2014’s Swimwear Guide Swimsuit trends are always fun to look at each year, and 2014’s gear is no exception. This year creativity has reached a new level with swimwear that will catch your eye. Some of the trends will have you giving a double-take, and others’ will not leave much to the imagination. Here are the trends for this year’s swimsuit season! Crochet swimwear This is one of my favorite trends for this season. Crochet pieces are
absolutely beautiful, but the artwork of the crochet swimwear is stunning. There are fresh ideas out there that are full of color. Some are bikinis, but surprisingly, there are some really beautiful one piece crochet looks. Cultural notes This year’s swimsuit detailing pulls from the Native American heritage it seems. There is a lot of beading, fringe, tribal influences, and color reminiscent of the Indian culture. Although some pieces are breathtaking, be careful when you pick one out that the beading isn’t too cheap looking. Mesh Many swimsuits are taking on more mesh for 2014. It may seem inspired by a figure skating costume, but I like to think it is way hotter! And even though the fabric pieces seem to be skimpier when covering private areas, the mesh covering the stomach area may give some women more confidence in this year’s trend. It’s the next best thing to a bikini. Athletic wear/rash guard style Sporty looks have also made their way into 2014’s swimsuit line. In case you don’t have enough crop tops for
its way into swimwear. The modern take on this oldie pairs a simple bra top with a high-waist bottom. It’s a very elegant way to pull off a trend for 2014. This style isn’t for every body type, so I suggest making sure you look good in a high waist before going out and buying one. Go bold with color There are so many styles to pick from this year, and after you decide what you want, go ahead and pick out one with extreme colors. This year’s trend is all about bold statements through print and color, so finding a swimsuit you are comfortable in is important!
this year, the swimsuit trendsetters have begun selling swimsuits that come with crop tops. The rash guard style is also making headlines, and bringing a surfing feel to the everyday swimwear. There are some really cool designs with long sleeved tops with cut outs. High-waist bottoms The classic high-waist is not only popping up in shorts, but it has made

S a n t a M a r g a r i t a C a t h o l i c H i g h Sc h o o l Celebrates Graduating Class of 2014 Hundreds of family, friends, and faculty gathered at the UCI Bren Center on Friday, May 30, to celebrate Santa Margarita Catholic High School’s graduating Class of 2014. The graduating seniors now join the SMCHS alumni community of approximately 8,800 members. The celebration was attended by The Most Reverend Kevin Vann, bishop of Orange, Rev. Gerald M. Horan, vicar of faith formation for the Diocese of Orange, Greg Dhuyvetter, Superintendent of Schools, as well as SMCHS administrators. Valedictorians, Garrett Williams (Georgetown) and Austin Drysch (UCLA), tied for the highest GPA and earned head of the class honors addressing the Class of 2014 at graduation. While Scottie Butler (Columbia), held the second highest GPA and represented the Class of 2014 as the salutatorian. “We do not know what we will face in the future or what obstacles we will encounter,” said Drysch. “But we should view every uncertainty as a chance for a new opportunity.” Williams reflected on the school’s charism, Caritas Christi (the love of Christ), and reminded students that their spiritual journey at Santa Margarita was just as important as their academic one. “Allowing ourselves to experience God’s love in the quintessential high school moments has defined who we are as people,” said Williams. “It has enabled us to be more appreciative, open and caring individuals with a common goal of bettering ourselves, our peers and our community.” Principal Ray Dunne took students on a trip down memory lane reading answers from a freshman class survey where the students were asked ‘Why did you choose Santa Margarita?’ While some focused on

academics, others faith or athletics or arts, and some because it was a family choice, Dunne reminded the graduates that no matter what the reason, they all ultimately made the same decision to take the Santa Margarita road. Now as the graduates stood at the end of the Santa Margarita road, Dunne applauded them for all of their accomplishments and thanked them for choosing SMCHS. He concluded his remarks with a passage from “Oh the Places You’ll Go” by Dr. Seuss. “Today is your day, your mountain is waiting, so get on your way.” Here’s what graduates had to say on their graduation day: “Today is a signifier of all the hard work we put in over the past four years. It’s a moment we’ve been looking forward to our whole lives and now we get to celebrate with our entire class.” -Julie Paik or Irvine, UCLA “Today is an important day to me because it is a culmination of such formative years. SM had a great influence on my life and now I can confidently leave the foundation I made here and go on to achieve my goals.” -Alison Calentino of Coto de Caza, University of Chicago “I’m really excited to be moving into the next chapter of my life and to see my friends move forward too. All of my teachers, coaches and friends helped me rise up during my four years at Santa Margarita and I know that I’m definitely prepared for college.” -Justin Cabrera of Mission Viejo, Loyola of Chicago Class of 2014 By the Numbers: $33.1 million in scholarship offers 406 members of the class 99 percent of graduates continuing

With snow falling, the wind blowing and everyone bundling up in extra layers of clothing, the last thing you probably have on your mind is the condition of your feet. But time passes quickly. Before you know it, the temps will be rising, and you’ll be digging in the back of your closet for sandals. Will your feet be ready for their reintroduction to society? With spring break plans in place and summer just around the corner - sandal season will be here before you know it. It’s time to put foot care on your immediate to-do list so your feet will be up to the task of showing off your newest pair of sandals with pride the second temperatures creep into the warm zone. Don’t forget to start these simple foot-care tips now, giving your feet a beautiful new look come spring: * Spring showers bring softer feet - The dry winter air not only creates deep dry crevasses in the soil, it can leave feet cracked and scaly, which isn’t pretty for men or women. White and flaky feet don’t go well with the latest fashion in sandals. Cracked and scaly feet are also a health concern, putting you at risk for an
infection. Use a good moisturizing lotion frequently, concentrating on the heels, balls and toes of your feet - areas where the biggest problems build up. * Massage away the stresses of winter - Foot care isn’t just about how your feet look - it’s also about how they feel. Massage and moisturizing go together like peaches and cream. Massage the lotion into your feet and toes, helping to improve your blood circulation and easing the aches and stresses caused by long days wearing socks and heavy shoes. Massage also will refresh the skin on your feet, giving them the soft appearance needed to look great once the socks are removed. * Scrub off the cold - When bathing, soak your feet and exfoliate areas where calluses - caused by the friction of socks rubbing against the insides of your shoes - build up. This often happens on the heels and balls of the feet - those same areas that need the extra lotion. Use a pumice stone to help keep those calluses in check, leaving you with soft feet ready for the beach and playing in the sunshine. * Yellow is the color of the sun, not your toenails - Yellow toenails are a sign of a fungal infection, which can be treated with Dr. Paul’s Piggy Paste. About 14 percent of Americans have this type of fungus, which leaves nails looking textured with a dark yellow coloring. Dr. Paul Kinsinger developed the gel to treat his patients at his Illini Family Medicine in Washington, Ill. With proper usage, you’ll start to see improvements between two to six weeks, leaving you with beautiful-
looking toes by the time spring has sprung. * Cabin fever? Give your feet a breath of fresh air - You wouldn’t think you’d have to worry about sweaty feet in the winter months, but when confined to socks and shoes, moisture can build up. Wear sweat-wicking socks to help prevent blisters when working hard like shoveling snow or going for a winter hike. And take off your shoes and socks every once in a while to let your feet breathe. * Surprise your feet with a spa package - This tip is for both men and women. Establishing a pedicure schedule will keep your feet exfoliated and moisturized on a consistent basis, and your toenails will be trimmed to a suitable length, helping to prevent any ingrown nails. And if you are planning a tropical spring break trip, be sure to schedule a pedicure just before you leave, so you’ll be ready to show off your feet at their finest. It takes time to pamper your feet to be ready for sandal season, so be sure to get started moisturizing and treating any infections immediately. Your feet will thank you.

