. 13, as they officially signed letters of intent or celebrated their commitment to attend colleges across the country for their sport. Nov. 13 marks the first day that high school seniors could sign scholarship papers for the following sports: baseball, basketball, golf, lacrosse, softball, swimming, tennis, volleyball, water polo (girls only) and wrestling. The letter of intent is a binding agreement between the studentathlete and a college, by which the student-athlete agrees to attend the college for one academic year. The following student-athletes signed as part of the NCAA National Letter of Intent Signing Day: • Allie Prukop of Coto de Caza has committed to Seton Hall University for softball. Allie is a four-year varsity athlete for the Eagles as an infielder. Prukop is a two-time All-Trinity league selection, team captain, and has been named the SM player of the week. In addition to playing softball, Prukop has lettered in girls basketball and maintains a 4.04 grade point average. • Kevin Thomsen of Newport Beach has committed to Princeton University for baseball. Kevin is an infielder and has often been used as a relief pitcher for the Eagles, with an impressive 1.79 ERA (earned run average) his junior year. Dobson has been named the MVP the last three years for her different level volleyball teams and is the captain of this year’s Page 8

Off the court, Mikayla is a member of the National Honor Society, CSF, Honor Roll, ScholarAthlete four consecutive years, she is involved with peer ministry and is a student-ambassador while carrying a 4.30 grade point average. • Erik Sikes of Coto de Caza has committed to BYU for Volleyball. Erik was recruited as a Libero by the Cougars of BYU and has also played outside hitter for the Eagles. In 2012, Erik played on the USA Youth National team and won a gold medal at the Junior Nationals. Erik has been named first-team All-Trinity League the past 3 years and was named MVP for the Eagles his junior year. Of the court, Erik has been involved with the Special Olympics, Loaves and Fishes, and maintains a 3.73 grade point average. • Joe Furstinger of Rancho Santa Margarita has committed to the University of New Mexico for basketball. This past winter, Joe averaged a double-double with 17 points and 12 rebounds for the Santa Margarita basketball team, leading them to the division 3AA CIF Championship game. In addition to a CIF Finals appearance, Joe was voted first team All-CIF and first team All-Trinity league. • Hayden Ruiz of Rancho Santa Margarita has committed to Boston University for lacrosse. Hayden is a four-year letterman for the Eagles Lacrosse team and is a three-time AllTrinity League selection and two-time All-County selection. Hayden was a West Coast Under Armour team member last year and has represented the West Coast Starz the past three years. Hayden is committed to assisting US Marines and their families through his volunteer work with Operation Help a Hero, and carries a 4.02 grade point average. • Alexandra Krogius of San Juan Capistrano has committed to Villanova University for Tennis. Krogius is a nationally ranked USTA player and has been the #1 Singles player for the Eagles four consecutive years, leading the tennis team to the Trinity League Championship every year. Taber is a member of the school record holding 4x50 butterfly relay, is a three-time CIF Finals qualifier and has qualified to swim at the United States Winter Nationals and made the 200 meter butterfly standard for the 2013 World Championship Trials. • Elizabeth Devitt of Rancho Santa Margarita has committed to Duke University for swimming. “Lizzie” is a four-year varsity swimmer and is the current school record holder in the 100 free and 200 individual medley. She is a member of four record setting relays and at one time held the record in the 500 free. Devitt is a two-time high school All-Americanin the 200 individual medley, was named the 2011 Trinity League Swimmer of the Year, and owns four individual Trinity League Titles. Lizzie has qualified for the US Junior and Senior National Championships and is a 4.0 student. • Jacquelyn Shoults of Laguna Hills has committed to UCLA for swimming. “Jax” is a four-year varsity swimmer for the Eagles and is the school record holder in the 100 backstroke. Shoults is a 2012 All-American and is a two-time Trinity League Champion in the 100 backstroke. Shoults is a three-time CIF qualifier and is a member of three school record setting relay teams. Jax has qualified for the US Swimming Junior Nationals and met the qualifying standard for U.S. Winter Nationals. • Annie Whelan of Coto de Caza has committed to USC for diving. Whelan is a four-year varsity diver for the Eagles and has qualified for CIF each year. Whelan was recognized as an NISCA All-American which places her in the top-100 divers nationally. She is the 2013 Trinity League Diving Champion and has qualified for the US Junior Diving Championships and the National Age Group Championships while maintaining a 4.11 grade point average. • Payton Gabris of Rancho Santa Margarita has committed to

