But at 7:00 am on a chilled November morning? November 25th was no ordinary morning, though. It was the sixth annual Thanksgiving turkey giveaway sponsored by San Clemente Military Family Outreach (SCMFO) and no less than 1,000 turkeys and meal fixings were due to be handed out to military families. The heightened interest that generated a long line waiting to be served at 7 am, almost 3-1/2 hours before the event was to begin was also evidenced by the growing crowd of volunteers waiting to serve. In a surprisingly ecumenical display, volunteers and donors from Methodist, Catholic, Episcopal, Lutheran and Evangelical churches all teamed up to help SCMFO raise the funding necessary and supplied 200 bags of nonperishables for the Thanksgiving meals-- items like stuffing mix, canned vegetables, and even roasting pans. One thousand turkeys and pies, plus 800 bags of non-perishables,
were added by the Military Family Outreach. Total cost about $25,000. “We have a lot of mouths to feed,” said the first group of three families at the head of the line, disclosing that they were planning a tri-family gathering, as well as “adopting” some Marines from School of Infantry who had no families nearby. Individuals who will be at the table onThanksgiving Day are from battalions 1/1 and 1/4, Horno, Area 52 clinic and the afore-mentioned SOI. Others like Luis and Neraida Jiminez were less expansive with their holiday planning, but no less grateful for this charitable help. “It really helps a lot,” said Luis, an E-4 in the Navy, who will celebrate with their 18-month-old son Armando Joseph and some visiting relatives. Thankfulness was evident throughout the 3-hour distribution, with each family receiving a turkey, pie, boxed potatoes, stuffing mix, gravy mix, cranberry sauce, and canned vegetables. In these days of uncertainties, on-base cutbacks of many services, sequestration and continuing deployments, military families take
their spending very seriously. A recent estimate that about 10% of the families are below the U.S. poverty level only adds to the increased efforts by local charities to help whenever they can. These “morale events” are exactly that: occasions undertaken by the surrounding south county community to boost the morale of the families despite the crushing pressures. Following on the heels of the Thanksgiving distribution is an SCMFO early December “Thank a Family” Christmas program connecting local donors with needy Marine families. Christine Gonzalez, an SCMFO board member who is also a Marine wife living in San Onofre housing, knows both sides. “The Outreach is very focused on serving the military family community as long as a need exists.” she said. “My husband’s response to anyone who asks what they can do for him while he’s deployed, is ‘ take care of my family.’ SCMFO does that, and will continue to do that.” Throughout the event, the spirit of volunteerism appeared to be exceedingly alive and well. San
Clemente Military Family Outreach plans and hosts the event and bears the large financial burden, but there is also a mingling of volunteers, Marines, family members, Boy Scouts, Cub Scouts and Girl Scouts involved. In the past, even a contingent from the California Highway Patrol reported for duty. That spirit of charitable volunteerism was instilled in the SCMFO charity by its founders, Lt. Col. Bill McReynolds and his wife Sidonia, who launched the organization in 2002 as Friends of San Onofre Marines (FOSOM.) When they retired, the nonprofit was granted office space by St. Andrew’s By the Sea United Methodist Church and renamed San Clemente Military Family Outreach. In the ensuing years, SCMFO has served as a financial safety net for north Camp Pendleton families during emergencies, and provided thousands of dollars annually for food, formula, diapers, clothing, school supplies, gas cards and car repair for those in need. November 30 is Small Business Saturday, and is a great way to support your local small businesses. Small Business Saturday occurs only once a year, but perhaps shopping at local small businesses that may have been forgotten or even gone unnoticed can spur a renewal of traffic to those businesses all year long. Small Business Saturday was started by American Express According to the Facebook page, American Express began Small Business Saturday on November 27, 2010. More than 200 companies have joined the small business unit of American Express, OPEN, in declaring the special day after Black Friday as Small Business Saturday. Find out who is participating in and supporting Small Business Saturday The “Shop Small” movement has a web page on the American Express website. The page makes it extremely easy to find local participating small businesses by simply entering your location. Further down on the page, you can also find a list of larger businesses that are supporting the movement. Those large businesses know that you will always return to them for low prices and everyday items. It is worth it to them to support the movement to avoid becoming labeled the big corporations that drive the “mom and pop” shops out of business.