Girl Scouts Rallies Community Around STEM Education for Girls at Voice for Girls 2014 More than 150 Orange County business and community leaders came Julie Miller-Phipps with Liza Villanueva, Charlene Hwang, Dr. Michelle together with local girls at the Pacific Club in Newport Beach for a much Khine, Nancy Nygren, Patricia Cosulich and Aiyana Bobrownicki needed conversation on the state of girls and women and STEM (Science, Technology, Engineering and Math). Voice for Girls 2014, hosted by Girl Scouts of Orange County and sponsored by Applied Medical, Jones Day and Knobbe Martens, featured a keynote address by Dr. Michelle Khine, Associate Professor of Biomedical Engineering at UCI, an interactive panel with local young women, and voices of local leaders. This is the third year that Girl Scouts of Orange County has hosted Voice for Girls to rally the community around support for girls and their leadership potential. This year’s event focused on the value and importance of STEM education for all girls, regardless of career path, and the concerning data showing that male students are over three times more likely than female students to be interested in pursuing a college major or career in STEM. “Girls and boys attitudes about math begin to diverge as early as second grade,” shared Nancy Nygren, CEO of Girl Scouts of Orange County. “That is tremendously concerning, because the skills that girls gain from subjects such as math and science - like problem solving and critical thinking - are critically important, no matter what field girls end up in.” Dr. Michelle Khine, named one of 35 top innovators under the age of 35 by MIT Technology Review in 2009, shared what she believes is a “creativity crisis” and how we can make girls fall in love with science, technology, engineering and math. Dr. Khine emphasized that it’s all about play. “We play Max Gardner, Assemblyman Don Wagner and Eric Spitz baseball; we play soccer – why don’t we play science?” Dr. Khine’s academic co-op, A Hundred Tiny Hands, makes educational kits (based on her students’ projects) that are designed to help the next generation of innovators discover their own love of science through play. Four Orange County Girl Scouts and Alumnae participated in an interactive panel moderated by Julie Miller Phipps, Board Chair of Girl Scouts of Orange County and Senior Vice President and Executive Director for Kaiser Permanente Orange County. The young women, some of whom are pursuing STEM careers and others who are not, shared their experiences with these subjects in and out of school, and offered insights about what must change for girls to engage more deeply in STEM subjects. The young women emphasized the importance of labs and group projects, rather than reading from textbooks. “Hands on and experiential learning experiences are so much more motivating for girls in school,” commented Liza Villanueva, a Junior at Troy High School in Fullerton, recently ranked #6 in the nation for its STEM programs. Charlene Hwang, a senior in high school who will be attending Harvard in the fall to study biomedical engineering, shared the importance of having strong role models who know the value of STEM – and who kept her interested in these subjects. “When I was a kid, my dad and I recited multiplication tables while I brushed my teeth. He is Dr. Judy Rosener with Olivia Bobrownicki and Dr. Mildred Garcia such a great inspiration for me!” shared Charlene. After the panel, attendees participated in an engaging table exercise, discussing facts they heard that resonated with them and how they can take action to engage more girls in STEM. “It’s critical that as a community, we support girls in their pursuit of STEM education,” said Julie Miller-Phipps. “If we are going to have the best and brightest from 100% of our population solving the toughest challenges, we need our workforce to be prepared with skills developed through science, technology, engineering and math studies. And as community leaders, we must pave the way through mentoring, encouragement, and opportunities.” Girl Scouts is the preeminent leadership development organization for girls and the leading authority on girls’ healthy development. Girl Scouts has been building girls of courage, confidence, and character, who make the world a better place for over 100 years. In Orange County, more than 22,000 Girl Scouts from every social and economic background are developing values, skills and abilities for success in the 21st century. According to a recent study conducted by the Girl Scout Research Institute in conjunction with an independent research firm, women who were Girl Scouts as children display significantly more positive life outcomes than non-Girl Scout alumnae. Girl Scout alumnae have higher perceptions of self, higher rates of volunteerism and civic engagement, higher rates of college education and higher household incomes than non-alumnae. Residents Seem Ready to Cancel the Parade for Oak Grove’s Plan to Purchase Merryhill School and Demolish a Substantial Portion of Coto de Caza Equestrian Center to Build 19 Luxury Homes
Moods Begin to Sour as Details Develop about Hostile Takeover of Equestrian Center
Residents listened politely to the Oak Grove Merryhill Equestrian Center presentation at the Coto Valley Country Club but many residents have now begun to protest the project to buy out the Coto de Caza Equestrian Center and reduce its size to make room for luxury residential lots. I am adamantly against this proposed housing development. I have grave concerns about the Oak Grove housing project. If this project is allowed to proceed it will impact the Coto de Caza Equestrian Center and all of the residents of this wonderful community. I have had my horses at the equestrian center for the past five years. My husband and I recently purchased a home in the Los Ranchos Estates. One of the main factors in our decision to move to Coto de Caza was the use of the equestrian center. I think that it would be a travesty if this development is allowed. The home values in Coto de Caza will most certainly be adversely affected. It is beyond my comprehension why this developer has targeted the equestrian facilities. There are many areas that the developer could choose for building houses. I am adamantly against this proposed housing development. Thank you for your time and kind consideration of my opinion. Sincerely, Beth Hebner DO NOT ALLOW THIS OAK GROVE HOUSING PROJECT TO RUIN THIS COMMUNITY. We have enjoyed the equestrian center for over 5 years and board two of our horses there. If the Oak Grove housing project is allowed to move forward this would risk eliminating a large part of the equestrian center. It only takes one visit to the
equestrian center for one to feel the sense of community among all who enter the gates. The pleasant surroundings and joy you see on the faces of the people enjoying their time with their horses is infectious. Even if you are not a rider you can’t help enjoy walking around the facility and admiring the beauty of all the amazing horses. Cindy Schuberth Manager of Orange County Polo Club says shrinking to the equestrian center hits very close to home. Good morning, my name is Heather Perkins and am writing this letter in support of keeping the Coto Valley Equestrian Center with no changes.I am the manager of Orange County Polo Club, so the thought of shrinking to the equestrian center hits very close to home. Over the past 5 years OC Polo has grown from a small private polo club to become an integral part of the Coto community and lifestyle. Each year we do several charity events that are in the news and put a favorable light on the Coto community. Our biggest event annually is our Susan G. Komen for the Cure fundraiser which has doubled in size each year and will continue to grow as we gain more exposure. In addition to charity events, we host monthly exhibition matches that offer a fantastic neighborhood night out at no cost to the residents… Coto de
No major protests erupted when Oak Grove developer Robert O. Hill made a presentation to approximately 60 Coto Residents at the Coto Valley Club On Wednesday, April 9, 2014,At the presentation, Oak Grove announced their new Conceptual Site Plan 12, which would attach 4.8 acres of the Equestrian Center to the 2.89 acre Merryhill property (which they have in escrow) where they intend to build 19 luxury homes with 1/3 to ½ acre lots and say that if they are successful, they will preserve and enhance the remainder of the 25 acre Equestrian Center by recording a “Special Land Use Restriction” (SLUR) which would be recorded against the Equestrian Center property and would name all Coto de Caza property owners as beneficiaries,. But in subsequent weeks, the mood of many Coto de Caza area residents has apparently begun to change. Following last week’s article in the Coto de Caza News by Dennis Sitar, former Silver Bronze corporation board member, the newspaper received a deluge of emails expressing outrage and opposition to the Oak Grove plan. Many seemed shocked and startled by the revelation that Oak Grove’s “plan is to cannibalize the most valuable part of the
equestrian center and turn it into luxury lots.” The article also stated that in Mr. Sitar’s opinion Oak Grove’s “plan to incorporate the remainder of equestrian center in confined compact conditions would reduce its chances to succeed and survive’. The further revelations that the former board member believed that Oak Grove developers might be” buying votes at $30,000 apiece”(from shareholders who)” no longer live in Coto.” The call to action in conclusion of the story that: “if you are dismayed that your community may be radically altered by people WHO NO LONGER LIVE IN COTO please contact the president of your homeowner’s association and voice your concern”, apparently caused many residents to contact the CZ master association, which has reportedly already withdrawn their support from the Oak Grove project. Editorial note; In recent days, the newspaper has been receiving an unprecedented amount of letters, and emails regarding the proposal by Oak Grove LLC to develop the property on Merryhill school, and a prime section of the Coto De Caza equestrian center to construct 19 luxury homes. While we do not have enough extra space in the newspaper this week to publish all of them, here is a sample of those we have received.
Caza is the only community in Orange County as well as the surrounding areas that have the ability to host polo events which really sets it apart from other housing developments. In addition to teaching anyone how to play polo, my true passion is sharing the sport I love with children. Our interscholastic program teaches kids ages 7-17 horsemanship and polo skills as well as building lifelong friendships. Polo is a niche sport that can help differentiate our students from the countless others when they apply for college (there are over 150 US colleges with intercollegiate polo teams). If the Oak Grove project is allowed to shrink the capacity of the equestrian center, we will no longer be able to offer the local children the opportunity to play polo under the current program which will be a loss for the community. Thank you for NOT supporting Oak Grove and helping to preserve the Coto lifestyle. Heather Perkins, Manager of Orange County Polo Club
character of Coto de Caza as an equestrian and rural feeling community should be preserved for generations to come. Many people are attracted to the community for that very reason. Once these spaces go away and are replaced by even more homes, they will never come back…. I have enjoyed the use of the equestrian facility for four years now and the facility is precisely why I am looking to relocate my family from our current home in Portola Hills, into Coto de Caza. I have two horses stabled there in the equestrian center and want to raise my 1 year old son in this unique environment called Coto de Caza. Additionally, I know of many families that also sought out and purchased in Coto due to the same reason. Please communicate my support to preserve the Coto Lifestyle! Do not allow this development devastate this unique community! Thank you, Eric Munk