the San Diego State University for diving. Payton is a four-year varsity diver for the Eagles and has qualified for CIF every year. In 2012, Payton was selected to the National Interscholastic Swim Coaches Association All-American team and has qualified and performed at the US Junior and Senior Zone Championships. • Kelli Baumgardner of Laguna Niguel has committed to the University of California, Irvine for water polo. Kelli is a three-year varsity letterman for the Eagles and holds the third highest assist total in school history with 63. Last year she scored 41 goals and 33 steals, earning her a starting spot on the CIF division 2 Championship team. Kelli was named to the 2013 All-Trinity League team and All-CIF team and carries a 3.81 grade point average. • Kacey Avalos of Lake Forest has committed to the University of California Berkeley for water polo. Avalos is a four-year letterman for the Eagles and is 12 assist’s shy of becoming the all-time assist leader in school history. Last year, Avalos earned All-Trinity League and All CIF honors and was also named NISCA High School All-American. Outside of the pool, Avalos is an honors student and maintains a 4.14 GPA. • Haley Wan of Irvine has committed to Princeton University for water polo. Wan is a four-year letterman for the girls’ water polo team. Haley looks to re-write the girls water polo record books this season as she currently holds the season steals record with 96, 34 steals shy of setting the school career record, 32 goals shy of the school’s career scoring record, and is the current record holder for field blocks with 53. Last year Haley helped lead the Eagles to their first CIF championship in 13 years and their first league championship in three years with her game-winning goal in overtime to defeat Mater Dei. She was named first team All-Trinity league three years in a row, 2013 Orange County Register’s Player of the Year, CIF Division 3 Player of the Year, and was named to the NISCA high school All-American team. In the classroom, Haley is an AP/IB student and maintains a 4.71 grade point average.

Superhumans deliver high-caliber play on final day of Wheelchair Tennis Masters in Mission Viejo By Kelly Tokarski Photos by Steve Wylie Less than 24 hours since he won the International Tennis Federation Wheelchair Tennis Doubles Masters championships with partner Nick Taylor, David Wagner is practicing for his singles match against rival Lucas Sithole of South Africa. “I have competed against Lucas six or seven times and am ready for this match,” he said in between practicing his serve. “It’s been great to have the Masters in the city of Mission Viejo. It’s close to home for me and to have the support of family and friends here has been phenomenal.” Countless people supported top seeds Wagner and Taylor as they captured their seventh quad doubles crown on Sunday, as the first of six titles were decided at the 2013 NEC Wheelchair Tennis Masters and ITF Wheelchair Doubles Masters at Mission Viejo’s Marguerite Tennis Pavilion. The pair kept their title with a 6-1, 6-2 win over fellow American Greg Hasterok and Sarah Hunter of Canada – the second seeds. On Monday, Wagner, who is world No. 1, beat Sithole 06, 6-2, 6-2 in the Wheelchair tennis champions Jordanne Whiley of Great Britain quad singles final. This is Wagner’s sixth NEC Masters title. Following David Wagner and Nick Taylor Wagner’s win, Japan’s Yui Kamiji captured the Women’s Singles title. The and Yui Kamiji of Japan Men’s Singles title went to the number one-ranked Shingo Kunieda, also of Japan. In Doubles action, Yui Kamiji and Jordanne Whiley of Great Britain took home the Women’s Doubles crown, and France’s Stefan Houdet paired with Scotland’s Gordon Reid to defeat the French duo Michael Jeremiasz and Nico Peifer. The competition that began in Mission Viejo on Nov. 5 marks the first time that either of these year-end events has been hosted in the United States, and the first time since 2002 that the two events have been held at the same venue. “It is incredible for Mission Viejo to have this level of professional tennis,” said tennis legend Michael Chang, who won the 1989 French Open at age 17. Chang was at the Tennis Pavilion Saturday for Tennis Greats Night. “The Masters is a great way to make use of the Marguerite Tennis Pavilion and for me it makes it more exciting being my home town.” Scotland’s Gordon Reid (left) and his French partner Stephane Houdet Southern Utah resident Rick Draney, a former world #1 quad wheelchair tennis player, said he’s watched wheelchair tennis evolve since he began playing the sport in 1984. “To see what it has become today, the level of play and athleticism of the players is incredible,” he said. “It’s great to see such an elite event back here in Southern California (after being in Europe) especially here in Mission Viejo where there has been such a commitment from the city for the youth wheelchair tennis camp to begin with. It really has come full circle.” Jane Goodman, chief official of the event, said the 25 tournament officials all feel “privileged” to be at such a “first-class” event. “What the city has done is mind-boggling,” she said. “They have killed themselves to make this a great event. Soka University Nets $500,000 for Ninth Annual Peace Gala