Coto Sisters Chase Dream to Publish Books By: Suzee Carlile-Ramirez Publishing a book about the beauty found in all of the world’s children has been a dream for several years for Suzee CarlileRamirez, of Coto de Caza, and Lynne Carlile Raspet, of Valdosta, Georgia, sisters who grew up in Fountain Valley, California. It has been a slower than expected process, balancing raising their children and operating on online business, Multicultural Kids (www. MulticulturalKids.com) which offers products that encourage learning about culture and diversity, among other things. “Beautiful Rainbow World”, an 80+ page 7”x7” colorful photography book appealing to all ages, is extremely close to completion with just a few final edits to make. The missing element is the financing to go to press. To get that piece of the puzzle in place, the two sisters decided to use the crowdfunding site Kickstarter. On Kickstarter, people have the ability to raise capital for creative projects from art installations, to music, parks, publishing, and more. With Kickstarter specifically, if the goal is not reached, there is no funding received; with other crowdfunding
sites it works differently. A campaign is created that tells the creator’s story, details about the project and creative process, and offers perks or rewards for those participating. For “Beautiful Rainbow World” specifically, those perks include copies of the book, having your child?s photo in a collage in the book, personalized artwork, and others depending upon the level of contribution. “Issues of race and diversity were always a part of our consciousness. With our own family being very multicultural (European, Asian, African, and Indigenous American) the only truth we knew was that each of us comes into this world to love and be loved. Although we believe that skin color does not matter in that truth, we find all cultures and colors to be so beautiful! We decided to create a photography book for children that will include kids from all around the globe. Our friend Daria agreed to collaborate with us and let us use the lyrics to her song ‘Beautiful Rainbow World’ for the text,” states their Kickstarter campaign. Many people are curious as to why
crowdfunding is becoming so popular. There are several reasons. One being that it takes away some of the financial risk for creators in receiving backing for their projects while still in the process of creation, or sometimes even before the project has gotten fully underway. In addition, it is giving a new opportunity for independent publishers, musicians, and other artists to realize their dreams without needing a single large financial backing source and keeping creative control of their projects at the same time. Another appeal is that the viral aspects of sites like Kickstarter, IndieGogo and others can start the conversation about the project long before it is launched. This builds an audience or following, and creates a sense of community surrounding the project. Why Shop Locally? 10 Reasons to Shop Close to Home Irresponsible financial choices let do the economic destruction of 2008. As Americans begin to slowly dig themselves out of the wreckage, there is one simple choice that can make all the difference in our economic future, and that is to shop locally. Sure, big box chains may be convenient, but here are ten compelling reasons to make a local choice with your dollar. 1. Invest in local economy. When you shop at an independent retailer you are literally investing in your neighbors. Money spent in a neighborhood shop has more impact on the local community than money spent at a big box chain. Shopping at independent retailers means investing in community development, maintaining municipal services, and creating local jobs. Also, 80% of the money spent at local retailers stays in the local community as opposed to 40% spent at chain stores. This means more money for your local services and keeps your personal taxes down. 2. Shopping locally is green. Shopping locally helps to maintain central, walkable town centers. Chain stores in strip malls are built in outlying areas, which means more driving, more traffic congestion, and more pollution. 3. Entrepreneurship and competition. The heart of the American economy has always been entrepreneurship. Shopping at independent stores helps foster the competitive and entrepreneurial spirit that has made America what it is today.
