City of Hope Golf & Tennis tournament at coto de caza Furniture industry executives raised more than $1.4 million here for City of Hope at the West Coast Golf & Tennis tournament and dinner honoring George Tsai and Jason Liu of Fairmont Designs. The money will benefit cancer, diabetes and HIV-AIDS research at City of Hope, a research and treatment organization based in Duarte, Calif. Tsai, the chairman of Fairmont Designs, and Liu, the company’s CEO, received the National Home Furnishings Industry’s Lifetime Achievement Award at the event, which was held June 9 at the Coto de Caza Country Club. The fundraiser was the premier West Coast philanthropic event of the National Home Furnishings Industry Chapter for City of Hope. It was co-chaired by Neil Friedman, Larry Furiani, Michael Gennet, Rick Powell, Jason Liu, Rick Powell and George Tsai Chuck Reilly and Debra Tous. They employee from Texas, spoke of her major vertical producer and retailer met monthly to produce it. ROTARY CLUB OF COTO DE CAZA /RANCHO SANTA MARGARITA TO HOST ANNUAL 4TH OF JULY PARADE AND FESTIVAL Whole-Family Entertainment Featuring an Antique Steam Fire Engine Summer would not be complete without Coto de Caza’s 33rd Annual 4th of July Parade and Festival, hosted by The Rotary Club of Coto de Caza/Rancho Santa Margarita. The parade features classic cars, golf carts, self-made floats, sports teams, and performance groups for friends, family, and the community. This year, the participation of Coto de Caza residents Dave and Barbara Hubert will be a featured parade highlight; they are excited to introduce their shiny, red-and-gold antique steam fire engine to this year’s Independence Day celebration. Weighing in at a whopping 10,700 pounds this 1902 fire engine will be pulled by the traditional threehorse-hitch of powerful draft horses. They will also be accompanied by their dog, Dottie the Dalmatian. Event festivities will kick off at 10 a.m. with the parade starting at Plano Trabuco and Coto de Caza Drive and ending at the Festival housed at the Sports Park in Coto de Caza. Open to all ages, activities at the Festival will include carnival games and bounce houses. A beer garden will be available for adults, and food vendors will be on-site. Additionally, the Rotary Club will spearhead specialty sponsorship opportunities including fair vendor booths and parade entries. “We look forward to this event each year because it allows locals to come together and be involved in celebrating the freedoms we have as Americans” said Derek Godfrey, president of the Rotary Club of Coto De Caza/ Rancho Santa Margarita says. “We are incredibly grateful for all the vendors and sponsors that help with putting this celebration together, and are excited to have the Hubert’s antique steam fire engine accompanied by Dottie the Dalmatian ride down our streets to educate our youth about fire safety.” For more than 30 years, the Rotary Club of Coto de Caza/Rancho Santa Margarita del Sol has supported community outreach efforts that include fundraising to help the needy or sponsor school programs, “handson” projects, such as building homes, bus shelters and parks, helping Marine families left behind, helping abused

Fa c t s Ab o u t t h e F o u r t h o f J u ly: A m e r i c a’ s I n d e p e n d e n c e Day By Jennifer Phillips The 4th of July marks the signing of the Declaration of Independence by the men who are responsible for the start of the United States of America. In 1776, on July 2nd, the Continental Congress met to discuss independence. There was much political unrest at the time, with the thirteen colonies chafing under the rule of a King who was an entire ocean away. There were feelings of resentment over the lack of representation in England, for the Colonies. In short, the citizens of the original Colonies were unhappy, and the Continental Congress felt it was time to take the next step forward, towards independence, and self-rule. Two days after this meeting, on July 4th, these men signed a document, drafted by Thomas Jefferson, declaring the intentions of the Colonies to be free from the rule of the kingdom of Great Britain. What followed was a long, bitter war lasting roughly eight years. It eventually involved not only England and the United States, but also France, Spain and the Dutch Republic. The war ended in 1783, and the United States were finally free to govern themselves, but the date most celebrated is the date that began it all; the Fourth of July. While the 4th of July has only been an official paid holiday for federal employees since 1941, it has been celebrated thoroughly since the very start. Today the 4th of July is celebrated in the United States with parades, fireworks, picnics and extravagant displays of patriotism. It
