Cherished Community Christmas Tradition Returns

According to one of the event’s founders, Brian Andre of Foothill Ranch, Follow the Star draws close to five thousand visitors over its three night run. Brittany Larsen of Rancho Santa Margarita says, “It wouldn’t feel like Christmas if we didn’t bring our family to watch this every year.” Follow the Star will play December 11-13 from 6-9 pm at 29441 Altisima in Rancho Santa Margarita. Roman centurion to a celestial angel announcing the birth of the Christ child, an entirely different cast draws the most fans for photo ops after each performance: the animals! Each performance features a menagerie of live animals. The star is the donkey who watches over the manger scene. Fans delight each year in petting him and joining him for Christmas selfies. As the event has grown, so have the reasons for families to come and enjoy the program. Each twenty minute show is preceded by an optional visit to the crèche display, a collection of nativity scenes from all over the world encompassing materials from Jerusalem olive wood to engine parts. From there, visitors can bundle up against the cool night weather and take a seat for the program outside where each performance is preceded by live music from Spanish guitar to talented vocalists. Afterwards, guests may warm up with complimentary hot cocoa served by local church

by Melanie Jacobson Photos by Bill Suman For 18 years, many local residents have begun their Christmas season by attending Follow the Star, a live nativity event full of live music, hot cocoa, and an awe-inspiring display of crèches from around the world. The annual show is sponsored by the Church of Jesus Christ and Latter Day Saints and held at the chapel on Altisima in Rancho Santa Margarita. Follow the Star retells the story of Christmas with elaborate sets, stunning costumes, and an original soundtrack. The grounds undergo a festive Christmas makeover as the trees drip in hundreds of lights and the rear grounds are transformed into ancient Bethlehem, complete with an inn, the humble manger from the beloved Bible story, and of course, the live actors. While community members from Coto de Caza to Lake Forest play characters from the imposing

Hazelnut Chocolate Energy Bars 1 cup dates 1/4 cup cocoa powder 1/4 teaspoon salt 1/3 cup hazelnut butter 1/4 cup honey 1 cup hazelnuts, toasted
1 1/2 cups rolled oats 1/2 cup semisweet chocolate chips Place dates in food processor and mix until small bits remain and form ball. Add cocoa powder and salt and process. Heat hazelnut butter and honey until warm. Pour into food processor along with remaining ingredients. Pulse until well mixed. Transfer to lightly greased and foillined 9-by-9-inch pan. Using spatula, pack mixture into tight square. Freeze to set for 15 minutes. Remove and cut into 15 bars. Store in airtight container or bag in fridge to keep fresh, or in freezer for longer term storage.

COMMUNITY VOLUNTEERS MAKING A DIFFERENCE ELKS PRIDE-COMMUNITY FOCUS IN DECEMBER The Mission Viejo, Saddleback Valley Elks Lodge along with Lodges from every state, Guam, Puerto Rico and the Panama Canal Zone will be busy helping our communities this holiday season. Thousands of needy families will receive food baskets and presents. Elk volunteers will visit thousands of hospitalized Veterans that have protected our freedoms. The Elks vow “So long as there are Veterans, the Benevolent and Protective Order of Elks will never forget them.” The Elks support both active military forces and retired veterans. Elks furnish food, comfort care items, therapeutic items and gifts, host holiday celebrations and recreational activities at bases and hospitals, and stand ready to fulfill any need when called upon. Last year alone, the value of Elks’ contributions to the nation’s heroes provided more than $32 million to more than 300 Veterans Administration Medical Centers, clinics, and state care facilities. The Elks have entered into a partnership with the VHA to support efforts for homeless Veterans in their communities. To this end, the Elks have pledged $4 million dollars to
help end Veteran Homelessness. The Elks will receive thousands of scholarship applications in December from high school seniors across the nation. Annually, the Elks award college scholarships nationally totaling more than $4 million. The Elks Community Investment Program will award more than $9 million towards enriching our communities. There are more than 1,900 Elks Lodges across the country with a total membership nearing 800,000. The Mission Viejo/Saddleback Valley Elks Lodge #2444 is celebrating 45 years of service to Saddleback Valley Communities. It is one of 10 lodges in the Orange Coast District of the Benevolent and Protective Order of Elks (BPOE) whose headquarters is in Chicago, Illinois. Santa Margartia High School Debate Team Makes it to the Sweet Sixteen at the 45th Annual Classic
Dynamic Duo Kasey Maline and Alana Mayes of the Santa Margarita High School Debate Team made it to the double octo finals in Public Forum at the 45th Annual Classic Speech and Debate Invitational Tournament held Friday, December 4 to December 6 held at La Costa Canyon High School in Carlsbad, CA. 96 top teams from across California and as far away as Las Vegas, Nevada were invited to compete in this prestigious annual debate competition. Maline and Mayes, both seniors at the school, advanced through all six rounds undefeated and advanced to the double octo finals which consisted of the top sixteen teams debating the topic of whether or not standardized testing for K-12 education is beneficial. Teams must take and affirmative and negative position on the subject in each round. Teams are judged based upon speech presentation, knowledge of the subject and how well they are able to persuade the judges. Maline and Mayes advancement to the double octo finals in Public Forum marks the first time a Santa Margarita High School debate teams has made it to the coveted final rounds of this Winter Classic.