I am a Silver Bronze member who opposes the takeover of the Oak Grove group. As a long time resident of Coto de Caza ( I raised my family there) I find this the most despicable hostile group that has ever crossed Coto’s paths. The board members stooping so low as to not attend so that they can remain in control are breaking their word to serve on the board to represent all of us. I lived in Coto for 21 years, and had horses at the Equestrian Center. My children have grown up with the benefits of a Coto where neighbors joined together. There have always been some self serving board members who have wanted to fill their pockets at the expense of the Silver Bronze members and the club ( many have done so and they are now trying to do so again!)....but this is so ugly and extreme. Please Master association, Newspaper editors, and polo club, Orange County Governing board, and fish and game.,protect this community integrity here. Or you will find that ( like in the past) property will disappear overnight with no hint of the original beauty of the Oak groves. It is a travesty to even have a name that represents the California Oaks when such greed is behind it. Though I live in Riverside now, I too deserve representation. I fully support Ken Agid in all he is doing to protect the club, equestrian center, and our investment in a open and beautiful place where there is still room for people and horses and friend, and children to play in the gym and grass, and enjoy the club. Grace R Davis Developing of homes on part of the equestrian center is the worst. I have lived in Coto for 24 years and have seen much growth and development in the community some of it nice and some of it not so nice. But the developing of homes on part of the equestrian center is the worst. The equestrian center

is one of the few things left of the original Coto. I understand the need for the community to have grown and changed but it has all but lost it’s original countrified personality. It is beautiful and peaceful to see the horses roaming around on the trails. Additionally, it provides a great sport to those that have the opportunity to do so. And those that don’t ride or own a horse still enjoy roaming through the equestrian center to watch them. I was told when we moved into Coto that the equestrian center was on a piece of property that was given to the community and would always remain that way. I think we have more than enough homes and residents now. If Coto loses the equestrian center, there won’t be much to distinguish it from any other giant planned community. Thank you for listening, Theresa Steinhaus There are hundreds of Coto residents that are OPPOSED to the hostile takeover attempt. For your edification, there are hundreds of Coto residents that are OPPOSED to the hostile takeover attempt by the unscrupulous Oak Grove LLC. Both the equestrian center and the Coto Valley Country Club are heritage facilities that were and still are the lifeblood of Coto de Caza. Those of us who live here were drawn to this community BECAUSE of these facilities. Without them, this community would be just like Irvine, Mission Viejo and any number of “cookie-cutter” neighborhoods in Southern California. We love the rugged and rural feel of this wee bit of old California, a place where nature, animals and people coexist in peace and beauty. Why would anyone want more of the McMansionization of our home town? Not everyone here is an Orange County Housewife phoney or some type of Newport Beach/Laguna Beach social climber. The 1% have Emerald Bay to wallow in their bucks in. Greed is not good. Greed is destructive and divisive. Mary Sadler,Coto de Caza property owner and resident since 1977 The Oak Grove development scheme provides no benefit to our community. I am a resident of Coto de Caza, and I am writing to state my opposition to the Oak Grove scheme to develop part of the Equestrian Center. The Equestrian Center is a unique and integral feature of our community. It enhances the natural beauty of the area, and provides a fun and cultured activity for both, children and adults. The Oak Grove development scheme provides no benefit to our community. On the contrary, it
detracts from the unique lifestyle that was envisioned when Coto de Caza was created. Therefore, I urge all Coto de Caza residents to oppose the Oak Grove development scheme. Gary Schank The loss of those equestrian facilities would be to the detriment of much of Coto’s unique lifestyle. I am against Oak Grove’s attempt to buy a large portion of the Equestrian Center to add to their pending purchase of the Merryhill property. They wish to buy it in order to resell building sites to other housing developers. The loss of those equestrian facilities would be to the detriment of much of Coto’s unique lifestyle. Many of the Silver Bronze voters who favor the sale no longer live in Coto & have no interest in maintaining our uniqueness. Many developments have beautiful clubhouses, pools, golf courses & tennis courts but having the Equestrian Center facilities, polo fields, trails, trainers & different horses available for every sport makes Coto special. Once the door to more development is opened, how long will it be before more money is offered to, & accepted by, some members of Silver Bronze to vote for the complete removal of the Equestrian Center? I applaud the Coto Master Association for closing the master development plan & opposing this proposal. Toni Schaaf Why would anyone still living here risk devaluing their homes by reducing the equestrian center and loading up our roads? I have recently become aware of the continuing pursuit of Oak Grove development to thrust their unwanted housing development on my community. I have been a resident of the Village in Coto de Caza for over 24 years and have not seen a proposal as calamitous as this one. The beauty and marketability of Coto is its wide open spaces, where wildlife and humans can live together. This proposal wants to plop homes down where pristine open land now exists. The equestrian center, which they propose to greatly reduce, also enhances our community by providing a viable business that melds beautifully with the values of the Village. I have read articles where Oak Grove brazenly speaks of plans for land they don’t even own. There seems to be little regard for us residents, who will have to deal with more crowded roads, an entrance gate (Antonio) which, for some of our residents, is their only entrance to their homes, being plagued by long lines and unwanted traffic. I purchased a lot and built a house in a gated community for a sense

