Five tips to avoid holiday weight gain Who doesn’t love the smell of a warm kitchen during the holidays? They’re designed around food and bringing family, old friends and new friends together. However, holidays can also be a detriment to your healthy lifestyle and cause you to lose your focus through the end of the year. -But they don’t have to. “Think of fall as the perfect time to reassess the state of your health and prep for the challenges of the holiday season,” says Alicia Rodriguez, corporate registered dietician at Life Time - The Health Way of Life Company. “When it comes to nutrition and avoiding weight gain, my motto is, keep it simple and easy.” Here are some tips to help you do the same. Bulk up your plate with protein and vegetables The side dishes at most holiday meals are often as good as the turkey or ham, but stuffing and mashed potatoes aren’t the best way to fill your plate. One way to avoid-weight gain is to build your plate with protein. This should be easy since holiday dinners revolve around meat. Second, fill your plate with side dishes that include vegetables. You may have a little spot left on your plate - use this space for your “indulgence.” When you look at your plate, the goal is that the majority is still providing you with good nutrients and reduced carbohydrates. Use the “fork” trick Many of us go back for seconds, and even third helpings at holiday meals. This year, focus on asking yourself if you’re enjoying your food. To help you answer this question, use the fork trick. Once you take a bite of food, place your fork down on the

plate and let it go. Chew your food, swallow and then pick it up again. The key to this trick is letting go of the fork. This will remind you to slow down, enjoy your food and converse with friends and family. Avoid the clean plate club Growing up, many of us were always told “You can’t leave the table until you finish everything on your plate” and inevitably, we spent many nights sitting alone at the dinner table. These days, Rodriguez advises her clients to eat until they are full and, if their plate is not clean, it’s OK. Focus on one plate of food, slow down and be careful not to overeat. Overfeeding is never really a healthy thing to do. Share your dessert with a loved one After a satisfying meal, it is hard to avoid the sweet smells of pumpkin -or warm apple pie. If you choose not to skip dessert, share a small slice

with a loved one or new friend. If you are hosting, designate one family member to bring dessert to limit the endless selection of pies and reduce the urge to over indulge. Make like a turkey and trot out the door Start your holiday with a new tradition this year and gather the family to do something active. Take a walk to a local park, put together a family friendly flag football game, rake the leaves up in the yard (and jump into them) or encourage the family to sign up for a run/walk event such as the Life Time Turkey Day 5K or Commitment Day 2014. Holidays are a time to be thankful for family, friends and everything in between. Savor the moment, really take time to taste your food, get out and have some fun, and avoid theholiday weight gain.

