Facts About the Fourth of July: America’s Independence Day By Jennifer Phillips The 4th of July marks the signing of the Declaration of Independence by the men who are responsible for the start of the United States of America. In 1776, on July 2nd, the Continental Congress met to discuss independence. There was much political unrest at the time, with the thirteen colonies chafing under the rule of a King who was an entire ocean away. There were feelings of resentment over the lack of representation in England, for the Colonies. In short, the citizens of the original Colonies were unhappy, and the Continental Congress felt it was time to take the next step forward, towards independence, and self-rule. Two days after this meeting, on July 4th, these men signed a document, drafted by Thomas Jefferson, declaring the intentions of the Colonies to be free from the rule of the kingdom of Great Britain. What followed was a long, bitter war lasting roughly eight years. It eventually involved not only England and the United States, but also France, Spain and the Dutch Republic. The war ended in 1783, and the United States were finally free to govern themselves,

but the date most celebrated is the date that began it all; the Fourth of July. While the 4th of July has only been an official paid holiday for federal employees since 1941, it has been celebrated thoroughly since the very start. Today the 4th of July is celebrated in the United States with parades, fireworks, picnics and extravagant displays of patriotism. It has been that way for a long time, too. The list below illustrates some of the ways that this holiday has been celebrated in the past. * 1777- Thirteen gunshots were fired (once in the morning, and again in the evening) on July 4th in Rhode Island. Philadelphia held an official dinner, complete with toasts, 13-gun salutes, speeches, songs, parades and, yes, fireworks. * 1778- George Washington's soldiers received a double ration of rum and an artillery salute. John Adams and Benjamin Franklin, acting as ambassadors to France, held a celebration dinner for their fellow Americans. * 1779- July 4th fell on a holiday, and was celebrated on Monday instead. * 1781- Massachusetts was the

first state to recognize July 4th as an official state holiday. * 1791- The first use recorded use of the name "Independence Day" is found in this year. * 1941- The 4th of July is declared a paid holiday for federal employees. The traditions of the 4th of July celebrations run deep. It inspires in many American citizens feelings of patriotism, and pride in their country. It's also a holiday for fun and family. Some of the long-standing celebrations in the United States include: * Since 1785, Bristol, Rhode Island's Fourth of July Parade has occurred annually. This makes it the oldest continuous Independence day celebration in the United States. * Since 1916, Nathan's Hot Dog Contest has been held at Coney Island every 4th of July. The contest supposedly started as a way to settle an argument between four immigrants, over who was the most patriotic. * During the last week of June, since 1959, Detroit, Michigan and Windsor, Ontario hold a mutual celebration of both Independence Day and Canada Day. The celebration

ends with a large fireworks display over the Detroit River. Clearly, Americans hold a special place in their hearts for this holiday, even this many years later. Many wars have been fought, and many lives lost, in the name of freedom and independence. Even in times of political unrest and economic struggle, Americans can, on this day, look back at their long, rich history of freedom and independence, and feel a sense of gratitude to, and pride in, their forefathers, and the men who followed in their footsteps.

I’m bringing a fantastic flag cake to this year’s party - it serves a lot of people and it’s easy to make. I’ll let you in on two little secrets that make this cake taste extra good: instant potato flakes keep the cake tender and moist, while mini chocolate chips give you little bursts of chocolate with every bite. The colorful fruit on top not only adds great flavor, but it turns this cake into a showstopper that has guests “oohing” and “ahhing” in delight! If you’re going to a potluck party this year, I have some tips for being a good guest: * Keep it safe: It’s tricky to keep hot foods hot and cold foods cold, so make sure the food you’re bringing will be safe at room temperature. For example, on a hot summer day, vinegar-based salad dressings are a better choice than mayonnaise-based ones. * Keep it simple: Bring dishes that are ready to serve. Asking to pop something into the host’s oven for “just a few minutes” is inconvenient for the host and the guests waiting to eat. * Keep it practical: Label your dish so that guests know what they’re getting. It’s also a big help if you bring your own serving utensils - the host won’t be forced to hunt for something and the line won’t get held up waiting. * Keep it yours: If you need to take your serving dish home, be sure to label it. A bit of masking tape with your name on it can be discreetly placed on the dish so it doesn’t get mixed up with someone else’s. The Festival of Arts - California’s Premier Fine Art Show Celebrates its 81st Season in Laguna Beach

