Everyone seems to make or buy Christmas desserts to bring to a holiday get-together. Be different this year and bring a festive Christmas pie, instead of the usual cake or cookies. Pies are usually easier to make then a decorated cake, so this could be a time saver as well. In this article, I will show you

quick and easy festive Christmas pie that you can make with only a few ingredients. These Christmas pies will look as good as they taste, with fresh wholesome ingredients that look very festive. Pies In most grocery stores today, you can find those crushed cookie

piecrusts just waiting for a filling. This is primarily the type of pies that we will be creating in because they are quick and easy and you can really make them festive Christmas pies with minimal effort. Chocolate peppermint pie You will need a chocolate cookie piecrust, cool whip, vanilla pudding, peppermint flavoring, and pieces of peppermint candy. We are going to fill the piecrust with a nice mint flavored vanilla pudding, and spread cool whip on the pie. To make this pudding, you simply need a few drops of peppermint flavoring, which will be added to the vanilla pudding, creating a nice peppermint flavor. Sprinkle tiny pieces on crushed peppermint candy on top of the cool whip. This makes a very festive Christmas dessert for holiday get-togethers where you need a dish to pass. Christmas Reindeer Tracks You will need a chocolate cookie piecrust, cool whip, vanilla pudding, mini chocolate chips, and one plain Hershey’s milk chocolate bar. Mix the mini chocolate chips into the vanilla pudding, and pour this mixture into

the chocolate cookie crust. Set the pie into the refrigerator so the pudding can thicken for about half an hour or so. Spread cool whip over the top of the pie, and shred the plain Hershey’s milk chocolate over the pie, this makes a very delicious and festive Christmas dessert. Christmas Chocolate Banana You will need a chocolate cookie piecrust, cool whip, banana pudding, mini chocolate chips, a banana, and one plain Hershey’s milk chocolate bar. Into the chocolate piecrust, slice the banana, arranging the slices so they line the bottom of the pie shell, and slides if you have enough. Mix the mini chocolate chips into the banana pudding, and pour on top of the sliced bananas. Set the pie into the refrigerator so the pudding can thicken for about half an hour or so. Spread cool whip over the top of the pie, and shred the plain Hershey’s milk chocolate over the pie. With these Christmas pies, you will be the talk of the party. No one will believe that that these Christmas desserts only took a short time to make.

Christmas Dessert Ideas Recipes for Your Christmas Dessert Table By Heather Shockney Everyone loves the smell of cookies baking in the oven and pies cooling on the counter, what goodies will you be making for your dessert table this Christmas? Here are a few suggestions of some tried and true dessert recipes. First we will start with the cookies, this can be a great way to spend a snowy day with your children, and they will love to help you bake. A favorite Christmas cookie is the Sugar Cut-out cookie they are easy to make and lots of fun to decorate, here is a recipe for them from the food network, I use it every year and they turn out great. 4 cups sifted all-purpose flour 2 teaspoons baking powder 1 1/2 cups sugar 2 eggs 3/4-cup butter (1 1/2 sticks) 2 teaspoons vanilla extract Colored Icing, recipe to follow Preheat oven to 350 degrees F. In a bowl, stir together flour and baking powder. In another bowl, beat butter with sugar until fluffy and light. Beat in eggs and vanilla. Stir in flour mixture, a third at a time to make stiff dough. Divide dough into 4 pieces. Roll out a portion of cookie dough to 1/4 inch thick. Cut out shapes using cookie cutters. Place on lightly greased or nonstick cookie sheets. Bake until lightly golden, about 10 minute, rotating baking sheet halfway through cooking time. Cool completely on pans about 5 minutes, transfer to cooling racks and cool completely before decorating. Colored Icing: 1/2 cup confectioners’ sugar 1 1/2 tablespoons water 3 to 4 drops food coloring, plus more as needed Colored sprinkles, optional In a small bowl, mix sugar and water to form a thick, smooth icing. Stir in food coloring to reach desired shade. Drop icing onto cookies using a small teaspoon and smooth with the back of the spoon. Make additional bowls for additional colors. Additional multi-colored sprinkles can be added on top of icing before it dries for more decorative cookies, if desired. Next a Family Favorite is the Peanut butter Blossoms. 48 Hershey’s Kisses 1/2 cup shortening 3/4 cup creamy Peanut Butter (I always use Jiff but you can use whichever type your family prefers) 1/3 cup granulated sugar 1/3 cup packed brown sugar 1 egg 2 tablespoons milk 1-teaspoon vanilla extract

