Del Mar Reopens Third Year of Second Season

By Ilene Schneider photography William Casper What could be better than summer fun at Del Mar Thoroughbred Club? How about a second season with cooler weather, less traffic, robust increases in Del Mar’s on-track and overall handle and a massive $1-million Pick Six winner? Del Mar’s “second season” – called the “Bing Crosby Season” after the seaside track’s iconic founder – began last Friday, November 11, for a 15-day run that will end Sunday, December 4. The track opened with a special Veterans’ Day Salute to past and present veterans. The opening event included sky divers, the unfurling of the huge Holiday Bowl flag, a Pinups for Patriots fashion contest, a country concert and food from Cali Comfort Bar-B-Q. The Opening Day Stars & Stripes Fashion Contest drew more than 100 contestants who participated in categories including Most Patriotic and Best Pin-Up or Celebrity Look. Pin-Up contestants wore a variety of glamorous looks from bygone days. The Bing Crosby Grand Prize winner was Wendy Venable of Boulevard, CA, who competed in the Most Patriotic category, and was awarded a one-night stay at the Fairmont Grand Del Mar and dinner for two at Addison Restaurant. Special events continued on the opening Saturday, November 12, with a post-race concert featuring star Ben Harper with his group The Innocent Criminals. On Sunday, November 13, the first of four “Free & Fun Sundays” offered free admission, free seats, free programs and discounted drinks. The track’s three-day attendance tally was up by 6.9 percent, increasing from 22,170 to 23,709. The daily average rose from 7,390 to 7,903. After the three-day opening, Del Mar will have four-day weeks – Thursday through Sunday – until the end of the season. First post daily will be at 12:30 p.m. on all days with the exception of Thanksgiving Day (Thursday, November 24) when racing begins at 11 a.m. and ends at 2:30 p.m. in time for fans to make it home for a turkey dinner. Highlighting the 15 days of thoroughbred sport are 14 stakes races, starting with Opening Day’s Kathryn Crosby Stakes for fillies and mares; a pair of Grade I features – the Hollywood Derby (Saturday, December 3) and the Matriarch Stakes (Sunday, December 4); and Page 2

eight other graded races. Other extras are a reggae fest led by Iration (Saturday, November 19), College Day at the Races (Saturday, November 19), a craft beer and cider festival along with a food truck roundup (Saturday, November 26) and a deluxe fleece blanket free giveaway (Saturday, December 3), a “Taste of the Turf Club” feed every Sunday, “Daybreak at Del Mar” breakfasts Saturday mornings (8 to 10 am), free Thursday admissions for all seniors and a family fun run and a puppy adoption event on Thanksgiving morning in partnership with the Helen Woodward Animal Center. According to Del Mar Thoroughbred Club’s president and general manager, Joe Harper, “The fall racing season at Del Mar has taken up its own special spot now on the Southern California racing calendar. It’s a low-key happening for real racing fans, and it is growing warmer and friendlier as we go along. Del Mar in the summer is great; Del Mar in the fall just feels good all over.” Del Mar Thoroughbred Club opened in 1937 with owner Bing Crosby there to greet the first fan. Its spectacular views, balmy climate and warm ambiance have made it a destination for celebrities, horse aficionados and others seeking elegant entertainment. Talking turkey: It ’s platter season What’s your idea of the perfect Thanksgiving meal? A big family buffet, or perhaps an intimate evening with a few close friends? Thanksgiving brings us together from near and far for all sorts of fun-filled traditions that are uniquely our own. And while those traditions may vary somewhat as families grow and our lives change over time, there’s one constant at the heart of Thanksgiving entertaining the beloved turkey platter. “Turkey platters really are the Christmas tree of Thanksgiving,” says Keith Winkler, product marketing manager at dinnerware giant Replacements, Ltd. “When you talk about Thanksgiving, I think most Americans picture that iconic Norman Rockwell painting with the mother serving the perfect turkey on a huge platter. Even though that image has been reinterpreted in so many ways as times have changed, the platter has always remained the centerpiece of the gathering, even for those who by-pass the bird to serve another main course for their Thanksgiving meal.” Winkler notes there’s also a strong sentimental attachment to this seasonal favorite. Turkey platters often become heirloom pieces, handed down in many families,

making the platter even more special. Turkey dinnerware history 101 The history behind Turkey patterns and ultimately the iconic platter is literally as old as the holiday itself. When Abraham Lincoln proclaimed Thanksgiving official back in 1863, English potters seized the opportunity to target the growing American market by producing turkey-themed dinner plates and platters. These ingenious designers generally took an existing design and replaced the center with a turkey motif to create those first Thanksgiving patterns. Manufacturers such as Spode, Mason’s and Wood & Sons used their colorful transferware patterns to start a new holiday tradition, which became an instant hit. In fact, Replacements’ most popular Thanksgiving pattern, His Majesty by Johnson Brothers, started as an accent plate in the company’s Friendly Village pattern. The English manufacturer received so much demand for this particular motif that the company turned the proud Tom Turkey-adorned plate into its own pattern. The great platter hunt Designers say you don’t have to buy entire set of turkey-themed dinnerware to find the perfect platter.