4. Job Creation. Most new jobs in a community come from local businesses, and most local businesses pay a higher wage than chains. Once a big box store is open, they don’t add any more jobs. If a local, independent business community grows and flourishes, more and more jobs can be created. 5. Create a true sense of community. Local businesses help create neighborhoods where people know one another and feel safe. People meeting in coffee shops, picking up their morning newspaper at a local newsstand, or taking Saturday afternoon shopping trips to boutiques fosters a true community feel. Neighbors greet one another; they know one another. 6. Product selection and diversity. Local businesses cater to their customers, not to
a corporate sales agenda. They stock the items you want to buy, when you want to buy them. You have a direct impact on the products and services offered in a local shop, unlike a national chain, which tells you what it is they want you purchase. Big box chains stock their shelves with national brands, lining the pockets of other conglomerates. Small, local businesses buy their goods from other small and local businesses. Small manufacturers rely on local business because they have no shot of getting their goods in the large chains. You won’t find a copy of your favorite independent journal on the shelves of a chain book store. For that, you have to shop locally. 7. Customer Service. National chains preach customer service, but they rarely deliver. Employees at big box stores are
expected to know a little about a lot of things. The employees of a small, local shop are going to have a lot of knowledge about the products they sell you. 8. Local Nonprofits Benefit. Local business owners serve on the boards of community programs and donate money to local charities. 9. Your town becomes a destination. A strong local retail district draws shoppers from other communities, bringing even more money in to your municipality. 10. Uniqueness. What is more attractive: A strip mall or a well-manicured, wellmaintained downtown local retail district? And no two local retail districts look the same. Helping to foster local, independent retailers at a local level means beautifying your town.

Eagle Freshman Represents USA at BEGINNING TO LOOK A LOT LIKE... 2013 World Trampoline Competition
Santa Margarita Catholic High School freshman Kylee Roby of Ladera Ranch competed at the 2013 World Trampoline and Tumbling Age Group Competition last weekend in Sofia, Bulgaria. Roby was one of three athletes to be selected to the national team for the Double mini-trampoline event in the 13-14 age group. Trampoline events involve athletes using trampolines that can propel them up to 30 feet in the air, during which they can perform double and triple twisting somersaults. For the double-mini competition, the athlete makes a short run, leaps onto a small two-level trampoline, performs an aerial maneuver and dismounts onto a landing mat. Trampoline was added to the Olympic Games in 2000, and at the 2012 Olympic Games in London, the USA had its first athlete in history advance to the finals. Roby finished in 16th place in the qualification round out of 28 athletes competing in the double mini-trampoline competition with the top eight athletes qualifying for the finals.

RANCHO SANTA MARGARITA CROWDS BRAVE THE STORM TO JOIN BRAD MCGIRR COUNCIL KICKOFF CAMPAIGN AT BLIND PIG Rancho residents were not deterred by the driving rainstorm that swept through Rancho Santa Margarita last Thursday evening as they turned out to help city Councilman Brad McGirr to kick off his election campaign .an enthusiastic crowd munched on magnificent appetizers and sipped some vintage wines at the Blind Pig waterfront restaurant as they get a chance to meet Rancho Santa Margarita City councilman Brad McGirr as well as a few surprise
guests including Rancho Santa Margarita Mayor Tony Beall, former Mayor Jim Thor, another former Rancho Santa Margarita Mayor Jerry Holloway. City planning commissioners April Josephson, and Michael Vaughn also stopped by to join the cheerful re-election campaign crowd whose enthusiasm was undampened by the pouring rain storm outside. Rancho Santa Margarita Mayor Tony Beall opened the gala reception with

several complimentary remarks about the performance of councilman McGirr during his current term of office. McGirr himself took the podium and recalled the past 20 years as a Rancho Santa Margarita resident and proclaimed his continued commitment to fiscal responsibility of the city which now boasts a one million dollar budget surplus . McGirr also addressed the coming development of Chiquita Ridge as one of the principle challenges of the upcoming City
Council term. He also alluded to the plans for civic beautification including major monuments along the prominent thoroughfares in Rancho Santa Margarita . Challenging the negativity of some of the other contenders for the council position, McGirr was steadfast in his determination to continue to work with the majority of the city council to maintain financial civic integrity.

