Tips for setting the perfect holiday table Every holiday season, you invest hours planning and preparing the perfect menu for each celebration you host. While easy and fun may be the name of the game for buffet-style events, when it’s a sit-down soiree, the delightful cuisine you produce deserves a presentation worthy of your efforts. A beautifully set table can elevate your holiday dinner from just great to simply perfect. “Table-setting is an art form anyone can learn to execute beautifully,” says Mary Bernardo, director of product development at Princess House, a leading provider of unique and exclusive cookware, food storage and home and entertainment products. “Simple touches like elegant holiday plates, colorful linens and an eyecatching centerpiece ensure a holiday table looks as inviting as the food smells.” Bernardo and the table decor experts at Princess House offer these tips for creating a beautiful holiday dinner table: Layers look lovely Tablecloths, placemats, table runners and chargers not only help protect your table from spills and scrapes, but they also create a lovely backdrop for dishes, glasses, stemware and - of course - the food. Layering these items adds depth and interest to the tabletop. Consider starting off with a simple
white or red tablecloth, and then add either placemats in seasonal patterns or a festive runner. If chargers take up too much room on the table (or too much of your holiday budget), you can layer dinner and lunch plates to create the same effect. For example, place a Pavillion Berry Dinner Plate from Princess House beneath a Poinsettia Lunch Plate. The solid deep red of the dinner plate is the perfect complement to the elegant creamy background and poinsettia pattern of the lunch plate. Keep dishware seasonal and simple “It’s been said simplicity is the soul of elegance, and that’s certainly true when you’re setting a holiday dinner table,” Bernardo says. Choose dishes with a basic white or cream background accented with a traditional holiday motif. Flatware should also be simple; if your everyday collection is in good condition, feel free to use it for your holiday celebrations. If you don’t have enough pieces, supplement with basic flatware that’s free of embellishment or heavy designs. Glassware should also be simple and, whenever possible, multi-functional. For example, stemless wine glasses can be used for soft drinks and water, as well as wine. Add seasonal accents Even the simplest table setting can
feel festive when you add holidayspecific touches, like napkin rings in jewel green or red, a centerpiece filled with evergreen or holly and twinkling candles. For a centerpiece that’s festive and practical, consider using your favorite holiday serving bowl, such as a crystal bowl, for the foundation. Then add holiday decor items, like mini Christmas packages, your favorite Christmas tree decorations or a pillar candle in a holiday hue like red, green or snow white. Top with a few sprigs of evergreen, holly or fresh flowers and you have an easy, elegant DIY centerpiece.
Finally, don’t overlook the opportunity to extend the table’s festive atmosphere to the chairs as well. Santa Margarita High School Students Earn Awards at L o n d o n M o d e l U n i t e d N at i o n s C o n f e r e n c e Twelve juniors from Santa Viejo, Lance Rzepiejewski of Dana Margarita Catholic High School recently returned from the 36th annual Royal Russell Model United Nations Conference held in East Croydon, United Kingdom. Through the MUN program, students attend mock meetings of the United Nations across the globe learning about diplomacy and international relations as well as gaining life skills including compromise, confidence, problemsolving, critical thinking, public speaking and more. The Royal Russell School (UK) has been hosting the annual fourday international conference for over thirty years. The October conference is one of the few British conferences affiliated to THIMUN (The Hague International Model United Nations), a global leader in the MUN community. The Santa Margarita Catholic High School students represented the countries of Sri Lanka and Italy. The following students participated: Molly Finn of Rancho Santa Margarita, Chloe Grubb of Rancho Santa Margarita, Ashley Kao of Ladera Ranch, Kennedy Kemmerer of Trabuco Canyon, Macy Lustig of Corona del Mar, Caitlyn Mayes of Coto de Caza, Audrey Narkchareon of Aliso Viejo, Josh Prentice of Coto de Caza, Casi Roque of Mission