The Festival of Arts - California’s Premier Fine Art Show Celebrates its 81st Season in Laguna Beach, California, June 30 through August 31, 2013 As California’s longest running outdoor fine art show and one of the nation’s most highly acclaimed and attended juried exhibitions, visitors and art connoisseurs can expect to find the highest echelon of art and artists at the Laguna Beach Festival of Arts. The Festival of Arts, California’s Premier Fine Art Show, returns June 30 through August 31, 2013, with 140 of Orange County’s most renowned artists. As California’s longest running outdoor fine art show and one of the nation’s most highly acclaimed and attended juried exhibitions, visitors and art connoisseurs can expect to find the highest echelon of art and artists at the Laguna Beach Festival of Arts. “Every year we are honored to feature the work of such incredibly talented artists at the Festival of Arts,” says Marketing and Public Relations Director Sharbie Higuchi. Visitors have an opportunity to view and purchase original paintings, sculpture, printmaking, photography, ceramics, jewelry, and furniture from artists around Orange County. Since opening in 1932, thousands have shown and sold their artwork at the Festival. Many Festival artists have their work featured in the private collections of leading art collectors, celebrities, and museums around the world. Throughout the eight-week festival, the Festival of Arts offers a wide range of daily activities that the whole family can enjoy. The 2013 events calendar includes nightly live music, jazz concerts, wine and chocolate pairings, cooking demonstrations, guided art tours, and art workshops. Several special one-day events return this year including the popular Festival Runway Fashion Show, and the Acura Celebrity Concert and Pageant Benefit.

In 2013, Sundays will feature a new musical series with an eclectic mix of music from Ethereal and Chill to Jazz/World/Classical fusion. From 2 – 4pm, Sunday in the Park will provide the perfect atmosphere to browsing the art gallery, picnics on the green, or simply sitting back and taking in the beautiful weather of Laguna Beach. “There’s something for everyone this year,” says Higuchi. “Visitors can view and purchase artwork, listen to an art tour, catch a demonstration, or just sit back and enjoy the live music. The Festival of Arts is the place to be this summer!” Free art tours are held Monday - Friday at 11 am and 3 pm and Saturday and Sunday at 11 am and

4 pm. Meet the artists and learn firsthand about their artwork and techniques through discussions and free artist demonstrations, held dail. In addition to the art show, the Festival offers a wide range of daily activities that the whole family can enjoy, including free daily art workshops in the Festival Art Center and seminars for children and adults; daily live entertainment including visual and performing arts; and other special attractions. Pageant of the Masters Director Greenlights “The Big Picture” Audiences are amazed and enchanted by ninety minutes of tableaux vivants (“living pictures”), incredibly faithful re-creations of classical and contemporary works of art, with real people posing to look exactly like their counterparts in the original pieces. The Pageant of the Masters is arguably one of the most unique productions in the entire world. Every summer in Laguna Beach, California, audiences are amazed and enchanted by ninety minutes of tableaux vivants (“living pictures”), incredibly faithful re-creations of classical and contemporary works of art, with real people posing to look exactly like their counterparts in the original pieces. A live narrator is a guide through the story of each living picture accompanied by a full orchestra. In 2013, the Pageant of the Masters celebrates its 80th anniversary with the theme “The Big Picture” -adding a cinematic spin to its world-class presentation with classic masterpieces that inspired legendary filmmakers. Long before the curtain fell on last summer’s enormously popular production, The Genius, Diane Challis Davy, director of the Pageant of the Masters, was busily formulating her ideas for 2013’s celebration of art in “living pictures” – tableaux vivants – titled “The Big Picture.” She’s excited that this summer will mark the 80th anniversary of living pictures being presented at the Festival of Arts in Laguna Beach. But Challis Davy is also planning a tribute to the modern art of motion pictures and the ways in which the masterpieces of art history have inspired and informed the movies. When asked where she found her inspiration for the 2013 theme, Challis Davy laughed and replied, “In the bathtub!” She then went on to explain this was a reference to Busby Berkeley, the legendary Hollywood director famous for his extravagant and brilliantly-choreographed musi-

cal numbers in the 1930s. Berkeley, it seems, once told a reporter that his best ideas came to him while in the tub. Challis Davy’s playful comment is offset by the seriousness of her continuing devotion to the daunting logistics of putting on the Pageant. With its two casts of hundreds of volunteers, orchestra, narrator and crew of backstage artists and technicians, the Pageant of the Masters is every bit as complex as a big-budget movie shoot, with the biggest difference being that a movie only has to get a shot right once, while the Pageant hits the stage live every night for nearly two months! Challis Davy is quick to point out that masterpieces are once again included in the “coming attractions” of the 2013 Pageant. “We’ll have Vermeer, Gainsborough, Michelangelo, Gerome, Seurat, Rodin, Norman Rockwell. Designers for both stage and screen look to paintings and sculpture for historical information and inspiration. I thought it would be a new twist for the Pageant to take a look back at the work of the Masters that inspired great works of cinema.” As examples, THE BIG PICTURE will showcase how the genius of Michelangelo found expression in “The Agony and the Ecstasy,” how Thomas Gainsborough’s portraits influenced Stanley Kubrick, and how the works of Jean-Leon Gerome can be seen in films by directors like David Lean and Ridley Scott. And “the Master of Suspense,” Alfred Hitchcock, will also merit special attention. But, Challis Davy’s enthusiasm for the theme extends beyond film references. “What are movies but a series of still pictures?” she mused, “The Pageant is a series of still (but living) pictures. That seemed like an interesting connection to consider.” Longtime Pageant scriptwriter Dan Duling concurred. “The Pageant’s combination of art and theater alters the way we look at art. In a way tableaux vivants were the original ‘freeze frames.’ And looking at masterpieces through the viewfinder of motion pictures provides fascinating food for thought.”