Replacements’ Julie Robbins notes you can find platters that blend well with any pattern, from the very old to the very new. “Turkey platters aren’t necessarily bird-themed; you’ll find them in designs ranging from florals to even scenic vistas,” Robbins says. “Think who is going to be at your table, what you’re serving and find a platter that speaks to you. If you’re serving turkey, it doesn’t matter whether you’re carving your bird in the kitchen or on the table, just make sure it’s large enough to accommodate your guests. So many people make the mistake of trying to put a large turkey on a 12-inch platter and quite frankly, that is just too small and it’s not going to work. This is a special piece, not an everyday platter.” Robbins adds she’s seen people do wonderful things with a small turkey, such as placing vegetables around the bird to fill out the larger platter and complete the look. Turkey platters aren’t only fun, many are also functional. Lenox and several other manufacturers produce turkeyshaped platters and other autumn themed serving pieces in alternative metal serveware. This is a special alloy that when heated or chilled maintains temperature to keep foods

warm or cold. Gobble up this season’s table top trends Many dinnerware companies are producing Thanksgiving or turkeythemed accent plates and platters to mix and match with everyday dinnerware in colors and motifs to fit all tastes and lifestyles, from the very traditional to a more modern aesthetic. And if Tom Turkey isn’t the right design element for your table, Robbins says you can still create a seasonal feel, minus the bird. “You can use fall leaf or even woodland patterns to create a classic Thanksgiving table without going with a turkey motif. 2016 Tesoro High School Freshman Football Team Undefeated League Champions

Entire Team and Coaching Staff of Tesoro Titans Freshman Football By Elizabeth Bastian Photo by Cindy Williams 2016 was a sensational season for the freshmen football team at Tesoro High School. These young and promising Titans finished their season 10 – 0 making them the undefeated South Coast League Champions. Much of this success is attributed to Head Coach, Roger Takahashi, affectionately known as Coach T, and the rest of the dedicated freshmen staff comprised of Defensive Coordinator, Mike Alvino, Defensive Line Coach, Larry Fettis, Receivers Coach, JJ Hair, Cornerback Coach, Jacob Griffin, Running Backs Coach, Jon Rivera, Offensive Line Coach Pat Gleason and Defensive & Offensive Line Coach, Nick Zamites. The Titans opened the season playing other high schools from Orange and Riverside Counties before facing league opponents Mission Viejo, San Clemente, San Juan Hills and Trabuco Hills. At the close of the season, the Titans outscored their opponents 413 to 117. This team had many standout Page 8

players, but the level of success would not have been possible without the entire team. When asked to reflect upon the past few months, Coach T thoughtfully stated, “No doubt, this season will always stand out as something special in my coaching career.” It is certain that this season will always stand out to these young players as well. Tesoro High School is located in Las Flores, California. Established in the fall of 2001, Tesoro is 1 of 6 regular high schools in the Capistrano Unified School District. As of the 2014-2015 year, Tesoro serves nearly 2500 students in grades 9-12. Students attending Tesoro live within the cities of Rancho Santa Margarita, Las Flores, Ladera Ranch, Coto de Caza and Mission Viejo. Tesoro is a School. In 2013, Newsweek’s “America’s Top Public High Schools” feature ranked Tesoro as number 337 out of the 1,300 top high schools nationwide. This makes it, as of 2013, the highest ranked in the school district. In 2008, Tesoro was the second highest in the district, while in 2007 it was ranked

third. In 2015, Tesoro Performing Arts Department (orchestra, band, and choir) was one of the top competitions in winning a Grammy Now, they are known to be a Grammy Signatures School. In April 2016, Tesoro Orchestra and Tesoro Band went to New York City to perform in the world-famous Carnegie Hall. The Tesoro High School Varsity football team beat Western High School in 2004 to capture their first division title. In 2005, the Titans became Back-To-Back Division IX CIF Champions after beating Northwood High School for the second time that season. Tesoro was moved into the more competitive South Coast League for sports in the 2006 school year. Although the 2004 and 2005 football teams had beaten several teams from upper division schools, including Dana Hills , Foothill, Kennedy, and Laguna Hills, and the ‘04 and ‘05 teams were ranked among the top 10 high school football teams in Orange County, the team placed last in the league in 2006, after losing key players including Aaron Wilcox, Donald Miller, Josh