1-1/2 cups flour 1-teaspoon baking soda 1/2 teaspoon salt Granulated sugar 1. Heat oven to 375°F. Remove wrappers from chocolates. Hide them or there won’t be any left when you need them. 2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and the brown sugar; beat until fluffy. Add egg, milk and vanilla; mix well. Stir together flour, baking soda and salt; slowly beat into peanut butter mixture. 3. Shape dough into 1-inch balls. Roll in granulated sugar, I use sugar thats been colored red and green, place on ungreased cookie sheet. 4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around the edges. Remove from cookie sheet .Place on rack to cool . This recipe will make about 4 dozen cookies. What dessert table wouldn’t be perfect without some delicious pies? These can be the traditional pumpkin and pecan or you can add a few new ones to the bunch. Here is a great recipe for a easy Chocolate Mousse pie 1 Oreo pie crust (pre-made from store) 2 boxes instant chocolate pudding 1 tub of cool whip Chocolate chips to garnish Mix up pudding according to box for pie, with half the tub of cool whip with mixer. Put into crust then cover with remaining cool whip. Add chocolate chips on top to garnish and refrigerate till ready to serve. You might want to consider making two of these they usually go fast. The next dessert is for a Low Carb pumpkin Cheesecake; this would be great for your guests that are watching their weight. Low Carb Pumpkin Cheesecake Butter - enough to grease the pie pan 1/2 cup of ground nuts (I prefer pecans, you can probably use any nut) 1/4-tsp cinnamon 1/2 tsp Splenda 16 ounces cream cheese, softened 1/2 cup Splenda 1/2-tsp vanilla extract 2 eggs 1/2 cup canned pumpkin 1/2-tsp pumpkin pie spice mix Heavily grease the bottom and sides of pie pan. Mix together nuts, 1/2 tsp Splenda and cinnamon Place nut mixture into greased pie

pan and swirl it around to coat the bottom and sides of pan. Pour out any nut mixture that doesn’t stick, set pan aside. Beat the cream cheese, Splenda, and vanilla with electric mixer on medium speed. Add eggs and beat until well blended. Separate out one cup of batter and mix it with the pumpkin and spice. Pour plain batter into the nut crust Top with pumpkin batter. Bake at 350F for 30-40 minutes or until center is almost set. Refrigerate overnight. Here is a great recipe for Peanut butter Fudge this can be made and placed in tins to store or given for gifts. Peanut butter fudge 1 cup of sugar 1 cup of brown sugar 2 tablespoons butter 1/2 cup of evaporated milk Few grains of salt 3/4 cup of mini marshmallows Heaping cup of peanut butter 1 teaspoon of vanilla Cook sugar, butter, milk, and salt to soft ball stage (234-238 degrees F). Add marshmallows and peanut butter and immediately remove from heat. Do not stir. Cool to room temperature. Add vanilla. Beat until mixture is creamy, thick, and will hold its shape when dropped from a teaspoon. Pour into well-buttered shallow pan. Cut in squares. Another great candy recipe is the Oreo Balls They are great in tins and given as gifts as well. Oreo Balls 1 20 oz package Oreo’s (crushed) 1 8 oz package cream cheese (softened) 1 package White Almond Bark Combine crushed Oreos and cream cheese. Shape into balls Refrigerate to harden or 15 to 20 minutes in freezer

Dip balls in melted almond bark Put on metal cookie sheet Refrigerate to harden You may want to include some different types of beverages to go with the desserts; here are some that will go great with all the Christmas goodies. Sweet Hot Buttered rum 2 cups firmly packed brown sugar 1/2 cup butter 1 pinch salt 3 sticks cinnamon 4 whole cloves 1/2 teaspoon ground nutmeg 2 cups rum whipped cream ground nutmeg Put all ingredients, except the rum and cream, and nutmeg into crock pot. Add 2 quarts hot water. Stir well. Cover; cook on low for 5 hours. Stir in rum. Top individual servings with whipped cream and a dash of nutmeg. Another Christmas Favorite is Hot cocoa 3 tablespoons unsweetened cocoa powder 1/4-cup sugar 4 cups milk 1/4-teaspoon vanilla Miniature marshmallows Blend cocoa and sugar in a small bowl. In a medium saucepan, heat milk to scalding. Mix about 1/3 cup of the hot milk into the cocoa-sugar mixture, then pour cocoa mixture into hot milk in the saucepan; stir until well blended. Stir in vanilla. Serve with mini marshmallows and a candy cane dipped in the cup. 4 servings These recipes along with all your family favorites will make a great dessert table at your Christmas dinner. You could also have the entire guest bring their favorite dessert and everyone can try new recipes.

