Taking Art to New Heights: The Work of John Duggan
Native Orange County resident John Duggan has lived in southern Italy now for almost three decades, and during that time has become a famous and sought-after artist. He is a unique blend of architect and painter, and has mastered the fine art of handdecorating walls and ceilings with his trompe l’oeil creations. “It’s a lost art even here in Italy. Many homes have decorated ceilings dating back to the late 1800’s, when artisans from Naples would travel around the country and paint elaborate decor in the palazzos and villas of aristocratic families. John studied architecture at Cal Poly San Luis Obispo, and was introduced to the splendors of Italy while studying in Florence during his final year. He met his future wife who was also studying in Florence. Duggan is also a master watercolor painter, and his studio is filled with both landscapes and portraiture. How does someone who has lived in Italy for half of his life still describe himself as a kid from California? “Well, I was born and raised in Orange County, and have never lost that easy-going California attitude. It’s interesting to see how the rest of the world views California. I live in a town called Lecce in southern Italy in a region known as Puglia, and we share many aspects of California, namely the beautiful beaches and sunny weather. Today Duggan does commissioned work all over the world. We asked Duggan what brought him to Coto? “I first heard about Coto de Caza from my grandmother Margaret, who decided to move here from Garden Grove after she retired in the early 1980’s. As the story goes, she fell in love with the area, walked through a model home, and said “I’ll take it.” The realtor said, “you mean, you like the floor plan? You’d like a house like this one?” And she replied “no, I want THIS house.” The man quickly explained that this was a model home, and that they couldn’t sell that particular house until all the lots in the subdivision were sold. My grandma answered that wouldn’t be a problem, “just let me know when the time comes and I’ll take it.” She was born and raised in rural Kansas, and she had this no-nonsense attitude about her that I truly aspire to myself.” Margaret’s daughter Lynn Larson has asked her nephew John to paint a mural on her living room ceiling. “I really admire the Coto de Caza housing concept, but I think it can be taken a step farther. The area is filled with beautiful homes, each beautifully furnished and personalized to the owner’s taste, but the architecture remains essentially the same. Linda wanted to further personalize her home by asking me to render a sky ceiling that will add depth and perspective to the room. It will also adapt to her beautiful furnishings, much of which belonged to my grandmother. I hope it becomes a model for others to see
just how much a decorated ceiling can add to the beauty and sophistication of a Coto home.” Grandma Margaret was an excellent artist herself, and the walls are filled with her floral paintings. “I was truly inspired by my grandmother for many reasons, but above all by her artistic talents. She is the main reason I chose my field of work, and everything I draw or paint has a piece of her in it. Schedule of events: • PARADE of ILLUMINATED EQUESTRIANS • YULE LOG CEREMONY & BONFIRE • SING ALONG CAROLING Since 1979, Coto de Caza residents have held an old-fashioned Yule Log bonfire at the Coto Valley Country Club, Cote’s heritage clubhouse located in The Village, the first community to be established in Coto de Caza. Former resort Vice President, Tom Scott initiated the tradition and Coto residents have continued it nearly every year since. Begun in ancient times, perhaps with Scandinavian Winter Solstice celebrations, the Yule Log ceremony marked the darkest time of the year, before the rebirth of the sun. A log large enough to burn for twelve days was lighted to bring warmth and light to the people. Chips or bark from the log were always kept to ignite the following year’s log. As the tradition was carried to other
European countries, adaptations were made for their customs. In England a log was burned for the Twelve Nights of Christmas to represent the light of the Savior instead of the light of the sun. In France the Yule Log became the Buche de Noel, a rich cake which is traditional even today. In a Persian practice, a large log was cut in four places, marking the four seasons. Called a Yole, the log was carried around a group four times and each time the people would touch a different section for each season to dispel personal faults, mistakes and bad choices made during the past year. In the Coto de Caza tradition, each year a different family from the community is chosen by the Chipper Society which is made up of past recipients. The newly selected Coto family is chosen for their acts of service to their community. This year’s “Chippers” will be announced during the ceremony. A special equestrian parade, caroling and the bonfire are planned for this year’s festivities. Activities begin at 5:30 P.M. for all Coto residents.