Olive Crest OC Hosts Annual “Power of One” Luncheon Photos by: Steve Lee Photography An overflow crowd of 340 guests were in attendance at Olive Crest Orange County’s “THE POWER OF ONE” luncheon at the Westin South Coast Plaza Hotel. Co-Masters of Ceremonies for this event, which honors Olive Crest’s adoptive and foster families, included Tim Bauer, Executive Director of Development at Olive Crest Orange County, along with Wendy and Tim McMahan. In celebration of National Adoption Month, David Pelzer, #1 New York Times and International best-selling author, inspirational speaker, and internationally recognized humanitarian, was the keynote speaker. “Pelzer is an outstanding example of the personal power each of us has to make our lives meaningful and to make a difference in this world,” stated Tim Bauer. “He is such an inspiration to us all. He has been very familiar with Olive Crest’s work over the years,” Bauer continued. Guests in attendance were privy to a reception that included mingling with Pelzer along with bidding started the day off with fruit and cheese display that included domestic cheeses with fresh and dried fruits and nuts, sliced baguette and crackers and fresh fruit and berries including tray passed miniature quiche and Raspberry and Brie in Phyllo Abigail Pearson, the 9 year old adopted daughter through Olive Crest of Marcy and Norm Pearson, opened up the program giving the blessing. She is the youngest and one of three adopted children from Olive Crest in this family. Lunch for the attendees included a preset mixed fall greens with crumbled goat cheese, candied pecans, dried cranberries and Mirabelle pear vinaigrette. The main entre included a grilled breast of chicken with season vegetables, wild mushroom risotto, with pommery mustard and thyme sauce. Dessert was a trio of mini pumpkin cheesecake, dark chocolate mousse, and a wild berry shot. “For over four decades, Olive Crest has become the premier facilitator of foster children and children in dire need,” stated Pelzer. “They are the ultimate safe haven. Simply put . . .Olive Crest is the Cadillac of service. You want to talk about unconditional love, professional, unconditional love . . .that is Olive Crest. Bless all the work they do,” Pelzer continued. The event concluded with guests in attendance being asked for their support to help Olive Crest’s over 1,000 children and families in Orange County during the upcoming holiday season and throughout 2016. Gracious etiquette tips to survive holiday gatherings Whether you are hosting a fantastic holiday gathering or you’re the gracious guest, ask yourself this question: Are you comfortable with your knowledge of etiquette? Are you confident in your table manners or do you admit you take your cue by watching those around you? “It seems so many people only think about etiquette during the holidays and then the pressure is on to be perfect,” says etiquette coach Dubravka Vujinovic. “But proper manners should be important at every meal, whether you are sitting down to a formal gathering or casual dinner with friends.” Vujinovic is one of the etiquette experts at North Carolina-based Replacements, Ltd., the world’s largest retailer of old and new china, crystal, silver and collectibles. This time of year the company is bombarded with inquiries from
those needing a crash course in proper social graces and entertaining. Questions range from how to set the table, to the best way to serve the perfect meal. Vujinovic offers these suggestions for your next event. * Break out the buffet Buffets settings are becoming increasingly popular. In this style of setting the host places the food, dinnerware and utensils on a sideboard or table and guests serve themselves. “I love buffets, because they are so stress-free for me as a hostess,” says Vujinovic. “Since the food is already on the serving table, I don’t have to keep running back and forth to the kitchen to keep bringing out different courses or dishes; I can relax and enjoy the evening. On the other hand, as a guest, I like buffets because this setting allows me to eat the food I want; I don’t feel obligated to have to sample everything that is being passed around the table.” If you’re hosting a s e a t e d b u ff e t , w a t e r glasses should be filled and on the table before your guests sit down to their meal. Guests should be guided to pick up their dinnerware and
place it at their individual setting. * Set the perfect table If you opt to set your table in advance or if you’re a buffet guest setting your own place setting, remember, forks go to the left, knives then spoons to the right. The sharp side of the knife blade should be turned toward the dinner plate. And remember, only include utensils in your place setting that will be used for the courses you are serving; extra pieces may confuse your guests. The bread plate goes on the left of the dinner plate, glasses on the right. Don’t panic if you aren’t sure about the proper place setting for each meal. Vujinovic says you can find “cheat sheets” or place setting guides for various meals on the company’s website, replacements.com, under the site’s “neat things” tab. * Tips for hosts and guests Remember, the host/hostess always sits last. That person will let you know when it’s OK to begin eating. They may offer a blessing or statement or perhaps start by passing a dish. Always pass food around the table counter clockwise to your right and refrain from serving yourself first. Pass the salt and pepper as a set, even if you’re only asked for one.
If you’re not sure which utensil to use with each course, start on the outside and work in toward the dinner plate. Don’t cut more than one or two bites of food at a time, and never butter an entire roll or piece of bread. Instead, pinch off pieces small enough for one or two bites and butter those first. If you need to excuse yourself temporarily, place your napkin on your chair to indicate you will be coming back. Signify you’re finished with the meal by placing your napkin to the left of the dinner plate, and your fork and knife side by side diagonally across your plate with the sharp side of the knife blade facing inward and the fork tines up. Turn your cellphone on vibrate or don’t even bring it to the table. Enjoy the company of those around you. And what if you commit a major holiday fumble by accidently breaking a piece of the host’s dinnerware? “You should certainly offer to replace the broken piece, especially if it has sentimental value for the host or hostess. If you don’t know the name of the pattern or the manufacturer, Replacements offers a free pattern identification service that is a valuable resource,” says Vujinovic.