PACIFIC SYMPHONY PRESENTS ANNUAL HOLIDAY FAVORITE “NUTCRACKER FOR KIDS” Pacific Symphony mesmerizes audiences of all ages with the magic, wonder and imagination of Tchaikovsky’s treasured ballet during the anticipated holiday concert, “Nutcracker for Kids,” part of Family Musical Mornings presented by Farmers and Merchants Bank. Led for the first time by Assistant Conductor Alejandro Gutiérrez, the Symphony teams up with the dazzling dancers of Festival Ballet Theatre to bring the story of Clara and her brave prince to life! Tchaikovsky’s beautiful melodies soar and the colorful dancers enchant throughout the epic battle with the Mouse King, the Land of Sweets, Waltz of the Flowers and the captivating Dance of the Sugar Plum Fairy. Especially suited for children ages 5-11, but just as enjoyable for parents and grandparents alike, this 45-minute version is narrated by Bree Burgess of No Square Theatre in Laguna Beach. The festive tradition also includes a holiday sing-along of “Jingle Bells,” “The Dreidel Song” and “We Wish You a Merry Christmas.” And a special guest is set to arrive sporting his famous red suit and fluffy white beard to spread the holiday cheer—Santa Claus! This spectacular fairy tale takes place Saturday, Dec. 14 at 10 a.m. and 11:30 a.m., in the Renée and Henry Segerstrom Concert Hall, where children are also invited to participate in a merry Musical Carnival

At her family’s Christmas Eve party, her mysterious Godfather, a toymaker, arrives and gives her a special doll, the Nutcracker, which makes all the other children green with envy. As the story unfolds, Clara finds herself in an unfamiliar world caught between fighting opponents. It’s the toy soldiers