has been that way for a long time, too. The list below illustrates some of the ways that this holiday has been celebrated in the past. * 1777- Thirteen gunshots were fired (once in the morning, and again in the evening) on July 4th in Rhode Island. Philadelphia held an official dinner, complete with toasts, 13-gun salutes, speeches, songs, parades and, yes, fireworks. * 1778- George Washington’s soldiers received a double ration of rum and an artillery salute. John Adams and Benjamin Franklin, acting as ambassadors to France, held a celebration dinner for their fellow Americans. * 1779- July 4th fell on a holiday, and was celebrated on Monday instead. * 1781- Massachusetts was the first state to recognize July 4th as an official state holiday. * 1791- The first use recorded use of the name “Independence Day” is found in this year. * 1941- The 4th of July is declared a paid holiday for federal employees. The traditions of the 4th of July celebrations run deep. It inspires in many American citizens feelings of patriotism, and pride in their country. It’s also a holiday for fun and family. Some of the long-standing celebrations in the United States include: * Since 1785, Bristol, Rhode Island’s Fourth of July Parade has occurred annually. This makes it the oldest continuous Independence day celebration in the United States. * Since 1916, Nathan’s Hot Dog Contest has been held at Coney
Island every 4th of July. The contest supposedly started as a way to settle an argument between four immigrants, over who was the most patriotic. * During the last week of June, since 1959, Detroit, Michigan and Windsor, Ontario hold a mutual celebration of both Independence Day and Canada Day. The celebration ends with a large fireworks display over the Detroit River. Clearly, Americans hold a special place in their hearts for this holiday, even this many years later. Many wars have been fought, and many lives lost, in the name of freedom and independence. Even in times of political unrest and economic struggle, Americans can, on this day, look back at their long, rich history of freedom and independence, and feel a sense of gratitude to, and pride in, their forefathers, and the men who followed in their footsteps.

KIRSTEN VITAL ANNOUNCED AS CAPISTRANO UNIFIED NEXT SUPERINTENDENT Kirsten Vital to Lead the HighestPerforming, Large School District in California Kirsten M. Vital, has been named the new Superintendent of the Capistrano Unified School District, succeeding Dr. Joseph M. Farley who will retire on July 1, 2014, as the leader of Orange County’s secondlargest school district. The Board of Trustees made the selection of Ms. Vital following a closed session meeting on June 14, 2014. A contract is expected to be ratified on Wednesday, June 25 at the Board of Trustees’ regularly scheduled meeting. The new Superintendent comes to CUSD from Alameda Unified School District in Alameda, California, where she is Superintendent. A seasoned educator, Ms. Vital served as an administrator in some of California’s largest districts, including Los Angeles Unified School District and Oakland Unified School District. Vital has been a teacher, an assistant principal, principal, and a college professor. To find the ideal candidate, the Board of Trustees conducted a nationwide search. The search was guided by a Page 8
detailed list of leadership criteria, a web-based survey, community forum, and responses from focus groups representing community and district stakeholders. Board President John M. Alpay expressed his confidence in Vital, “We wanted to ensure that we had the right person for this very important role during this critical time in our District,” he said. “Because of her demonstrated track record of success, the Board of Trustees is certain that Kirsten Vital is the right leader who will take our District to new heights of student achievement.” Retiring Superintendent Dr. Joseph M. Farley has been widely praised for his leadership of the District over the last four years. Capistrano Unified schools have consistently ranked in the top one percent of California’s public schools. Successfully weathering the most recent economic recession, the District’s fiscal position was certified as “positive” by the Orange County Department of Education. With over 4,000 employees, the new Superintendent will take the helm of the largest employer in South Orange County.