When asked if there were any selections for the upcoming show that she’d always wanted to produce, Challis Davy cited the chance to incorporate memorable music from the movies – by Bernard Hermann, Alex North and other composers – and the chance to recreate a fresco by Michelangelo from the Sistine Chapel. On a lighter note, she said she’s looking forward to staging “a loving tribute to the Chicago Art Institute, courtesy of director John Hughes and his film “Ferris Bueller’s Day Off.” Of course, THE BIG PICTURE has a secondary focus, the 80th anniversary of “living pictures” at the Festival of Arts. That’s certainly worthy of celebration, and Challis Davy intends to revisit this remarkable history by highlighting some of the ways in which the Pageant has benefited from its connections with Hollywood celebrities. And, of course, the show will once again conclude with its traditional finale, Leonardo da Vinci’s “The Last Supper.” In 1936, that truly became “the big picture” that put the Pageant on the national map. Everyone associated with the production understands the Pageant

wouldn’t be possible without that spirit of volunteer dedication. As Challis Davy acknowledges, their dedication and loyalty are the remarkable engines that sustain the Pageant. “I’m lucky to be surrounded by people who love the hard work it takes to produce a very elaborate show,” she said. “I get inspiration from the scriptwriter, staff, composers, and from the scores of enthusiastic research volunteers who come up with great suggestions!” The Pageant of the Masters will be performed nightly from Sunday, July 7 - Saturday, August 31, 2013. Festivities for the whole family can be found at Coto de Caza’s 32nd annual 4th of July Parade and Country Fair, hosted by The Rotary Club of Coto de Caza/Rancho Santa Margarita. Friends, family and the community can celebrate Independence Day with activities from bounce houses, water slides and carnival games to a beer garden for adults. The celebration kicks off at 10 a.m. with a parade starting at Plano Trabuco and Coto de Caza Drive and ending at the Country Fair housed at the Sports Park in Coto de Caza. “We appreciate the hard work and collaboration between local families, businesses and members of the Rotary Club of Rancho Santa Margarita/Coto de Caza to make the 4th of July Parade and Country Fair a success each year,” said Jeffrey Sawyer, president of the Rotary Club of Coto De Caza/Rancho Santa Margarita. “Hosting one of Orange County’s most impressive Independence Day celebrations is something that Rotary annually looks forward to, and we hope to maximize the support to local charities and international causes through the donation of this year’s proceeds.” The 4th of July Parade is open to all ages, and registration is currently underway for event participants in the areas of classic cars, golf carts, self-made floats, sports teams and performance groups. While the parade and fair admission are free to the public, the Rotary club will spearhead specialty sponsorship opportunities including the Country Fair vendor booths and parade entries. THE AMERICAN DIABETES ASSOCIATION KICKS OFF TOUR DE CURE AT CINEPOLIS

The Orange County American Diabetes Association will partner with CinĂŠpolis Luxury Cinema’s Rancho Santa Margarita location to kick off the ADA’s Tour de Cure on Saturday, June 29th from 11:30 a.m. – 2:00 p.m. An optional training ride to the kick off party from CinĂŠpolis Laguna Niguel will begin at 10:00 a.m. Participating bike riders of all abilities, those interested in getting involved, people living with diabetes and their friends and family are invite to attend. Guests will be treated to food complements of CinĂŠpolis and fun for the entire family. Several contests will be announced at the event, including a bike shop contest and a contest to raise the $175 minimum amount by the end of July to receive a Tour de Cure Dry Fit shirt. What Makes America Great By Bryan Golden In less than 200 years, America grew from a handful of colonies to become the greatest nation in history. In a few hundred years, we surpassed nations that were many times older. What makes America great? The two main elements that make America great are our people and our freedoms. Our people have a can do, nothing is impossible, spirit. Starting with the American Revolution, we have always conquered adversity, often in the face of overwhelming odds. We have more rights and freedoms than anywhere else in the world. Our freedoms are considered inalienable rights, not privileges granted by government. Our freedoms are the envy of the world. Every item in the bill of rights is a precious jewel, designed to ensure the immortality of our liberty. Our founders came from societies where government controlled its citizens. They had a solid understanding of the consequences of unchecked power. Our constitution was crafted specifically to limit the scope of government to prevent its infringing on individual liberties. Our constitution is a brilliant document, filled with foresight and understanding, that has withstood the test of time. The principles embedded in

the constitution are the foundation of our greatness. In America, each citizen can control his or her destiny without fear of interference by government or others. Our government was formed to serve the people rather than vice versa. Our government was designed to play a minimal role in people’s lives. Our doors have always been open to people from anywhere in the world who want to come here legally to work hard, contribute, and assimilate into our society. America’s reputation as a melting pot is derived from the fact that people from every walk of life can work together to create an unstoppable force for good. In America anything is possible. America is great because it offers its people unlimited opportunity to succeed by bringing their dreams to reality. In America, success requires hard work, determination, and persistence, not permission. We are constitutionally protected to prevent government from confiscating the results of our labor. Parents for Aliso Niguel High School (PFAN) Raises $55k Hosting 6th Taste of Aliso Niguel Photos by Ann Chatillon

