‘Tis the season to entertain: A simple guide to artisanal wine and cheese pairings Planning a get together with close friends or family this holiday season and fretting over what to serve? Regardless of theme or guest list, a delicious artisanal cheese and wine platter is a great way to start off any gathering. By following these simple guidelines, creating the perfect pairings can be one of the simplest things on your to-do list this holiday season. Step 1: Vary your cheese choices Lindsey Jessup, cheese and wine pairing expert and wine ambassador for Bridlewood Estate Winery, suggests that balancing a variety of flavors is a good place to start. The key is creating a diverse platter that offers something for all your guests to enjoy. “Contrast your tastes and textures by offering a number of different cheeses,” suggests Jessup. “By balancing the different flavors, you’ll have a dynamic and complete

holiday cheese plate that can be the perfect complement to your wine selections.” Jessup recommends a selection of four cheeses to build a crowd-pleasing and wine-friendly cheese plate: an aged, hardrind cheese, a soft-ripened cheese, a blue cheese and a mild cow’s milk cheese. Step 2: Select your wine Along with a variety of cheeses, consider the range of wine options to offer your guests. A good rule of thumb is to have at least two red options and two white options to match the versatility of your cheese selections. If you are offering artisanal cheeses, balance them with handcrafted wines. “Bridlewood’s critically acclaimed Chardonnay, Pinot Noir, Blend 175 and Cabernet Sauvignon display unique, adventurous, yet approachable flavors that make a perfect accompaniment for artisanal cheeses during the holidays and beyond,” adds Jessup. Step 3: Begin pairing Personal preference plays a large role in all wine pairings. In general, Jessup recommends some general guidelines when pairing artisanal cheeses and wine: * Mild and hard cheeses match a wider range of wines than soft, ripe or mature cheeses. * White wine may pair more easily with

a wider range of cheeses. * More tannic red wines pair better with harder cheeses. Step 4: Set up the display Now that you have the cheese and the wine, don’t forget the presentation. First and foremost, it is important to serve your cheese at room temperature to maximize flavor profiles. Be sure to take the cheeses out of the refrigerator at least one to two hours before guests arrive. When considering layout, place cheeses from mild to strongest and accent them with colorful fresh and dried fruit, artisanal breads, and nuts. When displaying the cheese, pre-cut some while

leaving larger pieces for a backdrop and have a dedicated knife for each option. Once your cheese is laid out, place your selected wine pairing next to each cheese option along with enough stemware for guests. Keep the white wine on ice so that it’s appropriately chilled throughout the evening. Whether you are planning a large party or a more intimate gathering, creating a simple and elegant artisanal cheese and wine platter is a delicious way to create a memorable and enjoyable experience this holiday season. Tips to spruce up your home for the holidays Holidays are when most people open their homes for friends and family. Sharing the season’s greetings is always the priority but these gatherings are also an opportunity to show off improvements made during the year. This is one of the reasons that autumn is a popular time for home improvements. Fifty-two percent of homeowners plan to make home improvements this fall, according to the leading real estate website Zillow. It is also a great time of year for deals as retailers unload inventory to make room for new styles. Creating a warm and inviting atmosphere includes much more than just poinsettias and Santa Claus centerpieces. There are a number of affordable steps homeowners can take to add a real “wow factor” to their holiday entertaining. Kitchen updates The kitchen is commonly one of the busiest rooms during the holidays. Since guests often gather there, it

makes sense to make the space the focus for a few improvements before the holidays. Simple and inexpensive updates, such as adding new knobs and handles to cabinets or installing a new backsplash, will make a big difference. Stylish new light fixtures can also give your kitchen a quick facelift that will impress your guests. Install hardwood floors The warmth and beauty of hardwood floors can transform the look and feel of your home to create a space that will stun your guests. And unlike carpet, hardwood floors do not stain or wear as easily from inevitable spills and foot traffic that the holidays bring.-Moreover, carpet traps dust, pollen and other particles that can cause allergies and respiratory issues. Visually unique flooring options such as Lumber Liquidators’ Bellawood Bamboo bring together both the aesthetic and practical advantages of hardwood flooring. This flooring carries a 100-year transferable war-

ranty that assures these benefits will be sustained for a lifetime of holiday gatherings. De-clutter It’s important to create inviting open space for guests to enjoy. Decluttering bookshelves and removing miscellaneous furniture can help make a room feel larger and more open, and will allow room for festive seasonal decor. Spending time to organize the refrigerator will make space for any holiday dishes a guest brings. Improve the entry The front entry provides the first impression of a home, so it’s important to create a stylish, cared-for and welcoming look. Homeowners can complete small projects outside, such as updating house numbers, painting the front door and creating holidaythemed arrangements. Simple decor updates just inside the door - such as adding family photos and new rugs - will add a warm and personal feel.

MEMORABLE WEDDING DATE : 11/12/13

Finding Love is as easy as 11-12-13! Clever Couples Take Advantage of Calendar to Remember Their Anniversary. Many couples said consecutive date sequences were magical because of their rare occurrence and the hidden meaning of numbers. Others chose the days because they said it would be easier to remember their anniversary Couples in search of symmetry—and an easily remembered anniversary date—flocked to the Orange County Clerk-Recorder Department to be married on Nov. 12, 2013—or 11/12/13. The department issued 107 licenses and performed 103 civil wedding ceremonies, more than double the amount of ceremonies performed on a usual Tuesday. “We were prepared and my staff did a great job to provide a memorable day for couples,” Clerk-Recorder Hugh Nguyen said. “These special dates only come around once in a century.” The last several years have provided several symmetrical and sequential dates that proved wildly popular for weddings. A record-setting 283 couples were married on Dec. 12 last year—or 12/12/12—which beat the previous record of 250 couples married in civil wedding ceremonies on 8/8/08. The marriages were performed at the Old County Courthouse in Santa Ana and at the department’s two branch offices in Laguna Hills and historic downtown Fullerton.