Point, Emily Shiraishi of Trabuco Canyon and Melody Tajalli of Aliso Viejo. Many of these students won individual awards for their superior performance at the conference including Caitlyn Mayes, Casi Roque, Macy Lustig, Molly Finn, Chloe Grubb, Melody Tajalli and Kennedy Kemmerer. In addition, the delegation of Sri Lanka was recognized as a Commendable Delegation. The conference hosted students from all over the world including the United Kingdom, Ireland, the Czech Republic, Greece, France, Norway, Japan, Finland, Italy, and Egypt. Santa Margarita Catholic High School was the only school from the United States in attendance. SMCHS has been sending students to this conference for over two decades. During the conference, students debated economic, political and social issues facing their respective communities. Topics discussed included child soldiers, ocean pollution, and the situation in Syria. In addition to participating in the conference, the students enjoyed the historical sights of London including the ravens and Crown Jewels at the Tower of London, Poets’ Corner at Westminster Abbey,

St. Paul’s Cathedral and the British Museum. The students also visited Stonehenge, the Roman Baths and Windsor Castle. Kennedy Kemmerer said the moment her resolution passed within her committee and General Assembly was one she will never forget. “It was a moment of true gratification,” she said. “I had never felt more proud of myself in that moment when I passed my resolution in the G.A. (General Assembly) and
the Secretary General said, ‘This resolution has passed, clapping is in order.’ I am extremely blessed to have been a part of this international conference and to have traveled to London with some of my best friends.” Josh Prentice agreed. “This was such a unique experience to be able to have the opportunity to meet new people from around the world and I would not trade it for anything,” he said.

SEGERSTROM CENTER FOR THE ARTS CELEBRATES OPENING OF JULIANNE AND GEORGE ARGYROS PLAZA AND CENTER FOR DANCE AND INNOVATION
Photos by Doug Gifford Segerstrom Center for the Arts opened its new Julianne and George Argyros Plaza and Center for Dance and Innovation on Saturday, October 28 with music, dancing, performances, family activities, bands and more from 11 a.m. until 10 p.m. More than 10,000 people and families from around the neighborhood and throughout Orange County explored the 56,100-square-foot plaza designed by Michael Maltzan, with its spectacular fountain entry, the grand spiral staircase that wraps around the new Center 360 outdoor café, leading from the Segerstrom Hall terrace to the plaza, shaded seating and dining areas, groves of trees for picnicking and permanent stages for year-round entertainment. The new plaza is named for Julianne and George Argyros, who provided funding for the transformation to the Center’s campus. The Center for Dance and Innovation and Judy Morr Theater are now reached through a gardenlike entrance at street level or from the Segerstrom Hall terrace by a sweeping circular ramp that encircles a fully-grown jacaranda tree and leads to a muraled outdoor terrace. The Center for Dance and Innovation is also home to the American Ballet Theatre William J. Gillespie School and the Center’s School of Dance and Music for Children with Disabilities. Center President Terrence W. Dwyer said, “We planned the Julianne and George Argyros Plaza to fill a long-standing need: a welcoming public gathering place where people from throughout the county can socialize and enjoy free year-round performances and
community events. The plaza and the many programs supported by our Center for Dance and Innovation and Center Without Boundaries are enabling us to respond to the changing needs of our county. We are pushing the boundaries of what an arts center like the Center can do for every member of our dynamic and diverse communities.” Julianne Argyros remarked, “George and I believe so deeply in the plaza’s ability to bring people together, to be a place where families feel welcome, where people can socialize, make new friends, and enjoy free performances…… one where all of us can enjoy our community at its very best.” GRAND OPENING CELEBRATION The entire Segerstrom Center campus was alive with activities and back-to-back performances. The day was filled with familyfriendly fun: Patriots Marching Band Ensemble, TAIKOPROJECT drummers, the Darden Sisters Band, Ane Thanh Lion Dance, Vybration a cappella sextet, Los 440’s band, Orange County’s gay men’s chorus MenAlive, Culture Shock LA dance troupe and Puppets and Players Little Theatre. Caricature artists, trick-ortreating and face painting added to the festive mood. Center resident companies were represented by Pacific Symphony Youth Wind Ensemble, Philharmonic Society of Orange County with South Coast Brass and Pacific Chorale. South Coast Repertory sent members of its Theatre Conservatory and Orange County Museum of Art brought “The Art Project.” Many visitors took docent-led tours and observed classes in the Center’s School of Dance and Music for Children with Disabilities and the American Ballet