Santa Margarita High School Model United Nation Students Find Continued Success across the Globe Santa Margarita Catholic High School Model United Nation students recently returned from conferences in London and Panama City. At the London conference, Santa Margarita was recognized as a Distinguished Delegation, the highest honor of the conference. Fifteen students from Santa Margarita recently returned from the 34th annual Royal Russell Model United Nations Conference held in East Croydon, United Kingdom, and eleven students returned from the 23rd annual “PANAMUN” Model United Nations conference hosted by the International School of Panama. The students who attended the Royal Russell conference were Justin Wittekind, Alexander Qu, Parnia Abishamchian, Cecilia Nepple, Dessi Gomez, Alyssa Yoder, Carolyn Nilsen, Quinn Webster, Ethan Ko, Ryan Ramos, Sarvien Keighobad, Isabella Murdy, Madeline McFadden, Dev Patel, and Mary Retoske. The students who attended the PANAMUN conference were Dakota Brady, Kayla Prager, Spencer Firestone, Mackenzie Nienhuis, Daniela Leon, Riley Campbell, Alex Estrada, Mackenzie Weil, Morgan Delaney, Amy Mohajer and Kristi Fecarotta. Santa Margarita Catholic High School Student Athletes Make it Official 12 Athletes Commit on NCAA Signing Day 12 athletes from Santa Margarita Catholic High School made their futures evident on Wednesday, Nov. 11, as they officially signed letters of intent or celebrated their commitment to attend colleges across the country for their sport. Nov. 11 marks the first day that high school seniors could sign scholarship papers for the following sports: baseball, basketball, golf, lacrosse, softball, swimming, tennis, volleyball, water polo (girls only), track & field and wrestling. The letter of intent is a binding agreement between the student-athlete and a college, by which the student-athlete agrees to attend the college for one academic year. The following studentathletes signed as part of the NCAA National Letter of Intent Signing Day: Jane Horner of Mission Viejo is signing with the University of Virginia for volleyball. Horner is a three-year varsity starter for the Eagles as a libero and defensive specialist. Jane earned Second Team All-Trinity league as a junior, helping the Eagles to a share of the Trinity League title. She is a four-year scholar-athlete, member of Peer Ministry, the RedCross Club, and Stand Up to Cancer Club. Horner currently serves as an Athletic Commissioner for ASB, she is an active member in National Charity League and maintains a 3.97 GPA. Katherine Holmes-Stall of Trabuco Canyon is signing with Wagner College for softball. As a junior, Kat received Trinity League honorable mention as an outfielder for the Eagles. In addition to softball, Holmes has also been a member of the girls’ cross country team. Outside of athletics, Kat has been a Student-Ambassador for three years, participated in Model United Nations, and has helped with the Special Olympics her sophomore and junior years. Devan Sperry of Dove Canyon is signing with the Utah State University for Softball. Sperry is a four-year varsity starter and one of the current captains for the Eagles softball team. Devan earned All-Trinity League Honorable mention her freshman and sophomore years and made second team All-Trinity League her junior year. Jennifer Cone of Trabuco Canyon is signing with George Washington University for softball where she will join her sister, Jayme. Jenna is a four-year varsity starter for the Eagles and was voted Top Fifteen Freshmen in Orange County in 2013 by The OC Register. She has earned All-Trinity League Honors for the last three years and 2014, she led the team in runs (21), homeruns at (13), walks (11), and RBI’s (27). After missing much of last year due to concurrent surgeries on both feet, she is looking to bounce back with a big senor year. Outside of softball, Jenna volunteers with the Special Olympics, she is a member of the California Scholastic Foundation, has been a Student Ambassador for two years and is a Peer Minister. Taylor Donohue of Coto de Caza is signing with the University of Hawaii for Basketball. Taylor helped the Lady Eagles get to two CIF championships, winning a CIF title in 2014 and finishing second in the state tournament that same year. Her freshman and sophomore years, Taylor received the most improved player award, as a junior she was named to All-Tournament team for the Costa Mesa Holiday Tournament, Fairmont Prep Tournament, as well as the Carlsbad Tournament in which she averaged 12 points and 5 rebounds per game. In addition to basketball, she enjoys art and has displayed two pieces in the Laguna Beach Pageant of the Masters and is actively involved with serving the Special Olympics. Kristina Breisacher of Rancho Santa Margarita is signing with UC Davis for Tennis. Kristina has been the Trinity League runner-up the past two seasons for the Eagles and has again qualified for CIF Individuals to be contested later this month. She has been ranked amongst the Top 20 tennis players in Southern California and has won several USTA tournaments. Off the court, Kristina is a student ambassador, a member of peer ministry, a volunteer at the “Someone Cares Soup Kitchen,” all while maintaining a 4.0 GPA. Eric Rubak of Foothill Ranch is signing with Bellarmine University for Lacrosse. Eric is a four-year varsity athlete for the Eagles and is a threeyear varsity starter. As a sophomore, Eric earned 2nd team All-Trinity league honors and as a junior, he earned team captain, 1st team AllCounty, 1st team All-Trinity league, and was named the Trinity League Defender of the Year. Maureen McShane of Coto de Caza is signing with Lafayette College for swimming. Maureen will

