Think outside the chocolate box when hosting a holiday cookie exchange The holidays provide a good excuse to bake and eat cookies. Not the traditional chocolate chip or peanut butter cookies that most of us eat during the rest of the year, but those special recipes that have everyone going back for a second taste. Hosting a cookie exchange is a great way to expose your friends to a wider variety of cookie recipes this holiday season. But before sending out invitations and asking your friends to make their favorite cookie recipe, consider thinking outside the chocolate box for your party this year. There are tons of ways to make your cookie exchange party unique. Start planning your party right away using a couple of these ideas. * Make it a themed cookie exchange. Theme parties are fun at any time of year, but take it one step further with your cookie exchange. Invite your guests to follow the theme with the recipes they choose to make. For example, consider hosting a black and white cookie party, explaining to attendees that the cookies must have a black or white element. Coconut, white or dark chocolate candies, nuts and sugar for icing are just several ingredients that fit the bill, and you can find dozens of recipes featuring these items. Or make it a chocolate party, where all of the recipes have a

chocolate ingredient in them. Many cookie recipes include nuts, so a nut theme would also be a great idea. In addition to the recipes featuring the theme, also decorate the party room to match. In need of a recipe? The following white chocolate crunch recipe is great for all three themed parties: Hawaiian Host Whole Macadamia White Chocolate Crunch Ingredients: 1 box, 7 ounces, 18 pieces Hawaiian Host Whole Macadamia White Chocolates 1 cup Rice Krispies 1 cup mini marshmallows 1/4 cup creamy peanut butter Directions: Melt chocolate in a microwave oven in 4 quart casserole at 70 percent power for 3 - 4 minutes, stirring periodically, until melted. Stir in peanut butter. Add corn cereal and marshmallows; stir. Pour into buttered 8-by-8 inch square pan or dish. When firm, cut into squares. * Up the game on the party favors. The purpose of a cookie exchange is to leave the party with a variety of holiday cookies, but you and your guests can have a lot more fun. Ways to think outside the chocolate box include holding a wine pairing with the cookies. Red wine and chocolate go well together, and your guests can

determine which pairing works best for their holiday tables. Or indulge by serving some chocolate martinis alongside the cookies. If your group is into games, make up fun names for the cookie recipes everyone brought, or make a unique recipe just for the party, and have guests guess the ingredients in the mystery cookie. * Introduce unexpected ingredients into the cookie recipes. One of the holiday season’s most popular confections is Hawaiian Host chocolate-covered macadamia nuts that tempt frequent snacking all season long. Try them in the following butter cookie recipe: Hawaiian Host Milk Chocolate AlohaMac Butter Cookies Ingredients: 14 pieces Hawaiian Host Milk Chocolate AlohaMacs, chop into pieces 1/2 cup butter, unsalted 1/2 cup granulated sugar 1/2 cup light brown sugar, granulated 1 large egg 1/2 teaspoon vanilla extract 1 1/4 cup flour 1/2 teaspoon salt 1/2 teaspoon baking soda