Keep your party lively with lighter bites that guests can nibble on throughout the night. Another advantage of a small plate menu is that guests will appreciate the chance to sample many flavors without fear of overindulging. Get your party planning started with these tips: • Keep dishes simple and put the focus on quality ingredients, such as naturally lactose and gluten free Jarlsberg cheese. Best known for the classic wedge available in original and smoked flavors, Jarlsberg cheese offers a mild, mellow, nutty and delicious taste that is perfect for any cheese board and pairing with meats of your choice. • Give traditional vegetable sides a special boost to make them party perfect. Basic asparagus gets a fresh twist with this Asparagus Tart, which blends savory Jarlsberg brand cheese and a pastry for a pretty presentation you can cut into squares before serving. • Plan your menu with the clock in mind. Asparagus Tart 1 sheet frozen puff pastry, thawed 2 cups Jarlsberg cheese, shredded 1 pound asparagus 1 tablespoon olive oil 1 tablespoon fresh thyme leaves salt and pepper Heat oven to 400 F. Prepare baking sheet with parchment paper. Roll out puff pastry into 16-by10-inch rectangle, trimming uneven edges. Place on baking sheet. With knife, lightly score pastry dough 1 inch from edges to mark rectangle. Using fork, pierce dough inside markings at 1/2-inch intervals. Bake until golden, about 15 minutes. Remove pastry shell from oven and sprinkle with shredded cheese. Trim asparagus spears to fit crosswise inside pastry shell. Arrange in single layer over cheese, alternating ends and tips. Brush with oil, sprinkle thyme leaves and season with salt and pepper. Bake until spears are tender, about 20 minutes. Tomato Gratin 8 medium ripe tomatoes 1/4 cup balsamic vinegar 1/2 cup extra-virgin olive oil 4 garlic cloves, sliced 4 sprigs fresh thyme (or 4 basil leaves, chopped) salt and pepper, to taste 2 ounces toasted pine (pignoli) nuts 1/2 pound (8 ounces) grated Jarlsberg cheese Heat oven to 350 F. Cut tomatoes in half. In bowl, whisk together vinegar, olive oil, garlic, thyme, salt and pepper; gently mix in tomatoes. Transfer to ovenproof dish, turning tomatoes cut side up before baking 15 minutes.