graduate from Santa Margarita as one of the best distance swimmers in school history. She has qualified for the CIF Southern Section Division 1 championships in the 500 freestyle twice in her swimming career. Her best time in the 500 freestyle of a 5:06.97 ranks her as the #15 500 freestyler in school history. She is the #14 ranked swimmer in the 200 freestyle and won a CIF Relay Championship title as a member of the 4x100 freestyle team at the 2015 CIF Relay Championships. She has also been a member of the back-toback CIF Southern Section Division 1 team championships. Maureen was selected by her teammates as one of the varsity team captains this year and maintains a 4.09 GPA. Emily Boggess of Coto de Caza is signing with UC Santa Barbara for swimming. Emily has qualified for CIF five times in her first three years on the varsity and ranks as the #3 500 freestyler in Santa Margarita history. Her best time in the event places her as one of the top 75 distance swimmers in America. Emily ranks #5 in the 200 freestyle, #9 in the 200 Individual Medley, and #2 alltime in the 100 breaststroke. Emily has been a member of the past two CIF Southern Section Division 1 Championship teams, with the 2015 team finishing as the #4 ranked team in the nation according to Swimming World magazine’s national high school championships. In the classroom, Emily maintains a 4.14 GPA. *Not in attendance due to their participation in the 2015-16 Arena Pro Swim Series in Minnesota: *Marc Morizono of Mission Viejo will be attending Cornell University

for swimming. Marc is one of the most decorated swimmers in school history and is ranked as one of the top 50 high school swimmers in the United States. Marc currently owns the Trinity League record in the 200 freestyle (1:40.55) and the 100 freestyle (46.32). Marc is a part of two school records as a member of the 4x50 medley relay and the 4x100 freestyle relay. He is a two-time high school All-American racing to national top 50 times in the 200 freestyle and the 500 freestyle. Marc ranks as the #2 swimmer in Santa Margarita history in the 500 freestyle, #3 in the 200 freestyle, and #3 in the 100 freestyle. Marc has also qualified for U.S. Swimming’s National Championships and maintains a 4.33 GPA. *Grant Shoults of Laguna Hills will be signing with Stanford University for swimming. Shoults is the current school record holder in the 200 freestyle, 500 freestyle, 200 Individual Medley, and 100 backstroke. Grant’s time in the 200 freestyle of 1:34.54 broke the National Independent High School Record last spring and his time in the 500 freestyle (4:15.56) was the fastest high school time in the nation in that event in 2015. Shoults has qualified for the 2016 U.S. Olympic Trials in 4 individual events and recently won the 400 meter freestyle at the 2015 Junior World Championships in Singapore this past summer. His 4x200 meter freestyle relay team also set a Junior World Record at the Junior World Championships. Grant is a 10-time high school All-American and was named the Trinity League Swimmer of the Year in 2014 and 2015 and maintains a 4.05 GPA.