Directions: Preheat oven to 350 F. Mix butter and sugars in large bowl until light and fluffy. Add egg and beat, then add vanilla extract. Mix flour, salt and soda, and add gradually to butter mixture. Fold in chocolate pieces. Drop rounded spoonfuls onto greased cookie sheets. Bake 8 - 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes. Then place on a wire rack to cool completely. Hosting a cookie exchange is a lot of fun, and when you think outside the chocolate box, you can take the fun to a whole new level. Santa margarita Boys’ Basketball Opens up the 2014-2015 Season Story by Sean Zeitler Photos by Robert Russell Congratulations to the SMCHS boys’ varsity basketball team for opening up their 2014-2015 campaign by winning their first four competitions in the Chick-Fil-A Tip-Off Classic tournament at Crean Lutheran High School this past weekend. The Eagles (4-0) defeated Fairmont Prep, O’Farrell High School, Crean Lutheran and St. Paul High School. When all was said and done, the Eagles outscored their opponents 294-166. With a small layover, the Eagles will get back to the practice courts before hosting their own Christmas Tournament on December 17-20. As if things weren’t looking good enough as it is, the undefeated Eagles are currently playing without arguably two of their best players, Mission Viejo transfers Noah and Kaden Rasheed, who are currently sitting out as a result of a transfer period. Noah, a junior guard, is coming off a tremendous football season where he was one of KJ Costello’s main targets as a wide receiver. For the Diablos last season, Noah averaged 10 points. Kaden, the younger of the two brothers, averaged 19 points for the Diablos last season as a freshman which earned him a spot on the AllCIF Southern Section First Team. Perhaps addition by subtraction, the Rasheed’s will make up for the loss of last season’s Division 3AA CIF Player of the Year, Devonte Klines. In wrestling news, the varsity wrestling program has opened up their season with a 3-5 record after beating crosstown rival Tesoro High School twice and El Toro High School once. The latest victory notched head coach Scott Sedlick’s 100th win as the head coach for the Eagles. Sedlick has been at the helm for 29 individual League Champions, 30 CIF placers, 5 CIF Champions, 9 Masters placers, and 9 State Qualifiers, including two individual CIF champions last year in Jeff Holsinger and Nathan Fier. In the pool, the two-time defending CIF Championship girls’ water polo team has also opened up their 1415 campaign in undefeated fashion, defeating Dana Hills by a score of 18-9 and Long Beach Wilson 14-7. On Tuesday, the counties number eight ranked Eagles (3-0) hosted Huntington Beach High School and faced their toughest challenge of the year. After falling 7-3 early in the first half, the Eagles were able to rally back and defat the Oilers by a score of 13-9. The Eagles facilitated the ball well and were led by the Baia sisters, Sophia and Bella as they contributed six of the teams 13 goals. bounced back after giving up six first half goals before holding the Oilers to three second half goals. For the third year, the boys and girls water polo teams at Santa Margarita Catholic High School have fundraised turkeys to be donated to military families at Camp Pendleton. The girls’ teams distributed 81 turkeys to families of the 11th unit MEU on Saturday November 22nd. 66 turkeys were given to families who live both on and off the base, and another 15 were used for the military single dinner hosted the Tuesday before Thanksgiving. The water polo teams would like to thank all of the Santa Margarita families and other community members who contributed to making this another successful year of giving. The defending CIF Championship girls’ basketball team opened up their season at the Husky Invitational which was hosted by Fairmont Prep. The Eagles played well, winning their first three competitions before losing in the final to the host school, Fairmont Prep by a score of 41-36. The Eagles had a very quick turnaround as they have already begun play at the Carlsbad tournament, where the defeated San Pasqual High School easily in the first round by a score of 68-13. Although young in age, the girls’ basketball team has six returners from last year’s CIF Championship team, including the last year’s Orange County Register Freshman of the Year, Tori Anderson. On the soccer pitch, the boys’ varsity soccer team which currently sits ranked at number five in the county, is off to a hot start and look to have a star in the making. Freshman forward Michael Falino was named this week’s OC Varsity Boys’ Soccer Athlete of the Week for his efforts in the Aliso Cup. Falino, in his first four high school games of his career posted four total goals, including two last Friday in a 4-0 win against Montebello High School. In addition to the rise of Falino, the Eagles also pose a threat to their opponents with All-County forward and Cal State Fullerton-bound senior, Jake Fisher. Fisher, an All-County forward for the Eagles last season, was also named the Trinity League Offensive MVP, first team All-CIF, and broke the school record for goals in a season with 26, which placed him second in Orange County as well. Fisher had eight multiple-goal games, twice finishing with a hat trick. Despite being hit hard by the graduation bug, the Eagles have several Eagles that look to have a breakout season including senior defender Riley Domier and junior defender Jake Gayoso.