Parents for Aliso Niguel High School (PFAN), a non-profit created to help Aliso Niguel High School activities and booster clubs, announced that over $55,000 was raised during their one night “Taste of Aliso Niguel”. Over 900 attendees enjoyed food tastings from 22 restaurants along with beer and wine. With educational budget cuts and teacher layoffs, PFAN is creating a way for booster clubs and organizations at Aliso Niguel High School to raise money. Founded in 2008, PFAN has raised almost $300,000 for activities and facilities at Aliso Niguel High School hosting the Taste of Aliso Niguel where it is an evening of unlimited food tastes from great local restaurants, live entertainment, as well as hundreds of silent auction. Raising the most money for their clubs were Aquatics, Band and Dance; they raised $2,500 to $3,000 each. The silent auction tables were set up by each of the participating organizations. Folks were able to peruse items that were brought in with every dollar raised going back to that organization. An autographed football by Denver Bronco’s football player #24 Champ Bailey, an autograph photo of Peyton Manning, a piece of the Forum Floor in Mahogany frame signed by Magic Johnson, and an autographed photo of Magic Johnson were just some of the hundreds of items on display. What Dr. Michael Tessier I do makes people feel better and look better. What could be better than that? And, almost on a daily basis, my practice is finding new ways to take care of people. ”Dr. Tessier continued. “My office uses the latest in scientific dental advancements such as toothstraightening without metal braces (“Invisalign”); Tooth-colored porcelain crowns that have no metal in them and are subsequently dramatically more attractive and natural looking than the old porcelain-baked-on-to-metal type. I also recommend Porcelain veneers that, with a minimum of tooth structure removal, improve alignment, color, and evenness of front teeth, a process that is accomplished in a remarkably small amount of time. There are so many new scientific dental innovations that modern dentistry is a pleasure for me to practice. I often use a tiny “sandblaster” to do many of our smaller fillings, allowing us to do those fillings without discomfort and subsequently without anesthetic altogether. Another remarkable tool we use is the laser .We treat canker

or cold sores with a laser, dramatically shortening their life and the discomfort they cause. We do gum surgery with a laser (Periolase), not a knife, which is much more effective and greatly reduces any discomfort. Today Removable dentures can be anchored to implants, preventing them from moving and restoring more normal chewing. Another wonderful innovation is Implant crowns, which allow us to replace missing teeth without damaging the teeth on either side of the space where the tooth was originally located. We make an intra-oral appliance that keeps the lower jaw forward during sleep, reducing sleep apnea and all the other problems that the cessation of breathing at night can cause. I’ve been in private practice in Saddleback Valley since 1980 when I got out of the Navy. When the situation arises that we need a specialist, like an oral surgeon for wisdom extraction, or endodontists (root canal specialists), or periodontists (gum specialists) to save jeopardized teeth, I’m on a “first-name” basis with the best in all of those fields, who are all close by. We’re all living longer, and we’ll need our teeth longer. So it is my pleasure to have all of these good things we can do to make that happen. It’s better to have teeth left at the end of your life, rather than life left at the end of your teeth. DANGEROUS INSECT AND DISEASE THREATEN LOCAL CITRUS TREES A dangerous insect has made its way into Ladera Ranch and is threatening local citrus trees. The Asian citrus psyllid feeds on the leaves and stems of citrus trees and can spread a fatal plant disease called Huanglongbing (HLB), also known as citrus greening disease. Since the beginning of the year, there have been 2 Asian citrus psyllid finds in Ladera Ranch, and with people spending more time in their backyards this summer, now is an important time for residents to take actions to protect their beloved backyard citrus trees. HLB has already been found in Southern California, putting all citrus trees at risk. There is no cure for HLB and once a tree is infected, it will die. Symptoms of HLB include asymmetrical yellowing of leaves, hard, bitter or misshapen fruit, and ex-