President Terrence W. Dwyer, Julianne and George Argyros Theatre William J. Gillespie School. In the evening, the Argyros Plaza was transformed by its dramatic new decorative lighting design. Starting the entertainment was a 3-D video mapping “ribbon cutting” that filled the side of Segerstrom Hall above the Argyros Stage. Photos of hit Broadway shows, dance companies, stars who have appeared at the Center along with Center community engagement and education programs appeared and disappeared in a myriad of seemingly magical geometrical transitions. Immediately after, vertical dance company BANDALOOP performed a new breathtaking, gravity-defying performance. The company created intricate choreography across the wall of Segerstrom Hall. Music and dancing to California bands hour-long
sets by Orgōne and Monophonics rounded out the evening. Tesoro’s Season Comes to a Close in Playoff Battle with Upland Story by: Sean Lindgren Photos by: Cindy Williams After a 5-5 record in the regular season, the Tesoro Titans would travel to Upland High School to take on the Upland highlanders in the first round of the CIF playoffs. The stakes were high in this prime time matchup as it was win or go home for both teams. Tesoro would receive the opening kickoff and begin the game with a first down, but, would be unable to move much farther and would be forced to punt on their opening possession. Upland would not do the same however as on 3rd down they would break off a 76 yard touchdown run to put them ahead 7-0. The Titans would find life on their second possession but would be abruptly stopped as the Highlanders were able to intercept a Tesoro pass and return it all the way to the end zone making the score 14-0. Still struggling to find consistency offensively, the Titans would have to punt on their next drive, leading to a 26 yard touchdown run by Upland, increasing the lead to 21-0. Still fighting, the Titans would mount a methodical drive down the field and work the ball all the way down to the goal line. After a pair of sacks, the Titans would attempt a field goal and miss wide left, leaving the score at 21-0. Continuing their success on offense, Upland would move the ball once again on the ensuing drive as after a big play to get them in the red zone, the Highlanders would convert on a field goal attempt raising the score to 24-0. The Titan offense would continue to struggle as they would be forced to punt once again and hand the ball over to the Highlander offense who would put the ball in the end zone once again on a 12 yard touchdown run, making the score 31-0. The Upland offense would receive another punt and convert as they would break off another big play on a 35 yard screen pass that would go for a touchdown, making the score
38-0. However, on the next Tesoro drive the Titans would strike on a big 71 yard catch and run from Senior QB Chase Petersen to Junior RB Cameron Lambi for a huge Tesoro touchdown. After the blocked PAT the score would be 38-6. With new motivation, the Titans defensive line would surround the quarterback on the next drive as Senior Defensive Lineman Collin Haydon would team up with Junior Linebacker Nathan Bernhard to record a sack and help to force Upland to punt. The Titans would transfer their success on the last drive as QB Chase Petersen would look downfield to Senior WR John Cody for a 31 yard completion and would cap the drive off on a 2 yard touchdown pass from QB Chase Petersen to RB Cameron Lambi, making the score 38-12 after a failed two point conversion which would be the score going into half. Coming out of the half, the Highlanders would lead a lengthy and very time- Seth Gilmore fighting for extra yards consuming drive that would end in a wild play in which there would be a jump ball in the end zone and after two Titan defenders tipped the ball up, the Highlanders would come up with the catch for a touchdown making the score 45-12. After a quick Tesoro possession, Upland would find themselves back in scoring position and would convert once again on an end around run play that would find the end zone, raising the score to 5212. Upland would not take their foot off the gas as after another Titan punt, they would find the end zone again on a 2 yard run to make the score 59-12 which would be the final score of the game. Overall, this was an emotional night for the Senior Tesoro players as their high school careers come to a close and the end to the 2017 season for the Tesoro Titans. The Titans will look to work towards next year in hopes of great things to come as they look to hone the skills of their talented Senior James Williams and Coach Joe Morris and young roster.