MIRACLES FOR KIDS RAISES OVER $850,000 AT ANNUAL GALA
Sugar Ray Leonard and Harper Heil Miracles for Kids, a nonprofit serving children with life-threatening illnesses and their low-income families throughout Southern California, announced that its 9th annual Night of Miracles Gala held at the St. Regis Monarch Beach in Dana Point, raised over $850,000 making Miracles Are Forever its most successful gala to-date. Proceeds from the event fund the organizations programs that provide aid to hundreds of low-income families who are crumbling under the financial hardship of caring for children with life-threatening illnesses. Miracles for Kids currently operates at CHOC Childrens and Childrens Hospital of Los Angeles, and is expanding its programs to support other regional childrens hospitals within the next year. More than 660 of Southern Californias most notable philanthropists and celebrities attended the popular annual event, emceed by Neil Everett co-host the of the 11:00pm edition of SportsCenter. Themed Miracles Are Forever, the 9th annual gala immersed guests in the spectacle of the world’s favorite secret agent, James Bond. Incredible performances by iL CIRCo the critically acclaimed troupe of gravity defying acrobats entertained guests for the second year in a row, in addition to exciting live and silent auctions. Guests also enjoyed an exclusive taste of specially prepared NOLETs Silver Dry Gin cocktails, donated by Miracles for Kids event sponsor and longtime supporter Carl Nolet and NOLET Spirits U.S.A. The success of this years gala is due to the incredible time and energy Javier Sosa, Carl Nolet and David Heil put forth by our board members, staff and volunteers,said Miracles for Kids Board Chairman, Kenneth Gerdau. It is an honor to serve as the Chairman of the Board of such an incredible organization, and to work with such kind and giving people dedicated to helping others. The most impactful moment of the evening arrived just after the most somber. Directly following an incredibly moving patient profile video on Michael Mikey Reyes diagnosed with brain stem glioma at age 6, an aggressive and cancerous tumor inside of the brain stem the galas guests proved why Night of Miracles is such a unique charity event. The Fund-a-Family fundraiser directly followed the video, led by auctioneer Jim Nye and assisted by Miracles for Kids patients, with approximately $292,000 raised from over 200 bidders in the room. One-hundred percent of the funds were donated to the organizations Grant Program, which provides basic living expenses for families with children currently undergoing treatment. Always an enthusiastic auctioneer, Nye led a captivating live auction that showcased luxury getaways, unforgettable experiences, and exclusive packages. This years items included a one-week escape to Tony Robbins Namale Resort and Spa in Fiji that went for $17,000; a one-week vacation to Casa Todo Bien in Punta Mita that raised $22,0000; a Bond-themed package that went for $7,500 which included a flight in a WWII P-51 Mustang and a weekend ownership of a brand-new 2013 Aston Martin; and an adorable, purebred, 10-week-old Silky Terrier puppy complete with a lifetime of obedience classes that went for $8,000. Once again, Miracles for Kids offered electronic bidding technology through Autumn Strier and Kenneth Apolo Ohno and Claire Nguyen BidPal for the silent auction portion of the evening, making the event almost Gerdau entirely electronic. Guests bid on items ranging from luxury hotel packages to unique cases of wine. Prior to the live auction, over 200 guests participated in the Heads or Tails game to win this years opportunity item, a pair of Black and White Diamond Briolette Fringe Earrings, donated by famed jewelry designer, Martin Katz, and valued at $36,000. The evening, designed to celebrate the organizations mission and its supporters, also included revealing the 2013 Miracle Maker recipient David Heil of David August- Lifestyle Outfitters, in recognition of his longstanding personal and professional support of Miracles for Kids and the families it serves. A member of Miracles for Kids Board of Directors, David Heil was congratulated with a video including personally shot clips by friends Tony Robbins, Michael Strahan, Erik Logan, Chris Radomski, and others, as well as by fellow supporters and friends in attendance including Sugar Ray Leonard, Heather and Terry Dubrow, and Jason Vargas. Coto de Caza’s Claire Quinn to Play Soccer in NCAA Division III Final Four Former Varsity J Serra High School girls soccer player