cessive fruit drop. Residents should inspect their backyard citrus trees for signs of the disease. The Citrus Pest & Disease Prevention Program offers the following tips: • Don’t move citrus — Do not bring any plant material into the area from other states or countries. Also, do not move citrus off your property, as you could accidentally spread the pest or disease and may be violating quarantines set by agriculture authorities. • Inspect your trees — Look for signs of the pest and disease each month or whenever watering, spraying, pruning or tending trees. Learn what to look for by visiting CaliforniaCitrusThreat.org. • Plant responsibly — Only buy citrus trees from reputable, licensed California nurseries. • Graft with care — Use only registered budwood with source documentation. • Be mindful of clippings — Dry or double bag plant clippings prior to disposal to avoid moving psyllids and HLB-infected plant materials. • Cooperate — Cooperate with agriculture officials on detection and suppression efforts of the Asian citrus psyllid and HLB. Here are the top California surfing beaches where you can surf or watch surfers ride the waves. Manhattan Beach: Manhattan is one of three beach communities in Los Angeles consisting of Manhattan Beach, Redondo Beach, and Hermosa Beach. It is just three miles from the Los Angeles International Airport (LAX) and is a popular surfing site for pop culture crowds. Capistrano Beach: Capistrano Beach is great beach with hometown flare. It is one of those great beaches where everyone seems to know each other, and there are those close knit small towns feel. This beach is one of the places to catch relatively mild and gentle surf. It is a great location for advanced surfers for its big waves. International Surf Festivals are held here

Malibu Point:Malibu is among the Southern California Surf Spots. It isone of the world’s most famous long, slow point breaks, with strong reef waves often coming from the right side of surfing. Great for intermediate to skilled surfer. Trestles: located in a hidden area of San Clemente, Trestles is known for its reef breaks coming from the right. The bottom is filled with rocky reef so you are warned to be at least intermediate surfer to attend. It can have a busy crowd who enjoy the renowned California break produced here. It is known in Orange County for its consistent and great surf. The fact that it is in a hidden location makes it extra special for locals to enjoy it.

Santa Monica Chevron Reef : Chevron Reef is Los Angeles County’s first artificial reef breaks created by oil firm Chevron and the Surfrider Foundation in a beach erosion settlement. It is situated just off the coast of Marina Del Rey, close to LAX. Great wave breaks at four feet and can hold to 15 feet or more in all directions. Seal Beach Pier: Seal Beach is among the top Long Beach Southern California Surf spots. It has pier breaks surrounded by sandbar reef. Its rivermouth wave comes from the right and the left to break in any type of conditions, especially when in a south swell. It is great for intermediate surfer.

Five Tips for Safe Summer Sun By Kevin Ronneberg, M.D. Summer has arrived. As the weather heats up, it’s critical for beachgoers and outdoor fun-seekers to be sun-safe. This begins with choosing the right sunscreen to protect yourself from harmful UV rays. Equally important are these five simple tips from the Skin Cancer Foundation, which also will help you mitigate sun damage and reduce the risk of skin cancer. First, seek the shade. Simply minimizing exposure to UVA and UVB rays can go a long way toward protecting your skin. Taking a break from direct sun is especially important between the hours of 10 a.m. and 4 p.m., when rays are strongest. And remember, clouds don’t block UV rays. Infants under 6 months should always be kept out of the sun -- protected with clothing, an umbrella or a stroller hood. Children and adults should wear protective clothing, including wide-brimmed hats and UV-blocking sunglasses. Second, use a broad spectrum (UVA/UVB) sunscreen with SPF 15 or higher. Regardless of the season, this kind of sun protection should be used on a daily basis. Most people understand the importance of sun Page 16

safety during the summer months, but many underestimate the need for year-round protection. The temperature may drop, but UV rays remains strong. And the cooler temperatures may actually prevent people from realizing the extent of the damage the sun is doing to their skin. Next year, new regulations from the Food and Drug Administration will help consumers know they’re getting the right protection by prohibiting manufactures from labeling their sunscreens as “broad spectrum” or making claims about protecting against skin cancer and aging unless they’re SPF 15 or higher. And sunscreens with lower SPF values will have to sport a warning that the product may not offer protection against the harmful effects of exposure to the sun. Third, apply 1 ounce of sunscreen to the entire body 30 minutes before going outside. According to the Skin Cancer Foundation, for full SPF protection, sunscreen must be applied half an hour before sun exposure. If you are average size, you’ll need a full ounce -- or about two tablespoons -- to adequately cover your skin. Reapplication is just as important as putting sunscreen on in the first place, as sunscreens tend to break down with exposure and can be rubbed off or washed off by sweat or water. So sunscreen should be applied every two hours, and immediately after swimming or a set of tennis. During a full day at the beach, one person should expect to use at least a quarter of an 8 oz. bottle of sunscreen. Fourth, do not let yourself burn. Sunburn is the most immediate and obvious sign of UV damage. When immune cells race to the injured skin site to start healing the damage, they produce the reddening and swelling. Tanning is the skin’s response to this damage and may permanently affect skin cells. While many believe a “base tan” will prevent damaging burns, that’s not the case. There is no such thing as a healthy or base tan. Finally, check your skin regularly and ask your doctor for a skin cancer exam annually. One in five Americans will develop skin cancer. Tans and burns can be the first step. Intermittent but intense UV exposure is more closely associated with melanoma, the most deadly variety of skin cancer,