How to Choose a Video Game for Your Child Inevitably, your child will ask for a video game you don’t know anything about. Maybe the rating is higher than you think is appropriate, or you’re simply not sure you want your child mowing down pedestrians or playing with sharp objects, no matter how virtual. But your child tells you that his friends all own the game, or that you’re worried about nothing, if not “completely unfair.” So how can you reconcile your child’s wants with your concerns? Children like violent games because they are exciting -- but parents can find equally entertaining games appropriate for younger children. For example, “Ben 10 Alien Force: Vilgax Attacks,” a new game from D3Publishers, is based on a Cartoon Network show popular with boys between ages six and 11. And while the game contains plenty of exciting action -- the main character can take on 10 different alien forms to battle villains -- the Entertainment Software Rating Board (ESRB) gives it fairly gentle ratings. But you can’t go by game ratings alone. While video game ratings, as provided by the ESRB, offer a good starting point, not all of the games that receive the same rating prove equally offensive. For example,

a game may be rated “T (Teen)” for a single use of a curse word in a song lyric or for illustrating cartoon animal poop, as well as violence and suggestive themes. The Nintendo DS version of “Ben 10 Alien Force: Vilgax Attacks” received an “E” rating for Cartoon Violence and Comic Mischief, while versions for Xbox 360, Microsoft, Wii, PS2 and PSP are considered “E 10+,” or appropriate for everyone over 10. Ben does have to fight to save the universe, but the game also contains puzzles and platform challenges that encourage children to think. When considering a game, think about its possible benefits, not just its rating. And take the time to look up a few reviews -; they will give you a good idea about the reasoning behind the ESRB’s ratings. Of course, the best resource for choosing video games is readily available -- talking to your children about why they want specific video games can help you make appropriate decisions. If you’re still in doubt, start playing the games with your kids -- you will know exactly what they see and hear, and enjoy a fun bonding experience. For more information, visit www. d3publisher.us.

Party-planning tips to make a happy host Every host knows the elements of a great party - fantastic food and beverages, just the right balance of sophistication and fun, and decor that speaks to the season and theme of your soiree. In the right combination, those ingredients ensure guests will have a great time. But what about your good time? Staging a party should be every bit as sweet for you as attending it is for your guests. As your celebration plans rev up, follow these simple steps to ensure your party-prep is both fun and effortless: * Go with what you know. Sure, sampling new dishes can be fun and you can introduce a few unfamiliar dishes to your party menu. But for sure-fire success, stick with what guests know and love - and do the familiar with flare. Familiar, traditional and simple are just fine, as long as what you’re serving - hors d’oeuvres to dessert - is palate-pleasing. * Plan one show-stopping experience for your party guests. Host a wine tasting event by pairing your favorite varietals with a selection of premium dark chocolates, like Lindt EXCELLENCE dark chocolate diamonds. Individually wrapped and available in four distinct flavors, these chocolates lend themselves to an array of wine pairings. Try serving Lindt EXCELLENCE A Touch of Sea

Salt with a Pinot Noir or EXCELLENCE Intense Orange with a Chardonnay. * Make prep manageable. If you’re rushing to do everything the night before or the day of the party, it’s easy to feel overwhelmed - and make mistakes. Look for ways to minimize day-of prep, such as making and freezing a batch of appetizers the week before, or tackling house-cleaning bit by bit over the few days leading up to the event. The day before, take care of set-up by placing decorations and arranging furniture to facilitate conversation and a clear path to the food table. * End the evening on a high note. Give your guests something to savor and enjoy on the way home by offer-

ing each a parting favor. Individually wrapped treats such as the premium Lindt EXCELLENCE chocolate diamonds say “sophistication” and “’til we meet again” far better than a hasty hug at the door. Consider placing the individually wrapped chocolate in small mesh bags tied with colored silk ribbons. Place the bags on a decorative tray by the door at the end of your night to ensure that every guest leaves your party with a memorable token.Celebrations should be fun for everyone - the hosts as well as the guests. You can maximize your party enjoyment and create a memorable event for guests by keeping things simple, planning ahead and serving familiar favorites with flare and fun.