and their brave leader the Nutcracker versus the despicable Mouse King and his army of followers. Good trumps evil as the Nutcracker saves Clara from the grasps of the Mouse King, and Clara is stunned as the Nutcracker transforms into a prince! Together they visit the Land of Sweets and are spellbound by dances of Spain (chocolate), Russia (cinnamon), China (tea), and lastly, Dance of the Mirlitons (also called Dance of the Reed Flutes). There, Clara and the prince are greeted by the beautiful Sugar Plum Fairy and are led into a romantic “pas de deux,” dance for two, to conclude the grand festivities. “I think what I’m looking forward to the most is the chance to stimulate the imagination of the children with this fantastic ballet,” says Gutiérrez, “but then again, ‘The Nutcracker’ will stimulate the imagination of everyone in the audience—children and adults, and even those of us performing onstage. CELEBRATE CHRISTMAS AT THE MISSION DECEMBER 7 Mission San Juan Capistrano will kick off the holiday season by hosting its annual “Christmas at the Mission” on Saturday, Dec. 7 from 5:30-8 p.m. A magical night under the stars will allow revelers to visit the Nativity scene, meet St. Nicholas, and enjoy the beauty of the Mission’s gardens, all lit up for Christmas. Al Jarreau at Breakfast with Gary and Kelly Radio on TV Taping Gary Bergeson with Al Jarreau, Kelly Bennett and Bart McHenry Photos by Smooth Jazz Family Saddleback Colleges radio station KSBR 88.5FM and the City of Mission Viejo presented seven-time Grammy Award winner Al Jarreau at the McKinney Theatre located on the campus of Saddleback College. Jarreau appeared on KSBR Radios Breakfast with Gary and Kelly radio on TV taping to a crowd of around 350 attendees. The three-hour broadcast was live on the radio. The television broadcast will air on the City of Mission Viejos MVTV Channel 30 Tuesday through Sunday evenings at 8:30 p.m. and also on Saddleback Colleges SCTV Channel 39 Friday and Sunday mornings at 11:00 a.m. throughout the Cox Communication cable system in South Orange County. During the one-hour interview, Jarreau told stories of his career, how he started in San Francisco teaming up with Jazz great George Duke, making his first album, and his love of music. He especially talked to the students in the crowd encouraging them to learn all they can and experience other forms of music and inspiring them to live their dreams. Jarreau also wowed the crowd singing five songs and giving the audience a peek into his music-making scat abilities with Larry Williams accompanying him on piano. Williams has been with Jarreau for more than 30 years, and has played with George Benson, Herbie Hancock, Patti Austin, Paul McCartney, Michael Buble, Michael Happy audience members await their turn in line with CD’s in hand. After the show, Jarreau stayed 90 minutes signing autographs and posing for photos with guests who waited in line; talking to each person and making that connection with those who love his music. There was also KSBR merchandise for sale outside the McKinney Theatre along with a big screen TV for the live broadcast as well as coffee and muffins provided by Its a Grind in Mission Viejo. Around 40 volunteers and staff made the event possible. Other guests appearing on Breakfast with Gary and Kelly were Bart McHenry, Dean of Fine Arts and Media Technology for Saddleback College and Mission Viejo Mayor Rhonda Reardon. McHenry talked about the different programs available for students of the Fine Arts Division from music to theatre while Reardon shared with the audience her charitable program that helps keeps children and teens away from prescription drugs. Another guest on the show was the Vice President of Research and Development at the KSBR Test Kitchens for the “Cooking for Kelly” segment - actually, it was comedian Tom Riehl who got the audience into the Thanksgiving spirit by showing Gary and Kelly how to properly stuff a chicken for a holiday meal. His antics really gave everyone a good laugh! Breakfast with Gary and Kelly will welcome next month saxophonist Eric Marienthal who is one of the most respected and versatile musical talents on the scene today. His long and distinguished career has included stints Bob and Susan Strong from Mission Viejo pose with the great Al with legends Al Hirt and Chick Corea. Pineapple Upside Down Cake Yield: 8 servings Serving size: 1 slice Canola oil cooking spray 1/3 cup packed dark brown sugar 4 to 5 pineapple rings (about 1/4 of whole pineapple) about 1/2 inch thick 2 tablespoon chopped crystallized ginger 1 1/4 cups all-purpose flour 3/4 cup whole-wheat pastry flour 3/4 cup granulated sugar 1 teaspoon baking powder 1 teaspoon baking soda 1 cup low-fat buttermilk 1/2 cup canola oil 2 large eggs 1 1/2 teaspoon vanilla extract Preheat oven to 350°F. Generously spray bottom of 9-inch, nonstick layer cake pan with canola oil cooking spray. Sprinkle evenly with brown sugar, then arrange pineapple rings on top in one

layer. Sprinkle chopped ginger pieces in spaces around pineapple rings and in their centers. In medium bowl, whisk together all-purpose flour, whole-wheat flour, sugar, baking powder and baking soda. In another medium bowl, whisk together buttermilk, canola oil, eggs and vanilla. Mix wet and dry ingredients until combined. Pour batter over pineapple-brown sugar mixture and bake until top is lightly browned and wooden skewer inserted into center of cake comes out clean, 40 to 50 minutes. Let cool for 5 minutes, then run knife around cake edges and, using oven mitts, invert cake onto large serving plate. Note: Whole-wheat, all-purpose flour can be substituted for whole-wheat pastry flour. Chocolate War Cake Yield: 12 slices Serving size: 1 slice 3/4 cup whole-wheat pastry flour 3/4 cup all-purpose flour 1 cup granulated sugar 1/3 cup natural cocoa powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup cold water 1 tablespoon cider vinegar 1/3 cup canola oil 1 teaspoon pure vanilla extract

1/2 teaspoon confectioners’ sugar Preheat oven to 350°F. In 9-inch round baking pan, whisk together whole-wheat pastry flour, all-purpose flour, sugar, cocoa powder, baking soda and salt. In small bowl or measuring cup, combine water and vinegar. Make well in center of flour mixture in pan and pour canola oil and vanilla extract into well. Pour water-vinegar mixture over top of flour and then stir well to blend all ingredients.