than chronic sun exposure. One blistering sunburn in childhood or five in a lifetime doubles the risk of melanoma. To check yourself for signs of skin damage, inspect your skin from head to toe, looking for spots or sores that heal too slowly, new growths, and any moles or beauty marks that change in color, texture, or size. And once each year, be sure to ask your physician for a skin checkup. Sunscreens are an essential part of a healthy lifestyle. They keep skin looking young and reduce the risk of many skin cancers. Press into bottom and 3/4 up side of 9-inch springform pan. Refrigerate while making filling. In large bowl, beat cream cheese, sugar and vanilla until light and creamy. Add heavy cream and beat until combined. In small saucepan, bring strawberry juice just to boiling, stirring constantly. Remove from heat. Sprinkle gelatin evenly over top and whisk vigorously to dissolve completely, about 3 minutes. Pour into cream cheese mixture. Add icing color and beat until well combined. Beat in 1/3 cup mini chocolate chips. Pour into chilled crust. Sprinkle top with remaining chocolate chips. Refrigerate until set, about 3 hours.

Makes about 24 Sweet Sliders Cake Buns: 1 package (16 ounces) yellow cake mix Eggs, water and vegetable oil to prepare mix Brownie Patties: 1/2 cup all-purpose flour 1/8 teaspoon salt 3 tablespoons unsalted butter 1/3 cup granulated sugar 1 tablespoon water 1/2 cup semi-sweet chocolate chips 1/2 teaspoon pure vanilla extract 1 egg Toppings: Shredded coconut Leaf green icing color Assorted fruit flavored candies Red sparkle gel Yellow sparkle gel Preheat oven to 350°F. Prepare whoopie pie pan with vegetable pan spray. For buns, combine cake mix, eggs, water and oil in large bowl; mix according to package instructions. Fill prepared pan cavities 2/3 full with cake batter. Bake 9 to 11 minutes, or until tops of cake spring back when touched. Cool in pan 10 minutes; remove to cooling grid and cool completely. Repeat with remaining cake batter. For patties, combine flour and salt in small bowl. In small saucepan, melt butter and sugar with water; stir until sugar is dissolved. Add chocolate chips; stir until melted. Remove from heat. Stir in vanilla extract. In large bowl, beat egg with electric mixer. Add chocolate mixture; mix well. Add flour mixture; stir until just combined. Divide batter evenly between whoopie pie pan cavities, filling about 1/3 full. Bake 9 to 11 minutes or until toothpick inserted in center comes out nearly clean. Cool 10 minutes; loosen edges of brownies and remove from pan. Cool completely. For toppings, mix shredded coconut with leaf green icing color for lettuce. Roll yellow fruit candies into thin layers for cheese. Use red and yellow sparkle gels for ketchup and mustard. To assemble, top cake bun with a brownie patty. Add toppings and finish with second cake bun.

Makes about 12 Treat Pops Whoopie Pie Cakes: 1-1/2 cups all-purpose flour 1-1/2 teaspoons baking powder 1/4 teaspoon salt 6 tablespoons butter, softened 2/3 cup granulated sugar 2 egg whites 1-1/2 teaspoons imitation clear vanilla extract 2/3 cup milk Filling: 3 cups buttercream icing Christmas red icing color Royal blue icing color Patriotic mix sprinkles Rocket Treat Pops Toppers Preheat oven to 350°F. Prepare mini whoopie pie pan with vegetable pan spray. In large bowl, stir together flour, baking powder and salt. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add egg

whites and vanilla extract and beat until well combined. Alternately add flour mixture and milk in three additions, beating until just combined. Spoon one tablespoon batter into each cavity. Bake 9 to 11 minutes or until tops of cakes spring back when touched. Cool in pan 3 minutes. Cool completely on cooling grid. In separate small bowls, tint 1 cup buttercream red, 1 cup blue and reserve 1 cup white. To assemble: Place one cake in bottom of treat pop. Pipe a swirl of blue icing from back edge following the curve of the container to the front, then filling in the center; add sprinkles. Add second cake. Pipe a swirl of white icing; add sprinkles. Top with another cake. Pipe a swirl of red icing. Top with Patriotic Sprinkles or Rocket Treat Pops Toppers. Convenience tip: Substitute vanilla wafer cookies for whoopie pie cakes.

Grilled Asparagus with Citrus Gremolata A Chef Tim Love recipe 1/2 cup Hellmann’s or Best Foods Mayonnaise Dressing with Olive Oil 1 tablespoon olive oil 1 teaspoon finely chopped garlic 2 tablespoons minced shallot Grated peel of 1 lemon 1/4 cup white wine 1/4 cup lemon juice 1 cup bread crumbs 12 medium asparagus spears, trimmed 2 tablespoons peanut oil

Kosher salt and cracked black pepper to taste Preheat grill to 450°F. Heat olive oil in a small sauté pan on the grill. Just before the oil smokes add garlic, shallot, and lemon peel. Sauté slightly. Add white wine and lemon juice and simmer for 1 minute. Add bread crumbs and dressing and sauté until golden brown. Mix asparagus, peanut oil, salt and pepper. Grill for 3 minutes, turning fairly frequently. Place asparagus on a serving platter. Sprinkle bread crumb mixture over the grilled asparagus and serve.