Beckstrands 10th Anniversary Gala Raises $1.81 Million Celebrity Lisa Rinna with longtime supporters Holly and Dave Wilson Photos by Carla Rhea and Tony Lattimore Celebrating their 10th anniversary, Beckstrand Cancer Associations legendary Diamond and Pearl Ball, held at The Ritz-Carlton, Laguna Niguel for an intimate crowd of 300 had only the nonprofits most cherished supporters in attendance. The gala realized an amazing $1.81 million in net proceeds, which will enable the Beckstrand Cancer Association to continue to help cancer patients and their families through trying circumstances during their cancer journeys. Co-hosting the elegant black-tie affair once again was Eva La Rue, the Associations National Spokesperson and well known television actress, with Beckstrands President/CEO Lil Spitzer. Beckstrand program recipient and recent cancer survivor Bryan Fazio touched hearts with his story of facing numerous recurrences of Hodgkins Lymphoma in his early 20s and, in the face of a daunting prognosis time and time again, stayed on active duty in the Navy for two years and earned his MBA degree. When he told guests that following his three-year cancer battle, he was cancer-free, the entire room rose to their feet in applause. Lauding Beckstrand, who paid his familys mortgage for seven months when they were about to lose their home, Fazio Dave Olsen and Daniela Ruah with Eva La Rue and Joe Cappuccio said, “During my fight, Beckstrand was there and when I graduated, they celebrated my victory with me”. Celebrated longtime Beckstrand supporters Mike and Jan Salta who are known for their generous and caring hearts, have supported the mission and programs of Beckstrand for the past decade, playing a pivotal role in the development and long-term execution of patient-focused assistance throughout the local cancer community. The Saltas $500,000 gala gift, announced later in the evening, showed their generous spirit. Newport Beach-based Lugano Diamonds, Presenting Sponsor three years running, provided the piece de resistance in the live auction a stunning 10.02-carat Ceylon sapphire. The rare, unmounted gem offered the winner the opportunity to design the setting with $5,000 towards that end, thanks to Lugano President and Design Director Moti Ferder, a Beckstrand board member. Ferder sweetened the pot by adding two oval matching five-carat sapphires, and it sold to longtime supporters Holly and Dave Wilson for $125,000. In a remarkable gesture, an anonymous donor offered to match the final bid, bringing the total amount raised by Lugano Diamonds Ceylon Sapphire to $250,000. Spitzer recognized several individuals who have been involved with the ball for the entire 10 years the first honoree, Dr. Simon Tchekmedyian; the original gala chair, Kirsten Prosser; the auctioneer, Mark Schenfeld, and gala Bold and the Beautiful’s Don Presenting Sponsor Lugano committee member Stuart Winston, who introduced Beckstrand to its first presenting sponsor, Bulgari, and later to Lugano Diamonds. Diamont and Cindy Ambuehl Diamond’s Moti and Idit Ferder Five couples were recognized for their amazing support, without whom we would not be where we are today, Spitzer said. They included Dave & Holly Wilson, AJ and Joni D’Amato, John & Patty Collins (Patty is Beckstrands board chairman), Keith and Mara Murray, and Blaine and Renetta Caya. Each lady was given a custom-designed gift from Lugano Diamonds a white gold initial necklace with a .30cts diamond encrusted butterfly, Beckstrands logo. Luganos Ferder then presented a custom-designed 18k gold necklace with a 2.5-inch high initial J encrusted with 1.50 cts. of diamonds called the Legacy Piece to Jan Salta. Celebrities attending the anniversary gala included Lisa Rinna, the Bold and the Beautifuls Don Diamont and his wife Cindy, and NCIS: Los Angeles Daniela Ruah. Morisettes private performance featured songs from her critically acclaimed Jagged Little Pill album, as well as other hits such as Uninvited and Thank U. She toasted all the caregivers in the crowd, saying, I’ve done it too, so here’s to all of us. The Diamond & Pearl Ball represents a celebration of cancer survivorship, with proceeds from the ball used by Beckstrand Cancer Association to provide cancer patients with advocacy and direct financial assistance for critical survival needs, such as rent/mortgage, utilities, food, gas, transportation, Beckstrand’s President/CEO Lil Spitzer and 10th Anniversary Gala medical insurance, copayments, and prescriptions. coto de caza Village homeowners news 2014 Village Budget At the December HOA meeting, the board will be discussing and voting on the 2014 budget. One issue before the board — that may significantly affect the budget — is the Orange County Fire Authority (OCFA) mandate that the Village follow OCFA’s vegetation management prescription. The OCFA is requiring communities to maintain vegetation according to its guidelines within the 100-foot area behind all homes. In order to comply, the Village may be faced with an almost 100% increase (2x) in landscape maintenance costs. The board also will be discussing and prioritizing projects for the year, such as landscape improvements, tree and trail maintenance, new mailboxes and a social committee. To learn more about the 2014 budget, homeowners may attend the next board meeting at 6 p.m. on Wednesday, December 11, 2013. Join us for Wednesday’s board meeting. All are welcome and encouraged to attend. Agenda items include: Silver / Bronze presentation (Coto Valley Club House and Equestrian Center) 2014-2015 Draft Budget, 2014 Reserve Study and Reserve Funds Transfer. SoCal Edison Easement Annual Calendar Overflow Parking Lot Street Parking Ring the Bell Run Holiday Bonuses Wednesday, December 11 6 p.m. for Open Session 7 p.m. for Homeowners Forum Canyon Room, Coto Valley Club Dogs There certainly are a lot of dogs that reside in the Village. Unfortunately we have received numerous complaints about people not picking up after their pets. There are numerous trash cans and dog waste stations around the Village, so please pick up after your dog; it’s not only considerate to your neighbors but it violates both the CC&Rs and OC ordinances if you don’t. Another concern that has been brought to our attention excessive barking. Pets left unattended and tied up or on porches and decks have been reported barking all day. This is a nuisance and also violates both CC&Rs and OC ordinances. Please be considerate and curb any excessive barking. Finally, it has been observed that dogs are being let to roam off leash and out of owner’s control. There are stories in the news relating to children being injured by dogs not under control of their