LOCAL ELKS LODGE REACHES NEW HIGH IN MEMBERSHIP The Mission Viejo, Saddleback Valley Elks membership reached an all time high of 1280 members as they welcomed 14 new initiates in the month of October. New Elk residents of Mission Viejo are Robert Becker, Orville Benskin, Heather Brooke, Julie Dolan, Cynthia McCullough, Mark Myers, and Colleen Spencer. Trabuco Canyon residents are Gregory Schuch and Dennis Bradshaw. Laguna Woods new members are Susan Keating and Sherry Pierce. While many people love gathering with family and friends at this time of the year, entertaining can take the jolly out of the holiday. This year, take the stress out of hosting with these five simple holiday hacks. Buy in Bulk. One month before your holiday gathering, buy nuts – almonds, pistachios, walnuts – in bulk. Pour the nuts into screw-top mason jars, label with brightly colored tape and store in your pantry. When guests stop by, bring out a few jars, unscrew and serve with seasonal cider. Candy Cane Lane. Candy cane flakes work wonders – from holiday drinks to topping off cakes and ice cream. Crush candy canes in a blender or smash between paper towels and store in an airtight container. Simply sprinkle for seasonal ease and festive yum. Double Duty. Buy flavorful refrigerated salad dressings – think sriracha or ranch – and use to top salads or potatoes, or as a quick, delicious dip. Rustic Pear Galette Serves: 4-6 Total time: 1 hour, 10 minutes Pie crust 3-4 medium pears, peeled, cored and cut into 1/4-inch slices 1 tablespoon lemon juice 1 tablespoon cornstarch 1/4 cup brown sugar, packed 1/8 teaspoon cinnamon (optional) Glaze: 2 teaspoons honey 1/2 teaspoon boiled water Topping: Simply Artisan Reserve Feta Cheese Simple Seasons
Heat oven to 425 F. Line 15-by10-inch baking sheet with parchment paper; spray paper with cooking spray. On lightly floured surface, roll crust into 11-inch round. Drape crust over rolling pin, transfer to baking sheet. In large bowl, toss pear slices with lemon juice. Sprinkle in cornstarch, brown sugar and cinnamon. Toss until pears are evenly coated. Arrange pears in mound in center of dough, leaving 2-inch border. Fold
border over filling to cover pears partially. It does not need to be even. Bake 15 minutes then reduce oven temperature to 350 F and bake additional 40 minutes until pears are tender and crust is golden brown. In small bowl, stir together honey and boiled water to make glaze. When galette is done, remove from oven and brush honey glaze over top of fruit and crust, and sprinkle liberally with feta cheese.

Vice President of Events and Promotions at Vans “Off The Wall”; Steve Tilly’s Life Center (TLC), held its 3rd Annual “I Am Giving” Gala hosted Van Doren Strikes a Pose with Founder and President of TLC, Tilly Levine by Christian Ford, America’s #1 Comedy Magician to benefit TLC’s youth empowerment program. Sponsors, supporters and friends of TLC gathered for an evening of food, fun and giving at the [AV] Irvine and raised $220,000 to create lasting changes in the lives of today’s youth. This year’s “The Sky Is The Limit” themed gala demonstrated how TLC truly believes that with a positive mindset, anything is possible. TLC kickedoff the evening with a cocktail party complete with hors d’oeuvres, drinks and a silent auction. Following the cocktail party, guests joined TLC amongst the clouds in the main event room for a family-style, gourmet dinner, live musical performance by the band Pacific Coast Highway and an astonishing magic and comedy show presented by the Master of Ceremonies, Christian Ford. Tempting and healthy holiday treats
The holiday season is a fun and festive time. It’s also a time when many people take a timeout from their daily routine to enjoy those tempting treats at family gatherings and office parties. This holiday season, end the year on a high and healthy note with the help of registered dietitian, Lyssie Lakatos. “If you know desserts at holiday parties are a downfall for you, bring a dessert that uses nutrientpacked ingredients,” says Lakatos. “Show guests that nutritious can be tasty and don’t be afraid to test out unconventional ingredients like sweet potatoes, beans or zucchini.” Here are a few tips from Lyssie on how to eat, drink and be healthful during the holidays: * Pre-game with mini meals: One rule of thumb is never show up to a party famished. Have a protein packed snack like a light soup or Eggland’s Best Hard-Cooked and Peeled eggs