Claire Quinn will play with the Capital University Crusaders in the Division III Women’s Final Four NCAA Nationals on December 6 and 7 in San Antonio, Texas. Claire Quinn played for J Serra High School for two years where she was voted Most Valuable Player for the 2012-2013 season and was First Team All League Trinity League .A midfielder for the Crusaders, Claire started every game this season and was an Honorable Mention All Ohio Athletic Conference selection. She scored the winning goal in the Crusaders Ohio Athletic League championship game. The Crusaders then won the League Tournament with a decisive 4-0 victory of John Carroll University securing an automatic berth to the NCAA tournament. On the first weekend, they traveled to Wisconsin, braving wind and rain to defeat a strong University of Chicago team in double overtime. Quinn assisted with the winning

goal landing a textbook corner kick into the box that found its way into the goal by a fellow Capital teammate. They followed up that victory the next day with a 1-0 victory over 16th ranked and previously unbeaten Wisconsin Whitewater to advance to the round of 16. This past weekend, they shrugged off freezing temperatures and wind to defeat 14th ranked Thomas More for the right to face #1 ranked Washington University of St. Louis on Wash. U.’s home field. Spotting Washington an early 1-0 lead, Capital fought back to tie the match on a goal by Claire Quinn in the 66th minute. Holding off a fierce Washington team through 2 overtimes, Capital finally secured the upset 3-2 in penalty kicks. Next up for the Crusaders is William Smith of New York, currently ranked #3 in the country, for the right to advance to the NCAA Division III National Championship.

Top Holiday Toys for 2013: What Children of All Ages Want for Christmas This Year When you have children most talk about what toys they would like for Christmas all year long. If your children are like mine they start a Christmas list for Santa even before summer. Fall is when the attention to the lists really amps up. This coincides with the arrival of holiday toy commercials on television. By Halloween I have already heart so much about toys there is no doubt what the hot toys are for the season. Here are just a few of the top holiday toys for 2013. Just a little help figuring out what your children, no matter their age will be putting on their must have list. Preschool 1) Twilight Turtle Tunes - Both of my daughters have an original Cloud B Twilight Turtle and have been using it nightly for years. This year you can purchase the same popular light with the addition of lullaby’s to sooth your little one to sleep. Each night light projects a constellation of stars on the ceiling and walls. You can choose to have the stars in blue, green or amber. It also is equipped with a timer that will automatically shut off after 45 minutes to help save batteries. It comes pre-set with lullabies or parents can even create a personalized one. This toy is already
hard to find online so if you are interested start shopping early. Price ranges from $50- $55 depending on where you shop. 2) Big Hugs Elmo - Elmo is popular with babies, toddlers and preschoolers. This “Sesame Street” favorite has true staying power with kids over the years. Sure to be one of the most coveted toys this Christmas is this big stuffed Elmo. When hugged he hugs back, it also plays songs, dances and imitates play with your child. Another adorable feature is when he is laid down flat he sings and yawns like he is tired. Elmo is priced at $49.00. 3) Doc McStuffins Get Better Checkup Center - This holiday toy is priced higher at around $89.00. If your children are fans of the popular Disney character and her television show this is a good choice. This doctor center comes with a play lab coat; the x-rays have lights and talk, a medical kit and stickers. Everything a child could want to make everyone well. School Age 1) Razor Spark 2.0 Scooter - Razor scooters have been popular with kids for a few years. This year they have the addition of motion activated LED lights underneath. They also have a

At the time of this article some stores have this scooter on sale for about ten dollars less. With any bike or scooter remember to invest in a helmet and safety gear it is essential. 2) My Little Pony Equestria Dolls For the 2013 holiday toys the popular “My Little Pony” line has produced dolls based on the horse characters. Starting at $12.99 a doll they are similar to Bratz or Barbie dolls. Each has similar colors and styling of the horse counterpart of the same name. The dolls come with accessories like sunglasses, wings or a hair brush. 3) Nerf Rebelle Heatbreaker Bow and Arrow - With the phenomenal success of “The Hunger Games” kids of all ages are suddenly anxious to shoot a bow and arrow like Katniss. Instead of investing a lot of money in an expensive, and more dangerous bow and arrow this toy is a perfect compromise. For under $20.00 you