Chocolate and cranberries - a holiday gift of taste! Black and White Holiday Bark with Cranberries Yield: 25 pieces Recipe from America’s Test Kitchen Holiday Cookies 2010 Special Issue Use good quality bittersweet and white chocolate in bar form. Chocolate chips contain less cocoa butter so that they can better hold their shape when baked in cookies, but this makes them harder to melt. Using bar chocolate will give you a much better texture in this bark. Scorched chocolate is a very sad thing, so keep a close eye on your chocolate as you melt it. You can also melt your chocolate in a double boiler instead of the microwave if you want. Ingredients 1 pound bittersweet chocolate, chopped, divided 1 cup Rice Krispies cereal 3/4 cup dried cranberries or dried cherries, chopped, divided 1 pound white chocolate, chopped Instructions Line an 8-inch square baking pan with aluminum foil, allowing at least a two-inch overhang on all
sides. Measure out and set aside 2 tablespoons of bittersweet chocolate for the topping. Microwave the remaining bittersweet chocolate in a bowl at 50% power for 1 to 1 1/2 minutes. Use a spatula to scrape down the sides and stir. Continue to microwave the chocolate for 15 second intervals at 50% power, stirring between intervals, until just small lumps remain. Stir until smooth and pour into the prepared pan. Smooth the top and chill in the refrigerator until firm, about 30 minutes. Combine the Rice Krispies and 1/2 cup of dried cranberries and mix them together. Melt the white chocolate using the same method as the bittersweet chocolate, keeping in mind that white chocolate melts at a lower temperature than bittersweet chocolate. Gently fold the cereal mixture into the white chocolate until evenly incorporated. Spread over the bittersweet chocolate and smooth the top. Sprinkle with the remaining dried cranberries and return to the refrigerator to chill for another 30 minutes.
Melt the remaining 2 tablespoons of bittersweet chocolate and pour into a small plastic bag. Cut a small hole in the corner and drizzle the chocolate over the bark. Allow the bark to warm up slightly, about 10 minutes, and pull it out of the pan using the aluminum
foil overhang and transfer to a cutting board. Carefully peel away the foil and cut bark into small squares with a sharp chef’s knife. The bark will keep in an airtight container in the fridge for up to 2 weeks.
Santa Margarita High School Model United Nations Students Visit Boston and Montreal By Chris Popovec Seven Santa Margarita MUN students recently returned from a trip to Boston and Montreal. The students attended SSUNS 2016 Secondary Schools’ United Nations Symposium Model United Nations Conference. Santa Margarita delegates represented the country of the Bahamas. The students who attended the conference were Dessi Gomez, Connor Riley, Mary Retoske, Isobel Hume, Keana Gonzales, Bryce Kaese and Cecilia Nepple. Two students won awards for their superior participation at the conference. Connor Riley and Cecilia Nepple were both recognized for their excellence. In addition to attending the conference, students had a chance to visit many historic sites throughout Boston including Faneuil Hall, Boston Commons, and the grave of Paul Revere. As well as touring historic sights, the students also visited many of the great schools in the Boston area including Boston College, Boston University, MIT, and Harvard. The first
night ended with dinner at Maggiano’s and the group was joined by SM alums Morgan Delaney, Sam Drust, and Jake Lawicki. The second day in Boston ended with a hockey game at Boston College where the students were joined by Santa Margarita alumni Kristi Fecarotta and Grady Higgins. In Montreal, the group visited the historic Vieux Montreal and the magnificent Basilique Notre-Dame de Montreal. Over the two days in Montreal, students were able to experience the Musee des BeauxArts, St. George’s Cathedral, the Olympic Village and a trip to Au Sommet – a 50 story building with 360 degree views of the city. The last days of the trip were spent working hard at the Secondary Schools’ United Nations Symposium (SSUNS). The conference was run by McGill University. With this conference, the SMCHS MUN program has officially traveled to countries North, South, East, and West of the United States. Wrap 1/2 teaspoon salt each strip of bacon around a smokie, 1 egg piercing with toothpick to hold bacon 1/4 cup unsalted butter, melted in place. Place smokies on pan. 2 tablespoons milk Baste each smokie with generous 1/2 teaspoon vanilla extract amount of apple butter. Filling: Bake 20 minutes. Remove and flip 4 ounces cream cheese, softened each smokie. Baste again with apple 1 cup Musselman’s Apple Butter butter. 1 egg Reduce heat to 275 F and bake 1/4 cup unsalted butter, melted another 20 minutes until bacon is 1/2 teaspoon vanilla extract cooked to desired doneness. Make 1 cup powdered sugar sure apple butter doesn’t burn. 1/2 teaspoon ground cinnamon, Transfer smokies to slow cooker plus additional for serving on low heat to keep warm for serving. 1/2 teaspoon ground nutmeg Apple Butter Gooey Butter Cake whipped cream Cake: Heat oven to 350 F. Lightly grease 1 cup flour 8-by-8-inch square pan.