8-Time Olympic Medalist Jason Lezak to Light Fashion Island’s Huge Friendship Menorah Hanukah - The Festival of Lights - for many of us brings back fond memories of childhood years, and serves to renew our sense of identity. The Chanukah lights provide us with warmth, joy, strength and inspiration. Such is a purpose of a community-wide Menorah lighting and celebration. Fashion Island joins Chabad Jewish Center in inviting the entire community to celebrate the Festival of Lights at a public Menorah Lighting ceremony on Tuesday, December 16 at 6:00PM in Fashion Island’s Atrium Garden Court. The celebration begins with a holiday musical performance by a group of young special needs children from the Friendship Circle. The lighting of the huge Friendship Menorah, painted by children with special needs will be kindled by 8-Time Olympic Medalist, Jason Lezak. Participants will enjoy gifts and treats, Hanukah crafts, face painting and balloon animals. Participants are encouraged to bring along a

gift for the community toy drive and distribution to underprivileged children, making these deserving children’s holiday that much brighter. Hanukah, a celebration for all time, is highlighted by the kindling of the Menorah each night of the Holiday. “It is a holiday that enriches our lives and strengthens our tradition”, said Rabbi Reuven Mintz of the Chabad Center for Jewish Life. “In ancient times, our ancestors rededicated the Temple in Jerusalem. Angelitos de Oro Raises $300,000 for Big Brothers Big Sisters With the sole purpose of raising funds for Big Brothers Big Sisters of Orange County’s “High School Bigs” mentoring program, Angelitos de Oro, a Newport Beach-based volunteer women’s auxiliary group, raised $300,000 for the nonprofit during its 13th annual Angelitos Card fashion fundraiser at South Coast Plaza in Costa Mesa. Angelitos de Oro has donated more than $5M to the nonprofit since the auxiliary’s inception in 1961. “Angelitos de Oro is a deeply valued supporter of Big Brothers Big Sisters of Orange County, and we are so grateful for their continued commitment to our vision that every child should have the opportunity to succeed in life and live up to their full potential,” said Melissa Beck, CEO of Big Brothers Big Sisters of Orange County. “The 2014 Angelitos Card program was another amazing success and we thank the Angelitos for putting on this fantastic annual fashion fundraiser to benefit at-risk youth.” A partnership between Angelitos de Oro and South Coast Plaza, the Angelitos Card program consisted of more than 100 boutiques and restaurants at South Coast Plaza who offered a 20% saving to Angelitos cardholders for one week. Stores that participated in the Angelitos Card fundraiser included Bottega Veneta, Oscar de la Renta, Donna Karan, St. John, Giorgio Armani, Saint Laurent, Anne Fontaine, M.Missoni, J.Crew, DKNY and TOD’s. The card was sold for $60, and all proceeds benefited the nonprofit. A Preview Day event was held October 7 in South Coast Plaza’s Jewel Court, where fall fashion trends were presented by participating luxury boutiques, including Bottega Veneta, Donna Karan and M.Missoni, champagne and a light lunch were served, and Card holders learned more about how Angelitos de Oro’s generous contributions support the important mentorship programs Big Brothers Big Sisters of Orange County provides in the community to at-risk youth. All boutiques participating in Preview Day generously donated 10% of their sales proceeds that day to Big Brothers Big Sisters of Orange County. Angelitos de Oro raises funds for Big Brothers Big Sisters of Orange County’s “High School Bigs” program, which matches a volunteer high school “Big” with an elementary school “Little” and once a week after school the “Bigs” provide age-appropriate peer-to-peer mentoring. The program is celebrating its 10-year anniversary this year and served 590 elementary and middle school students in 2013. The nonprofit has found a significant decrease in truancy as well as increased academic performance as a result of the program. A Tustin-based nonprofit organization that helps youth to realize their potential and build their futures, Big Brothers Big Sisters of Orange County provides over 2,400 children facing adversity with professionally supported one-to-one mentoring relationships to change their lives for the better. Youth (“Littles”) are matched with volunteer mentors (“Bigs”) to develop positive relationships that have a direct and lasting effect on their lives, with results including: in 2013-2014, 98% of “Littles” graduated high school on time, with 70% of “Littles” being the first in their family to receive a high school diploma. More so, 83% of “Littles” enrolled in college and 100% said their “Big” was their biggest influence to pursue a higher education for a better future. For more than 100 years, Big Brothers Big Sisters has operated under the belief that inherent in every child is the ability to succeed and thrive in life. A patient of long-standing came in s e v e r a l weeks ago, complaining that her teeth were sensitive, generally, all over mouth. When I visually Dr. Michael Tessier inspected her mouth, there was no evidence of cracked teeth, or tired-old fillings, or bad crowns, or gum recession- all the usual suspects. There was nothing that I could see that might contribute to tooth sensitivity. We treated the sensitive teeth on the right wide with the laser. When she came back two weeks later, she said that she couldn’t wait to have me do the left side, because all the sensitivity was gone on the right side. Positively amazing. So, when you eat ice cream, or drink a margarita, one of your molars, or maybe even a bicuspid, is sensitive. When you take that problem tooth to your friendly, neighborhood dentist, and he says you need that tooth capped (or crowned). What’s that about? When someone drills on a crystalline structure, like glass, or porcelain, or tooth enamel, the heat of friction from the drilling device puts microscopic fractures in the material. When a dentist has to put a big filling in a tooth, those little fractures pre-dispose that tooth to further fracture. The fractures