owners. Closer to home, we have had a serious injury within the Village regarding a dog bite. Please keep your dogs on leash and under control at all times so that everyone can safely enjoy the Village. Parking Policy With the holidays and the many parties that will occur, please remember to follow the parking policy and be sure your guests are in compliance. Parking passes should be placed in guest’s vehicles with the owners address and are available for download from the Village Blog. The parking passes can help identify the owner in the event of an issue and could prevent towing. Let’s review the parking policy. Please utilize your driveway, off-street parking and the overflow parking lot on Ortega & Coyote before parking on the street. Parking is allowed on only one side of the street, this is to allow emergency response vehicles to better navigate our streets in the event of an emergency—Parking on both sides of the street is strictly prohibited and could result in towing of the improperly parked vehicle. Through 2013, parking is on the odd side of the street. Starting January 1st 2014, parking is on the even side. There is no overnight street parking allowed. Cars must be off the street by midnight or are subject to towing. Holiday Decorating Contest The holidays are right around the corner, and the Welcome & Social Committee is continuing our tradition of sponsoring the Holiday Home Decorating Contest. Besides making the Village look festive during the holidays, there are cash prizes for the top 3 homes: 1st $150, 2nd$100, 3rd $50. The judges will be reviewing the homes in the evenings between December 18th-21st. So please make sure to get your decorations up and lights turned on to be included in the contest. Happy Holidays! Safety at Night One of our residents wanted to remind everyone to wear light colored clothes or bring a flashlight when walking in the Village at night as there are no street lights. For those of you driving, please slow down and drive carefully. Let’s keep everyone safe. Violation Process It has been brought to our attention that there is some confusion regarding the violation process. Currently there are 2 violation drives per month that are conducted by management and the Violation Committee. If during one of the drives, the committee notes a violation of the CC&R’s or Architectural

Guidelines, an initial courtesy notice is sent to the homeowner. If it was a transitory issue, such as trash cans left out, and you have resolved the issue, there is no need to contact management; the committee will review the violation on the next drive and close it out if the violation has been resolved. However, if on the next drive the violation has not been remediated or you have not contacted management, a second letter is sent out requesting the homeowner attends the next Board meeting for a violation hearing. If the homeowner does not resolve the condition or make arrangements, they could be fined $50 as part of the violation process. If the violation is still not cleared, they could continue to be fined and eventually invited to Alternative Dispute Resolution. The violation and letters are not meant to be impersonal, but they are the only way management has to track issues. The Board is easy to work with and if you have an issue or concern, please reach out to management as soon as possible to discuss the issue and work out a solution. The goal of this process is to keep the Village looking beautiful and a great place to live. Corner Lots The Board and Landscape Committee has worked hard to improve and beautify our corner lots; benches have even been installed for the benefit of everyone. It has been noticed that there has been an increase in trash, dog waste, and cigarette butts strewn across the lots, especially around the benches. Each corner has a trash can, so please be considerate of your neighbors and pick up your trash, pet waste and cigarette butts and place them in the proper receptacles. Thank you for keeping the Village clean. Landscaping Please be advised that exterior landscaping on your property does require approval from the architectural committee prior to changes being

made. Remember that mulch can only be used around trees and planter areas but may not be used to fill a large open space of to fill in bare areas in your lawn. Additionally, firewood must be stored along the side of your home or inside your garage. Exterior Changes As a reminder, any exterior work, whether it’s the front or backyard landscape, hardscape, changes to the home, painting, etc. requires Architectural Committee approval. This includes modification, changes and even like-for-like work. This is to ensure that you don’t receive a violation or cease and desist letter and/or a fine. Please help keep the Village looking great. A copy of the CCR’s and Architectural guidelines can be found on our blog. Please contact management if you have any questions. Over the past thirtyfive years in the dental field, one of the most significant changes I’ve seen is the appearance of people’s Dr. Michael Tessier back teeth. We usually talk about front teeth when talking about cosmetic dentistry, but the appearance of the back teeth is also significant. I remember when I started in dentistry looking at mouths full of black fillings. I seldom see that anymore today, particularly in Southern Orange County where my practice is located. As an example, several years ago, there was a trailer for a Goldie Hawn movie in which this lovely actress threw her head back and laughed loudly, displaying a mouthful of silver/mercury amalgam fillings, which had turned black. Hardly consistent with the rest of her Hollywood visage. When silver fillings get old, they corrode- effectively rust- and it’s this silver oxide that turns black. And, that blackening is so pervasive that it often turns the whole tooth very dark. Last week the checker at

the supermarket had mostly clean, white teeth, except for the two lower left molars with very large mercury/ silver amalgam fillings. They’d probably been in her mouth for twenty years, and while they could have been clinically sound, she probably did not realize how they affected her appearance. By removing and replacing that black filling with a tooth-colored plastic restoration, or a toothcolored porcelain filling (lasts longer than plastic), or, in the case where removing the filling would leave the remaining tooth structure too weakened, a tooth-colored crown (or cap), the tooth could be returned to its normal, unremarkable appearance. Given the law of unintended consequences and the first rule of medicine-“Do no harm”-we avoid doing dental work that isn’t absolutely necessary. But a procedure like that is relatively non-invasive, and the effect is both dramatic and beautiful. Worth thinking about. If you have any questions about any things dental, please call my office (949-459-7212) to make a complimentary consultation appointment. Your go-to guide for elevator and escalator safety during the holidays Remember the scene in Home Alone where the family is rushing through the crowded airport? Or images of teeming crowds in a shopping mall, every arm holding countless packages? Well ... it’s that time of year again! November and December are arguably the busiest months of the year for traveling and shopping. Millions of people descend on the nation’s airports and shopping centers looking to create that perfect holiday memory. With all the excitement surrounding this time of year, the last thing Americans should worry about is escalator and elevator safety while navigating through the crowds. But while you may be more focused on your holiday to-do’s, you need to remember some important safety tips about the elevators and escalators you are using. Safety innovations have come a long way in the last few decades and today’s elevators and escalators are safer than ever before. The National Elevator Industry, Inc. (NEII) is the expert in building transportation safety. NEII works to develop and promote updated