To make cake: In large mixing bowl, whisk together flour, sugar, baking powder and salt. Whisk in egg, melted butter, milk and vanilla until moistened. Spread evenly in pan. To make filling: In large bowl with electric mixer, beat together cream cheese and apple butter until smooth. Beat in egg then beat in melted butter and vanilla. Scrape bowl then beat in powdered sugar, 1/2 teaspoons cinnamon and nutmeg. Spread filling over cake; bake 4550 minutes, or until center is set. Do not overbake as center should be slightly gooey. Cool completely before serving. Garnish with whipped cream and dust with cinnamon to serve. (Family Features)

The number one ranked Eagles swept the number three ranked Eagles of Santa Fe Christian last Saturday in the southern regional final to advance to the California State Final match. Competing in the Open Division, Santa Margarita swept #8 Liberty High School in the first round, defeated #4 Torrey Pines 3-1 in the semifinal, and then swept #3 Santa Fe Christian in the regional final. Santa Margarita will play Archbishop Mitty of San Jose as the northern California representative, the top seed from their region. Less than a month separates Halloween from Thanksgiving. And, this year, Christmas, Hanukkah and Kwanzaa are all within a day of each other, and the two multi-day holidays both end on New Year’s Day. With end-of-year celebrations coming one after another, transitioning from holiday to holiday can ratchet up your stress level. If you really want to enjoy the holiday season to the fullest, it’s important to find ways to create calm in the chaos of party preparations, gift shopping, meal planning and other forms of busyness. Here are some tips to remain calm and in control as you move through the hectic pace of the holidays: Have a plan The holidays are busy and stressful enough without adding uncertainty and last-minute challenges into the mix. Plan ahead for holiday celebrations so that you know well in advance what you’ll need to make a memorable gathering. The further ahead you plan, the more time you’ll have for preparation, so go ahead and create your Thanksgiving menu while you’re sneaking treats from the kids’ Halloween stash. Start your Christmas shopping list at the same time. Establishing a budget can also help ensure you stay calm during the holidays. COTO DE CAZA GENERAL STORE PROGRESS REPORT Larry and Carol, developers of the Coto de Caza General Store are still working diligently through the county approval process. We appreciate the interest and support of the Coto de Caza Community. There have been several obstacles to overcome with the county and we wish to thank Supervisor Lisa Bartlett and Victor Cao for aiding in the process together with our project manager John Cox with procedural advice from Dr. Stacey Lundin, Kevin Canning, County Planner and other supportive professionals within the community of Coto de Caza. All of the proposed businesses ( A Boutique, Mailbox Store, Realtor Coffee House, a Dry Cleaner, that will be in the Coto de Caza General Store including Ron Castruita and Steve Dalby, owners of Hansen’s Natural Foods, Health Food and Grocery Store, Restaurant and Wine Bar and Compounding Pharmacy who have happily made adjustments
to their site as the anchor tenant due to county development requirements. According to our architect Todd Voelker, we now have to wait for the last approval from the county to come in by December 10,2016 (19 Months past our original goal) We are also in the process of obtaining the bids for the construction and final funding. It would be very helpful if we could get a final traffic impact fee waived prior to the payment of the permit (the fee is for freeway impact a non-issue) If the Coto de Caza residents were to provide their help on this issue, it would be helpful. Shea Theraputic Riding center BBQ Raises $1.3 Million Photos by: Pixel That! Guests of all ages gathered for an evening for the 38th annual BBQ and Family Faire at the J.F. Shea Therapeutic