virtually split the tooth. Later, after years of chewing trauma, the nerve becomes irritated from this microscopic splitting during chewing or clenching. This hypersensitivity is usually manifested as temperature sensitivity. Just replacing the filling doesn’t help because the cracks are already there. A crown, on the other hand, holds the tooth together, like the band on a barrel, so the splitting activity stops. If the trauma to the nerve of the tooth didn’t damage that nerve irreparably, which would necessitate a root canal (removing the damaged nerve from the root of the tooth), a crown is all that’s necessary to allow you to return to the pleasures of ice cream-eating. There are also instances where a tooth is sensitive to cold or even sweets, and a fracture is not the culprit. This is most often a result of root sensitivity, where the root of the tooth is exposed due to gum recession. There is also a setting on my soft-tissue laser (Periolase) for treating teeth that are cold sensitive due to root sensitivity. Here are some statistics for the Year 1914: • The average life expectancy for men was 47 years. • Only 14 percent of the homes had a bathtub. • Only 8 percent of the homes had a telephone. • There were only 8,000 cars and only 144 miles of paved roads. • The maximum speed limit in most cities was 10 mph. • The tallest structure in the world was the Eiffel Tower. • The average US wage in 1910 was 22 cents per hour. • The average US worker made between $200 and $400 per year • A competent accountant could expect to earn $2000 per year, A dentist earned $2,500 per year, a veterinarian between $1,500 and $4,000 per year and a mechanical engineer about $5,000 per year. • More than 95 percent of all births took place at home. • Ninety percent of all Doctors had NO COLLEGE EDUCATION! Bank of America Charitable Foundation Awards $222,600 in Grants to 16 Orange County Nonprofit Organizations Grants will help individuals with basic human services and build better financial lives The Bank of America Charitable Foundation today announced $222,600 in grants to 16 nonprofits in Orange County to help individuals and families build better financial lives. These grants will support the fight against hunger, access to housing and other basic human service initiatives that help communities thrive. Basic human services, along with community and workforce development are top priorities because there is significant need in these areas in Orange County and across the country. According to the nonprofits grantees, more than 370,000 individuals will be impacted by the funding that serves low and moderate income residents. “When the people of Orange County have access to affordable housing, jobs, and basic nutrition, Orange County succeeds,” said Allen Staff, Orange County market president, Bank of America. “We are working to provide access to basic human services because we know it’s

