Low and Slow BBQ in Half the Time A Pro’s Guide to Creating Perfect BBQ the Fast Way

By Jason Dean For many people barbeque is intimidating. We’ve all seen the TV shows featuring professional barbeque cook-offs. The pros make barbeque seem like a closely guarded state secret. They all have their special super-secret dry rubs, homemade sauces, custom blends of hardwoods and smoking rigs that look like a nuclear submarine on wheels. These guys and gals want the home cook to think that good, really good barbeque can’t be achieved without devoting your entire life to the craft. They’re wrong. With the proper planning, if you have a few hours on a lazy summer morning, you can be enjoying succulent, moist, smoky pulled pork for dinner. No nuclear submarine required. Tools & Hardware Required: 1 Gas Grill (Simple & Consistent Temperature Control, don’t be bothered by BBQ snobs. They can’t taste the difference, either. ) Heavy Duty Aluminum Foil Hickory or Apple Wood Chips Meat Thermometer Grill/BBQ Thermometer Grocery List 1 Boneless Pork Shoulder, some times called Boston Butt 1 64 oz. container of Apple Juice (no sugar added) Soy Sauce Garlic Powder Page 2

Salt 1 container McCormick Smoke house Maple Dry Rub 1 package light brown sugar BBQ Sauce of your choice The night before the big day, we need to do a little preparation. We’ll start by making a simple brine for the shoulder. In a large sealable container (big enough to hold the shoulder and about 1 ½ gallons of liquid), pour ½ gallon of hot water. Add ½ cup of salt. Stir to dissolve. Add ¼ cup of garlic powder and 1 cup of soy sauce. (You can play with this brine a little. If you want some sweetness, add some honey or molasses. Have fun, don’t be intimidated.) Once the ingredients are incorporated, add a couple of pounds of ice to chill the brine (don’t skip this step, food safety is very important). Add the pork shoulder and place the entire container in the refrigerator for 8-12 hours. The next day, cut a sheet of heavy duty aluminum foil and add a couple of handfuls of your wood chips. You can pre-soak them, if you’d like, but it’s not required. Roll the chips tightly in the foil and poke it a few times with a fork. Make a few of these packages (3-5, depending on the level of smoke you like in your food). Set the packages aside for now. Start-up your gas grill (make sure you have plenty of gas) and set the flame to its lowest setting. We’ll be

using indirect heat, so only turn-on one burner (most grills have two or three). Allow the grill to heat-up for about 15 minutes. While the grill is heating-up, remove the pork shoulder from the fridge. Pour-out the brine and lightly rinse the shoulder. Pat the shoulder dry with a clean paper towel. Now for the dry rub. For easy clean-up, lay a sheet of aluminum foil on your countertop. Place your Pork Shoulder on the foil and liberally apply your McCormick Smokehouse Maple to the outside of the shoulder. Massage the rub in every fold and crevice of the meat. To help make a luscious, sweet bark, next add the brown sugar. Expect to use about ½ pound to liberally coat the surface area of the pork. Allow the shoulder to sit at room temperature for about 30 minutes, while you proceed to the next step. This will give the rub a chance to blend with and draw-out some moisture from the shoulder, creating a nice crust. Grab one of your wood packets. Using tongs, place the packet near the flame of your grill. When the wood chips start smoking, place the dry-rubbed pork shoulder on the grill, opposite the flame (indirect heat, remember). Close the lid. Carefully monitor the temperature of the grill. You are looking for a temperature of around 235-255 degrees.

Adjust the flame accordingly. When the smoke packet is exhausted, you can remove it with tongs, and add another packet until your desired level of smoke is achieved. (4-5 packets is generally a good level of smoke flavor) Allow the meat to cook until an internal temperature of 140 degrees is achieved. Remove the shoulder from the grill/smoker and loosely wrap in aluminum foil. Place the meat in your pre-heated 350 degree oven and continue the cooking process until an internal temperature of 195 degrees is reached. (There are those who say that finishing the cooking process in the oven is “cheating”. To those I would ask to consider that there is no difference in the method used to heat the pork once the desired level of smoke is achieved. Provided we are using dry heat (versus boiling or frying), the method of simply reaching the proper temperature to allow the connective tissues to break down, rendering a perfectly pull-able hunk of pork, is inconsequential. ) After the pork has reached 195 degrees, allow the shoulder to rest on a countertop for another 20-30 minutes. You may then begin the process of pulling the pork, and snacking on perfect pieces of bark. Add your favorite BBQ sauce or not, the choice is yours.

Those who were hoping to meet Current Mayor Bradley McGirr were treated to some unexpected surprises during the lavish late afternoon civic gathering. In addition to meeting the current mayor, guests were treated to introductions to three former mayors who were also at the ceremony. Former Rancho Santa Margarita Mayor’s Jim Thor, former Mayor Carol Gamble, and former mayor Tony Beall, who cut short his vacation in Mexico to fly back for this special event. Residents also got to mingle with other civic dignitaries including Rancho Santa Margarita City Manager Jennifer Cervantes, and Rancho Santa Margarita City Clerk Amy Diaz as well as Rancho Santa Margarita Chamber of Commerce President Suzanne Singh, who organized the event together with other chamber officials. Guests shared dinner and cocktails with the group of city mayors while the sun set over the beautiful Tijeras Creek Golf Club outdoor patio. Mayor McGirr shared many details of his personal life and plans for his term as mayor with the City of Rancho Santa Margarita to the delight of crowd.