Bake until set and toothpick inserted into center comes out clean, about 30 to 35 minutes. Place cake on rack to cool in pan. Once cool, sprinkle with confectioners’ sugar. Note: Whole-wheat, all-purpose flour can be substituted for whole-wheat pastry flour. Frozen Grasshopper Pie Yield: 8 servings Serving size: 1 slice Canola oil cooking spray 1 1/4 cups finely crushed chocolate wafer cookies or chocolate graham cracker crumbs 3 tablespoons canola oil 4 cups mint chip reduced-fat ice cream or frozen yogurt, softened 1/3 cup chocolate shavings Preheat oven to 350°F. Spray 9-inch pie dish with canola oil cooking spray. In medium bowl, mix cookie crumbs and canola oil until combined, then press mixture into prepared pie dish. Bake until fragrant, 6 to 8 minutes. Allow to cool completely. In large bowl, place softened ice cream and mix well until uniform texture forms, similar to soft-serve ice

cream. Fill cooled pie crust with ice cream, smoothing out top. Garnish with chocolate shavings, cover with plastic wrap and put back in freezer until solidly frozen, at least 4 hours. When ready to serve, heat knife under hot water and use it to cut pie into slices. Note: An ice cream or frozen yogurt without green food coloring is recommended. To make chocolate shavings, use a vegetable peeler to peel strips from a thick block of chocolate. If the chocolate crumbles as you make the shavings, put it in the microwave at 10-second intervals to soften it slightly. Over the past thirtyfive years in the dental field, one of the most significant changes I’ve seen is the appearance of people’s Dr. Michael Tessier back teeth. We usually talk about front teeth when talking about cosmetic dentistry, but the appearance of the back teeth is also significant. I remember when I started in dentistry looking at mouths full of black fillings. I seldom see that anymore today, particularly in Southern Orange County where my practice is located. As an example, several years ago, there was a trailer for a Goldie Hawn movie in which this lovely actress threw her head back and laughed loudly, displaying a mouthful of silver/mercury amalgam fillings, which had turned black. Hardly consistent with the rest of her Hollywood visage. When silver fillings get old, they corrode- effectively rust- and it’s this silver oxide that turns black. the supermarket had mostly clean, white teeth, except for the two lower left molars with very large mercury/ silver amalgam fillings. They’d probably been in her mouth for twenty years, and while they could have been clinically sound, she probably did not realize how they affected her appearance. By removing and replacing that black filling with a tooth-colored plastic restoration, or a toothcolored porcelain filling (lasts longer than plastic), or, in the case where removing the filling would leave the remaining tooth structure too weakened, a tooth-colored crown (or cap), the tooth could be returned to its normal, unremarkable appearance. Given the law of unintended consequences and the first rule of medicine-“Do no harm”-we avoid doing dental work that isn’t absolutely necessary. But a procedure like that is relatively non-invasive, and the effect is both dramatic and beautiful. Worth thinking about. Mini cheesecakes - the perfect little something sweet Pear-Ginger Cheesecakes with Gingersnap Crust Ingredients: Cheesecake ½ cup water 125 mL 8 dried pear halves, chopped (dried apples can be substituted) 1/3 cup crystallized ginger 75 mL 3 packages (8 oz/250 g) low-fat cream cheese, room temperature 2 eggs, lightly beaten ¾ cup granulated sugar 175 mL Crust 40 gingersnap cookies, processed to form crumbs (about 2 cups/500 mL) 3 Tbsp canola oil 45 mL 2 Tbsp brown sugar 30 mL 2 Tbsp granulated sugar 30 mL 2 tsp salt 10 mL Instructions: Preheat oven to 325 °F (160 °C). In medium saucepan, bring water, dried pears and crystallized ginger to simmer over medium heat. Reduce heat to low, cover and simmer for about 12 minutes until water is absorbed and pears softened. In food processor, process pears and ginger until course paste forms and cool about 10 minutes. While paste is cooling, make crust. To make crust: combine all crust

ingredients. Spray miniature cheesecake pans with canola oil. Divide crumb mixture evenly among mini cheesecake pans and press firmly into bottom. Bake crusts for 8 to 10 minutes until golden brown around edges. Remove from oven and set on wire rack and cool completely. Reduce oven temperature to 250 °F (120 °C). While crusts are cooling, continue making cheesecake filling. In large bowl, beat cream cheese and gingered pear paste together on low until light and fluffy. Beat in eggs. Add sugar and beat until smooth, frequently scraping down sides of bowl with spatula. Transfer filling into liquid measuring cup or pitcher and pour filling into crusts, dividing evenly. Place in oven and bake about 30 minutes until filling is set. Remove

from oven and set on wire rack about 1 hour to cool completely. Then cover with plastic wrap and refrigerate for at least 4 hours before removing cheesecakes from pan. To serve, garnish cheesecakes with crystallized ginger.