Human Options’ Fall Fundraiser Nets over $190,000 during October Domestic Violence Awareness Month Photos by: Ann Chatillon Human Options brings the community together each October during National Domestic Violence Awareness Month for their popular Fall Fundraiser that supports the nonprofit’s life-changing programs that help abused women and children escape domestic violence and rebuild their lives. Held at The Westin South Coast Plaza Hotel, an enthusiastic crowd of 425 enjoyed an afternoon luncheon helping Human Options reach net proceeds of $190,490. Best-selling author and co-founder of the Girls Leadership Institute Rachel Simmons gave a dynamic and entertaining keynote address about why girls struggle with the pressure to please others and how they can develop assertive communication skills and social-emotional intelligence. Simmons is the author of the New York Times bestsellers Odd Girl Out: The Hidden Culture of Aggression in Girls and The Curse of the Good Girl: Raising Authentic Girls with Courage and Confidence. As co-founder of the national nonprofit Girls Leadership Institute, she helps develop emotional intelligence, communication skills and confidence among today’s girls and young women. Simmons has appeared on Oprah and the Today Show and Odd Girl Out was adapted into an acclaimed Lifetime television movie. Attendees were welcomed by co-chairs Lisa Wood, CEO of Casa Teresa, and Karen Rager-Takeda, President/CEO of Rager Resources. And after the keynote address, several individuals briefly shared their personal stories of domestic violence ending with Rager-Takeda’s account of leaving an abusive marriage and finding refuge and the tools to regain her life at a domestic violence shelter. This was the last Fall Fundraiser for Human Options’ founding CEO Vivian Clecak who will retire in early 2016. Vivian spoke about how Human Options began thirty-four years ago and that she was lucky to find ‘right work’ in her life. She also acknowledged Human Options will be in great hands with strong internal leadership team and a dynamic Board of Directors. A donation campaign raised $63,500 and major event underwriters included title sponsor, The Jaffe Family and presenting sponsors, Nancy W. Dahan and Elaine Weinberg. Other major sponsors included Yvonne and Damien Jordan and Barbara Roberts. An opportunity drawing featured dinner for four at award-winning Chef Franco Barone’s Il Barone Ristorante in Newport Beach accompanied by two vintage bottled of aged Italian wines and an Orange theory Fitness package. The mission of Human Options is to provide safe haven and life changing programs to help abused women, their children and families rebuild their lives, while working with the community to break the cycle of domestic violence. Now in its 34th year, Human Options provides a full continuum of services to stop the violence – from a 24-hour hotline, emergency and transitional living programs, education and prevention presentations and trainings in the community, and low/no cost services including counseling, legal advocacy, children’s therapies, and empowerment classes, offered in six cities in the county. Over 20,000 clients are served annually and independent academic research consistently verifies that 90% of their residential clients continue to be violence free one year or more after graduating from the program. Light Up Your Holidays Whether you are the first one on your block to hang lights or the lastminute decorator hurrying to decorate your tree, nothing is more frustrating than having a section of lights fail to illuminate. Spirits can be dampened when you’ve gathered the family to decorate the tree or house and come to find that some of your light sets don’t work. Tips to keep your holidays bright and stress levels low when it comes to holiday lighting: • Measure: To estimate the number of lights needed for your tree, plan an average of 100 lights for every foot of tree height. Serious decorators often double that. • LED vs. Incandescent: LEDs are more expensive than incandescent lights, but last longer. Likewise, more sets of LED lights can be strung together end-to-end than traditional incandescent light sets. When it comes to energy use, a tree with 1,000 incandescent lights can cost $10 over an average holiday season while the same tree using LED lights costs around $1.50. • Inspect: Before stringing lights, check for broken bulbs and sockets, frayed cords, burned out lights and loose connections. For sets with bulb

outages, use the LightKeeper Pro for incandescent lights or the LED Keeper for LED lights to find and fix the problem. Squeeze the trigger a few times and most light sets will illuminate in seconds. • Connect: When using incandescent lights, connect no more than three strands of mini string sets together. LED light sets can handle connecting more than 30 strands together. • Indoor vs. Outdoor: Commercialgrade light sets are more reliable for outdoor use because of their durability and thicker insulation. • Live and artificial trees: When stringing lights on a tree, begin at the top of the tree and wind the strands through its center, widening with the tree’s shape. Real trees should be watered daily. When the tree is purchased, request half an inch be sawed off so the tree can take in more water. • Replace and repair lights: To get the most out of your light sets, do occasional visual checks for any bulbs that are no longer working. Owners Say County of Orange Has Approved the Project and the Appeal Period Has Ended With No Opposition

about a month. To toast pine nuts: Place nuts in dry skillet in single layer and toast over low heat for about 5 minutes, stirring as needed to prevent burning. Because pine nuts can burn easily, it is a good idea to watch until they are golden and fragrant, which means they are toasted.