In fact, many families are looking to wholesome ingredients as a way to add flavor and healthfulness to their holiday meals and baked goods. One

Blue Ribbon Raisin Apple Hand Held Pies Servings: 16 individual pies Raisin apple filling: 1 1/2 cups chopped tart apples 1/2 cup brown sugar 2 tablespoons water 2 teaspoons fresh lemon juice 3/4 cup California raisins

2 tablespoons all-purpose flour 1 tablespoon granulated white sugar 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/8 teaspoon ground nutmeg Pinch ground cloves 1/2 teaspoon vanilla 1 1/2 tablespoons unsalted butter Blue ribbon pastry: 2 cups all-purpose flour 1 teaspoon white granulated sugar 1/4 teaspoon salt 1/4 teaspoon ground cinnamon 1/3 cup cold unsalted butter, cut into chunks 1/3 cup vegetable shortening 4-5 tablespoons cold water Egg wash: 1 egg Pinch of salt For filling, combine apples, brown sugar, water, lemon juice and raisins in 2-quart saucepan. Cover and cook over medium heat for 5 minutes until apples are just tender. Meanwhile, in small bowl, mix flour, sugar, salt and spices together well, and add liquid from cooking apples to make slurry. Then, add all to pan with apples and continue to cook, stirring constantly, until thickened, about 2 minutes.

Remove from heat; stir in vanilla and butter. Set aside to cool. Meanwhile for pastry, measure flour, sugar, salt and cinnamon into large bowl and with pastry blender, fork or two knives, cut in butter and shortening until mixture resembles coarse crumbs. Add water, 1 tablespoon at a time, tossing after each addition until flour is moist and dough just holds together. Turn onto lightly floured surface; knead together and shape into flattened disk. Divide into 4 equal pieces; wrap separately in plastic wrap or wax paper and chill for at least 30 minutes. Preheat oven to 375°F. On lightly floured surface, roll out pastry dough, one piece at a time, and cut each piece into 4 small rounds with 3 1/2or 4-inch cookie cutter. Place 1 scant tablespoon filling just below center on each piece; moisten edges and fold over, sealing edges with fork. Arrange on baking sheet and prick tops of each handheld pie in several places with fork or cut one small slit with sharp knife. Beat 1 egg with pinch of salt for egg wash and brush onto pies. Bake at 375°F for 20-25 minutes until lightly browned. Cool and serve. Note: McIntosh apples recommended.

But while you may be more focused on your holiday to-do’s, you need to remember some important safety tips about the elevators and escalators you are using. Safety innovations have come a long way in the last few decades and today’s elevators and escalators are safer than ever before. The National Elevator Industry, Inc. (NEII) is the expert in building transportation safety. NEII works to develop and promote updated safety codes, encourage the adaptation of the latest safety technologies, and ensure passengers are informed on the safest riding procedures for elevators and escalators. However, even with all the advancements in safety technology, it’s worth keeping in mind that most accidents can be easily prevented by following simple elevator and escalator safety tips. guidelines proven to keep riders safe during the holiday season and any time throughout the year: When boarding and riding elevators: * Allow passengers exiting the elevator to clear before boarding * Watch your step - the elevator car may not be perfectly level with the floor * Stand clear of the doors - keep clothes and carry-ons away from the opening * Hold children and pets firmly * Leashed pets should be on the same side of the door as the passenger to prevent the door from closing on the leash * Passengers nearest to the doors should enter first when the car arrives * Push and hold the “door open” button if doors need to be held open, or ask someone to push the button for you * Never try to stop a closing door, wait for the next car * Once on board, quickly press the button for your floor and move to the back of the car to make room for other passengers * Hold the rail or stand against the wall, if available * Pay attention to the floor indications and announcements when provided * If the doors do not open when the elevator stops, push the “door open” button If there is ever an emergency, remember that all elevators have several safety devices, one of which is brakes that will stop the car if it is not operating properly. Follow these guidelines: * If the elevator should ever stop between floors, do not panic, there is plenty of air in the elevator * Never climb out of a stalled elevator * Use the “alarm” or “help” button, the telephone or the intercom to call for assistance * Above all, wait for qualified help to arrive and never try to leave an elevator that has not stopped normally * Emergency lighting will come on in the event of a power failure When entering escalators: * Watch the direction of the moving step and step on and off with extra care * Hold children firmly with one arm or hold child’s free hand * Hold small packages firmly in one hand, but always leave one hand available to hold the handrail * Grasp the handle as you step onto the moving step * Do not step onto an escalator going in the opposite direction * Do not take wheelchairs, electric scooters, strollers, hand carts, luggage carts or similar items on the escalator When riding and exiting escalators: * Keep loose clothing clear of steps and sides * Wear closed-toed and hard-soled shoes, and avoid wearing footwear made of soft-resin or other rubbery materials * Stand clear and keep feet clear of the sides of the escalator