before arriving to prevent hunger pangs. Eggland’s Best eggs are a good source of protein and also contain more than double the omega3s of ordinary eggs. Evidence has also shown that those who eat soup prior to a main course are less likely to overeat during the rest of the meal. * Cheers to your health: Alcohol can lower your inhibition and increase your hunger at the dinner table. Pay attention to your portion sizes and know your limit. When it comes to wine, remember that one serving is only five ounces. Those being served by someone with a heavy hand can oftentimes end up drinking up to eight ounces or more per pour. If you want to make your drink last twice as long, add sparkling water and ice to your glass and use the “every other” tactic - alternating alcoholic beverages with calorie-free drinks. * Think outside the cake mix box: If you’re in the mood to bake a pie, cake or brownies, try swapping out flour for ingredients like sweet potatoes or black beans, which are good sources of magnesium to help lower stress and are rich in fiber to help flush those holiday indulgences for a flatter-appearing tummy. Also, instead of baking with ordinary eggs,
use a nutritionally superior egg like Eggland’s Best which have 10 times more vitamin E and 25 percent less saturated fat. Using a fork, stab each sweet potato several times in separate spots. Place in the microwave for about 6 minutes
(depending on your microwave) or until very soft and a knife can easily go through them. Once fully cooked, allow potatoes to cool for roughly 5-7 minutes or until they are not too hot to handle. Using a potato peeler or knife, remove the skin from the potato and cut the potatoes into chunks. Place potato chunks into a medium bowl and add Eggland’s Best eggs, butter, brown sugar, milk, vanilla, pumpkin pie spice, and cinnamon. Using a fork or whisk, mix the ingredients together completely. Prepare pie crust according to directions on package. Spray the bottom and sides of the pie pan with non-stick cooking spray or oil and place pie crust in pan. Using a fork, prick bottom of the crust in 3 separate places to prevent bubbles from forming. Pour the sweet potato batter on piecrust evenly. Place in oven for about 20 minutes. Remove pie from oven and stick toothpick or knife in center. If it comes out clean, remove the pie from the oven and allow it to cool. If batter still appears on toothpick or knife, place back in the oven for 5 minutes at a time until toothpick or knife comes out clean. After the pie has cooled, slice it into 10 pieces. Add pinecone stems to twigs and tape together with floral tape. Wrap twig and pinecone stems with wire and poke wire into wreath under bow. Use hot glue to secure. Appetizers When guests arrive, give them something to nibble on as they visit and watch the parade or game. A cheese platter that features three to five new varieties will get everyone talking. Sprinkle evenly over apple mixture. Bake for 25 to 30 minutes. Serve with ice cream or whipped cream, garnish with shredded cheese. Baked Sweet Potatoes with Cranberry Gorgonzola Gremolata Makes 6 servings. Ingredients: 6 medium sweet potatoes 1/4 cup melted butter 1/2 teaspoon salt 1/4 cup pure maple syrup
1/4 cup minced fresh parsley 1 lemon, zested 1 clove garlic, minced finely 3 tablespoons minced pecans 3 tablespoons finely chopped dried cranberries 1 scallion, minced 2 ounces Stella gorgonzola, crumbled (If you prefer a milder flavor, use 2 ounces crumbled blue cheese instead of gorgonzola) Instructions: Preheat oven to 450 F. Place sweet potatoes on cookie sheet and bake for 30 minutes. Flip over and return to oven to bake until tender - about 20 minutes. Remove from oven and set aside. When cool enough to do so safely, peel sweet potatoes. Place in a medium skillet over low heat with butter, salt and maple syrup for 5 minutes, basting the potatoes with the butter mixture occasionally. Lightly smash the potatoes until there is an even consistency. Hold over low heat. To make the gremolata: In a small bowl, toss together parsley, lemon zest, garlic, pecans, cranberries and scallion. Gently fold in the cheese. Move sweet potatoes to a serving dish and sprinkle with the gremolata. Serve hot. - (BPT)

Practice makes perfect: a dress rehearsal for your turkey The holidays are approaching and before you know it, you’ll be thinking about that daunting task of cooking a turkey. This holiday season, make sure your bird impresses all the guests and relatives by conducting a dress rehearsal for your turkey. More than 88 percent of Americans eat turkey on Thanksgiving, according to a National Turkey Federation survey. But before doing so, why not do a dry run and prepare a turkey, or try a smaller bird like chicken, using a brining technique that is sure to be a crowd pleaser? It’s the hot new culinary trend that’s got everyone from celebrity chefs to home cooks buzzing. But even though brining may be the latest technique to sweep kitchens, it’s hardly new. Mankind has been brining since ancient times. It probably started out, hundreds of millennia ago, as a way of preserving seafood with sea salt. The technique has come a long way since, and now food lovers everywhere, in typical what’s-old-is-new-again fashion, are rediscovering the benefits of brining. Think you don’t have the tools to brine? Chef Helen Roberts, director of culinary development at Kikkoman, has perfected the turkey brine. The brine is simple: salt, sugar, water, dried spices and the magic ingredient:
soy sauce. Pull out your refrigerator drawer or a large, deep bucket to brine your bird. After you’ve stirred your ingredients and placed your turkey in the liquid, let the brine work its magic overnight. What’s the secret behind brining? Brining has a tenderizing and moisturizing effect. The brine is absorbed and diffused throughout the meat as it soaks overnight. In addition, Roberts explains that soy sauce has a savory effect that seals in the turkey flavor and moisture. “Brining makes a big difference when you’re roasting meat. You’ll have the juiciest bird you’ve ever tasted,” says Roberts. But, as we all know, a turkey isn’t the only thing on the kitchen table - check out some recipes here that will leave your taste buds craving for more. Savory Turkey Brine Ingredients (Recipe for a 16 to 24 pound turkey) 2 gallons cold water 10 ounces Kikkoman Naturally Brewed Soy Sauce 1/2 cup kosher salt 1/2 cup sugar 2 tablespoons dried sage 2 tablespoons dried celery seed 1 tablespoon dried thyme Instructions The night before roasting, remove
giblets and turkey neck; rinse turkey inside and out. In a large stock pot or 5 gallon bucket, mix water with remaining ingredients. Stir well until all the salt is dissolved. Place turkey in the pot, cover with a lid and refrigerate overnight or at least 8 hours. Remove turkey from the brine, rinsing well. Follow your regular cooking instructions. Brining isn’t just for meat though. Brine veggies for a rich, savory taste. Perhaps one of the trendiest veggies, Brussels sprouts, are a prime candidate for a soy sauce brine. Sick of the same old side dishes? Now that you’ve brined your turkey, get creative with your side dishes too. This Thanksgiving, Drink Easy By David White Turkey Day is notoriously terrifying for the athome sommelier. Suppose you’re into food and wine. Should you flaunt your connoisseurship and create precise pairings to wow the palate? Absolutely not. The cousin who only drinks Budweiser will get annoyed, and everyone else will think you’re a snob. Suppose wine is intimidating. Should you just stock up on Two Buck Chuck and call it a day? Again, the answer is no. That’d be a copout, as there are plenty of wines with character that don’t break the bank. Just stick to this handful of guideposts. It’s actually quite easy to create a memorable meal with wines that everyone will enjoy. For starters, remember that Thanksgiving is an American holiday. So when you head to the store, embrace your patriotism and pick up domestic wine. And don’t hesitate to buy local. The Pilgrims didn’t import their turkey from a faraway land, so try to pick up at least one bottle that was produced within driving distance of your house. All 50 states now produce wine, and the Drink Local Wine movement is taking off. Second, as San Francisco wine writer Jon Bonne has advised, “devise a roster of one sparkling wine, one white, and one red.” Anything beyond three wines creates needless confusion. If you’re hosting Thanksgiving, you’ll have enough to worry about without guests asking which red matches the stuffing, or which white goes better with the sweet potatoes. So keep it simple. You’ll also want to make sure you select wines
with power and finesse. This is easier than it sounds. A simple Pinot Grigio, for example, isn’t a powerful wine - so won’t stand up to mashed potatoes and gravy. Equally important, an inyour-face Cabernet Sauvignon lacks finesse, so will smother your food. Look for refreshing wines with body. For the sparkler, this means avoiding bottles that are too sweet -- look for “brut” or “extra brut” on the label. Old standbys like Domaine Chandon and Korbel are better than ever before, and there are some exciting sparklers coming from states like New Mexico (Gruet), Missouri (Les Bourgeois), and North Carolina (Biltmore). If you’re in the mood to splurge, America’s top sparkling wines easily rival French Champagne -- look for Roederer or Argyle. Every gathering should begin with a toast, of course, but sparkling wine goes with just about everything - so keep the sparkler on your table all evening. For the white wine, remember to look for body. Bold Chardonnays work well with turkey and can cut through just about every component of your meal - from sweet flavors like cinnamon to the bitterness of green vegetables. California is still on top, but look for wines with specific Viticultural Areas on the label, like Carneros, Monterey County, Russian River Valley, and others. These will generally have a bit more zing than your standard Cali Chard. Riesling -- either dry or slightly sweet -- is also a wonderful wine for Thanksgiving. And you can have some fun with it by selecting a bottle from Michigan,