A Chef Tim Love recipe 1 cup Hellmann’s or Best Foods Mayonnaise Dressing with Olive Oil 4 (8-ounce) outside skirt steaks 1/2 cup peanut oil Kosher salt and cracked black pepper (to taste) 2 tablespoons Chef Tim Love Steak Rub* 2 limes, cut in half 2 lemons, cut in half 1 tangerine, cut in half Heat grill on high with lid closed for 30 minutes or light charcoal and let burn to white coals. Rub the steak with oil and season with salt and pepper, then the rub. Place the steak on the hot grill for 3 minutes on each side. Squeeze a lime half on each steak. Remove and rest for at least 3 minutes. Squeeze all citrus into a mixing bowl. Whip the dressing into citrus mixture and place in a squirt bottle. Cut steak against the grain and drizzle the citrus mayonnaise mixture over top. Serve immediately. *Tip: Any good chili powder based rub can be used.

Texas Potato Salad

A Chef Tim Love recipe 1/2 cup Hellmann’s or Best Foods Mayonnaise Dressing with Olive Oil 1/2 cup pickled jalapeños, diced 1/2 cup sweet pickles, diced 1/4 cup whole grain mustard 1/2 cup fresh chives

4 warm baked potatoes Salt and pepper (to taste) 1/4 cup toasted pepitas (pumpkin seeds) Mix dressing, jalapeños, sweet pickles, mustard, and chives in large bowl. Burst the potatoes and crumble apart. Add them to the mayonnaise mixture. Mix well and season with salt and pepper. Top with the toasted pepitas and serve.

47th Annual Sawdust Art Festival Opens June 28

The Sawdust Art Festival celebrates its 47th annual season this summer, opening its doors to the public Friday, June 28 with a traditional ribbon-cutting ceremony at 10 am. Sawdust President Gavin Heath will make the Opening Day announcement and Laguna Beach Mayor Jane Egly will officially cut the ribbon, unveiling the 2013 summer season. The festival will open daily from 10 am to 10 pm through Sunday, September 1. Over 200 Laguna Beach artists, 18 new artists, excitedly anticipate a new summer season in hopes of drawing an even greater crowd than last year to expose their unique handmade artwork. Visitors can experience the awe in artwork being created before their eyes, including the large glassblowing enclosure where glass masters perform their skill at the furnace. The diverse range of artwork at the Sawdust encompasses all types of mediums, including ceramics, glass, woodwork, jewelry, sculpture, painting, photography, textiles, mixed media and much more. In addition to the newbies joining the Sawdust family, also new this year is the Reset Sundays entertainment series. The Sawdust Entertainment Committee decided to feature a mellow genre of music every other Sunday evening this summer, as a relaxing way for visitors to wind down their weekends and prepare for a

new week. Chamber music groups, jazz ensembles and lighter musical performers are booked every other Sunday at 5 pm on the grounds. In support of the Sawdust’s mission to educate the public, the year-round Sawdust Studio Art Classes will continue to be offered every Friday and Saturday at 10 am and 2 pm. Guests can experience the magic of the Sawdust studio and create their own unique art piece, to wear or to share, in just one two-hour session. Collectors’ Panels,” a collection of art panels, each uniquely created by contributing Sawdust artists using all types of media to be auctioned off at the festival. Finally, A Voice for Wine Consumers HAPPY GRAPES

By David White Today, more than 12,000 U.S. wine shops have a presence on the web. But just 14 states allow consumers to order wine from outof-state retailers. Eleven states prohibit residents from ordering wine from out-of-state wineries. Four states ban the sale of wine on Sundays. The overwhelming majority of Americans support supermarket wine sales, but 15 states force consumers to purchase their wine in a dedicated liquor store. In another 15 states, it’s illegal to bring your own bottle of wine into a restaurant -- even if the restaurant owner is okay with it. Like virtually all America’s liquor laws, these restrictions trace their origins to Prohibition. Today, these laws simply harm consumers and

enrich special interests. Fortunately, there’s a new organization that’s fighting these anti-consumer wine laws. Called the American Wine Consumer Coalition (www.WineConsumers.org), the group deserves every wine lover’s support. When Prohibition was repealed 80 years ago, states were given the authority to regulate the “transportation or importation” of liquor within their borders. At the insistence of a motley crew of interest groups, states imposed an assortment of rules. A top priority was weakening producers, because before prohibition, teetotalers and law enforcement alike believed they wielded too much power. Temperance advocates blamed producers for the ills of drunkenness; police officers associated producers with organized crime. Lawmakers answered this call in one of two ways. They either took control of the sale and/or distribution of alcohol or created a “wholesaler tier” to sit between producers and retailers. Today, just Pennsylvania and Utah maintain total control on alcohol sales. In those two states, government officials decide which liquor brands are sold, how much is charged, and where those products can be purchased. Virtually every other state de-