* Face forward and keep firm grip on the handrail * Reposition your hand slowly if the handrail moves ahead or behind the steps * Don’t climb onto or ride the handrail * Do not let children sit on steps or stand too close to sides * Don’t hesitate and step off promptly * Make sure to step over the comb fingers; don’t let your feet slide off the end of the escalator * Immediately move clear of the escalator exit area; don’t stop to talk or look around since other passengers may be behind you Always remember, if there is an emergency, simply push one of the “stop” buttons located at the top or bottom landings of the escalator near the handrail or floor level. Things retailers do to make you love their stores - and spend more Holiday shopping can make you feel frantic, while you sprint from store to store, trying to find the right gift for everyone on your list. If you think you’re under pressure to achieve during the holidays, however, just image how the retailers feel; holiday season is often make-or-break for many of them. And they’ll go to great lengths to keep shoppers in stores, happily spending. From sweet-on-the-feet commercial flooring to interactive product displays that incorporate sound and video, stores use a variety of marketing tools to make you feel welcome, wanted, and generous during the holidays. As you’re scouting for deals this holiday season, keep your eyes open for these five “come-hither” tactics employed by retailers: * Fatigue-fighting flooring - As you scurry from store to store, you probably haven’t considered the toll that average store flooring takes on your feet. Concrete floors, covered by carpet, tile, or vinyl, are common in retail settings, and they can contribute to foot fatigue. Savvy retailers realize that if your feet hurt, you’re not likely to linger in one spot. By installing flooring with anti-fatigue properties, like ECORE’s forest rx, stores hope to keep shoppers more comfortable. While the flooring looks like hardwood - adding a touch of class in retail settings - it’s really a revolutionary composite of vinyl sheet laminated to 5 millimeters of engineered, recycled rubber underlayment. From big department stores to mom-andpop gift shops, retailers have rediscovered the value of providing this service to customers. Free gift wrapping is a relatively low-cost service, but it’s hugely valuable - both to time-pressed customers who appreciate the convenience, and for retailers who are able to keep shoppers in-store a bit longer while wrapping takes place. * The way to a shopper’s heart - Another triedand-true holiday enticement is food and beverage. You might expect to find samples in a grocery store or wine shop, but enterprising retailers know refreshments are welcome, regardless of what product they’re selling. During the holidays, clothing stores to hardware shops find their way into consumers’ hearts via their stomachs, serving a variety of treats that range from specialty candies available for sale in the store to holiday cookies, cider, or hot chocolate. * Y’all come back now - No matter how delightful your shopping experience, eventually you’re going

to leave the store. Smart retailers use a variety of tactics to encourage you to return another day from handing out coupons for future discounts at the cash register when you check out, to “greeters” who also bid you a fond farewell on your way out the door. Marketers know that if they can leave you with a positive feeling and a reason to return, you’re much more likely to shop in their store again. Of course, retailers have many ways to draw consumers into their stores. And as the holidays arrive, they’ll be adding incentives like these to ensure shoppers enjoy their time in stores more and hopefully spend more because of it.