“Palette of Colors: A Tuscan Evening” Nets $75,000 for Art & Creativity for Healing Art & Creativity for Healing, Inc., whose mission is to support emotional healing through art and creative expression for those living with pain, grief, fear or stress, announced that it netted $75,000 at it annual fundraising dinner, “Palette of Colors: A Tuscan Evening,” held at the Mission Viejo Country Club. Proceeds from the event will be used to support free Art4Healing® programs for homeless children and their families, victims of domestic violence, underprivileged children, and families dealing with the affects of Autism. “We are grateful to the local community for their help in making Art4Healing workshops accessible to those within our community who are living with pain, grief, fear or stress,” said Laurie Zagon, Founder/Director, Art & Creativity for Healing, Inc. “Palette of Colors: A Tuscan Evening” drew 250 guests who arrived at the Mission Viejo Country Club dressed in colorful cocktail attire. Guests were welcomed to the event with a glass of Doffo Sparkling Champagne with a Golden Raspberry, courtesy of Doffo Winery, and enjoyed passed hors d’ oeuvres including Bruschetta and Pancetta-Wrapped Melon, as they perused more than 150 silent auction items and sampled wines and cocktails from the no-host bar. During the program portion of the evening, which began during dessert and coffee service, guests enjoyed a special performance by Emma C. Grier, an Art4Healing workshop participant, and vocalist, who recently lost her father to cancer. Art & Creativity for Healing also recognized its “Teacher of the Year,” Kim Schubert who facilitates weekly workshops for wounded warriors at the Naval Hospital on Camp Pendleton, and has also taught bereavement workshops, as well as evening workshops for the families at the OC Rescue Mission. Also honored that evening was Erin Praefke, Art & Creativity for Healing’s “Volunteer of the Year.” Erin currently volunteers here time as a facilitator, teaching Art4Healing®classes and workshops at American Family Housing for the Homeless, Illumination Foundation, and the OC Rescue Mission. She also serves as president of the HeARTs for Healing Women’s Guild. The live auction portion of the evening began with bidding on a Scotch Tasting Party for gentlemen only, hosted by Jim Stinson which went for $2500; and, a one week-stay at Little Blue Cottage by the Sea in Laguna Beach, donated by Sharlene Baker, which was purchased twice by separate bidders for $2,200 each. Exotic vacation packages featured in the live auction included an African Photo Safari which went for $3,500, and was sold twice; Unforgettable New York, which went for $3600; and, a Seven Night Stay at Legacy Villas in La Quinta, Calif., which went for $2,200. The live auction also featured two “wild card” donations that were offered up by guests during the event including a hand-carved pen by Gunnery Sargeant Ernesto Aquino that was purchased by Jim Stinson for $1,500; and an appearance by “Santa Claus” donated by John Hill and purchased for $400 by Margaret Bushaw Art & Creativity for Healing covers all administrative costs through revenue from its teacher training programs, 100 percent of the funds raised at the 2014 “Palette of Colors: A Tuscan Evening” will be used to support free Art & Creativity for Healing workshops for children including the “Art4Healing: Creative Tools for Homeless Children & their Families” with Project Hope Alliance, Orange County Rescue Mission and American Family Housing; the “Art for Healing for Heroes and their Families” program at Camp Pendleton; “Autism Expressions with Color” with The Center for Autism and Neurodevelopment Disorders; Families and Community Together Orange County, a partnership between Orange County Social Services Agency and Orangewood Children’s Foundation; Art & Creativity for Healing’s partnership with Human Options; and Children’s Hospital Orange County (CHOC). Have a Flag-Waving Fourth of July! I’m bringing a fantastic flag cake to this year’s party - it serves a lot of people and it’s easy to make. I’ll let you in on two little secrets that make this cake taste extra good: instant potato flakes keep the cake tender and moist, while mini chocolate chips give you little bursts of chocolate with every bite. The colorful fruit on top not only adds great flavor, but it turns this cake into a showstopper that has guests “oohing” and “ahhing” in delight! If you’re going to a potluck party this year, I have some tips for being a good guest: * Keep it safe: It’s tricky to keep hot foods hot and cold foods cold, so make sure the food you’re bringing will be safe at room temperature. For example, on a hot summer day, vinegar-based salad dressings are a better choice than mayonnaise-based ones. * Keep it simple: Bring dishes that are ready to serve. Asking to pop something into the host’s oven for “just a few minutes” is inconvenient for the host and the guests waiting to eat. * Keep it practical: Label your dish so that guests know what they’re getting. It’s also a big help if you bring your own serving utensils - the host won’t be forced to hunt for something and the line won’t get held up waiting.