Idaho, Washington, or New York. In Washington, Hogue Cellars and Pacific Rim are making some stunning wines, and just about everything from New York’s Finger Lakes would please your guests. With reds, think refreshment. This means avoiding wines with lots of tannin, so steer clear of Cabernet Sauvignon, Merlot, and Malbec. Pinot Noir is the most popular choice on Thanksgiving, but it’s very difficult to find good Pinot for less than $15. That’s why Syrah -- ideally from a cool-climate region like Washington or California’s coastal regions - is a better bet. Syrah is fruity enough to satisfy the guests who like big reds, and elegant enough to handle the cornucopia of Thanksgiving. There are literally hundreds of choices for less than $15. Finally, and most importantly, have lots of wine on hand. The more wine on the table, the more your family will enjoy the meal!

Enjoy healthier comfort foods while keeping the comfort Comfort foods remind us of home, warmth and family; they are often the creamy, rich and heavy everyday foods we had as children. Things like macaroni and cheese, mashed potatoes, and fried chicken may be soothing to the soul, but not to the waistline. “I happen to like my comfort foods just the way they are,” jokes chef instructor Terra Ciotta of The International Culinary School at The Art Institute of Charlotte, a campus of South University. “But around the holidays, many are making more mindful and healthier choices.” If you’re trying to reduce the holiday bulge, follow chef Ciotta’s equation of substitution equals reduction. For mashed potatoes, Ciotta purees steamed cauliflower, makes half the portion of her freshly mashed potatoes and folds the cauliflower puree into the mashed potatoes. For hearty spaghetti with meatballs, Ciotta reduces the ground beef portion and adds finely chopped sauteed mushrooms. “If you really want to make your recipes healthier, try to make simple modifications that won’t change the
end product too drastically,” says chef Leslie Eckert of The International Culinary School at The Art Institute of Raleigh-Durham, a campus of South University. “Otherwise, you won’t achieve the comfort in comfort food.” Here are tips and simple guidelines chefs Eckert and Ciotta recommend. * Choose whole grains over refined: brown rice, whole grain bread, whole grain pasta instead of white rice, white bread or standard pasta. Whole grains digest more slowly, providing longer-lasting energy. * Use small amounts of olive oil instead of butter on grains or vegetables and to saute. A nonaerosol spray bottle can help use oil sparingly. * Choose low-fat or fat-free dairy products: skim or 1 percent milk, lowfat or fat-free yogurts, sour cream and cheeses - and reduce the amount. * Choose Canadian bacon or lean ham over bacon, wild-caught, fresh or water-packed tuna or salmon over oilpacked tuna or salmon, chicken and turkey sausage over pork sausage and lean ground turkey and beef over high-fat options. * Use herbs, flavored powders
(like garlic powder), citrus (like lemon juice) and heat (like red pepper or hot sauces) over extra salt. * Instead of frying, bake, roast or grill using a rub or marinade. * Use fresh or frozen vegetables over canned. Remember that frozen vegetables are harvested at peak season and usually flash-frozen, making them superior in flavor and nutrients to off-season fresh ones. * Remember - using low-fat or fatfree dairy products, olive oil, whole grains or lean meats doesn’t mean unlimited portions. According to chef Eckert, high-fat,
high-sugar foods - such as comfort foods - illicit “feel good” hormones quicker than a plate of raw vegetables. To make your holidays healthier, you can always add vegetables to a hearty dish. Chef Ciotta cites one of her favorites as creamy risotto with broccoli. You’re still getting the hearty dish, but at the very least, you’re adding something healthy with fiber. Many experts say that you don’t have to give up your comforting favorites in order avoid weight gain. It just takes planning and portion control, and substitution of course.