I just did three fillings using the Whisper-Jet (sand blaster) on a thirtyfive year old patient. He asked me why this Dr. Michael Tessier procedure was necessary, and here’s what I told him: Just like any other situation, early detection is always a good thing. The grooves in the chewing surfaces of the molars get to the point where they’re narrower than one bristle of a toothbrush. So, a patient can’t get in there to clean those grooves, but the acidic end-products of bacterial metabolism can. When we use a drill on a small cavity, we can only make the whole as small as the diameter of the drill allows. So really small cavities would require removal of much more tooth structure than necessary. Also, using the drill would require anesthetic because of the discomfort that arises from both the rotational vibration of the drill and the heat of friction that ensues as the drill cuts the tooth structure. And, drilling on any crystalline substance, like tooth enamel, can result in micro-fractures that can, in the case of tooth structure,

lead to tooth fractures in later years. So, we use a sandblaster that most often leaves a much leaves a smaller hole, doesn’t cause discomfort from the heat of friction or the rotational vibration of the drill, and doesn’t lead to fractures of tooth structure. Then we fill the hole in the tooth with a liquid plastic material which thru capillary action gets into the pores of the enamel, sealing those pores and preventing leakage. In fact, if we were still doing silver/ mercury fillings ( and we don’t even have the facility to do amalgam fillings, anymore), the sandblaster would be inadequate because we’d need a bigger hole to pack that obsolete filling material into. Definitely a case of cooperative evolution. When we have to do cavities on children’s adult molars, we use the sandblaster, thereby avoiding the need for a shot, removing less tooth structure, and reducing the possibility of fractures way in the future. When I see all the factors cataloged like that, the value of the whole procedure is a big “no duh”. Modern technology strikes again. Tour of Wilderness Preserve Showcases OCTA’s Preservation Efforts
On a beautiful California autumn day, approximately 100 visitors hiked and rode their horses in Trabuco Canyon to view coastal sage scrub, oak woodland, grasslands and chaparral as part of an exclusive look at OCTA’s wilderness preserve. The two-mile guided tour of Ferber Ranch was designed to show how OCTA is contributing to wildlife and habitat preservation in Orange County. In 2011, OCTA purchased Ferber Ranch as part of the M2 Freeway
Environmental Mitigation Program. Funded by Measure 2 (M2), the county’s half-cent sales tax for transportation improvements, the program allocates funds to acquire open space and contribute to habitat restoration projects in exchange for streamlined project approvals for 13 M2 freeway improvement projects. Acquired properties are purchased and permanently preserved as open space. Funded restoration projects restore preserved open space lands to their
native habitat and include the removal of invasive plant species. OCTA’s acquisition of this property protects several vital wildlife movement corridors, ensures the preservation of high-quality habitat and allows this core segment of Trabuco Canyon to be permanently protected. Ferber Ranch is nearly 400 acres of rolling terrain in an unincorporated area of Orange County. Bordered on the north by the Cleveland National Forest and on the south by Trabuco
Creek, the property is located within the Trabuco Canyon area of the Foothill / Trabuco Specific Plan. OCTA has acquired more than 950 acres in the Trabuco Canyon and Brea areas to preserve as permanent open space. Following the completion of scientific studies and preservation management assessments, the area may be open to the public on a limited basis.

What to Do with Thanksgiving Leftovers By Heather Shockner Thanksgiving has come and gone and you are still left with a ton of food. By now the thought of eating another turkey sandwich doesn’t sound too appealing. Here are some recipes you can make with all those leftovers that your family is sure to love.