* Keep it yours: If you need to take your serving dish home, be sure to label it. A bit of masking tape with your name on it can be discreetly placed on the dish so it doesn’t get mixed up with someone else’s. 1 cup water 1 cup instant mashed potato flakes 2 2/3 cups all-purpose flour 1 tablespoon baking powder 3/4 teaspoon salt 2 teaspoons ground cinnamon 1/2 teaspoon ground nutmeg 2 2/3 cups granulated sugar 1 cup (2 sticks) butter or mar garine, softened 4 large eggs 3/4 cup milk 2 cups (12-ounce package) Nestlé Toll House Semi-Sweet Chocolate Mini Morsels 1 container (8 ounces) frozen lite whipped topping, thawed 2 cups sliced strawberries 1/2 cup blueberries PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan; line with wax
paper. HEAT water to boiling in small saucepan; remove from heat. Stir in potato flakes until moistened. Cool to room temperature. Combine flour, baking powder, salt, cinnamon and nutmeg in a medium bowl. BEAT sugar and butter until crumbly. Add eggs one at a time, beating well after each addition; beat in potatoes. Gradually beat in flour mixture alternately with milk. Stir in morsels. Spoon into prepared baking pan. BAKE for 45 to 55 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 15 minutes.
Invert onto wire rack; remove wax paper. Cool completely. Transfer to serving platter. FROST sides and top of cake with whipped topping. Just prior to serving, arrange strawberry slices and blueberries on top of cake to represent the American flag. I had a conversation with a patient the other day, an eighty-five year old doctor (retired). We were discussing how, when, in the 1960’s I was a hospital corpsman in Dr. Michael Tessier the Navy and he was an established physician, we were just starting to use new needles on every patient, as opposed to re-sharpening old ones. The old way sounds so barbaric. That got me thinking about the other things we do today to make dental work easier and better. Thirty-seven years ago, while in dental school, there was nothing that bonded to tooth structure. Today we can bond a 0.75mm thick porcelain veneer to the front surface of a tooth, dramatically improving its appearance while removing a lot less tooth structure. The old analogue x-rays required some nasty chemicals for development. Today, digital x-rays go right into the computer, where they can be e-mailed to anywhere in the world. The definition is dramatically better, and the amount of radiation they expose the patient to is way less than walking around in the sun. We also take digital panographic x-rays which are totally extra-oral, and show a complete picture of, say, the wisdom teeth and surrounding tissues, or any bone abnormalities like cysts or even bone cancer in the jaws that regular x-rays don’t pick up.

I wear a battery-powered headlight that gives me better illumination than I’ve ever had before (no more working in the dark). For smaller cavities, we use a sandblaster istead fo the drill. No anesthetic is required, and there’s no heat of friction which otherwise might result in fractured teeth in years to come. Replacing missing teeth is still done with fixed tooth-colored porcelain bridges (don’t come out) bridges made of toothcolored porcelain and have no unsightly or irritating external hardware. Alternatively, implants are as close to 100% reliable as anything ever is, they don’t involve the teeth on either side of the missing tooth. Frequently, where a root canal on a questionable tooth used to be the only option, now that offender is removed and replaced with an implant. We’ve been using a laser for the past six years to treat gum problems. The old way of using a knife to cut the gums and peel them off the bone to fix a defect in the boney socket in which a tooth is situated was very painful for about seven to ten days after the procedure. Today, the laser allows us to avoid the knife and sutures and the post-operative pain, and we can actually expect the gum tissue to re-attach to the tooth structure. MISSION SAN JUAN CAPISTRANO TO HOST SPECIAL ‘JOURNEYS TO THE PAST’
Mission San Juan Capistrano will host a special presentation of “Journeys to the Past” on Monday, June 30 beginning at 10 a.m. As always, Jacque Nunez, the 2009 Educator of the year, takes students on a journey into the lifestyle of the California Indian. Children experience lively music, story telling, songs, games, and dance with opportunities to participate. Students leave with an appreciation of environmentalism and what it means to be “keepers of the earth.” But what makes this “Journeys” presentation special will be the appearance by the Young Spirit Dancers dance team from Omaha, Nebraska. The dance team is comprised of students ages 8-15, representing the Cherokee, Dine (Navajo), Lakota, Omaha and Winnebago People. The dance team’s trip to Southern California will include a performance at Disney’s California Adventure. Journeys to the Past, which normally costs $4 to participate, will be free with paid admission to the Mission. Jacque Nunez is a direct descendent of the Juaneno Band of Mission Indians, also know as the Acjachemen Indians. Her great, great grandfather was one of the leather