complaining of the noise, lights, smell, and equestrian traffic. Will the dog park be impacted as well? The next thing you know, they would want to again reduce the size of the center or have it removed outright! To see how this works, just look to the north of Coto to John Wayne Airport. Folks bought there knowing that there is an airport. Then they wanted to impose multiple restrictions on its usage or have it removed. Do not allow this to occur in Coto! I urge you to deny Oak Grove the land of the Equestrian Center. Gary Stewart
I was appalled to find that Oak Grove is considering further development which would reduce the size of the equestrian center. Friday evening, my husband and I again enjoyed a pleasant event watching and cheering on the OC Polo teams. We have been attending for about two years and often bring our grandchildren. I was first introduced to Coto by way of the remarkable golf courses and the equestrian activities as an attendee of business retreats held on the grounds in the late 70’s early 80’s. I was appalled to find that Oak Grove is considering further development which would reduce the size of the equestrian center. To me, that’s the heritage of Coto. I understand that the Homeowners Association is against the project and I don’t blame them as I believe all property values would be adversely affected if the equestrian facilities were reduced, regardless of whether one uses them or not. They are a valuable asset to the culture of Coto. Thank you for the opportunity to express my concerns. Sincerely, Margo Kutner
Our family was crushed when we learned of the possible development of the equestrian center. Our family was crushed when we learned of the possible development of the equestrian center. The Coto de Caza equestrian center is a wonderful gathering place for the entire community and has become a very special place for me and my family What separates Coto de Caza from all other communities is the open space around the equestrian center and the equestrian center itself. In my opinion, If not for the Coto equestrian center and the open spaces, Coto de Caza becomes somewhat ordinary, just like many other Orange County communities. All nice places to live, however I’ve always thought Coto was unique and desirable because of the equestrian center. Furthermore, the equestrian center community is the cultural element that grounds our residents with something extraordinary. And now, a core ingredient that makes Coto such a wonderful place is the very thing that is being threatened by the possible development of the Oak Grove housing project. One of the primary factors that led to our family moving to the Village (a Coto community) was because of its proximity to the equestrian center. Now, twelve years later, including an inner-Coto move to Rancho Calinas, we own 6 horses, all stabled in the Coto equestrian center and are deeply rooted in the equestrian community. My daughters and I ride and play polo together 2 to 3 times a week. My older daughter is going into high school next year and is planning on creating a high school polo team that will utilize the Coto equestrian center as their home field. The equestrian center is an important part of our lives , and is an irreplaceable part of our families activities. The equestrian center is a community treasure and without it, Coto loses what makes it a noteworthy and unique community. Sincerely, Forest Smith
The next thing you know, they would want to again reduce the size of the center or have it removed outright! When you say “Coto de Caza”, of what do people think? Exclusive estates with acres for horses, a world class golf course, and a reputation for outdoor living- including miles of riding trails. In support of this great lifestyle, there exists a well equipped equestrian center that offers stabling, jumping, polo, and equestrian training. For the 1984 Summer Olympics, the community served as host to the riding, running, shooting, and fencing portions of the modern pentathlon events. This offers Coto residents and neighbors an excellent opportunity to use and enjoy the facilities. Now Oak Grove wants to grab land at the equestrian facilities upon which to build. This will reduce the stabling capabilities and definitely impact the training/polo arena. I predict that, soon after any of these homes are inhabited, there would be a clamor
community especially by outsiders. Hill/Oak Grove doesn’t care about Coto De Caza, just the mighty dollar. I can’t imagine what the traffic will be like at 7am on Vista del Verde. I’ve lived in Coto De Caza for 32 years and I’ve seen a lot of changes, some good some not so good. The one constant has been the Equestrian Center .It’s been a place for our kids (adults too) to have fun and learn valuable lessons like; sharing, getting along with other and fair play. The fair play lesson is one that Mr. Hill must have missed. Yvonne Horton
Do we really want to risk at best, seeing the equestrian center reduced in size; and at worst, disappearing altogether? Coto de Caza is unique. To the best of my knowledge it is the only community of its kind in Southern California where rural serenity is combined with beautiful homes and unparalleled recreational activities; the most unique of which is the equestrian center with its riding rings, barns and polo field. Now that most unique element is under threat. Oak Grove Development Company is attempting to acquire a portion of the equestrian center property and the adjacent Merryhill School and general store properties in an effort to build a number of new luxury homes. Their proposal would substantially reduce the size of the equestrian center, and in my opinion, lead to its demise. There are smells, and dust and flies and noise from horses, people and heavy equipment associated with operating any equestrian facility. Once there are luxury homes built is such close proximity to the remaining portion of the equestrian facilities, it wouldn’t be long before someone would start complaining; complaints would lead to threatened lawsuits, and before you know it our wonderful, unique, irreplaceable equestrian center would be gone. Over the decades this facility has hosted many special events such as the 1984 Olympic dressage competition, rodeos, dances, and now polo matches; but on a daily basis the equestrian center has been much more: it is a vital part of our community which allows people both young and old to experience the physical, social and recreational benefits which come from riding and being around horses. I am a horse owner and I keep my horse at the equestrian center My husband and I moved to Coto de Caza over 16 years ago in large part because of the unique recreational opportunities this community afforded. Do we really need more homes in Coto? Do we really need more I can’t imagine what the traffic will traffic in Coto? Do we really want be like at 7am on Vista del Verde. to risk at best, seeing the equestrian I can’t support any changes to my center reduced in size; and at worst,
disappearing altogether? I sincerely hope the answer is “No” to all these questions. Judy Joyer I would like to take an opportunity to voice my disdain over the proposed Oak Grove housing project in Coto de Caza and its effect on the equestrian facility. Although there are many lovely, gated communities in the southern orange county area, there are none with an equine facility of this caliber (or with a history of being the site of the 1984 Olympic equestrian events). If this truly unique facility is reduced/ decimated (as is the aim of the Oak Grove housing project), Coto de Caza will lose one of the strongest and most distinctive qualities it has, or ever will have. The Coto de Caza community will be much less distinctive, and thus less valuable, if it allows this project to proceed. I would like to take an opportunity to voice my disdain over the proposed Oak Grove housing project in Coto de Caza and its effect on the equestrian facility. I sincerely hope this project is recognized as the egregious error that it is. Thank you, Dr. Melissa Blauvelt Letting Oak Grove come in and put more homes in Coto would ruin Coto’s charm. My kids and family used Coto equestrian facility on a daily bases and it would be a shame to lose equestrian area for the future of Coto and the attraction Coto has in the equestrian world. Letting Oak Grove come in and put more homes in Coto would ruin Coto’s charm. Thank you, Donna Reynolds Don’t let us lose this land. Please leave the land alone. I have lived in S. Orange County since 1972. I used to play in the orange fields along Trabuco. Now gone and turned to homes. I used to ride motorcycles on the property which is now Via Noveno and Los Aliso’s in Mission Viejo. Now gone and turned to homes. I have watched each piece of land slowly disappear. Anytime I leave Orange County for a long period, 3 years in the Army, 1 year in Maui, 2 years in WA I return to find more land built upon.I would hate to see another piece of land taken away from the public. My wife used to work at the Merryhill Elementary school. Please leave the land alone. Residents Protest Oak Grove Takeover of Equestrian Center to Build 19 Luxury Homes unique rural and equestrian based atmosphere that the Equestrian Center brings to the Community. One only need observe the extensive network of white fenced horse trails throughout Coto as more than ample evidence of the foundation on which the Community was built and continues to prosper to this day. Reducing the size of the current Equestrian Center to accommodate a new residential development is both incompatible and unnecessary for Coto and the residents who call this wonderful Community their home. Reducing the open space presently occupied by the Equestrian Center is no less incompatible with the spirit of Coto’s Master Plan than would be converting a significant portion of the existing Sports Park into residential development. Regardless of whether one personally uses the facilities, whether for team sports or equestrian activities, the existence of the facilities undeniably adds to both the enjoyment of the residents and the value of our homes. It is our sincere desire that those with the ability to reverse the current plans for development pause to consider the greater good and not allow the personal interests of a very few to usurp and irreversibly destroy the enjoyment that the current and future residents of Coto derive from the Equestrian Center as it exists today. Sincerely, Greg and Cheri Talbott There is hardly enough open space at the equestrian center as it is.To pave over such a handsome community fixture would be a tragedy for the generations to follow. I would like to voice my support for keeping the Coto de Caza Equestrian Center intact - with no change in property function or sell-off to home developers. In short, I absolutely oppose the Oak Grove housing initiative. My husband and I board horses at the equestrian center every year and we are currently looking for a home in Coto so that we can raise our son there. It’s because of the horse connection that we are considering Coto instead of Dove Canyon, Ladera Ranch, etc. As you know, there are very few equestrian communities left in Southern California and what few remain are dwindling in this tough economy. To pave over such a handsome community fixture would be a tragedy for the generations to follow. I understand that the developer’s plans call for only a portion of the land to be developed into homes, but there is hardly enough open space at the equestrian center as it is. This project would seriously affect how well the equestrian center could operate. Many people live in Coto because of the equestrian feature and it would Page 16