Delectable: A Wine App That Could Revolutionize Drinking HAPPY GRAPES

By David White Alexander Niehenke began to appreciate wine ten years ago. But for the first four years, it was simply a beverage he enjoyed with dinner from time to time, especially when cooking at home. And then he put his nose in a glass of Cabernet Sauvignon from Justin, a winery based in Paso Robles, California. He was at a bachelor party, where few attendees were paying any attention to the wine inside their glasses. But for Niehenke, the aromas were intoxicating. Something clicked. So he promptly dove into the world of wine. For the next five years, Niehenke’s passion for wine grew steadily and predictably. As a resident of San Francisco, weekend trips to Napa

Valley and Sonoma were easy -- so he started driving north regularly. He began attending tastings, reading wine publications, and even collecting. And then he discovered Delectable, a mobile wine app. Since downloading the program last fall, Niehenke has been moving towards oenophilia at lightning speed. “The app has taught me about new producers, new regions, and even new varieties,” he explained. “I actually just learned about orange wine -- and tried my first one -- thanks to it.” An orange wine is made by treating white wine grapes as if they’re red -- in other words, soaking the skins and seeds alongside the juice during fermentation. Orange wines have become quite popular among some of the nation’s hippest sommeliers, and thanks to Delectable, Niehenke can see what those sommeliers are opening each night. Delectable traces its roots to 2011, when Alex Fishman was working in Dubai for Palantir, the data analytics firm best known for its work with the U.S. intelligence community. Shortly before returning home, Fishman and his girlfriend came upon a wine they’d enjoyed on many occasions. Wanting

to remember the bottle so they could purchase it in the United States, they looked to the label for information -- but were overwhelmed. Fishman recalled this experience a few months later over breakfast with in New York with Aaron Vanderbeek, a video-game designer. The two were old friends, and Fishman was detailing his desire to launch a mission-focused company -- ideally, one that would “make the world a more delicious place.” In short order, they realized that there weren’t any good mobile apps for wine enthusiasts. So Fishman and Vanderbeek began building Delectable. Today, the app identifies all a wine’s details from a photo and allows users to review and purchase wines. It also helps users discover industry professionals -- winemakers, sommeliers, and critics -- and see what they’re drinking. It’s no wonder why Delectable has been described as “the Instagram of wine.” Thanks in large part to this feature, Delectable could revolutionize consumption. As Fishman told me, “the wine market is broken because of a lack of information. That’s why consumers buy points. But the point system is flawed because people have

radically different tastes.” As consumers discover other enthusiasts on Delectable with similar tastes, they’ll discover new wines worth drinking. After all, it doesn’t make any sense to take the advice of a critic who has slapped “98 points!” on a bottle unless one shares that critic’s preferences. Delectable solves what Fishman calls “the matching problem” consumers face with wine critics. Niehenke is certainly drinking better thanks to the app. “When looking for new wines, I used to call my knowledgeable friends. Now, I can just open up Delectable to see what they’re drinking,” he explained. “When I realized I could follow pros, too, wow -- that was cool. I love seeing what my favorite winemakers -- people like Ross Cobb and Cathy Corison -- are drinking. Now, I follow people with similar palates to mine and un-follow people with different tastes.” Fishman is convinced that his app will fulfill its mission. “If we do this right,” he concluded, “the amount of global happiness that’s derived from wine will go up. People will drink better and better wines, since our suggestions will be tailored to individual users.”

Regardless of theme or guest list, a delicious artisanal cheese and wine platter is a great way to start off any gathering. By following these simple guidelines, creating the perfect pairings can be one of the simplest things on your to-do list this holiday season. Step 1: Vary your cheese choices Lindsey Jessup, cheese and wine pairing expert and wine ambassador for Bridlewood Estate Winery, suggests that balancing a variety of flavors is a good place to start.