jacket soldiers that guarded Father Serra as he traveled from San Diego to San Juan Capistrano. Jacque grew up in the oldest home in California, Los Rios Adobe. Her family has lived in this house built by Feliciano Rios over 200 years ago. Her storytelling venue, which is the only Native American venue in any of the 21 missions, is unique, engaging and memorable. About Mission San Juan Capistrano: Known as the “Jewel of the Missions,” Mission San Juan Capistrano is a historic landmark and museum that boasts of quality permanent exhibits featuring original artifacts as well as traveling and temporary exhibits on a wide variety of topics. The site itself serves as a living outdoor museum with original buildings constructed by Native Americans in the 18th century including the Serra Chapel, Great Stone Church, and the original padres’ quarters of the South Wing. Guided Hike through trabuco canyon
On a recent Saturday, about 30 hikers navigated Trabuco Canyon terrain amid coastal sage scrub, oak woodland, grasslands and chaparral as part of OCTA’s series of interpretive excursions through its protected wilderness preserve. Another hike is scheduled for Aug. 9. The fourth and final event in the series is a guided equestrian tour on Aug. 16. The guided two-mile hiking tour took place on Ferber Ranch Wilderness Preserve, nearly 400 acres of rolling terrain in an unincorporated area of Orange County. Bordered on the north by the Cleveland National Forest and on the south by Trabuco Creek, the property is located within the Trabuco Canyon area of the Foothill / Trabuco Specific Plan. OCTA’s acquisition of this property protects several vital wildlife movement corridors, ensures the preservation of high quality habitat, and allows this core segment of Trabuco Canyon to be permanently protected. In 2011, OCTA purchased Ferber Ranch as part of the M2 Freeway Environmental Mitigation Program. Page 16
Funded by Measure M, the county’s half-cent sales tax for transportation, the program allocates funds to acquire open space and contribute to habitat restoration projects in exchange for streamlined project approvals for 13 M freeway improvement projects. Acquired properties are purchased and permanently preserved as open space. Funded restoration projects restore preserved open space lands to their native habitat and include the removal of invasive plant species.

Press into bottom and 3/4 up side of 9-inch springform pan. Refrigerate while making filling. In large bowl, beat cream cheese, sugar and vanilla until light and creamy. Add heavy cream and beat until combined. In small saucepan, bring strawberry juice just to boiling, stirring constantly. Remove from heat. Sprinkle gelatin evenly over top and whisk vigorously to dissolve completely, about 3 minutes. Pour into cream cheese mixture. Add icing color and beat until well combined. Beat in 1/3 cup mini chocolate chips. Pour into chilled crust. Sprinkle top with remaining chocolate chips. Refrigerate until set, about 3 hours.
Makes about 24 Sweet Sliders Cake Buns: 1 package (16 ounces) yellow cake mix Eggs, water and vegetable oil to prepare mix Brownie Patties: 1/2 cup all-purpose flour 1/8 teaspoon salt 3 tablespoons unsalted butter 1/3 cup granulated sugar 1 tablespoon water 1/2 cup semi-sweet chocolate chips 1/2 teaspoon pure vanilla extract 1 egg Toppings: Shredded coconut Leaf green icing color Assorted fruit flavored candies Red sparkle gel Yellow sparkle gel Preheat oven to 350°F. Prepare whoopie pie pan with vegetable pan spray. For buns, combine cake mix, eggs, water and oil in large bowl; mix according to package instructions. Fill prepared pan cavities 2/3 full with cake batter. Bake 9 to 11 minutes, or until tops of cake spring back when touched. Cool in pan 10 minutes; remove to cooling grid and cool completely. Repeat with remaining cake batter. For patties, combine flour and salt in small bowl. In small saucepan, melt butter and sugar with water; stir until sugar is dissolved. Add chocolate chips; stir until melted. Remove from heat. Stir in vanilla extract. In large bowl, beat egg with electric mixer. Add chocolate mixture; mix well. Add flour mixture; stir until just combined. Divide batter evenly between whoopie pie pan cavities, filling about 1/3 full. Bake 9 to 11 minutes or until toothpick inserted in center comes out nearly clean. Cool 10 minutes; loosen edges of brownies and remove from pan. Cool completely. For toppings, mix shredded coconut with leaf green icing color for lettuce. Roll yellow fruit candies into thin layers for cheese. Use red and yellow sparkle gels for ketchup and mustard. To assemble, top cake bun with a brownie patty. Add toppings and finish with second cake bun.