Think outside the pie tin: 3 surprising ways to savor pumpkin this fall Few flavors say “fall” more clearly and tastily than pumpkin. The squash that’s synonymous with autumn is also packed with vitamins, fiber and protein, making it a perfect ingredient for a variety of dishes - not just for everyone’s favorite holiday pie. Canned or fresh, pumpkin works in savory and sweet dishes alike. Americans have been feasting on pumpkins since colonial days, when Native Americans first shared the secrets of this nourishing, easy-togrow, prolific squash. In fact, along with corn, pumpkin is one of the oldest cultivated crops in the Americas. While early Americans didn’t use pumpkins to celebrate Halloween, they did use virtually every part of the squash, from seeds and flowers to the vine and flesh. Today, whether
you opt for fresh pumpkin or canned, there are even more ways to enjoy this classic fall food. Here are three fresh ideas to help you think outside the pie tin this fall, so you can work pumpkin into your meals before the season is over. Better breakfast Pie to pudding, pumpkin often gets relegated to dessert dishes. But it’s a great way to add seasonal flavor - and a punch of nutrition - to the first meal of the day. Of course, you can always bake up a batch of pumpkin muffins, but why not try giving some other popular breakfast foods the pumpkin treatment? Protein bars, granola and scones all benefit from the addition of pumpkin. Incorporating the squash into breakfast can be as simple as adding a few tablespoons of pumpkin puree, some pumpkin pie spice and chopped pecans to your morning oatmeal. If a smoothie gets you going in the morning, it’s easy to make a pumpkin smoothie that will deliver flavor, fun and even fiber! For a quick and healthy pumpkin smoothie, combine with a banana, scoop of yogurt, a spoonful of nut butter, about one-third cup of skim milk, some ice, and cinnamon and honey to taste. You don’t have to shell out $4 per cup for a pumpkin spice latte. Just make your own latte at home and add a couple tablespoons of pumpkin puree and a dash of pumpkin pie spice. Pumpkin can also be a spirited treat, making its appearance in classic cocktails such as a Pumpkin Martini. For an eggnog guests won’t soon forget, try this recipe from Safest Choice Eggs: Shaken Eggnog Cocktail Recipe Ingredients: 1/4 cup heavy cream 2 tablespoon milk 1 1/2 ounces brandy, bourbon or dark rum
1 1/2 tablespoon simple syrup or agave nectar 1 Safest Choice pasteurized egg, beaten 1/2 teaspoon vanilla extract ice to taste pumpkin pie spice (optional garnish) to taste Directions: Place cream, milk, brandy, simple syrup, egg, vanilla and ice in cocktail shaker. Making it your main squash If you think squash as a main course begins with spaghetti squash and ends with zucchini casserole, think again. Pumpkin is a great main course ingredient. Whether you’re whipping up a hearty batch of pumpkin chili to warm your family on chilly fall days, or adding it for color and flavor to a shrimp curry, pumpkin works as a main course - either as an ingredient or the star of the show.