Williams, Sean Calcagnie, Todd Sciacqua, Jason Johnson, Trevor Lozon, Sam Smith, Garrett Beck and Josh Mitchell from the CIF Championship teams. However, in its second season in Division I the Titan football team captured the South Coast League Championship, going undefeated in league play in 2007, and defeating both Mission Viejo and San Clemente. Today, the Varsity football head coach is Matt Poston. At the end of the last game, Head Varsity Coach Matt Poston surprised the players with team t-shirts to celebrate this accomplishment and acknowledged the hard work and dedication of each of the players on the team. Coach Poston also individually recognized several players for outstanding play during the entire season and invited them to dress out for Varsity’s post season. These players are: Andrew Bois D’Enghien, Ethan Contreras, Malakai Edwards, Cooper Gallaway, Jackson Groves, Ethan Hurst, Caeden King, Sean Lindgren, Kyle Schaefers, Justin Schafer, Logan Sturm, Justin Williams and Zach Wran.

Santa Margarita Claims First Playoff Victory Since 2012

Santa Margarita played sound offense and tenacious defense, managing 218 passing yards and 181 rushing yards. Offensively, running back Chad Magyar has steamrolled his way through the last three weeks of the season, rushing for a combined 486 yards and six touchdowns (96 vs. Orange Lutheran, 1 TD; 264 vs. Servite, 2 TD’s; and 126 vs. Serra, 3 TD’s). Mr. All-Purpose, Malone Mataele, is not only a lockdown corner, return specialist, but has made cameos at running back as well and has been effective. Against Orange Lutheran and Servite, Mataele had two touchdowns each and had one against Serra as well. Senior quarterback Richard Wagner was again efficient, completing 10 of 13 (77%) for 195 yards and one touchdown and one interception. Sophomore Munir McClain had two catches for 94 yards, including a long of 82. Magyar got in on the receiving game as well, catching four passes

for 61 yards. Middle linebacker Caden Fitch played like a man possessed, finishing his night with a career high 17 tackles, a performance that earned him OC Varsity Defensive Player of the Week honors. Senior Jadon DiGravio played arguably the best game of his career which came with 12 tackles and a huge fourth down pass break-up. Santa Margarita now move on to the second round of the Division 1 playoffs where they will play the Braves of St. John Bosco for the second time this season. In a tale of Junior running back Chad Magyar had three touchdowns against two halves, last time these two teams Serra in the first round of the playoffs faced each other, Santa Margarita trailed by a score of 13-3 at halftime, before falling to the Braves 47-10. Tonight’s game will be contested at Saddleback College with Santa Margarita being the designated home team. Kickoff for the game is set for 7:00pm and will be streaming live on the NFHS Network. Judging from the number of decorating crews working in the local area neighborhoods, it appears that the holiday season is fast coming upon us. In times past, many homeowners would bring out their own ladders , go to the store and purchase their own lighting to hang on their homes. However, in recent times, many homeowners opt to hire a crew of professionals who are well-equipped to race up and down scaffolding and ladders to hang the decorating lights, arrange the electronics and timers to make the holidays much happier. these professionals make this task much simpler and exceptionally quicker. Developers Win Battle with County Supervisors

Hill proved this week that the bulldozer is mightier than the protests of local residents and the demands of the Orange County Supervisor’s office to delay the destruction of the Coto de Caza Equestrian Center’s historic Lower Barn, which is now totally demolished. According to Robert O. Hill, Oak Grove Developer; “Chairwoman (Lisa) Bartlett asked Silver-Bronze Board to delay the removal of the lower barn at Coto Equestrian Center until a meeting at the 5th District Office On November 9th Robert O Hill met with the County Planning Director and (Supervisor’s Office staff member) Victor Cao to discuss the Coto Equestrian Center Improvement Agreement, a draft of which had been approved by the Silver-Bronze Board. At the November 9th meeting Victor Cao asked that the removal of

the lower barn be delayed until after the Board of Supervisors approval of the Improvement Agreement next year. Mr. O Hill responded that a delay of months in removal of the partially removed lower barn was a non-starter for Silver Bronze Board and the tenant at Coto Equestrian Center for all the reasons previously explained and because it would result in a default on a note owed to OC Polo. Josh Bernier a representative for Silver-Bronze said “Construction of the new Plaza Barn would occur if the County approves the downzoning of the adjacent Oak Grove property to Low Density Residential or possibly, if Oak Grove is sold as Community Center Commercial.” Victor Cao, Orange County Board of Supervisors said that: 1. “Oak Grove and Silver-Bronze will be facilitating a Lot Line Adjustment which is a ministerial approval. The County cannot obstruct this process. This is not only moving the lines, but a transfer of land and