be a shame to see it go. Further, I think there will be far more angry residents than just equestrians if this project goes through. I would hate to see so much happiness sacrificed in the community just to line the pockets of some enterprising developers. Do they even live in Coto or do business there? Thank you for reading my letter. I hope that you will communicate in your publication how important it is to save the Coto de Caza Equestrian Center! Michele (Everett) Munk Once the equestrian center can no longer be self sustaining in its smaller sized format– the developers will be ‘forced’ to close it and develop the remainder of the site. A one-two punch if you will. We have keenly been watching the developing situation with the proposed Oak Grove Project since we first heard about it. We moved to Coto de Caza almost two years ago from the Los Angeles area after looking at potential communities that suited our wish list. We quickly realized that Coto was unique in that it was the only gated Californian community we could find with a full service equestrian center, polo center, tennis and racquet club and acres of wonderful trails and walks. I challenge anyone to find such a unique place to live in Southern California. As keen equestrians, we were thrilled to learn that the center had been home to the Olympics in 1984. We were very clear that we wanted a SAFE environment in which to keep our horses and let our children learn to ride. So many times multiple trainers and horses are squeezed into small arenas – the result; beginners and children have their safety compromised as advanced riders jump courses , often unaware that the novices do not have the necessary skills to avoid a collision or endanger themselves. We were so glad to see that the space Coto offered meant a safe, comfortable environment without trainers having to share arenas while they gave their instruction. We were also thrilled to see the polo club. We quickly enrolled our youngest son into the interscholastic program which has been instrumental in his social and physical development. We couldn’t have been happier with our decision to move to Coto and settled into our new lifestyle happily. Last year we started improvements on our house reasoning that it was worth investing in our house as Coto regularly outprices communities like Dove Canyon and Robinson Ranch with all the community amenities it offers to set it apart. When we…(heard that the equestrian center might be acquired
The Coto de Caza News
to build luxury homes) Information was limited so we started to do web searches, trying to gather as much pertinent information as possible. We spoke to family and friends who didn’t ride. All of them seemed shocked that they had heard nothing about this. Everyone asked where they could gather more information so that they could be fully informed. The trouble was that Oak Grove appeared to be quietly going about their business with very little outreach to the community. We saw various plans back and forth, each time showing a different plot map – adding houses, losing houses, changing the use of the land etc, etc. We heard that a covenant would be made to protect the equestrian center –this was short lived as the term ‘covenant’ was quickly replaced with the term ‘slur’ which, we understand, offers less protection under the law to ensure that the center ALWAYS remains for equestrian use. Two months ago we attended a village meeting held by Oak Grove LLC. We were treated to a carefully orchestrated presentation. However, when the hard questions were asked the tone changed drastically. The developers were unable or unwilling to commit to any hard answers, carefully delivering their responses in nebulous terms and generalizations. They also stated that the land in its current form was zoned ‘commercial’ – conveniently omitting to add the full zoning which is actually ‘recreational and commercial.’ They told us that we should think of them as ‘Paul Revere’ – i.e. change was coming whether or not we liked it. I could go on and on about the viability of their proposed plan which we believe looks likely to fail unless horse boarding rates are hiked so high that many residents will be forced to move their horses and trainers will leave without adequate customers. Oak Grove has also never answered the burning question of whether or not they will subsidize the equestrian center if it is no longer financially viable – leading us to believe that once the equestrian center can no longer be self sustaining in its smaller sized format– the developers will be ‘forced’ to close it and develop the remainder of the site. A one-two punch if you will. We have looked at many websites and all seem to offer up the same opinion – residents of Coto want more information. Furthermore we want our opinion to be heard before rezoning is allowed of the current space – the first step to changing the current parcel to residential zoning. We want CZ Master to call an open forum where we can submit questions that MUST be answered properly. We want to make sure that all of our fears are adequately allayed and that explanations are given without ‘tap
dancing’ around the issues. We want to see covenants and assurances that our important community assets remain just that IRREVERSIBLY. We need to be assured that rezoning cannot simply happen to make way for more unnecessary houses – otherwise, once we set this precedence, what’s to stop our golf course and tennis center from being rezoned and going the same way? We urge you to REALLY research the multiple issues involved here. This is an issue that does not just affect equestrians. Without a functioning center and room to house the horses there will be no polo club, no need for horse trails and the landscape of our community will be forever changed. All the factors that keep our house prices stable will be thrown into disarray and we stand to become ‘just another’ OC gated community. We moved to Coto for the lifestyle it offers. Please do not underestimate how many others feel the same way. Yours sincerely, Beverly Pollington Sirjani I think we need to stop developing the areas that are the core of Coto de Caza. The hunt club and the equestrian are the two things that started Coto as a community. There are plenty of communities in Orange County that offer condensed cookie cutter homes. That is not why we live in Coto and why we have kept nature so close to our back yards. Coto is full of equestrian trails that can only be found in a few places in Orange County. But without the horses using the equestrian trails, Coto will lose that feel forever. San Juan is building plenty of new homes just below the borders of south Coto. Let the developers build in those areas and leave the little we have left of the equestrian center intact and our community special. Sayonara snow gear, bonjour long sleeves: Tips for keeping your spring look fashionable and fabulous Style expert and author of The Power of Style, Bobbie Thomas knows a thing or two about fashion and the importance of proper garment care. Tide Pods asked her to share her thoughts on how to ensure your wardrobe is ready for the spring season. * Fabrics of the season: This spring, keep an eye out for lightweight fabrics and light colors like white pants, linen dresses and cotton stretch tops. We’re going to be seeing a ton of fun and flirty pieces made with lightweight fabrics that’ll keep you cool in the spring/summer heat. If your spring clothing has been in storage for the past few months, freshen up your wardrobe with Tide Pods, a 3-in-1 detergent that not only acts as a detergent, but as a stainremover and brightener as well in one easy-to-use product. * Winter storage: For those bulky winter clothes you can’t stand to look at anymore, be sure to store them carefully so that they won’t get damaged during the spring/summer season. The best way to store winter clothes is in airtight compression bags that you can keep under your bed or in a closet. These bags will save you space and protect your clothing until you’re ready to wear them again in the fall. * Invest in quality pieces:
Sometimes the only thing you need to breathe new life into your spring wardrobe is to invest in a few new quality pieces. When you’re out shopping, be sure to consider the cost for care. Professional cleaning costs can add up quickly, and
sometimes surpass the original price tag. Thankfully, more designers are thinking about this when designing clothes. For example, thanks to a partnership between Tide and the Council of Fashion Designers of America, designers such as Tracy
Reese are now offering completely washable looks. Keep an eye out for those washable pieces... they’ll save you money in the long run! In sum, spend more on your style not on how you care for it.
Guilt-free desserts to please the whole family Dinner is over and your family is craving something sweet to end the meal. There are plenty of delicious options to satisfy even the biggest sweet tooth while keeping your family’s balanced diet in check. Best of all, these desserts can be made right in your own kitchen. By preparing your own creations, you can please even the pickiest of eaters and give your kids some extra nutrients with hidden servings of fruits or vegetables. The whole family will applaud your efforts. Whole fruit ice cream If you love frozen treats, try a healthier, homemade ice cream using whole fruit. Create a quick raspberry ice cream by combining 1 cup milk, 3/4 cup sugar or your favorite sweetener, 1/2 teaspoon vanilla and 1 pound frozen raspberries in a Vitamix 5200. Turn on the blender and slowly increase the speed from one to 10, using the tamper to push the mixture down. In less than a minute, you’ll have a creamy, softserve style ice cream. You can make a variety of flavors by substituting blueberries, peaches, pineapple, strawberries or other frozen fruit for the raspberries. Non-dairy “ice cream” Whip up a batch of green apple ice cream for a non-dairy, vegan alternative to traditional ice cream. Page 22
Your kids will love the green hue of this after-dinner delight. Plus, they’ll get an extra helping of spinach, which is loaded with vitamins - especially A, C and K - on top of antioxidants and minerals like potassium and iron. Simply add 6 ounces of thawed apple juice concentrate, a peeled banana, 1 1/2 cups fresh spinach and 4 cups ice into your Vitamix. Blend on high for about 40 seconds and you’ll have a healthy dessert for your family to enjoy. The kids will never know this non-dairy delight is also nutritious. Satisfying dessert (or snack) For an easy option that will keep you full well into the evening hours, create a fruit and yogurt parfait. Fill a tall glass with alternating layers of Greek yogurt, fresh fruit and granola. Popular for its thick, creamy texture and rich taste, Greek yogurt is typically lower in sugar and higher in calcium and protein than regular yogurt. Mix in a touch of honey for extra sweetness. Your family will love the varied flavors and textures. Plus, you can choose any combination you like - from the classic vanilla yogurt with fresh berries, to strawberry yogurt with peaches. A parfait is also a smart breakfast option, providing the calories and energy needed to keep your kids moving throughout the morning.