Tips: The cheesecakes can be also made in non-stick mini muffin tins that are sprayed well with canola oil and/ or lined with cupcake holders. Dried pear halves may be substituted with dried apples. Yield: 24 mini cheesecakes.

If you add to that Handel’s genius as a composer of opera, the work has a dramatic side to it as well.”

Born at the height of the Baroque era in 1685, Handel produced both sacred and secular music. Originally from Germany, he traveled to Italy, where he discovered the Italian style of operatic composition before settling in England, where he became the English court’s goto composer for the nation’s most important ceremonial music. His mastery of all types of vocal and instrumental music forms comes together in “Messiah,” where boundless expressive melodies and immense drama illustrate the grandeur of Christ’s story. Although “Messiah” was initially composed for performance during Lent, it has been universally adopted as a musical high point of the Advent season. For Handel himself and for millions of listeners, “Messiah” is not only stimulating entertainment but also a deep expression of religious faith that sounds new no matter how many times it’s heard. Charles Jennens drew the libretto directly from the Bible, and Handel enhanced the revelatory emotions and extraordinary intensity of the text through “word painting.” This Baroque technique uses movement in the music notes to imitate a shape or outline that the text describes. “I don’t need to do anything to keep it fresh—it is fresh anyway. The work is totally evergreen,” says Seaman. As an artist who has sung, played viola and timpani in “Messiah,” conductor Seaman is no stranger to this popular piece. Seaman

has appeared with orchestras in North America, Israel, Eastern Europe, the Far East, Australia and New Zealand, as well as in his native Great Britain, where he has served as principal conductor of the BBC Scottish Symphony and the Northern Sinfonia. “I conduct the piece from the harpsichord, as Handel did,” he explains. “I play in the overture and solo numbers, then for the choruses I pick up a baton and conduct in the usual way. In the Baroque period there weren’t conductors in the modern sense of the word; Bach, Handel, Vivaldi and many others conducted by playing an instrument. That way you can influence what happens sonically as well as visually.” Declared “luminous” by The New York Times and “eloquent” by the Wall Street Journal, soprano Caitlin Lynch is astonishing audiences with her inspiring portrayals. She recently created the role of Eliza in composer Nico Muhly’s new chamber opera, “Dark Sisters,” which premiered at the Gotham Chamber Opera in New York with subsequent performances at the Opera Company of Philadelphia, co-commissioned by MusicTheatre Group. Another composer captivated by Lynch, Jake Heggie, had her sing the world premiere of his new song cycle, “Another Sunrise,” commissioned by Music of Remembrance in Seattle this past May. American mezzo-soprano Barbara Rearick has been praised by Opera News for her “tonal beauty” and Gramophone for

her “charm and finesse.” Since her 1993 Carnegie Hall debut in Handel’s “Messiah,” she has performed internationally with such orchestras as the Houston Symphony, Baltimore Symphony, Rundfunk Sinfonieorchester Berlin and City of Birmingham Symphony Orchestra. She is also a founding member of the BrittenPears Ensemble, a chamber group specializing in rarely heard contemporary works. Championing a diverse and challenging repertoire which spans from the early Baroque to the avant-garde, tenor Daniel Shirley is emerging as an audience favorite on the opera and concert stages. He was recognized by the William Matheus Sullivan Foundation with a career development grant, and was a finalist for the George London Foundation awards. Shirley will be featured with Chicago’s Music of the Baroque throughout the season, most notably as tenor soloist in “Israel in Egypt.” American bass-baritone Michael Dean has appeared with leading opera houses and orchestras of the U.S. and Europe. The New York Times admired his “strong appealing bass-baritone,” while the San Jose Mercury News considered him “the standout, his voice a penetrating wake-up call.” During the 2012-13 season he appeared with the Los Angeles Chamber Orchestra and Grand Rapids Symphony, and in the 201314 season he performs Handel’s “Messiah” with the Eugene Concert Choir.