When tomatoes are cool enough, remove skins before returning to baking dish. Sprinkle tomatoes with nuts and cheese. Return to oven and bake about 10 minutes, or until cheese turns golden and bubbly. Serve as bruschetta on sliced, toasted Italian bread or as a side dish to fish and meat.
Cheesy Mashed Potatoes 4 large baking potatoes, peeled and cut 1 cup Jarlsberg cheese 1 cup milk 1 container sour cream 1/2 cup butter 1 teaspoon salt 1 teaspoon ground black pepper
Heat oven to 350 F. Place potatoes in large pot of salted water and bring to a boil. Reduce heat to medium-low, cover and simmer until tender. Drain and bring potatoes to food processor. In food processor, add cheese, milk, sour cream, butter, salt and pepper. Process all ingredients with potatoes until smooth. Pour mixture into baking pan and cover with tin foil. Bake 30 minutes. Uncover potatoes during last 10 minutes to allow browning. Sensational Platters Platters featuring savory finger foods are a flavorful and easy solution for holiday entertaining. Simply assemble ingredients, such as those listed below, on a large wooden or slate board and serve. Get creative by adding fig spreads, fresh fruit or other nibbles you enjoy, and don’t forget the toothpicks and napkins. Be sure to take the cheese out of the refrigerator at least an hour before serving to ensure that it is room temperature to bring out the ideal flavor. Never serve cheese cold. • Wedge or cubed Jarlsberg cheese • Assortment of whole grain crackers and crusty bread slices • Italian Genoa salami, coppa or your favorite charcuterie meats • Assorted olives, nuts and dried or fresh fruits

Follow directions on pompom maker packages to create three different sizes of poms of various colors using chunky yarn. If desired, mix yarn to give some pompoms a speckled look. Make about 50-60, depending on the fullness of the desired look. 2. After making pompoms, place pompoms around wreath, varying sizes and incorporating fur pompoms, as well. The overall look should be a kind of hilly terrain look to give it

depth. 3. Once desired placement has been achieved, glue them in place with hot glue. If needed, secure poms with T-pins or pearlhead pins. 4. Space making ideas create room for holiday entertaining Every holiday party is as individual as the hosts and interesting as the guests. Yet whether you plan a sophisticated dinner party or an afternoon buffet, all parties do have one thing in common: the need for entertaining space. What did you do last year to make room for your holiday party? Move some furniture into the garage, pile coats in the spare bedroom and use the coffee table for dessert service? This may be your year to find a better way to maximize your entertaining space. To ensure your holiday guests don’t spend the party dodging furniture or looking for a place to sit, several days before the festivities, start planning how you will open up space. Start with the entryway. Guests should get a sense of welcome and festive atmosphere from the moment they arrive on your doorstep. Thoroughly sweep your front walk, doorstep and the siding around the door. Make sure any outdoor decorations are out of the way, leaving a clear path into the house. If your foyer is big enough, consider adding a standing coat rack so that guests don’t have to hunt for their coats when it’s time to go home.