safety codes, encourage the adaptation of the latest safety technologies, and ensure passengers are informed on the safest riding procedures for elevators and escalators. However, even with all the advancements in safety technology, it’s worth keeping in mind that most accidents can be easily prevented by following simple elevator and escalator safety tips. Below are key guidelines proven to keep riders safe during the holiday season and any time throughout the year: When boarding and riding elevators: * Allow passengers exiting the elevator to clear before boarding * Watch your step - the elevator car may not be perfectly level with the floor * Stand clear of the doors - keep clothes and carry-ons away from the opening * Hold children and pets firmly * Leashed pets should be on the same side of the door as the passenger to prevent the door from closing on the leash * Passengers nearest to the doors should enter first when the car arrives * Push and hold the “door open” button if doors need to be held open, or ask someone to push the button for you * Never try to stop a closing door, wait for the next car * Once on board, quickly press the button for your floor and move to the back of the car to make room for other passengers * Hold the rail or stand against the wall, if available * Pay attention to the floor indications and announcements when provided * If the doors do not open when the elevator stops, push the “door open” button

If there is ever an emergency, remember that all elevators have several safety devices, one of which is brakes that will stop the car if it is not operating properly. If the elevator should ever stop between floors, do not panic. Follow these guidelines: * If the elevator should ever stop between floors, do not panic, there is plenty of air in the elevator * Never climb out of a stalled elevator * Use the “alarm” or “help” button, the telephone or the intercom to call for assistance * Above all, wait for qualified help to arrive and never try to leave an elevator that has not stopped normally * Emergency lighting will come on in the event of a power failure When entering escalators: * Watch the direction of the moving step and step on and off with extra care * Hold children firmly with one arm or hold child’s free hand * Hold small packages firmly in one hand, but always leave one hand available to hold the handrail * Grasp the handle as you step onto the moving step * Do not step onto an escalator going in the opposite direction * Do not take wheelchairs, electric scooters, strollers, hand carts, luggage carts or similar items on the escalator When riding and exiting escalators: * Keep loose clothing clear of steps and sides

* Wear closed-toed and hard-soled shoes, and avoid wearing footwear made of soft-resin or other rubbery materials * Stand clear and keep feet clear of the sides of the escalator * Face forward and keep firm grip on the handrail * Reposition your hand slowly if the handrail moves ahead or behind the steps * Don’t climb onto or ride the handrail * Do not let children sit on steps or stand too close to sides * Don’t hesitate and step off promptly * Make sure to step over the comb fingers; don’t let your feet slide off the end of the escalator * Immediately move clear of the escalator exit area; don’t stop to talk or look around since other passengers may be behind you Always remember, if there is an emergency, simply push one of the “stop” buttons located at the top or bottom landings of the escalator near the handrail or floor level. For more detailed information about elevator and escalator safety, visit the NEII website at www.neii.org.

Tips for hosting a holiday party that shines Entertaining with family and friends is one part of the holiday season that we all look forward to. But holiday hosting can sometimes be harried. To keep you and your guests merry this season, consider hosting a wine party that shines. David Mirassou, wine expert and sixth generation of America’s oldest winemaking family, believes that food and wine enhance one another and are best shared with family and friends. His secret to hosting a stress-free soiree is planning for a creative, small-bite menu with wine pairings that highlight the flavors of each dish. “The wine you select should complement the food, look beautiful on the table and inspire toasts,” says Mirassou. “The right wine can add elegance to any holiday occasion and it can play an important role as both a gift and entertaining staple at celebrations throughout the season.” Here are a few wine entertaining and gift-giving tips to get you in the holiday spirit: * Offer small bites and festive fare. Prepare an assortment of appetizers and small plates for entertaining, allowing your guests more sampling opportunities and letting you out of the kitchen to mingle more. * Create a cozy setting. Consider setting up food stations in your home to allow guests to congregate in different areas. Floor cushions around a coffee table and coasters on the mantle will encourage mingling. * Plan to offer your guests both a red wine and a white wine. A Chardonnay has wide appeal because it has fruitforward flavors to maximize food pairing options. A Pinot Noir also has great versatility in food and wine pairings. * How much wine should you serve? A general rule of thumb is to plan on about one glass of wine per person for each hour of the gathering. * Stretch your wine dollar. Now is the time to take advanPage 22

tage of price breaks for purchases of six or more bottles at many supermarket chains. For an event, the savings can really add up. * Personalize a gift from the vine. Not hosting this season? With very little effort, wine can be a gift with a personal touch. Embellish wine gift bags or boxes with festive ribbon and trim or add a custom neck tag by writing a note about the wine you are giving. Having trouble picking the right wine to give as a gift? Visit Mirassou.com to take their quiz and see what’s right for you, along with some wine pairing ideas. You can also visit the site or Facebook.com/MirassouWinery for more entertaining tips and recipe ideas. Try this Belgian Endive and Dried Cherry Quinoa Salad - an easy-to-prepare recipe that is also festive in its presentation. Belgian Endive with Dried Cherry Quinoa Salad Prep time: 15 minutes Cook/stand time: 22 minutes Chill time: at least 1 hour Ingredients: Salad: 1 cup quinoa 1 1/2 cups vegetable stock or broth 1/2 cup dried cherries, chopped 1/4 cup snipped fresh chives 1 tablespoon chopped fresh thyme 1/4 cup chopped walnuts, toasted 24 Belgian endive spears Dressing: 3 tablespoons extra virgin olive oil 3 tablespoons white balsamic vinegar 1 teaspoon stone ground mustard 1/4 teaspoon sea salt or to taste