Photos by Robert Rook Soka University of America (SUA) announced that its Ninth Annual Peace Gala, Celebrating a Vision of Peace, held at the picturesque university campus in Aliso Viejo netted approximately $500,000. The money raised by the gala goes directly to SUA students via the Scholarship Endowment. The evening began with around 550 guests gathering at the Soka Performing Arts Center to enjoy cocktails and hors d’oeuvres while browsing the silent auction. They were then led across the bridge over Peace Lake lined by grateful students holding candles, thanking each guests for attending as they passed by, and then welcomed by dynamic Japanese Taiko Drums as they entered the venue. For the third year, actor Ron Glass, best known for his role as Detective Ron Harris on the TV sitcom “Barney Miller,” served as master of ceremonies. Joan May and Dita Shemke returned as event co-chairs for the seventh consecutive year, with Carolina Shorter as the 2013 honorary chair. Featured guest artists for the evening included three-time Grammy winning jazz bassist, cellist and singer Esperanza Spaulding, nine-time Grammy winClothilde Hewlett and George Joseph ning jazz saxophonist and composer Wayne Shorter, Grammy winning jazz drummer Terri Lyne Carrington, and acclaimed jazz pianist Leo Genovese. Spalding’s Chamber Music Society in 2010 won multiple awards including the Best New Artist Grammy. Her latest release, Radio Music Society, won the 2013 Grammy for Best Jazz Vocal album and along with Thara Memory, she won the Grammy for Best Instrumental Arrangement Accompanying Vocalist(s) for the song “City of Roses.” Wayne Shorter’s music transcends genre while keeping the improvisational genius and surprise of jazz burning at the center. Regarded as one of the most significant and prolific performers and composers in jazz and modern jazz, Shorter received Grammys in 1979, 1987, 1994, 1996, 1997, 1999, 2003 (two) and 2005 – including best album, best instrumental performance and best composition. This year, the Peace Gala attracted some new and notable attendees including Kareem Abdul-Jabbar, Grammy winning jazz pianist Keiko Matusi and Les Misérables Broadway star Ivan Rutherford. They, along with the other guests enjoyed personal experiences and performances by some of the students and a delicious dinner catered by The Resort at Pelican Hill. DawnMarie Kotsonis led a lively auction, contributing $74,000 to the evening’s total proceeds. Highlights included a personally signed guitar from musician, activist and philanthropist Bono, garnering a winning bid from Jim Howard and Linda Knolls Mijeong Jo and Michelle Nunn and Sheila Peterson for $25,000, a South Coast South Coast Plaza Shopping Spree for Pascal and Heron Houllion for $11,000, a Studio Ghibli “Spirited Away” Package $10,000 by Jim and Sheila Peterson, and a Private Jet to tour Pixar Studios won by Paul and Shannin Pickle for $10,000. Each year, the gala raises funds for scholarships for Soka University students who come from around the world to experience Soka’s unique educational experience founded upon the principles of peace, human rights and the sanctity of life. SUA founder Daisaku Ikeda said, “The ultimate goal of a Soka education is to foster people of character who continuously strive for the greatest good – that of peace.” Soka University is a private, four-year liberal arts college and graduate school in Aliso Viejo, Calif. I just did three fillings using the Whisper-Jet (sand blaster) on a thirtyfive year old patient. He asked me why this Dr. Michael Tessier procedure was necessary, and here’s what I told him: Just like any other situation, early detection is always a good thing. The grooves in the chewing surfaces of the molars get to the point where they’re narrower than one bristle of a toothbrush. So, a patient can’t get in there to clean those grooves, but the acidic end-products of bacterial metabolism can. When we use a drill on a small cavity, we can only make the whole as small as the diameter of the drill allows. So really small cavities would require removal of much more tooth structure than necessary. Also, using the drill would require anesthetic because of the discomfort that arises from both the rotational vibration of the drill and the heat of friction that ensues as the drill cuts the tooth structure. And, drilling on any crystalline substance, like tooth enamel, can result in micro-fractures that can, in the case of tooth structure,