Avocado-based mousse Everyone knows that avocado makes a great guacamole, but did you know it can also be used in desserts such as mousse, pudding, sorbet and ice cream? It may sound strange, but the fruit’s rich, creamy texture lends itself well to many sweet treats. For the chocolate lover in your family, try a smooth chocolate avocado mousse. This raw food recipe uses avocadoes, almond milk, dates and coconut butter for the base, along with cocoa or carob powder for the chocolate flavor. It’s best to prepare the mousse ahead of time or while dinner cooks, because it needs to chill for at least an hour
before serving. Top with fresh berries or a bit of shaved chocolate for those with an extra-strong sweet tooth. Making dessert at home puts you in control of the ingredients. It’s also a great way to increase the level of vitamins, minerals and healthy nutrients in your family’s diet. Fruit is naturally sweet, so it’s a great place to start. To enhance flavor even more, experiment with other natural sweeteners, such as agave nectar, honey or stevia in place of granulated sugar. Whether dessert is a nightly ritual in your household or an occasional treat, use these ideas to satisfy your family’s cravings.

BIRTH ANNOUNCEMENTS! The Coto de Caza News is happy to announce the birth of your newborn:
Baby’s Name: Date of Birth: Weight:
I had a conversation with a patient the other day, an eighty-five year old doctor (retired). We were discussing how, when, in the 1960’s I was a hospital corpsman in Dr. Michael Tessier the Navy and he was an established physician, we were just starting to use new needles on every patient, as opposed to re-sharpening old ones. The old way sounds so barbaric. That got me thinking about the other things we do today to make dental work easier and better. Thirty-seven years ago, while in dental school, there was nothing that bonded to tooth structure. Today we can bond a 0.75mm thick porcelain veneer to the front surface of a tooth, dramatically improving its appearance while removing a lot less tooth structure. The old analogue x-rays required some nasty chemicals for development. Today, digital x-rays go right into the computer, where they can be e-mailed to anywhere in the world. The definition is dramatically better, and the amount of radiation they expose the patient to is way less than walking around in the sun. We also take digital panographic x-rays which are totally extra-oral, and show a complete picture of, say, the wisdom teeth and surrounding tissues, or any bone abnormalities like cysts or even bone cancer in the jaws that regular x-rays don’t pick up.

I wear a battery-powered headlight that gives me better illumination than I’ve ever had before (no more working in the dark). For smaller cavities, we use a sandblaster istead fo the drill. No anesthetic is required, and there’s no heat of friction which otherwise might result in fractured teeth in years to come. Replacing missing teeth is still done with fixed tooth-colored porcelain bridges (don’t come out) bridges made of toothcolored porcelain and have no unsightly or irritating external hardware. Alternatively, implants are as close to 100% reliable as anything ever is, they don’t involve the teeth on either side of the missing tooth. Frequently, where a root canal on a questionable tooth used to be the only option, now that offender is removed and replaced with an implant. We’ve been using a laser for the past six years to treat gum problems. The old way of using a knife to cut the gums and peel them off the bone to fix a defect in the boney socket in which a tooth is situated was very painful for about seven to ten days after the procedure. Today, the laser allows us to avoid the knife and sutures and the post-operative pain, and we can actually expect the gum tissue to re-attach to the tooth structure. Dental work keeps getting easier, and the results keep getting better. Don’t hesitate to call (949-459 -7212) my office for a complimentary consultation appointment if you have any questions. My office is located at the intersection of Oso and Antonio Pkwysi (28562 Oso Parkway). Down the way from the carwash and Starbucks.