It appears the developer is moving forward with processing their applications and to have consideration at a public hearing. 3. There is still an option for County staff to consider an Improvement Agreement related to SilverBronze. It’s two-party and would be a mechanism to actually program the funds for Equestrian improvements given the current realities of the situation. This is not an endorsement of the projects; it’s only a processing tool 4. This agreement (which apparently has not yet been signed by Oak Grove and Silver-Bronze) will facilitate the Preservation Easement and allow the County to enforce its rights. 5. T h e a g r e e m e n t w o u l d accompany an application for a site development permit for the Equestrian Center improvement proposal, which I believe may be submitted 6. The Board of Supervisors assume

the developer will complete their project application with the Lot Line Adjustment, so it can be considered for public hearing. It would go to CPAC, Planning Commission, and the Board of Supervisors. (At that time this would be) an opportunity for the community to weigh in. I’m not sure how the project will fair at the lower bodies, but processing is the applicant’s prerogative. If you have technical questions related to a site development permit, it’s best that you reach out to OC Public Works. Coto de Caza Planning Advisory Committee. The Orange County Board of Supervisors has appointed new members of the Coto de Caza Planning Advisory Committee. The committee’s first meeting will be on December 7 at 6:00 PM. ANNUAL HOLIDAY FAVORITE, CO T O GENERAL S T ORE “NUTCRACKER FOR KIDS” DEVELOPMENT PROGRESS REPORT It’s the most wonderful time of the year! Pacific Symphony and dancers from Festival Ballet Theatre (FBT) soon fill the stage with the beauty and wonder of the holiday season for “Nutcracker for Kids,” a condensed version of one of Tchaikovsky’s most famous ballets. Mesmerizing audiences year after year with the sweet melodies, captivating dancers and brilliant imagination of this treasured tale, the Symphony’s annual event is always an audience favorite. The orchestra, led by Assistant Conductor Roger Kalia, along with lovely young dancers and Mrs. Claus as narrator (played by Bree Burgess Rosen), bring the beloved story of Clara and her brave prince to life! Tchaikovsky’s melodies soar throughout the epic battle with the Mouse King, the Land of Sweets, Waltz of the Flowers and the captivating Dance of the Sugar Plum Fairy. To spread even more holiday cheer, this Family Musical Mornings concert, includes a holiday sing-along and an appearance by the jolly old red-suited fellow himself, Santa Claus! This 45-minute concert is especially suited for children ages 5-11, but enjoyed by parents, grandparents and everyone else. It takes place Saturday, Dec. 3 at 10 a.m. and 11:30 a.m., in the Renée and Henry Segerstrom Concert Hall. Typically, the orchestra is in a pit, but for this production the wonderful Pacific Symphony will be center stage. And the stage will be decorated to really capture the holiday spirit. We will also perform holiday favorites where we encourage the audience to sing along with us. Selections will include the ‘Dreidel Song,’ ‘Jingle Bells,’ and ‘We Wish You a Merry Christmas.’” Even more merriment waits at the Musical Carnival, where carolers and the Northwood High School Tuba Ensembles join in the fun, beginning at 9 a.m. (for the 10 a.m. concert) and 12:15 p.m. (for the 11:30 a.m. concert). Children and families are invited to participate in a special holiday craft, meet ballerinas from FBT and browse the ballet museum. musicians about their instruments. Tchaikovsky’s famous ballet was adapted from E.T.A. Hoffmann’s story “The Nutcracker and the Mouse King” and over time has come to be an annual holiday tradition throughout America. The timeless tale, written in 1816, centers around a young girl named Clara. Her Uncle and Godfather, a toymaker, arrives at her family’s Christmas Eve party and gives her a special doll, the Nutcracker, which makes all the other children jealous. As the story develops, Clara finds herself in an uncharted world where toy soldiers and their brave leader, the Nutcracker, battle the despicable Mouse King and his army of followers. This classic battle has children on the edge of their seats as Tchaikovsky’s memorable music, performed live, fills the air with wonder. Then, dancers twirl and glide across the stage to the renowned “Waltz of the Flowers” and the enchanting “Dance of the Sugar Plum Fairy.” A highlight of the performance takes place when the characters visit the Land of Sweets and are spellbound by dances of Spain (Chocolate), Russia (Candy Canes), China (Tea), as well as the Dance of the Reed Flutes. There, Clara and the prince are greeted by the beautiful Sugar Plum Fairy and are led into a romantic “pas de deux,” dance for two, to conclude the grand festivities. Spoiler alert! In the end, good trumps evil as the Nutcracker amazes Clara by transforming into a prince and saving her from the grasps of the Mouse King! Through the grace and elegance of dance, children are transported into a world of movement and art as they watch the skill and poise of professional ballet dancers. Under the direction of Salwa Rizkalla since its founding in 1988, FBT has become one of Southern California’s most vibrant and accomplished professional ballet companies. FBT is dedicated to presenting works that epitomize the artistry of professional-quality ballet, offering cultural awareness of dance through educational programs, and nurturing a creative environment for some of the county’s most talented dancers. FBT’s significant work has been recognized with a 2001 Arts Orange County Award for Outstanding Arts Organization of the Year.