Riding Center in San Juan Capistrano. This event must be one of the largest events I have ever attended - with over 1500 of the Center’s sponsors and friends present to support its mission; what a crowd! Their mission is to improve the lives of people with disabilities through therapeutic horse-related programs. And that they do! It had all the fixin’s for a family-style BBQ with carnival games, a scrumptious BBQ, great hospitality and therapeutic riding demos and hundreds of unique auction items all set in a country family atmosphere, even the lemonade was perfect! Near the front gate, the Sponsor Saloon offered passed hors d’oeuvres and an array of beverages created by the Montage Laguna Beach staff. There were many small touches adding fun, such as a sleight-of-hand magician who entertained guests with “close up” magic. Country faire games of skill, led to prizes of stuffed animals, hats, and other souvenirs. One of this year’s most popular additions was the petting zoo, with its goats, donkeys, a zebu (a small cow), a miniature pig, an alpaca and bunnies. Shea Center Executive Director, Dana Butler-Moburg, welcomed the guests at the rail of the Klein Family Arena where the evening’s featured rider, Navy veteran Kevin Whitney, age 26, presented the colors. He then gave a riding demonstration to show his progress following a parachuting accident that left him with a spinal injury and paralyzed legs. Whitney returned later in the evening in the Samueli Arena to lead one of the evening’s most heartfelt moments, the “Parade of Stars.” This procession of 70 Shea Center clients, their families, and support volunteers moved through the dinner tables to a standing ovation. A stirring video was shown documenting Whitney’s success story that began in a wheelchair at The Shea Center front door and ended with him running and carrying his bride down the aisle at their wedding just eight months ago. Returning this year was popular emcee and auctioneer Shawn Parr, known as the ambassador of country music. Parr knew The Shea Center from his work in Los Angeles when he was the top-rated country music radio disc jockey. He served as the BBQ’s emcee and auctioneer, until moving to Nashville, where he now hosts a nationally syndicated radio show. This year he was able to return to serve up his usual high-energy style that keeps the evening lively and the bids coming. Food for the evening was prepared and served by volunteer members of the Montage Laguna Beach staff. Music through the evening and for dancing was provided by country band Swingshift. There were over 340 unique and fascinating items at the silent auction tables and eight live auction favorites. These included a packet of 4 VIP Jimmy Buffet tickets to one of the Irvine Meadows Amphitheatre’s last ever concerts. Another bidder won tickets to “Oldchella,” officially known as “The Desert Trip” in Indio, CA. The festival featured Paul McCartney, Bob Dylan, Neil Young, Roger Waters, The Rolling Stones and The Who. Long-time Shea Center partners, Jenny and Bill Klein, issued a matching challenge grant for the first $150,000 raised in the Fosheim Rider Support Fund portion of the evening. Then, in a moment of exceptional generosity, Bill Klein jumped up and agreed to match the entire total amount raised for the Fosheim Fund. The Shea Center’s programs address 60 physical and cognitive disabilities including autism, cerebral palsy, developmental delay, speech disabilities and Down syndrome. As a nonprofit 501(c)(3), the organization receives no federal, state or county funding. Rider fees contribute only 12% of The Shea Center budget. The rest is funded solely by grants, donations and fundraising events. The Center is ranked at the “Premier” level by PATH, Intl, the accreditation organization for equine assisted activities. Competitions Ignite Creativity at OC Fair ’s 2017 Imaginology Event April 21-23