Servings: 6 Prep time: 20 minutes Total time: 1 hour, 15 minutes 1 white onion, minced (reserve 2 tablespoons) 3 tablespoons extra virgin olive oil 1.4 pounds (approximately 3 cups) of leftover Honeysuckle White turkey, chopped 1/8 teaspoon salt 1/8 teaspoon coarse ground pepper 1/2 cup diced celery 1 cup diced carrot 1 clove garlic, minced 5 yellow peppers, seeded and diced 2 medium potatoes, peeled and diced 1 can (15 ounces) chicken stock 1 tablespoon salt Bread bowls (optional) 2 tablespoons grated Parmesan cheese

In skillet, saute onion in 2 tablespoons olive oil for 2–3 minutes. Add cooked turkey and 1/8 teaspoon salt and pepper to desired flavor. Set aside. Heat 1 tablespoon oil in large stockpot on low. Saute celery, carrot, garlic and reserved 2 tablespoons onion for approximately 10 minutes, or until vegetables are soft. Add yellow peppers, potatoes, stock and 1 tablespoon salt. Simmer for 15–20 minutes, until potatoes are tender. Cool for 10 minutes, then transfer back to pot to keep warm. Add turkey and onion mixture to soup. Ladle soup into bowls and garnish with grated Parmesan cheese.

1 (9-inch) pie crust, unbaked Preheat oven to 350°F. Spray large nonstick skillet with cooking spray and place over medium heat. Saute onion, pepper and garlic over medium heat until tender, about 3 minutes. Add turkey and thawed spinach (squeeze out moisture) and saute 1 minute or until all ingredients are heated through. Remove from heat. In mixing bowl, beat together eggs, milk, salt and pepper. Sprinkle cheese into bottom of pie shell. Layer turkey, vegetable and spinach mixture on top of cheese. Pour egg mixture over top. Bake approximately 50 minutes, or until center is set.

Darrell Glaser, a sixth-generation farmer from Texas, along with his mother, Jeannette, and wife, Shannon, started raising turkeys more than 20 years ago. Today, his four sons also help on the family’s farm. “We do everything we can to produce a quality product that other families would be comfortable eating during the holidays,” Glaser said. Glaser, who has raised nearly 14 million turkeys, says this starts with keeping the birds healthy and comfortable. “We take really good care to ensure the environment is just right for our turkeys. This includes keeping the floors of our barns dry and making sure the birds have plenty of fresh air and good quality water and feed,” Glaser said. Glaser says if turkeys are happy and comfortable, they are generally healthy, which reduces the need to prescribe medicine, like antibiotics. Glaser and his family are one of more than 700 independent farm families who are raising turkeys for Honeysuckle White without using growth-promoting antibiotics. “We feed America and want to provide a quality food source for our customers,” Glaser said. “With consumers more concerned about their food, if we can produce wholesome turkey without growth-promoting antibiotics, then we should.”

Whatever your motivation, your desire to bling, raise or lower your car or truck comes from wanting to stand out. Bottom line is Specialty Equipment Manufacturers Association (SEMA) show in Las Vegas has everything you ever wanted to get you noticed. The trend of old school and new school car and truck accessories was seen at every turn. Car and Driver declared this year’s show is among the best they attended in years and I totally agree. Custom Accessories for all style of vehicles were on display and the price tags for some items ranged from $10 for jeep mirrors to $20,000 for rims for your new Mercedes Benz. The most noticeable accessories that has taken over the low end and luxury market is Vehicle Warps. It’s happening to used vehicles to give a new look to the car or truck and exotic million dollars cars. The vinyl wrap manufactures are able to produce high quality photo images for wrapping any vehicle. The leather car bras of the 80’s has been replaced with the clear vinyl wraps now used to protect the front hood. Many business have been using vinyl wraps to advertise and this is not quickly spreading to the artist designer wanting to wrap their cars. The process is much easier to provide a custom color and design that would have taken hundreds of hours in the paint booth in the past.

In terms of fads, the over-fender and wide-body kits continued to dominate at SEMA 2015 in the lower import cars is still going to continue. Many had thought the wide-body trend started to fade out, but that doesn’t seem to be the case – at least not in Las Vegas at the SEMA show.