COTO DE CAZA GENERAL STORE PROGRESS REPORT Larry and Carol, developers of the Coto de Caza General Store are still working diligently through the county approval process. We appreciate the interest and support of the Coto de Caza Community. There have been several obstacles to overcome with the county and we wish to thank Supervisor Lisa Bartlett and Victor Cao for aiding in the process together with our project manager John Cox with procedural advice from Dr. Stacey Lundin, Kevin Canning, County Planner and other supportive professionals within the community of Coto de Caza. All of the proposed businesses ( A Boutique, Mailbox Store, Realtor Coffee House, a Dry Cleaner, that will be in the Coto de Caza General Store including Ron Castruita and Steve Dalby, owners of Hansen’s Natural Foods, Health Food and Grocery Store, Restaurant and Wine Bar and Compounding Pharmacy who have happily made adjustments

to their site as the anchor tenant due to county development requirements. According to our architect Todd Voelker, we now have to wait for the last approval from the county to come in by November 30,2016 (19 Months past our original goal) We are also in the process of obtaining the bids for the construction and final funding. It would be very helpful if we could get a final traffic impact fee waived prior to the payment of the permit (the fee is for freeway impact a non-issue) If the Coto de Caza residents were to provide their help on this issue, it would be helpful. Slow Cooker Mashed Sweet Potatoes with Marshmallows Prep time: 15 minutes Cook time: 4 hours, 10 minutes Servings: 8 5 pounds sweet potatoes, peeled and cut into cubes 1/2 cup Kitchen Basics Original Chicken Stock 1/4 cup firmly packed brown sugar 4 tablespoons butter, cut into chunks 2 teaspoons McCormick Ground Cinnamon 1 teaspoon salt 1/2 teaspoon McCormick Ground Nutmeg 2 cups miniature marshmallows Spray inside of 6-quart slow cooker with non-stick cooking spray. Add sweet potatoes, stock and brown sugar. Cover. Cook 4 hours on high or until potatoes are tender, stirring after each hour. Stir in butter, cinnamon, salt and nutmeg. Cover. Let stand 5 minutes. Beat potatoes with electric mixer on medium-high speed until smooth. Top with marshmallows. Cover. Cook 10 minutes on high or until marshmallows are slightly melted. In food processor, add graham crackers and pulse until crackers resemble fine crumbs. Add crumbs to bowl along with chopped almonds, sugar and butter; stir to combine. Press into bottom and up sides of 9-inch deep-dish pie plate. Bake 5 minutes. Remove from oven and cool completely. To make filling: Spread ice cream into cooled pie crust, smoothing out over bottom. Sprinkle with half of the chopped morsels. Heat dulce de leche in microwavesafe bowl on high for a few seconds to soften; stir. Pour over chocolate morsels, spreading evenly. Spoon whipped topping over dulce de leche, covering entire surface of pie. Sprinkle with remaining morsels and almonds. Freeze 30 minutes. Remove pie from freezer and cover with foil. Discovery Cube’s Gala Raises Over $1.1 Million for Science Education More than 350 Orange County philanthropists, business and community leaders gathered on for Discovery Cube’s ‘Wild West at the Cube’ annual gala, which commemorated the Cube’s growth throughout the year and raised $1,151,425 for science education. The celebratory event, held on-site at Discovery Cube, kicked off with a cocktail reception featuring tray passed hors d’oeuvres, opportunity drawings, a trick roper greeting guests, as well as poker and a saloon girl dance trio in keeping with the Wild West theme. The dinner began with the live auction and fund-a-need, followed by the award presentations. At the event, Discovery Cube honored the Anaheim Ducks Hockey Club and Jay Witzling, former vice president and deputy program manager of Boeing’s Delta Rocket program, with prestigious Cube Awards for their outstanding contributions to the Discovery Science Foundation and Discovery Cube. The Anaheim Ducks Hockey Club, who