Deadline to register for youth competitions is March 24, 2017. Imagination comes alive at the OC Fair & Event Center’s 2017 Imaginology. This free three-day celebration of learning offers an adventure for children and their families as they learn and explore the various fields of S.T.E.A.M. (Science, Technology, Engineering, Arts and Math) through hands-on activities, entertainment, workshops, demonstrations and more. Students are invited to dream big and develop their passions by submitting their best creations in a variety of free competitions. New to the competition categories is 3-D Printed Art where contestants will put their skills to the test by creating an original 3-D printed functional or art-based creation. Participation in Imaginology competitions is free and includes divisions for preKindergarten through 12. Entries are being accepted now and must be submitted online by Friday, March 24, 2017. This recipe makes enough simple syrup for 32 cocktails. Ingredients: 4 Simply Organic Cloves Whole 1 Simply Organic Madagascar Vanilla Beans 3 Simply Organic Cinnamon Sticks 2 cups water 2 cups sugar Rind of 1 orange 6 fluid ounces prosecco, chilled 2 fluid ounces apple brandy
Juice of 1 lemon 2 orange or lemon rind twists Directions: To make the syrup, fill a small pot with water. Bring to medium and slowly add sugar, cloves, vanilla bean, cinnamon sticks and orange rind. Once sugar has dissolved, remove from heat and let steep for 15 minutes, until it is a golden orange color. Strain through a fine mesh sieve to remove cloves and orange rind. Store in an airtight container in the fridge. To make cocktails, divide prosecco into 2 champagne flutes. Split apple brandy and lemon juice between flutes, then add 1/2 fluid ounce simple syrup into each flute. Stir with a long spoon, then serve with orange or lemon rind twist. Butternut Squash Soup Shooters Butternut squash soup turns shooter in this recipe featuring organic squash and curry powder. Ingredients: 2 teaspoons Simply Organic Curry Powder Simply Organic Crushed Red Pepper 1 tablespoon butter or olive oil 1 medium onion, chopped (about 1 cup) 4 celery stalks, chopped (about 1 cup) 3 garlic cloves, crushed and chopped 1 3-pound butternut squash, peeled and cubed (about 5 cups)
1 teaspoon salt 5 cups vegetable broth (or a water and broth combo, if desired) 1 cup canned coconut milk fresh cilantro, for garnish cooked chickpeas, for garnish Directions: In a large stock pot, over medium heat, melt the butter or heat the oil. Add the onion and celery. Cook for four to five minutes, until the onions are translucent and the vegetables “sweat.” Stirring frequently, add the garlic and cook for one minute, until fragrant. Add the butternut squash, salt and curry powder. Stir. Add the vegetable broth and bring to a boil. Then reduce to a simmer and allow to cook for 25 to 30 minutes, until the butternut cubes are soft when pierced with a fork. Into the soup, stir coconut milk, then remove the soup from the heat. Using an immersion blender, blend the soup until smooth and creamy. Serve in shot glasses with a garnish of cilantro, chickpeas and red pepper flakes. 1 clove garlic, grated 1 teaspoon salt 1/2 teaspoon black pepper 2 cups chopped frozen spinach, thawed and drained 1 can artichoke hearts, roughly chopped 2 cups crumbled feta cheese 1/2 cup minced onion 1 pinch chili flakes 1 pinch minced scallions Heat oven to 350 F and place mushroom caps in single layer on baking sheet lined with foil. Mince reserved mushroom stems and heat olive oil in large saute pan over medium-high heat. Add garlic and mushroom stems to pan along with salt and pepper. Saute 2-3 minutes, or until mushrooms are softened. Add spinach and artichoke hearts to pan and cook until heated through, about 3-4 minutes. Remove from heat and place mixture in large mixing bowl. Stir in feta cheese and onion. Adjust seasoning, to taste. Using small cookie scoop, add 2 tablespoons filling to each mushroom cap. Bake mushrooms 20-25 minutes, or until mushroom caps are softened. Sprinkle with chili flakes and minced scallions to serve.