pends on a wholesale tier through which most alcohol must pass. This is essentially a state-mandated middleman. As one might guess, wholesaling is big business. Together, the nation’s two largest wholesalers had revenues of more than $14 billion last year. So it’s no surprise that the wholesaling industry fights hard against efforts to undermine its presence. Consider direct-to-consumer wine sales. About 20 years ago, Americans started developing a taste for high-end wines, typically from California. Many consumers started ordering directly from producers. Such transactions cut out wholesalers, so they spearheaded a campaign to prohibit winery-toconsumer shipping. Consumers responded with lawsuits, and in 2005, the Supreme Court ruled that state lawmakers could only prohibit direct shipping from out-of-state wineries if they blocked wineries in their states from shipping out of state. The 11 states that still prohibit direct-toconsumer wine sales hardly produce any wine of their own. The wholesaling industry has also fought to block online retailer-toconsumer wine sales -- and remains successful in 36 states. So if you live in Pennsylvania and desperately want a bottle of wine that can only

be found at a store in Washington, D.C., you’re out of luck. Wine retailers obstruct supermarket wine sales. After all, if consumers could pick up a bottle of Merlot while shopping for dinner, they might skip the trip to the liquor store. And while bans on Sunday sales were originally promoted to keep the Sabbath holy, they’re now pushed by retailers who hate the thought of increased competition. Laws against bringing your own bottle of wine into a restaurant are pushed by the restaurant lobby. The reason? Restaurants profit handsomely from wine sales, typically tripling the retail price. Plus, it’s easy to imagine an upstart restaurant gaining traction by encouraging patrons to bring in their own booze -- and established restaurants don’t enjoy competition. America’s liquor laws are designed to protect and serve special interests -- not consumers. That’s why the time has come for the American Wine Consumer Coalition. the history of the Sawdust festival The Sawdust was originally called the Laguna Artists and Gallery Owners Association after breaking away from the Festival of Arts in 1965, in protest of that show’s jurying system. That first festival was located on a vacant lot at the bottom of Park Avenue (on the Peacock lot) with only a few dozen exhibitors. It was called the ‘Rejects Festival’ by the media. There was no show in 1966, but the show did reappear, with more exhibitors, in 1967 on an empty lot on North Coast Highway (The Kronquist lot). That show was a great success and led to the artists moving to its current location on Laguna Canyon Road, leasing the property from Walter and Dorothy Funk, and when the artists spread sawdust

on the ground to combat the dust and mud, the media called it the ‘Sawdust Festival,’ and that name has identified the show for decades. Looking for room to expand, in 1968 the show moved to its present three-acre site at 935 Laguna Canyon Road, welcoming one and all with the promise to educate the public as well as provide a sales outlet for unrestricted art.Today, artists demonstrate their art in designated “demo” booths where the public is invited to participate, as well as working in their own booths. The lovely eucalyptus grove with its rippling waterfall provides an irresistible background.

One of the first facades ~1978~ other art shows, visualizing itself as an artists’ “happening” rather than a stuffy exhibit. To that end, the artists themselves build a unique village of individual booths from the ground up each summer. The architectural designs are as varied and interesting as the work they showcase. Once the booths are finished, the sawdust goes down, the landscaping goes in, music fills the air and once again the Sawdust Art Festival magically returns for another summer. It is truly a unique experience in the arts that brings visitors back year after year.

The Sawdust Art Festival is truly a local event. All artists exhibiting in the festival are residents of Laguna Beach. Unlike some other non-profit organizations dedicated to the arts, the Sawdust Art Festival’s administration is made up of exhibiting members. Each year, exhibiting artists are elected as members of the Board of Directors. In addition, booth locations are determined by an annual lottery, usually held in February. The unique combination of cranberry sauce, your favorite BBQ sauce and brown sugar will encourage you to use it with more pork recipes. 2 lbs Pork ribs Marinate 4-6 hours in a mixture of: - 3/4 can beer - 1/4 cup olive oil - 1/4 cup BBQ sauce Mix for basting/dipping sauce: - 3/4 cup BBQ sauce - 1/2 cup cranberry sauce - 2 tbls. chili sauce - 1/2 cup brown sugar - orange juice to your desired consistency Grill low (200-250) for 2-4 hours depending on thickness of the ribs and baste as needed. To reduce grilling time: parboil the ribs in marinate mixture with water added to cover the ribs until meat is gray or bake at 350, in marinade mixture until meat is lightly browned. Children like these ribs best when they are cut, after grilling, to the size of riblets. The riblets also make a great party food. For the 4th of July, place the ribs/riblets on a white platter and garnish with blueberries.