lead to tooth fractures in later years. So, we use a sandblaster that most often leaves a much leaves a smaller hole, doesn’t cause discomfort from the heat of friction or the rotational vibration of the drill, and doesn’t lead to fractures of tooth structure. Then we fill the hole in the tooth with a liquid plastic material which thru capillary action gets into the pores of the enamel, sealing those pores and preventing leakage. In fact, if we were still doing silver/ mercury fillings ( and we don’t even have the facility to do amalgam fillings, anymore), the sandblaster would be inadequate because we’d need a bigger hole to pack that obsolete filling material into. Definitely a case of cooperative evolution. When we have to do cavities on children’s adult molars, we use the sandblaster, thereby avoiding the need for a shot, removing less tooth structure, and reducing the possibility of fractures way in the future. When I see all the factors cataloged like that, the value of the whole procedure is a big “no duh”. Modern technology strikes again. Baking basics are a recipe for holiday success Whether your end-of-year festivities involve mistletoe and hoho-ho, a menorah and dreidel, or a kinara and seven colorful candles, holidays of all cultures seem to have one thing in common: baking. Food is an integral part of many celebrations, and whether it’s Christmas, Hanukkah, Kwanzaa, or a family get-together, chances are there’s a baked good in attendance. Perhaps you’re thinking of trying your hand at some family recipes you’ve never made before, or want to experiment with favorites from other holiday traditions. Whatever dish you make this holiday season, these baking basics help ensure success: Stock the staples A variety of delectable ingredients is one of the many things to love about holiday baking, but some staples show up in many recipes. Plain white flour is the foundation of many holiday baked goods, so be sure to keep plenty on hand. Baking soda and baking powder are also frequent necessities, as are eggs and sugar (white, powdered and brown). While peppermint may be apropos for Christmas cookies and candies, and cinnamon and cloves impart ethnic flair to Kwanzaa recipes, vanilla is one flavor that appears in nearly every tradition. This year, add Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract to your pantry. tience. Most baked goods require a cooling period before they can be safely removed from the baking pan, tray or sheet. Some recipes may specify the time needed to allow your cookies or cake to cool, while others might simply advise you to wait until the item is cool to the touch. Rushing removal can result in breaking, crumbling, splitting and sticking - the kind of disasters no amount of icing can cover. After removing your holiday goodies from the oven, set them on a rack to cool and go do something else. You’ll be happy you were patient when that fully cooled item slides easily out of the pan. Baking is an exact science more so than savory cooking that allows room for improvisation. By following the basics, you can be assured of baking success. Chewy Macadamia Nut Cookies Ingredients: 3/4 cup (1 1/2 sticks) butter, softened 2 cups firmly packed dark brown sugar 1 teaspoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract 2 eggs 3 cups unbleached all-purpose flour

1/2 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cream of tartar 1 teaspoon cinnamon 1 cup chopped macadamia nuts Directions: Cream the butter, brown sugar and vanilla extract in a mixing bowl using an electric mixer on a medium speed until fluffy. Add the eggs one at a time, mixing after each addition. Add the flour, baking soda, salt, cream of tartar and cinnamon and mix well. Stir in the macadamia nuts. Chill for two hours. Preheat the oven to 350 degrees. Coat an insulated cookie sheet with nonstick cooking spray. Shape the dough into 1-inch balls and place on the prepared cookie sheet. Bake for 15 to 18 minutes or until golden brown. Cool on a wire rack. Makes three dozen When preparing bakery items such as cookies, here’s a tip to enhance the flavor intensity of your product: cream the vanilla into the butter or shortening and sugar first. This step encapsulates the vanilla and helps prevent flavor loss in low mass/low moisture/ high heat cookies.