Barbecue Sauce, an American Flavor Tradition

By Mike Thayer It’s grilling season, BBQ season, it’s time to fire up the smoker, the gas grill, the portable Weber, rub two sticks together, it doesn’t matter - put some meat on the fire! And what is the most popular accompaniment for a plethora of meats cooked in the great outdoors? No silly, not ketchup, its barbecue sauce! The person who invented BBQ sauce is unknown, but whoever he was, he was a genius! References to the sauce started appearing in 17th century English and French literature about the formation of the American colonies. The rest is history and boy has BBQ sauce been kicked up a notch with all kinds of flavors and varieties created over the last 400+ years! A traditional flavoring for pork, beef and chicken, sauce can range from watery to thick, from being heavy on the vinegar to being loaded with spice. Heck, there’s even mustard and mayonnaise based BBQ sauces. It’s a regional thing, there’s Carolina BBQ, Tennessee whiskey BBQ, Texas BBQ and the favorite of yours truly, Kansas City BBQ. What is your favorite sauce? Kansas City BBQ style: This is a thick, rich tomato based sauce that’s got some spice but is heavier on the sweet. Tomato, brown sugar and vinegar are the base ingredients. It doesn’t really penetrate the meat and is more like a frosting than a marinade. It glazes REAL nice though when put on the meat about 10 minutes before pulling off the grill, a beautiful finish. This is the most popular style of sauce in the U.S. and what you see the most of in the bottled varieties on

the grocery store shelf. Be careful with the store bought stuff though! The high sugar content of the “ready” varieties tend to burn real quick so keep an eye on your dinner. Texas BBQ style: This has more kick than Kansas City style. It has less tomato, less sugar and a lot more spice such as cumin, black pepper, chili pepper, and even chili powder. Meat drippings and hot sauce - Tabasco - are always a part of this style and fresh veggies like green bell pepper and onion are often added. East Carolina mop: This simple but tasty sauce was pioneered by the African slaves of Scottish settlers in the region. It’s a straight forward combination of hot pepper flakes, ground black pepper and vinegar. The reason it’s called a mop is because this thin concoction is literally mopped - basted - on the meat throughout the cooking process, the flavor really penetrates! With little if any sugar and no tomato in this style, East Carolina mop is a sharp contrast to other sauces. Western Carolina dip: From the hilly areas of North Carolina, most American sauces can trace their roots to this one. The recipe usually consists of a base of black pepper blended with tomato paste or tomato sauce, or ketchup, with vinegar added to balance it out. Like the East Carolina mop, this is a thin sauce that is mopped on the meat throughout the cooking process. South Carolina mustard style: This is a whole new BBQ sauce

experience. Early German settlers developed this one and while good on chicken, its tailor made for pork. A little thicker than its Carolina cousin sauces, a simple recipe consists of mustard, vinegar, spices and a little sugar. Fantastic on a pulled pork sandwich topped with coleslaw. Tennessee Whiskey style: Made famous by the Jack Daniel’s World Championship Barbecue Invitational, this style has become so popular it now deserves its own category. This combination of vinegar, whiskey, molasses, spices, and Worcestershire sauce gives BBQ a whole new flavor profile. And BBQ sauce isn’t just for pork, beef or chicken anymore! Try the Western Carolina dip on grilled shrimp or fish. Put your favorite style on a pizza instead of traditional tomato sauce. If lamb isn’t your favorite, try it again with some Tennessee Whiskey sauce! And here’s a personal side dish favorite, toss some grilled cauliflower florets, baby carrots, baby portabella mushrooms and bacon bits together with some Kansas City style sauce. Delicious! Get your tongs out!

Andrew Kocher and C’Havinia Photos by: CapturedMomentPhoto.com Brisk winds and ominous gray clouds didn’t deter a huge field of horses and riders in the $25,000 1.40m Markel Insurance Grand Prix at the Showpark Ranch & Coast Classic. Of the 68 competitors, only five were able to negotiate all the questions asked within the time allowed. The Markel Grand Prix serves as an excellent warm-up class for Saturday’s grand prix as well as an ideal class for new grand prix pairs. So course designer Oscar Soberon had his work cut out for him in designing a track to challenge every level of experience in the field. “It’s all about the material chosen for each jump and making sure the distances are challenging enough but still fair,” he explained. Notably, nearly every fence on the course came down at least once, but the standout four-fault scores appeared at fence 7, a wide oxer with tricky striped poles out of a three stride; and fence 10, a liverpool oxer, set on the rail with black poles. The tight time allowed of 84 seconds also caused faults for a majority of the entries. With the riders in mind, Soberon made an interesting choice to build