U. s . C u s t o m s a n d B o r d e r P r o t e c t i o n E n c o u r a g e s You to be a “ReadyTraveler ” This Summer Pack the sunscreen and camera, the summer travel season is upon us. U.S. Customs and Border Protection is encouraging travelers this summer to be a “ReadyTraveler” by educating themselves on the rules and regulations relating to international travel. “CBP continues to make great strides to create a seamless, secure and passenger-friendly arrivals experience,” said Commissioner R. Gil Kerlikowske. “Programs such as Global Entry, NEXUS, SENTRI and the Automated Passport Control kiosks help expedite the arrivals process, but travelers can make their own experience better by being a ‘ReadyTraveler’ and being aware of the requirements when entering the United States.” CBP is undergoing modernization efforts to streamline the traveler’s inspection process, increase officer efficiency and reduce operating costs in order to provide better services for all travelers entering the United States. More than two million travelers are now enrolled in CBP’s trusted traveler programs such as Global Entry, NEXUS and SENTRI and last year CBP launched the Automated Passport Control program, self-service kiosks that allow U.S. citizens and certain visitors to submit their customs declaration electronically. The I-94 was also automated last year eliminating another paper international travelers have to complete. These programs allow CBP officers to process travelers safely and efficiently while enhancing security. Travelers can take additional steps to smooth their arrivals process by familiarizing themselves with U.S. rules and regulation before departing to avoid potential penalties and fines. And don’t forget to review the

travel checklist to ensure you are a “ReadyTraveler” this summer. Travel Requirements for U.S. Citizens Individuals traveling abroad must have approved travel documents when returning home. The Western Hemisphere Travel Initiative (WHTI) requires U.S. and Canadian citizens, age 16 and older to present a valid, acceptable travel document, such as a passport, a U.S. passport card, a trusted traveler card (NEXUS, SENTRI, Global Entry or FAST/ EXPRES), permanent resident card or an enhanced driver’s license that denotes both identity and citizenship when entering the U.S. by land or sea. U.S. and Canadian citizens under age 16 may present a birth certificate or alternative proof of citizenship when entering by land or sea. All travelers must have a passport for international air travel. Travel Requirements for Visitors to the U.S.

All nationals or citizens of Visa Waiver Program (VWP) countries are required to have an approved Electronic System for Travel Authorization, or ESTA, prior to boarding a carrier to travel by air or sea to the U.S. under the VWP. ESTA applications may be submitted at any time prior to travel, and once approved, generally will be valid for up to two years or until the applicant’s passport expires, whichever comes first. Authorizations will be valid for multiple entries into the United States. CBP recommends ESTA applications be submitted as soon as an applicant begins making travel plans. Travel Checklist □ Have all the required travel documents for the country you are visiting, as well as identification for reentry to the United States. Passports are required for air travel. Visit www. travel.state.gov for country-specific information. □ For citizens of Visa Waiver Program countries, make sure you have an approved Electronic System for Travel Authorization (ESTA) before boarding. For those traveling by air or sea on a visa, CBP has automated the Form I-94 removing the need for travelers to fill out a paper copy. Travelers will still be able to obtain their I-94 number and/or a copy of their I-94 at www.cbp.gov/i94. □ Have a completed Customs Declaration form (6059b) upon reaching CBP processing or use the Automated Passport Control kiosks at participating airports. Declare everything you are bringing from abroad, even if you bought it in a dutyfree shop. Know that things bought
abroad for personal use or as gifts may be eligible for duty exemptions. If you are bringing them back for resale, they are not. □ Know the difference between prohibited merchandise (which is forbidden by law to enter the U.S.) and restricted merchandise (items needing special permit to be allowed into the U.S.). For more information, please visit the Restricted/Prohibited section of the CBP website. □ Do not attempt to bring fruits, meats, dairy/poultry products and/ or firewood into the United States without first checking whether they are permitted. For more information, please visit the Bringing Agricultural Products Into the United States section of the CBP website. □ Understand that CBP officers can inspect you and your personal belongings without a warrant. This may include your luggage, vehicle, and personal searches and is meant to enforce our laws as well as protect legitimate travelers. □ Monitor border wait times for various ports of entry. Travelers are encouraged to plan their trips during periods of lighter traffic or to use an alternate, less heavily traveled port of entry. For more information, travelers can find up-to-date wait time information on the CBP website. □ If you are a frequent international traveler and haven’t already become a member of a trusted traveler program, sign up now. For more information, please visit the Trusted Traveler section of the CBP website. □ Familiarize yourself with the “Know Before You Go” brochure or section of www.CBP.gov.