Gracious etiquette tips to survive holiday gatherings Whether you are hosting a fantastic holiday gathering or you’re the gracious guest, ask yourself this question: Are you comfortable with your knowledge of etiquette? Are you confident in your table manners or do you admit you take your cue by watching those around you? “It seems so many people only think about etiquette during the holidays and then the pressure is on to be perfect,” says etiquette coach Dubravka Vujinovic. “But proper manners should be important at every meal, whether you are sitting down to a formal gathering or casual dinner with friends.” Vujinovic is one of the etiquette experts at North Carolina-based Replacements, Ltd., the world’s largest retailer of old and new china, crystal, silver and collectibles. This time of year the company is bombarded with inquiries from

those needing a crash course in proper social graces and entertaining. Questions range from how to set the table, to the best way to serve the perfect meal. Vujinovic offers these suggestions for your next event. * Break out the buffet Buffets settings are becoming increasingly popular. In this style of setting the host places the food, dinnerware and utensils on a sideboard or table and guests serve themselves. “I love buffets, because they are so stress-free for me as a hostess,” says Vujinovic. “Since the food is already on the serving table, I don’t have to keep running back and forth to the kitchen to keep bringing out different courses or dishes; I can relax and enjoy the evening. On the other hand, as a guest, I like buffets because this setting allows me to eat the food I want; I don’t feel obligated to have to sample everything that is being passed around the table.” If you’re hosting a s e a t e d b u ff e t , w a t e r glasses should be filled and on the table before your guests sit down to their meal. Guests should be guided to pick up their dinnerware and

place it at their individual setting. * Set the perfect table If you opt to set your table in advance or if you’re a buffet guest setting your own place setting, remember, forks go to the left, knives then spoons to the right. The sharp side of the knife blade should be turned toward the dinner plate. And remember, only include utensils in your place setting that will be used for the courses you are serving; extra pieces may confuse your guests. The bread plate goes on the left of the dinner plate, glasses on the right. Don’t panic if you aren’t sure about the proper place setting for each meal. Vujinovic says you can find “cheat sheets” or place setting guides for various meals on the company’s website, replacements.com, under the site’s “neat things” tab. * Tips for hosts and guests Remember, the host/hostess always sits last. That person will let you know when it’s OK to begin eating. They may offer a blessing or statement or perhaps start by passing a dish. Always pass food around the table counter clockwise to your right and refrain from serving yourself first. Pass the salt and pepper as a set, even if you’re only asked for one.

If you’re not sure which utensil to use with each course, start on the outside and work in toward the dinner plate. Don’t cut more than one or two bites of food at a time, and never butter an entire roll or piece of bread. Instead, pinch off pieces small enough for one or two bites and butter those first. If you need to excuse yourself temporarily, place your napkin on your chair to indicate you will be coming back. Signify you’re finished with the meal by placing your napkin to the left of the dinner plate, and your fork and knife side by side diagonally across your plate with the sharp side of the knife blade facing inward and the fork tines up. Turn your cellphone on vibrate or don’t even bring it to the table. Enjoy the company of those around you. And what if you commit a major holiday fumble by accidently breaking a piece of the host’s dinnerware? “You should certainly offer to replace the broken piece, especially if it has sentimental value for the host or hostess. commemorating the life of cotos Megan sabatasso On November 9th , a group of ’08 alums traveled back to their alma mater to commemorate the life of their late friend Megan Sabatasso, with a special memorial service at the University of Colorado in Boulder. Jessica Sporty, Kim Philp, and Katherine Sullivan Beck led a ceremonial installation of a memorial bench at Delta Gamma, the sorority they shared with Megan. Fifteen of Megan’s closest friends joined her parents to unveil the courtyard memorial and to celebrate the laughs,

love and memories they shared with her. The group also presented Delta Gamma with a check for $1,000 to be used for scholarships in Megan’s honor. The inscription on the bench was chosen to reflect the spirit of sisterhood that Megan so beautifully embodied.