With pumpkin patches popping up and the smell of apple cider in the air, this season is full of celebrations for the whole family. But many of these activities aren’t the most physically active. It’s important for kids to participate in active play all year round; not only does it lead to healthier bodies, but it also helps kids develop healthy minds. According to research from the Centers for Disease Control and Prevention, regular physical activity promotes psychological well-being and reduces feelings of depression and anxiety. As families are busy preparing for the holidays and getting the most out of the season, they can incorporate small changes to make sure their autumn fun encourages the whole family to get up and move. Here are a few ideas: Host a family cooking challenge. Whether you’re hosting a fall holiday meal or prepping a tailgate spread, parents spend a lot of time in the kitchen this season. Get the kids
involved and make a game out of meal prep. Create an ingredient scavenger hunt and challenge your sous chefs to find ingredients in the refrigerator and pantry within a time limit. Pompom Fur Wreath Crafting time: Weekend project Skill level: Some experience necessary Supplies and Tools: Pompom makers: 2 1/2-inch, 3 3/8inch, 4 1/2-inch Bernat Softee Chunky Yarn: Grey Heather, Taupe Grey, Natural (2 skeins each) Scissors Hard foam tubular 12-inch wreath Bernat Faux Fur Pompoms: Grey Lynx, White Rabbit (2 each) Hot gun and glue sticks T-pins or 2-inch pins with pearl heads Decorative ribbon: 2 1/2-inch-by12-foot, blue-grey 1. Follow directions on pompom maker packages to create three different sizes of poms of various colors using chunky yarn. If desired, mix yarn to give some pompoms a speckled look. Make about 50-60, depending on the fullness of the desired look. 2. After making pompoms, place pompoms around wreath, varying sizes and incorporating fur pompoms, as well. The overall look should be a kind of hilly terrain look to give it
depth. 3. Once desired placement has been achieved, glue them in place with hot glue. If needed, secure poms with T-pins or pearlhead pins. 4. Using blue/grey decorative ribbon, create a bow with trailing ends and glue in place with hot glue. Lightly spray inside or outside of smooth Mason jars and jelly jars with rose gold spray paint. Allow each coat to dry completely. 2. Locate templates at joann. com by searching for the project title;
print templates and trim shapes. If the outside of the jar was spray painted, trace the shape with a pencil. If the inside of the jar was spray painted, trace the shape on the glass with a Sharpie. 3. Fill in each design using a detail brush and white enamel paint. Apply additional coats as necessary. 4. Paint jar rims gold. 5. Apply a thin layer or dry brush gold acrylic paint on jelly jars for added texture and dimension. 6. Embellish jars by making bows and knots with scrap strips of fabric or baker’s twine around rims of jars. Fill with sprigs of dried flowers or branches or other seasonal decorations, or for jars painted on the outside, fill with candies or treats for an edible gift.

Berries and Cream Fluted Pound Cake
Recipe courtesy of Baker’s Advantage/Alissa Wallers 4 sticks butter, room temperature 3 cups sugar 6 eggs 4 teaspoons vanilla extract 3 1/2 cups flour 2 teaspoons baking powder 1 teaspoon salt 1/2 cup milk, at room temperature nonstick cooking spray Heat oven to 350 F. With stand or handheld mixer, cream butter and sugar until light and fluffy. Add eggs one at a time, scraping between each egg. Add vanilla extract. Sift flour, baking powder and salt together. Add flour mixture to mixing bowl and slowly add milk while mixing. Mix until just combined. Spray Fillables Fluted Cake Pan with nonstick cooking spray. Fill bottom of both pans with batter to three-quarters full. Bake on middle rack in oven 20-25 minutes. Allow to cool before removing from pan. Filling suggestions: n Blueberries, plus additional for topping n Raspberries, plus additional for topping n Strawberries, stem removed and cut into small pieces, plus additional for topping n Vanilla Frosting (recipe at right) Fill pockets in bottom layer of pound cake with different berries. Carefully spread Vanilla Frosting over top of berries and cake. Place top layer of cake on top of frosting. Drizzle warmed up Vanilla Frosting over top of cake. Decorate top with berries.

In double boiler, melt chocolate and butter. When melted, place in large bowl and whisk in cocoa powder until smooth. Add sugar and mix. Combine eggs and vanilla; gently mix with fork or whisk to break up eggs. Add eggs and vanilla to batter. Sift together flour, salt and baking powder. Fold in flour until just combined. Spray Fillables 8 Cup Cake Cone Pan with nonstick cooking spray. Fill bottom pan with batter to line in middle of pan then place insert on top and snap together. Place on middle of rack in oven and bake 15-18 minutes. Allow to cool before removing from pan. Recipe courtesy of Baker’s Advantage/Alissa Wallers 3 sticks butter, unsalted and at room temperature 6 cups powdered sugar 2 teaspoons vanilla extract 1/2 teaspoon salt 1/4 cup heavy cream Using handheld or stand mixer, cream butter on high, about 3 minutes. Add powdered sugar 1/2 cup at a time, mixing on medium between each addition. Scrape bowl well. Add remaining ingredients; mix on low until incorporated. Turn mixer to high and beat frosting until light and fluffy, about 5 minutes. Use immediately or store in airtight container in refrigerator. Note: Frosting must be at room temperature prior to using.

5 ways to prepare your outdoor living space for fall