Cordon Bleu Casserole
4 cups cooked turkey breast meat cubed 3 cups extra lean ham - cubed 12 ounces frozen vegetables - Italian blend or equivalent 1 cup low-fat cheddar cheese - shredded, divided 1 cup chopped onion 1/4-cup fat-free chicken broth 1/3-cup flour 2 cups skim milk 1 1/4-teaspoon dill weed - divided 1/8-teaspoon dry mustard 1/8-teaspoon ground nutmeg 1 cup dry breadcrumbs 2 Tablespoons light margarine - melted Preheat oven to 350°F. Coat a pan with cooking spray. In a large bowl, combine turkey, ham, vegetables and 3/4-cup of the cheese; set aside. In a saucepan, sauté onion in broth until tender.Add flour to form a paste. Gradually add skim milk, stirring constantly. Simmer until thickened, approximately one minute. Add the mustard, nutmeg and one teaspoon of the dill weed. Mix well. Remove from heat and pour over meat mixture, mixing well. Pour into prepared pan. Toss breadcrumbs, melted butter and the remaining 1/4-teaspoon dill weed. Stir in remaining 1/4-cup cheese. Sprinkle over casserole. Serves six to eight.
Leftover Turkey Salad
3 1/2-cups diced cooked turkey 4 ribs celery - sliced 4 green onions - sliced 1/2-cup toasted pecans - chopped 1/2-cup sweet red pepper - chopped 1/2-cup mayonnaise 1 Tablespoon lemon juice 1/4-teaspoon dill weed 1/4-teaspoon salt 1/8-teaspoon pepper In a large bowl, combine turkey, celery, onions, pecans and red pepper. Combine mayonnaise, lemon juice, dill, salt and pepper; stir into turkey mixture. Chill before serving. Serves six.
1 teaspoon poultry seasoning 1/2-teaspoon black pepper 1 cup elbow macaroni, uncooked In a four-quart saucepan, combine turkey, water, celery, vegetables, broth, poultry seasoning and black pepper. Cook over high heat, stirring occasionally, until mixture comes to a full boil. Add macaroni and reduce heat to low. Cover and continue cooking, stirring occasionally, until macaroni is tender. Serves eight.
Turkey Revenge Soup
1 turkey carcass, wings and all (the scraps left after carving) Any leftover gravy Any leftover vegetables 2 large carrots, sliced 2 stalks celery (and tops), chopped 1 can (12 oz) no salt green beans, drained 2 quarts boiling water Any peels, root ends and leafy tops leftover from onions, celery, potatoes, carrots Several bruised garlic cloves 12 ounces wide egg noodles 1 can (12 oz) no salt corn, drained 1 large white onion, chopped Salt and pepper to taste Cut wings off carcass and cut up the remaining bird as you would a chicken for frying. Place the carcass pieces and any leftover peelings and parings into a stockpot and fill with water. Add garlic cloves. Fill the stockpot with water and bring to a boil. Reduce heat to a simmer and let it cook until the liquid is reduced by one-third. Remove from heat to cool, cover and refrigerate overnight. The next day, remove the congealed fat from the top of the broth. Drain the contents through a colander into another large pot. Return the broth to the stockpot. Go through the colander and remove vegetable and garlic pieces and discard. Next, go through the turkey remnants and pull out all the meat and add to the stockpot. Add any leftover vegetables, carrots, celery, corn, green beans and the onion to the pot. There should be just enough liquid to cover the contents. Place over heat and bring to a boil. While you’re waiting, cook the egg noodles per package directions and drain. Simmer the soup just long enough to cook the carrots. Add two quarts of water, egg noodles and leftover gravy. Adjust seasonings (salt and pepper). Stir well, let simmer long enough to heat noodles and serve. Serves eight.

Mashed Potato Candy
lightly rinse pecans. Sprinkle with half the sugar and toss to coat. Lay out in a single layer on a cookie sheet and put in the oven to bake for 10 minutes. Set aside to cool. In a standing mixer or with an electric handheld mixer, beat whipping cream until soft peaks form. Add remaining sugar and vanilla and beat until you have stiff peaks. Meanwhile, whisk or stir cranberry sauce to break up and smooth. Zest the oranges and mix zest into the cranberries. Remove skin and pith from the oranges, separate segments and cut into a quarter-inch dice. Fold the orange dice into the cranberries. Fold whipped cream into cranberry orange mixture. Divide evenly among individual dessert glasses. In a large Ziploc bag, add pecans and gingersnaps. Seal, and with rolling pin or other heavy object, crush the contents of the bag until pieces are smallish. Top each serving with a healthy sprinkling of the pecan cookie topping. Serves six.