Allergies are one gift you don’t want to share during the holidays The holidays are a time when the decorations come out of storage, a live tree is brought inside adorned with lights and tinsel, and holiday scents fill the air. While this sounds like a warm and homey-style holiday, it can also cause watery eyes, runny noses and sneezes. Read on to learn how you can bypass these problems and enjoy a festive holiday season. The outdoor allergy season may have ended with the frosty cold weather of fall, but it’s the kickoff to the indoor allergy season that affects millions of allergy sufferers and those with asthma. “The holidays can present a variety of challenges for asthma and allergy patients,” says Dr. Cliff Bassett, an ambassador for the Asthma and Allergy Foundation of America (AAFA). “Our environment changes in many ways during the holidays, from having new people in our homes to bringing in potential irritants like pine trees and dusty old holiday decorations.” AAFA offers some advice for helping minimize allergy and asthma triggers in your home this holiday season: * If you know the guests you’re inviting into your home have allergies or asthma, adjust your cleaning

program to help minimize irritants. Use products that reduce allergens on hard surfaces, but don’t contain harsh or potentially irritating chemicals. A vacuum with a HEPA filter can also reduce the chance of distributing dust into the air. And don’t forget to change your furnace filters as well. Use a high efficiency filter that can last up to 90 days. * Most people store holiday decorations in attics, basements or garages and they can pick up dust, mold and other irritants while in storage. Thoroughly clean stored decorations before using them in your home. If one or more of these irritants is a trigger for you, wear a mask while cleaning. When you’re done with the decorations this year, clean them again before you seal them in plastic bags and store them in airtight containers. * If you or a loved one suffers from a tree or pollen allergy, artificial trees can be a less irritating substitute, provided you opt for one that’s not coated with sprayed-on “snow.” If you will be using a live tree, you can reduce mold problems by thoroughly wiping the trunk with a solution of lukewarm water and diluted bleach (one part bleach to 20 parts water).

Before you bring the tree inside, use a leaf blower to remove pollen grains. * Everyone loves the smell of the holiday, but scented home accessories can be irritants. Limit the use of air fresheners like candles, oils and potpourri. If you really want to fill your home with a holiday aroma during a special occasion, try baking using naturally fragrant ingredients like vanilla, cinnamon or citrus. * A crackling fire can create a warm, festive mood for holiday gatherings. To minimize potential irritation, don’t use wood-burning stoves or fireplaces at all. If you use a gas fireplace, check vents and use secured doors, rather than screens, to reduce smoke entering the room.

* When giving a gift to someone with allergies or asthma, keep their potential triggers in mind. For example, some children with asthma may be irritated by the materials commonly used in stuffed animals. Look for products that do not have sensitizing or allergenic chemicals such as formaldehyde. You can also find a list of allergy and asthma-friendly products on the AAFA website, www. aafa.org/certified. The holidays are meant to be a time of joy and celebration. Take steps to minimize irritants in your home environment so everyone in your family and your guests can enjoy the season.

Lights, camera , holiday party With the holiday party season right around the corner, a growing camp of entertaining experts suggests approaching things a little less like Martha Stewart, and a little more like Steven Spielberg. Whether it’s a Halloween party for the kids, a Thanksgiving potluck, or an elegant Christmas dinner, entertaining pros know that “setting the scene” for a memorable event can make a significantly greater impact than debuting the next ambitious dessert recipe. “Inviting family and friends into your home is an intimate gesture,” says Ginny Bean, founder/publisher of Ginny’s catalog and Ginnys.com.”From the way the lighting is set, to the scented candles you choose and the music that’s playing, the best gift you can give your guests is to create a scene that makes them feel comfortable and welcome.” Bean offers the following checklist for transforming your home into a seamless scene for holiday entertaining, and creating a warm and inviting place for guests to interact. * Choose your space. Identify and arrange the area of your home where your scene will be set. When choosing a location, think about the season and theme of your event. If it’s a Halloween party and you’ve transformed your yard into a ghoulish garden of spooky spectacles, convene in a front room and open the curtains. On Thanksgiving, gather near the fireplace. If your home doesn’t have a fireplace, electric fireplaces provide surprisingly affordable ambiance and season-long enjoyment for your family. * Set up the room the day before the party, so you have plenty of time to make last-minute changes. Arrange furniture so guests can move around easily, clearing out extra furniture if necessarily. A general rule of thumb for mixers and cocktail parties is to have seating for 10 to 15 percent of your guests. If the space you choose is going to be crowded, use a single, preferably round, center table for hors d’oeuvres. If Page 24

your space is too big for the number of guests, use multiple small tables to create mini food stations, which will encourage guests to move throughout the room. * Dim the lights. Avoid unflattering overhead lights, and instead rely on table and floor lamps, and mood-enhancing candlelight. To get more light from candles, place them in clusters, and decorate with metallic accents that bounce light around and provide a festive holiday feel. Candles, of course, bring more to the party than a flattering light source. Seasonal scents like spiced pumpkin, cranberry clove and gingerbread maple play a dramatic sensory role in setting the scene. * Simplify the table decor. When creating centerpieces and decorative accents for your table and serving areas, less is often more. Seasonal fruit presented with nuts and berries, or evergreen branches and pinecones from your backyard, can make a lovely and elegant statement, at a fraction of the cost of fresh flowers. If you want to decorate with flowers, remember that one large arrangement makes a stronger impression than several small ones. For maximum impact, place flowers on the main food station or at the bar, where guests are guaranteed to see them. * Add thoughtful touches. Place cards casually incorporated into a nicely folded napkin, or placed between the tines of a fork, show how you have thought about each guest and who they might enjoy meeting. * Turn on the music. Music helps your guests relax and gets them in the proper party mood. Many stereo systems now have an mp3 player dock, so you can create a playlist for the entire evening and avoid the hassle of scrambling to change CDs. Choose tunes that match the occasion, but Bean suggests mixing traditional holiday songs with favorite party tunes in a ratio of one to three.