Instructions: HEAT oven to 350ºF. Spread bread cubes in single layer on 15 x 10-inch baking pan. Bake stirring occasionally. 10 minutes or until cubes are toasted. Coat 13 x 9-inch baking dish with no-stick cooking spray. BEAT eggs in large bowl with electric mixer on medium speed until fluffy. Blend in sweetened condensed milk, dark corn syrup, brown sugar, butter and vanilla. Stir in toasted bread cubes and 1 cup pecans until evenly moistened. Pour into prepared baking dish. Sprinkle with remaining pecans. Allow to stand 30 minutes. Pecan Pie Bread Pudding BAKE 40 to 45 minutes or until golden brown around Yield: 9 Servings the edges. Cool 5 minutes. For breakfast, serve loosely packed) warm drizzled with pancake syrup.

Caramel to cranberries: Holiday stain-busting tips keep carpets bright Whether it was the ghouls trick-or-treating on Halloween, the gobbles of great food on Thanksgiving, or the gatherings of loved ones over the holiday season, you will likely be hosting an event at your home in the upcoming months. Food and friends make the perfect pairing for celebrations - but that can mean spills and splashes on carpets. There’s no need to panic when you know the tricks the pros use to treat tough holiday carpet stains. “It is important to treat spots and stains promptly and properly to avoid letting them do permanent damage to the fibers,” explains Barry Lichtenstein, a certified master textile cleaner and owner of Amcho Carpet Cleaning in Framingham, Mass. “This can cause damage to either the color or texture of the fibers.” From splashes of punch and gravy to smears of caramel and cranberries, the holiday season can leave your carpet looking drab. Lichtenstein says many homeowners with good intentions are actually making stains worse by incorrectly treating the spots. He advises homeowners to avoid these common mistakes when treating carpet stains: * Do not over-saturate the stain with cleaning products. This just makes a small spot larger. * Do not rub the carpet. This can cause damage to the texture of the carpet. * Do not put water on a dry soil. Rather,

make sure to vacuum it first. When fighting the inevitable drips and dribbles of entertaining at home, Lichtenstein says there are a few general best practices for treating carpet stains. 1. First, remove as much stain material as possible. If it is dry, vacuum up as much as you can. If it is semi-solid, scrape or scoop it up with a spoon or dull knife. If it is liquid, blot it up. 2. Next, blot the stain with cool water, and then blot dry. 3. Make foam using a mixture of 1/4 teaspoon clear liquid dishwashing soap in a cup of tepid water. Be sure to always test any cleaning agents in an inconspicuous area of the carpet first to ensure there is no adverse reaction with the flooring. If not, apply the foam with a sponge or soft brush to the stained area in a wiping motion going toward the center of the spot. If you start in the center with circular motions, the stain will spread. 4. Finally, blot with cool water, then blot dry. From candy canes to fudge to Grandma’s famous yams, most stains can be cleaned using these techniques. For additional stain removal information, Lichtenstein recommends visiting the Carpet and Rug Institute (CRI) Residential Spot Solver on carpet-rug. org, or choosing a spot remover from the CRI

list of tested and certified products. In addition to stains, parties mean more foot traffic in your home. As people come and go during your holidays, you’ll likely notice extra soil on carpets and other flooring. There’s no need to panic that your carpet investment is compromised. Simply vacuum regularly with a quality vacuum that has received the CRI Seal of Approval, which means it’s been tested thoroughly for soil removal,-soil containment and the ability to maintain the texture and appearance of carpet. Frequent vacuuming is also a great way to keep the air in your home clean, especially during the long months of winter when we spend most of our time indoors. A high efficiency vacuum from the Seal of Approval list removes 80 percent or more of the soil in a carpet - making carpet a good option even for allergy sufferers. “Carpets and upholstery fabrics should be cleaned on a regular basis before they show overall soiling or staining,” Lichtenstein says. “When a high level of overall soiling or staining has been reached, there is always

some permanent damage that has occurred. For the best results, clean the fabrics before they reach that level of soiling.” How often should you vacuum? The CRI recommends high-traffic or pet areas be vacuumed daily, medium-traffic areas be vacuumed about twice a week and lighttraffic areas should be vacuumed weekly.For tough holiday stains or deep set-in soils, it may be time to call in the professionals for help.