received Discovery Cube’s 2016 Arnold O. Beckman Award, are among the biggest supporters for the Cube and played a huge part in the creation of the “Science of Hockey” exhibit. Their shared mission to promote science, address health and wellness and provide educational opportunities to children and families throughout Southern California has been a driving force behind their continued support of the Cube annually and programmatically. “We are thrilled to be honored by Discovery Cube and help celebrate all of their successes within the last year,” said Tim Ryan, Executive Vice President/Chief Operating Officer for the Anaheim Ducks. “On behalf of the Anaheim Ducks, we are proud to be a part of the impact they have made for children in Orange County through their programs, commitment to science education, and the Science of Hockey exhibit.” The Cube’s 2016 Spirit of Discovery Award was presented to Jay Witzling, former vice president and deputy program manager of Boeing’s Delta Rocket program, who has served as a tireless advocate for the expansion of Discovery Cube in Orange County. Witzling’s expertise, inside and outside of the Cube, was invaluable to the successful expansion. He is a firm believer in the importance of STEM education and became a volunteer and special advisor for Discovery Cube in 2004. Witzling has been instrumental in helping secure funding for the Cube’s Boeing Rocket Lab and Mission Control exhibits, facilitated the acquisition of a Delta III rocket, as well as a historic Delta RS-68 rocket engine booster from Pratt & Whitney Rocketdyne, which is now housed inside the iconic Cube. “This event was a great way to honor all the accomplishments of Discovery Cube over the past year and our supporters whose endless efforts made it all possible,” said Joe Adams, CEO of the Discovery Science Foundation and President of Discovery Cube in Orange County, “This year has been nothing short of amazing and we know that Discovery Cube will continue to inspire young minds through engaging and hands-on science education.” The night concluded with live entertainment from the Kelly Rea Band with folks dancing the night away. The Discovery Science Foundation serves as the educational programdevelopment and fundraising arm for hands-on science learning centers in Orange County, Los Angeles and Newport Beach, California. Established in 1989, the Discovery Cube, presented by Taco Bell, continues to inspire and educate millions of young minds through engaging science-based programs and exhibits. In 2012, the Cube was named one of the 10 “Most Trusted Brands” in Orange County and in 2013 was awarded the National Medal of service from the Institute of Museum and Library Services at The White House. In November 2014, a second nonprofit Discovery Cube offering an exhibit and program mix unique to Los Angeles, opened in the Hansen Dam Recreational Area of the San Fernando Valley. Prep time: 10 minutes Cook time: 3 hours, 35 minutes Servings: 16 Pumpkin Cake: 1 package (2-layer size) yellow cake mix 1 can (15 ounces) pumpkin 1/4 cup (1/2 stick) butter, melted 1/4 cup milk 2 eggs 2 teaspoons McCormick Pumpkin Pie Spice 1 cup chocolate chips Caramel Sauce: 1 cup firmly packed brown sugar 1/2 cup heavy cream 1/4 cup (1/2 stick) butter 1 teaspoon McCormick Pure Vanilla Extract 1/2 teaspoon McCormick Pumpkin Pie Spice Spray inside of 6-quart slow cooker with no stick cooking spray. For the Cake, mix all ingredients in large bowl. Pour into greased slow cooker. Place towel over slow cooker and cover with lid. Cook 3 1/2 hours on low or until cake is almost set. Meanwhile, for the Caramel Sauce, cook and stir all ingredients in small saucepan on medium-high heat 5 minutes or until sauce is smooth. Carefully remove slow cooker insert and place on wire rack. Pour 1/2 of the Caramel Sauce over the cake. Let stand 10 to 15 minutes to cool slightly. Serve cake with remaining sauce and ice cream or whipped cream, if desired. Substitution: Use 1 cup chopped candy bars in place of the chocolate chips.