The Coto de Caza News

* Ready, set, relax. Set the table, dim the lights, start the music and light the candles well in advance, so you’re relaxed and ready to greet your guests the minute they walk in the door. “If you’re sometimes challenged to get everything ready in time, remember that getting 80 percent of the work finished is good enough,” says Bean, who also encourages her fellow hostesses to “stop trying to be Superwoman in an apron, and ask for help.” To browse hundreds of seasonal entertaining, home and kitchen ideas, or request a copy of Ginny’s fall/winter catalogs, visit www.Ginnys.com or call 800-693-0809. Have difficult-to-shop-for people on your gift list? Unique gift ideas that ‘wow’ When creating a holiday shopping list for gifts for friends and family, there is always at least one impossible-to-shop-for person on that list. Maybe they’re the type of person who doesn’t need anything, or are not involved in hobbies that cater easily to gift ideas. Whatever the reason, each holiday season you struggle to find the perfect gift to celebrate the season. “Sometimes coming up with gift ideas for friends and family is a challenge,” says Anna Post, great-great granddaughter of Emily Post and co-author of Emily Post’s Etiquette, 18th Edition. “I recommend taking a step back and looking at the recipient’s taste, personality, interests, daily habits and hobbies for inspiration. And remember, sometimes practical gifts that recipients will use on an everyday basis are the best gifts for those who are difficult to shop for.” To generate ideas, check out the offerings at your local Staples retail store where you can find perfect gifts for everyone on your holiday shopping list - including those that are hard to shop for. Consider the following gift suggestions:

For the entertainer - Hosting a dinner party often involves uncorking a bottle of wine. Many people will open the bottle early to let it breathe, but the small opening at the top of the wine bottle doesn’t allow air to properly oxygenate the drink. For this person, the Brookstone Aero Wine Aerator would be a great holiday gift, as it allows them to do a little entertaining in high-tech style. As an added bonus, throw in a couple of wine and drink markers by LeMarqueur. These come in gold or silver, and allow the host to put names on wine glasses so attendees know which glass belongs to them. The ink will wash off with cooking oil so the glasses can be used again at future parties. For the organizer - If you have someone on your shopping list who is constantly taking notes for shopping lists, calendar scheduling or even copying down recipes, the quilted ARC leather notebook system sold exclusively at Staples will be sure to please. It comes in three colors - teal, pink and black - and can be paired with Avant Gel Ink pens, giving the recipient a sense of style when note taking.

For the youngsters - Children have plenty of electronic gadgets to keep them busy, so consider going a different direction with the gift of origami. Beginners can start off easy with Scholastic Follow the Directions Art Easy Origami, which includes all the paper supplies and directions needed to create fun farm animals, rockets and flowers. As a benefit, origami folding helps children with fine motor skills, reading, counting as well as identifying colors and shapes. An-

other fun and educational gift idea is Appleletters, which contains 110 tiles with letters, and games that encourage children to spell out words using the letters they have in an effort to be the first to use all their tiles. These are just a few of the ideas you can find at Staples that are perfect for those difficult-to-shop-for people on your holiday shopping list. And as a bonus, you can also shop for your gifts online at Staples.com.

Handy Holiday Reminders Santa makes a list and checks it twice so he doesn’t forget anything. Do you? There are a few things that a lot of people forget during the holidays, according to a survey by RadioShack. So you might want to double check your own to-do list, just to be sure that everyone’s holiday can be jolly. Thank you notes – 44 percent of those surveyed forget to write a note of thanks for a gift. Stock up on thank you cards early – then put a “Thank You Day” on the family calendar between Christmas and New Year’s so that everyone can take care of this important task before too much time goes by. Batteries – 36 percent forget batteries for the gifts they buy. There’s nothing more frustrating than getting excited about a new present, then not being able to use it right away because there are no batteries. When you buy an electronic gift, make sure you put the right size batteries in the cart before you check out. Stock up on some of the more common sizes in case someone else forgets the batteries for your gift, too. Accessories for gifts – 31 percent tend to forget gift accessories, such as carrying cases, battery chargers, headphones or cleaning kits. If you’re not sure what kind of accessories your gift should have, you can always include a gift card so that the recipient can buy just what they need later on. For more accessory and gift ideas, visit www.radioshack.com. Hostess gifts – The holidays are filled with parties and special occasions, yet 29 percent don’t remember to bring a host or hostess gift with them. Keep a little stash of ready-to-go gifts such as gourmet cocoas or coffees, boxed chocolates or scented candles so you have something handy for even the most last-minute events. Receipts and return options – Sometimes, despite your best efforts, a gift just doesn’t work out, so you need to make it easy for the recipient to return it. If you’re one of the 70 percent who said they plan to do the majority of their holiday shopping in stores this year, be sure to ask for a gift receipt along with your regular receipt. If you’re one of the 26 percent who plans to do 50 percent or more of shopping online, find out what the site’s return policies are. Print up any documentation for the gift and make it available to the recipient should they need it. Taking care of these little things now will help make the holidays go more smoothly, and let you enjoy them even more. The Coto de Caza News