fence 8b out of a double combination and fence 9 as option fences, with a choice of a more technical inside track or a more time-consuming but smoother outside track. “I built option fences because the time allowed is tight. The more inexperienced riders have the option to take their time on the outside option and finish their track more easily, but it will be easier to make the time allowed if riders take the other inside option,” he said. As the class progressed, the skies opened with a brief but intense rain shower, as faults accumulated for rider after rider. Twenty-first to go, Andrew Kocher on Eagle Valley Partners, LLC’s C’Havinia turned in the first clear round, followed several rounds later by a California favorite, Richard Spooner, aboard his own Chivas Z. Another large percentage of the class passed with unsuccessful attempts at clear rounds before Francie Steinwedell-Carvin on Lapsus Du Lavoir (owned by Prentiss Partners) galloped in twenty rounds later for the third clear round. Eduardo Menezes on his own Catalina became the fourth clear, with the fifth and final clean round from Lauren Hester aboard Hester Equestrian, Inc’s Wender. Kocher and C’Havinia returned

The St. Louis, Missouri rider and 8-year-old KWPN mare have kicked off 2015 on a successful note, most recently earning a top ten finish in the $25,000 Ralph Suarez Grand Prix and scoring numerous other top grand prix placings this past winter competing on the circuit in Gulfport. Kocher zipped around the course to stop the timers with a clear round in 38.31 seconds. Spooner and Chivas Z were next to race for the top prize. The “Master of Faster,” whose name is synonymous with grand prix wins on an international scale, had a blazing time until an unexpected stop at the final fence left them with a four-fault score in 51.17 seconds. The final three riders each had one rail on course as they contested Kocher’s clear round. We’ll definitely be back next year and stay longer - the weather is a little nicer than middle America!”

Olive Crest’s Gala raises nearly q u a r t e r m i ll i o n d o ll a r s Photos by: Carla Rhea and Ken Juber Olive Crest’s nautically-themed fundraiser at the Balboa Pavilion in Newport Beach, was a heartwarming affair and one that garnered more than $254,000 to benefit its Project Independence Program for 14 to 24 year-old at-risk youth and young adults. The program’s message was brought home at the event by 18-year-old Apple Taylor, who spoke about how Olive Crest lifted her out of an extremely abusive home environment through Project Independence. The Cal State Fullerton freshman theater major said, “With the help of Olive Crest, I was able to find out who I am. This organization cares passionately about the kids that they help.” Taylor closed by singing a beautiful rendition of “I Dreamed a Dream” from Les Miserables. Olive Crest CEO Donald A. Verleur spoke about Project Independence, which is one of the largest programs that helps 14-24-year-old at-risk youth and young adults in the state. “Each day, we help to give 1000+ youth the strength, guidance and basic necessities of life, which they need to become productive and successful adults,” he said. “I have seen first-hand how young adult lives have been saved from a life of abuse or neglect and come to a place where they can graduate from high school, get a job, learn to live with others, and start their own families.” Bryan Kaltenbach, President of Food4Less, was presented the inaugural Founder’s Award by Olive Crest Founders Dr. Donald and Lois Verleur. The award, a whimsical bronze sculpture of happy, laughing children, was breathtaking. Kaltenback joked that the last time he was in the room at the Balboa Pavilion he was 17 and attending his high school prom. More serious, and quite emotional, he said of the honor, “I am completely humbled by what you do. You not only save children, you save their lives, and I will treasure this award the rest of my life.” Steve Bernardy, Olive Crest Trustee Board President and Merrill Lynch Senior Vice President, was presented Olive Crest’s Champion for the Children Award by OC’s Board Chairman Jim Woodside, who is Vice President at Oltmans Construction Co. Bernardy was touched when he was presented a piece of art drawn by an Olive Crest youth, who lives at the Wheeler house. Gala Co-Chairs and Olive Crest board members Lorraine Bader and Lori Feeney oversaw the evening’s festive cocktail reception, silent and live auctions, sit-down dinner, and the Golden Ticket opportunity drawing, with the winning ticket holder selecting the Holland America cruise from the live auction prizes. The live auction drew some spirited bidding with a one-week condo stay in Oahu, Hawaii, a Park City condo five-night package, a pair of pearl earrings from Traditional Jewelers and a one-night stay at the Newport Beach Marriott, a suite at a Clippers game, a suite at a Lakers game, and a sushi dinner for 20, courtesy of Bristol Farms and its master sushi chef Yoshi Kubo. The crowd loved the Smooth Harbor Yacht Club band and danced until the wee hours. A conga line was part of the mix, when it was announced that it was Steve Bernardy’s birthday. Team manager and parent, Luz Loreto, explained, “The team’s creation of the creature feature evolved from a Jenga block idea to Arnold, a superhero made up of water bottles. This is the beauty of Destination Imagination,” Loreto continued. “The possibilities are limitless and the creative process is a journey.