Pipe a swirl of blue icing from back edge following the curve of the container to the front, then filling in the center; add sprinkles. Add second cake. Pipe a swirl of white icing; add sprinkles. Top with another cake. Pipe a swirl of red icing. Top with Patriotic Sprinkles or Rocket Treat Pops Toppers. Convenience tip: Substitute vanilla wafer cookies for whoopie pie cakes.

Easy 4th of July BBQ Ribs By Mary McShane This is an easy and great tasting 4th of July BBQ ribs recipe for your gathering of family and friends. The unique combination of cranberry sauce, your favorite BBQ sauce and brown sugar will encourage you to use it with more pork recipes. 2 lbs Pork ribs Marinate 4-6 hours in a mixture of: - 3/4 can beer - 1/4 cup olive oil - 1/4 cup BBQ sauce Mix for basting/dipping sauce: - 3/4 cup BBQ sauce - 1/2 cup cranberry sauce - 2 tbls. chili sauce - 1/2 cup brown sugar - orange juice to your desired consistency Grill low (200-250) for 2-4 hours depending on thickness of the ribs and baste as needed. To reduce grilling time: parboil the ribs in marinate mixture with water added to cover the ribs until meat is gray or bake at 350, in marinade mixture until meat is lightly browned. Children like these ribs best when they are cut, after grilling, to the size of riblets. The riblets also make a great party food. For the 4th of July, place the ribs/riblets on a white platter and garnish with blueberries. Page 22

Santa Margarita Water District Issues Annual Water Quality Report
The annual Water Quality Report on the Santa Margarita Water District has been mailed to customers and is now also available on the District’s website. California public water suppliers have been providing an annual water quality report to their customers since 1990 as required by state and federal law. This year’s report covers drinking water quality testing and reporting by SMWD in calendar year 2013. SMWD conducts approximately 24,000 to 30,000 tests throughout the year from 39 designated sample locations and 21 drinking water reservoirs located throughout the District to ensure the water delivered meets the quality standards required by the U.S. Page 24
Environmental Protection Agency and the California Department of Public Health. “First and foremost, we want our customers to know their water is clean, safe and of the highest quality. This report tells customers in a clear and concise way where their water comes from and what’s in it,” said Daniel R. What makes America great? The two main elements that make America great are our people and our freedoms. Our people have a can do, nothing is impossible, spirit. Starting with the American Revolution, we have always conquered adversity, often in the face of overwhelming odds. We have more rights and freedoms than anywhere else in the world. Our freedoms are considered inalienable rights, not privileges granted by government. Our freedoms are the envy of the world. Every item in the bill of rights is a precious jewel, designed to ensure the immortality of our liberty. Our founders came from societies where government controlled its citizens. They had a solid understanding of the consequences of unchecked power. Our constitution was crafted specifically to limit the scope of government to prevent its infringing on individual liberties. Our constitution is a brilliant document, filled with foresight and understanding, that has withstood the test of time. The principles embedded in
the constitution are the foundation of our greatness. In America, each citizen can control his or her destiny without fear of interference by government or others. Our government was formed to serve the people rather than vice versa. Our government was designed to play a minimal role in people’s lives. Our doors have always been open to people from anywhere in the world who want to come here legally to work hard, contribute, and assimilate into our society. America’s reputation as a melting pot is derived from the fact that people from every walk of life can work together to create an unstoppable force for good. In America anything is possible. America is great because it offers its people unlimited opportunity to succeed by bringing their dreams to reality. In America, success requires hard work, determination, and persistence, not permission. We are constitutionally protected to prevent government from confiscating the results of our labor. America is an engine for unprecedented productivity. Our economic system has been responsible for civilization transforming innovations and discoveries. No other country has even come close and many other