Buying technology for seniors this holiday season Finding the perfect gift for mom and dad or grandma and grandpa often seems impossible. If they’re like a lot of seniors, they’re fairly well settled and don’t have long wish lists. Plus, it seems that many of the hottest gift ideas are tech devices, certainly not something that would be of interest, right? Think again. Seniors aren’t as wary of technology as some might think. In April 2012, the Pew Internet and American Life Project reported that more than half of the 65 and over population were online and using email. The number is growing as seniors see the advantages of technology, from convenience to safety benefits. And that’s good news for kids and grandkids in desperate need of great gift ideas. Help the seniors in your life manage more from the comfort of their home. A new laptop or tablet can be a valuable tool for communicating with loved ones, managing finances and even taking care of some shopping. More than the gift itself, they’ll appreciate the time you take to show them the ropes with a video chat program or online bill pay services, not to mention getting them connected with

family and friends on social media. If you’re in the market for a portable computer, there are numerous options. An all-purpose laptop typically offers a larger screen, which can be helpful if eyesight is an issue. At 4.5 to 8 pounds, they are ideal for the home, but can be carried to the corner coffee shop without much hassle. The Acer Aspire offers a 15.6-inch screen, great for viewing videos and images, and weighs less than 6 pounds. Netbooks are smaller and more lightweight, good for some simple Web browsing and email, but often not robust enough to handle streaming video or multiple applications running simultaneously. Asus offers some high quality options, which are generally more budget-friendly than a laptop. Tablets have taken the market by storm, and new devices are being designed with seniors in mind. The Claris Companion blends in with a home’s decor, featuring a bamboo bezel, a stand and speakers built into the front. The 10-inch screen has big buttons, large text and a simple user interface, and it accommodates alerts set up by the senior or family to

The Amazon Kindle starts with a 6-inch screen, but larger sizes (up to 9.7 inches) are featured on certain models. Seniors can increase fonts to a comfortable size for reading, and they don’t need to spend a bundle on books as many libraries now lend e-books. Keeping connected with parents and grandparents may be the biggest gift of all this holiday season, so don’t shy away from the gifts that can make that happen. keep abreast of medication or other critical tasks. Provide seniors - and yourself - with the gift of a cellphone and peace of mind. Even if they don’t text or surf the Internet, your loved ones can benefit from having a convenient way to call for help in an emergency. Consumer Cellular carries senior-friendly phones, like the Doro PhoneEasy 618, with large and backlit buttons and hearing aid compatibility. No contract phone service with flexible plans means paying only as much as they use the phone. Of course, some seniors may be ready for smartphone features at their fingertips, including powerful cameras for capturing memories of the grandchildren. As with other products, consider a device with a larger screen size to avoid eye strain. Also, keep the interface simple. Apple products tend to be fairly intuitive, so an iPhone may be a contender. The LG Escape from Consumer Cellular is another option, particularly if you want to give a phone loaded with advanced features. If shopping for avid readers, consider giving an e-reader and load some classics to get them started.

Said sale will be made, in an ‘’AS IS’’ condition, but without covenant or warranty, express or implied, regarding title, possession or encumbrances, to satisfy the indebtedness secured by said Deed of Trust, advances thereunder, with interest as provided, and the unpaid principal of the Note secured by said Deed of Trust with interest thereon as provided in said Note, plus fees, charges and expenses of the Trustee and of the trusts created by said Deed of Trust. NOTICE TO POTENTIAL BIDDERS If you are considering bidding on this property lien, you should understand that there are risks involved in bidding at a trustee auction. You will be bidding on a lien, not on a property itself. Placing the highest bid at a trustee auction does not automatically entitle you to free and clear ownership of the property. You should also be aware that the lien being auctioned off may be a junior lien. If you are the highest bidder at the auction, you are or may be responsible for paying off all liens senior to the lien being auctioned off, before you can receive clear title to the property. You are encouraged to investigate the existence, priority, and size of outstanding liens that may exist on this property by contacting the county recorder’s office or a title insurance company, either of which may charge you a fee for this information. If you consult either of these resources, you should be aware that the lender may hold more than one mortgage or deed of trust on the property. NOTICE TO PROPERTY OWNER The sale date shown on this notice of sale may be postponed one or more times by the mortgagee, beneficiary, trustee, or a court, pursuant to Section 2924g of the California Civil Code. The law requires that information about trustee sale postponements be made available to you and to the public, as a courtesy to those not present at the sale. If you wish to learn whether your sale date has been postponed, and, if applicable, the rescheduled time and date for the sale of this property, you may call 1-800-281-8219 or visit this Internet Web site www.recontrustco.com, using the file number assigned to this case 12-0021991. Information about postponements that are very short in duration or that occur close in time to the scheduled sale may not immediately be reflected in the telephone information or on the Internet Web site. Notice To Potential Bidders: If you are considering bidding on this property lien, you should understand that there are risks involved in bidding at a trustee auction. You will be bidding on a lien, not on the property itself. If you consult either of these resources, you should be aware that the same lender may hold more than one mortgage or deed of trust on the property. Notice To Property Owner: The sale date shown on this notice of sale may be postponed one or more times by the mortgagee, beneficiary, trustee, or a court, pursuant to Section 2924g of the California Civil Code. The law requires that information about trustee sale postponements be made available to you and to the public, as a courtesy to those not present at the sale.