Eight ways to get the most out of your trip to the farmers market When spring arrives, leaves, flowers and robins aren’t the only signs of warm weather to reappear. Spring also heralds the return of farmers markets. A trip to the market is a great opportunity to indulge in fresh healthy produce and to expand your horizons by trying new items or preparing them in different ways. Here are eight tips to make the most of your visit to the local farmers market: * Note the hours and dates of your local market on your calendar. Set reminders on your smartphone that will alert you when favorite items such as tomatoes, peas, beans and strawberries come into season. * Prepare your refrigerator and kitchen for the season’s harvest. Clean out your fridge’s produce drawer, and stock up on items that complement fresh produce, such as salad dressings and seasonings that can be used to turn basic veggies into delicious meals. Make sure to choose organic options, such as Simply Organic’s Greek Yogurt Dips (great for broccoli and cauliflower florets). * While farmers market vendors will almost certainly have plastic bags on hand, take your own reusable bags or baskets to carry your purchase - they’re better for Mother Nature. If you’ll be buying
perishable items, consider packing a cooler as well. Remember to place heavier items (like melons) on the bottom of the bag and lighter ones (such as berries) on top. * You’ll find the freshest produce and best selection early in the day. Setting your alarm to wake you a bit early could ensure you get the pick of the day’s produce. * Leave the $20 and $50 bills at home. Smaller bills will provide you with greater buying flexibility, and vendors will appreciate the change. * Scope out the entire market before you begin making purchases. Certain popular items, such as tomatoes, cantaloupe, melons, peas and potatoes will be available from multiple vendors. Strolling through the market first will allow you to compare prices and taste samples to ensure you’re picking the best and most delicious buys for your family. * Unpack bags as soon as you’re home and store each item appropriately. Create a menu plan for the week that incorporates everything you’ve purchased to help ensure nothing goes to waste. Don’t forget to incorporate snacks into your meal plan. * Every week, try something new. By all means, enjoy your familiar favorites, but also add in new items like kohlrabi, chard or broccolini.
Not sure how to prepare something new? Seasonings are a great way to add flavor without fat. Spice-filled marinades or rubs are a perfect complement to produce. Throw your veggies on the grill to bring out the freshness. On its website, www. simplyorganic.com, Simply Organic offers numerous flavorful fresh produce recipes. Here’s a tasty recipe to try on your grill today: Adobo Grilled Asparagus Prep time: 5 minutes Cook time: 8 to 10 minutes Total time: 15 minutes Servings: 4 to 6 Ingredients: Use organic ingredients where possible. 2 ounces slivered almonds 1 bunch asparagus, trimmed 1 1/2 tablespoons olive oil 1 1/2 teaspoons Simply Organic adobo seasoning 1/2 teaspoon Simply Organic paprika Directions: In a dry 8-inch skillet, toast the almonds, stirring often, until fragrant and lightly golden, about five to eight minutes. Remove and pour the almonds into a small bowl and set off to the side.In a shallow dish, toss the asparagus with the olive oil, adobo seasoning and paprika.Preheat your grill. Real wood charcoal tastes best,
but gas works fine. Avoid briquettes; they make food taste like lighter fluid. Aim for medium-high heat - if your grill lid has a thermometer built into the lid, it should read about 375 degrees.Once hot, lay the asparagus perpendicular to your grill grates and cook for eight to 10 minutes, turning once until fork tender yet still firm.Serve on a platter topped with toasted almond slivers.
Tips for making your child’s birthday extra special this year For many young children (especially those between the ages of 3 and 6), a birthday is the most important and anticipated day of the year, ranking even above Christmas or Easter. The challenge, however, is that with more two-income families, increase in single parent households, and busier work and school schedules, finding the time and the creativity to make kids’ birthdays extra special is difficult. “There are many fun and easy ways to make your child feel extra special on their birthday. It is amazing how these little touches can make such big and lasting impressions,” says Tish Dahlby, the author of Pinklejinx, a new children’s book that tells the story of Joy, the birthday fairy. Here are some simple ideas to help your child feel special. * Start the celebration early. While the child is sleeping, sneak into the bedroom and decorate with balloons and streamers. Cover the floor or stuff the closet with balloons. Form a trail of confetti that leads from the bedroom to the breakfast table. * Provide surprise birthday wishes throughout the house. Hide birthday wishes in unexpected places. Using soap, craft a birthday greeting on the bathroom mirror, the kitchen window or the rear window of the car. * Involve the whole family. If there
are siblings or other relatives in the house, have them wait on the birthday child. Even the family pet could wear a special birthday hat. * Create a festive environment fit for royalty. Consider dining at the fancy table in a room reserved just for special occasions. There you can pull out all the stops to make your child feel like a real prince or princess. The Pinklejinx birthday keepsake kit provides everything you need, including the storybook you and your child can read the night before to create a new family tradition of welcoming Joy, the birthday fairy. The kit includes a brightly colored felt birthday banner along with a festive felt chair cover with ribbons and tassels that turns any chair into the seat of honor. A velvety crown provides the full royal treatment and is durable enough to be worn for hours or even days after the birthday festivities have ended. Breakfast can be served on the colorful cake plate or pedestal bowl, along with birthday candle-shaped utensils. The most important ingredient, of course, is the Pinklejinx sprinkles, which should be sprinkled just before making the birthday wish. * Celebrate loud and clear. If possible, find a way to celebrate the exact moment of the child’s birth with lots of hoopla - perhaps blow some
horns or bang the pots. * Break the routine. This is a day unlike any other, so don’t follow the same routine. Get creative with the food you serve, its color and how you serve it. Instead of making the child wait to open presents, start the day by opening at least one very special present. * Communicate what’s special about your child. This is the time for letting your feelings show. Take turns going around the table and let everyone in the family give one reason why the birthday child is special. * Lunchbox surprise. Pack school lunches as normal but take a few extra minutes to wrap the birthday
child’s sandwich in gift wrap. Imagine your child’s smile as he or she unwraps the most special sandwich at the lunch table. * Start a new tradition. Make this birthday so special that your little ones will already be counting down the days until the next birthday. Consider doing the same thing every year. Start by reading the Pinklejinx birthday story the night before the celebration and prepare for the coming of the birthday fairy. Or take a photo in the same location doing the same thing each birthday to see how much has changed in just one year. For more ideas on how to make birthdays extra special, visit www. pinklejinx.com.

SMCHS Announces Craig DeBusk as New Head Girls Basketball Coach Santa Margarita Catholic High School is pleased to announce the hiring of Craig DeBusk as the new head girls basketball coach. DeBusk replaces Matt Houser who recently resigned to pursue a coaching position at the collegiate level. DeBusk had been an assistant varsity coach for the Santa Margarita boys’ basketball program from 19982008, coaching with his dad, Jerry DeBusk. “We just made a hire that is going to take our girls program to the next level,” Athletic Director Rich Schaaf said emphatically. “We now have an on-campus presence that is 100% dedicated to this school, this team, and these players.” In coach DeBusk’s last year of coaching the boys, he served as the associate head coach and was part of the 2008 division 3 state title with a record of 30-5. As an assistant with the boys team, Coach DeBusk was part of three League titles, four CIF runner up’s (2003-2006), three CIF titles (1998, 2004, and 2005) and two California State Titles (1998 and 2008). Principal Ray Dunne is looking forward to having Coach DeBusk on board and continuing to build upon a sturdy girls’ basketball
foundation. “Coach DeBusk brings a wealth of basketball experience to his new role both as a player and coach. He possesses a strong worth ethic coupled with a desire to help develop the basketball skills and talents of our Lady Eagles in a program based on our charism of Caritas Christi.” Coach DeBusk took some time away from coaching to start a family with his wife Kelly and are blessed to have a 5 year old daughter (Hayden) and a 2 year old son (Brady). DeBusk is excited to get back on the hardwood and lead the defending CIF 3A Champions back to another title game. “I want to thank Principal Dunne and Rich Schaaf for giving me the opportunity to be a part of the Santa Margarita Girls Basketball program. I look forward to a great year and I am excited to get back in the game.” Despite the departure of Houser, DeBusk will keep the entire coaching support staff from the frosh soph to the varsity level, including the promotion of assistant coach Lindsay Allen to associate head coach. Coach DeBusk will be entering his 18th year of teaching in the Diocese of Orange and 12th year at SMCHS as a Health Science Teacher.

NOTICE TO POTENTIAL BIDDERS: If you are considering bidding on this property lien, you should understand that there are risks involved in bidding at a trustee auction. You will be bidding on a lien, not on the property itself. Placing the highest bid at a trustee auction does not automatically entitle you to free and clear ownership of the property. You should also be aware that the lien being auctioned off may be a junior lien. If you are the highest bidder at the auction, you are or may be responsible for paying off all liens senior to the lien being auctioned off, before you can receive clear title to the property. You are encouraged to investigate the existence, priority, and size of outstanding liens that may exist on this property by contacting the county recorder’s office or a title insurance company, either of which may charge you a fee for this information. If you consult either of these resources, you should be aware that the same lender may hold more than one mortgage or deed of trust on the property. NOTICE TO PROPERTY OWNER: The sale date shown on this notice of sale may be postponed one or more times by the mortgagee, beneficiary, trustee, or a court, pursuant to Section 2924g of the California Civil Code. The law requires that information about trustee sale postponements be made available to you and to the public, as a courtesy to those not present at the sale. If you wish to learn whether your sale date has been postponed, and if applicable, the rescheduled time and date for the sale of this property, you may call (916)939-0772 or visit this Internet Web http://search.nationwideposting.com/ propertySearchTerms.aspx, using the file number assigned to this case CA1300251622 Information about postponements that are very short in duration or that occur close in time to the scheduled sale may not immediately be reflected in the telephone information or on the Internet Web site. The best way to verify postponement information is to attend the scheduled sale. If the sale is set aside for any reason, the Purchaser at the sale shall be entitled only to a return of the deposit paid. The Purchaser shall have no further recourse against the Mortgagor, the Mortgagee or the Mortgagee’s attorney.
